ummer is here, and it’s the time of year the Sunshine Coast comes alive with locals and visitors alike!

From long, leisurely days enjoying our captivating beaches to time spent exploring our leafy hinterland, we’re spoilt for choice. And of course, there’s no shortage of events and activities on offer – from family fun at Sunshine Plaza and Sunshine Coast Turf Club; special offers at the newly renovated Novotel Sunshine Coast resort (the luxe location for our fashion shoot on page 80!); fantastic foodie experiences from muchloved local restaurants such as Bella Venezia, Spice Bar, Flo’s Creperie and Dee Den; and exciting arts and cultural events from Caloundra to Montville and beyond, there’s plenty to discover. I’m delighted to be the editor of Hello Sunshine, and look forward to sharing many more stories of the amazing people and businesses that make up the fabric of this magical region (many of whom we cheered on at the Sunshine Coast Business Awards!). Georgia Beard follows our cover artist from suburban Sunshine Coast to the shores of Italy as she revisits her memories through the modest magic of still life and landscapes. Meet Shelley Murfitt!

A

palette so dappled with colour she can no longer see the surface; a painter’s rag more like a security blanket than a tool; and a workspace cluttered with everyday bric-a-brac from glass bottles to moka pots and sprays of flowers. This is how Shelley Murfitt paints.

La Spezia. Memories of her European sojourns take shape as she arranges a bowl of olives, a slice of pawpaw, a teacup. With her brush as their mouthpiece, sometimes the objects tell their own stories.

Her open-air studio is an oasis for much-needed self-expression, an escape from the demands of work and motherhood.

Our sweet, sun-soaked cover art comes from summer in the Tuscan hills, stirring the image of an extended family gathering around long tables for afternoon lunch in a villa courtyard.

This vision of Shelley’s emerged when she bought a bunch of pears from Erbachers in Maroochydore and cut olive branches from her backyard tree. “It gave me that feeling of harvesting and preparing for a lazy Sunday long lunch. That’s why I called it Lazy Sunday Pears,” she says. “I didn’t have that in my mind when I first started, but the story started coming together. It starts with one object and then it just evolves.” Much like the malleable nostalgia of her portraits, Shelley’s artistic skill in still life developed over a decade of travel, creative study and career opportunities.

As a teenager winning art prizes and a young woman studying marketing and 10

graphic design, her focus remained on bold, expressive abstracts. Then she began attending life drawing classes, which taught her to recognise the beauty in simple objects we often overlook. “When you’re painting from life, there’s energy and emotion in the room and you can see the object, the light and shade and depth, so I think it makes your painting a lot more vibrant,” she says. Now her eye will catch on any object, and she’ll sketch the details in her head – like the curves, colours and shadows of the potted succulent on her wooden table, as she points out to me. Shelley’s artwork first appeared in Café Envy and Sunshine Coast Collective Markets before she began live painting in a figurative style for business launches and cultural festivals. After creating a mural of Angus and Julia Stone for Caloundra Fringe Festival in 2015, she landed other live painting gigs for Big Pineapple Music Festival and NOOSA alive! Drawing on her experience as a graphic designer, her art also featured in the pamphlets, posters and merchandise for the Caloundra Music Festival from 2017 to 2019. When Shelley gave birth to her

Tropicale Lazy Sunday Pears daughter, she spent less time making art in the community and more time at home. Soon her fingers wandered to the paintbrush and acrylics again – not for others, but for herself. Her passion for still life and landscape reignited, remembering her visits to Italy including a week-long oil painting workshop in Florence where she recreated a portrait from The Birth of Venus. “I start with a sketch on the canvas and then block out the colours and midtones, adding shadow and light and balancing,” she says. “The way I work is about making mistakes and then correcting them. More often than not, I can see when something doesn’t look right, and then I fix it.” Shelley’s mastery of light and shade also reveals itself in Morning Light in La Spezia, pairing a vase of freesias with a slice of rockmelon and coffee to capture her time by the Italian seaside. “At the Airbnb, there was one of these moka pots, and the freesias smelt amazing, so that one especially reminds me of La Spezia,” she says. “I had fun playing with the shadows, and it gave me the feeling of morning sun coming in as you’re about to make a cup of coffee.” Her landscapes also bloom from her memory; one reflects a rare moment when an Italian beach crowded with umbrellas emptied of all swimmers and sunbathers.

As Shelley perfects her techniques and expands her evocative studies of ordinary life, her artwork regularly appears in local galleries from Flock Interiors to Define Art to Stevens Street Gallery, where she took part in this year’s Summer Fling and Be Still exhibitions. Now she hopes to develop her own exhibitions and host workshops to share her knowledge with other emerging artists! As her practice evolves, connection to time and place will remain at the heart of her work – taking us to memories of our own and encouraging us to pause, reflect and marvel at the mundane. @shelleymurfittartist 11

Rebecca Jamieson Dwyer and her family swap the oppressive summer heat for the cool confines of Sunshine Plaza – where there’s something fun to be discovered around every corner thanks to their genius range of Sunshine Play Passes.

W

hether you’ve got little kids, big kids or are a child at heart, there’s plenty on offer at Sunshine Plaza this summer!

They’ve (very thoughtfully) bundled some of the best experiences into a range of Sunshine Play Passes, so families can save money while having a whale of a time at the Coast’s biggest shopping centre – a no-brainer, if you ask us. My husband, our two pre-school kids and I headed to Sunshine Plaza one Saturday morning for a day of family fun, excited to use our Adventure Plus passes to enjoy a number of key experiences, including the movies, paddle boat hire, soft play, restaurants, gelato and more. We picked up our pass books from the Customer Service desk, and the first order of the day was a trip to Plaza Pontoon where a selection of colourful boats were lined up on the water. We hopped in the big blue family paddle boat and my husband steered us up and down Cornmeal Creek as the kids and I sat back and enjoyed the ride. Our little ones looked suitably adorable in their life jackets, and loved feeding the fish from the supplied tubs of bread – big schools of hungry grey bream, who eagerly followed on both sides of the boat, snapping up the crusts as soon as they hit the surface. “Don’t put your hands in the water,” the pontoon assistant warned us as we climbed onto our boat “– they have teeth!” After we’d done a few laps of the creek and the fishies’ tummies were full, it was time to mosey over to Rush Adventureland – the Sunshine Coast’s largest kid’s indoor playground and adventure centre – for a spot of unlimited soft-play action. The stroll around Sunshine Plaza was pretty and serene and we stopped to say hello to a family of water dragons and a group of elegant white-faced herons perched on the railing before crossing the festoon-light-adorned bridge. Above our heads, we could hear yells of delight from the brave big kids and

adults tackling the Next Level high ropes course – the highest and most thrilling adventure park in the country! With seven challenging levels, including 16 ziplines stretching up to 130 metres, this adrenaline-inducing activity offers aerial fun and stunning views over Maroochydore for ages six and up and if you’re keen to take your Sunshine Plaza adventure to new heights, entry for one circuit is included in the Extreme Plus and Ultimate Experience Sunshine Play Passes. Once inside the multicoloured children’s nirvana that is Rush Adventureland, my husband and I sipped our free flat whites while our son and daughter busied themselves in the ball pit, laughing, shrieking, throwing balls everywhere and generally going wild. The little obstacle course was the perfect enriching environment for our 20-month-old, and we watched in amazement as he climbed up high, navigated his way past hurdles and challenged himself in ways we hadn’t seen before.

