espite the world economic crisis – which we have all had our fill of by now – the lean times are over, never to return. Anyone who still believes we need to live on a diet of Ryvita and water for the sake of our health needs to think again. The motto for our era has to be: “Enjoy life to the full”. We certainly didn’t need much persuasion, and we have made Mediterranean cooking one of our main themes for the current edition. This ranges from the simple country fare of the Pitiusas right through to gourmet dining. That’s because ‘lifestyle medicine’ has a new goal: to stay healthy as we age and to retain our looks and fitness for as long as we can. And a key role in this is played by nutrition with a high pleasure factor. So eat yourself young and fit with IBIZA STYLE! The latest international research and statistics show that this is not a pipe dream.

In fact, these results demonstrate that culinary expertise at the highest level goes hand in hand with a long and happy life. And it gets even better: the healthiest foods tend to be the tastiest. That’s why so many doctors and nutritional scientists recommend the socalled Mediterranean diet, which says in essence, don’t starve yourself but eat your fill of fish and poultry, consume a varied diet of vegetable dishes and salads and enjoy it all with the odd glass of red wine. This regime will keep you not only slim while going easy on your arteries, but will also reduce the risk of having a heart attack or getting Alzheimer’s. “A good cook is half way to being a doctor,” wrote Andrew Boorde in his ‘Brevyary of Health’ published in 1547. I’ll drink to that, dear readers, and wish you all a pleasant Eastertide here on our islands, blessed with the fragrance of springtime blossoms and herbs.

an quedado atrás los tiempos de la frugalidad, a pesar de la tan traída y llevada crisis financiera. Todo aquél que crea que hay que limitarse a una dieta a pan y agua en aras de la salud, debe aprender algo aún mejor: «Disfrutar con todos los sentidos», reza el nuevo lema. Por nuestra parte, no lo hemos dudado ni un momento y hemos convertido el tema de la cocina mediterránea en uno de los aspectos centrales de este número.

Eso abarca desde la comida casera pitiusa más sencilla hasta un refinado menú para gourmets.

No en vano, la medicina orientada al estilo de vida tiene un nuevo objetivo: envejecer con salud y mantenerse atractivo y en forma durante el mayor tiempo posible. En este sentido, el disfrute con la comida desempeña un papel protagonista. ¡Póngase las botas y consérvese joven y en forma con IBIZA STYLE! Los estudios y estadísticas internacionales más recientes muestran que esto es posible y que no tiene nada de utópico. Resumiendo sus resultados, se puede poner de relieve: La gastronomía de alto nivel y una vida feliz y longeva son aspectos que van de la mano. Aún mejor: lo más saludable suele ser también lo más sabroso. Por ello, muchos médicos y nutricionistas difunden la llamada «dieta mediterránea», cuya quintaesencia se resume así: no pasar hambre, sino mimar el paladar con pescado y carne de ave, variadísimos platos de verduras y ensaladas y como acompañamiento un vasito de vino tinto de vez en cuando. Esta forma de alimentación no sólo ayuda a mantener la línea y cuida los vasos sanguíneos, sino que disminuye el riesgo de padecer un infarto o Alzheimer. «Un buen cocinero es como medio médico», leemos publicado allá por el año 1547 en el «Breviario de la salud» de Andrew Boorde. Me remito a esta sabia frase y le deseo, estimado lector, una placentera Semana Santa en nuestras islas privilegiadas, con su aire primaveral henchido del aroma de las hierbas.

ie kargen Zeiten sind – der bis zum Erbrechen wiedergekäuten Finanzkrise zum Trotz – vorbei. Wer meint, sich der Gesundheit zuliebe auf Knäckebrot und Wasser beschränken zu müssen, muss eines Besseren belehrt werden: „Genießen mit allen Sinnen“ lautet das neue Motto. Das ließen wir uns nicht zweimal sagen und machten das Thema mediterrane Küche zu einem der Schwerpunkte dieser Ausgabe. Das reicht von einfacher pitiusischer Hausmannskost bis hin zum Schlemmermenü. Denn die Lifestyle-Medizin hat ein neues Ziel: Gesund älter werden und dabei möglichst lange schön und fit bleiben. Die Hauptrolle spielt dabei eine Ernährung mit hohem Genussfaktor. Schlemmen Sie sich also mit IBIZA STYLE fit und jung! Dass dies möglich und beileibe kein Wunschdenken ist, zeigen neuste internationalen Studien und Statistiken.

Diese Ernährungsform hält nicht nur schlank und schont die Gefäße, sondern verringert sogar das Risiko, Herzinfarkt oder Alzheimer zu bekommen. „Ein guter Koch ist ein halber Arzt“, stand schon 1547 im „Brevier der Gesundheit“ von Andrew Boorde.

Dem schließe ich mich an und wünsche Ihnen, liebe Leser, genussreiche Ostertage auf unseren privilegierten Inseln mit ihrer vom Blütenduft der Inselkräuter überlagerten Frühjahrsluft.

During the daytime, the Juri G parasol keeps the sun off, but at night, it turns into a futuristic light installation. Designed by vertijet, this UFOlike shade contains an array of LEDs that is constantly changing colour. The effect is very soothing and makes for a pleasant evening’s reverie in the garden or on the patio. The parasol takes on the role of a sculpture that is permanently shifting in form. The technology also allows the user to select any preferred colour of the rainbow as the default. All the necessary transformers and controls are housed out of sight inside the Juri G. The base of the ‘UFO parasol’ consists of a plain star-shaped 17mm-thick steel plate.

FRESH BREEZES ALONG THE CATWALK Japanese star designer Issey Miyake and British vacuum cleaner tycoon James Dyson were drawn together by their shared philosophy and common approach to design matters.

Issey Miyake’s ‘Wind’ collection comprises outfits that have been inspired by Dyson’s blueprints. And in return, the casing of the manufacturer’s ‘Wind Machine’ reflects the grey and pink colours of Miyake’s ‘Dyson A-POC’ (A Piece Of Clothes) collection. James Dyson was invited by ISSEY MIYAKE to come up with a wind-powered stage for his show in Paris.

