Pre-Summer Toning with Yoga

Rounding the corner of spring and heading into summer means for a lot of people the pre-summer tone-up time is right here and now! If you already have a fitness regime, or perhaps you don’t have one that moves throughout the year (or one at all!), then why not mix things up with some yoga? Yoga poses, or ‘postures’, are a great way to help tone the body all over rather than trying to ‘target’ certain areas. It is a fantastic way to stretch into long lean muscle while getting your body cut but not bulky. Benefits also include great skin, mental clarity, relaxed body and an enlightened spirit. Whether you’re looking to lose weight, tone up, gain confidence, or just feel healthier, here are a few tips and tricks to help you venture into the yoga world with your summer fitness.

TIPS FOR YOUR FIRST YOGA SESSIONS: Ask them to explain the details of the studio’s yoga style. Most studios have a Special Introductory offer, use it properly. Ask what is good to wear. Ask: which are the Beginner’s classes? Ask if they have mats/towels/water for hire or sale, also if they have any recovery foods and drinks. Do they have change rooms with showers and lockers? Try different times and teachers to help mix up your practice. Try more than one class, regardless of how the first few went. Part of yoga is learning the poses and terminology. Do not feel restricted by your physicality. “People with the least, have the most to gain”. Remember, yoga is not just for the fantastically flexible or only about poses. Yoga is a multifaceted theory and a lifestyle with life-long benefits. Many see benefits from yoga pretty quickly, but the real benefits are in the long term of a consistent practice. Every body can benefit from yoga: young, old, muscle-bound, dancers, footballers. For injury or illness recovery patients, consult with your yoga teacher and your specialist to help plan what yoga would benefit you the most and how to prepare for those classes.

... When food is the enemy The Food sensitivity is an IgG antibody reaction, versus an IgE reaction which is associated with food allergy. A food sensitivity is different to a food allergy in that it does not produce anaphylactic reactions - it can however, cause bloating, headaches, migraines, bowel problems, weight problems, IBS, fatigue, depression...just to name a few. Food sensitivities are far more common than classic IgE allergies, and though the symptoms are mostly milder and non-life threatening, they can be quite debilitating. Food intolerance is a simple, chemical reaction that does not involve the immune system - these reactions are often completely overlooked by allergy specialists. However, food intolerance can cause severe symptoms in some people. For example, some people experience 10

migraine headaches when they consume wine and cheese - this is due to a food substance called Tyramine, which triggers the dilation of blood vessels in the brain. Ten to twenty years ago, most doctors and allergy specialists were extremely sceptical about the potential harm that could be produced by food sensitivities and intolerances. Patients were often told that they were just imagining their reactions, or that "all your tests are clear, we can't find anything wrong with you." Unless a person had a reaction such as throat tightening or severe hives, nobody paid much attention. Thankfully, the trend is gradually changing, and there is now more recognition of sensitivities and intolerances. Unfortunately for our children on the autism spectrum, food sensitivities can be particularly challenging as the proteins from wheat and dairy

(gluten and casein respectively), can turn into opiate compounds. If a protein is not broken down properly, it will form peptides that can "leak" into the bloodstream and cross the blood brain barrier. These opioid peptides fit into the opiate receptors and function like morphine, causing serious neurological problems (Shaw, 1998). While food sensitivities are not the cause of autism, identifying and addressing them can reduce many symptoms and assist in learning and behaviour (Matthews, 2008). Thankfully, we have a simple, cost effective test that can identify Food Sensitivities (IgG reactions) called the Food Detective Test. A pin prick of blood from the finger is all that is required to test 59 foods, with results known in 40 minutes. The test can be done in a clinic setting without the need to find time and obtain referrals for city-based facilities. The Food Detective is based on the same science and methods used in existing testing labs, but have been made available in kit form for Naturopaths to use in-clinic. Once results are obtained, you can restrict or avoid the reactive foods (depending on the severity of your reaction in the test), and if necessary, some gut repair work using herbal medicines and nutrients.