Meanwhile, our three-year-old went to the older kids’ multi-level area to do some hardcore clambering, running, jumping and sliding, reappearing after 20 minutes looking thirsty, unkempt and completely delighted with herself.

As anyone with young kids knows, it’s the law that they have to ask for an ice cream at least once a day, and today luck was on their side. Thanks to our Sunshine Play Passes, they both enjoyed an artisan gelato from Gelatissimo – choc mint for her, mango for him – which they promptly devoured, but not before smearing a significant portion of it all over themselves and their clothes.

We also discovered that Rush isn’t just for the littlies – the bigger kids there were absolutely loving the ninja course, nine interactive climbing walls (fun!), hyper bumper cars, a virtual reality simulator and a Rush Coaster, offering plenty of ways to tire out youthful bodies and minds in a safe, air-conditioned, super-challenging environment.

After a fun-filled, action-packed day, we were all exhausted, which meant we didn’t have time to visit the BCC Maroochydore Cinema or to relive our youth playing arcade games at Timezone – but luckily our Sunshine Play Pass is valid until July 2024, so there’s plenty of time to head back and make sure we’ve torn every last coupon from our books.

All that running around (them) and sitting around (us) meant we’d worked up an appetite, so we headed to Sunshine Plaza’s pretty waterfront dining area to check out our lunch options.

We validated our free parking at the Customer Service desk before driving home with two very happy and tuckeredout little people in the back. And since our visit, I’ve been telling everyone who’ll listen about the great value the Sunshine Play Passes offer for families, and how Sunshine Plaza is about so much more than just shopping this summer.

Our Sunshine Play Passes had loads of great restaurants to choose from including Betty’s Burgers, TGI Fridays, Coca Bar and Grill’d but we decided to treat our tummies to fresh, fast food from Fishbowl, sharing two Miso Salmon 13

g n i v i L Who’d have thunk that memories of childhood television shows would help John Caruso connect the dots, revealing an interconnected community that’s laying the foundations for a brighter future.

I

t’s been a few years since I watched Sesame Street however, I couldn’t help thinking of the song People in Your Neighbourhood while reaching out and connecting with a cross section of locals that occupy an area of land that has, and will continue to, develop at a rapid rate over the next fifteen years. What’s evident already, even in these early stages is a sense of belonging, connection, comradery, and shared interests as the new Maroochydore City Centre takes shape. “It’s a long-term project,” explains Amanda Yeates, CEO of SunCentral Maroochydore, which is wholly owned by Sunshine Coast Council and appointed to oversee the design and delivery of the new City Centre. “If you look back 20 years, Maroochydore was identified as the city for the Sunshine Coast in the Southeast Queensland Regional Plan. “Where I work now used to be the Horton Park Golf Course, situated in the middle of Maroochydore’s growing city centre, much like the hole in a donut. “Council acquired the 53-hectare site in 2015 to transform it into a vibrant hub for commercial and cultural activity for the Sunshine Coast. “There’s still a good fifteen years to build out the City and if you haven’t visited recently, you’ll notice numerous buildings constructed. “However, what you currently see with the restaurants, City Hall and the MET accounts for only a quarter of the total construction site. “The site is the largest greenfield CBD

As more businesses open and more people frequent the area, we only see more upsides and positives... in the country,” says Amanda proudly. The MET brings the energy to the City Centre as a mulitpurpose space for creative exploration, live performances and celebrations. Health and wellness is a priority with the likes FLOWST8, Kokora Massage and Foraged For You supplements already calling the City Centre home. Food is a central part of any community and there is a world of flavours to explore from Colombian Coffee to freshly baked goodies at Harvest Cafe; an immersive Indo-Fijian experience at Pataka; Kibou Japanese Bar & Kitchen; the Asian fusion flavours at Giddy Geisha; modern Italian at Bottarga; and traditional European feel of Market Bistro and Market Wine Store. The Cheers theme song talks about a place where everybody knows your name, for Luke Stringer from Market Bistro it’s 15

Andrew lives in one of the townhouses in Market Lane. “I’m eating at Market Bistro every second night and at Giddy Geisha every other,” he says. “The new development and what’s going on here is fantastic. The interesting thing is that in the suburbs you may know your immediate neighbour - like the person or people right next to you - however here with this kind of community, especially where I live, you know everybody! “It’s incredibly social and you’re running into people all the time and seeing them out at different locations.” Andrew’s enthusiasm for city living is catching on. “My brother, and several of my mates have all moved here too. I don’t think I could ever go back to a standalone home,” he says. There’s a new car in Andrew’s garage however it’s rarely used, something that Amanda sees as an achievement. “The development is designed as a transit-oriented development,” she says. “The roads are narrower than what you might be used to and that’s so we can prioritise pedestrians and cyclists over cars. The parking rates or times are shorter, and that’s not because we don’t want cars in the City Centre, we want people to be able to have other options and have a real choice in terms of coming and moving around the city. “We’ll require a good integrated public transport system to realise the full potential of this so we’re advocating strongly for a system that can connect people to and from their homes to their places of work. “ and we’re also keen to make sure that residents who live here have a level of self-containment.” On the subject of making your own way under your own steam, AusCycling’s National Road Series recently returned to the area and what better stage for organisers than the developing city centre? “We ran the third edition of Cycle Sunshine Coast, and we took the opportunity to showcase the newly activated Maroochydore City Centre for Stage Three,” says Cycle Sunshine Coast Event Consultant, Aaron Flanagan. “It featured a fast-paced street Hello Sunshine Magazine

Sunshine Coast City Hall criterium under lights on a technical 900m course through the heart of Maroochydore with speeds of well over 50 kph and it was a great chance for the local community to get a taste of elite cycling - and for us as organisers to show-off the City Centre. Sunshine Coast Council’s multi award-winning City Hall has been open twelve months and it stands tall as a focal point at this stage of the development however the SunCentral CEO says there’ll be more impressive designs and structures taking shape. “Construction has started on a tenstory private orthopaedic hospital with research and teaching facilities that will collaborate with the University of the Sunshine Coast,” she said. “‘Our Development Partners Walker Corporation has also started construction on 50 First Avenue, a $90 million, 15-storey commercial building with a NABERs 5-star energy rating. ” For architectural and interior design consultants Mode Design, moving into the A1 building on First Avenue and embedding themselves into a new and exciting urban landscape came with many benefits, including access to high-speed internet from the International Broadband Submarine Cable. “We’ve been on the Sunshine Coast for seventeen years, firstly at Dicky Beach and then at Birtinya and with our interest in urban development and master planning we very much wanted to be part of this venture and there’s no better way of being part of it than by being in the mix,” explains Mode Design Managing Principal Rhonan O’Brien. “The development that’s going on 16

It’s a big attraction and we’ve had four of our staff move from Sydney to permanently base themselves here in our new offices.” Christine Mount from Luxe Coastal Property Buyers said the development of the Maroochydore Cty Centre was a game-changer for the region. “It truly is a ‘City of the Future’ with a plethora of opportunities and, as the first greenfield CBD in Australia, will provide a beating heart to the Sunshine Coast,” she said. “Together with other major infrastructure projects, this is a story of increased connectivity to both Australia and beyond, creating an integrated community where people can work, live and play.

