Internship

Internships at The Hotel School Sydney provide valuable experience in observation, learning and practice in a business environment. Students are given the opportunity to integrate theory with the practice and responsibility of the workplace. All students are prepared for employment through Introduction to Professional Practice, a core full-time study unit written in consultation with industry recruitment professionals. Students can work in a casual, part-time or full-time capacity and are required to satisfactorily complete six months service and accrue a minimum of 600 hours experience with the one organisation. During internship, students are assessed through a variety of on-the-job and academic assignments which include industry reports and workplace research.

All student assessment methods

Assessment activities and criteria are designed for specific units and reflect University policy and academic best practice and trends. Assessment tasks may require individual or group submission. Many units include a written exam at the end of the study period. Exams may be open or closed book and can include essay questions, case studies, multiple-choice and short-answer questions. Other assessment tasks include researched essays and reports, case studies, portfolios, annotated bibliographies and are submitted either electronically or in hard copy depending on the task. Other types of assessment include online quizzes, problem resolution, in-class tests, logbooks, technique tests, portfolios, creative projects and contribution to online discussion, blogs and wikis. Assessment of activities such as fieldwork and professional experience may include supervisor observation and reflective journals and reports. A wide variety of individual and group presentations is often a component of assessment, and may include oral, audio or video presentations.

Anne was recruited from Hong Kong to be part of the inception team at The Hotel School Sydney in 1989. Anne brings an extensive understanding of the education and hospitality industry. Her dedicated work with students, alumni and high school career counsellors sees her continue to play a substantial role in the overall success of The Hotel School Sydney.

Paul Weeks

Dr Genevieve Lovell

As Academic Director, Paul’s experience in teaching, learning and research is grounded in more than 17 years in hotel, motel and food service management in Australia and overseas. He has lectured in management, services management and information technology with Southern Cross University since 1991. Paul has published in academic and industry journals, and has co-authored two Australian industry texts: Club Management and Managing Convention Businesses. Research interests include IT in hospitality, education, history, convention services and club management.

Genevieve is ‘hospitality centric’ and a staunch defender of Australian service ideology. She has owned and operated pubs, cafes, restaurants and a guest house. She is currently developing a guest house/tea room/coastal Aboriginal art gallery in coastal New South Wales. Genevieve’s research interests include; service encounter processes; hospitality skills and competencies and hospitality facility planning and design. She has published in these areas.

Joining The Hotel School Sydney in 1990, Julie remains one of the longest serving team members. Julie continues her focus on communication and tourism studies across all three years of the degree program. Julie coordinates The Hotel School Sydney’s academic learning service to develop and ensure students are supported to maximise their academic results.

On completing her Bachelor of Education at Trinity College Dublin, Jo moved through London and Spain discovering her passion for the food and beverage industry that aided her success and experience managing a number of top culinary establishments across the world. Jo facilitates professional development programs to aid high school teachers with industry updates and teaches food and beverage and environmental management.

A former chef with a vast array of experience internationally and within Australia, Kaikee brings his skills and knowledge to the The Hotel School Sydney. Kaikee works with industry using his professional links. His teaching focus is across tourism disciplines in all three years of the degree program.

After 25 years of professional training and development work including a number of senior HR roles, Lynn lectures in areas of research, human resources and law. David Scott

Tony Patterson JP

David’s previous operational experience includes management positions at the Gleneagles Hotel in Scotland, and as part of the preopening team at The St David’s Hotel and Spa in Cardiff. In 2002 David returned to academia at the University of Otago, New Zealand where he taught until 2011. His teaching focus is on the social and cultural aspects of the tourism and hospitality sectors. David’s research explores the everyday spaces and practices of tourism, hospitality and leisure, along with engaging mobile methodologies to further the development of a critical understanding of hospitality. Current publications focus on the mobilities of hospitality and tourism workers, and the role of food in the tourism experience.

General Manager, Tony Patterson is a graduate of The Hotel School Sydney and Southern Cross University who’s career has spanned over 20 years in senior management roles within the hospitality and tourism industries. Most recently he transitioned into the field of education leading a number of educational institutes catering for both domestic and international students. Tony is recognised as an exceptional leader, with a passion for developing and motivating others. This ensures that The Hotel School Sydney students achieve a quality educational experience while the industry gains professional graduates and future leaders.

Stephen graduated from Michigan State University in the Hotel and Restaurant Management program before joining Sheraton Hotels in Hawaii then Auckland. Stephen joined his family group of Summit Restaurants as Human Resources Manager and General Manager and continued with the Accor group. Stephen has owned and operated restaurants, cafes and HMR concepts. Stephen teaches in leadership, HR and entrepreneurship with interests in structure leadership.

Vashti grows links with industry both locally and abroad to provide students and faculty with the best possible access in terms of internship opportunities. Joining The Hotel School Sydney in 2001, Melinda has 20 years of office management experience. Having completed studies in human resource management, Melinda is responsible for the management of the schools administration, admissions and student services.

A graduate from Macquarie University with a Bachelor of Commerce (Operations Research), Anita has experience with various divisions of large global higher educators.

Joanna’s previous financial experience allows her to be responsible for the daily management of School accounts and contracts.

As a graduate from The Hotel School Sydney, Carol worked for the duration of her course at The Hilton Hotel in Sydney. In 2011, Carol won The Australian Hotels Association award for ‘best apprentice/trainee’.


