uran has been impacting agrotechnology and the food industry worldwide, developing new ideas for streamlining traditional methods of farming, harvesting and produce handling since its inception in 1966. From automated packing houses to unique technologies for greening food processing practices, Juran’s R&D achievements caught the attention of the Agricultural Engineering Institute of the Israel Ministry of Agriculture, as well as of EU R&D institutes. Over fifty years of joint activities have yielded innovative R&D projects and many jointly registered patents. The pomegranate handling breakthrough A prime example and flagship Juran product, is the ArilSystem™, an automated system for extracting the juicy seeds from pomegranates. Although one of nature’s most remarkably health enhancing fruits, its consumption has not been commensurate with its value. This is largely due to the messy and time consuming process of extracting the arils. And when the seeds are provided ready extracted, they are too expensive due to the labor-intensive extraction process. Juran’s ArilSystem has changed all that. The ArilSystem™ can process hundreds of pomegranates per hour, supervised by just one or two workers. It boasts a 95% efficiency level,

bringing aril damage down to 3%-5%, compared with previous industry standards of 20% wastage. The extracted arils are automatically and gently washed, filtering out peels and fruit membranes. The end result is pure arils, cleaned and packaged, untouched by human hands. extra bonus, the seeds, efficiently extracted during the juicing process, are a sought-after byproduct utilized by the cosmetics and pharmaceutics industries, yielding additional revenue. Today’s ArilSystem™ is available in 4 models handling 10, 20, 28, or up to 56 fruits per minute. A rate of 56 fruit/minute, or over 2,000 kg fruit/ hour, can yield over 650 kg/hour of superior quality arils, all from a single production line. Juran’s marketing director, Avner Galili says, “There is an increasing market demand for pomegranate products. Greener methods for redder lychees Juran is dedicated to making food processing more natural, with healthier products on the market, and so they addressed the issue of lychees. Starting out an attractive red, lychees lose their vibrant color within 2 or 3 days, becoming an unappealing brown. To overcome this marketing drawback, lychees undergo a sulfur treatment that maintains their color longer. However,

it offers the consumer a product that is, literally, soaked in chemicals. “There is an attitude of resignation among lychee growers,” Avner Galili says, “that sulfur treatment is a necessary evil. The good news,” Avner tells us, “is that lychees needn’t be soaked in toxins to keep them market-red.” Juran’s Sulfur-Free Lychee Treatment and Packing House involves nothing more than a temperature regulated water and salt treatment. It preserves the beautiful rich red color of lychees for up to 4-5 weeks! That’s a very significantly extended marketing window and shelf life. What’s more, this computerized, all natural process maintains the lychee’s delicious flavor along with its vibrant lasting color. The unique natural treatment process is integrated with a sorting and packing system including an automatic sizer with five size/grading groups compliant with EEC and USA market requirements. World-class heat processing systems Juran’s Single Conveyor Dryer is today’s most widely used continuous dryer in the global food industry. E

xpansion in 2017 In the wake of its successful 2016 show, DJAZAGRO continues to expand with the opening of a new hall for its 15th anniversary. An industry reference trade show for a fast-developing market According to a 2013 report by the World Bank, the African agri-food market was worth 310 billion dollars and could grow to 1,000 billion dollars by 2030. Today, Africa imports half of all the rice it eats, amounting to 3.5 billion dollars per year. Consequently, by investing in the agri-food industry, African countries will gain access to regional and world markets, increase the availability of food within their own borders and increase their exports. The African market holds incredible potential, with a population of approximately 170 million and annual average growth of 8%s since 1999. Furthermore, according to International Monetary Fund statistics, annual per capita income has risen from $310 to $1725 in the past fifteen years. The objective of many African countries is to develop their local production to increase their

self-sufficiency in staple foods, such is the case in Algeria with its National Farming and Rural Development Plan (PNDAR). As a result, requirements for agricultural and food processing equipment are also increasing. This growth is reflected at DJAZAGRO through the 26% increase between 2015 and 2016 in exhibitor numbers in the Processing, Packing and Canning sector. Olivia Milan, new director of the DJAZAGRO trade fair at COMEXPOSIUM Olivia Milan has been appointed exhibition director of DJAZAGRO, the Trade Fair for Agri-Food Production, and SIMA-SIPSA, the Livestock and Agri-Business Show, both held in Algiers (Algeria), following 24 years spent within the COMEXPOSIUM group. She succeeds Christophe Painvin, under whose impetus these shows expanded from 2011 to 2016. Olivia started out in the trade show sales and marketing division of the COMEXPOSIUM group, where she has spent the vast majority of her career. From 2004 to 2010, she specialised in the management of food industry events, up until 2010 supervising the exhibitions Boulangerie, Euro-

pain, IPA and DJAZAGRO, where which she had her first experience as exhibition director. In 2010 she moved to work in the management of the SIAL Group, a network of 9 trade shows dedicated to the food industry all over the world. Building on this experience she contributed to the creation of two of these global shows: SIAL Brazil and SIAL Abu Dhabi. From January 2013, Olivia Milan dedicated her energies to the exhibitions of COMEXPOSIUM’S Real Estate division: 5 shows in Paris, Lyon and Toulouse. She thus gained insight into a new business sector and further enhanced her know-how in trade and consumer events.

T

he standards for quality for tropical fruits are becoming more and more stringent. It is therefore mandatory that the equipment used for their processing be continuously updated in order to maximize the yield and quality of the juice / puree extracted. The solution presented was a configuration developed with the MODULAR TOP machine, with a primitive diameter of 810, with label application quality controls included, which is also able to fulfil frequent daily label format change requirements.The outcome has been that P.E. LABELLERS supplied Cargill directly, on a continuous basis, or indirectly through partnerships with other machine manufacturers who are selected as preferential suppliers. The P.E. LABELLERS labelling machines considered by Cargill Group are all modular and suitable for the application of self-adhesive and glue-applied labels, suitable for simple and quick format changes. Farchioni olii S.p.A. is one of the most important Italian food producer, located in Umbria. Farchioni produces olive oil, wine and flour. The management has decided to find an Italian partner, independent and easy to establish a rapport with, who is able to supply self-adhesive or cold glue labellers for glass and PET formats in the olive oil sector. P.E. LABELLERS presents its solution, developing machines in the MODULAR FIX series, with mechanical cam and

