Our journey with JoburgStyle has been nothing short of remarkable, and it all began with a simple conversation. In my quest to start a tourism magazine, I was met with Chad’s signature wit: “Why do you want to reinvent the wheel? I know a guy.” If you know Chad, you’ll appreciate how fittingly humorous that is—he always knows someone!

Thus, we acquired JoburgStyle, and our adventure truly commenced. After being dormant since the onset of COVID-19, we saw an opportunity to breathe new life into this cherished publication. We’ve been fortunate to pick up the pieces and rebuild relationships that are vital to our success. One of the first people I connected with was Annie Hodes, who taught me so much and also became a dear friend. Annie, I extend my heartfelt gratitude to you and your team for your unwavering support over the past 15 months. Your constant encouragement has been a blessing.

I won’t sugarcoat it—Chad and I were incredibly anxious about this undertaking. The workload was immense, spanning online content, social media, events, photography, editing, journalism, proofreading—the list seemed endless. Through it all, I found solace in the words of Psalm 23: “The Lord is my shepherd; I shall not want. He leads me beside still waters; He restores my soul.” This passage became my anchor during the tough times, reminding me that I was not alone in this endeavour.

Chad’s journey alongside me has been inspiring. His children returned from the UK, enriching our family dynamic. We forged new relationships with outstanding PR companies, and I must highlight Sarah Anderson, who has become a cherished friend.

I also want to express my gratitude to Grant Mason, whose mentorship has been invaluable, both personally and professionally. The bond you and Chad share is one I believe will remain unbroken.

To Gavin Prins, your humor and support have been a guiding light. You’ve helped me navigate the complexities of this journey, and I dedicate this edition to you, my friend.

To Wilma Mclintock, you have supported and believed in us from day one. No words could ever explain how much that means to both of us. You are a beacon of joy, a pillar in the community and a most beloved partner in JoburgStyle.

Gert TAKES AFRICAN FASHION TO THE global stage

myself in the art of fabric and thread”. But his stories are not lost. His love of storytelling has made him an African fashion icon, weaving stories that make people pay attention.

He was the first South African designer to showcase his creations on an Albino model. In 2013, model and law prosecutor Thando Hopa walked the runway at SA Fashion Week in Gert’s showstoppers, creating awareness about Albinism and changing people’s perceptions.

When he was little, Gert-Johan Coetzee designed stunning designs for his dolls to wear on a fictional red carpet. He had no idea he was manifesting his future, a time when, as a top South African fashion force to be reckoned with, he would dress models, stars and the rest of us in garments that would take people’s breath away.

“Those dolls were a glimpse into the future,” Gert says. “Today, this is what I do for a living. My clients wear my clothes and get compliments. They make heads turn.”

Then, in September 2024, during Albanism Awareness Month, Gert prepared a video of his South African designs that he planned to showcase at London Fashion Week. The video was recorded at the Union Buildings in Pretoria, which, with some assistance from Brand Africa, was closed for a day to accommodate the shoot. In the shoot, Gert used the energetic South African Squad Albanism dance team to wear his iconic collection, tell their story and showcase their uniqueness.

“South Africa is so diverse,” he says. “The team was excited to bring South African fashion to a global platform in London. I felt as if I had the brightness of the whole country behind me.”

Gert takes the world by storm

London Fashion Week was another dream come true. “I believe in magic,” Gert admits. “I had decided not to show my collections in South Africa anymore. I haven’t shown here for four years now. South African audiences have had plenty of opportunities to see my work, but I preferred to showcase it overseas. I wanted to show in London, and my husband suggested I start working on a show. So, I did. I had the time and nowhere to show it, but the sketches just popped out.

“Around that time I met eight retired Mpumalanga craftswomen, and asked them to create a beaded dress for me for this collection. I gave them the pattern for the dress, and the final creation is a combination of their stories. Every bead on this dress tells a story about them and conversations while putting this showstopper together. It’s a dynamic story, their message.

“Then the stars aligned. My collection was half-done when I received an invitation to show at London Fashion Week. Of course, I said I’d be there. This is when I asked Brand South Africa to assist, and they jumped on board. They helped transport the collection to London and ensured we were comfortable and able to perform at such a high level.”

Gert proudly showed his beaded design and other breathtaking garments at London Fashion Week. “I always wanted to do something exceptional,” he says. “While I had such an iconic collection, I decided to show it in South Africa, too. We fixed all the mistakes we made in London, and showed at SA Fashion Week a week later!

“The show was a smash hit!”

Partnering with Steve Madden

Of course, Gert has another story – next up was a partnership with Steve Madden. Although this American fashion brand is best known locally for its fashion-forward shoes and accessories, it’s well known throughout Africa for its apparel footprint, Gert explains.

In February, Gert started designing a ready-to-wear collection in partnership with the brand. He chose to step into the aesthetic much like couturier Karl Lagerfeld did with Chanel – creating something “a bit different with a Gert twist”. He researched the brand and began to conceptualise his collection. “It was the first time I’d done something like this, so I went all out,” he says.

“Steve Madden is ready-to-wear, and I’m a couture designer. So I chose to design a wearable collection. I went in guns blazing and came up with 13 pieces. I kept it tight, to the point and exciting.”

Gert describes the process of the Steve Madden partnership as a constant highlight. “When I was younger, I wanted to grow my business to the point where I’d work overseas for a big designer and still run my brand. Being asked to partner with a wellknown designer like Steve Madden was a feather in my cap.”

He found it easier creating the Steve Madden collection than designing one for his brand. “It was

all about walking into something with fresh new ideas. I took my ideas and ran with them. “A week before the show, we filmed a glamourous video as the opening title, to tell a story about the collection. The video explained my inspiration and set the mood for the show – it was all about me portraying New York energy in Africa!

“Steve Madden is a very sexy brand. The video portrays a hot summer’s day when everyone gets soaked in the rain. There was something so suggestive about the way the clothes clung to the model’s bodies – they were covered up but so sexy.”

What’s next?

Gert smiles. “There’s always something in the pipeline,” he admits. Collaborations with major international brands have already been part of his past. In 2021, he joined forces with everybody’s favourite doll, Barbie, to design a collection that sold out in two months. Now he’s about to join forces with Disney and create something special. “Not ballgowns and tiaras this time,” he says. “I’m creating Gert Ready-To-Wear for Disney!”

It’s true – nice people deserve to come out on top. Despite fame and talent, Gert remains one of the most genuine people one will ever meet. What’s it like being Mr Nice Guy? “It’s the way I was raised,” he admits. “In my occupation, no job is too big or too small. I’m often on the floor picking up pins! If something needs to be done, I do it.

“Being asked to partner with a well-known designer like Steve Madden was a feather in my cap.”

“I don’t spend time with affected people. And I always put myself in the other person’s shoes. After all, I used to be that person asking someone well-known to have their picture taken with them. I see myself in their eyes. “And let’s face it. Being nice doesn’t cost anything.”

SERMON BY SEVENTEENTHCENTURY ENGLISH POET JOHN DONNE, ECHOED THROUGH BIANCA EMMERICK’S MIND AS SHE INTERVIEWED JOHN OXENHAM, FOUNDER AND MANAGING PARTNER OF THE PRIMERIO PAN-AFRICAN LEGAL GROUP.

Starting out as a boutique competition law firm in 2014, Primerio has developed core competencies in antitrust, white collar crime, complex commercial litigation, corporate and project development, and regulatory and foreign direct investment.

The meaning of the phrase, taken in the context of the sermon as Donne intended, is fodder for another article. Modern society has, as with so many things, developed other interpretations, all of which were reflected back at me during my time with John.