Fresh breezes blew all along the catwalk. The Dyson DC16 Issey Miyake is obtainable as a limited edition model.

PHOTO WHILE YOU PHONE Sony Ericsson has stunned its rivals by setting a new pixel record: the C905 takes pictures at a resolution of 8.1 Megapixels, thereby enabling photos from a mobile phone to be printed full-size or even cropped and enlarged. The camera has automatic focus to ensure that pictures are sharply defined while the Smart Contrast function balances brightness and colours. Face Detection automatically recognises when a person is in focus.

undis Zámbó is known to readers from German-speaking countries first and foremost for of the book she has written and, more immediately, as a contestant in ‘I’m a celebrity, get me out of here’. Shortly before the final, the good fairy of the jungle was voted out of the camp. Even though RTL viewers voted for someone else as jungle queen, we have to say that Gundis would have been a worthy monarch, a gracious ruler of the jungle.

After all she was easily the most normal of the contestants, the most honest and the most helpful – a view shared by one of Germany’s biggest-selling daily newspapers.

Before she went into the Australian outback, IBIZA & FORMENTERA STYLE met up with the charming television presenter at an idyllic location in ‘Arenal d’Or’ in the north-east of Ibiza near Aguas Blancas where she regularly spends her summer holidays.

Los Angeles for a while where she attended acting school. She started out as the presenter on the popular children’s television show ‘BimBam-Bino’ before creating her own show, ‘Style Lounge’, which is aired regionally in nearly all of Germany’s major cities. It is important to her that ‘Style Lounge’ is not about dictating to people how to look beautiful but showing them what good points they already have. She tries to bring out the real person and their individuality, as many people make the mistake of chasing an image that isn’t really them. This affects their emotional state and consequently the way they are perceived by others. So Gundis tries to rebalance her guests’ inner harmony, to increase their self-confidence and to help them find their own personality, by finding the style that is right for them.

La imagen desempeña un papel muy importante en la vida de Gundis. En su citado bestseller describe los trastornos alimenticios que padeció y cómo los combatió hasta superarlos.

«Mi propia historia me ha impulsado a reflexionar mucho sobre el tema y a alcanzar el conocimiento de lo que hace feliz a una persona en todos los aspectos. A fin de cuentas, mi objetivo era vivir mi propia vida al máximo en todas sus facetas, y mi trabajo forma parte de ella».

No descarta la idea de realizar dentro de poco un taller en Ibiza en torno a este tema (se dará a conocer a su debido tiempo en su página web www.gundiszambo.de). «Hay un motivo muy especial por el que realizaría un evento así precisamente en Ibiza. Ibiza es la isla mágica, un lugar capaz de hechizar, capaz de sacar lo mejor de las personas y llenar la vida diaria de autenticidad. Aquí uno puede encontrar su propia verdad si sabe abrirse a ese hechizo. Por eso, Ibiza es el lugar idóneo para empezar de cero y luego emprender a partir de ahí el viaje hacia un yo sano. Esto también es un requisito indispensable para las personas con trastornos alimenticios. Y no sólo eso, la isla mágica brinda muchas situaciones vitales que permiten que los afectados puedan volver a conocerse a sí mismos: ir a comer fuera o de compras, arre-

So engagiert sie sich auch beim FC Bayern München für den Frauenfußball – ihre Tochter spielt selbst in der Jugendmannschaft. „Der Frauenfußball muss noch viel mehr gefördert und propagiert werden, vor allem sollte die Femininität der Sportlerinnen mehr rüberkommen. Die Zeit der „wilden Emanzen“ im Frauenfußball ist vorbei“ kommentiert Gundis.

In einer ihrer „Style Lounge“-Sendungen zeigte sie diese „vorher – nachher“-Verwandlung am Beispiel der bekannten Fußballspielerin Bianca Eder, die erst beim Training im Trikot und danach mit toll frisierten Haaren und ihrem Typ entsprechend gestylt gezeigt wurde.

Das Aussehen spielt in Gundis Leben eine große Rolle. In ihrem bereits erwähnten Bestseller beschreibt sie, wie es bei ihr zu Essstörungen kam und wie sie diese bekämpft und sich geheilt hat. „Meine eigene Geschichte hat dazu beigetragen, mir ganz viele Gedanken darüber zu machen und zu der Erkenntnis zu gelangen, was einen Menschen ganzheitlich glücklich macht. I particularly want to do one in Ibiza. Ibiza is a magical island, an enchanted place. It focuses people’s minds, brings reality to the surface – somehow, here you can discover your own truth and find your way back to a really healthy you. That is the prerequisite for overcoming eating disorders too. And this magic island also offers many life situations that sufferers need to rediscover: from shopping and styling to naked bathing and being one with wind, water and nature. So many things that are important if you are to make a new start.”

Gundis has not merely overcome her eating disorder – today she enjoys both cooking and eating. She tell us with great gusto: “I love cooking with simply, basic ingredients. I particularly enjoy being in the kitchen of my apartment here in Ibiza, and making a sauce from a few fresh Island herbs, onions, sobresada – Ibicenco sausage – a couple of finely chopped tomatoes and of course masses of garlic and frying it all in olive oil in a frying pan. Throw in some pasta, salt and pepper and it’s ready.” She goes into raptures, “What tastes really good, too, is my avocado sauce. Olive oil, vinegar, salt, pepper, garlic, hot mustard and fig jam. Beat it all together until you have a thick vinaigrette and pour into the hollow of half an avocado and eat – it’s simply delicious!”

Before she leaves, we ask Gundis for her style tips for a holiday in Ibiza. “The right luggage for Ibiza is: a pair of mules or flip-flops, three or four sarongs, a hippy dress and necklaces plus a healthy lust for life. That’s it – that’s all a woman needs.” 

