As we grow older our eyesight deteriorates and glasses become a necessity. Daddy’s eyes are not what they used to be! Even though people are living and remaining physically active for longer, their eyesight can hold them back. This presents a whole new set of challenges. Cycling is an example of not just an enjoyable pastime but also one which has great health benefits. For those men and women in Lycra who venture out early morning in the dark, what vision correction are you using? Although there are no eyesight requirements for cyclists, if you can’t see properly, you are risking yourself and everyone else. If you need glasses for driving then you need them for cycling!! It’s a no brainer! Glasses are not always practical! What happens when the sun comes up on those early morning rides? You have to pull over and swap to sunglasses. Then there is the problem of the weather. If it’s raining, and your glasses mist up or get splattered with water, your vision is going to be awful! Have you ever thought about contact lenses? In recent years daily disposable contact lenses have become the most popular type of contact lens. In active sports such as cycling, they are very convenient. You simply throw them away after use; there are no problems with dirt or dust and no need to clean lenses. Should you actually take a spill contact lenses will not break. They do not interfere with the fitting of your helmet so they make a very comfortable and practical solution to vision correction. However, it is the superior vision that makes contact lenses the winner. Since they have no frames, there are no restrictions to your field of view and therefore no blind spots! That is certainly good news when you are riding through built up areas. Whether you are a professional or just enjoy the occasional leisurely ride, punctures are annoying! No sweat, with contact lenses you can see up

YOUNG SHIRE WOMAN BIANCA MOON WAS recently nominated for a Daytime Emmy Award for a song she originally composed for “The Bold and the Beautiful” TV show at the age of 17. Bianca was born with craniofacial disfigurement bletharophimosis and has gone through four facial reconstructions. She has had two lots of Neuro Surgery performed by Dr Charlie Teo. In 2004 Bianca damaged her spinal column in a car accident and was bed-ridden for 6 months. During this period she watched a lot of TV and became a fan of The Bold and the Beautiful. In 2007 she met Katherine Kelly Lang who introduced her music to Brad Bell (Bold & Beautiful Producer) and then went on to meet Dolly Parton and record songs with Dolly’s guitarist and producer, Kent Wells. Bianca then went on to start her own charity “The Moonlight Foundation” for kids with a Facial Difference. In 2008, she was a finalist for Young Australian of the Year.

Through the eyes of a child In an ideal world children are loved and nurtured by parental figures with appropriate time and attention. This we hope produces a healthy exuberance that flows into their living and learning. Around seven years of age children learn by what they see and experience in their immediate environments. In the main this gets translated into how to be themselves and how to treat others. From the quality of care and attention, how families engage in life to communication styles. All is seen, a lot imprinted then copied. The question we need to consistently ask ourselves is whether what they see and experience is what you want them to learn. Are your habits and tendencies the ones you want for your children? After age seven, parents and family environments are not the only models for learning. At this stage children’s self determining capacity seeks information further afield. A child’s survival instincts begin to seriously activate, i.e., their flight or fight response to threat of danger. They begin to develop gut instincts, recognise their inner resources and learn to rely on them. From this age children SEEK OUT HEROES. Children NEED HEROES. Reflect on your own hero worshipping around this age. Teachers, sports stars, movie, television and music icons. Who was it that you focused your attention 14