FORMATIVE EDUCATION

“I’m Johannesburg born and bred,” he says. “I was educated at St. John’s College, where I matriculated.” Here he learned quintessential skills that have served him well in his professional career. “I was fortunate enough to play a few sports at a high level, which equipped me for a number of travails in life. Sport teaches one grit.”

After the murder of his father when John was fifteen, the family had decided that they emigrate with his mother to England following his matric. There he attended Sherborne School in Dorset and obtained his A-levels. He part-financed his A-levels through coaching water polo, rugby, and rowing.

“Sherborne School was an amazing environment, but it was also a difficult environment, being outside of South Africa for the first time. It was one which equipped me with a sort of self-instilled belief and more importantly, taught me how to continue on through tragedy and difficult circumstances, which there were several within my life, certainly in my earlier years. You learn a great deal from people that you wouldn’t necessarily have been exposed to in an environment such as Sherborne. The education was at a hugely

advanced level, and I was fortunate enough to have a number of incredibly articulate and well-schooled teachers.”

Two important things he learned at Sherborne School that he deems critical for a professional career, are finely tuned skills in comprehension and being intentional about intellectual stimulation.

John’s mother decided to return to South Africa, and he accompanied her, attending the University of Cape Town, where he obtained a Bachelor of Arts in Law, followed by an LLB.

Here, too, sports played a role. John took up rowing and stroked the first eight for both UCT and Western Province. “It’s hugely discipline-oriented and more importantly, it’s the one sport where you cannot lose focus. I think those are also good groundings for a professional career.”

John refers to the education he received at these institutions as his “formative education”. He was educated, challenged, supported and influenced by many teachers, lecturers and coaches throughout his formative education. No man is an island.

THE YOUNG LAWYER

His stellar academic achievements garnered him offers from a number of prestigious law firms for his articles. Webber Wentzel was possibly the preeminent law firm in South African at the time, and he jumped at the chance to join their ranks. “I was exposed to various disciplines as a clerk, and ultimately chose to specialise in competition law. It was relatively novel and hadn’t yet become a major discipline, but I enjoyed that particular field principally because it wasn’t just based on pure legal standards. It involved economics and robust assessments of commercial relationships and commercial transactions, and more importantly, assessing those transactions against what was then a relatively new set of standards.”

John did well at Webber Wentzel, and learned a lot from the team he worked with there. Eventually though, he set his sights on the global stage, and took a position at Howrey LLCP in Washington, D.C. It was arguably the biggest antitrust firm in the world at that stage.

“I think the period in America shaped my legal career significantly because I was exposed to a lot of people, some of the biggest transactions in the world, and travelled extensively in America. We worked in large part with Fortune 500 companies, all listed entities in America and Europe and the transactions were generally over $15-billion. They were significant deals which covered the globe.”

But it was the extraterritorial transactions that fascinated him, those, for example, between American and European businesses, or sometimes between American and African businesses. The challenge of navigating complex transactions or legal negotiations between territories that have different legal standards, and the impact that these may have on the distant economies, was ultimately what inspired the birth of Primerio years later. Missing home, John decided to return to South Africa, and to Webber Wentzel. He spent three years there, honing his craft while trading learnings with colleagues and mentors who he acknowledges for the impact they had on both his career and his strategic thinking around the establishment of Primerio. No man is an island.

THE BIRTH OF PRIMERIO

In 2014, John formed Primerio, which was based in Mauritius. From the outset the focus was on enabling international practices and international clients to conclude major international deals across the African continent. Large international businesses often shied away from business in Africa, primarily because they found it difficult to navigate the legal regimes of African jurisdictions. “We started out mostly dealing with transactions in anglophone and francophone countries on the African continent, and to some extent lusophone countries too,” says John.

“Our primary goal was to become a singleservice specialised firm which could handle antitrust, regulatory and complex commercial litigation issues on behalf of international entities doing business in Africa and, importantly, to handle the cross-border transactions which a number of international firms had struggled with because they, a) lacked understanding of the complex legal environments, and b) lacked the requisite skill set within those jurisdictions to handle those transactions.”

John goes on to explain that when they formed Primerio, a large portion of their formative period was spent forging relationships with local counsel in countries throughout Africa, aiming to upskill them so that they could become in-country partners for Primerio. It was imperative that their service offering be on par with what was expected from an international law firm with international clientele.

“The result was a network of trained, skilled practitioners who now form part of the Primerio Africa team, and who themselves are highly regarded.” No man is an island.

A SEAT AT THE TABLE

Another rich training ground for John, was the international platforms and organisations he was exposed to while working in Washington. He met many people who were the leaders in antitrust law around the globe at the time.

“They helped shape my legal thinking and my legal career,” says John.

More important than what he learned then, though, is what he has learned since, and continues to learn to this day, because John has actively maintained participation in platforms like these throughout his career, and he encourages the other lawyers at Primerio to do the same. In recent years John has taken leadership roles in many of the platforms, think tanks and caucuses he attended as a young, impressionable lawyer, believing that it is his civic duty to give back to the legal fraternity, and his country, by being a thought leader in his areas of expertise.

John and his team often speak at events, host events and even sponsor events that are designed to educate and inform about international best practice and policy development in the areas of competition and antitrust law, fraud recovery, anti-corruption and anti-bribery practices, to name a few.

“A lot of the time it’s beyond pure billable issues. One of the hallmarks of Primerio in South Africa, indeed in Africa, is the attention and pride we take in relation to advocacy.” He goes on to explain that while the talks often revolve around policy issues that impact a particular regime, it’s the interaction with both government and private practitioners in those regimes that yield the most value in the long run. “There is as much value in building the relationships as there is in getting some consistency in relation to the application of law and the manner in which policy is ultimately implemented,” he says.

His advocacy has led to him being an advisor on countless panels. Of course, being at the coalface of developing policy instruments which ultimately impact on laws internationally, also gives Primerio valuable insights into new developments and how things are done in other jurisdictions. These insights often translate into better legal advice that their clients can benefit from.

John believes that you have to have a seat at the table. Whether that be as an observer (as he was when he was younger), a private practitioner, an advisor or as a leader (as he often is now), your presence is important. He says that your presence also gives you a voice. “You get the first bite of the cherry, ensuring that businesses’ views are articulated in the

right way and are at least given to the audience.” You influence, and your influence in turn benefits others. No man is an island.

ON CORRUPTION

When asked about Primerio’s role in initiatives to counter corruption, John becomes even more animated. “That’s been something the firm has been highly regarded for, and recognised internationally in relation to,” he replies. “A broad spectrum of people feel very strongly about corruption in government,” he says. He points out that there is also corruption in blue chip companies, but that people sometimes feel they can’t do anything about it because nothing ever happens. “This has led to a general sense that because somebody else has done it, it can be done, and that’s not the approach that should be adopted.”

He comments that the State Capture that took place over a period of some years happened because there was a hollowing out of those institutions designed specifically to prosecute corruption, fraud and criminal acts, which caused a significant lag in the prosecution of entities and individuals. John believes that has changed significantly. He goes on to say that as a result of the diligent work of investigative reporters who brought some of the corruption to light, and the subsequent pressure from civil society, there have been appointments made from within the private bar that will see the days of the National Prosecuting Authority being a toothless dog coming to an end. This is obviously good news for the country.

John then stresses that the general public doesn’t always see the far-reaching effects of fraud and corruption in government and in international companies with subsidiaries in South Africa. We see what happens here. We see the more direct effects, like a crumbling infrastructure and shocking health care. What we don’t always realise is that small matters here can become large matters internationally. What we don’t see is the reputational damage that makes potential investors choose a different country to invest in. We don’t see the losses suffered by parent companies whose subsidiaries have been laid bare by the unscrupulous acts of their own employees. We’re talking about billions and billions of euros paid in fines, that sometimes lead to job losses in other subsidiaries around the globe.