PLUS with electronic cam, equipped with adhesive label application and cold glue units, depending on which production line is installed. The study was conducted in an attempt to contain production costs as much as possible, offering machines that are built according to the high P.E. standard. So, P.E. LABELLERS has proven to be a reliable partner supplying the Farchioni family with more than 7 labellers for their olive oil production, one labeller for their craft beer line and one for packaging the wines from their vineyard. In the Italian food market sector P.E. LABELLERS has got a new reference in its customers portfolio, Menz&Gasser S.p.A., which produces and packs jams and marmalades up. Menz&Gasser offers to its customers different kind of products, like honey in different size pots, from the single portions to the glass pots, fruit syrups, granitas and cocktails and finally Nocciolino, the tasty cream made with hazelnuts. The machine due to be delivered to the client in the first half of 2016 will be a

The labelling machine, which in future will be combined with a PE MAYA sleever, is at the design stage in P.E. LABELLERS’ R&D department. This aspect shows P.E. The same machine is also suitable for treating containers with and without shrinkage, by simply changing the type of film. The main outcome is over 5 years, P.E. LABELLERS has supplied the customer with 3 Adhesleeve labelling machines which have made it possible to reduce maintenance costs and times by 50% in comparison to traditional roll-fed machines. Sanitizing and preserving with ozone

De Nora, with its series of De Nora Next ozonizers, offers effective solutions for meat, cold cuts, cheese, fresh pasta, bread and pastries

A

full range of well-tested ozone-based application solutions, that De Nora, a company that has been operating in the electrochemical field for over 90 years, can offer, due to its cooperation with important partners and its commitment in research projects. “Ozone has numerous applications due to its oxidizing and anti-microbial properties”, explains Cristian Carboni, Ozone Application Specialist at De Nora, “it oxidizes not only bacteria, yeasts and moulds but also other organic and residual compounds that may be present in water or on surfaces, without leaving any traces! Ozone is also effective against biofilm, a problem that many food companies have only discovered over the past few years. In fact, the bacteria present in biofilm may be viable but nonculturable, which makes them difficult to detect using traditional methods of analysis such as cultivation on Petri dishes”. “Companies often ask me if the use of ozone affects the quality of the product. Chemical and sensory analysis have shown that, when used correctly, ozone does not affect the taste even of delicate products such as culatello, stracchino, taleggio, gorgonzola, salami, speck, raw ham and ricotta and does not produce peroxides or oxidation byproducts”. The Dairy Industry Many studies have shown that ozone is effective in the treatment of water for cooling mozzarella cheese, which may contain bacteria such as Pseudomonas aeruginosa or Pseudomonas

Ozone improves the quality and safety of the products with no risks for staff. The research conducted by the University of Udine, Department of Food Science and CNR ISPA, Institute of sciences of food production, entitled ‘Use of ozone in the production chain of high moisture mozzarella cheese’, published in 2013, shows how ozone is effective in reducing the contamination caused by the use of water, in the production processes of the Dairy industry. It has also been demonstrated by many studies that gaseous ozone is also effective in sanitizing the rooms used for cheese maturation and ripening in that it prevents the development of undesired moulds (image 1) and mites, during the ripening stage,

and the presence of insects such as Piophila casei. In addition ozone has proven efficacy against Listeria Monocytogenes on savoury ricotta, P.D.O. gorgonzola, P.D.O. taleggio and other kinds of cheeses. Meat and cold cut industry In the meat and cold cut industry, the use of ozone has been widely studied in ripening rooms for its effects against mites and to prevent the development of unwanted mould, in all production, cutting and packaging environments to reduce the risk of contamination by microorganisms, in particular Listeria. Gaseous ozone enables to sanitize both air and surfaces (particularly points that are difficult to reach such as cooling systems and the inside of machines and conveyor belts). Sanitizing production environments and cleanrooms, especially those in which the products are cut and packaged, ensures a significant increase in the safety and shelf life of products. Also in the meat industry ozone can be used to treat process water that may be contaminated by the biofilm present in pipes.

Fish industry The use of ozone in the treatment of process and washing water and the sanitization of production environments ensures control against cross contamination and the increase in bacterial load that normally takes place during the working day. It also prevents the formation of biofilm in pipes and helps to oxidize it if it is already present. Ozone water is widely used in mollusc farming and the preservation of crustaceans, in fattening or prefattening tanks, in recirculating water on fry farms and process water in general, with considerable advantages in terms of the size and growth of the fish. Other uses are the production of ozone ice and use of the gaseous phase for treating air in the production environments. Fresh pasta industry In the pasta, sweet and savoury pastry industry, following their removal from

the ovens or pasteurizers, products are exposed to a high risk of contamination from the air, conveyor belts or other machinery; the cooling tunnels and packaging rooms in particular may become critical points of the process with a negative effect on the product’s shelf life and process water contributing to an increase in the microbial load of the products of up to 4 logarithms (1000 times) in a few metres. Ozone is effective in clearing these environments from bacteria, viruses, fungi and moulds without raising the humidity level and thus the water present on surfaces and in the air. Water purifiers and wastewater The ozone systems in the NEXT technologies series can also be used in the treatment of wastewater to reduce the COD and BOD levels, remove a wide range of microorganisms and reduce the quantity of sludge produced, thus cutting disposal costs.

No more mineral oil mixtures transferred into food from packaging: Sappi’s new papers with integrated mineral oil barrier bring new safety and capability to recycled packaging solutions for the food industry in a sustainable and efficient way. The two key benefits: Minimum 15-month mineral oil barrier protection and very good heat sealing capabilities so that food packaging does not require any additional coating seal. P

ackaging protects the product it contains from dirt, contamination and destruction. However, there can be significant consequences when the packaging itself becomes a concern: The existence of poisonous mineral oil mixtures has been detected in various foods since the 1990s. Recycled packaging carton board was identified as the source of these mineral oil mixtures in food. Printing inks from recycled newspapers that contain solvents are the primary culprits due to the fact that poisonous hydrocarbons cannot be fully removed in the re-

cycling process. A residual amount, normally around ten percent, remains in the recycled material after processing. The ink on the printed packaging can also contain mineral oil mixtures and can migrate into the food as well. Dry foods and foods containing fat are affected: Rice, noodles, chocolate products, muesli, potato dumplings and baby food. The mineral oils predominantly migrate into food – even at room temperature – as volatile gases. Most inner pouches currently used fail to offer adequate migration

protection. Safe solutions, such as those using complex laminates with aluminium and PET, are both expensive and not environmentally friendly. The transfer of mineral oil into food is the result of two key properties of the food itself: First, the particular surface of the food onto which the mineral oil is absorbed; and secondly, the percentage of fat in the food into which mineral oils can easily be dissolved and absorbed. These residues consist of a complex mixture of saturated (MOSH) and unsaturated hydrocarbons