Gundis no sólo ha superado sus trastornos alimenticios, hoy en día cocina y disfruta de la comida. Llena de entusiasmo, nos revela: «Me gusta cocinar con ingredientes autóctonos y sencillos. Aquí en Ibiza me divierte ponerme a hacer en la cocina de mi apartamento una salsa con un par de hierbas frescas de la isla, cebolla, la sobrasada típica ibicenca, un par de tomates picados muy finos y mucho ajo, todo ello sofrito en la sartén con aceite de oliva. Encima le echo pasta, un poco de sal y pimienta y... ¡listo!». Después se deja llevar completamente por el entusiasmo: «Algo que también está delicioso es mi aguacate con salsa. Aceite de oliva, vinagre, sal, pimienta, ajo, mostaza picante y... mermelada de higos. Hay que removerlo hasta que se forme una vinagreta espesa y rellenar después con ella el hueco de medio aguacate. Luego, comerlo con cuchara... ¡toda una delicia!»

Por último, le pedimos a Gundis un consejo para unas vacaciones en Ibiza: «El equipaje ideal para Ibiza es: un par de sandalias, tres o cuatro pareos, un traje hippy, collares, la dosis adecuada de ganas de vivir y... bueno, nada más: si se tiene eso, no se echará nada en falta». 

Ibiza ist die magische Insel, eine Zauberinsel. Sie bringt Menschen auf den Punkt, bringt die Authenzität an den Tag – man findet hier zu seiner eigenen Wahrheit, wenn man sich darauf einlässt. Daher ist Ibiza der richtige Ort, um zur Basis Null zurückzufinden, und dann von dort aus die Reise zu einem gesunden Ich anzutreten. Auch für Essgestörte ist das die Voraussetzung für Heilung. Und: die magische Insel bietet viele Lebenssituationen, die es für Betroffene gilt, für sich selbst neu erleben zu lernen: von Essengehen über Shoppen und Stylen bis zum Nacktbaden und eins sein mit Wind, Wasser und Natur. Einfach vieles, was wichtig ist, um einen neuen Weg zu gehen.“ Ihre Essstörungen hat Gundis nicht nur überwunden – heute kocht und genießt sie auch gerne. Mit großer Begeisterung verrät sie uns: „Ich koche gern mit einfachen, bodenständigen Zutaten. Gerade hier auf Ibiza macht’s mir Spaß in der Küche meines Apartments zu stehen und mit ein paar frischen Kräutern von der Insel, Zwiebeln, mit der typischen ibizenkischen Wurst Sobresada, ein paar klein geschnittenen Tomaten und viel Knoblauch – alles zusammen in der Pfanne in Olivenöl angebraten – eine Soße zu machen. Nudeln drauf, ein bisschen Salz und Pfeffer dran – und fertig.“ Sie gerät richtig ins Schwärmen: „Was auch so toll schmeckt ist meine Avocadosoße. Olivenöl, Essig, Salz, Pfeffer, Knoblauch, scharfer Senf und – Feigenmarmelade.

Das solange schlagen, bis eine dickflüssige Vinaigrette daraus entsteht und diese in die Aushöhlung einer halben Avocado füllen und auslöffeln – einfach köstlich!“ Wir fragten Gundis abschließend noch nach ihrem Stylingtipp für einen Urlaub auf Ibiza. „Das richtige Gepäck für Ibiza ist: ein paar Schlappen oder Flip-Flops, drei bis vier Pareos, ein Hippiekleid, Kettchen, die richtige Portion Lebenslust – das war’s schon – mehr braucht frau nicht.“ 

ebeca Ramis Planells’ delicate build, fine blond hair and somewhat shy smile remind one of some elfin being. “Even as a child, I was interested in fashion,” she explains, “but I also loved dance and theatre.”

Does she feel that the job of a fashion designer is valued highly enough? She hesitates briefly before she answers: “I think that young designers in Ibiza don’t get enough support.”

“I am inspired by the openness of the people who live here, the mixture of cultures and the distinctive spirit that pervades the Island,” the 24-year-old says decisively. In the future, Rebeca would prefer to run

Rebeca preferiría ser en el futuro la jefa de su propia empresa, pero si quiere adquirir experiencia su única opción es trabajar para otros. Siente un gran aprecio por Moda Adlib, pero en su opinión debe desarrollarse aún más. Los trajes regionales ibicencos le sirven de inspiración para sus creaciones, que

Sie antwortet nach kurzem Zögern: „Ich denke, dass junge Designer in Ibiza zu wenig unterstützt werden.“ „Mich inspiriert die Offenheit der hier lebenden Menschen, die Mischung der Kulturen und dieser besondere Geist, von dem die Insel beseelt ist“, sagt die 24-jährige entschlossen.

Lieber würde Rebeca in Zukunft Chefin ihrer eigenen Firma sein, doch käme man nicht umhin, auch für andere zu arbeiten, um Routine zu erlangen. Die Adlib Mode schätze sie sehr, doch ist sie der Ansicht, dass sie weiter

her own business, but she accepts there is no alternative to working for other people in order to gain experience. She loves Adlib fashion, but she feels that it needs to be developed further.

Traditional Ibicenco costumes give her the inspiration for her designs, and she would always look towards the Adlib fashion style because, after all, the first Adlib fashion designers used peasant costumes as their inspiration.

The former pupil of the Escola d´Arts unveiled her collection at the Pasarela de Jovenes Diseñadores on the 10th January. Inspired by African culture and entitled ‘Un sueño de Africa’, it won first prize in the competition. How would she define this collection herself?

“The continent of Africa is the birthplace of mankind, and its different ethnic groups offer an infinite number of ideas for patterns and colour.

In my collection, I have combined western styles with African patterns, such as ethnic symbols and animal figures, in vibrant colours. They stand as a symbol of togetherness and solidarity. With my designs, which are geared towards the confident, intelligent middle to upper class woman, I wanted to pay homage to the continent.” Will she stay on the Island, or move to a major city where there are more opportunities?

“I am very aware that one must leave the Island and travel in order to collect new ideas, but I would much rather stay here, after all I am a child of the sea,” she says with a twinkle in her eye. 