“As Primerio, we have to convey these risks to companies looking to invest. We also have to be clear that while corruption doesn’t always lead to sanction, it can lead to reputational damage that also has a cost.”

He then lands on another truth. These risks are not only in relation to doing business with South Africa. Corruption is not just a South African, or even an African, phenomenon. He reiterates that this is why he formed Primerio in the way he did, with partners all over the globe, working together to minimise risk and give cutting edge advice on a case-by-case basis. No man is an island.

ON GLOBAL EXPOSURE

With one foot still in the corruption discussion, John segues into the importance of global thinking and global exposure. He takes pride in the fact that Primerio gives associates the opportunity to participate in international exchanges from early on. “It’s part of our strategic vision, that they hone their skills and become equipped with best practices from other countries. It’s the best way for them to learn exactly what the laws are like there, so that they’re able to advise here again.”

He says there is a risk in opening a door for others. They may not come back. But he also says that it’s a risk he is willing to take. “They’re thrown in the deep end, which is the best place to learn. At the same time, our firm has become known for training people sufficiently highly, which makes them very attractive candidates.”

“I believe in the opportunities internationally. I believe in the opportunities regionally in Africa. And I believe in providing the opportunities at an early age with the platforms that I belong to because I think that’s part and parcel of becoming more seen in the profession.”

He says it’s their duty to give back, and to

educate. “I’ve benefitted from some very significantly positive mentors in my past who provided the opportunities to me and I want to provide opportunities to those who work with me and for me because otherwise, what’s the point?” No man is an island.

ON WRITING

Another way that John gives back, is through writing. As an editor in some, and a contributor in others, John has his hand in several published works (listed on page 20). This form of written feedback benefits not only their clients, but also other legal practitioners who can gain knowledge to benefit their own litigation cases. No man is an island.

NO MAN IS AN ISLAND

As we come to the end of the interview, I am torn. I could sit for hours listening to the learnings-turned-teachings that John has to share, but at the same time, I yearn for a bit of time to digest the sheer breadth and depth of his knowledge and insight.

Without a doubt, the takeaway for me is that no man is an island. We are not alone. We cannot commit fraud and corruption without a ripple effect to the detriment of others. We cannot receive without giving back. We cannot learn without also teaching. We cannot grow to our full potential without the help of others. No man (or woman) is an island.

ART IN MOTION

My passion for photography became my profession when I moved to South Africa about 10 years ago. Early on I happened to engage with a number of clients within the performing arts, dance in particular. While also covering drama, music and other forms of artistic expression, the area of dance has always been like a magnet to me. I guess there is something addictive about capturing the human body in motion – and over time this has become my métier and an area where many of my job assignments originate.

It’s never dull having the opportunity to collaborate with enjoyable, super creative and passionate people on how to best translate their artistic vision into striking images. My larger photo shoots typically have tight schedules and many moving parts both in front of the camera and behind. I feel

energised working under that kind of pressure and I always aim to ensure that the few things I can control (the camera work, the lighting, the monitors, the picture quality) help to lower the levels of stress for everyone on set. I think it’s important that we always push our own boundaries, so I’m constantly looking for new ways to make my images more dynamic and interesting without taking attention away from the main subject. This could be through the use of creative lighting or by working with textures such as water, powder, smoke or fabrics. I typically lean into the uncertainty, and try to figure out how to get all the pieces to work together using a combination of past experiences and fresh experimentation. I think it’s really important to embrace the discomfort of doing something that feels unknown.

I can probably blame it on my Scandinavian roots that I often have a tendency to go for a pure, minimalistic look - but on the other hand I also enjoy an image that compels the viewer to come back and give it a second and even a third glance. Because we are constantly bombarded with images competing for our eyeballs - getting that third glance is certainly a noble goal.

WHO IS LAUGE SORENSEN?

Lauge’s journey from corporate IT professional to commercial photographer reflects a significant transformation in pursuit of balance and fulfillment. Originally from Denmark, he earned a master’s degree in engineering and built an international career across the US, India, Malaysia, China, and South Africa. While financially rewarding, the demands of corporate life led to intense pressures and constant travel.

In 2013, living in Shanghai, Lauge realised he needed a change. He and his wife decided to leave the corporate world and return to South Africa. Lauge had developed his photography skills as a serious hobby, which became the foundation for his new career as a commercial photographer in Johannesburg.

He often reflected on the “art versus science” condundrum in his corporate life and notes with interest the shift from a focus on science in his technological career to the artistic expression inherent in photography. This change revitalised his passion and allowed him to achieve a better work-life balance, aligning his career with his personal interests.

Lately I’ve found myself gravitating towards traditional analog photography for selected projects such as my portrait work. I’ve been very fortunate with many of my clients welcoming this rather old-fashioned approach. To be honest, I’ve rarely met a client who asks about how a photo was taken. I think that some projects just lend themselves more towards film photography and then it becomes a unique capability that adds another valuable dimension for the client.

While our digital photography gear today is amazing and provides a super-fast way of working, especially when collaborating with a large team of creatives, as I often find myself doing, there is something about film photography that’s strangely attractive. It’s not only the opportunity to put these iconic old cameras with a deep history back in action again, it is also the more contemplative approach you need to take while working these mechanical

wonders. It’s the sweet anticipation while processing the film and then the revealing moment when you hold that negative into the light for the first time and see what has emerged. I believe it’s been said that digital photography is a science, while film photography is a chemical miracle. There is some truth to that.

Personally I like the film look. I think it’s a bit more organic and authentic than the clinical and flawless edge-to-edge sharpness you sometimes get with a digital camera.

I’ve recently started a personal project with the working title “Joburg Arts”. It’s a portrait series featuring a wide range of notable people within the creative arts industry of Joburg, all being photographed in a retro black and white style. These four examples are photographed on large format film using a 1940s Graflex camera fitted with a lens originally used for aerial reconnaissance.

The Birth of Decorum

The inception of Decorum Stylists, casually known as “Decorum,” was rooted in a profound understanding of the correlation between attire and success. The couple recognised that to ascend both the corporate

Mphahlela and Rethabile first locked eyes across a university lecture hall, never imagining that spark would ignite a shared passion for high fashion. But destiny had plans for these ambitious professionals that went beyond stuffy offices.

The seeds that blossomed into Decorum were first planted during long late-night conversations at university. Though he pursued accounting and she dove into law, fashion called to them.

FACE A CHOICE - TO LET THE TRAUMA BREAK US, OR TO EMERGE STRONGER. THIS IS ANGELA GOUWS’ INCREDIBLE STORY OF THE TRAUMAS SHE ENDURED, AND HOW SHE FOUND HEALING AND WHOLENESS.

My story is not unique; I am just one of hundreds of thousands of women who have faced battles that have torn them apart. When I first heard about self-love, choosing yourself, or embarking on a healing journey, I would often roll my eyes, thinking, “Oh gosh, here comes another airy-fairy tree hugger.” That changed, however, when it was my turn to confront life’s harsh realities.

Let’s rewind to January 2003. I thought I had the perfect life—the fairytale existence. I was thriving in my career at a prominent movie studio, and I had just become engaged to the man of my dreams. I believed this was it; everything I had ever wanted. Growing up in a divorced family, I had never experienced a picture-perfect marriage or childhood. I promised myself I would be different, that I would create the Disney life I had always dreamed of.

