Pizza Dough
1. Combine yeast and water in mixer. Add flour and remaining ingredients to the water/yeast, mixing to make a cohesive, somewhat sticky dough. The dough should only be mildly sticky and easy to work with. 2. Divide dough into balls according to yield on recipe. Place on a lightly floured parchment. Let dough rest for 30 minutes, covered. Assembly
1. Preheat pizza oven to 700 degrees. 2. Roll out pizza dough as thin as possible, dock with a fork. 3. Top with 6 oz of pizza sauce and a handful of cheese.