Humans ingest the poisonous substances by consuming the food with high-risk consequences: In 2009 the Bundesinstitut für Risikobewertung (BfR; Federal Institute for Risk Assessment) determined that mineral oils can become concentrated in the human body with ingestion over time. Animal testing has shown that they are highly poisonous and can cause liver inflammation, heart damage and other diseases, including cancer. The conclusion of the BfR was that it is urgent that the transfer of mineral oils into food should be minimised. Solutions expensive and a long way off Industry and researchers have long been looking for solutions to eliminate these unwanted risks. The entire printing sector is discussing how

THREE QUESTIONS TO KERSTIN DIETZE, MARKETING MANAGER FOR SAPPI SPECIALITY PAPERS, SAPPI FINE PAPER EUROPE What has the market’s response been to the idea of packaging papers with an integrated mineral oil barrier? The interest in an efficient and sustainable mineral oil barrier solution is very high and is growing. The increasing interest is certainly also driven by the imminent introduction of legal requirements. Many product manufacturers are now focused on this issue and are looking for rapid solutions. For this reason, the response to our official product launch during Interpack 2014 was extremely positive. There were many enquiries from product manufacturers and processors about our innovative and recyclable barrier papers, with our efficient and easy-to-implement solution enjoying a great deal of interest. Are there any specific projects yet, and how is the ongoing development of the mineral oil barrier papers progressing? Currently there are multiple customer tests running on different packaging types for tea, cereals, chocolate and various dry foods. We are very optimistic that we will be able to present the first successfully implemented projects very soon. The development work will not come to an end following the successful market launch of the mineral oil barrier papers, however. The next stage is to expand the number of weights on offer for these barrier papers. What further developments is Sappi currently working on? Sappi is increasingly investing in the development of special papers. Thanks to expansion of the specialist centre for special papers in Alfeld, we will be able to present many additional innovations in the future. The Algro Nature and Leine Nature papers that can be composted at home, as well as the mineral oil barrier papers Algro Guard M and Leine Guard M are the first innovative results of these investments. In addition to this, our company is also running various development projects in the area of sustainable packaging solutions. A key focus is the integration of different functionalities into our papers. We will be announcing additional products and solutions very soon.

to migrate to inks free of mineral oil for the long term. Carton manufacturers are working on improved cleaning processes for recycled papers; and paper processors are voluntarily avoiding the use of inks containing mineral oil for packaging printing. However, none of these solutions can have the desired impact in the short term however, and even when they are achieved, the associated costs are very high. Functional barriers, either in the form of coated, painted or laminated folding cartons or impermeable inner pouches, is a potential solution that is currently available. The use and benefit of packaging materials with mineral oil barriers (abbreviated as MOB (Mineral Oil Barrier)) are currently an important topic of discussion in the packaging sector. Although some of these measures are currently being implemented by product manufacturers, there is a need to do more, and soon: Legal requirements for this are anticipated in Germany, in particular, where a legal bill is still being discussed. However, a recommendation for the use of barriers for inner pouches in food packaging has existed in Austria since 2012. Sappi presents its solution To enable the continued use of recycled paper in packaging materi-

als, Sappi has developed a solution in partnership with BASF and Eurofins that brings innovative MOB papers into the market. The Sappi paper has a barrier coating which is applied during the production process in the form of a special dispersion agent. These new paper types for flexible packaging prevent the penetration of potentially harmful substances into food while allowing the ongoing, sustainable use of recycled cellulose in packaging materials, including outer packaging and transport packaging, ensuring improved food safety. Sappi introduced MOB papers as a technology demonstration at Fachpack last year . Shortly afterwards, these papers were awarded the “PPI Award 2013 for Advances and Innovation.” At this year’s Interpack, MOB papers were introduced onto the market under the brand names Algro Guard M for outer packaging that require high print quality, and Leine Guard M for inner pouches and bags. These save, sustainable and cost-effective solutions have been generally available since Spring 2014. Homogeneous, sealed surface One of the technical challenges in developing the MOB papers lay in achieving a homogeneous coating

to fully cover the pre-coated paper substrate. Even small defects in the coating can have a direct effect on the quality of the barrier function. This means it is important to have an exceptionally smooth, non-porous raw paper with a full-coverage primer offering. Another challenge was finding a production window on the coater to permit a barrier coating to be applied to product without the rollers becoming blocked. Together Sappi and BASF succeeded in developing coating solutions to address these challenges. It required the creation of a water-based polymer dispersion that could guarantee the necessary barrier while providing a stable and fault-free film using the predefined parameters without blockages. For this purpose, the film formation had to be aligned with the blocking response to achieve the optimal formulation. Test confirms effectiveness To test the effectiveness of the barrier coating in preventing the penetration of poisonous mineral oils into food and other sensitive products, BASF turned to Eurofins Consumer Product Testing GmbH, an international bioanalytics service provider. This lab focuses on test-

ing and analysing foods, pharmaceutical products and environmental samples as well as consumer goods. Eurofins conducted a threemonth test cycle on behalf of BASF. These and other tests have definitively shown that papers with MOB barriers developed jointly by BASF and Sappi prevent mineral oil residues in recycled cardboard and recycled carton from migrating into food during the standard shelf life of the foods in question: The two new Sappi papers, Algro Guard M and Leine Guard M, have the necessary MOB functionality for a protective period of at least 15 months - in other words, far longer than the normal maximum shelf life of the products - as well as very good sealing capabilities. It is precisely the integrated MOB functionality and the excellent sealing capability of the papers that ensure that no additional processing steps or extra coatings are needed to meet these requirements. This

results in shorter value chains and more efficient overall production times. Before these tests were conducted, the supervisory bodies in the food industry were of the opinion that the migration of mineral oils could only be safely prevented via functional barriers such as inner pouches. According to information from Eurofins, the material from BASF was the first directly applied coating able to demonstrate appropriate barrier properties. Thanks to the surface properties of the new MOB papers, they are also very well suited for downstream processing to enhance the packaging according to brand owner requirements. These types of enhancements are not always required, however. For example, tests have shown that the MOB papers also offer excellent aroma protection. This is demonstrated, for example, by protection against

the loss of camphors (peppermint) and limonene in foods packaged using these papers. At the same time, the barrier paper also protects against environmental odours that could impair flavour penetrating the packaged food from the outside. Conclusion: on the right path Both of these new Sappi paper types feature two key properties: Guaranteed mineral oil barrier protection for 15 months and excellent heat sealing capabilities. The market interest in this packaging solution is immense. This confirms for Sappi that its approach in developing a packaging solution with mineral oil barrier was the correct one: The many benefits of paper and carton as packaging materials - renewable, environmentally friendly, recyclable, compostable and biodegradable - now include providing a mineral oil barrier for improved food safety.