But everything changed in February 2003. My fiancé made a terrible decision one night, driving while intoxicated. On his way home, he collided head-on with another car. His injuries were nearly fatal, and he took the life of the other driver, resulting in a 15-year sentence in a maximum-security prison in Los Angeles. My world was shattered.

In March, we received the news that I was pregnant with our first child. Although the situation was far from perfect, I was determined to make the best

of it. I had always wanted to be a mother, and despite the difficult circumstances, I believed I could make it work. However, life had other plans. At five and a half months into my pregnancy, I suffered a miscarriage. That was blow number two. I felt everything breaking apart, and I lost myself entirely. In a bid to numb my pain, I pushed the loss deep into my soul.

A few months later, I went out with friends to a club on Sunset Boulevard, a busy street lined with restaurants and bars. I stepped outside to take a phone call. A black limousine pulled up beside me. I was pulled inside and brutally sexually assaulted by two men. In my desperate attempt to escape, I screamed and fought back. A friend who had come looking for me heard my cries and threw himself in front of the limo as it tried to drive away. In the chaos, I was pushed out onto the street, completely naked, in front of hundreds of onlookers. Someone rushed to cover me with a coat, shielding me from view.

A film crew doing an interview across the street captured the moment, and soon the police arrived. The men who assaulted me were arrested, and I was taken to the hospital. I felt humiliated, confused, and terrified. With no family nearby, I was taken in by my fiancé’s mother, who had to cover the mirrors in her home to shield me from the extent of

my injuries. I also bore invisible scars that I would never forget.

I didn’t want to confront what had happened. I thought if I buried my feelings and moved on, everything would simply disappear. After months of weekly visits to the rape crisis centre, I convinced myself I was okay—until one night, sitting alone in my apartment, I lost the will to keep fighting and attempted to take my own life. As if divinely guided, a friend of mine intervened and I was put on a 72-hour mental health hold in a secure facility - a reality check that has stories I simply cannot tell yet. But one day I will.

I was broken, battered, and exhausted—not just physically but mentally. I longed to move on and forget the previous year. However, my world shattered again during a follow-up gynaecological appointment when my doctor informed me that the trauma I had suffered meant I would never be able to have children. This news felt like the final nail in the coffin of my dreams. I was overwhelmed with anger at God for taking away my chance to be a mother. A year later, I met a man and hoped for safety and the possibility of love again. Unfortunately, he turned out to be someone who inflicted physical, mental, and emotional pain on me for seven long years, exposing me to extreme domestic violence. After everything I had endured, I somehow convinced myself that I deserved this treatment, that it was somehow my fault.

The turning point came one night when I discovered he had been unfaithful. In a moment of desperation, I took his keys, and he tackled me from behind, smashing my face to the ground. As I pushed myself up, blood dripping down my face, I realised he might kill me. For the first time in a long time, I prayed on my knees, sobbing, begging God to help me escape. Miraculously, the very next day, my childhood pastor reached out, offering me an incredible job opportunity in South Africa. I had to leave immediately. His words—“I don’t know what is going on in your life, but it’s time to go”—would prove prophetic. Without realising it, I was getting exactly what I had prayed for. Within two weeks, I had packed my life into boxes and was on my way to Texas, preparing to board a flight to South Africa.

After a year of therapy to confront my childhood trauma and the effects of my past, I met my husband in church. I had to tell him that I came with some scars and some baggage and that I would never be able to have children. Although it was very difficult for him to hear, he was extremely understanding. Nine months later, we were engaged, and a year after that, we were married.

Then one morning, I woke up feeling unwell and instinctively knew something was off. “I

think I might be pregnant,” I told him. The test came back positive, and I was ecstatic at the thought of getting a second chance at motherhood. But soon, I began to experience pain and cramping. Dread washed over me as I thought, “Not again. Please, God, I can’t endure this again.”

Without telling my husband, I rushed to the emergency room. After tests, the doctor delivered the devastating news: my uterus and ovaries were pushing against each other and I was losing the baby. I refused to accept it. I had faced too many challenges to give up now. I took out my iPad, turned to Psalm 91, and began to fight for my child.

The doctor warned me that if I didn’t calm down, I would need to be sedated. I shouted back, “You don’t understand what I’ve been through!” I refused to back down, fighting for my child against all odds. After seven agonising hours, the doctor returned with news I could hardly believe: “Congratulations, you’re still pregnant.”

My pregnancy was fraught with complications, including a tumour growing alongside my baby. Despite numerous close calls and doctors advising me to prepare for the worst, I refused to surrender. I kept speaking life into my son. On September 4, 2015, my son Jesse was born.

Two years later, on April Fools’ Day, I discovered I was pregnant again, this time with a little girl. Once again, I faced a high-risk pregnancy, dealing with blood clots and daily injections of blood thinners.

Delivery day was harrowing; I could hear the doctor saying, “We’re losing her.” In my silent prayers, I fought once more for my life and for the life of my daughter. Miraculously, my beautiful baby girl, Jordyn, was born safely, and I was brought back from the brink.

Despite my joy, my body began to fail me again. I gained 135 kilograms, and doctors struggled to diagnose my condition. I felt like I was dying, unable to breathe or even recognise myself. In the depths of my despair, I realised that I was under spiritual attack. I knew the devil would not fight this hard if God didn’t have a plan for my life. But man, was I tired of God giving His hardest battles to this battered soldier. I had never dealt with the scars of my past, and I was exhausted.

Finally, I sought help from a specialist who proposed a trial medication. Within two months, I experienced a remarkable turnaround; I lost 75 kilograms and slowly began to reclaim my life. However, my marriage was crumbling under the weight of our struggles. I knew I couldn’t let my children believe this was what love looked like, so I chose to end my marriage. It was painful, but I had to consider their future.

I found myself alienated from everyone I

once knew, as many turned their backs on me. One night, while working at a golf tournament, I sat by a pond with a friend. The sky was just filled with stars. In the silence, he looked at me and asked, “Are they as beautiful as you see in the movies?” He went on to explain that he had a degenerative eye disease and had never been able to see the stars.

In that moment, I realised how much I had taken for granted—the beauty of life and the privileges I had overlooked.

This was my awakening. I could choose to dwell on my past heartaches or embrace a new life filled with passion and purpose. I could choose bitterness or find the strength to heal and build a legacy for my children. I could be bitter, or I could be better. It was my choice.

Tragedy struck again when my friend lost his battle with depression and took his own life. Yet, through my grief, I knew he would have been proud to see me standing strong today. Over the past year, I have poured myself into serving others. I’ve won awards, advocated for the voiceless, and served communities in need. My unshakeable tenacity and confidence have been recognised. I boldly tell my story of survival wherever I go. I stand here with a new body, a new mind, and a new mission - to tell you that you are not alone.

What type of car do you have?

I recently sold my Lamborghini Huracan (and have not found a replacement as yet). I am also restoring a 1952 Porsche 356.

When did you fall in love with supercars and classic cars?

I was brought up on cars. My dad’s hobby was rebuilding cars. My first car was a VW Beetle which arrived at our house on a flatbed in pieces. Twelve months later, it was a work of art.

When did you purchase your first classic car or supercar and how old were you?

I bought a 2004 Lamborghini Gallardo manual in 2015.

Did you name her? Nope.

What goes through your mind when it is just you and the open road?

The need to balance adrenaline and mental clarity are two of the greatest challenges that driving a supercar delivers to me. The focus to drive fast, and have nothing in your thoughts but what you are doing right there and then, 100% focus.

When last were you able to enjoy this type of drive?