La colección que presentó la antigua alumna de la Escola d´Arts el pasado 10 de enero en la “Pasarela de jóvenes diseñadores” y con la cual obtuvo el primer premio del certamen lleva el título “Un sueño de África” y está inspirada en la cultura del continente africano. ¿Cómo definiría su colección? “África es el continente del que proviene la humanidad, y sus diversos grupos étnicos ofrecen una inagotable fuente de ideas para patrones y colores. En mi colección he combinado cortes occidentales con elementos africanos, como símbolos étnicos o figuras de animales en colores vivos. Representan un símbolo de unión y solidaridad. Con mis modelos, concebidos para mujeres de clase media a alta inteligentes y seguras de sí mismas, quiero rendir un homenaje al continente”. ¿Seguirá siendo fiel a la isla o se trasladará a una metrópolis para tener más oportunidades? “Soy consciente de que se debe salir de la isla y viajar para acumular nuevas experiencias, pero me gustaría muchísimo quedarme aquí; a fin de cuentas, soy hija del mar”, dice con un guiño. 

Wie definiert sie selbst diese Kollektion? „Afrika ist ein Kontinent, von dem die Menschheit stammt und die unterschiedlichen ethnischen Gruppen bieten unendlich viele Ideen für Muster und Farben. Ich habe in meiner Kollektion westliche Schnitte mit afrikanischen Mustern, wie ethnische Symbole und Tiergestalten in lebhaften Farben kombiniert. Sie stehen als Symbol für Zusammengehörigkeit und Solidarität. Mit meinen Modellen, die für eine selbstbewusste, intelligente Frau der Mittel- bis gehobenen Klasse bestimmt sind, möchte ich dem Kontinent eine Hommage bieten.“ Ob sie wohl der Insel treu bleiben, oder in eine Metropole ziehen wird, um dort mehr Chancen zu haben? „Ich bin mir dessen bewusst, dass man die Insel verlassen und reisen muss, um andere Eindrücke zu sammeln, doch würde ich liebend gern hier bleiben, schließlich bin ich ein Kind des Meeres“, sagt sie augenzwinkernd. 

an Andy Warhol, butter cookies, neohippy elements, jeans, amazing T-shirt designs, organic cotton and plastic all come together under one roof? The answer is “yes”! The result is no more and no less than ‘Bread and Butter’, the most important international fashion trade fair for street and urban wear, which took place in Barcelona in January.

Next time, the trade fair will be held in Berlin once again. After three years in the Catalan capital, it is bidding farewell to Spain following impressive results. The majority of exhibitors are looking forward to the move back to Germany. Including Maribel Dagà. She is a representative of the wholesale company Osaka 62 which works in Spain with the British fashion label Superdry (obtainable here in Ibiza, at Frontline and Jet Set), and for whom a trade fair such as B&B is, in their own words, “necessary”.

Visiting Bread & Butter, the trade fair that even aimed to oust the Pasarela Gaudí (Bridal Week) in Barcelona, is an experience in itself. Thousands of people in the trade gathered in the enormous halls together with hundreds of ex-

La feria, que retornará a Berlín después de tres años teniendo su sede en la capital catalana, se despide de España con Buenos resultados. Los expositores estan encantados por el retorno a Alemania. At this latest B&B event, even people outside the industry noticed that a large proportion of the brands that were exhibiting were copies – and this at the expense of the work of creative designers. But market demand is what counts and here the Catalan fashion label Custo is a clear winner. Doing a tour of the trade fair halls, it was clear that there were only a few that dared – in comparison to this label with its inimitable, unique printed designer T shirts – to offer anything similar. It is undeniable that the fashion label has now achieved cult status – something

Auf dieser letzten Veranstaltung von B&B fällt sogar dem Laien auf, dass ein großer Teil der ausgestellten Marken kopiert wird - und das auf Kosten der Arbeit kreativer Designern. Aber die Nachfrage auf dem Markt ist das, was zählt und hierbei ist das katalanische Modelabel Custo eindeutiger Gewinner. Bei einem Rundgang durch die Messehallen zeigt sich, dass es nur wenige gibt, die es wagen - im Vergleich zu diesem Label mit seinen unnachahmlich einzigartig bedruckten Designer-T-Shirts - etwas Vergleichbares anzubieten. All in all, however, it is a remarkable experience: B&B offers a colourful and joyful vision of what we will find in the shops in the coming winter.

B&B has always been first and foremost a meeting place for the professionals. Here, you never find frail-looking models with long legs hobbling around the stands. Even the glamour of the catwalk has never found its way in here.

No, and there aren’t even any VIPs, with the exception of Pedrosa, the Catalan motorcycle racer, who probably got sick of having to sign autographs. What takes precedence are meetings, negotiations and deals in a sector where it seems that the exhibitor with the beststocked bar is the most successful, and where presents change hands such as a Levi’s belt or earrings by Who’s that Girl. The Germans and Italians are masters at this. Bread and butter still manages to find plenty of takers – despite objections from nutritionists – and in this respect, many more B&B trade fairs are necessary so that fashion for street and urban wear remains on the agenda. 

Auch der Glamour der Laufstege hat nie Einzug gehalten. Nein, es gibt nicht einmal Promis, mit der Ausnahme des katalanischen Motorradrennfahrers Pedrosa, der es sicher satt hat, Autogramme schreiben zu müssen. Was Vorrang hat, sind Sitzungen, Verhandlungen und Vereinbarungen in einer Branche, die den Anschein erweckt, dass die Aussteller mit der größten Bar am erfolgreichsten sind und wo Geschenke in Form von Gürteln, wie die von Levi's, oder Ohrringen á la „Who's that Girl“ den Besitzer wechseln. Darin sind die Deutschen und Italiener Meister. Brot und Butter findet weiterhin trotz Einwänden von Seiten der Ernährungsberater besten Absatz und in dieser Hinsicht sind noch viele B&B-Messen mehr notwendig, damit die StreetwearMode weiterhin in aller Munde bleibt. 

