I

t’s fitting that just steps from the sea sits a charming cookie company in Cayucos known for the sprinkling of sea salt and other equally intriguing ingredients that they top their cookies with. The Brown Butter Cookie Company takes the average cookie and turns it into an elegant treat, so elegant and unique that many local brides call upon them for wedding favors.

Fruity flavors like citrus and coconut lime are a perfect treat to enjoy on a sun-filled afternoon at the beach, where the original Brown Butter Cookie Company resides along the Cayucos downtown coastline. Equally delicious are their decadent cocoa and espresso flavors and of course the local favorite, the original brown butter sugar cookie.

In this personal interview, Christa Hozie co-owner of the Brown Butter Cookie Company with her sister, Traci Hozie, describes cookie recipe inspiration, their beloved staff and cookie fans, and the ways that the two sisters successfully run their cookie factory store fronts in downtown Cayucos and Paso Robles, their newest location. indulge | SAN LUIS OBISPO

INTERVIEW WITH CO-OWNER, CHRISTA HOZIE: Indulge Magazine: How many cookies do you make a day? Christa: We hand make around 5,000 cookies about five days a week in our Cayucos shop. We make more in the summer and during the holiday season! All of our cookies are hand rolled in what we like to call, "open kitchen" style so our customers can watch cookies being made when they visit our Cayucos location. Indulge Magazine: What is your most popular cookie? Christa: Our original Brown Butter Sea Salt cookie is the most popular cookie bar far. We enjoy creating new flavors to keep our offerings fresh but we never try to "top" the original. Each flavor is unique and has it's own following! Indulge Magazine: What is your inspiration when looking for new flavors? Christa: We are inspired by so many things, we like to keep connected to the culinary world. What great chefs are cooking and drinking may inspire us or just the love of something simple like almond, our newest flavor. Our almond cookie was inspired by our love of a simple almond croissant, which has a light yet delicious almond and butter flavor. Indulge Magazine: Do you have any celebrity cookie fans? Christa: We do! We have had many celebrities visit our shop over the years but we do not name names. We like to treat them like anyone else when they visit, but we do get a little star struck after they leave! 8

Indulge Magazine: Besides weddings, do you take orders for other special events? Christa: We receive tons of orders for special events and also for corporate gifting orders. We try to participate in local events whenever possible but as our business get busier we tend to need all hands on deck to keep our shops stocked and website orders filled. Indulge Magazine: Do you have plans to open more stores? Christa: We could not pass up the fabulous Paso Robles downtown location. We do not have any plans to open more shops this year but you never know, life moves very fast in our cookie world. Ingredients 6 Maria’s green zucchini, sliced 4 7th Heaven avocados, (peeled, pitted & chopped) 2 quarts vegetable stock 1½ cups plain yogurt 1 tsp Tabasco sauce 1 tblsp Worcestershire sauce 2 fl oz lemon juice 1 Bu cilantro, stemmed 3 garlic cloves, smashed 2 Bu green onion, sliced 1 oz extra virgin olive oil 1½ tsp ground cumin, toasted Cayenne Pepper, Kosher Salt ➢ Yields 1 gallon

In a large pan, sauté zucchini using olive oil over medium heat for approx 6 mins, until it becomes soft. Add garlic and sauté for 2 mins longer. Transfer mixture to a sheet pan and chill until completely cold. Using a pot full of boiling salted water, blanch cilantro for 3 seconds (very quickly, and then shock in an ice water bath.) Place chilled zucchini & garlic mix into a plastic lexan container. Pour & stir into chilled vegetable stock, yogurt, herbs & spices. Ladel the mixture into a

Layer strawberries and arugula on a plate. Garnish with blue cheese & almond crumbles. Slice chicken thinly, place on top. Dressing 1½ pint strawberries 3 tblsp basalmic vinegar 3 tblsp sugar 1 tblsp ea salt and pepper 1 cup olive oil In blender, mix all ingredients but the olive oil. Slowly add olive oil until desired thickness is reached. To sweeten, add more sugar. Dress salad thoroughly and enjoy!

Butterleaf Salad & Lemon Vinaigrette

Add yeast mixture to ½ cup of Carriage Vineyards olive oil, flour and salt. Smoothly knead into dough, then cover it in bowl to let it rise (1hr). Coat dough with olive oil, stretch to fit it into 13” pan. Leave it to rise (1hr). Top with olive oil and coarse salt. Punch in your preferred toppings. Bake at 425°F for 25 mins until golden brown.

Let cool. Combine all ingredients in a blender, purée until smooth. Season to taste.