A few weeks back I attended the Lamborghini Cape Rally down in the Western Cape, it was a week filled with good friends, fast driving and the most amazing scenery our country has to offer.

Are there any events that you look forward to each year that hold a special place in your heart, where you and fellow supercar and classic car enthusiasts can get together and enjoy the open road? Most definitely. I absolutely love the Cape 1000 that takes place every March. It’s geared towards classic cars, hence I am restoring the old Porsche. Of course I also look forward to any Lamborghini event that takes place throughout the year.

Does your family share your passion for cars?

Yes, we are a household of petrolheads. Two of my sons race karts on a fulltime basis, both locally and internationally. We are all also staunch Red Bull and Max Verstappen fans.

– THE SKELETON COAST

Namibia defines itself by its unique and very different landscapes, sometimes great distances apart, each alluring and extra-ordinary, each boasting natural beauty that is rare and special. One of these areas is the Skeleton Coast, a deserted stretch of nothingness and home to remnants of ships that lost their way at sea. This 1,570km stretch of coastline fringes Namibia’s northern Atlantic coastline where the desolate Namib Desert meets the sea. Keeping the shipwrecks in their minds’ eye, innovative hoteliers created Shipwreck Lodge, which opened in 2018.

This exceptional lodge was created by French hotelier Arnaud Zannier, who is well-known for his Cambodian resort called Phum Baitang, and some stylish European hotels, including Le Chalet in the jetset French ski resort, Megève.

Zannier learned all about Namibia from movie star Angelina Jolie, who’d spent five months in his Cambodian establishment while filming a movie and also visited the wildlife reserve, the N/a’an ku sê sanctuary which is run by conservationists Rudie and Marlice van Vuuren. With the van Vuuren’s assistance, Zannier purchased land adjoining the reserve and built Omaanda there. He insists that the N/a’an ku sê sanctuary is an extension of his property and his mission – cheetah, leopard, lion, rhino, elephant, zebra and a pack of wild dogs live there. They were released into the wild by the sanctuary in the hope that one day they can live in national parks.

Kakaoland in north-West Namibia is a remote and wild area, known for its towering mountains, sand dunes and huge expanses of desert. It’s home to the nomadic Himba tribe, whose settlements are dotted here, as well as various forms of wildlife that have adapted to the desert terrain, including elephants, lions and giraffes. It really is a no-man’s-land, an area few will discover in their lifetime, which is what makes it so exciting.

The Hoanib River Bed in Kakaoland is one of Namibia’s few waterways – it floods once a year, resulting in a shock of lush greenery. This is where you’ll find Hoanib Valley Camp, set on a craggy conservancy, a partnership between local communities and the Giraffe Conservation Foundation, the only Africa-wide giraffe conservation organization in the world.

ZYL LIVE IN DIFFERENT CITIES, SO EVERY WEEKEND IS AN ADVENTURE. THEY VISIT THE MOTHER CITY REGULARLY SO WE ASKED THEM TO GIVE US A LIST OF HOW THEY SPEND 48 HOURS IN CAPE TOWN.

Jean Du Plessis is no ordinary doctor. This renowned GP’s high-profile patients include the cream of Joburg’s crop and every single member of the Joburg Ballet Company. He’s a true gem with many hidden facets. An accomplished classical singer (Jean is a baritone), he regularly gives recitals (some of these are for charity, but he’ll never tell you that!) with his pianist Sonja van Zyl and other musical luminaries. A world traveller, he shares his adventures on Instagram. He’s one of Joburg’s bestdressed men with an enviable shoe collection. And he’s the nicest, kindest, funniest person you’ll ever meet.

Jean and Gideon don’t live in the same city. Jean works and lives in Joburg, and Gideon is Bloemfontein-based. Both work in the medical field, so their lives are pretty hectic. As a result, they turn every weekend into a wonderful adventure. Aside from visiting each other’s homes, the couple enjoy exploring the Cape at least once a month. “Most of our lives revolve around food,” Jean admits. DINING OUT

Chef’s Warehouse in Beau Constantia is the couple’s best Cape Town restaurant. Jean talks about the “fantastic views of Constantia accompanied by a fine dining set menu. Every time we visit, we enjoy one of the best meals we’ve ever eaten in South Africa”. Another favourite is FYN in Parliament Street, home to a superb South African/Japanese fusion menu. Gideon raves about the restaurant’s “understated elegance, stunning Asian interior and superb meal presentation”.

Cape Town sunsets are legendary and the one at Sunset at Mantra Café in Camps Bay is epic, with its iconic mural of men jogging on the beach. “I love the ocean views and how the sea constantly changes,” Jean says. The menu features café-style pastas and burgers and Mantra is “a great place to go for brunch, too”.

Jean and Gideon also enjoy travelling to Babylonstoren, to enjoy fabulous food, the stunning surroundings and superb wine tasting. Both always pick up gorgeous gifts and excellent wine when they visit.

ARTS AND CULTURE

As avid art lovers and collectors, Jean and Gideon ensure they’re in town when the Investec Cape Town Art Fair is on. Africa’s largest contemporary art fair is a platform for art galleries, collectors, artists and curators. They’re already planning their trip for February 2025 to attend the next one.

The Cape Town Opera House is the only place in South Africa where one can still hear “world-class opera live,” Jean tells us. The couple also regularly attend theatre productions at the Baxter Theatre whenever they’re in town.

ADVENTURES

Jean says the city’s Company Gardens is “the closest we can get to experiencing a European park”. They enjoy walking along its tree-lined paths, having tea and people-watching at its

little restaurant. Other regular stops are hunting for treasure in the charming shops in scenic Kalk Bay, wine tasting and dining in the Winelands at the breathtaking Rust en Vrede in Stellenbosch and having a memorable breakfast or lunch at Hemelhuijs, an elegant eatery in the heart of the city.

The couple’s favourites include the legendary Belmond Mount Nelson; they visited there for Gideon’s birthday surprise last year and enjoyed a superb picnic in the gardens with friends. Eight women, strangers to one another, embarked on a safari trip to the QWABI Private Game Reserve, unaware that, in the span of just a few days, we would forge meaningful friendships and make unforgettable memories.

As we entered the Waterberg, the landscape unfolded like a vibrant tapestry. Majestic mountains loomed in the distance, their rugged beauty cloaked in an ethereal mist. The air was infused with the sweet scent of wildflowers blooming in a riot of colours— yellow, purple, and pink. Indigenous trees, such as the iconic Waterberg scrub and the hardy Marula, dotted the terrain, providing a sanctuary for the diverse wildlife that calls this region home.

Spanning over 11 000 hectares, the QWABI Private Game Reserve is a haven for nature lovers and wildlife enthusiasts alike. The reserve is home to the renowned Big Five: the majestic lion, the elusive leopard, the formidable elephant, the powerful buffalo, and the endangered rhinoceros.

Expert game rangers, passionate about conservation, guided us through this pristine

wilderness, sharing their extensive knowledge of the ecosystem and ongoing conservation projects. One such ranger, Heinrich Carstens, graciously demonstrated his love for every inch of this property by sharing stories about the endangered Southern Ground Hornbill, the mating rituals of lions, and the hunting techniques of lionesses, to name a few.

We were privileged to spend time with Dr André Uys, a wildlife veterinarian with over 15 years’ experience in conservation management. He shared his insights into the region’s spectacular scenery and incredible biodiversity, highlighting the challenges of re-establishing populations of species like elephants and lions, which QWABI has successfully achieved in recent years. Dr Uys also discussed the exciting advancements in technology, particularly AI and security systems, that are aiding conservation efforts, such as the protection of the endangered white rhino.