It is important to stop occasionally and take a moment to look through the eyes of your child to witness what they are learning and from whom. on, how they behaved, what they said? These were all people in your life you wanted to witness using their own resources and talents to transform life. You watched how these people recognized and rode the waves of opportunity, survived against forces of adversity and defeat because you needed to know how it was done so you could do it too. These instincts are the roots of self esteem, discipline and direction. We need to be aware of the availability and visibility of genuine heroes for our children. Someone a child has seen as a hero may be ‘heroic’ in their given fields but is not necessarily “heroic” in how they choose to live outside of these. Since Blogger was launched in 1999, blogs have reshaped the web, impacted politics, shaken up journalism and enabled millions of people to have a voice and connect with others. For those not familiar with blogging, today there are over 100 million blogs from personal diaries, breaking news outlets to a collective of links with no set rules. In simple terms, a blog is a website, where you write stuff on an ongoing basis so your visitors can read what's new. They then comment on it or link to it or email you. Or not, which can be a reality check. Nicole Everett has a few projects on the burner since launching her first book “What Can I Cook” in 2011. It was an idea that came about from finding herself regularly looking through her kitchen cupboards to see what she could cook. Nicole found social media to be a very important tool for selling her book. Initially creating a website and then working on ways to drive people to her site. Wedded Bliss ONE HORMONE THAT GIVES WEDDINGS THEIR blissful nature is oxytocin. Dubbed the ‘cuddle chemical’ it promotes trust, bonding and generosity. These are three vital ingredients for any wedding. Released from the pituitary gland, oxytocin has been found to feature in a range of social interactions from boosting the relationship between mother and child and fostering intimacy after sex. Furthermore, the hormone is also escalated in those watching a sad movie, boosting our sense of empathy. Oxytocin makes people more sensitive to social cues and nowhere do these run higher than at a wedding. In short, it multiplies the happiness exponentially. Professor Paul Zak attributes the group oxytocin surge to an ancient binding of couples to their friends and family, perhaps to help with future child rearing. The closer the genetic link to the couple, the higher the hormone readings, but it’s the bride’s whose levels top the charts. This was certainly the case when it came to this correspondent’s wedding. Questioning my wife about the possibility her oxytocin levels were stratospheric during our wedding, she reflects: "I literally felt

intoxicated with joy during the day. It was as if I had taken some illicit drug. I felt instantly closer to everyone and was often on the verge of tears – as if my relationship with every guest had taken a massive step." Considering the fact that moderate amounts of stress actually boost the production of oxytocin, there’s something to the notion that it adds to the hyper-intense, slightly unreal (in the very best way) emotions of a wedding day. Maybe the reason we have these weddings is not just because of the emotional contagion – the empathy, the love – but because these emotions are linked to helping maintain the human race. Cauliflower Fritters These tasty fritters are a great way to mix a whole lot of healthy robust flavours together all full of goodness and a great way to get some veggies into your children. Makes about 20 fritters.

Ingredients: Half a large head cauliflower. 1 carrot, grated. 2 whole eggs. ¼ cup flaxseed meal. ¼ cup raw, unsalted sunflower seeds ¼ cup hazelnuts, finely chopped ¼ cup fresh parsley, finely chopped 1 tsp lime juice ½ tsp salt 1 tbsp poppy seeds or chia seeds ¼ tsp black pepper 1 tsp fresh thyme ½ tsp ground cinnamon

¼ tsp smoked paprika pinch cayenne pepper

Method: 1. Cut cauliflower into little florets and add to the bowl of your food processor. Process on pulse until cauliflower has texture of large grains of cracked wheat. Transfer to a large mixing bowl. Add the rest of the ingredients and mix until well combined. 2. Heat a splash of olive oil in a frying pan and carefully drop about ¼ of a cup of mixture for each fritter. 3. Cook 4 or 5 fritters at a time for 2 – 3 minutes on each side, until golden brown, then keep warm while you cook the remaining fritters. 4. Serve warm with a dollop of Greek yoghurt on top.

Port Hacking FLATHEAD FILLET recipe Straight from the Hacking River to a skillet near you! The sand flats of Port Hacking provide a happy hunting ground for Flathead. After a day of drifting around the river, I love to take home a feed for the family. Although flathead was once THE fish, with its sweet, tasty, tender white flesh, its popularity has waned in recent years, possibly because of its many fine bones. There are certain kinds of fish I don't like to grill and flathead is one of them. It tends to dry out too much. Fillet the fish and fry in a pan for best results. Here is what you’ll need to get the show on the road. 6 Desiree potatoes cut into wedges 2 tbs extra virgin olive oil, Plain flour, to dust 12 (about 400g) flathead fillets 20g butter, 1 tbs olive oil Lemon wedges, to serve, Mixed salad leaves, to serve Tartare sauce, 1 cup (250g) natural yoghurt 2 tbs capers, coarsely chopped 4 baby gherkins, finely chopped 2 green onions, trimmed, thinly sliced 1 tbs lemon juice, 2 tbs finely chopped dill 1 tbs eachfinely chopped flat-leaf parsley & tarragon

