Hello, April!

April has arrived – our first full month of spring. As long as you don’t have hay fever, April is awesome! In my garden, some of the bulbs are blooming and others are soon-to-be-seen. I can’t wait for my tulips to start showing their colors – I have hundreds. For anyone who loves the freshness and colorful beauty of early spring, April is a magical month.

In terms of this issue, we’re going to look at beauty, food and more. We will look at one beauty

trend that actually works throughout the year. We are also going to look at inner beauty. We will then look at the health benefits and spicy warmth of cloves (recipes included). And also, if you have leftover hardboiled eggs from Easter, we have found a link to 35 great ways to use them up. And finally, in a continuation of our focus on areas of health, we will share information around the signs

We’re going to start with ideas for using up any leftover Easter eggs still in your fridge. We found the ideas at tasteofhome.com. You will get the link to all the recipes in “Great Easter Egg Recipe Ideas,” as well as the actual recipe for an English classic called “Scotch Eggs.”

Have you ever worked with cloves in your cooking? If you have you know the warm, spicy flavor they can bring to a dish – especially of Indian cuisine, or even a gingerbread cookie. But did you know there are very real health benefits you can get from cooking with cloves? We’re going to look at those benefits, and also give you two cloveinfluenced recipes – one for a hot beverage and one for a chicken-wing glaze. In beauty, there is external beauty and there is inner beauty. In this issue we’re going to look at each. In “Finding Your Inner Beauty” we address what inner beauty is and how you can identify and embrace it in yourself, and recognize it in others.

As the saying goes, “beauty is in the eye of the beholder.” And in the eyes of some – or perhaps many – the “smoky eye” is a thing of beauty. Now is the time to get creative with Easter’s leftover hardboiled eggs. We turned to tasteofhome. com and boy do they have some great ways to use them. We will include a link at the end of this piece for 35 ways to use the leftover eggs, but first we want to highlight one recipe idea that caught our eye.

Great Easter Egg Recipe Ideas

Ingredients

1 pound bulk pork sausage

Salt and pepper to taste

6 hard-boiled large eggs

1 large egg, lightly beaten 3/4 cup crushed cornflakes

Directions

Divide the sausage into 6 portions; flatten and sprinkle with salt and pepper. Shape each portion around a peeled hard-boiled egg. Roll in beaten egg, then in cornflake crumbs. Place on a rack in a baking pan. Bake, uncovered, at 400° for 30 minutes, or until the meat is no longer pink, turning every 10 minutes.

How can you reheat Scotch eggs in the microwave?

If you’d like to reheat Scotch eggs in the microwave, make sure you cut each egg in half or in quarters. A whole scotch egg will likely burst

during microwaving. To prevent the cut egg from drying out, loosely wrap it in a damp paper towel while heating.

What are some variations of this Scotch egg recipe?

Although it won’t use up leftover hardboiled Easter eggs, if you like your yolks a bit softer, you can use soft-boiled eggs to make Scotch eggs instead. You’ll have to use a bit of a lighter touch when wrapping it in the sausage to avoid breaking the white, but the result will be a just-set yolk with a velvety texture. You can also change up the flavors – try an Italian version with Italian sausage and seasoned breadcrumbs. Or try fresh chorizo for a spicy, Tex-Mex version!

How do you store Scotch eggs?

Store your Scotch eggs in the refrigerator. Wrap cooled eggs individually and place them in an airtight container—they’ll last 4-7 days in the fridge.

What can you pair with this Scotch egg recipe?

Because Scotch eggs are an iconic British dish, think classic British sides: french fries (or “chips,” as they call them in Britain), mashed potatoes or baked beans. It’s traditional to serve Scotch eggs with a dipping sauce – in Britain it’s most often a spicy mustard-based sauce. But you can pair them with your own preferred sauce as well. Feel free to experiment with different sauces to complement the flavors of your Scotch eggs.