After an exhilarating game drive, punctuated by a surprise dinner under the stars, we returned to LETAMO Lodge, a stunning retreat that seamlessly blends luxury with nature. Before we continue on our journey, I am compelled to mention Pastry Chef Claudine’s Date Balls.

According to locals, the humble date ball has become something of a rite of passage in the Waterberg. They fondly share a tale (while perhaps also pulling my leg) that offering these delectable bites to visitors represents the mountains welcoming travellers’ souls into their fold.

Whether true or not, I can categorically state that you haven’t lived until you have tasted Chef Claudine’s mouthwatering date balls. I have never been a fan of dates myself, but these were so good that I selflessy bribed, begged and pleaded to get the recipe to share with you.

PASTRY CHEF CLAUDINE’S DATE BALLS

Ingredients:

• 226g pitted dates, chopped

• 1 cup white sugar

• ½ cup butter

• 3 cups Rice Crispies

• 1 cup chopped pecan nuts

• 1 teaspoon vanilla essence

• ½ cup confectioners’ sugar

Method:

1. On low heat, cook the dates, sugar, and butter until the sugar dissolves.

2. Remove from heat and mix in the Rice Crispies, pecan nuts, and vanilla essence.

3. Roll the mixture into balls and coat each one in confectioners’ sugar.

THE POSITIVE SIDE TO Lunch

WHAT’S ALL THE FUSS ABOUT “BUSY, BUSY” IN JOHANNESBURG? EVERYONE IS RUN OFF THEIR FEET, SWEATING THE SMALL STUFF, BREATHING HEAVILY, JUMPING THROUGH HOOPS.

Somehow no matter what month it is we seem to be in a position where stress indicators fly off the charts, as we beat our deadline drums and rush around the clock in a frazzled fiasco to the 15th of December when most of Johannesburg shuts down.

From school obligations to deadlines and daily admin, we’re on the clock. But who’s clock is it anyway? Our own. And we’re wasting it on too many ‘to-do’s’ and not enough ‘tobe’s’. This is why I take lunch. I believe in the lunchbreak, the whole lunchbreak and nothing but the lunchbreak.

To fully appreciate this idea of ‘lunchtime’, one must first understand that lunchtime is a time for lunch. Not working, not texting, not catching up. Actual lunch. And usually, it lasts for an hour. It is a ritual that was shaped by the Industrial Revolution in the 19th century –which, in context, was a super stressful period. Labour laws back then already recognised the importance of ‘taking the lunch break’.

Today, we praise busyness as a multitasking gap of eating on the run, snacking at the computer, munching in our cars, or watching

our kid’s soccer game with one eye on our laptops, the other on the field or on WhatsApp – all while unconsciously consuming a takeaway salad dangling from your fork. By every stretch of the imagination, this is not what the Industrial Revolution had in mind – and neither should we.

My take on lunchtime is quite simply this: if done correctly it will have long-term effects. If done incorrectly, it will have long-term effects. The end. Depending on how you take your lunchtime each day will render the effect, either negative or positive, for the long haul. The negative side of lunchtime is when we use this space for making that obligatory call, checking a few emails, doing groceries, planning out the school week, working through lunch (the worst!). All that thinking kind of stuff. Basically, this is just a series of gap fillers that becomes a toxic admin hole, rather than a pause for purpose.

The positive side of lunchtime is a method of ‘Lunchtime Mindfulness’ – a method I have been using for years, to combat my own stress indicators. Lunch for me, isn’t just about the food we eat, but can also include anything that constitutes a mindful pause in the busy day – one dish, one garden or one really good daytime series. Whether you’re tucking into a wholesome dish during lunch, or weeding the garden or tuning into your favourite soap opera for an hour, start to pay mind to it.

Improving your wellness is about choosing the positive side of ‘busy’ and re-establishing a conscious connection with your lunchtime.

When we appreciate that our minds and bodies are ours to love and to lunch with, we start to believe we’re worthy of the lunch break. By extension, we make space for rituals that are ours to keep and, at the very best, ours to sustain through our busiest periods. Here are three of my favourite lunchtime rituals, to snack on:

Lunchtime Cooking:

Mindfulness in the kitchen can start with preparation of a simple, fresh lunchtime salad: focussing your attention on washing the tomatoes, slicing the fresh cucumber, crumbling the feta, then sitting down in a quiet space and eating it, one conscious bite at a time. This is a mindful practice that requires no special technique nor added pressure – just slower movements with intended outcomes, done and dusted in one hour. The recipes in my All Sorts of One Dish Wonders cookbook were pretty much built on this exact concept – cooking with more mind and less fuss. It works.

Lunchtime with Nature:

Mindful lunching can include gardening too. I believe in getting out into nature, feeling the grass under your feet. Taking your lunch under a tree, or watering your plants is a wonderful way of reconnecting you to the little things that matter. How do you create lunches and snacks that are healthy, quick, and still interesting enough to keep the kids from swapping them for a friend’s mystery chips?

Here’s a guide for all the hard-working, exhausted parents juggling work calls and washer cycles, crafted to make lunchbox prep feel more like a minor speed bump than a roadblock.

TIPS TO SURVIVE THE LUNCHBOX WARS

• Embrace the Batch Prep Life: Pick one day (Sunday?) to prep the basics for the week. Mix up some snack mix, cook some chicken breasts, roll some wraps, and bake a tray of egg muffins. For a treat, how about some tasty lemon bites? Future You will thank Present You when Wednesday rolls around.

• Keep It Simple: Not every lunchbox has to be a work of art. A few well-chosen, healthy ingredients can go a long way. Kids don’t care if it’s Instagram-ready; they just want something tasty that they can eat quickly.

• Sneak In Nutrition: If your child is a picky eater, wraps and muffins are your friends. These are easy ways to hide veggies or protein without the lunchbox detective sniffing them out. A little grated carrot in a wrap or some spinach in an egg muffin can go completely undetected.

• Construct the perfect lunch box: Think “balanced meal”. Aim for protein, carbs, fruit, and veggies. An easy formula: half the lunch box is an apple and carrot sticks (healthy, check), one corner is something protein-packed (cheese, maybe?), and the last part is the “fun snack.”

Egg muffins are a lunchtime miracle. They’re compact, protein-packed, and—if you use whatever veggies and cheeses are hanging out in your fridge—they’re practically a little celebration of leftovers. Not only do they make great lunchbox fillers, but they’re also a solid breakfast option on rushed mornings. Best of all they’re freezable.

Ingredients:

• 6 eggs

• 1½ – 2 cups chopped vegetables (try spinach, carrots, tomatoes, bell peppers)

• ½ cup grated cheddar cheese

• ¼ cup crumbled feta cheese

• ½ cup milk

• Salt, pepper and a pinch of dried mixed herbs.

Method:

1. Preheat your oven to 180°C and spray a muffin tin with non-stick spray.

2. Whisk the eggs in a bowl, add the balance of the ingredients except the grated cheese, then pour the mixture evenly into the muffin tin.

3. Scatter the grated cheese on top.

4. Bake in the oven for 18-20 minutes or until the muffins are set and lightly golden on top.

The Humble Wrap

If you haven’t already met the versatile, dependable tortilla wrap, it’s time. Wraps are lunch’s unsung heroes, wrapping up everything from veggies to hummus to last night’s leftovers in a neat, handheld package. They’re easy to make and even easier to customize based on what’s in the fridge.