Warm Spanish Olives WINE COUNTRY OLIVES Ingredients 1 cup unpitted olives

2 tblsp Wine Country Olives’ Blood Orange Extra Virgin olive oil ¼ tsp cumin seeds 10 black peppercorns, caper berries ¼ tsp anise seeds, cracked 1 bay leaf, large 2 cloves garlic, finely chopped 5-6 drops Tabasco or Sriracha 1 tbls orange zest

½ cup pistachios, toasted and chopped ¾ cup port ½ cup water ½ cup sugar 8oz goat cheese Olive oil ➢ Pair with cabernet or merlot wine

Heat oil in pan with herbs/spices, mix until soft. Stir in olives, orange zest, capers, Tabasco. Remove from heat. Cover and refrigerate. Remove bay leaf and peppercorns.

Cut baguette into thin rounds and brush with olive oil. Toast rounds in the oven at 400°F for approximately 10 minutes or until golden brown. Cool on a wire rack.

Crust 2 cups almonds 1 cup dates, pits removed

Ingredients 4-6 fresh peaches 1 tblsp brown sugar 2½ tsp Pumpkin Spice blend by Spice of Life 1 loaf of french bread (day old bread is preferable) 3 eggs 5 tblsp milk 1 tsp vanilla extract or bean Walnut, olive or coconut oil (Our favorite: “Praline” Olive Oil from The Groves on 41 in Templeton) Powdered sugar

Grind all ingredients until fine. Press mix into bottom of a 9” pan. Cheese 3 cups cashews (soaked for 1hr) ¾ cup each lemon juice, raw honey, unrefined coconut oil ½ cup water ¼ vanilla bean or 1 tsp vanilla ½ tsp sea salt Blend cheese ingredients until smooth. Pour onto crust. Cool in freezer until firm. Move to refrigerator for about one hour. Berry Sauce: 2 cups frozen berries ¼ cup dates or 2 tblsp honey ➢ Makes 12 servings

Goat Cheese SUMMERWOOD WINERY & INN 2180 Arbor Road Paso Robles, CA 93446 Ingredients 1 quart fresh goat’s milk 2 lemons, and juice, zest 2 tblsp basil or herb pesto 1 tsp kosher salt Cooking Equipment Cheese cloth, colander, bowl, soup pot, cheese grater greens and flowers to garnish

Bring 1 quart of goat’s milk to a simmer. Pour in lemon juice and salt. Turn off the heat and let it sit for 2-3 mins, stirring slowly. Set up bowl with a colander lined with cheese cloth. Pour the cheese into the colander and drain the liquid that runs through. Let sit in cheese cloth for a few mins and then pull cheese cloth together so it’s able to be tied at the top. Refrigerate for 1 hr. Serve with basil or herb pesto and a sprinkle of lemon zest and sliced warm bread.

Blend ingredients until smooth. Refrigerate and store in airtight jar. Place atop slices before serving.

Old-Fashioned Chocolate Soda MAMA GANACHE ARTISAN CHOCOLATES 1445 Monterey Street San Luis Obispo, CA 93401 Ingredients 6 tblsp Mama Ganache Artisan Chocolates Organic 70% Dark Chocolate Syrup 2 tblsp whipped cream 2½ cups carbonated soda water 2 scoops vanilla ice cream ➢ Makes 2 servings Per serving, spoon 3 tblsp chocolate syrup into a 16oz glass. Stir in 1 tblsp of whipped cream and 1¼ cups soda water until foamy. Add 2 scoops of ice cream. Top with whipped cream.

Optional ingredients: Whipped cream, blueberries, strawberries, bananas, maple syrup, yogurt, nuts Peach Topping Remove pit from peaches and cut into thin wedges. In a large bowl, gently toss peaches with brown sugar and 2 tsp Spice of Life Pumpkin Spice blend. Heat 1 tblsp oil in sauce pan over medium heat. Add peaches and sauté until desired tenderness and sauce forms, about 5-8 mins. Stir occasionally but not too much so it doesn't break down the peaches. French Toast Cut french loaf into diagonal slices about ¾ inches thick. Set aside. In a shallow bowl or pie dish whisk together egg, milk, vanilla, and Spice of Life's Pumpkin Spice blend. Heat a flat skillet over medium/high heat and add oil. Dip both sides of bread in egg mixture and place on hot skillet (be sure not to let the bread sit in the egg mixture too long otherwise it will get too soggy). Cook both sides of bread until golden brown. Remove from pan and place on plate. Top with peaches and sprinkle with powdered sugar. Consider topping with whipped cream.

Apple Filling 8 apples, peeled and sliced ¼ lb butter, melted ¼ cup sugar 2 tblsp cinnamon

Ingredients 3 cups chopped strawberries (chopped the size of blueberries) 3 cups blueberries 4 cups Greek yogurt 2 tablespoons honey 8 clear cups Toppings: nuts, fruits, spices, powdered sugar, granola ➢ Makes 8 servings

Mix all ingredients together, coating apples evenly. Bake at 425°F for 12-15 mins until golden brown. Let stand. Dough 2 cup flour ¼ cup sugar ½ lb butter, small cubes ¼ cup ice water Pinch of salt In mixing bowl mix flour, sugar, salt and butter. Smash and knead mixture together until it becomes doughy, add in small amounts of water at a time. Knead until dough is smooth and form a ball. Divide in to 2oz balls about ¼ cup size and chill in refrigerator for about 20 mins. Roll balls into ¼ inch rounds. Spoon about ½ to ¾ cup of apples filling mixture into the center. Fold the dough around the apples, pressing together with hands. Lay on baking sheet and bake at 375°F for about 20 mins or until golden brown. Top with ice cream and caramel sauce.