Have you ever tried to do a “smoky eye” with your makeup, or wondered what the technique is? While this classic look may seem like something only makeup pros can master, it's actually quite simple when you break it down step-by-step. To start, here’s what you’ll need:

Concealer: A full-coverage concealer can be used to prime and smooth the eye area. Or, if you prefer to use an eyeshadow primer instead of concealer, that'll work too.

Eyeshadow Brush: Before you start blending your smoky eye, you'll want to use a densely packed eyeshadow brush to effectively transfer pigment from the eyeshadow pan onto your lid.

Blending Brush: A fluffy blending brush is key to ensuring that your shadows all blend together seamlessly with no harsh lines.

The Order of Application

1. Prime your lid.

2. Pick out your eyeshadow shades.

3. Apply your all-over eyeshadow shade.

6. Blend, blend, and blend some more.

8. Apply the rest of your makeup and then circle back to mascara.

Final Tips: By applying your mascara at the very end, makeup powder won’t get all over your eyelashes ensuring they are very black. And remember to apply mascara to your bottom lashes first, so you don’t get mascara all over your lid when you look up while applying the bottom-lash mascara.

It’s Finally Spring! The LTHS annual Basket Social will be held on Sunday, April 14th. Please see the ad in this issue of the Gazette. We have lots of great baskets and gift cards donated from many individual supporters, various restaurants and other businesses. This year we again have tickets/vouchers for Dorney Park & Wildwater Kingdom and the Crayola Experience in Easton. We also have $50 gift cards donated by Weis Markets and Wegmans as well as other premium offerings from Lehigh Valley Iron Pigs “Pig Pack”, Jersey Mike’s Subs, WaWa Foundation, Becky’s Drive-In, Shankweiler’s Drive-In and a $50 lottery ticket basket. We want to thank all the individuals and businesses who have donated baskets and other items. Raffle tickets are sold at the door. The Fish & Game club members will have their kitchen open with lunch and beverages for sale. Drawing for winners will begin at 3:30 p.m. Winners will be notified if not present and be able to pick up prizes by 5:30 at the latest. Our summer Open House season begins on Sunday, April 21st at the Historical Centre Museum in Pennsville. We will be open from 1 to 4 pm for visitor who want to see our museum displays that preserve our history. We will be recognizing Preservation Week which begins the April 28th through May 4th. Also know that May is Preservation Month where we are reminded to preserve and display our family treasures, family photos and papers. Another preservation practice is to share our family food heritage by making

and sharing grandma’s recipes and copying them for future generations.

We are moving forward with initial planning of our Gravestone Cleaning and Preservation Workshop. The first meeting for those wanting to be involved will likely be in May. If you want to know more, stop in at the April 21st Open House to discuss it with us. Those interested in helping with the project or just attending a workshop when we get everything in place should give us a call at 610-440-0151 and let us know.

The Health Benefits of Cloves (and Recipes)

Cloves have many potential health benefits and are most effective when included as part of a healthy and balanced diet. You can easily incorporate ground cloves into many dishes. They’ll bring a warm, distinctive flavor to desserts, curries, or chutneys.

Found in both whole and ground forms, this versatile spice can be used to season pot roasts and hams, add flavor to hot beverages, and bring spicy warmth to cookies and cakes. Cloves are

best known as a sweet and aromatic spice. We went on the Internet and found a range of delicious sounding recipes featuring cloves. Here are just two recipes we thought you might enjoy.

CLOVE AND CINNAMON TEA

This tea is appreciated for being warm, aromatic and invigorating. It takes about 10 minutes to prepare.