arry Callebaut, one of the world’s leading manufacturers of cocoa and chocolate products, required a packaging system at its Eddystone, PA facility that ensured safe transport of the cocoa powder filled in paper bags and stacked on pallets. The packaging of the bag stacks must combine low packaging costs with sufficient weather protection and high stack stability during transport and storage especially when the paper bags are stacked on pallets of two different sizes. Barry Callebaut engaged BEUMER to develop an end-of-line packaging system for these specific requirements. Barry Callebaut AG with headquarters in Zurich, Switzerland is a fully integrated company that masters nearly all steps from the sourcing of cocoa beans right up to the finished products sold on store shelves. As supplier of industrial and specialty chocolates, the company serves industrial and artisanal customers. The American subsidiary in Eddystone fills bags with cocoa powder, pal-

letises and packages them. The bags are then loaded into containers or trucks and transported to distributors such as chocolatiers, pastry chefs or bakeries in North America or Europe.

High requirements for the packaging system To ensure that the cocoa powder arrives to customers in perfect condition, it must be transported in a safe and protected manner. For this reason, the packaging system must work at a high performance level. The goals for Barry Callebaut were to increase automation and thus process reliability, improve the product presentation and use less packaging material. In addition, the packaging had to be able to protect the cocoa powder against high temperature and air humidity. As both the Euro pallet (800 mm x 1,200 mm) and the GMA pallet (Grocery Manufacturers of America) (1,015 mm x 1,215 mm) are used, the packaging system must be customisable for different pallet sizes. Modernisation of the packaging line As general contractor, BEUMER Corporation in Branchburg, New Jersey (USA) installed a complete packaging system, various conveying systems as well as a bagging system. With partner Behn + Bates America, a division of Haver Filling System, Inc., BEUMER equipped the line with the Integra system, a fully automated, completely premounted bagging system for bulk materials in the food industry. This system fills bags with cocoa powder and seals them. As part of the quality control process, the BEUMER belt conveyors transport the bags to a metal detector and a checkweigher. Here, bags containing metal or over- and underweight bags are rejected. After the palletising process, the stack press removes residual air from the bags, thus

increasing the stack stability. When designing the packaging line, the handling of different batches on different-sized pallets was one of the challenges. For this reason the high-capacity BEUMER robotpac was installed providing excellent stack quality and load stability. Commissioning of the high-capacity packaging system The innovative BEUMER stretch hood is also part of the scope of supply. This high-capacity packaging system pulls a stretch hood over the palletised bag stack to protect the products against wind, rain and dust while providing ultimate safety during transport. The bag stack is completely packaged and transported to the take-away post. Thanks to the permanent tension force of the film in vertical and horizontal direction, the bag stack provides high stability - even if the cocoa powder settles in the bags, thus reducing the bag volume. Sensors on the BEUMER stretch hood measure the height of the pallet. This automation allows for the calculation of different stacking heights as well as the optimisation of film consumption. The film is then cut and sealed. The formed hood is pulled over the complete bag stack forming a stable unit. More safety and less film consumption Since the modernisation, the workflow at Barry Callebaut’s packaging facility runs without any problems. The products are protected against wind, rain and dust. Besides the packaging capacity, the stretch hood technology provides improved visibility of the palletised products thanks to the smooth surface of the film hood. The material costs for packaging have been reduced since five to ten per cent less material is required, making this solution not only more cost effective for Barry Callebaut but an important contribution toward safeguarding the environment. www.beumergroup.com

0XMS is a new nine-layer high barrier lidding film with a thickness of only 25 μm, which the North Italian packaging specialist Comar has developed for MA-packaging of food, including fresh and processed meat, fish or cheese. Use of a DuPont™ Appeel® sealing resin assists reliable, consistent adhesion to common PP, PE, PS or PET trays. Because the new coextrusion blown film has low thickness and is ready for use without any lamination steps, it contributes significantly to reducing the packaging’s environmental footprint. And with its high strength, toughness and barrier properties, it helps to prevent food wastage due to premature deterioration. t today’s press breakfast at Fruit Logistica, Mondi Containerboard gave an insight into its latest product improvements and showcased highly functional containerboard paper grades that are suitable for fruit and vegetable packaging. “We know that packaging can make a crucial difference, particularly in the fruit and vegetable sector because the produce is often exposed to demanding conditions, such as extreme temperature fluctuations and moisture,” says Florian Stockert, Sales Director Containerboard at Mondi Europe & International. Drawing attention to the variety of properties and requirements of paper-based packaging, he continues, “Long-distance shipping is commonplace in this business and, as a paper producer, we must satisfy the demand for resilient, lightweight, but at the same time sturdy and environmentfriendly packaging solutions.” Pro-environmental packaging shields fresh produce from challenging conditions Alongside the eco-friendly ProVantage Kraftliner Aqua, which offers water resistance for up to three days, the exhibition highlights this year include the improved quality of ProVantage Fluting Aqua - achieved by rebuilding paper machine PM4 at the Mondi Świecie mill in

Poland. The modifications are delivering a variety of benefits to corrugated box producers, fruit and vegetable growers, retailers and end-users. It summarises the findings of two representative surveys, both highlighting that consumers prefer corrugated boxes for fruit and vegetable packaging. “One survey showed that half of consumers consider fruit that is packed in corrugated board to be of a higher quality than fruit contained in plastic crates. An interesting discovery by TNS Emnid, one of the institutes that conducted the research, was that two-thirds of consumers regard corrugated boxes as more hygienic than their multi-use plastic counterparts,” remarks Stockert.