Ben Franklin once said, “By failing to prepare, you are preparing to fail”. John Caruso takes a page out of Ben’s book and encourages us to Get Ready for summer on the Sunshine Coast.

uring my six years as the Regional Content Manager for ABC Local Radio I had the opportunity to sit on both the amalgamated Sunshine Coast and Gympie Regional Council’s Disaster Management Committees. In September of 2019 a deliberately-lit fire terrorised residents of Peregian Springs and in the ensuing months more bushfires burnt out of control around Lake Weyba. I remember living at Doonan at the time and keeping a close eye on numerous apps hoping the wind would either calm down or change direction, sending the fire towards the lake and away from people and property. Less than two years later, in January of 2021, seventy five percent of the state was declared a disaster zone with thirty-three people losing their lives during one of the most devastating flooding events Queensland had ever witnessed. I’m sure the memories and scars for families and friends impacted by these events are still felt today, and Queensland’s summer season means there may be fresh triggers and reminders each year because summer in the Sunshine State means severe weather and a heightened state of awareness for all of us. Help is at hand and being prepared for Hello Sunshine Magazine

adverse weather is now an essential part of living in this great state. Each year local government ramps up its storm and bush fire awareness campaign beginning with its Get Ready week in October, in an ongoing attempt to reinforce messaging around being prepared and ready for what a Queensland summer may throw at us. There are three simple steps! 1. Understand your risk. We experience more natural disasters than any other state and territory in the country, with more than a hundred natural disasters occuring since 2011. After several years of rain and flooding, this year the Bureau of Meteorology is forecasting below median rainfall and predicting a higher risk of heat waves and bushfires. That means you need to know what hazards could affect your area, how likely they are to happen, and what impact they could have on your property and community. 2. Prepare a household emergency plan. This is a document that outlines what you and your family will do before, during, and after a disaster. It should include information such as where you will go if you need to evacuate; how you will stay in touch with each other; what you will do with your pets and livestock; 18

what documents, and valuables you will take with you; and who you will contact for help or support. You can download a template for a household emergency plan from the council’s disaster hub website or create your own. 3. Pack an emergency kit. An emergency kit is a collection of items that you may need in case of a disaster. It should contain essentials such as long life food and toiletries in case you can’t get to the shops; drinking water in case the water supply stops working; batteries, a torch, and a radio in case the power goes out; first aid supplies and medications; and personal protective equipment such as masks and gloves. You should also pack some items that are specific to your needs and preferences such as, baby formula and nappies; pet food and bowls; books and games; cash and cards; and special dietary or medical items. You should store your emergency kit in a waterproof container that’s easy to carry and access. “It’s important to prepare now before the next severe weather event, so you’re best placed to handle whatever Mother Nature throws at us,” explains Wayne Sunderland, Sunshine Coast Council’s Disaster Management Lead. “Our updated online Disaster Hub makes it easier for residents and visitors to

You may have grown up with thunderstorms and lightning rumbling and cracking across the evening sky, however for children, extreme weather events and their impacts like blackouts and flooding can be frightening. For many it may be the first time they’ve experienced wild weather. Babies and children have a limited understanding of what’s happening around them, however being prepared before a weather emergency can make a big difference to how they will respond and cope. And if you’re calm and confident when the sky CRACKS, your kids are more likely to be calm too. Talk to them about what could happen and why, using simple and age-appropriate language, show them where the emergency kit is and what’s inside it. Involve them in making or updating the household emergency plan; teach them how to call triple zero in case of an

BREAK IT DOWN: One of the most effective ways to overcome the inertia of starting is to break your goal into smaller, manageable tasks. Commit to spending just five minutes on the task. You’ll find that once you begin, it’s much easier to keep going. Momentum builds from action. 5. BUSINESS AT ITS The 2023 Sunshine Coast Business Awards (SCBA) was a sold-out, record-breaking, glittering celebration of local businesses, as SCBA Chair Jennifer Swaine reports.

T

here are several words that come to mind when I think about the Sunshine Coast, like ‘community’, ‘collaboration’ and ‘connection’.

The awards are now more hotly contested than ever and the calibre of the applications we receive this year was outstanding.

Those three words explain how we work together but they don’t define who we are. The words that define us (in my mind at least) are ‘entrepreneurial’, ‘innovative’, ‘adaptable’ and ‘resilient’. We choose to live here because the Sunshine Coast is an incredible place to raise a family and pursue the dream of work/life balance. For the entrepreneurial minded, they came, saw endless opportunities, created jobs for themselves and in doing so created jobs for others. Others came with jobs secured, then drank from the entrepreneurial well that dares people to follow their passion and become one of the 43,600 small business owners that call our region home. There is something about our community that inspires you to dream big, have a go and make a difference – and when you decide to take that journey you know you are supported by others who are cheering you on. On Saturday 11 November, many of those outstanding businesses were in the room, waiting to hear who had taken out each of the industry categories at the Sunshine Coast Business Awards 2023.

Being inducted into our Hall of Fame, acknowledges the hard work, dedication and resilience of the businesses involved and recognises the continuing advancements of the businesses from year-to-year as well as the efforts of

those who put their awards applications together and participated in the process – sometimes for many more years than just those they won. hen we step into an event space overflowing with our community, we encounter something infectious. We find unity in our voices and experiences as the artists, entrepreneurs and changemakers on stage become our binding agents. Together, we search for profound sensations, share in a common cause and celebrate each other’s work. Throughout 2023, Venue 114 delivered these diverse foundations for community connection as they welcomed local, national and international events and returned to pre-pandemic capacities. Their abundant program reminded us just how much we need collective experiences to strengthen our sense of belonging. need to abandon our regional neighbourhoods for events in cities and state capitals. From community forums, charity fundraisers, business breakfasts and expos to live music, dance concerts and theatre productions; to school formals and private celebrations, Venue 114 has striven to exceed client and community expectations for 18 years. They attract close to 1,000 events and over 80,000 patrons per calendar year, filling 15 different event spaces with the majority capturing pristine views of Lake Kawana. “As a Sunshine Coast Council owned and operated venue, one of my objectives is to highlight our beautiful natural environment and elevate the experience of living on the Sunshine Coast,” says Venue Manager Louise Thompson. “Examples of this include sourcing 28

Australian Wearable Art Festival is set to return on 9 and 10 August 2024 and in January, the venue will celebrate the best in wedding suppliers with a fashion parade and lucky door prizes for the Sunshine Coast Wedding Showcase! While encountering awe-inspiring talent and dream-weaving services from our creatives and business owners, Venue 114 has encouraged locals to hear influential voices and take part in transformative dialogues. “For the past five years, my incredible team and I have produced the In Conversation Series which was founded on a passion to educate, engage and empower our community and to sow seeds of thought and invite growth,” Louise said. “We don’t shy away from the topics that people want to discuss and are

relatable within the community.”

Change is inevitable, except from vending machines. John Caruso discovers the new chapter being written to Caloundra’s story.

eech trees were once abundant in the spot on the Sunshine Coast we now call Caloundra. In fact, the name for the area itself is believed to have come from the Gubbi Gubbi language that refers directly to those trees, Kal’owen Dha meaning beech tree and Dha meaning place. As the Sunshine Coast’s most southeastern village area, the coastal gem that is Caloundra is coming of age having recently been named Queensland’s Best Town 2023. It’s a place that’s also attracting attention for its vibrant arts and cultural scene, and its commitment to sustainability, and exciting new developments. Sunshine Coast Council’s Caloundra Centre Master Plan is a roadmap for a town brimming with life, where the allure of the ocean intertwines with the buzz of urban vibrancy while the Glass House Mountains majestically guard the horizon. The plan seeks to harness the area’s strengths, attracting new ventures that will propel Caloundra forward as a thriving destination. At the heart of this transformation lies a vision for a captivating town centre, a communal gathering place and vibrant hub to deliver a new energy. The Community + Creative Hub will create a unique public space that connects The Events Centre, new Library+, proposed new Sunshine Coast Regional Gallery, and parks and streets through to picturesque Bulcock Beach. Re-opening its doors in the core of Caloundra’s creative and cultural hub in September 2023, with the vision of becoming the Coast’s first net-zero energy hotel, it was stripped and styled by innovative and inspired hotel developers and designers Andrew and Lucy Pink, in collaboration with Maeva Hospitality’s Scott Armstrong. Peregian Beach is always a vibe but its electric in the festive season. Carlie Wacker sheds some light on plans for the people and this magical place over summer.