So whether you just want to "trim and tone" for summer, or dig deeper into some long-standing health issues, a food sensitivity test may provide some answers. Lorraine Pritchard:

Keeping it all positive when teaching kids to swim. ORIGINALLY FROM THE SUTHERLAND SHIRE, Lorraine Pritchard found her calling teaching kids to swim almost two decades ago. Initially Lorraine became a volunteer with Rod Siddons, founder of the Rainbow Club. The Rainbow Club teaches young children with a disability to swim. Her qualifications were not on paper. Being a mother and passionate about working with children with disabilities, Ron invited Lorraine to watch and learn. Now 18 years on, Lorraine has never looked back. “I watched and learnt from other teachers and put my knowledge of swimming together with my Austswim training and it all started from there” she said. Rainbow Club Australia now has over 17 clubs in Sydney, regional NSW and Geelong, Victoria and is still growing. Starting at Cronulla Complex and branching out to Sutherland Leisure Centre in 1994 gave Lorraine lots of experience and challenges. Over the years she became head teacher of Rainbow Club at Sutherland pool. One of Lorraine’s greatest moments was to see a boy finally get his arms over after teaching him for 6 years. “Inch by inch we tried. It can be repetitive work but it’s most rewarding when it pays of. Now he can do all 4 strokes” said Lorraine proudly. You will find Lorraine teaching at Caringbah leisure centre most days. She’s the lady wearing a bright, fun, hat with a big personality full of encouragement and enthusiasm. Now residing in Shellharbour, she makes the drive each day to Sutherland at 64 years of age. “It isn’t an effort when the rewards are so high” she says. Teaching little ones through to adults along with disabled and special needs kids in the warmer terms 20

keeps Lorraine young. “I would really like to thank the amazing staff at Caringbah pool and the parents for having faith in me as a teacher. We are a big, supportive family doing great things together for the community” commented Lorraine.

Local talent agency “MAMM International” is in the business of show business. They provide models, actors and extras for work in film and television production as well as catalogues and print advertising all over Sydney. Cronulla has been buzzing with a number of productions shooting in the area recently. What may go unnoticed is the amount of local shire talent who are getting exciting jobs in the film, television and modeling industry. Bulls Road BURRANEER

Welcome to our regular section where Shine focuses on “My Street”. It is a local street that you may already live in or may like to live in. We do the research for you. The pros, the cons and how much it would cost to live there. We all dream! I often dream about boats. Sailing boats in particular. Sailing boats with keels. Keel boats require a deep waterfront property to house them. We dream about pottering around on our yacht, moored at the bottom of the garden, making it ready to sail off into the wild blue yonder. It’s all part of the dream People who have those types of dreams and live in the Cronulla Sutherland area around Port Hacking are very restricted. They will find it quite hard to realise their dream because many parts of Port Hacking are notoriously shallow. You will not get past Burraneer point in a yacht – certainly not one that appears in my dreams anyway! It’s too shallow so you will be in danger of hitting the bottom. Therefore you are restricted to Gunnamatta Bay. There are further restrictions. There are no deep water fronts on the eastern side of Gunnamatta. They are all shallow, sandy beach fronts. Therefore our search for the dream, deep waterfront property is narrowed to the western shore of Gunnamatta Bay along the Burraneer Peninsula. But wait, there are more restrictions. I have surveyed the depth around the northern end of the peninsula closest to Cronulla and ruled most out – still too 28