Ingredients:

• 1 Tortilla wrap

• 2 Tbsp hummus (store-bought or homemade)

• Sliced veggies : cucumbers, carrots, bell peppers

• Black beans (optional)

• Cooked chicken fillet strips (for extra protein)

Method:

1. Lay your tortilla flat and spread a thin layer of hummus all over.

2. Add the veggie sticks in a line on one side of the tortilla along with the beans and chicken strips if using.

3. Roll it up tightly and cut into halves, wrap in foil, or cut pinwheel slices if you’re feeling fancy.

But it doesn’t end here, how about snack time without the guilt?

Let’s face it: snack duty can be tricky. You want something that doesn’t leave the kids bouncing off the walls but still keeps them satisfied. And no, I’m not talking about the superfood chia seed concoction that requires 14 ingredients and three hours to prep. Rather I’m talking about bite-sized snacks that take a few minutes to throw together and will actually get eaten.

Think about simple combos that are portable, made with minimal fuss, and have just the right balance of nutrients to keep your kids going—without the sugar crashes.

Plus, you can whip up a batch and freeze half for those inevitable “Oops, I forgot to make snacks” moments.

Super Duper Energy Boosters:

Banana Oat Balls

Ingredients:

• 2 ripe bananas

• 1 cup of oats

• A handful of chocolate chips or dried cranberries

Method:

YourNew Best Friend

1. Mash the bananas in a bowl, then stir in the oats and any fun extras.

2. Roll into small balls (think bite-sized) and pop them onto a lined baking sheet.

3. Bake at 180°C for about 12 minutes, or until they look golden and smell amazing.

Better-for-you Lemon Bites

Ingredients:

• 2/3 cup roughly chopped dates

• ¼ cup cashews

• ¼ cup flaked almonds

• ½ cup shredded coconut

• 2-3 tsp lemon zest

• 1 tsp lemon juice

• 1 Tbsp low fat mayonnaise

Method:

1. In a blender, blitz together the nuts and dates. Transfer to a bowl and mix in the balance of the ingredients.

2. Spoon the mixture into a flattish container, cut into squares and refrigerate until ready to serve.

With these easy recipes at your fingertips, you might just find the elusive lunchbox success you’ve been chasing. And remember, as long as your kids don’t trade them away, you’re winning the lunchbox game.

Fabulous FESTIVE Feasts

SPICE CRUSTED RACK OF LAMB

RACK OF LAMB

• 1 rack of lamb, trimmed

• 1 Tbsp olive oil

• Sea salt & freshly ground black pepper, to taste

• 2 Tbsp butter

• 2 Tbsp garlic, finely chopped

• 2 Tbsp shallot or onion finely chopped

• 60g breadcrumbs

• 2 Tbsp fresh rosemary finely chopped

• 3 Tbsp Dijon mustard

Method

1. Preheat oven to 200°C. Rub lamb with the olive oil and season lightly.

2. Heat a large pan over medium-high heat. Once hot, sear the lamb until browned on all sides. Set aside.

3. Reduce heat to medium. Using a damp paper towel and tongs, carefully wipe the pan and remove any seared pieces of lamb.

4. Add butter, garlic and shallots and cook for 2–3 minutes, or till shallots are translucent and tender. Take care not the burn the garlic.

5. Add breadcrumbs and rosemary, stir to coat and cook 6–8 minutes (do not allow the breadcrumbs to brown). Remove from heat.

6. Brush seared lamb with 2 Tbsp mustard, then gently press the breadcrumb mixture onto the lamb. Place on a baking tray. Roast for 15–20 minutes, or until cooked to your liking. Remove from oven and rest for 5–8 minutes. Slice before serving.

CHILLI CHOCOLATE SAUCE

• 1 bottle (750ml) good red wine (Or whatever you have that’s open)

• 500ml beef stock

• 1 bar of 70%–80% cocoa dark chocolate

• 1 tsp chilli powder

• 1 tsp brown sugar

• Salt & pepper for seasoning

Method

1. Place wine, stock and sugar in a small pot on medium heat and let it simmer until reduced by half.

2. Place cut chilli in pot. Simmer for a further 10 minutes.

3. Remove pot from heat.

4. Break up the chocolate into small pieces and place into the pot to melt into the sauce.

5. Season with a touch of salt and good grinding of black pepper.

MASHED POTATOES

• 1kg floury potatoes, cut into chunks

• 50g salted butter plus 1 Tbsp

• 50g whole milk.

Method

1. Tip potatoes into a large pan, cover with cold water and sprinkle with a generous pinch of salt.

2. Set pan over high heat and bring to boil. Once boiling, reduce heat to simmer and cook for 15–20 minutes until potatoes are very tender (they should be easily pierced with the tip of a knife).

3. Drain well, then return to the pan and leave to steam dry for 5 minutes.

4. Pass potatoes through ricer for lumpfree mash and into large bowl (best to do this in batches). Or mash with potato masher till smooth, then press through a sieve and use back of spoon to remove remaining lumps.

5. Tip salted butter, milk and seasoning into the bowl with the hot mash. Beat everything with a wooden spoon or spatula till butter has melted and mixture is smooth and creamy. Add a splash more milk to loosen, if needed. Top with remaining 1 Tbsp butter and let it melt for a few seconds before serving.

YORKSHIRE PUDDING

• 250ml milk

• 250ml egg

• 250ml flour, sifted

• Pinch salt

• Pinch mustard powder

• Butter, cubed, for greasing pan

Method

1. Mix all ingredients together to form a smooth batter. Refrigerate for 1 hour.

2. Preheat oven to 200°C.

3. Grease muffin pan well with cubes of butter and place in hot oven.

4. Remove from oven when butter is sizzling. Pour in batter three-quarters full.

5. Place immediately back into hot oven and bake till puffed and golden.

LUXURY FRUIT MINCE PIES

PASTRY CRUST

• 250g butter

• 250g icing sugar, sifted

• 675g cake flour, sifted

• 8 eggs

FILLING

• 1kg apples, peeled, cored & roughly chopped

• 250g currants

• 250g dried apricots, chopped

• 200g mixed fruit peel

• 500g castor sugar

• 250g ground almonds

• 1 Tbsp mixed spice

• 1 Tbsp ground nutmeg

• 1 Tbsp ground cinnamon

• Quarter cup brandy

• Castor sugar for finishing

Method

1. The filling can be made in advance and kept in a sealed container in the fridge for up to 1 month.

2. To make the pastry, cream the butter and icing sugar.

3. Add eggs and flour alternatively to form a silky dough.

4. Place in refrigerator to rest.

5. To assemble, roll out the chilled dough on icing sugar.

6. Cut into desired shapes and sizes.

7. Fill with desired amount of filling.

8. Chill in refrigerator while preheating oven to 180°C.

9. Bake until golden.

10. Remove from pan and roll in castor sugar.

BÛCHE DE NOËL

CHOCOLATE GENOISE SPONGE

• 85g flour, sifted

• Pinch baking soda

• 6 large eggs

• 160g castor sugar

• 10ml vanilla

• 70g butter

• 1 can black cherries in syrup

CHANTILLY CREAM

• 250g whipping cream

• 40g icing sugar, sifted

• 1 tsp vanilla extract

• Chocolate ganache to decorate

• 200g cream

• 200g dark chocolate buttons

Method

1. Prepare the sponge. Preheat oven to 180°C.

2. Line baking tray with baking powder and set aside.

3. Sift dry ingredients into a bowl.

4. In a separate bowl, add eggs and castor sugar. Whip till stiff and thick. Add vanilla and stir through.

5. Gently fold in dry ingredients in 3 equal amounts into the egg mixture. Fold until fully incorporated.

6. Pour the mixture into a prepared baking tray and spread evenly.

7. Bake 12–15 minutes.

8. Drain cherries, reserving the syrup, and chop into quarters.

9. Place parchment paper onto a work surface. Flip cooked sponge onto the paper. Peel off the paper at the bottom of the cake and roll. Set aside to cool completely.

