Q1. Tell us a bit about yourself.

I come from Aurangabad, a place that holds great significance in my life. I am a person who appreciates simplicity and places immense value on my family. Following my time in Aurangabad, I pursued my culinary education at IHM Goa, marking the initiation of my culinary journey. My goal is to provide guests with a culinary experience that not only satisfies their palate but also tells a story of cultural fusion and gastronomic exploration.

Q2. What was your childhood ambition?

When I was a kid, I really wanted to be a chef. I loved watching my grandma cook amazing meals, and it made me excited about food. As I got older, I kept working towards my dream of making delicious dishes and sharing them with others. It's something I've always wanted to do.

Q3. What inspired you to take up culinary arts as your career choice?

I've always had a deep-rooted passion for food from a very young age. Growing up, I spent a lot of time in the kitchen with my family, and it was during these moments that I discovered the magic of cooking. The ability to transform simple ingredients into something extraordinary fascinated me. I was inspired by the way food has the power to connect people, evoke emotions, and create memorable experiences. This passion and fascination ultimately led me to pursue a career in culinary arts, where I could turn my love for cooking into a lifelong profession.

Q4. Take us through the journey of your career in the hospitality industry.

My culinary journey began when I enrolled at IHM Goa in 2007, setting the stage for my professional

Following this enriching experience, I embarked on an international adventure by joining Plan Hotel Neptune in Zanzibar, Tanzania. This unique opportunity allowed me to explore and immerse myself in diverse global cuisines, expanding my culinary repertoire.

From there, I ventured to Plan Hotel Neptune in Zanzibar, Tanzania, exploring international cuisines. Later, I worked at Grand Hyatt Doha, Qatar, broadening my culinary expertise in a multicultural environment.

Returning to India, I contributed to Hyatt Regency Amritsar and Courtyard by Marriott Amritsar.

Now, I am proudly part of The Westin Goa, infusing my culinary knowledge into Goa's vibrant food scene.

Over my time here, I've had the pleasure of collaborating with a dedicated team to craft menus that honor Goa's culinary heritage while adding a modern twist. The warm hospitality and stunning surroundings have made my journey in Goa both professionally and personally fulfilling. I'm excited to continue exploring and innovating in this vibrant culinary landscape.

Q6. Name a few things about Goa that you appreciate the most.

Certainly, Goa offers a truly exceptional environment for my culinary career. The rich tapestry of cultural influences, a fusion of Indian and Portuguese traditions, provides an endless source of inspiration for crafting unique and flavorful dishes.

The abundance of fresh seafood from its coastal location allows me to create exquisite seafoodcentric creations. Goa's local markets and farms provide an array of high-quality, locally sourced ingredients that enhance the authenticity of our dishes. The warm and welcoming nature of the people here fosters a collaborative work environment, while the breathtaking natural beauty of Goa serves as a constant source of inspiration. Lastly, the diverse palate of tourists in this popular destination challenges me to continually innovate and adapt in my culinary offerings, making Goa an ideal place for my culinary journey.

During my leisure time, I aim to strike a balance between relaxation and continuing my passion for food. I often experiment with new recipes at home, extending my culinary creativity beyond the professional kitchen. Exploring local food scenes and restaurants is a delightful pastime, helping me stay updated with culinary trends.

I also prioritize outdoor activities like beach walks, hiking, and picnics to connect with nature and find relaxation. Reading is another favorite leisure pursuit, offering both relaxation and inspiration. Traveling and experiencing diverse cuisines enrich my culinary knowledge, while fitness and culinary workshops ensure a healthy and educational balance. Most importantly, spending cherished moments with family and friends is at the heart of my leisure activities, providing joy and rejuvenation.

At The Westin Goa, our primary emphasis lies in providing exceptional culinary experiences to our guests. We do this through a variety of events, including our renowned Sunday Brunches featuring diverse themes that aim to delight guests' taste buds with dishes originating from various regions and styles. In the upcoming month of October, our guests can anticipate the exciting OktoberFest Sunday Brunch and an exclusive pop-up collaboration with a popular nightclub from Delhi, known as Liar.

About The Founders

Culinary Education

Mayura Abhisheki and Chitra Kelkar, the driving forces behind Chitramay, share a common passion for food. Chitra is a native of the beautiful village of Mangeshi in Ponda while Mayura, although originally from Pune, has been residing in Mangueshi, Goa for the last 30 years after her marriage to a Goan native.

Mayura and Chitra do not hold any professional knowledge of culinary arts. They prepare most of their products by relying on their knowledge of the rich culinary traditions, passed down to them through generations by their family members.

Before founding Chitramay, Mayura and Chitra used to lead busy lives, taking care of their children and handling other family responsibilities. However, during the pandemic, the duo decided to convert their shared passion for food into a profit-making venture. This led to the birth of Chitramay. Mayura and Chitra came up with the name of their enterprise by combining a part of their first names “Chitra” and “May” from Mayura - to form “Chitramay”.

The initial response from customers to Chitramay’s offerings was overwhelming. Mayura and Chitra credit their success to the valuable feedback received from customers, allowing them to refine their recipes and offerings. Their specialised desserts like Sitaphal Rabdi gained rapid popularity, and word of mouth, coupled with a robust social media presence, played a pivotal role in the growth of their enterprise.

