DILLON PHILLIPS A MESSAGE

Dear Esteemed Members of Idle Hour,

With the halfway point of the year behind us, I want to express my gratitude for your continued support of the Food and Beverage department at Idle Hour Country Club. Your participation and patronage have been invaluable.

We’ve experienced many successes, but we ’ re also committed to addressing any missed opportunities. If you ’ ve encountered anything less than an exceptional dining experience, please accept my sincere apologies. As the Executive Chef, I assure you that my Culinary Team and I are diligently working with the rest of the Food and Beverage department to enhance our procedures and overall service.

Our efforts begin with an improved À la Carte menu. I’ve made changes to our featured appetizers and added additional entrées to our all-day menu. Plus, I’ve reintroduced the most requested sandwich wrap from previous months.

Looking ahead, we ’ re excited to introduce a greater selection of weekly Chef’s Features and a regular rotation of up to 20% of our À la Carte menu each month. Your favorites among the Chef’s Features will influence upcoming menu changes. I encourage you to share your requests for Chef’s Features so we can collectively showcase Idle Hour’s best dishes on our A la Cart menu.

For August, I’ve brought back some delectable favorites, including Seared Sea Scallops, Bangers and Mash, and the Blackened Chicken Caesar Wrap. However, my personal highlight this month is the Blistered Tomato Linguine. Inspired by Dreamtime Market Gardens, a local fresh produce farm, this dish features exclusively grown, plump, and flavorful small tomato varieties. Lightly charring the tomatoes brings out their sweetness, complemented by an emulsification of Chablis wine, lemon, and fresh basil.

I invite you to sample the Blistered Tomato Linguine, whether as a scampi with shrimp or paired with chicken.

I look forward to greeting you at the club!

The Men's Member-Member Tournament is on Saturday and Sunday, August 10th & 11th. The course and the driving range will be closed for the duration of the event MEN’S MEMBER-MEMBER:

The course will undergo its bi-annual aerification September 9th -11th.

MATTHEW WHARTON

And just like that summer was twothirds over! Seems only yesterday I was writing about flipping the calendar to the official start of summer. The club was looking forward to the Summer Gala and Independence Day festivities, while my team and I were preparing for The Classic and 118th Southern Amateur. Now all of that is in the rear-view and before you know it, folks will be tailgating at Kroger Field and Keeneland.

From a weather perspective, summer has included just about everything. Since June 1 we have experienced cooler than average temperatures with the mercury dropping into the 50s on nine occasions and there have been eight days so far where the high temperature failed to reach 80 degrees. We’ve also had our fair share of hot, humid weather with seventeen days in the 90s.

We once received rain for six consecutive days totaling 2.08 inches only to immediately endure sixteen consecutive days with no measurable rainfall. In other words, a typical central Kentucky summer.

I mentioned the Southern Amateur in my opening and much has already been said or written about the amazing overall experience. I would like to add it was an honor for our team to prepare and present the golf course each day. Working with the folks from the Southern Golf Association was a treat. They were extremely professional and knew once the tournament concluded we were responsible for returning the golf course to you in acceptable condition.

Hosting major championship golf is never easy, no matter what time of year the event is played. But the middle of July is a different beast, and the scars of intense mowing and rolling are evident as are the divots from the fairways made by 156 competitors. I’ve often thought it would be educational for all golfers if cameras showed tour event venues one or two weeks after the tournament so more folks would understand the stress and strain events can put on a golf course.

MATTHEW WHARTON

But not all was stressful. The golf course got a welcome break from golf car traffic during the week of the event, and the majority of tee boxes utilized by the membership also caught a breather. My team has never filled so many divots on the Ross tees before.

As we enter into August our goal is simple, better than yesterday. It is easy when you start to recognize the days getting shorter to think the end is near and let down your guard. I have stressed to the team we must remain vigilant to not cause unnecessary or self-inflicted damage and do whatever is necessary to make the golf course better than the day before.

If we achieve our goal, we will have a healthy, vigorous golf course before greens aerification which is now just 40 days away. We have planned fertilizer applications designed to increase plant density and we will be seeding thinner areas as the calendar continues to usher in autumn like conditions.

But before we usher in fall, next up are a few events followed by the Member-Member.

Thanks for reading, and happy golfing!

EMPLOYEE SPOTLIGHT

Food

Where are you from?

I was born in Covington, Kentucky, and later graduated from East Jessamine High School.

What led you to this careeer?

My first job in the service industry was at Cracker Barrel. Eventually, I decided to move on and applied at the grand opening of Texas Roadhouse in Richmond. That’s where my career as a bartender started. I eventually landed a job at Elixir downtown, where I honed my mixology skills. I further elevated my practice at one of the biggest bourbon bars in the city, The Rackhouse Tavern. There, I became a bar manager and got to fully express my creative abilities in crafting awesome cocktails for awesome people.

What do you love most about your job?

What I love most about this job is the tight-knit family atmosphere. We get to build meaningful relationships with the people we see every day and cater to their specific preferences. It's not just about the drinks; it's about taking care of each other and our members, all while ensuring a safe and fun environment. We strive to maintain the highest standards, setting ourselves apart from any other establishment in the city.

EMPLOYEE SPOTLIGHT

Brandon Mahan

Food and Beverage Supervisor

What motivates you at work?

Honestly, it would be tough without my colleagues, Evin and Nick. I’m also motivated by getting to know our members and remembering their names it’s a great feeling to be part of a team that’s all about ensuring the best experience possible every time someone comes to the club.

What do you like to do outside of work?

I have a deep love for bourbon and I have an extensive collection. But to me, bourbon is more than just alcohol in a bottle; it’s an art crafted by an artist. Each bottle tells a story and carries the history of its creator. Every bourbon is made in its own unique way, with distinctive touches that can make a big difference in the final product. Besides that, I have two energetic and loving fur babies, Mia and Domino, who are my world. I also love outdoor activities like hiking, spending time on the lake while grilling up some meats.