10. For Chantilly Cream, whip cream, icing sugar and vanilla together to form stiff peaks.

11. To prepare Chocolate Ganache, heat cream, add chocolate buttons. Mix to form smooth paste.

12. To assemble, soak rolled sponge with cherry syrup using a pastry brush.

13. Unroll cooled cake and soak with remaining cherry syrup.

14. Spread layer of Chantilly Cream evenly. Now spread cherry pieces evenly on top.

15. Roll up cake, removing parchment paper. Wrap in plastic wrap and refrigerate 1 hour.

16. Slice cake into 2 using large serrated knife. Cut longer piece for the log and smaller piece for the branch.

17. Using Chocolate Ganache, attach branch to log. Spread remaining Ganache over entire log. Using a fork or spatula, create bark lines all over.

18. Decorate as desired.

THE ULTIMATE GINGER COOKIE

• 250g butter

• 1 cup sugar

• 1 egg

• 1 cup golden syrup

• 2 tsp brown vinegar

• 2 Tbsp ground ginger

• 1 tsp ground cinnamon

• Pinch cracked black pepper

• 4 cups cake flour, sifted

• 1 tsp baking powder

• 2 tsp bicarbonate of soda

• Icing sugar for dusting

Method

1. In a saucepan, melt butter, golden syrup, sugar and vinegar. Allow to cool and beat in the egg.

2. Mix the sifted dry ingredients in a bowl. Add butter mixture to the dry ingredients to form a silky dough. Ensure dough is well-mixed and all ingredients blended.

3. Wrap in cling wrap and refrigerate for 1 hour to rest.

4. Preheat oven to 180°C.

5. Grease and line cookie trays.

6. Roll out the dough on icing sugar.

7. Cut into desired shapes and sizes.

8. Bake until golden.

Tip

This recipe can be used to create cookies, gingerbread houses, iced biscuits and gingerbread men.

FUN Festive TIPPLES

AS I WRITE THIS WE ARE JUST 44 DAYS AWAY FROM CHRISTMAS. TODAY’S DATE IS 11/11. 44 AND 11/11 ARE BOTH EXTREMELY AUSPICIOUS NUMBERS. THEY ARE ANGEL NUMBERS AND HERALD ALL KINDS OF PIXIE DUST, MAGICAL MOMENTS AND HUGE GOOD FORTUNE TO ALL WHO CARE TO LOOK AROUND AND FIND IT…

I adore the Festive Season and everything it brings with it. It’s one of those universal holiday seasons that invites everyone to join, so whatever religious persuasion you are (or aren’t), you are equally welcome to join in celebrating the beauty, goodwill and happiness of this special time of year. The shops are oozing with goodies sparkly and pretty. There are carol services and streetlights; cities around the globe dress their shop windows exquisitely; and normal humans dress up in Father Christmas outfits and “ho-ho-ho” around shopping malls entertaining excited children. It’s really magical and happy.

The anticipation grows from the end of October and whether you are planning to engage in the religious aspects of Christmas or not, you cannot ignore the overall sense of happiness and excitement that the Christmas season injects. Of course, food and drink are very much a part of all these celebrations. So, I explored my immediate surroundings and discovered a few really cool spots for you to pop into during the holidays. I have also tasted and tested these spots and written about them here. And I bring you up to speed on what drinks are trending for the coming Festive Season.

THE PALOMA COCKTAIL

The cocktail on everybody’s lips right now is the Paloma, so I decided to go straight to the heart of Cocktaildom and caught up with the little cutie-pie who is Julain Short, owner of Sin + Tax Bar in Parkwood and mixologist/ booze guru extraordinaire. This cocktail’s origins lie in Mexico (‘Paloma’ means ‘dove’ in Spanish) and the ingredients are easy. Julian tells me that the recipe requires a highball glass, some big ice cubes, a few shots of Tequila (Silver), a splash of fresh lime. This is then topped up with grapefruit soda (Woolworths has the best one, I think). This cocktail isn’t only trending in Joburg; it’s been popular internationally this year and is a gorgeous mouthful of refreshing happiness. It’s pretty, too!

Tempting dishes to sample with your choice of drinks include scrumptious 200g burgers, grilled chicken in Lemon & Herb Sauce, PeriPeri and their speciality, Xai-Xai Chicken with a creamy Peri-Peri sauce. Watch out for a selection of great meal specials, too.

FILOTIMO GREEK RESTAURANT

This vibey little Greek Taverna opened bang next door to Barrels & Bottles a few months ago. Owner, Anthony Kapetanakis, is proudly Greek with a deep connection to his heritage on the island of Kefalonia. Together with his wife, Eleni, he brings a wonderful Greek ‘joy of living’ atmosphere to Cramerview Centre. With owners with more than 30 years in the food industry, customers are rewarded with a menu full of delicious and authentic Greek dishes. The restaurant itself is decked out with colourful décor; live music (sometimes); plate throwing; fabulous service and a great sense of community. This little space buzzed with activity and fun; it’s been pumping since day one. I highly recommend the lamb chops (absolutely delicious!). Sometimes Lamb Kleftiko is on the menu, a dish I’d happily leave home for). And then there’s the grilled haloumi – man-oh-man!

Anthony provides a decent wine list, but I’m going to recommend you order a bottle of perfectly chilled Moschato Bianco, available at the restaurant all the way from the Kakoulidis winery in Macedonia, Greece. It’s superb while you’re spending a hot day in the courtyard. Of course, you’ll need a platter of Greek aperitifs and the Mochato, which smells and reminds you of beautifully ripe litchis. It’s a very happy, relaxed place to spend time this Festive Season.

WINE NOT?

Now let me get you up to speed with some of my favourite wines from Quoin Rock… Quoin Rock is releasing a bubbly known simply as ‘FESTIVE’. It will be on the shelves for Christmas at R350 a bottle. Predominantly Pinot Noir with around 30% chardonnay, this lovely bubbly exudes the quality and pedigree we have grown to expect from this premium farm that has been raking in the awards.

Speaking of awards, one of my favourite wines from Quoin Rock is a Chenin Blanc bottled under the KNORHOEK label. It forms part of the old vines project and is harvested from a single block of Chenin planted in 1980. Winemaker Schalk Opperman goes to great lengths to ensure the quality of this hugely awarded wine. To name some of its recent awards: Standard Bank Top 10; Winemag Old Vine Report Top 10 (95 points); Concours Mondial Bruxelles Gold; National Wine Challenge Double Gold and Tim Atkin 93 Points. It retails at around R200 a bottle and I strongly advise you get some in to pair with roast turkey and all its trimmings if you’re celebrating on Christmas Day.

East, West, North or South, Joburg has plenty to offer at any time of year. And the very best part of Johannesburg is the people. We really do win hands down in the fun people department, so put on your party kit and whether it’s Paloma’s at Sin + Tax, bubbles and Chenin at QLounge, Slushy Gins at Barrels & Bottles or ‘Litchi wine’ and lamb at Filatimo’s, get out there and have yourselves a fabulous Festive Season!

What sparked your interest in insurance?

It was a career and industry that always appealed to me, as you have the opportunity to learn about many other industries whilst assessing their risk. It also doesn’t hurt that your income is annuity-based.

What type of insurance does Silvercrest offer?

If every person contributed to a single well-run charity on a regular basis, in some small way, it would change the world. Silvercrest recently sponsored an event with JoburgStyle to raise awareness. We invited supercar owners, played padel and spent time socialising. The proceeds went to Rhino Connect.