SANTE - natural deliciousness Available as a liquid or powder, SANTE provides naturally occurring umami and kokumi tastes with a low sodium content. Umami, meaning ‘delicious taste’, is also known as the fi fth taste – after bitter, sweet, salty and sour – and its savoury, meaty character is detected via the taste receptors for glutamate. Kokumi, meaning ‘rich taste’, provides balance and a hearty mouthfeel. Kokumi is delivered by foods with the right combination of amino acids. Importantly, SANTE manages to combine both of these attributes with a clean and clear label. Manufacturers may declare SANTE as ‘tomato concentrate’ or ‘natural fl avour’, according to local regulations. SANTE is taste-neutral, with no overt tomato taste, so it can be used to boost the fl avour of both sweet and savoury products. It is ideal for use in soups, sauces and marinades and in its powdered form it can also be applied as part of a seasoning mix for products such as potato chips and extruded snacks, and in spice blends for meat products. Low dosages of between 0.15 and 0.7% are suffi cient to deliver a highly accentuated taste experience, and SANTE is stable across a wide range of temperatures and pH. As well as providing all these positive attributes, SANTE enables formulators to reduce or eliminate a range of ingredients with negative labelling connotations, such as MSG, ribonucleotides, yeast extracts and hydrolysed vegetable proteins. In addition, thanks to its ability to enhance the salty fl avour of products, SANTE allows a reduction in sodium from salt by 30 to 50% in some applications. The secret of SANTE lies in the high levels of naturally occurring glutamate in Lycored’s specially bred tomatoes. Long shelf-life Croissant production

C

roissants continue to gain popularity worldwide. Every region of the world has its own croissant products and therefore unique characteristics. In some parts of the World, the Middle East and Asian region in particular, demand long shelf life products. This is the reason why the long shelf life croissants were developed. Croissant production lines were among the very first Rademaker bakery production lines produced and we are proud to be the global leader in Croissant production lines. With our three decades of experience, Rademaker is able to produce long shelf life croissant types that meet our client’s demands. When it comes down to long shelf life croissant production lines, the first important question that arises is how long the desired shelf life should be. Shelf life can range from 7 days to 6 months. This shelf life will determine the recipe but also the procedure of dough development. The way the croissant is cooled and packed too, is of great influence to the shelf life of the product. According to the Rademaker long shelf life technology, four drives determine the quality and the shelf life of the croissant. 1. Recipe The recipe for long shelf life croissants is unique. Long lasting softness is created by making use of mother dough and rich recipe with margarine, sugar, eggs, glucose syrup and a special blend of enzymes. The enzymes blend can be used in combination with a bread improver to contribute tolerance and volume.

The combination of these ingredients, in its specific mixture, will reduce the amount of free water inside of the dough (aW). In hot, humid countries, or in case of a desired long shelf life, calciumpropionate (cp) as preservative is used to a maximum of 0,3% flour weight. The odor of cp is normally regarded as unpleasant, while as natural preservatives (developed during fermentation and by using mother dough) it is regarded as pleasant but less effective. Another crucial aspect for the keepability of these products is the filling. Important is to use fillings that are in balance with the baked croissant crumb; if the filling is too hygroscopic it will attract all water from the crumb. If the filling will release water, the result will be soaked, patchy crumb with dried filling.

Last aspect, the choice for margarine (or shortening, fat, etc.) or butter is important as well. Butter is much more vulnerable for rancidity than vegetable fats. 2. Process/Procedure Long shelf life croissants are produced with very long fermentation times. This differs from the process for ‘normal’ croissants. The long fermentation times arise because mother dough is used (also called levains, brews, preferments, sauerteig, etc.) in combination with the usage of a very low free water amount and the very high amount of fat and sugar is used in the dough. A maximum of flavor development and sometimes usages of preservatives, like calcium propionate, also contribute to this long fermentation times. However, the mother doughs procedure contribute to this the most. The mother dough procedure starts with a small amount of culture or

strain. This culture is created spontaneous by air fermentation or by purchased strain. Accordingly, this strain is up scaled by flour, water and temperature. This scaling can be done in several fermentation steps. Whether the choice is made for one, two or three fermentation steps is depending on recipe costs, desired quality, pH, production equipment and dough handling. Important is the development of the strain called ‘Saccharomyces Exiguous’. This strain will decrease the acidity of the dough and creates a natural preservative. To upscale the strain and to keep the characteristics of the strain vivid, there are two basic ways: 1. One-time purchase. A certain amount of strain/culture can be used as a starter for the next day. Whether the mother dough’s strain/culture remains stable and daily performs the same, depends on the bakery conditions. 2. Repeatedly purchase. Every day a fresh batch is started up for croissants production. This method may be a bit more expensive but the predictability of the production process, especially the final proofing time, is much more reliable. 3. pH Mother dough is necessary to, besides taste and crumb softness development, lower

the pH of the dough. By doing so, natural preservatives (various types of lactic acid, citric acid, etc.) are created. During the fermentation of the mother dough, the pH will decrease to levels of < 4. After mixing and final proofing, the pH can reach 4,5 to 5. 3. Dough equipment Dough shaping Rademaker offers Croissant production lines to produce long shelf life croissants. Capacities starting at 800 kg up to over 2,000 kg per hour leading to a product quantity of 12,000 pieces an hour up to 70,000 pieces per hour. Capacities depend on the size and weight of the croissants. The Rademaker Sigma Laminator will provide the correct laminated dough sheet. This dough sheet is fed towards the Rademaker Croissant production line. Because of the Low Stress Sheeter it is possible to handle doughs that require the long fermentation times that are required for long shelf life croissants. 4. Proofing, Baking, Packaging Handling The final proofing time of the croissants is very long. This is due to the usage of mother dough, the rich recipe, the usage of preservative and the very limited amount of water. Depending on the recipe, we have seen final proofing times from 180 minutes to bakeries with over 300 minutes. To avoid drying of the product and to keep the maximum of moisture inside of the product, the product should be baked with limited con-

vection and maximum radiation and conduction. Baking time depends heavily on the size of the product. For example for a 65-gram product, the baking time is approximately 11 minutes. A very important aspect that also determines the shelf life and product quality is the final step in the production process: packaging. Assuming that the croissant is packed in flowpack (horizontal) or trans wrap (vertical) packaging, there is the possibility to increase shelf life by making use of gas flushing: a mixture of Nitrogen 40% - 0% and Carbon dioxide 60% - 100%. For this procedure, it is necessary to use special equipment and special foil. Summary of long shelf life croissant preservation Basically there are three ways of preserving the product: 1.. In the dough. By lowering pH by long fermentation/ mother dough technology or by adding calcium propionate. In addition, the filling can contain preservatives that has effect on croissant crumb. 2. Special crust treatment. 3. Around the croissant by gas flush during the wrapping process. An easy to use and fast cleaning device, the throwaway film guarantees high hygiene standards with a unsignificant cost per kg of product. In this way, it is possible to avoid the use of row gear up/gear down systems, which are very common in the pan lines used in tunnel ovens. This is not something new; however, this spiral configuration makes it possible to make the best of the heating system designed by Tecnopool for this oven. The absence of forced ventilation and the favourable balance of air/product volume in the cell, compared to a tunnel oven, makes it possible to work with room temperatures between 10° and 15°C lower than those used by tunnel ovens (cooking times being equal). In special cases, according to Tecnopool’s experience, these differences can reach 30°C. Anyway, also in some specific cases in which it is necessary, forced ventilation is also installed in order to increase the convective effect. The technical decision leading Tecnopool to choose a radiator system, together with the special configuration afforded by the spiral, comes from the results obtained after years of trials with all types of products and in very different working conditions, which

