Tuscan Herb Seasoned Pork Loin

The tuscan herb pork roast is made with a succulent Sakura Farms center-cut pork loin, which has superior marbling and and a great fat cap that gets roasted to crispy-perfection. To prepare the pork loin, our butchers trim and portion a whole loin into 2 roasts, then generously season each piece with a Tuscan-inspired herb rub containing lemon, parsley, and garlic. Each roast is tied and vacuum sealed to lock in the freshness.

MENU SPOTLIGHT

For an entree menu prepartion, slice the roast into 1/2 inch thick portions and serve alongside your signature roasted sides.

COOKING INSTRUCTIONS

1. Defrost the roast and remove from packaging. Place the pork loin on a roasting rack.

2. Roast at 350F for 1.5-2 hours and wrap with foil halfway through cooking to prevent the seasonings from burning.

3. Cook the roast until the internal temperature reaches 145F then let rest for 15 minutes before slicing and serving.

Barbacoa Seasoned Pork Collar Roast

The barbacoa seasoned pork roast is made with a succulent Sakura Farms pork collar, also known as a centercut pork butt. The collar is known for exceptional marbling that lends itself well to slow roasting. To prepare the pork collar, our butchers trim and portion a collar into 2 roasts, then generously season each piece with a robust rub inspired by the flavours of Central Mexico, with guajillo chili, achiote, cumin, garlic and oregano.

MENU SPOTLIGHT

Shred the slow-roasted pork collar for Barbacoa tacos, burritos and bowls.

PRODUCT HIGHLIGHTS

1. Defrost the roast and remove from packaging. Place into an oven-proof dish along with any juices.

2. Add approximately 1 cup of water to the dish and cover with foil.

3. Roast at 300F for 2.5 hours and flip the pork collar over halfway through cooking.

4. Or, sous-vide in packaging for 18-24 hours at 165F.

5. Let cool, then shred the meat and mix with jus.

Value-Added Raw Turkey Roasts

Pick between our variety of specifications, including: boneless single turkey breast, double turkey thighs, or a combination of turkey breast and thigh netted together.

MENU SPOTLIGHT

For an entree menu prepartion, slice the roast into 1/2 inch thick portions and serve alongside your signature roasted sides.

COOKING INSTRUCTIONS

1. Defrost the turkey roast and remove from packaging. Place turkey on roasting rack.

2. Roast at 325F until the internal temperature reaches 165F approximately 1.5-2.5 hours depending on the specification.

3. Let rest for 15 minutes before carving into 1/2 thick slices.