And this is how you do it. Step 1 Preheat oven to 220°C. Place the potatoes in a roasting pan and drizzle with extra virgin olive oil. Season well with sea salt flakes and freshly ground pepper. Bake in the preheated oven, turning occasionally, for 30 minutes or until golden brown and tender. Step 2 To make the tartare sauce, combine yoghurt, capers, gherkins, green onions, lemon juice, dill, parsley and tarragon in a medium bowl. Taste and season with salt and pepper. Step 3 Place flour on a plate and season with salt and pepper. Roll the fish in the flour to lightly coat. Shake off any excess flour. Step 4 Melt the butter and oil in a large frying pan over high heat. Add the fish and cook, turning occasionally for 3-4 minutes or until golden brown and flesh flakes easily when tested with a fork. Step 5 Divide the fish and wedges among serving plates. Serve immediately with a dollop of yoghurt tartare sauce, lemon wedges and mixed salad leaves. The above recipe goes well eaten with your fingers and a beer or a glass of white wine over dinner. Enjoy!

Turning the tide There are many variables that affect the success of any fishing expedition. One of the easiest to manage is the tides. The twice daily cyclic rise and fall of the tides has a significant influence on fish behaviour. Understanding where fish hold during different phases of the tide and where their food sources are, can make all the difference. At any time, tides will be either rising, falling or in transition. How and where you fish will be vastly different during these phases of the tide. Here are a few of my favourite strategies. Around the sand flats, which are so typical of Port Hacking, you need to adopt different tactics depending on the tide. As the tide falls, target the resident predators such as flathead that use the tides to bring their food to them. As the water flows off the sand flats, bait fish such as small mullet are carried off into the deeper water where the flathead lie in wait. Target these areas with lures and lightly weighted baits that are free to drift over the edges. Places where there are small creeks or drains running out off the flats are prime locations as they concentrate and funnel the last of the bait. The flatties know where they can get an easy feed and won’t be too far away.

Fishing the same location on a rising tide, target the scavengers such as bream and whiting. As the water runs in, it opens up a myriad of feeding opportunities that were off limits during the low tide. Unweighted nippers and prawns work well. Use light line, up to 6 pound, to keep you baits moving naturally in the current. Small popper style lures, skipped across the surface work as well. Don’t be put off if there is only a foot or so of water, as quality specimens will happily feed in such skinny water. The Hacking’s larger predators such as Mulloway will tend to hold in the deeper areas. Mulloway are a lazy fish and will lurk just out of the main current, often in a back eddy, formed by an impediment to current flow. Large bridge pylons are a classic Mulloway possie, but you’ll have to look outside the Hacking for these. Instead, try areas where the current has to flow sharply around a point. Avoid the deep, still water that can be found in many of the Hackings bays unless you want to feed the hordes of juvenile snapper that love this environment. If you want some fun, you need some run! Personally I like to fish the last two hours of the tide phase. Have this coincide with dawn or dusk and your chances of catching a feed increase significantly. Shinemagazine2013

The Lilli Pilli Kindergarten is located nearby in Caringbah. The school has had many great sporting achievements, including the winning of the PSSA Soccer Division One Cup in 2008. On The western side of Lilli Pilli Point Reserve there are some public baths and a fishing jetty. The baths are deep salt water baths protected by a net. There is a 20 metre hole just outside the baths where many fish swimming down river seem to gather and feed. The channel provides opportunities for catching fish on the changing tide. At low tide the channel can be swum and the sand bank walked on, almost to the other side. 50