show a higher thermal performance, thus improving the results compared with other systems. The thermal fluid that runs through the tubes is diathermic oil, a system that has been chosen on account of its high thermal performance and its very low risk. It must be taken into consideration that the performance of a diathermic-oil boiler ranges between 87% and 91%, compared to 60% of an air-heating system or 30% of a direct-flame heating system. n 1956 Evangelos Ioannou started his working life in the rotogravure cylinder engraving industry. In 1970 he founded in Athens a small unit for the chemical etching of rotogravure cylinders. he organisers of SIMEI, the world’s leading event for winemaking and bottling machinery and equipment organised by the Unione Italiana Vini since 1963, are already working on the 27th edition, which will take place from 11 to 15 September 2017 in Munich, Germany. The key words, as always, will be innovation and technology. Numerous innovations on the agenda, starting with the location. In 2017, the event will move from Italy, where it will return in 2019, to Germany, to forge a fruitful and mutual synergy with drinktec, the international trade fair for beverage and liquid food industry equipment. This union, which enhances the complementarity of the two events, creates a unique platform that crosses both sectors, offering operators and visitors the best of technology all round. SIMEI will also be implementing the proposals of drinktec, creating a unique and specialised centre for the wine sector covering over 20 thousand square metres. Rahmen einer Marketingkampagne mit dem Internet-Riesen Google die roten rechteckigen Verpackungen des Pausensnacks KitKat mit QR-Codes bedrucken lassen, die direkt zum eigenen YouTube Channel „YouTube my Break“ führen. Dort werden die User abwechslungsreich unterhalten – und so auf geschickte Weise an das Produkt gebunden. Das Besondere an der Aktion: Das auffällige, markenstiftende Logo KitKat auf der Mitte der Verpackung wurde für die Sonderedition entfernt, damit YouTube den zentralen Platz einnehmen konnte. In a marketing campaign with Internet leader Google, it has the red rectangular wrappers of “have-a-break” KitKat printed with QR codes that lead straight to the manufacturer’s own “YouTube my Break” channel. This is where users are entertained in a variety of ways – and thus cleverly hooked by the product. What makes the campaign different is that the striking KitKat logo with its strong brand identity has been removed from its central position on the wrapper for this special edition and replaced by YouTube. In addition, Google’s Android operating system, in the wake of Cupcake, Donut, Froyo, Gingerbread, Honeycomb, Ice Cream Sandwich and Jelly Bean, was given a brand name in the shape of KitKat for the first time in history. It is an open secret in the industry

Wer auf dem Süßwarenmarkt Erfolg haben will, muss sein Produkt gut präsentieren“, sagt Torben Erbrath vom Bundesverband der Deutschen Süßwarenindustrie (BDSI). Das gilt umso mehr, als die Auswahl an Nasch- und Backwerk am Point of Sale stetig wächst. Immer häufiger ergänzen zuckerfreie oder zucker- und fettreduzierte Süßwaren die bereits seit vielen Jahren bestehenden Tra-

This way the group is underlining something that experts and studies have recently repeatedly found: that the package is of supreme importance today in communicating the brand – particularly in the confectionery sector. “With increasing product diversity, competition is getting tougher. If you want success on the confectionery market, you have to present your product well,” says Torben Erbrath of Germany’s Association of the Confectionery Industry (BDSI). This applies all the more as the selection of sweets and bakery products at

the point of sale is constantly growing. The existing products with traditions going back many years are being supplemented more and more by sugar-free or sugar- and fat-reduced confectionery. The range of confectionery suitable for vegetarian or vegan diets is also on the increase. In addition, confectionery that is gluten- or lactose-free or even halal or kosher can now be found in almost any supermarket. In the snack sector, says BDSI, the palette is growing in diversity and with a huge variety of flavours – whether in nuts, deep-fried or baked salty snacks. “Thanks to this vast diversity, there’s a matching prod-

Auch im Bereich der Knabberartikel gibt es nach Angaben des BDSI ein immer differenzierteres Angebot und eine große geschmackliche Auswahl – sei es an Nüssen, an frittierten oder auch an gebackenen salzigen Snacks. „Bei dieser großen Vielfalt findet jeder Verbraucher das für ihn passende Produkt“, sagt Erbrath. „Die Verpackung ebnet den Weg in den Einkaufswagen.“ Verpackungsdesigner stehen damit vor einer schwierigen Aufgabe: Sie müssen das Naschwerk mit pfiffigen Slogans nach Möglichkeit multi-

medial bekannt machen und im Regal mit auffälligen Farben und Formen ins Szene setzen. Allerdings gilt es, beim Ringen um Präsenz nicht zu übertreiben. Denn übermäßiger Einsatz von Material und damit Ressourcen kommen beim Verbraucher nicht gut an. „Die Kunden legen immer mehr Wert darauf, ihren ökologischen Fußabdruck möglichst klein zu halten. Außerdem haben sie einen starken Wunsch nach gesunden, ultra-frischen Lebensmitteln, die gleichzeitig extrem convenient und ästhetisch verpackt sein sollen“, sagt Andreas Steinle vom Zukunftsinstitut, einer Denkfabrik für Trend- und Zukunftsforschung. Doch nicht nur aus ökologischen, sondern auch aus Kostengründen sollte die Industrie auf allzu ausladende und aufwendig produ-

uct for every consumer,” says Erbrath. “The package paves the way into the shopping trolley.” Package designers are therefore faced with a difficult task. They have to publicise the snack with memorable slogans across all possible media and showcase it on the shelves with attention-grabbing colours and shapes. However, when jostling for position, it is best not to overdo it. Because making excessive use of materials and hence resources does not go down well with the consumer. “Customers are attaching growing importance to keeping their ecological footprint as small as possible. And they also have a strong desire for healthy, ultra-fresh foods that also come in high-convenience and attractive packages,” says Andreas Steinle of the Zukunftsinstitut (Future Institute), a think tank for trend and future research. But industry should do without overly flamboyant and elaborately produced packages for economic reasons

as well as ecological ones. The cost not only of raw materials such as milk, cocoa and sugar, but also of energy and packaging materials is steadily rising. To lastingly attract consumers who want sustainably produced goods and prevent the cost of materials and production from spiralling out of control, industry has no alternative but to econ-

omise on materials and above all avoid excessively extravagant packages while also reducing energy input in production. The fact that material downsizing is possible is illustrated by studies by pacproject, an international firm of consultants. As an example, it has taken a close look at the historic Corny muesli bar wrappers and discovered that the

