A BEAUTIFUL SERIAL ENTREPRENEUR WITH A HEART OF GOLD Meet Tiffany Mai

Over time, Tiffany learned to train her mind to deal with adversity and look at it as opportunity. Coming to America was one of the biggest blessing for Tiffany and her family, but the move caused sadness. It was hard leaving their culture and everything they knew and everyone behind.

Living in Vietnam with her father imprisoned and her mother chained to her familial breadwinning obligations, Tiffany and her siblings were taught to take care of themselves at an early age. When she was just 17 years old, Tiffany founded her first company, an online clothing store that she later sold. At 26, she then started a healthy food company that grew to 9 locations.

Tiffany grew up in post-war Vietnam, after the war, Tiffany's father whom fought alongside the US and it's allies in the Army of the Republic of Vietnam, was sent to a re-education camp. Her family suffered greatly during this time and food was scarce. In the years after the war ended, no one took food for granted. In the cities, often there was no food at all. There was fruit found on the trees or underneath them. To this day, Tiffany is very thankful to God for providing the fruit tree's her family managed to scavenge. Through more of God's grace, her family was able to immigrate to the U.S. It wasn't easy for Tiffany to adjust when she and her family moved to the U.S. as they were utterly indigent and speaking English was learned by watching "Saved by the Bell" each day and picking-up new language skills.

After a falling out with her then partner, she lost everything. And she was also 8 months pregnant. As a newly single mom with nothing to lose, Tiffany decided to start her own insurance company with Allstate. She worked 12 hour days and soon became the number one agent in the company out of 18,000 agents. Throughout this time, her passion for food and health never subsided. In September of 2019, she sold her stake in the insurance company and decided to work full time on her passion project, Fresh Fit Go. Tiffany's story is one of grit and innovation. Her dream to change the world and the way we eat is about to come true. And it starts in Denver, Colorado.

Tiffany was a single mom to a beautiful daughter, Madison, now six. She is now married to her adoring husband Brian, and has three step-children. Tiffany says her new blended family loves to cook together, experimenting with different cuisines with Tiffany taking the lead as chef and Brian acting as sous chef and tidy-upper, something Mai says she really appreciates. As a newly single mom who then found herself having to start over, Mai decided to start her own insurance company with Allstate. She worked 12-hour days and soon became the number one agent in the company out of 18,000 agents. She also found time to write an Amazon best-selling cookbook called â&#x20AC;&#x153;Sexy Foods Exotic Recipes from Around the Worldâ&#x20AC;?. But despite all of her successes, Mai continually found herself thinking about her pursuing her passion for food and health full time. She wondered how one day she might return to this space, and she started thinking what that could look like.

Tiffany is also active in the Denver community and founded Making An Impact, a non-profit that donates money to other nonprofits and provides resources for local charities. She is especially proud of their work to provide assistance to the Anchor Center for Blind Children and the Tennyson Center.

In September of 2019, Mai sold her stake in the insurance company and decided to work full time on her passion project, Fresh Fit Go. Itâ&#x20AC;&#x2122;s been a long journey full of twists and turns, but her dream to transform how we can access healthy food - through a vending machine no less - is a bold innovation that all of Denver can be proud of.

The Anchor Center helps 195 blind children each year while providing support and education to families, siblings and caregivers. Tennyson Center provides a safe, stable home for kids 5-18 who are facing critical circumstances and need residential care.

My love for THE Eagles

Winston Herbert "My love of Bald Eagles started about 8-10 years ago. I really wanted to study them and capture them in my camera. Not an easy task since they build their nests high up usually on Cotton wood trees. Well any way I got myself a Full Frame mirror less camera and a high quality zoom lens around 600 mm. After several failed attempts I was capturing the birds in flight. I got so attached to them that I was spending several hours every day with them. In 2019 tragedy struck the Male Eagle during the Cyclone Bomb and with frozen wings he fell down and died on the ground in freezing temperatures with no help in sight.

Female was sitting in the eggs but was unable to safeguard the eggs. It takes both parents to take turns to safeguard the eggs. Well anyway this year 2020 another pair of Bald Eagles took over and had two baby Egrets. During heavy rain another tragedy struck and the heavy nest fell down and killed both the babies. I was devastated last year and again this year. But was pleasantly surprised that both the Eagles got together and built a much sturdier nest on solid branches! I am hoping for eggs around March and babies in May. There is a lesson to be learned here. When birds can persevere and overcome tragedy why canâ&#x20AC;&#x2122;t humans try harder to overcome their fears! Winston Herbert."

Carola Kayen-Mouthaan My name is Carola Kayen-Mouthaan, I live in the Netherlands. I'm happily married and a mother of two great daughters, 28 and 29. I discovered my passion for photography in 2008, something I’ve done for 12 years, but now with a lot of love and passion. Since the beginning of 2016 I have discovered a new passion, Fine Art Photography. It's been an honor to be published in a number of various magazines and have the opportunity to be awarded prizes for my work.