he evening was a hit! A completely new integrated media concept has been opened to the public in Barcelona. For the first time, the ‘Gran Escuela de Baile - Santiago Rivera’ brings together three different activities in a modern 900sqm studio in the heart of L’Hospitalet. The building houses a modern dance and casting studio, a TV and film production company and also a new creative workshop for unusual events. Santiago Rivera, head of the dance studio explains, “We are the only studio in Spain that teaches over 30 types of dance (including ballet, samba, flamenco and hip-hop) as well as drama, singing, yoga and even circus skills. A fitness studio completes the package. We have 20 professional artists on hand to teach our clients of all ages, and in future, casting calls for TV productions and films will be held here as well.” Santiago Rivera studied dance at leading academies in Barcelona, Berlin and Hamburg, he toured Europe as a flamenco dancer with stars such as the Gipsy Kings, and now is delighted to pass on what he has learned to his pupils. “Dance is my life, and I want to pass on the benefit of my experience, and the happiness that dance brings to me, to others,” he adds. Las instalaciones son al mismo tiempo un moderno estudio de baile y castings, una productora de cine y TV y una nueva forja creativa de eventos fuera de serie. El jefe del estudio, Santiago Rivera, explica: «Somos el único estudio de España en el que se imparten clases de más de 30 estilos de baile (entre otros, ballett, samba, flamenco, hip-hop), así como teatro, canto, yoga e incluso el arte del circo. Es la decimo cuarta edición del Memorial David Booth, un campeonato de baloncesto que este año sucederá desde el 8 y hasta el 11 de abril en los polideportivos de Blancadona, Sant Antoni, Can Guerxo y en las pistas exteriores de Es Raspallar. El sistema de competición se divide en cadete e infantil.

Theme nights draped in good music is the philosophy behind the monthly Rock Nights parties held in the latest place-to-be, Somni, on the Figueretas beach front. Marcos Torres, Daisy Heartbreaker and Diego Calvo are the team behind the events and while the theme for April's date hadn't been confirmed at time of going to press, we've no doubt the multi media extravaganza and guest DJ Colin Peters will take our fancy dressed feet straight to the dancefloor.

Coincidentally the feast day of Sant Jordi; its habitants will especially be pulling out the stops. Don't forget your red rose!

El 23 de abril se celebra el Día Internacional del Libro, una fecha no elegida al azar, sino que coincide con la muerte de dos escritores internacionales como Cervantes y Shakespeare.

Por ello, todos los municipios de Ibiza disfrutan de los puestos de libros en sus plazas. Además, coincide con el día de Sant Jordi, con lo que la localidad del municipio de Sant Josep se viste de gala para celebrar su patrón. No olvides que es costumbre regalar una rosa.

The Ayuntamiento of Ibiza's theatrical tours of the Old Town have been so successful that they have extended their run until the end of March.

Within the walls of the historic city, a group of local actors tell the story of Pere, Elisabeth and their undying love, set in the 16th century and on a stage of world heritage ambience. Due to demand, visitors must register at the Consistorio, by calling the number above.

La iniciativa ha tenido tanto éxito que el Ayuntamiento de Ibiza ha decidido ampliar las visitas teatrales guiadas también durante el mes de marzo. Tres actores representan por la ciudad amurallada una obra teatral ambientada en el siglo XVI, donde los enamorados Pere y Elisabeth dan a conocer sus amores y desamores en un entorno emblemático como es Dalt Vila.

Anthony Blake Una noche de ilusiones en San Carlos

thereal music plays, a spotlight focuses on the side entrance and suddenly Anthony Blake stands before us, a tall figure with a shock of silver-grey hair. The illusionist and mind reader, who also owns a property in San Carlos, usually performs in big shows and on TV around the world, but this evening, because of his close ties to this village, he is staging a spectacular as part of the local fiesta.

Blake assures his audience that everything they will see in the next one and a half hours has absolutely nothing to do with supernatural powers, but depends solely on their concentration.

“Where is Nuria from the dance group from Andorra?” Blake calls into the audience.

Nuria makes herself known and comes up on stage with another member of the audience.

Blake asks them both to think of an historical figure. “Now I want you to picture each individual letter of this person’s name,” he instructs them both. He concentrates and writes something down on a pad of paper.

After a few minutes, he shows them his answers: Lola Flores and Salvador Dalí. Nuria and companion smile with embarrassment and leave the stage. Blake has correctly guessed the two people that they were thinking of. The audience applauds wildly.

In another act, the illusionist’s eyes are covered with black sticky tape and two scarves.

úsica de las esferas, un foco apunta a la entrada de la carpa y allí lo tenemos ya ante nosotros, cabellera gris plata, figura imponente: Anthony Blake. El ilusionista y mentalista que, entre otras cosas, posee una residencia en San Carlos y actúa por todo el mundo en grandes espectáculos y en la televisión, ofrece esta velada un espectáculo expresamente con motivo de la fiesta local, dada su estrecha vinculación con esta localidad.

Blake asegura que todo lo que van a contemplar los espectadores durante la próxima hora y media no tiene absolutamente nada que ver con fuerzas sobrenaturales, sino que depende exclusivamente de la concentración del público. "¿Dónde está Nuria, la del grupo de baile de Andorra?", pregunta Blake al público. Nuria se presenta y sube al escenario junto con otro espectador. Blake les pide a los dos que se representen mentalmente a un personaje histórico. "Ahora me gustaría pediros que os representéis mentalmente cada una de las letras del nombre de esta persona", solicita Blake a ambos. Después se concentra y escribe algo en un bloc. Tras unos minutos, muestra su resultado: Lola Flores y Salvador Dalí. Nuria y el espectador sonríen avergonzados y abandonan el escenario. Así es: Blake ha adivinado los personajes en los que estaban pensando. El público aplaude entusiasmado.

Der Illusionist und Mentalist, der unter anderem einen Wohnsitz in San Carlos hat und sonst weltweit in großen Shows und im Fernsehen auftritt, bietet an diesem Abend aus enger Verbundenheit mit diesem Dorf eigens ein Spektakel anlässlich der lokalen Fiesta.

Blake versichert, dass all das, was die Zuschauer in den nächsten eineinhalb Stunden zu sehen bekommen werden, nicht das Geringste mit übernatürlichen Kräften zu tun hat, sondern allein von der Konzentration des Publikums abhängt.