Dass das sogenannte Material-Down-Sizing möglich ist, zeigen Untersuchungen des internationalen Beratungsunternehmens pacproject. Es hat beispielhaft die historischen Verpackungen der bekannten Corny-Müsliriegel unter die Lupe genommen und festgestellt, dass die Barriere-Aluminiumfolie der Verpackung des Produkts in den vergangenen 30 Jahren stetig reduziert und schließlich durch einen neuen Barriere-Verbund substituiert wurde

– ohne negative Auswirkungen auf das Produkt. „Auch ohne den vollen Barriereschutz befand sich der CornyRiegel am Ende des Mindesthaltbarkeitsdatums qualitativ im sehr guten Bereich. Dies hat die Frage aufgeworfen, ob nicht auch die aktuellen Folien mehr Schutz und Barrieren bieten, als der Cerealien-Riegel eigentlich benötigt“, sagt pacproject-Verpackungsingenieur Alexander Witt. Alternativen zu klassischen Verpackungsmaterialien wie Aluminium und Kunststoff gewinnen auf dem Markt bereits zunehmend an Bedeutung. Die Firma Bionatic etwa hat unter dem Namen Greenbox ein erstes Sortiment von rund 250 verschiedenen Verpackungslösungen aus erneuerbaren oder recycelten Rohstoffen wie Holz, Cellulose, Biokunststoff und Palmblatt entwickelt. Viele dieser Lösungen seien biologisch abbaubar oder umweltfreundlich in der Verbrennung, sagt Bionatic-Gründer Robert Czichos. Und die Produktion sei simpel: „Aus einem

Blatt wird eine Verpackung, indem es zunächst mit Wasser unter Hochdruck gereinigt wird. Dann wird es in einer mechanischen Presse mit Druck und Wärme in eine Form gebracht. Es ist also ein sogenannter Tiefziehvorgang. Danach folgt das Finishing, indem die Kanten geschliffen und die Flächen poliert werden. Und das ist dann auch schon alles.“ Unterdessen suchen Wissenschaftler nach weiteren alternativen Materialien. So arbeitet das FraunhoferInstitut für Verfahrenstechnik und Verpackung (IVV) im Rahmen des Projekts ThermoWhey an einem Herstellverfahren für Barrierebeschichtungen aus Molkeprotein, das die herkömmliche ölhaltigen Polymerbeschichtungen ersetzt. Der Vorteil von Molke: Ihre Inhaltsstoffe können die Haltbarkeit von Lebensmitteln natürlich verlängern. Allerdings ist Molke hitzeempfindlich, sodass die Forscher erst eine Beschichtungsformulierung finden müssen, die sich auch bei ho-

And this raised the question whether the cereal bar actually needs the level of protection and barrier effect provid-

ed by current films,” says pacproject packaging engineer Alexander Witt. Alternatives to classical packaging materials like aluminium and plastics are already making increasing inroads into the marketplace. Under its Greenbox label, Bionatic, for example, has developed its first range of some 250 different packaging solutions using renewable or recycled resources such as wood, cellulose, bioplastics and

palm leaf. Many of these solutions are biodegradable or can be incinerated pollution-free, says Bionatic founder Robert Czichos. And their production is straightforward: “A single leaf is converted into package by first cleaning it with a high-pressure water jet. And then it is moulded on exposure to heat in a mechanical press. So it’s a kind of deep-drawing process. This is followed by finishing in which the edges are smoothed and the surfaces polished. And that is pretty well it.” Meanwhile scientists are searching for further alternative materials. In the context of its ThermoWhey project, the Fraunhofer Institute for Process Engineering and Packaging (IVV) is working on a production process for barrier coatings made of whey protein capable of replacing conventional oil-based polymer coatings. The advantage of whey is that its ingredients are naturally capable of extending the shelf life of foods. However, whey is heat-sensitive,

Auch die Maschinenbauer werden in Düsseldorf mit zahlreichen Innovationen aufwarten. „Ein verantwortungsbewusster Umgang mit natürlichen Ressourcen und umweltschonendes Wirtschaften hat bei Herstellern von Nahrungsmittelmaschinen und Verpackungsmaschinen einen hohen Stellenwert. Sie wissen, dass nachhaltige Produktionsprozesse bei ihren Kunden großgeschrieben werden“, sagt Vera Fritsche, Referentin im VDMA Fachverband Nahrungsmittelmaschinen und Verpackungsmaschinen. Noch böten sich in der Süßwarenproduktion zahlreiche Optimierungsmöglichkeiten.

Intelligente Steuerungs- und Automatisierungstechnik, sparsame Antriebe, Kompressoren, Lüfter oder Pumpen zählten zu den klassischen Lösungen, um Strom und Betriebsmittel einzusparen und die Energieeffizienz zu steigern. Effiziente Motoren, optimal an die Bewegungen und Beschleunigungsvorgänge in den Maschinen angepasst, senkten den Stromverbrauch. Darüber hinaus senkten innovative und optimierte Prozesse den Verbrauch von Energie und Wasser, verlängerten innovative Maschinenkonzepte die Service- und Wartungsintervalle sowie die Betriebsdauer und sparten dadurch Energie ein, so Fritsche. Der Schweizer Anlagenbauer Bühler zählt zu den Protagonisten effizienter Verarbeitungslösungen und hat sich zum Ziel gesetzt, den Energiebedarf in allen seinen Kernprozessen bis 2020 um mindestens weitere 20 Prozent zu reduzieren. „Damit können wir sowohl die Energieeffizienz unserer Produkte erhöhen als auch gleichzeitig einen

