How do students learn culinary skills online?
Throughout their courses, PCSK students record videos of themselves producing food in their kitchen, which are reviewed by chef professors, who provide each individual with feedback. Students’ video recordings must meet specific requirements according to each assignment, but in general will show the mise en place of tools, equipment and ingredients, specific skill shots, and the sights and sounds of the cooking process. Online culinary graduate Rich Clay ’23 commented, “I was surprised at the many ways my professors and I used our senses to analyze my cooking techniques. My chef professors could look at a dish and know whether the food was perfectly cooked and if I had seasoned the dishes well — they could also hear whether I had cooked the food at too high a temperature.”

“As a Marine Corps veteran, I was deployed in November 2004. I was on the ground for the second battle of Fallujah, Iraq, Operation Phantom Fury — the biggest battle of the 20year Iraq and Afghanistan wars. My Combat Engineer squad was attached directly to 3rd Battalion 1st Marines (3/1) Kilo Company, fighting against the Mujahideen stronghold in the city. The battle was bloody and violent. On the 5th day of the battle in an area we called ‘The Fallujah 400,’ I was wounded; later I was awarded a Purple Heart.

“I started my career as a dishwasher at a little mom-and-pop restaurant in North Alabama.
Becoming an executive chef has been a big mountain to climb, but it’s lots of fun! At the point I decided I wanted to advance in my career from sous chef to a kitchen manager, I realized how much a bachelor’s degree would help me. Professor Samel from JWU’s Center for Food & Beverage Management was a great mentor. He introduced me to the Club Management Association of America (CMAA), which led to me getting hired as an executive chef. Applicants can contact their previous institutions to request their own transcript, or they can have their dedicated admissions associate attempt to request transcripts on their behalf.
We are pleased to offer our students an Express Transfer Evaluation to see how your previously earned college credit can be applied to a degree today. Most evaluations are completed within 48 hours. Work with your Admissions Associate to determine eligibility if you’re interested in this service.