"Wo ist Nuria von der Tanzgruppe aus Andorra?", fragt Blake ins Publikum. Nuria meldet sich und betritt zusammen mit einem weiteren Zuschauer die Bühne. Blake bittet die beiden, sich gedanklich eine historische Figur vorzustellen. "Nun möchte ich euch bitten, euch jeden einzelnen Buchstaben des Namens dieser Person vorzustellen", fordert Blake die beiden auf. Er konzentriert sich und schreibt etwas auf einen Block. Nach wenigen Minuten zeigt er ihnen sein Ergebnis: Lola Flores und Salvador Dalí. Nuria und der Zuschauer lächeln verlegen und verlassen die Bühne. Denn Blake hat die beiden Personen erraten, die sie sich vorgestellt hatten. Das Publikum applaudiert begeistert.

from members of the audience. First of all, she holds up a red velvet bag in front of his eyes. Blake begins to click his fingers agitatedly; it is absolutely impossible for him to see anything through his blindfolds. “Umm, it’s made of material, a kind of bag,” he says, “the colour, the colour is... red.” Tumultuous applause. While still blindfolded he also correctly identifies the next items; a tin of Nivea cream and a key card from Hotel Salto, and even gets the name of the cream and hotel right. Are these extensively rehearsed tricks or has this person access to knowledge denied to mere mortals?

At the point in his act where two young girls get up on stage and Blake asks them to gently knock on the table at the same time as him, some of the audience may have started to feel genuinely uneasy as the table begins to float, apparently suspended by ghostly hands. As the table then crashes back to the ground again, Blake raises his hand in farewell and disappears as suddenly as only a conjuror can.

It is rather like being part of a fantasy tale. As Blake himself explains, however, your susceptibility to this type of fiction depends entirely on your imagination. And he stresses that it is the power of the imagination alone that can help people to save the world from destruction. 

Más tarde, cuando salen dos chicas al escenario y Blake les pide que empiecen a golpear con él levemente el tablero de una mesita, a más de uno le entra un escalofrío al ver cómo la mesa comienza a flotar como por arte de magia.

Cuando la mesa vuelve a quedar en el suelo, Blake eleva la mano en señal de despedida y desaparece con la rapidez con que sólo un mago sabe hacerlo.

Es como un cuento de hadas. Sin embargo, si seguimos teniendo sensores para este tipo de cuentos de hadas, según Blake esto depende exclusivamente del poder de nuestra imaginación, y es precisamente la gran fuerza de esta imaginación, insiste, la que puede ayudar a los seres humanos a impedir la extinción del mundo. 

Auch die nächsten Gegenstände, ein Niveacremedöschen und die Zimmer-Chipkarte des Hotels Salto erkennt er blind und nennt dabei sogar die Namen Nivea und Salto. Handelt es sich um lange einstudierte Tricks oder hat dieser Mensch Zugang zu einem Wissen, das für Normalsterbliche nicht abrufbar ist?

Spätestens als zwei jüngere Mädchen die Bühne betreten und Blake sie bittet, mit ihm zusammen sacht auf die Platte eines Tischchens zu klopfen, mag es manchem mulmig geworden sein, denn der Tisch beginnt wie von Geisterhand zu schweben. Als der Tisch wieder auf dem Boden aufschlägt, hebt Blake die Hände zum Abschiedsgruß und verschwindet so rasch, wie eben ein Zauberkünstler verschwinden muss.

Es ist wie in einem Märchen. Doch, ob man für diese Art von Märchen noch Sensoren hat, dies hängt, wie Blake meint, allein von unserer Vorstellungskraft ab. Und allein diese Vorstellungskraft ist es, so betont er, die dem Menschen dazu verhelfen kann, die Welt vor ihrem Untergang zu bewahren. 

post war Japan and a nuclear holocaust on Hiroshima and Nagasaki unleashed the wrath from the zen of master Kazuo Ohno, who today, at the age of 102, leaves it to his selected to impart the beauty of the powerful legacy he created; the Ankoku Butô or Butoh Dance.

Butoh is a dance towards the dark and a constant challenge of the conventional. An art form that today sees Midoh Omura in Ibiza as an ambassador, 50 years on from its conception.

On stage, Omura’s movements assume a notion of time distanced from reality. The seconds are transformed into hours and the story of the dance is primarily a mental one.

It is a meditated, internal fight that searches for the sky but struggles in the underground.

It is the maximum expression of the war, “our war”, the purest staging of pain and repulsion that, accompanied by the melodies of the French experimental musician, Lena Circus, leads us to our destination: Hope. “It

l Japón de posguerra y el holocausto nuclear sobre Hiroshima y Nagasaki provocaron la ira contenida en zen del maestro Kazuo Ohno que hoy, con 102 años, deja el poderoso legado creado, la danza Ankoku Butô o Butoh, a sus seleccionados pupilos.

El Butoh es el baile hacia la oscuridad y un desafío constante de lo convencional. Una forma de arte que hoy tiene a Midoh Omura como embajador en un momento en el que se cumplen 50 años de su nacimiento.

En el escenario, sus movimientos adquieren una noción del tiempo muy diferente a la realidad. Los segundos se transforman en horas y en el espacio el avance es básicamente mental. Es una lucha meditada e interna que busca el cielo pero se debate en el underground.

Es la máxima expresión de la guerra, “la nuestra”, la escenificación más pura del dolor y el sentimiento de repulsa que, conducido por la melodía del músico experimental francés,

Butoh ist der Tanz der Finsternis und eine ständige Herausforderung herkömmlicher Sichtweise. Der fünfzigjährige Midoh Omura ist Botschafter dieser besonderen Kunstform.

Auf der Bühne folgen seine Bewegungen einem anderen Zeitbegriff, der sich stark von der Realität unterscheidet. Die Sekunden werden zu Stunden und der Vorstoß in den Raum spielt sich hauptsächlich auf einer geistigen Ebene ab.

