Cathy’sRecipe Box

Welcome to my kitchen.   Actually, I’m in my office and watching the leaves dance and swirl in the air like a snowfall outside the shop door.   Have I mentioned how much I love Fall?  It’s my absolute favorite season.

It’s a beautiful Fall day that reminds me of the house I grew up in and my Great-gramma Smith.  This was a regular meal she made during my childhood for our supper so I thought I’d share this recipe of hers that I now make often in Fall & Winter.   It’s from memory, but I have tweaked it a bit to determine approximate measurements. I also love the memories evoked when I’m making it.   My GG’s tiny kitchen with the 50’s red speckled table and chairs (that goes for big $$$ now because it’s “vintage”)   Now that I typed that I realize I’m in that same category.  I loved setting on the counter watching her work her magic in that kitchen.   I absorbed a lot from watching her and can see in my mind the steps and ingredients she used.   I miss her everyday; especially in the Fall and Winter.

Scalloped potatoes and ham is such a good, warm comfort meal; and perfect for a Sunday family dinner or after a long day at work.  Add a nice fresh salad and dinner rolls or freshly baked bread and you have the perfect comfort meal.   This meal for 4 to six is a great and economical meal to feed your family coming in at approximately $20 - $25 for the entire meal.   You can skip the heavy cream (just use a bit more milk) and salad to save even more.   Enjoy! ~Cathy~

GREAT GRANDMA SMITH'S SCALLOPED POTATOES & HAM:

6-8 potatoes

(most any kind works with this recipe, but I like Yukon Gold)

2-3 lbs smoked ham either cubed, sliced or even shaved

1 or 2 sticks (personal choice) butter or margarine sliced (I use butter because -- butter)

Up to 3/4 cup (more or less) flour (use own judgment)

2 cups milk + 1 pint heavy whipping cream stirred in (optional)

Salt & pepper to taste

Peel and slice potatoes.  Lightly grease bottom of 9x13 pan.  Layer: potatoes, ham, some butter slices and sprinkle with flour & pour 1/3 of the milk over all and keep layering until all is in the pan ending with milk poured over all.

Cover and bake at 350 for 2 1/2 hours.  Last 20 minutes uncover and let "brown" on top.   You may want to bake on a foil lined cookie sheet for any spillovers.