shallow! I’ve also looked at the southern end of the Burraneer Peninsula and ruled that out. The waterfront estates are quite deep enough but all are located in a narrow channel with not enough room to moor the dream yacht safely. Oh, and while we are dreaming, we require a north facing waterfront. The warmth of the northern sun in winter and protection from those cold southerly winds is a must for all old yachties. Therefore if you are a serious yachty from The Shire who wants to “live the dream” there is really only one street to head for: Bulls Road. The even numbers are the waterfronts. Bank on your own sandy beach, slipway, jetty and pontoon. Many waterfronts in Bulls road face North East. All perfect but Surprise! Surprise! We have just narrowed the entire Shire down to about a dozen homes and they are all very tightly held. Two recent candidates for “The Dream” are: 4 Bulls Road. This older residence has breathtaking water views and is just a few steps to the waterfront with sandy beach, slipway, jetty & pontoon. 46 Bulls Road. Defined by its enormous north facing 935 sqm waterfront block, this full brick three level home boasts its own sandy beach, boatshed & slipway. Depending on the size of land you may pick up an old knock down for $2.5 million. Maybe. The owners know they are sitting on a pearl and will stay attached like oysters. For the full “dream” home think $4 million+. Otherwise you really are “dream’n”!

As we head into the final Quarter of 2012 there has been some exciting results achieved throughout the colder parts of the year. Usually winter is seasonally slower for the property market so these results have been particularly encouraging. Recent data collected from APM, Cooley Auctions and Highland Property Agents has indicated stronger clearance rates across Sydney Metro in excess of 60%. As an office we have averaged approximately 86% as our clearance rate throughout winter.

Whilst the spring selling market has begun in earnest we found right throughout winter that a shortage of properties “For Sale” kept the market surprisingly buoyant.

As the weather warms there are some strong indications suggesting that there is some stability ahead for the real estate sector. Director and Auctioneer of Cooley Auctions Damien Cooley said “reduced stock levels, low interest rates, a shortage of quality property and confidence returning to the real estate market is beginning to have an impact – because properties are selling”. Last quarter our office set another benchmark, a brand new non-water view home in Burraneer sold for $2,150,000 within three weeks of marketing. The strongest market is sub $1.5m, seeing transactions taking place within 28 days. This level of renewed activity comes with a stream of investors back to the property market; our office is continuing to achieve high yields with more than 30 new managements being let within the first 2 weeks of marketing, adding to the rise in rental prices keeping both our landlord’s properties and pockets full. Quinoa and Coconut Pikelets 40g quinoa flour 1/2 teaspoon baking powder 1 teaspoon chia bran 2 teaspoons rolled oats (skip for gluten free) 1 egg, beaten 3 egg whites 1/2 teaspoon coconut essence

1. Combine

the Quinoa flour, baking powder, Chia bran and oats in a mixing bowl. 2. Add the beaten egg and egg white, along with the coconut essence. Whisk until all the lumps are dissolved. 3. Preheat a small cast-iron frying pan to medium heat and lightly spray with cooking oil spray. 4. Pour 1/3 of the mixture into the pan and cook until the pikelet begins to bubble. 38

5. Flip over, using a plastic spatula and cook for a further minute, until golden. Repeat twice more using the remaining mixture. Welcome to Nippers! As the season warms up we will now see the familiar sight of thousands of kids swarming onto the Cronulla beaches each Sunday to participate in Nippers. It is a great part of Australian culture and a fundamental part of growing up in The Shire. Every parent wants their child to lead a happy, healthy and active life. A good start is introducing them to surf lifesaving and nippers. Nippers are a junior program that introduces children aged 6 to 13 to surf lifesaving. It is a fun outdoors activity that grows a child’s confidence, teaches valuable life skills and knowledge. Nippers are about learning, confidence and having fun in a safe beach environment. For Nippers, the beach is the classroom. They gain confidence by passing the ‘tests’ of swimming, body boarding, beach sprints, dolphin-diving, spotting a rip, having fun with new friends and discovering things about themselves. Being a Nipper is about having fun whilst learning surf education and surf skills. Although there is a level of healthy competition to the carnivals and championship days, the emphasis is on participation and learning. Parents play a very