I’ve been doing workshops and seminars in Fine Art Photography for 2 years now, in the Netherlands, Belgium, Italy, Belgium and in England at the award weekend of The Guild of Photographer.. Keep your Dog Happy During The Quarantine! During this season of social distancing we can still have fun. Here are 8 things you can do with your pet dogs.

Doggy Yoga

1. Doggy Yoga. Exercise with your dog. Yoga can help reduce stress while you spend more quality time together. 2. DIY Dog Toys. Work on a do-ityourself project and make fun toys for your dog. 3. Dog Photo-shoot. Have a glam shoot and take photos of your dog for a calendar or a picture collage for your walls 4. Take a Walk. Enjoy health and social benefits by walking your dog a few times a week. Benefits include improved cardiovascular fitness, lower blood pressure and decreased stress. 5. Spa Grooming Day. A spa day feels even more worth it after a workout. Do a gentle massage, nail clipping, bath time and because your dog did such a good job he/she deserves a treat. 6. Teach New Tricks. Learn positive training methods, and good behavior practices. You can teach your dog to roll over, play dead, or even to stand up on his back legs. 7. Reading Time. Reading has been shown to calm human stress and anxiety for both pet and human. Pick a good book, find a comfy spot and read out loud to your pet dog. 8. Make Pet Treats. Homemade snacks can be made with ingredients that help keep your dog's teeth and gums clean. Find a good recipe and have some fun in the kitchen.

Rylan’s Restaurant Review Mt. Fuji Hibachi Parker By Rylan Grace Coleridge This issue’s Restaurant Review features Mt. Fuji Hibachi in Parker. I always go there for my birthday dinner, so I figured this would be the perfect restaurant to feature this issue! My absolute favorite thing about Mt. Fuji is the experience. It is amazing how they cook in front of you! Sometimes I get scared when they do the fire tower right before your eyes, so young readers beware! However, it is unlike any other restaurant experience. I recommend you give it a try. Their menu is family friendly. They have food for everyone, from chicken & noodles to veggies, they have items for every palate! Beyond a great menu, this place plays with food! Next time you are there be sure to attempt to catch the flying broccoli! I have never conquered this feat, but hey, there’s always next year!

I am a huge fan of their Chinese style soda, chicken hibachi and the California roll. As an individual that does not really enjoy soda & more approachable. They have an incredible sushi lineup to complement your dining experience. I love this before my meal. The combination of protein, rice, noodles and veggies in the hibachi is incredible. You get to sample a little bit of everything while they prepare dinner in front of you. It is a great experience before you get distracted enjoying your incredible meal. The team at Mt. Fuji is wonderful. They include everyone with their culinary skills and silly tricks. They genuinely want you to have more than a good time, they want you to have an experience! Mt. Fuji scores a 5 out of 5 from me. They really knock it out of the park from experience to taste. Check them out if you are looking for entertainment and an incredible meal.

U R Loved Project Rylan Grace Coleridge I have always wanted to make a difference in peopleâ&#x20AC;&#x2122;s lives. When I was younger, I realized that I was extremely fortunate and blessed. I have come to learn that not everyone has the same opportunities that I have. This inspired me to create the U R Loved Project because I want everyone to feel special. My mission is to get kids involved in their community to assist me in my quest to show all children that they are special and loved.At the age of 4 I began trying to get involved in my community. I was immediately met with roadblocks due to my age. I had a mission to make a change and felt it was silly that I could not. This is how the U R Loved Project began. I started looking for causes that were kid friendly. It was tough. Through hard work, and showing others that I was capable, I began to find organizations that welcomed me in. I wanted to share this opportunity with my peers. I wanted to show kids that they could be helpful. If you have a heart to give and are willing to dedicate the time to make others feel special, you should be able to.

The U R Loved Project promotes kid friendly organizations that I have been involved with; Sweet Dream In A Bag, The Harry Samora Memorial Toy Drive, Impact Denver and so many more. As we head into the holiday season, if you are inspired to give, think of joining me in my efforts to give kids in the hospital that magical feeling of opening gifts on Christmas morning. I imagine it would be tough to be in the hospital around the holidays and I want every child to have the experience that I get to enjoy on Christmas morning. This is what the Harry Samora Memorial Toy Drive is all about; remembering the life of a young boy lost too soon, and spreading joy to other children in his memory. Each year I host a free cocoa and cider bar, as well as “Cookies For A Cause,” to raise money through tips and collect toys to take to Children’s Hospital for the kids. It is a simple task, but it means so much. These little acts of kindness are important in our community. If you are interested in staying in touch with ways you can get involved in the Denver area, and sometimes across the country, follow the U R Loved Project on Facebook and Instagram. This tasty Vietnamese dish is made with corn flour, rice flour and coconut milk. It is flavorful and nutritious, the type of food you can prepare to delight and amaze the guests. This Vietnamese dish, Banh Xeo, falls apart sometimes when first making it. It’s ok to fall apart sometimes. It’s all a part of the journey.