T

he village of Peregian Beach feels like home (even for visitors). This is one community that has nailed the art of celebration, inclusivity and community care. As Village Vibes approaches again, I wanted to share some of the excitement that awaits and as I write this I get that giddy feeling that comes when you know the region is about to come to life with happy families and friends, visitors and locals making magical memories. It’s that magic that is hard to describe when it comes to The Village Peregian Beach. The Peregian Beach Business Association are perhaps the wizards that weave their wand over the lands and bring the community together with an epic array of events and experiences that further cement the region as one of the greatest little communities ever. Summer in the Village sparkles with revamped and refreshed Festive Lights thanks to Noosa Council.

Village visitors and business owners are loving the minimal, warm lighting on timers that ring in the magic in a more responsible way. Christmas shopping in Peregian Beach is my favourite. While ducking in and out of the fashion, homewares and other retail boutiques you can explore the bars, cafés and restaurants and truly soak up the summer sensations.

Matt Golinski opens the doors on a new initiative that celebrates local produce and the experiences and events driving our food scene. In 2015 a small group of people involved in different areas of the food industry got together at a factory in Palmwoods to discuss ways they could collaborate to help make it easier to succeed as a small food business. Eight years later, FAN (Food and Agribusiness Network) has more than 370 members from across the food value chain located in Gympie, Noosa, Sunshine Coast, Moreton Bay and beyond and is recognised nationally and internationally as a leading Australian food cluster. Members include input suppliers, growers, manufacturers, retailers, foodservice operators and affiliated services. It can be a minefield for anyone who Hello Sunshine Magazine

decides to take the plunge into creating a product that they want to sell at a market, or supply to retailers – the decisions associated with packaging, labelling, marketing and council regulations can be mind boggling, not to mention the business skills and cash flow management required to stay afloat through the start-up period. I imagine that without the support of FAN and all it offers, many of those 370 members would not still be in business today. It’s a credit to those who had the vision to start such an initiative, and all that have poured their energy into making sure the model continues to develop and evolve. ROASTED PORK LOIN WITH RUM AND BROWN SUGAR PEARS, CURRANTS AND THYME Ingredients:

• Preheat oven to 220°C.

1.2 kg skin on pork loin 1 lemon, halved 2 tsp salt ½ cup brown sugar 60ml Nil Desperadum Rum • ½ cup currants • 6 pears, cored and cut into wedges • 2 tbs fresh thyme

SERVES 6

• Pour boiling water over the skin of the pork and dry well with paper towel. Rub with the lemon and sprinkle on the salt. • In a small saucepan, combine the currants, rum and brown sugar and simmer for 5 minutes. • Mix with the pear wedges in a bowl and set aside. • Roast the pork for 20 minutes at 220°C or until the skin crackles, then reduce the oven temperature to 160°C, add the pears and roast for another 30 minutes or until the internal temperature of the pork reaches 63°C. • Allow the pork to rest for 10 minutes before carving. • Serve topped with the pears and currants, plenty of the pan juices and a sprinkling of fresh thyme.

ROAST CHICKEN, NECTARINE, FETTA AND ALMOND SALAD WITH RUM, HONEY AND MUSTARD DRESSING Ingredients: • 1 whole size 17 chicken • 50ml Nil Desperandum Rum • 50gm honey • 30ml red wine vinegar • 2 tsp whole seed mustard • Salt and pepper

SERVES 6

• 50ml extra virgin olive oil • 6 nectarines, sliced • 100gm rocket • 150gm Woombye Cheese fetta • 100gm flaked almonds, toasted

Method: • Rub the chicken with oil and season with salt and pepper. • Roast for one hour at 180°C or until the juices from the leg run clear when pricked with a knife. • Allow the chicken to cool, then shred into pieces and refrigerate. • In a small saucepan, simmer the rum, honey and vinegar for 2 minutes, remove from the heat and whisk in the mustard and olive oil. Season with salt and pepper and cool. • Toss the chicken, rocket and nectarines with the dressing and transfer to a serving bowl. • Crumble over the fetta and sprinkle with toasted almonds.

MANGO, COCONUT, LIME AND RUM TRIFLE Method: • Line a 30cm springform cake tin with baking paper. • Preheat oven to 155°C. • Whisk eggs and sugar in the bowl of an electric mixer until very light and fluffy. • Gently fold in the coconut and flour and scrape into the cake tin. • Bake for 25 minutes, remove from the oven and cool. • In a small saucepan, bring the rum, sugar and water to the boil and simmer for 2 minutes. Cool. • Mix the custard with the lime zest and juice. • Whip the cream until quite stiff, then fold into the coconut yoghurt.

100ml water 2 cups double thick custard Zest and juice of 2 limes 250gm Coyo Greek style coconut yoghurt • 250ml thickened cream

• To assemble, dice the sponge and divide between 8 serving glasses, then drizzle with the rum syrup. • Add a layer of diced mango, then the custard and finish with a layer of the coconut yoghurt cream. • Sprinkle the tops with shredded coconut and refrigerate until required.

Life-long foodie Sophie Phipps and husband Luke Duncalf have recently taken the reins at Spice Bar in Mooloolaba – an elevated modern asian fusion restaurant where the epic ocean views come second to the locally-sourced, handcrafted dishes, as Rebecca Jamieson Dwyer discovers.

I

t’s not often you dine somewhere where every single element of the menu has been made from scratch. But at Spice Bar, it’s a core part of their philosophy – from the paste for the Makhani Goat Curry to the smoked bone oil on their Sashimi - even the individual rice wafers decorating their Leche Flan (a Filipino crème caramel). When this level of passion and dedication goes into creating every dish, it pays off. At Spice Bar, every meal is a delight for the senses, with a taste unlike anything else you’ve experienced. “We could buy a pre-made curry paste, and then our neighbour might buy it too, and our dishes would taste the same,” says Executive Chef and Business owner Sophie. “Because we make every single element of our food by hand, you’re not going to get something you could find anywhere else. We also curate our plates to balance the flavours, for example our spice paste for our goat curry is complemented by the flavours of the roti, the hung yoghurt and pickled green paw paw, so you’re getting a perfectly balanced dish.”

as one of the most exciting in town. “I wouldn’t call Spice Bar ‘fine dining’ – I call it refined dining,” Sophie says. “What we offer is a little bit unexpected, a little bit unusual. We’re all about providing our customers with an amazing experience.” The duo understands that creating a warm, welcoming atmosphere is a huge part of that experience, and are building a team of hospitality professionals who are in the industry for the long haul.

As someone who’s worked in fine dining restaurants since her early teens – including a stint as an apprentice at one of the best restaurants in Auckland, and a few years as the owner of an organic vineyard restaurant in northern New Zealand – it’s clear that Sophie lives and breathes all things food.

