The JRC Superstar Employee Recognition Program will recognize and celebrate our employees for their achievements and contributions to JRC. All JRC employees are eligible to be nominated as a JRC Superstar except for the executive team. RECIPEOFTHEMONTH
SWEDISH MEATBALLS
1. In a large nonstick skillet, heat olive oil over medium heat and add onions and garlic.
2. Saute until onions are translucent, about 4-5 minutes. Add celery and parsley and cook until soft, about 3-4 more minutes. Set aside to cool.
3. In a large bowl, combine beef, turkey, egg, onion mixture, breadcrumbs, 1/4 teaspoon salt, pepper and all spice. Mix well and form into 16 meatballs.
4. Add beef broth to the pan and bring to a boil. Reduce the heat to medium-low and slowly drop meatballs into the brother. Cover and cook for about 20 minutes, until cooked throughout.
5. Remove the meatballs with a slotted spoon and set aside in a serving dish.
6. Strain the broth, transfer to a blender with cream cheese and blend until smooth. Return to the skillet with the meatballs and simmer.
Required internal temperatures for safe consumption:
Beef, pork, veal, lamb roasts, steaks, and chops - 145F
Ground beef, veal, lamb, and pork - 160F
All poultry - 165F