Ingredients

1 1/2 cup water

1 clove, crushed

1 pinch cinnamon

3/4 teaspoon tea leaves or 1 teabag

1 teaspoon sugar

1 tablespoon milk (optional)

Directions

1. Bring water to a boil along with the crushed clove and cinnamon powder.

2. Cover tightly with a lid to retain the flavors.

3. Let it boil for a good 2 minutes.

4. Lower the heat and add the tealeaves or teabag.

5. Turn the heat off and let it stand.

”CLOVED” ORANGE MAPLE GLAZED CHICKEN WINGS

These crispy, baked orange maple glazed chicken wings are messy to eat but worth the cleanup. For best results, be sure to use real maple syrup for this recipe and not any imitations. The cloves in this recipe add a subtle, warm spice flavor to the glaze that complements the fruit and maple really well. In the end, the wings will be sweet, sour, salty and spicy!

How to make the wings:

1. Pre-heat oven to 400F.

2. Pat chicken wings dry with paper towels.

3. Brush wings with a little bit of vegetable oil, then sprinkle with salt and pepper.

4. Place wings on wire rack, then set the rack on an aluminum foil-lined rimmed baking sheet. Bake the wings for 40 minutes.

Top Tip: It's really important to dry the wings well, otherwise they won't get nice and crispy.

How to make the glaze:

1. While the wings are in the oven, make the glaze on the stovetop. Add cloves, butter, red pepper flakes, salt, syrup and orange juice to a saucepan.

2. Bring everything to a boil, then simmer, whisking or stirring continuously, until the glaze thickens. (This will take about 15 to 20 minutes).

3. After the initial 40 minutes in the oven, brush the wings with the glaze, then return them to the oven for another 10 minutes. Right before serving, spoon more of the glaze on and sprinkle with chopped green onions (optional).

Student Athletes and Suicide

National Student-Athlete Day is celebrated each year on April 6. The day provides an opportunity to recognize the outstanding accomplishments of student-athletes. Approximately 8 million studentathletes compete in high school sports, and over 530,000 compete in the NCAA. Being able to balance school with athletics can be difficult.

According to an article written for timely care by Lauren McQuade, the pressures and demands on 18–21-year-old athletes are tremendous. Anyone who works with student-athletes knows the challenges they face. Every student-athlete faces stressors, and each may manage them differently. Student-athletes who cannot effectively manage stress are at increased risk for mental health concerns like anxiety, depression, and suicide.

About 30% of women and 25% of men report having anxiety, but only about 10% of all college athletes with known mental health conditions seek professional help. Besides suicide, student-athletes are at a greater risk for substance abuse, social anxiety, and eating disorders.

Coaches are in a position to have a lasting impact on the youth that they interact with on a daily

basis. The Coaches Assistance Program (CAP) was designed to educate coaches on how to recognize the signs of those considering suicide and provide information needed to guide athletes through stressful life situations. The CAP website also contains an informational seminar which delves into the problem of suicide for studentathletes and the unique pressures they face. It features several experts on the subject. Heads up: Solar eclipse to be visible in Pennsylvania on April 8

On Monday, April 8, a total solar eclipse will cross North America from the Southwest to the Northeast, being visible across just 13 states. The moon will pass between Earth and the sun, which will block the sun’s light. A portion of northwest Pennsylvania will be in the eclipse’s path of totality, including Erie, Crawford, Warren and Mercer counties. For almost four minutes, the sky will become dark in the afternoon.

Although our area is not in the path of totality and thus we will not see the sun totally eclipsed by the moon, there will still be an opportunity for excellent viewing of the eclipse throughout Pennsylvania, weather permitting.

The eclipse will begin to be visible around 2 p.m.

Delaney is the daughter of AJ and Erica Szwast. She has a sister named Andi. Her activities include field hockey, cross country, track, Sports Editor for The Slate (school newspaper), Student Council Secretary and Spirit Committee Co-Chair. She serves as Secretary of the National Honor Society and is a member of the Northern Lehigh Little Theatre. Delaney plays club field hockey for Phoenix Performance Academy. She enjoys origami, baking, reading, and paddle boarding. She is a volunteer Sunday School teacher at Hope Lutheran Church. Her future plans include attending Ithaca College to study Occupational Therapy and continue playing field hockey. Congratulations, Delaney!