“It seems like hospitality is a dying art these days – being a maître d or a waitperson is often viewed as a job for students or holiday workers,” says Luke. “But we take it seriously, and we foster that approach within our team. We want them to take pride in their career, and go home at the end of the day feeling that they’ve really made a difference.”

thanks to her nature-loving mother, is incredibly passionate about. “I was using free-range produce in my restaurant in New Zealand back before it was popular,” she says. “As humans, we can be incredibly wasteful and greedy by prioritising saving a couple of dollars over an animal’s life. I would rather pay more money to know that an animal has lived a happy life and hasn’t suffered. Plus the quality and taste is better.” Much of Spice Bar’s menu can be traced back to the farm, including the finest grass-fed beef from Cape Grim in Tasmania, free range pork from SunValley near Goondiwindi, and sustainably sourced seafood from local suppliers Daniel Street Fish Market. They also prioritise local ingredients wherever possible, using Sunshine Coast Coffee Roastery beans, Diablo Co Ginger Beer, 10 Toes Brewery and edible flowers from a nearby microgarden. Luke says that supporting other local businesses just makes sense.

“Choosing to import produce to save money goes against everything communities should be working towards together,” he says. “By buying from local producers, we invest money into the local economy to help others, and in turn they support us. That’s what real community spirit looks like.” Located at the northern end of the Mooloolaba Esplanade with expansive views of the everchanging sea, Spice Bar has a stylish, atmospheric interior that makes it the perfect backdrop for a casual drink, special dinner or romantic evening: think red accents, wooden tables, flickering candles and a well-stocked bar. There is also a function space featuring a specially-commissioned mural from local urban artist (and former Hello Sunshine cover artist!) Sarah Sculley and the couple get a thrill every time a customer chooses to celebrate an important life milestone at Spice Bar.

Special occasion or not, they strive to make every person who visits feel valued and taken care of. “When people walk through our door we want them to leave everything behind, and just really enjoy the moment,” Luke says. “We aim to envelop them in an experience that feels easy and enjoyable.” Sophie and Luke have been spicing up the Mooloolaba dining scene for six months now, and have exciting plans to expand and refine their offerings as the business grows. At the heart of it is their love for welcoming people into their space and sharing a piece of themselves through their food. “We want to individually cater to each person that comes in and make sure they have a great experience with us,” Sophie says. “It’s all about making people feel good!”

Georgia Beard unearths Dee Den’s reciprocal networks between local producers and artisans in the creation of attention-grabbing, creative and delicious cuisine.

B

elow the surface of the earth, symbiotic relationships develop from one tree’s root system to the next. Fungi is the conduit to their connection, allowing forests to feed each other vital nutrients as fungal threads reach through the soil into their roots. This is the mycorrhizal network, or as it’s more charmingly known, the ‘wood-wide web’ - a perfect metaphor for the interconnectedness between Dee Den and its local producers. It’s a relationship of mutual support, growth, and nourishment. Dee Den’s culinary approach, established since the restaurant’s opening on a hillside Buderim in early 2022, champions the unique flavours and freshness that come directly from the hands of local producers to the kitchen. Owners Jeremy Khoo and Mike Meesuwan, who’s also the head chef of the modern Asian restaurant, have always focused on creating an inclusive menu that highlights natural, wholesome ingredients, sourced as sustainably as possible. Regular diners, particularly those with gluten-free needs, have long appreciated

“Our aim is to provide maximum nutritional value and minimal environmental impact, which is why we leverage the nutritious benefits and umami flavours and textures of shiitake mushrooms to create delicious dishes.

While developing some of these recipes, they drew on their Southeast Asian culture’s traditional veggies dishes for inspiration instead of replacing meats with artificial plant substitutes.

“The collaboration between Fable and Dee Den is a natural synergy of what we want to bring to diners – delicious food made from quality ingredients that’s unique and far from boring.”

This is where the renowned local grower Fable reached out to supply shiitake-based meat from their fungi greenhouses in Palmwoods.

As Jeremy explained, Dee Den’s Fable Mushroom Skewers are a top-seller, deepening the umami goodness with coconut, turmeric, charred pineapple, fresh herbs, saltbush, roasted rice and truffle mayo!

Jeremy was already sold, having previously cooked Fable’s shiitake mushrooms in dishes at home. It was then up to Chef Mike to discover the culinary potential of these meaty mushrooms. “The Chef and his partner went on a foraging tour with Fable that they had organised to see how they collect and forage for mushrooms, how they process them and what you can do with their products,” Jeremy said. According to Communications Director Anna Le, Fable sources their shiitake mushrooms from one of the largest growers in China, forming the foundation of their product’s unique twist.

When the time came to develop a cocktail list complementing their diet-inclusive dishes, Jeremy and Mike again turned to suppliers fermenting and distilling on Australian soil. “We wanted to offer classic cocktails – the margarita, the mojito, the espresso martini – but we didn’t want to use boring conventional brands,” Jeremy said. Sunshine & Sons was an obvious first choice – the stand-out spirit in our cocktail lunch with Dee Den last winter! “We went to their distillery to have a chat with them, and they were extremely supportive and happy to walk us through, let us sample the products and share

what we could do with them,” he said.

Now Sunshine & Sons Vodka is a staple on the drinks menu, mixing with coconut rum and lychee liqueur and juice to create the Lychee Martini or pairing with White Possum coffee liqueur and Industry Beans Cold Brew for the Espresso Martini.

“We’re about using end-of-life products, the waste of grain and fruit farms, to transform into ethanol,” he said. “We need to be transparent on what we use for making liquors and spirits. I think we match with Dee Den based on that full transparency on the provenance of raw goods.”

Remarkably, Google can’t calculate the distance between Brittany, France, and the Sunshine Coast. There are no roads, rail or direct flights. The search engine offers an apology and awaits further instructions. John Caruso discovers a little piece of Brittany down under.

N

ot a lot of fifty-plus males, certainly not the ones in my circle, would be adventurous when it comes to trying new things. In fact, I’m sure a lot of them, me included, would have thought a ‘galette’ was another brand of razor blade. I certainly had no idea what a galette was until I stumbled across Flo’s Crêperie at The Wharf Mooloolaba. It turns out that a galette is a kind of crêpe, but not the thin and sweet ones you get with Nutella or lemon and sugar. No, these are savoury, made with buckwheat flour and topped with all kinds of goodies, especially seafood. Best of all, buckwheat flour is gluten-free, so my wife is happy too!

The galettes are crispy and soft at the same time, and the fillings are abundant with an expert combination of flavours.