Beitrag zum Umweltschutz leisten“, sagt Ian Roberts, Technikchef des Konzerns. Einen zentralen Aspekt sieht er dabei in der Produktivität, etwa durch Verkürzung der Zykluszeiten. Zudem verstärkt Bühler die Anstrengungen, um die Energieeffizienz in bestehenden Kundenanlagen zu verbessern. So ist die Schokoladenherstellung aufgrund der zahlreichen Prozessschritte wie das Reinigen, Rösten, Debakterisieren, Brechen und Vermahlen der Kakaobohnen sehr aufwendig und teuer. Bühler verspricht, die Energiekosten der Kakaoverarbeitung um 65 Prozent zu senken, wenn Kunden einerseits das kostenlose Energy Audit des Unternehmens nutzen und andererseits seine neue Schalenverbrennungstechnik zum Einsatz kommt. Bei dem Audit werden Energielecks im Herstellungsprozess aufgespürt. Das neue Verbrennungssystem nutzt die aus den Schalen gewonnene Energie zur Röstung und Debakterisierung anstatt die Schalen direkt zu entsorgen – dadurch muss keine Heizener-

so researchers first have to find a coating formulation that can also be processed at high temperatures. At interpack 2017 in Düsseldorf from 4 to 10 May, many more packaging innovations for confectionery and bakery products will also be on show. 2,700 exhibitors are expected, and some 1,000 of these have named the confectionery industry as a target group for their products and services – and what they will be exhibiting will be suitably wide-ranging. Machine manufacturers will also be present in Düsseldorf with numerous innovations. “Manufacturers of food-processing and packaging machines accord high priority to handling natural resources responsibly and managing their processes with minimal environmental impact. They know how important sustainable production processes are for customers,” says Vera Fritsche, expert at the association for food processing machines and packaging machines within VDMA (Mechani-

cal Engineering Industry Association). In confectionery production, Fritsche continues, there is still plenty of room for optimisation. Intelligent control and automation technologies and energyefficient drives, compressors, fans and pumps are some of the classical solutions for saving electricity and other resources and boosting energy-efficiency. Efficient motors perfectly adapted to machine movements and acceleration processes reduce power consumption. In addition, says Fritsche, innovative and optimised processes cut the consumption of energy and water, while innovative machine designs extend service and maintenance intervals and service life and thus save energy. Swiss plant manufacturer Bühler, one of the prime movers in efficient processing solutions, has set itself the goal of reducing energy consumption in all of its core processes by at least a further 20 per cent by 2020. “This way we can both raise the energy-efficiency

of our products and also do our bit for environmental protection at the same time,” says Ian Roberts, the Group’s Chief Technology Officer. He sees a central aspect here in productivity – by shortening cycle times, for example. Additionally, Bühler is redoubling its efforts to improve the energy efficiency of existing customer installations. Because of the numerous process steps such as cleaning, roasting, debacterising, crushing and grinding the cocoa beans, chocolate manufacture is highly complex and costly. Bühler pledges to slash energy costs in cocoa processing by 65 per cent if customers make use of the company’s free energy audit and also adopt its shell burning technology. The audit is used for tracking down energy leaks in the production process. As an alternative to the direct disposal of the shells, the new combustion system exploits the energy obtained from the shells for roasting and debacterising, so no heating energy has to be bought in.

Somit können beispielsweise Effizienzverluste in Korrelation zu Zeit, Umgebungstemperatur oder anderen Parametern gesetzt werden und die Fehlersuche und Hilfe zur Selbsthilfe unterstützt werden“, so Rustler. Außerdem sei die intuitive Unterstützung der Wartungs- und Reinigungsprozesse optimiert worden, etwa, indem die Maschine selbstständig auf Serviceund Wartungsintervalle hinweise. Der Vorteil von Automation und Digitalisierung: Die kommunikationstechnisch verketteten Maschinen könnten durch wenige oder sogar nur einen Operator bedient werden. Und durch Integration des User Interface in mobile Endgeräte könnten die Maschinendaten von jedem Punkt der Welt abgerufen und bearbeitet werden, sagt Rustler. Die Schweizer Firma Knobel Maschinenbau, Spezialist für Maschinen zur Schokoladenherstellung, hilft Herstellern auf andere Weise, Kosten zu sparen. Er bietet seine Anlagen – Eintafel-

Anlagen, Gießmaschinen und andere Geräte – im Baukastenprinzip an, sodass Kunden ihre Produktion schrittweise aufbauen und bei Bedarf punktuell in Segmenten umrüsten können. Das ermöglicht ihnen eine hohe Flexibilität und erlaubt ihnen somit eine schnelle und effiziente Umstellung auf neue Produkte. Schnelle Umrüstzeiten würden auch dadurch ermöglicht, dass neue Maschinen mit Plug-andPlay einfach im System integriert werden könnten, heißt es bei Knobel. Die Maschinenbauer haben sich mit zahlreichen, effizienzsteigernden Neuerungen auf die Anforderungen der Hersteller von Süß- und Backwaren eingestellt. Damit können sie nicht nur bei der Wahl der Verpackungsmaterialien, sondern auch bei der Modernisierung ihrer Linien aus dem Vollen schöpfen. Theegarten-Pactec is also pushing vigorously ahead with machine solutions that help customers cut their costs. The company is focusing among other things on “Industry 4.0”, i.e. the digitalisation of production and streamlined human-machine and machine-machine communication with the aid of the latest software. “Making production processes transparent, keeping key data retrievable at all times, analysing them correctly and ultimately deciding on the appropriate course of action holds great potential for boosting efficiency,” says Markus Rustler, Theegarten’s Managing Partner. For this purpose, the company started back in 2011 to overhaul its user interface and the associated data processing for the machine operator and management. “We have thus created a platform that makes the performance of our systems more transparent. For example, it is possible to establish correlations between efficiency losses and time, am-

bient temperature or other parameters. And this helps operators to track down errors and to find their own solutions,” says Rustler. Furthermore, the intuitive support of maintenance and cleaning processes has been optimised – with active service and maintenance interval reminders from the machine itself, for example. The advantage of automation and digitalisation is that the machinery linked into complex communication systems can be operated by fewer operators, in some cases even only one. And by integrating the user interface into mobile consumer devices, the data from the machinery can be accessed and even edited from anywhere in the world, says Rustler. The Swiss company Knobel Maschinenbau, a specialist in machines for chocolate manufacture, helps producers to cut costs in other ways. It sells its equipment – moulding lines, stand-alone

depositors and other devices – on the modular principle so that customers can extend their production step by step and, if required, re-equip their production locally segment-wise. This offers them high flexibility and thus permits rapid and efficient changeover to new products. Swift re-equipping has also been made possible by simply integrating new machines in the system on the plug-and-play principle, Knobel explains. With numerous efficiency-boosting innovations, machine manufacturers have attuned themselves to the requirements of manufacturers of confectionery and bakery products. This gives the latter plenty of scope not only in their choice of packaging materials, but also in the modernisation of their lines.