During their journey from ideating a strong plan for their enterprise to actually running their enterprise, both have learnt a lot of lessons and skills, which are now helping them in scaling up their enterprise.

Challenges and Support

Setting up Chitramay came with its set of challenges, including the scarcity of skilled manpower and the lack of cost-effective logistics in Goa. However, the founders found solace and support from various quarters.

Their ladoo hampers have become a sought-after choice for various functions, from marriages to baby showers, and also as gifts for corporate events. Additionally, Chitramay's faral (assortment of snacks and sweets) is always in high demand during festivals like Chaturthi and Diwali. People going abroad also buy ladoos from Chitramay in large quantities for longterm consumption.

Apart from laddoos, Chitramay's live chaat counters are popular during functions like Mehendi, Sangeet, birthdays, baby showers, etc.

Mrs. Anita Kavlekar, the founder of The Ponda Business Woman Group, provided invaluable guidance to Mayura and Chitra during the inception of their enterprise. The Women Entrepreneurs Business Network (WEBN), run by its founder Mrs. Siya Shaikh, President Sunitaa Mathur and mentor Dr Sneha Bhagwat, also played a pivotal role in Chitramay's growth, offering a platform for networking, knowledge-sharing, and mentorship.

A lot of support also came from Shailesh and Vasudev, the husbands of both these women behind Chitramay. From providing practical support in logistics to encouraging and understanding them, they have assisted Mayura and Chitra in overcoming several challenges.

Mayura's friend Janhavi, too contributed significantly to Chitramay's digital presence, and her friends Ankit and Swarada further fueled the journey of the enterprise with their unique ideas.

Chewy Almond, Oats & Ragi Cookies

(Calorie per cookie – Approx 80 calories)

These tea time cookies are a combination of three extremely healthy ingredients – almonds, oats and finger millet also known as ragi.

Almonds are packed with antioxidants, they are high in Vitamin E and extremely beneficial in controlling blood sugars, which makes them much quite sort after.

Oats being an excellent source of soluble fiber are a good inclusion in this recipe.

Ragi too has a wide range of nutrients. Being high in calcium, this millet is ideal to include in the diet of growing children.

This cookie recipe is made without the use of any refined sugar and it has a nice chewy texture. The packaged biscuits available in the markets are loaded with refined sugars and preservatives and this cookie can be a healthy replacement.

Recipe

Ingredients 75 gm Ragi flour 50 gm Powdered jaggery 50 gm Oats 2 tbsp Cocoa powder ¼ cup roasted almonds chopped finel 75 gm Butter (at room temperature Baking soda a pinch 1/2 tsp Vanilla extract Sugar-free Dark Chocolate chunks (optional) Method Start by dry roasting the ragi flour in a thick bottom pan for 2-3 minutes. This gives the cookies a nice nutty flavour. Coarsely grind the oats in a dry mixer. Mix both the flours and cocoa powder and add the baking soda. In a mixing bowl beat the butter and sugar till the mixture becomes pale and fluffy To this add the vanilla extract and mix it thoroughly Fold in the dry flour mixture and chopped almonds into the butter-jaggery and mix. You can also add some dark chocolate chunks (optional) Assemble everything into a dough (do not knead hard) and refrigerate the mixture for atleast half an hour Now, preheat the oven at around 160-170 degree Celsius for ten minutes Line a baking tray or cookie sheet with parchment paper Make small lemon sized dough and flatten it slightly in your palm Arrange these cookies on the baking tray leaving some gap between two cookies Bake for 18-22 minutes or till the cookies appear slightly firm to touch Remove the tray and allow the cookies to cool in the tray for 4-5 minutes Now transfer them gently on to a cooling rack and cool completely Store in airtight containers and enjoy them with your evening tea or with a glass of milk.

India's leading hospitality company, Indian Hotels Company (IHCL) announced the successful completion of nine pioneering pilot projects in collaboration with IFC’s TechEmerge Sustainable Cooling Innovation Program, within a short span of 18 months. This underscores the company’s unwavering commitment to fostering environmentally responsible practices to bring efficient, climate-smart, cost-effective cooling solutions to India's hospitality sector.

Mr. Gaurav Pokhariyal, Executive Vice President Human Resources, IHCL, said, "IHCL with Paathya, its comprehensive ESG+ platform, is committed to driving sustainability and social impact measures. The rigorous testing of nine innovative cooling solutions has allowed us to validate their real-world performance. The implementation of these pilots across our portfolio has the potential to result in savings of up to US$18.2 million and a substantial annual reduction of 108,000 tCO2 emissions. A high-efficiency fresh air purification system installed at Taj Palace, New Delhi recorded notable improvements in the air quality of the hotel lobby with reductions in PM 2.5 by over 95%. A low approach cooling tower at Taj Exotica Resort & Spa, Goa, optimizes the performance of the air conditioning system by maintaining the approach condenser temperature within 2 °C. A BE-IoT (Built Environment Internet-of-Things) system, piloted at Taj Mahal, New Delhi, focusing on critical cooling system equipment, has shown remarkable potential for cost savings and emphasized the role of continuous monitoring and automation. Further, IHCL also successfully piloted a chemical-free water treatment system at Taj Holiday Village Resort & Spa, Goa. This solution eliminated the need for chemical dosage and created a positive impact on operational expenses. IHCL has successfully piloted projects in cities like New Delhi, Jaipur, Goa among others.