Es ist ein meditativer und innerer Kampf, der den Himmel sucht, sich aber im Untergrund abspielt. Es ist die beste Versinnbildlichung von Krieg - „unserer“ Inszenierung tiefsten Schmerzes - sowie dem Gefühl der Abweisung, begleitet von experimenteller Musik der französischen Gruppe Lena Circus „Es ist schwer zu leben

In Omura’s Butoh, the final destiny of his underground is a metamorphosis into beauty.

A sober and subtle beauty that does not need to shout to awaken our senses. “Underground can be transformed into something as beautiful as a flower, that too began its own transformation under the earth.”

Lena and her music “help us to understand the movements of Omura, leading him to his higher state”. The improvisation of the Frenchwoman carries the spectator through the phases of the theatrical uneasiness of the dance until it, and we, reach the light, but not before accepting reality.

En el Butoh de Omura, este destino final de la carga underground lleva a la belleza. Una belleza sobria y sutil que no necesita gritar para abarcar nuestros sentidos. “Lo underground puede transformarse en algo tan hermoso como una flor, aunque haya tenido que estar antes bajo tierra”.

La música de Lena “ayuda a comprender los movimientos de Omura, conduciéndole hasta un próximo estado”. La improvisación del francés no hace más que determinar las fases del desasosiego teatral de la danza hasta alcanzar la luz, aprendiendo primero a aceptar la realidad.

Midoh Omura y Lena Circus actuaron en Ibiza el pasado mes de febrero, en el marco de de las actividades programadas durante la segunda edición de la Semana Japonesa. Performance imprescindible. 

Die Improvisation der französischen Gruppe dient lediglich dazu, die Phasen zu umreißen, die auf dem Wege der dramatischen Entfaltung des Tanzes bis zum Erreichen des Lichtes durchlaufen werden - mit der Botschaft, erst einmal die Realität akzeptieren zu lernen.

It’s a steady stream of international information that flows from the mouth of Juan Medrano, a man whose voice is steady, whose gestures are strong and direct, a man whose heart beats with enthusiasm for his innumerous projects.

His fervor for the world tour he is organising is obvious to see; his conviction no doubt the very key to bringing his numerous events, amongst them the already well-established brands ‘Divas on Decks’, ‘Sexy&Fetish’, ‘Disco Erotique’ and ‘Only in Ibiza’, around the globe over the course of 2009.

His events and the eternal evolution of the same have brought him right to where he sits today, wise in the knowledge that everything must change and for the better. One of the elders of the Balearic phenomena, he has continually updated his goals and dreams, adapting to the trends and always keeping a step ahead of them. But his original essence remains throughout, fired by an insatiable mind and a creativity that excels through true love of his art ‘I’m constantly coming up with new ideas and brands. ‘Balearic People’ was an idea I created as a nightclub concept in 2001, and one which worked from the beginning. However, I feel that in order to keep true to that original ibiza feeling, as far as my own productions are concerned, everything must evolve,’ explains Medrano, adamant that success can only come as long as he is enjoying what he does, and doing it at his own pace.

That security and confidence in itself is a result of his long career, combined with the advantages that come with maturity and family.

“When I saw my daughter being born, I suddenly became aware that I was living life way too fast and it no longer made any sense. Quite simply, from that moment on, I adopted another philosophy to my work, one which to this day I can say was very positive.

Juan Medrano es el padre del estado ‘Balearic’. Estado más que concepto que ha conseguido por encima de todo traspasar la barrera ibicenca, adaptarse a los tiempos y cambios de tendencias y mantenerse en la esencia de sus pequeñas criaturas con las que hoy pasea por el mundo. Son fruto de una mente incansable y ante todo muy creativa que funciona por verdadero amor al arte.

“Estoy continuamente proponiendo nuevos conceptos. Balearic People lo cree en 2001 y se convirtió en una marca bien desarrollada que funcionó a la perfección desde sus inicios. Sin embargo, y siendo todavía fiel a la idea de exportar su esencia, necesito avanzar constantemente en el campo de la producción”, explica Medrano. Aunque no a cualquier precio, aclara, “sólo es posible disfrutando del trabajo y a mi ritmo”.

Un privilegio del que hoy goza y achaca a una veintena de años de profesión, la madurez y su familia. “Cuando vi nacer a mi hija me di cuenta de que mi ritmo de vida acelerado no tenía ningún sentido. Simplemente me plantee otra filosofía de trabajo y hoy tengo que decir que ha sido un cambio muy positivo en mi vida”.

Pero Juan Medrano es insaciable e incapaz

Jedoch und obwohl ich meiner Idee, das eigentliche Konzept zu exportieren, immer treu geblieben bin, muss ich mich ständig auf dem Gebiet der Produktion weiterentwickeln“, erklärt Medrano. Aber das nicht um jeden Preis. „Es ist für mich nur möglich die Arbeit in meinem mir eigenen Tempo zu genießen.“ Ein Privileg, das er der Erfahrung seiner zwanzigjährigen Karriere und seiner Familie zu verdanken hat. „Als ich die Geburt meiner Tochter miterleben durfte, wurde mir klar, dass mein schneller Lebensrhythmus keinen Sinn macht.

wind of ideas and seems unable to apply the brakes of the gigantic production machine he has inside his head. His latest offering to the nightlife world is called ‘Club Japan’,an idea born from the tight relationship formed many years ago between Juan and Hideaki Fujino, a Japanese journalist, creator of the music magazine ‘Love Pa’ and a big fan of Ibiza. Meanwhile, Kaz and Misa form the backbone of management of the project itself. The aim of ‘Club Japan’ is to ‘export technology, innovation and the traditional Japanese culture with an electronic backdrop.

“Geisha Girls in traditional make up with hairdos to match, enormous dragon tattoos, hot pants and heels; sumo wrestlers, samurai warriors… striking visuals, lots of manga and avant-garde electronic house music.”

Club Japan is a manifestation of the traditional values of the eastern country’s cities like Kyoto combined with the contemporary lifestyle and modern technology of places like Tokyo or Osaka. The main objective of the project is to transport that fusion around the globe.