PREPARATIONS

For Fish Sauce 1 cup sugar 1 cup fish sauce 2 cups water 3 Thai chili 4 garlic clove 1 lime or white vinegar 4 tablespoons of fish sauce of your choice! (Sweet ginger sauce is highly recommended)· PREP TIME: 20 min. COOK TIME: 1 hour· TOTAL TIME: 1 hour 20 min. YIELD: 4 servings

INGREDIENTS1 1/2 cups rice flour· 1 tablespoons corn flour· 1 – 13.5 oz. can coconut milk· 1 1/4 cups iced water· 1 pinch ground turmeric· 1 teaspoon sugar· 1/2 teaspoon salt· 2 pinches of white pepper· 2 tablespoons peanut oil· 1 brown onion, cut into thin wedges· 12 prawns, peeled, coarsely chopped and cooked (you can easily omit to make these vegetarian!)· 2 cups trimmed bean sprouts· Fresh mint leaves to serve· Lettuce to serve

1. Mix both flours, the coconut milk, water, turmeric, sugar and salt in a medium bowl. Season the paste with white pepper. Cover and place in the fridge for 1 hour or leave overnight. 2. Lightly brush pan with one-quarter of remaining oil. Heat over medium-high heat until smoking. Add onequarter of the flour mixture and tilt pan, swirling batter to cover base and slightly up the side. Cook for 5 minutes or until underside is golden. 3. Place one-quarter of the prawn, bean sprouts, and mint on half the pancake. Fold over to enclose. Transfer to a plate and cover with foil 4. Repeat with the remaining oil, flour mixture, prawn and bean sprouts. 5. For the fish sauce, mince garlic cloves and Thai chili together. Mix the rest of the ingredients together. After a few minutes add the garlic-Thai chili and mix well.

INGREDIENTS 3 cucumbers, peeled, seeded, and coarsely chopped 5 green onions, coarsely chopped 1/4 cup chopped fresh parsley 1 tablespoon chopped fresh dill 2 cups nonfat buttermilk 1 container (8-ounces) reduced-fat sour cream 2 tablespoons fresh lemon juice 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper

Vending machines have never been the best option for grabbing a healthy snack, but entrepreneur Tiffany Mai had a vision to change all that. For the past two years, Mai has been working tirelessly to launch Fresh Fit Go Healthy Food - a true revolution in the vending machine business with one focused goal, to become the first in the United States to offer vending machines stocked entirely with healthy eats, that also create zero waste. And, she’s doing it in Denver, the ideal market to reach health-conscious consumers who also care deeply about the environment and how we use Earth’s resources. For Mai, Fresh Fit Go wasn’t just about giving people the option to make better choices, she wanted to make sure her new venture also honored a family value, instilled by her mother, when she was growing up. “Finish all your food and don’t waste it, there’s starving kids out there”, her mother would remind her. But the journey to launch this new venture was no easy feat. Industry experts working in the healthy food business would likely agree that launching this type of business, especially during a global pandemic, would be extremely challenging. Food waste would be high as supply chains became disrupted, there could be slow returns as people grew more concerned about where they were spending their money, and of course, she still had to deal with the age-old issue that most people still associate vending machines with unhealthy, processed foods. That’s why it’s never been done, but these challenges only pushed Mai harder to pursue her dream of reinventing the vending machine experience, for the better.

She believes that starting Fresh Fit Go during COVID-19 pandemic is actually perfect timing. Now more than ever, there’s a need for quick, convenient, cost-effective healthy meals that help to make our lives easier.

While many respondents enjoy cooking, seven in 10 (69%) said they wished they could make a healthy dinner more quickly. Nearly half said they would prefer cooking a meal with less work, or wanted to spend less time planning their meals out. One in two (53%) said they are eating more takeout and delivery to get a break from making dinner every night, and almost 60% said they feel they are eating less healthy than they used to due to a lack of access to fresh ingredients. That’s where Mai’s vision for Fresh Fit Go seems to align perfectly, in these unprecedented times. The machine will sell affordable, healthy packaged meals that are under 700 calories, made fresh daily, and are 100% natural. According to estimates from USDA's Economic Research Service, food waste in the United States is estimated at between 30-40 percent of the food supply and takes up the majority of space in our landfills. From its inception, Fresh Fit Go was created with the premise that we can do better,that with effort and planning, we can begin to eliminate all of that unnecessary food waste. Mai says that each meal supplied is designed to ensure people are getting the right amount of food to fill them up, without that extra bit that ends up being scraped into the trash. In addition to ensuring there is no waste, the patented touch-less, voiceactivated vending machines also serve each meal in microwave safe, bamboo packaging. The plant-based containers can be easily recycled and disintegrate into soil within 90-days. Zero waste! Mai might be on the cutting edge of the sustainable food industry, but she’s no stranger to the world of startups. This will be her third company, and her second within the food space. When she was just 17 years old, Mai founded her first company, Koutour, an online clothing store that she later sold. At 26, she started a healthy food company, Ready Fit Go Healthy Foods, which grew to 9 locations around Colorado. After a falling out with her then partner, she lost everything.