important role in the mechanics of the club. Firstly, all the Age Managers are volunteers and give their time freely to help kids learn. Secondly, surf clubs count on parents to assist in the water and on the beach each and every week. It’s not hard work. It’s serious fun! Nippers are a great way for children to make friends, be active and enjoy the beach in a safe environment. The skills gained in nippers will stick to the soul like sand from the beach and be carried away for life. Across Australia there are almost 50,000 nippers (6-13 years). Cronulla Cray’s have over 600 nippers and are one of the oldest and most successful Clubs in Australia. REGISTRATIONS for the 2012/13 season can still be taken at Cronulla Surf Club on the first day of Nippers which is 7th October 2012. Children are required to participate and compete in their appropriate age group. A child may join the Club as soon as they turn 6 years. Parents are encouraged, but are not required to become members of the Club, unless they want to assist Age Managers as a volunteer.

s the weather changes, so does our spirit. We feel a lift in our emotions, gain more energy and generally we feel happier. Colour plays such an important part in how we feel, and how we feel is important. It’s time to get amongst it. As the new season begins, now is the perfect time to de-clutter your wardrobe.

Start by pulling out your entire wardrobe and placing it on the bed. The hardest thing for some people to do is toss old things out. Be brave! Use this as a guide: If you didn’t wear it last spring or summer, the chances of your wearing it this year are remote. I suggest you bag it up and pass it on to the Salvos. That is your good deed for the day. When placing clothes neatly away, hang them rather than putting them away in drawers. If you have things tucked away, you tend to forget you own them and not wear them.

Peplum dresses are a short overskirt with ruffle attached to the waistline and are a very notable spring trend. Though pretty, this dress might be a bit daunting to wear. If the peplum silhouette makes you shy, consider a dark monochromatic style for optimal fabulousness and flattery. Blake Lively (pictured) chose an all-black ensemble and finished it off with a bright gold bangle. The peplum shape is great for creating a waist for anyone who is thicker through the torso area and they look great when you add a contrasting belt. A big tip from Cherry girls! SPECIAL CARE for Special Needs We all work hard to support our family. It is reasonable to think that your children could be cared for during those extra few hours a day outside of school hours. You need it to enable you to hold down a full time job and lead a comfortable life. What makes it tough is when your child has special needs. The federal government has decided to cut funding to Sylvanvale Outside of School Hours (SOOSH) and risk closing down their service. It is the ONLY after school care service available in the St George and Sutherland Shire for children with a disability. Sylvanvale Foundation is a NSW based charity that has been helping people improve the lives of children with a disability since 1947. They provide education, respite, after school and vacation care plus much more. 16 Children aged from 5-11 years old currently access SOOSH and this rejection has had a major effect on 52

their parents, staff and community. “The carers at Sylvanvale are specially trained and very sympathetic individuals. They know the requirements of our special needs children almost as well as the parents. They are an invaluable and irreplaceable resource with added piece of mind� said Justin McIntosh. Justin and Jodie McIntosh are the parents of 11-year-old Eamon who has attended SOOSH since its inception. The local community has stepped in and supported Sylvanvale at a time when they need it most. Thomas Holt Villages, Kazacos Foundations and St George Leagues Club have assisted with funding to keep SOOSH operating and hope this decision born out of ignorance is soon reversed by the federal government. Herbs are very popular and with good reason, they have a high nutritional value are very easy to grow and are perfect for quick and easy meals. Growing your own has the benefit of having fresh herbs on hand. Juice them, use them in stir frying, slow cooking or toss them in the marinade for cooking on the barbecue, and don’t forget to throw some in your salads. HERBS CAN BE GROWN in the garden in a well drained soil that has been prepared with planting compost. When growing any plant in pots, always use a premium potting mix to ensure correct pH and nutrient availability. Most herbs require about 5 – 6 hours sunlight per day. CHOOSE FROM old favourites such as parsley, rosemary, basil and thyme or if you like Asian style 54

Two Women worried about their weight. Both believed if they lost some weight and got into better shape they would be more energetic, productive, look and feel better about themselves. Chilli and Garlic Serves 4-5 as an entrĂŠe. INGREDIENTS 750g cleaned squid bodies. One lemon. One fresh, medium hot, red or green chilli. 1 large clove garlic, peeled and very finely chopped. 1 tbsp olive oil Salt and freshly ground pepper