The new Gardner

If I understood it correctly, it was in the year 1972. There was a man and his wife and they lived in Lancaster County. Behind their house was about a quarter acre of land that belonged to [the property]. And they decided this would be a good place to make a garden out of it.

Anyways, there was nothing but weeds there and it always looked awful. So then in the spring they dug up and turned over everything by hand and raked it out nice and level. Then comes time for planting. They planted peas, potatoes, red beets, cabbage, radishes, bell peppers, tomatoes, a couple kinds of beans, and sweet corn. This, the first time this man tried to garden, so he thought, was a "wonderful thing." From here on his thinking was: "After a short while the seeds will produce plants and then peas, tomatoes, radishes and everything else." However, that was nothing but "wishful thinking". Things didn't turn out that

way at all. The fellow was a "city farmer" for sure. The peas, beans and the tomatoes weren't given anything to grow and climb up on. The sweet corn grew three feet— and then dried up. And very soon everything else was taken over by weeds and pests [bugs]. We don't need to say anything more. His first attempt at gardening was a total failure [mistake]. And then to make things worse, his wife teased and scolded him really good: "All that money spent for it now and nothing gotten from it." Now and then and over and over his wife

blamed him. He couldn't stand this "blackguard" [person who uses foul or abusive language] any longer.

So then he swore to [promised] himself, "Before next year I'm going to find out what went wrong." Right away [he got] a gardening book [and] while reading this book his "eyes were opened." First of all, you have to find out if your soil is "sweet" enough. And if not, then it's necessary to work lime into it. And then, the peas, beans and tomatoes must have something to "climb" on. Also, it takes a couple kinds of "poison" that you have to sprinkle on some of the plants now and then; that keeps the insects and the worms [caterpillars] under control. And all the weeds must be dug out by hoe or pulled out by hand. And when there's not enough rain, then it's high time to fetch water and water everything well. It takes many days [of hard work] to keep a nice garden. In his book there was a chapter that was just about manure/fertilizer. It said "this should be mixed into the soil and, for some plants.[applied] on top between the rows when the plant stalks appear. The fellow also read about [what do do] if rabbits and groundhogs come around – then it's necessary to put up a good strong fence the whole way around [the garden]. And then there are the squirrels. and mice, chipmunks and birds [to worry about]; they can all quickly ruin a garden. Then, it was time to "cipher" [add up] the money [costs]; and it figured out to be a couple hundred dollars, especially if a fence was required. The man had plenty of determination – but he wondered what his wife would think about it. "Yes," she said, "Go over [your numbers] again. Maybe there's something that isn't so very necessary."

So then, the word "manure" [fertilizer] came to

him the second time. "Why, my goodness! I can get manure for free. We travel a lot around on the road anyways, especially on Sundays, when the horse and buggies are going back and forth for church. And he knew that it was still four or five months until gardening started again. That would be enough time to fetch manure to cover the whole garden. In any case, he was proud of his "brainchild". So then [he put] a big cardboard box, an old broom and a dustpan in the back of the car. His wife didn't know anything about this. So then Sunday came around – there couldn't be a prettier day. And then they drove off. It didn't take long at all – up front on the road was a 20- to 30-footlong streak of what he was looking for. He drove the car over alongside the road and stopped. He got the dustpan and broom out of the back. Then he brushed [swept] all the animal droppings nicely onto the dustpan and put them into the box. This took maybe between 10 to 15 minutes. The whole time a lot of people drove by, his wife, sitting in front in the car, was "burning up" [fuming]. She hated this. Apparently, she thought that everybody who saw this was wondering what kind of crazy people they are – especially when somebody drove by who knew them. When he got back into the car, he had a "hairy time "and was scolded the whole way home. She told him. "If you keep that up, I'm never going along again." But he always thought that was a good way to save a little money. How long this dispute went on, I wasn't told. And I haven't found out anything more since then. But I can’t help wondering if they had a garden the following spring, or not.