Now, I love seafood, but I never thought of having it in a crêpe. But let me tell you, it’s a match made in heaven. Flo’s Crêperie gets their seafood from Lee Fishing Company, a local business that’s been around since 1951. They catch and process their own fish, shellfish and crustaceans, so you know you’re getting the freshest and best quality. The crêpes themselves have a long history, dating back to the 13th century in Brittany, France, when a housewife messed up her porridge one day and instead of throwing it away, she spread it on a hot griddle and made the first crêpe. Over time, they refined the recipe, Hello Sunshine Magazine

using wheat flour for thinner and lighter crêpes, and adding all sorts of fillings, both sweet and savoury. But in Brittany, they never forgot their roots, so kept making the original buckwheat crêpes - galettes - and they used their coastal resources to fill them with seafood. Same at Flo’s, where there are some amazing seafood options on the menu 50

such as galettes with scallops, mushrooms, and cheese; another with prawns, garlic and tomatoes; and another with smoked salmon, spinach, cheese, and a creamy sauce. Delicious right? I’ve never had anything like them before. The seafood is so fresh and juicy, it tastes like the ocean. The galettes are crispy and soft at the same time, and the

fillings are abundant with an expert combination of flavours. The menu is extensive and I’m slowly but surely working my way through it, ticking off all the flavours of the world as I go - from Peking Duck to The Spaniard with chorizo and caramelised onions; Tokyo Drift with pan-fried teriyaki prawns; La Portugese with Peri-Peri sauce and chicken or prawns; even the Italian Classic with prosciutto, cherry tomatoes, cheese and pesto (get the optional fresh burrata!). It’s a delicious fusion of cultures and

flavours with all tastes catered for. Be sure to leave room for crêpes, from timeless classics to signature creations, and for extra flair, choose a crêpe on fire with a flambée at your table! I can’t go past the The Suze, which is Flo’s twist on the traditional Crêpe Suzette - an oldie but a goodie (like me). It’s plate-licking stuff, and every crêpe has a tale to tell. “Our Smoked Potato, Cheddar and Caramelised Onion Loaf is a great example of this – we smoke the potatoes in-house as opposed to using a liquid smoke,” explains Marketing Manager Sophie Spencer. “We know we could save immense amounts of time if we chose the easier option, but we’re committed to always maintaining the highest possible quality across the board.”

fter years of being asked by her VanillaFood café customers for a range of organic food they could heat and eat at home, Nilla Tomkins finally gave in, opening her newest venture, Nilla’s Pantry, just a few doors down from her beautiful Noosa Junction premises in April 2023.

Stocking healthy, hearty family favourites such as lasagna, soups, bone broths, curries and dips – all made in-house with the highest quality ingredients – alongside a delectable range of sandwiches, salads and cakes, as well as pantry staples such as sauces, pickles and dressings, Nilla’s Pantry allows customers to enjoy nourishing meals at home after a busy day rather than reaching for a takeaway or filling themselves up with junk food. Nilla’s food philosophy is simple: she wants to look after her family and loved ones by serving up wholesome, seasonal, organic food. “Keeping my family healthy is my number one priority,” she said. “What we offer at Nilla’s Pantry is good, honest food. People don’t have time to cook every night but they still want to take care of their family; that’s why we exist.” Her commitment to using 100% organic produce means the pantry and café menus are constantly evolving, with Hello Sunshine Magazine

her team getting creative behind the scenes in order to work with the fruit and vegetable delivery that comes twice a week. “When you eat organic, you only work with seasonal produce,” she explained. “We get an ingredient one week and then the next week it’s gone, so we’re constantly changing our menus. “It’s an interesting challenge for our chefs to work with what they’ve got, and our customers are usually understanding when we have to substitute one ingredient for another. It’s a trust thing – they know that we only use organic produce.” In keeping with this theme, Nilla has also sourced a range of natural and Lo-Fi wines - wines that are crafted with no or very few adjustments during the winemaking process. As well as being innovative in the 58

kitchen, the Nilla’s Pantry team are taking a unique approach to waste, as one of the only cafes in Queensland to have implemented the global HuskeeSwap reusable cup exchange scheme. Designed to make reusables as easy and convenient as single-use items, customers simply hand in their (clean or used) Huskee cup when buying a coffee, and are served their coffee in a fresh, clean Huskee cup – with the cycle continuing with each coffee they buy from participating venues. But it doesn’t stop there: Nilla and her team also encourage people to bring their own containers for the cakes and salads, helping to start a conversation with the community about the importance of reducing waste, and hopefully creating a knock-on effect that goes beyond the walls of the pantry.

Nilla Tomkins “We love having these conversations with customers and we’re slowly starting to educate people who hadn’t thought about it before,” Nilla said. “I grew up with that reuse mentality because my mum would always pack her Thermos for a picnic and her reusable bags for the supermarket – most people of that generation did. And I think our young people are getting back to doing that.” In an area out the back of the café and pantry, a kitchen garden is bursting with life: a huge lemon tree grows alongside coriander, chillies, rosemary, parsley,

sage, edible flowers and more, while the compost bins at the side collect food waste from the cafe and turn it into precious nutrients for the soil – nourishing the herbs and flowers that will end up back on plates. Even the stems from the micro herbs aren’t discarded, instead being replanted in the ground to grow again, creating food from something many people would view as ‘waste’. After publishing her first cookbook during the pandemic, Nilla is currently working on a second one that’s inspired

“It’ll feature many of the flavours I grew up with, but with my twist on it,” she said. “I did a lot of foraging in the forest growing up, and have lots of recipes inspired by this time that I’m excited to share.” But when it comes to making future plans for the business, she likes to take a holistic approach – paying careful attention to the staff, customers and the business itself, until she intuitively feels her way forward: “People are always asking me what my plans for the future are, but I don’t really ever have a plan,” Nilla said. “I just listen to the business – it tells me what it wants to do.”

In a world full of conflict, Matt Golinski finds peace in the cheesiest of places.

‘D

ivisive’ is a word that gets thrown around a lot these days.

By politicans, in the media, sometimes on Facebook Community Notice Boards (although it would generally be spelt wrong there). People disagree on lots of things, but if there’s one thing the whole world agrees on, it’s that cheese is awesome. Put a block of brie, some crackers and some fruit paste on the table and suddenly everyone gets along. PHOTOS: MEGAN GILL

Even the vegans and the lactose intolerant are pretty well represented in the fromage department now, so everyone can gather round the grazing table and gorge themselves in unity. Sam Penny is a man who truly loves everything to do with cheese. For seven and a half years he owned and operated the iconic ‘Cheese Therapy’, an online, mail-order providore, giving cheese lovers all over Australia access to more than 20 small boutique cheesemakers at the click of a button.

In December 2022, Sam was asked to give a TEDx talk with a theme of ‘Engineering Impact’, so he decided to call his session ‘How to Support Local Food Producers and Grow Local Economies’, a subject he was well qualified to speak about having spent years watching the businesses he was supporting grow, and the impact that had had on the little towns they were often based in.

Puddleduck

Tony Cox escapes the heat of the Coast for the cooler climes of Hobart, discovering local vineyards that are creating some truly stunning drops.

T

he thought of another hot, humid summer in the sub-tropics had me thinking of cooler climes – and where better to quench a thirst than a trip to Hobart, Tasmania and the surrounding areas to sample some of their vinous offerings. One could spend weeks sampling Hobart’s vibrant spirit, craft beer and wine production scene but we narrowed things down to marshalling our discreet gang of 11 to a couple of cellar visits. Your scribe was desperately wanting to visit Pooley as Anna Pooley has always been an exemplary winemaker but our posse wasn’t aware we had to book. We know for next time, and there definitely will be a next time. Our first stop was at a nearby vineyard that the Pooley team assured us would be able to accommodate us, and their advice was bang on. Puddleduck was just down the road and we enjoyed a private tasting with the viticulturalist who could tell us about both the vineyard and winemaking. Their 2020 Bubbleduck Sparkling is a blend of pinot noir and chardonnay, with extended time on lees (almost three years) providing delicious yeasty complexity. A low level of dosage (approximately 1.5-2 grams/litre) gives it a bracing acid line which makes it super clean. For those who enjoy zero dosage Champagne, this would float your boat. The next wine to really impress was the 2023 Riesling which displays delicious citrus notes and stunning acid line – ideal with oysters. Given the weather was inclement, what better way to warm up than with the Puddleduck VSOP Brandy, a bottle of which accompanied me home alongside some aged riesling they had for sale. Aged in old pinot noir barrels, the brandy featured toffee and