The cold, winter months generally put the property market into a state of hibernation (less transactions and a general slowdown). The local property market appears to be defying this traditional view. It would be hard to deny that this is a byproduct of the reduction of the RBA cash rate to a 53 year low of 2.75%. The current low interest rate climate seems to be extremely appealing to those keen to enter the housing market or upgrade and may be the catalyst for parties to buy or act now rather than later. Competition is always a good thing and the lenders in the marketplace are competing for business across the board, right through to credit unions and smaller financial institutions. There are more “low doc” loans available and a general easing of financial conditions which also seems to have assisted the property market throughout the past quarter. Compared to this same time last year, there has been a 30% decrease in the quantity of homes in the local Sutherland Shire market which is underpinning growth in the middle and top tier levels of the market as demand continues to outweigh supply. By no means should this be construed that the top end of the market is steaming ahead but we are starting to see a renewed level of confidence and a sense of revitalization in the top end of the market with a number of key sales taking place in Cronulla and Burraneer well in excess of the late $3 million price range. The recent decline in the $AUD which looks set to continue over the coming months may also be assisting in rebalancing the economy to enable a more competitive and dynamic environment for growth. At the RBA’s July board meeting, the Board determined that the “easier financial conditions now in place will contribute to a strengthening of growth over time, consistent with achieving the inflation target” With the Winter solstice now behind us, the days are gradually getting longer (and nights shorter) as we move towards the warmer months with a bright and positive outlook for the local property market. Dementia Patients DEMENTIA IS THE TERM USED TO DESCRIBE A PROGRESSIVE DECLINE IN A PERSON’S FUNCTIONING. It is a broad term used to describe a loss of memory, intellect, rationality, social skills and physical functioning. Alzheimer’s disease is the most common form of dementia, accounting for 50 – 70% of all dementia cases. Dementia can happen to anybody, but is more common after the age of 65. By the 2060s, spending on dementia will outstrip all other health conditions. Dementia is already the single greatest cause of disability in Australians aged 65 years or older. Visits by a person accompanied by a dog can stimulate social interaction in residents with dementia. Pet therapy is a low-tech, low-cost therapy that improves the mood of patients. Several small studies suggest that the presence

of a dog reduces aggression and agitation, as well as promoting social behaviour in people with dementia. One study has shown that aquariums in the dining rooms of dementia care units stimulate residents to eat more of their meals and to gain weight. John Bryant House in Perth has created a Sensory Garden to encourage residents outdoors for both their enjoyment and to enhance their sensory stimulation. The project includes an aviary and a Pet Therapy program including chickens, which wander freely around the outdoor areas. By replacing an ‘institutional' approach with an environment more like a ‘Human Habitat', incorporating pets, plants and children into the daily lives of the residents, their feelings of ill-being can be reduced.

Maintaining a Reef Aquarium Every problem with every reef aquarium is just a matter of too much or too little of something! The trick is to find out what it has too much or too little of. Light is a major consideration for all corals. Ensure that you position each coral to maximize how much light they can gather. Water flow is also a major consideration for coral. The ocean current washes away the coral`s waste. This will effect where each coral will do best in your home aquarium. Most corals get most of their nutrients from the light, while others total rely on filter feeding from the water. Ensure that you do not have too high or too low levels of trace elements in your marine tank. Some corals need a little peace in order to thrive. Often a coral is not doing well because it is being harassed by a particular fish, commonly a Wrasse

or an Angel. Not enough peace can be a problem even for corals. Temperature is the most common problem in reef aquariums. Not enough heat is rarely a problem because of reliable aquarium heaters. Too much heat is the big killer! 29’C can kill many types of corals within days. Be concise with how much salt there is in your water. Corals do best if the salt level is on the high side e.g. 1.025, while fish introduce better at a lower salt level e.g. 1.020. Once you place a coral in your aquarium, watch it. If your corals are not growing then they are dying. If they are dying, then they have too much of something or not enough of something else - it’s that simple. Good luck and enjoy, Paul Talbot

Been a bit of a couch potato over winter? The longer daylight hours and sunny days of spring are sure to infuse you with the energy required to prepare your garden for the hot summer ahead. Be assured your efforts will be rewarded.Your garden could be the envy of the neighbourhood or the perfect place to host a neighbourly soiree. Then again you may prefer to keep it private for your own enjoyment. A little bit of effort now will save you a lot of work in the long run. It’s a little like planning to run a marathon, the preparation beforehand will see you go the distance without injury or illness. Start with tidying up the garden, removing dead or damaged foliage, branches, twigs and leaf litter. Lightly prune hedges and apply some organic fertiliser into the garden, such as chicken manure, blood and bone or cow manure.