In a medium bowl, combine the Greek yogurt and honey. Stir well and taste to make sure that it is sweet enough for your taste (remember that the berries will add sweetness). Set up an assembly line of 8 clear glasses, bowls of fruit and the bowl of honey flavored yogurt. Add ¼ cup of chopped strawberries to the bottom of each cup. Spread ¼ cup yogurt atop each. Add ¼ cup layer of blueberries on top of the yogurt. Top each cup with a final ¼ cup of yogurt.Mix the remaining chopped strawberries and blueberries together and then top each parfait with ¼ cup of the mixed berries. So often when we’re watching our diets we have a laundry list of things on the “no-no” list, but of course that only makes us want those things more. Instead of focusing on what you can’t have, focus on what you can have and make the most of it. Go wine tasting – but plan it around a healthy activity, enjoy a tasty while you’re out but have a healthy snack before you leave – tips like these will help you have your wine and drink it all summer long.

Drink your water! How often do you look

back at your day and realize that you haven’t had any water yet? The absolute first step to losing weight is to drink you water every day. Stay hydrated and full!

Don’t leave hungry!

Don’t leave the house hungry. Have a light, healthy snack so that when you arrive to taste wine, you won’t be as consumed by all of the usual temptations.

Cook it, cook it good. When you go out

wine tasting, bring something healthy with you. Cook easy appetizers to enjoy in the tasting room or at a leisurely picnic outside. Prepare items that travel well and even think about flavors that will pair with wines you will be tasting.

Make good choices.

Before you start loading up your plate take a look at all choices available. Without becoming obsessed with calorie counting, try to improve your choices in ways that you can control. For instance, try to fill up on available foods that you know are most healthy before moving on to the delicious but less healthier options.

Move your body!

ROLL OUT THE BARRELS Summer Launches with SLO Wine Country’s “Roll Out the Barrels” Celebration NEW THIS YEAR: SUNDAY NIGHT CONCERT, BARREL SAMPLE SUNDAY, AND 6-PACK SAMPLERS Ushering in the official kickoff to the summer season, SLO Wine Country launches its 24th-annual “Roll Out the Barrels” celebration with new expanded events happening on June 19th – 22nd, 2014. The celebration is perhaps best known for its sun-kissed “Barrels in the Plaza” food and wine event on Thursday (June 19th) at Mission San Luis Obispo, which offers bites from area restaurants paired with wine tasting from SLO Wine Country’s member wineries. The weekend unfolds with Friday night (June 20th) winemaker dinners and continues with the “Passport to SLO Wine Country Weekend” (June 21st - 22nd) where event ticketholders visit area wineries all day Saturday and Sunday and enjoy complimentary tastings, festive music, light bites and special discounts. “New this year is our ‘Barrel Sample Sunday’ (June 22nd) where attendees can get a sneak peek and taste of upcoming wine releases at our member wineries,” said Heather Muran, executive director of SLO Wine Country. 22 indulge | SAN LUIS OBISPO

Other news is that the weekend’s flavors come to a full crescendo on Sunday evening (June 22nd) as Roll Out the Barrels ticketholders enjoy a 10 percent discount to the “Summer Krush” concert

presented by The Krush 92.5 FM and Otter Productions at the Avila Beach Resort. The entertainment lineup includes headliner Gavin DeGraw with his singer songwriter soul, pop-rock rhythms; folk-rock artist Matt Nathanson; and opener Mary Lambert, a Seattle-based singersongwriter and spoken word artist. Bacon & Barrels at Saarloos and Sons in Los Olivos is the ultimate outdoor festival for the bacon obsessed foodies and those who prefer their drinks from a barrel. It is an all-day event showcasing local chefs’ most imaginative recipes incorporating bacon, and highlights the best artisan and craft barrel beverages such as bourbon, beer, wine, and scotch. Combined into one grand day of indulgence, Bacon & Barrels is sure to exceed your hopes and expectations of celebrating the love of bacon and spirits. The all-day event includes over 140 food and libation booths with all inclusive tastings from some of Santa Barbara’s hottest boutique wineries and unique, high-end small batch whiskey, scotch and tequila from local artisan purveyors. The California Coast Classic Bike Tour is a scenic bike ride that takes place over eight days and covers 525 miles along the coast on Highway One. The “CCC”, as it is affectionately known, is a full-service ride which provides the framework for one of the most incredible experiences of a lifetime.