Derwent Estate marmalade notes and provided an inner warmth on a fresh day. The second and final stop was Derwent Estate, where we had lunch at their restaurant, The Shed, which impressed not just with the quality of ingredients and food but also the extensive provision of gluten-free options – delicious. With north-facing views from a natural amphitheatre over the Derwent River, it is well worth investigating. We didn’t do a tasting as such but shared a few bottles from across the range of Estate wines with lunch. The 2019 Sparkling kicked us off in fine fashion. An even blend of chardonnay and pinot noir, it was a fuller, more generous wine than the Puddleduck, having been through full malolactic fermentation, using 15% reserve wine and having a higher level of dosage. Something I could easily settle into. The second wine was the 2021 Chardonnay, which had wonderful fruit purity, deft use of oak, subtle roundness and delicate acidity – exceptional.

fruit flavours, medium weight with integrated tannins to close. Again, a lovely wine which complemented the flavours and textures from the kitchen. To finish, General Manager, Ange, generously offered us a tasting of their top chardonnay, 2019 Calcaire, named in reference to the high degree of calcium in the soils. Wow, what an impressive wine! Citrus, but more in the grapefruit spectrum, linear and focused. Overall, just beautiful. I can’t wait to get back and explore further, next time in a smaller group, as the pristine environment creates the opportunity to grow truly outstanding wines and amaxing produce. When you are sweating it out on the Sunshine Coast, remember Tasmania is just a short trip away to cool down. Cheers and Seasons Greetings to you and yours!

Tech is a big part of our work and personal lives – sometimes we text more than we talk! Who would have thought 20 years ago that we would be ordering clothes, making friends (some we have never met in person) and buying our weekly groceries, all through our smartphones! Excessive tech use can lead to bouts of anxiety and depression, and can cause isolation, constant headaches, eye strain and create structural changes in your brain. Every ping, alert or notification creates a sense of anxiety – who is texting me, ringing me or what am I missing out on? Switching your phone to ‘silent’ can help reduce overwhelm as you then become busy with ‘other’ activities and can go for longer periods without checking your device. Not activating your ‘screen time’ to see your weekly usage report can be a common occurrence when you are aware you spend too much time on your phone. Excessive phone usage is a behavioral addiction and when your phone is not within range you may feel anxious, not know what to do with yourself, or forget how to act and talk around others. When it comes to overuse, we don’t need to ban our phones altogether. We just need to reconnect more with ourselves and others, and become more productive with our time. What is it you would like to accomplish in your life? By making a list or creating

a vision board you can accomplish more outdoor adventures and achievements each year. Try to photograph just a few highlights of your day and then place your phone away in a safe space; this is a great way of coming off autopilot and experiencing the present moment more fully. You don’t have to share every achievement on Facebook – having special moments to yourself can be uplifting too. We are all given one amazing life, so step out of your comfort zone, increase your physical and mental health, and watch less of other people’s highlight reels. HOW MANY ARE YOU GUILTY OF? • Scrolling on your phone when in the presence of visitors. • Carrying your phone from room to room, including the bathroom. • Losing your phone and not being able to function until it is found. • Becoming addicted to viewing what other people are up to. • Texting happy birthday or congratulations, instead of calling or saying it in-person. • Taking excessive photos on your phone that you never look back on. • Taking lots of selfies and only finding one you like (which you then add a filter to). And we can all relate to this one... • Eating one-handed! How many times have you seen someone eating with one hand and 71

scrolling with the other? Place your phone out of reach and make a point to connect mindfully with the food on your plate. This is also a respectful thing to do when someone has taken the time to cook for you. How does the food look, how many different aromas can you smell, and how does each mouthful taste? Connecting with loved ones around the dining table is a great way to bond and share highlights of your day, and you can never get that precious time with your kids back as they grow up so fast. If you want to hear the truth, ask a child how they feel about your phone usage! They won’t beat around the bush and will give you a blunt, honest answer. We all have a choice when it comes to how we spend our time. So try not to be a prisoner to your phone – perhaps that’s why they’re called ‘cell’ phones!

Tangles, tantrums and tears were the catalyst for hairdresser Krystal Boubaris to create Maleni – her own natural, organic range of kids’ hair care that’s packed full of nourishing Australian natives (and contains zero hidden nasties) for lovely locks without the hassle, discovers Rebecca Jamieson Dwyer. Desperate for a solution, Krystal scoured her hair salon’s shelves for something that would be gentle enough for kids but effective enough to tame those tangles and care for her daughter’s growing curls, but she came up short. So she turned to the supermarket, where she was horrified to discover that even products marketed to children were often filled with sulphates, parabens, silicones and other hidden nasties that aren’t great for anyone’s hair or skin, let alone for our precious little ones. “Many mainstream products are filled with synthetic ingredients that might feel nice on the hair, but aren’t hydrating it at all – they’re just a band aid covering up the problem,” Krystal says.

Summer is all about making memories, and what better way to do so than a glamorous girls’ getaway? We loved shooting mother-daughter duo Lucia and Cinzia at the stunning Novotel Sunshine Coast – the perfect backdrop to showcase some of this season’s hottest trends (and hopefully inspire you to plan your own special trip). Here’s to escaping the everyday!

hen it comes to fashion, this season is all about positivity, creativity and expression!

Romantic femininity will be a big look this summer, with soft flowing frills and tulle; delicate floral motifs; large ruffled ‘power petals’; floral-embroidered sheer chiffon; and three-dimensional floral motifs that really make a statement! Another trend that’s perfect for our steamy subtropical climate is comfort-first clothing: think wider and more relaxed silhouettes; natural fibres like linen and cotton stealing the show; and breezy, elegant styles made from gauze knits, mesh, crochet, translucent chiffon and satin taking us from day to night. Sheer draping is big for elevating your look this summer, as is party-approved glittery and sequined details, and eye-catching prints and patterns. A harmonious mix of shades and tones inspires feelings of calmness: think pastel pink, purple and green; cool shades of blue; and sunny shades of yellow, such as zesty lemon and rich buttercup. And for those that prefer brighter hues, burgundy, millennial pink, fuschia, horizon blue, liquid gold and matte silver will also be standouts. For this resort-themed shoot, I wanted to create a sense of freedom and escapism through fashion - I hope it inspires you to get creative and carefree this summer and to spark joy with your own wardrobe! Georgia Beard meets a creative couple whose individual paths allowed them to follow their passions before leading back to each other.

W

hen Serena Darling cut her hair short, she became obsessed with filling the bare space with statement-making earrings. Jewellery has always been a joyful part of Serena’s self-expression; and before earrings, it was necklaces – big, bold and beaded pieces in bright colours, an impressive collection she still owns. While studying an International Business major, Serena worked at Brisbane’s Lone Pine Koala Sanctuary, guiding tours, taking polaroids of koala encounters and later leading the sanctuary’s transition to digital photography. It was there she met fellow zookeeper and budding photographer Anna Wilshire, her soon-to-be best friend and eventually, life partner! But before this dynamic duo would come together, Anna embarked on overseas travel – volunteering with Orangutan Foundation International working with orangutans in Borneo; teaching children about Australian wildlife in India; and working in hospitality in the UK and Ireland. Meanwhile, after graduating, Serena settled into her first career-moulding position in Lone Pine’s marketing team and over the next two decades lived in the corporate world providing marketing, brand strategy and communications services in the commercial, public and not-for-profit sectors for global brands across Australia and the UK. Mastering her craft back in Australia, Anna worked as a cinema projectionist before riding the professional wave of real estate photography for ten years, and thanks to her early career start in architectural drafting, became one of the first photographers in Brisbane to offer Hello Sunshine Magazine

Reuniting and making their relationship official, Anna and Serena settled on the Sunshine Coast after years of building their own businesses in Brisbane. Serena had founded Darling Consulting to assist clients in building and protecting their brands from the inside out, while Anna built a real estate photography business she later sold before creating her Noosa-based business, Real Exposure.