METHOD 1 Butter fly the squid: locate the ridge inside the squid bodies, and then cut down each body in a line opposite to the ridge. 2 Lay the squid bodies’ outer side down, inside (ridge side) up and use a fairly blunt, serrated knife to score the flesh into diamonds. 3 Zest the lemon, or finely pare the rind, removing

any pith, and then finely chop the pithless rind. Split and deseed the chilli, then chop very finely. Retain half of the lemon for squeezing over the cooked squid. 4 Mix the lemon zest, chilli, garlic and oil. Season well. Toss with the prepared, butter flied squid. Make sure the garlic and chilli are well distributed, catching in all the diamond crevices of the squid. Leave for 10 minutes then toss again. 5 Preheat barbecue until really hot. Lay squid, diamond side up. Let them cook for one minute before turning them all over. 6 Cook for a minute more. The butter flied squid pieces want to curl up, so flip the pieces over one more time to encourage them to do so. Allow the curled-up pieces to get a final minute of cooking.

Serve immediately.

SQUID ARE JET PROPELLED, MASTERS OF CAMOUFLAGE AND IT WASN’T THAT LONG AGO THEY WERE CONSIDERED PESTS. Then immigrants from the Mediterranean regions opened our eyes to the fabulous eating qualities of these odd looking creatures. squid

The Local waters are home to several species of squid. The Southern Calamari and the Arrow squid are the most common. They are easily identified by the wings on the sides of their body. The Southern Calamari has wings which run their entire length whilst the Arrow squid have small wings near their tail. As their name would suggest, they look a bit like the head of an arrow. Squid are skilled ambush hunters that hide in the weed waiting for a feed to swim by. It is not uncommon to see a squadron of squid hovering in the shadows waiting to dart out and fire their tentacles at their unsuspecting quarry. Squid are very short lived, with a live span of just 18 months. As a consequence they are very fast growing. From a culinary perspective, the Calamari is number one. If you are disciplined enough to resist eating them, they are as good a bait as you will get for kingfish, snapper and jewfish. Squid like clean clear water, so are best fished for close to the mouth of estuaries, particularly as high tide is approaching. Most active at night, they are best targeted around brightly lit areas such as wharves and pontoons. They also like weedy areas, particularly kelp beds to hide in. Find a spot that combines all and you are in squid heaven. It is very rare to catch squid on conventional fishing tackle. The most popular method is to use specialised “squid jigs”. Like most lures they come in a myriad of colours, designs and styles and are aimed at imitating prawns and small baitfish. Ask ten squid fishos what their favourite colour is and you will get ten different answers. This suggests it is more how and where the jig is fished rather than the colour. The trick is to vary retrieve speeds. Short shape flicks of the rod will cause the jig to dart around like a

Squid swim by expelling a jet of water from their body. A slow and steady approach, with a well set drag will allow you to absorb their periodic bursts of power. I like to add a few after market modifications to my jigs. Firstly I find the lead weight is too heavy for the shallow waters of the Hacking and you have to work the jig too fast to prevent it snagging in the weed. To fix this I use a pair of wire cutters to trim off small pieces of lead until the jig is all but neutrally buoyant. This allows the jig to hover mid water and be worked very slowly which is particularly successful when the squid are on the shy side. I also like to add some scent to the jig by rubbing prawn or pilchard along its flanks. Finally and most importantly, beware the squid squirt! Many a shirt has been ruined by a well aimed shot of squid ink and slime. To avoid looking like Bindi Irwin at the Nickelodeon awards night, keep the head pointing away from you as you go to land it. Hold it at bay, until it fires its last shot. They cannot reload if their head is out of the water. Whether it’s on the plate or on the hook squid are pretty hard to beat. SHINEMAGAZINE2012