How to apply domestic

All domestic applicants for the Hotel School Sydney are selected on their individual merit. Whilst your most recent academic performance or professional experience is used as an indicator of ability to undertake studies at a tertiary level you will also be invited to attend an interview as part of the final application process.

Australia & New Zealand applications All Domestic applicants need to apply through either: UAC (Universities Admissions Centre) via www.uac.edu.au or QTAC (Queensland Tertiary Admissions Centre) via www.qtac.edu.au Hard copy UAC and QTAC guides are available for purchase through newsagents, but please note that applications are electronic through the above websites. When applying through UAC/QTAC for the Bachelor of Business in Hotel Management, The Hotel School Sydney should be listed in your preferences. Upon receiving your application through UAC/QTAC you will be contacted by The Hotel School Sydney to arrange your interview. The interview will be conducted in person or via phone if you reside outside the Sydney metropolitan area. FEE-HELP FEE-HELP is a loan scheme that assists eligible students with their tuition fees. Eligible students include Australian citizens; holders of a permanent humanitarian visa who will be resident in Australia for the duration of the course; or the holder of a

ABSTUDY, AUSTUDY & Youth Allowance ABSTUDY provides assistance for Australian Aboriginal and Torres Strait Islander students. Benefits for students include the payment of any incidentals allowance to assist with text book and equipment costs. AUSTUDY Payment is an income support payment available to qualifying students aged 25 years or older. It provides income tested assistance to full-time students who are Australian citizens. Youth Allowance is a similar support payment paid to eligible 16 to 24 year olds undertaking full-time study. Registered providers have a CRICOS (Commonwealth Register of Institutions for Overseas Students) code and a specific CRICOS course code. This registration guarantees the provider and the course meet the high standards necessary for overseas students.. For further information visit www.cricos.deewr.gov.au Tuition Protection Service (TPS) Recent changes to the Education Services for Overseas Students (ESOS) Act have further strengthened protections for international students through the introduction of the TPS. The TPS is an initiative of the Australian Government to assist international students whose education providers are unable to fully deliver their course of study. The TPS ensures that international students are able to either complete their studies in another course or with another education provider or receive a refund of their unspent tuition fees. For further information visit www.tps.gov.au Deferment, suspension or cancellation of enrolment Under Standard 13 of the ESOS National Code of Practice 2007, international students are able to defer commencement or temporarily suspend their enrolment where a written request is submitted, and a compassionate and compelling reason is presented with supporting documents, and approved by the Director of International Office. When deferring commencement is approved, a new offer or a new CoE might be issued subject to the entry requirement and fees applicable to the new commencement date; and when the suspension is approved and the program completion date is affected, a new CoE may be issued to reflect the new program completion date. Students are referred to the Department of Immigration and Citizenship for advice on how potential change to their enrolment status may impact upon their visa.

The University may suspend or cancel a student’s enrolment for misconduct, non payment of fees, unsatisfactory course progress/attendance or when a student had failed to reenrol in a study period as having abandoned their course. The University will notify the students and the Department of Immigration and Citizenship where the deferment, suspension or cancellation of their enrolment may affect their student visas. Refund policy

Students shall be entitled to a refund of fees in the circumstances indicated below: a) A full refund of fees will be paid if an offer of a place is withdrawn or the University is unable to provide the course. If, however the offer was made on the basis of incorrect or incomplete information supplied by the applicant, the University shall retain 10 per cent of fees for one study period (session, trimester or other designated study period) as well. b) A full refund of fees will be paid if the student is excluded before the start of the study period. c) If the Director of Student Services receives official notice of withdrawal from the student:

(i) Commencing students More than four weeks before the start of the study period, all tuition fees paid are refundable less an administrative fee of 10 per cent of the tuition fee applicable to that study period plus a full refund of fees paid in advance in respect of a following study period;

(ii) Continuing students Before the start of the study period, the student shall be entitled to a full refund of tuition fees applicable to the study period and a full refund of fees paid in advance in respect of a following study period;

(iii) Commencing and continuing students (i) On, or before the last day of the fifth week of the study period, the student shall be entitled to a refund of 50% of the fee applicable to that study period and a full refund of fees paid in advance in respect of a following study period. (ii) After the last day of the fifth teaching week of the study period, the student will not be eligible for any refund of the fee applicable to that study period, however, they will be eligible for a full refund of fees paid in advance in respect of a following study period. d) If the Director of Student Services receives from a student official notice of withdrawal from a unit or units representing less than withdrawal from course: (i) On or before the last day of the second teaching week of the study period the student shall be entitled to a full refund of the tuition fee applicable to that/those unit/s; (ii) On or before the last day of the fifth week of the study period the student shall be entitled to a refund of 50 per cent of the fee applicable to that/those unit/s; (iii) Beyond the fifth teaching week of the study period, the student shall not be eligible for a refund of the fee paid for that/those unit/s e) If a course starts on the agreed day but the student does not start the course on that day (and has not previously withdrawn) the student is not entitled to a refund of fees unless the Director of Student Services receives from the student written notice of withdrawal from the course. f) The refund of fees provided in (b) to (f) shall be paid to the student by the provider no later than 14 days after the day on which the offer of a place is withdrawn.

NB The points listed in (b) to (f) above are compliant with the Education Service for Overseas Students Act 2000 s.27(3) and Education (Overseas Students) Regulation 1998 (QLD), Section 7(1)(d).