Now Anna offers original fine art photography in modern coastal, country cottage, minimalist and monochrome styles designed to stand out, subtly complement or spark memories.

In 2022, Anna’s love for capturing local beachscapes, bushscapes and mountainscapes lingered, leading her

She also works closely with local real estate agents and property managers, providing her stunning local landscape photography to brighten the walls of accommodation outlets. Serena’s creative spark was also lit when she reconnected with her lifelong fascination with jewellery during a polymer clay earring workshop on the Sunshine Coast although the desire to share her creations had already been stirring in her mind. “I’d decided it would make a great side business and had dreamed up the brand and business plan before actually doing the workshop,” she said. Equipped with her savvy understanding of marketing, Euphony Designs emerged onto the artisanal stage in early 2023.

“After spending day after day shooting properties with bare walls and dated, mismatched prints, I realised there was a need for local and affordable contemporary wall art,” she said.

Handmade in her home workshop, Serena’s limited collections of earrings are designed to reflect the natural surrounds of Noosa and the Sunshine Coast with down-to-earth, effortless elegance.

Georgia Beard previews an immersive program of exhibitions at Caloundra Regional Gallery, reminding us of forgotten cultural landmarks on our shores and across the sea.

S

We love the patterns in our lives for their familiarity, mistaking them as the only experiences worth having and hearing about. From personal conversations to spaces of public self-expression, we’re distracted by the focal points – the loudest voices, the simplest stereotypes. When we miss the minutiae of our collective memories and movements, we owe it to ourselves and our neighbours to recognise the complete picture of culture. This is where Caloundra Regional Gallery draws our gaze. Over the summer months, a cultural exchange will take place as two exhibitions pull rare images and ideas from the pasts of Japan and Australia. Together, they reframe historical understanding and remind us of lifestyles lost. Variation and Autonomy: The Prints of Contemporary Japanese Painters will colour the gallery walls until 21 January, curated by Kyoji Takizawa from the Machida City Museum of Graphic Arts in partnership with the Japan Foundation, Sydney and Consulate-General of Japan in Brisbane. This exhibition reaches beyond the pivotal figures of contemporary Japanese printmaking to bring their unseen Hello Sunshine Magazine

supporters to the forefront – painters who didn’t specialise in printmaking but nonetheless enriched this artistic landscape in the 20th century. The evolution of printmaking traces back to the 1910s when emerging painters and sculptors cultivated the sōsaku-hanga or ‘creative prints’ movement – upholding the ideal of a single printmaker carrying out every stage of the printmaking process. “This early-modern Japanese art movement arose during an era when the market was flooded with lithographs of minimal artistic value and woodblock prints that merely duplicated original pictures for the purpose of mass production,” Kyoji Takizawa said. Post-World War II printmakers who dedicated themselves to the medium soon gained prominence, while lesser known painters and sculptors travelled to the West to learn the technical skills of print production. These peintre-graveurs, as they were known, united the new potential of printmaking with their mastery of abstract, expressionist and figurative techniques. Caloundra Regional Gallery introduces us to ten peintre-graveurs of the 1970s who explore a wide range of artistic possibilities through silkscreens, woodcuts, stone cuts, lithographs and more - Masanari Murai, Toshinobu 102

Onosato, Yasukazu Tabuchi, Yayoi Kusama, Natsuyuki Nakanishi, Hitoshi Nakazato, Tomoharu Murakami, Naoyoshi Hikosaka, Kosai Hori and Toeko Tatsuno expand the breadth of contemporary art, from geometric shapes and humanistic figures to expressions of European and Eastern culture and religious devotion. “Without a doubt, the prints of the artists featured in this exhibition constitute variations on the medium of painting, yet at the same time they stand alone as works of art that could only be realised through printmaking,” Kyoji said. After Variation and Autonomy illuminates a long-overlooked artform, Caloundra Regional Gallery’s second exhibition shifts the spotlight to cultural memories on our shores – a nostalgia we may not have revisited in decades. From 26 January to 17 March, Reception this way: motels – a sentimental journey with Tim Ross invites us on a driving holiday through the quintessential Australian experience of staying in a motel. National Archives of Australia developed the exhibition in collaboration with comedian and self-confessed architecture nerd Tim Ross, unearthing a collection of photographs and promotional film footage of long car rides, oversized roadside attractions and

Not even their essential housekeepers and hospitality workers are forgotten! “The records at National Archives are richer and more diverse than many people would give them credit for. It’s a real treasure trove that deserves to be better known,” Tim said. “I’m really pleased that my earlier research and partnership with National Archives planted this seed that has blossomed into a really great exhibition. “To be part of that journey has been fun. The result is this pictorial love letter to a somewhat bygone era, capturing the glamour and convenience of the roadside motels, from the east coast to the west, during a time when Aussie families found the time to hit road and take a break.”

Amid our daily routines and distractions, we need to break the barrage with a reflection of our innermost selves and a reminder that we’re not isolated in our experiences. A saturated, stirring arts scene is made possible by passionate locals in search of connection. Since 1998, ca Gallery (originally Cool Art) has stood as a cultural mainstay, emerging from a patchwork of artists in Coolum’s sleepy seaside village. After founder Joe McFeeters and partner Erin stitched them all together, these lifelong friends have joined an ever-growing collection of locally and nationally acclaimed painters. Their contemporary works regularly unfold across the ca Gallery walls for spontaneous wanderers-in to adventurous art collectors. Paired with a 30-year mastery of picture framing for art conservation and preservation, this immersion in artistry is one we can seek out or take home. Joe and Erin’s art curations have touched the lives and living spaces of many. “We are incredibly grateful for the support of the local and regional community for both the gallery and picture framing service,” Erin said. “Having just celebrated our 25-year business anniversary this year, we are aware of how fortunate we are to continue to operate and offer these services that we are passionate about. “We’ve had a wonderful year of exhibitions, starting with a vibrant body of work by Judith Laws, followed by our 25-year anniversary group exhibition showcasing more than 34 artists from the gallery’s journey. “This was followed with an ambitious and significant exhibition of the works of the late John Thomas Rigby and Joy Roggenkamp, acclaimed Queensland artists, courtesy of their families.” Hello Sunshine Magazine

offers merely a glimpse at 50 years of work. A five-time finalist in the Archibald Prize, Jan won the Packing Room Prize for two consecutive years and the People’s Choice Award. She has also appeared as a finalist in the Portia Geach Memorial Award, Moran Portrait Prize, Salon des Refuses and the Art Gallery of NSW’s Sporting Portrait Prize. On the local stage, her work appeared in ca Gallery’s group show, 25, before returning for A Moment in Time, offering all the vision and depth of her prestigious state exhibitions from ca Gallery’s accessible space in Coolum. Her oil paintings grasp the intimate emotions and experiences in the humanity of her subject matter, from renowned figures like Tom Carroll, Rachel Ward, Jenny Morris and David Williamson to Indigenous camp members in Urupunjta/Utopia. “Joe and Erin pushed me, because I said, ‘I’ll have an exhibition when I’m eighty’, and they said, ‘No, you can’t wait!