And although Medrano’s has not unleased his production skills on the island since he brought Carlinhos Brown to Ibiza back in 2006, it’s looking more than likely that Club Japan will be stopping off for a few dates during its world tour. Until then however, his whirlwind of Japanese wonder meets Balearica is on its way to Romania, Brasov, Constanza, Bucharest, Beirut, Qatar, Wellington and New Zealand, Melburne, Sydney, Singapore and Cadiz. El objetivo de Club Japan es “exportar la tecnología, el vanguardismo y la cultura tradicional japonesa en un ambiente electrónico. “Performers vestidas de geishas con peinado clásico y maquillaje tradicional en contraste con unos apretadísimos shorts, high hills y un enorme dragón tatuado; luchadores de sumo, samuráis… visuales impactantes, mucho manga, house electrónico avanzado…”. Club Japan representa la inspiración del Japón tradicional de ciudades como Kioto y la modernidad y tecnología de maravillosas urbes como Tokio u Osaka y su objetivo es ponerlo en marcha por todo el mundo.

Aunque Medrano no ha vuelto a descargar su imaginación en Ibiza desde la producción del exitoso concierto de Carlinhos Brown en 2006, es probable que ‘Club Japan’ incluya fechas en la isla durante su tour mundial.

Mientras tanto, que disfruten las noches de Rumanía, Brasov, Constanza, Bucarest, Beirut, Qatar, Nueva Zelanda, Wellington, Melbourne, Sydney, Singapur y Cádiz del producto baleárico. 

Es hat natürlich zum Ziel, dass Spektakel in der ganzen Welt präsentieren zu können.

Obwohl Medrano seit seiner erfolgreichen Konzertproduktion für Carlinhos Brown im Jahr 2006 sein Können in Ibiza nicht mehr unter Beweis stellen konnte, ist es wahrscheinlich, dass „Club Japan“ einige Shows auch auf der Insel während der Welttournee zeigen wird. he new town hall in Sant Juan opened in September of last year. The ground floor houses the council chamber, where the councillors meet roughly every three months for their meetings which are open to the public.

Reception and the archives, with all records of births, deaths and marriages, are also situated on the ground floor.

The administration offices on the first floor have been designed as a kind of open-plan office with glass partitions. These accommodate the local council offices, the secretariat for building and construction and the finance department as well as a conference room and mayoral suite. A few of the ten offices in total, all of which are equipped with modern computer work stations, are not yet completed. The second floor of the building – infused with light from its many glass bricks, light shafts and wide windows – houses the office of the Mayor, Antonio Marí Marí (Carraca). The construction of this modern building, with a floor area of approximately 1,000 square metres, cost in the region of 1.5 million euros. Room has also been found in the new town hall for the local police station.

The old town hall, in the heart of the village, will now be used for concerts, sports courses and cultural events. There is also a plan to turn the former reception into a tourist office and the council chambers into a community room for senior citizens. In addition, after a few alterations have been made to the upper floor, a library will be accommodated there. 

n septiembre del año pasado ha abierto sus puertas el nuevo Ayuntamiento de San Juan. En la planta baja está la Sala Plenaria, donde el pleno municipal celebra aproximadamente cada tres meses sus reuniones abiertas al público.

Allí está también la recepción y el archivo con todos los datos sobre nacimientos, divorcios y decesos.

Las dependencias administrativas del primer piso están diseñadas en forma de oficina colectiva con compartimentos acristalados abiertos por arriba. Aquí se encuentran, además del Secretariado del Consejo Municipal, el Secretariado de Urbanismo y el Departamento de Contabilidad, así como una sala de conferencias y el Secretariado del Alcalde. Del total de 10 oficinas, todas equipadas con modernos PC, algunas aún no están terminadas. La oficina del alcalde Antonio Marí Marí (Carraca) se encuentra en el segundo piso de este edificio caracterizado por numerosos componentes de cristal, pozos de luz y amplios frontales de ventanas. La construcción de este moderno edificio, con una superficie aproximada de 1000 m², ha costado en torno a un millón y medio de euros. El nuevo Ayuntamiento también alberga la Jefatura de la Policía Local.

El antiguo Ayuntamiento, situado en el centro urbano, se utilizará a partir de ahora para conciertos, cursos deportivos y eventos culturales.

Además se ha planeado transformar la antigua recepción en una oficina de turismo y la Sala Plenaria en una sala común destinada a personas mayores. Tras algunas labores de remodelación en el piso superior, en el futuro debe crearse aquí una biblioteca. 

eit September vergangenen Jahres hat das neue Rathaus in Sant Juan seine Pforten geöffnet. Im Erdgeschoß befindet sich der Plenarsaal, in dem das Plenum etwa alle drei Monate zu den für das Publikum offenen Versammlungen zusammentritt.

Hier sind außerdem die Rezeption sowie das Archiv mit sämtlichen Daten zu Geburten, Eheschließungen und Todesfällen zu finden.

Die Verwaltungsräume der ersten Etage sind in der Art eines Großraumbüros mit nach oben offenen, verglasten Separés gestaltet. Hier sind neben dem Sekretariat des Gemeinderats, dem Sekretariat für Bauangelegenheiten und der Abteilung zur Rechnungserstellung auch ein Konferenzsaal und das Sekretariat des Bürgermeisters untergebracht. Einige der insgesamt zehn Büros, die alle über moderne PC´s verfügen, sind noch nicht fertiggestellt. Das Büro des Bürgermeisters Antonio Marí Marí (Carraca) liegt in der zweiten Etage des durch zahlreiche Glasbausteine, Lichtschächte und breite Fensterfronten Licht durchfluteten Gebäudes. Der Bau des modernen Gebäudes mit einer Fläche von ungefähr 1000 qm hat rund 1,5 Millionen Euro gekostet. Auch das Präsidium der Policia Local ist im neuen Rathaus untergebracht.

Das alte Rathaus im Ortskern wird nun für Konzerte, Sportkurse und kulturelle Veranstaltungen genutzt. Es ist außerdem geplant, die ehemalige Rezeption in ein Tourismusbüro und den Plenarsaal in einen Gemeinschaftsraum für Senioren umzuwandeln. Nach einigen Umbauarbeiten in der oberen Etage soll hier außerdem künftig eine Bibliothek untergebracht werden. 

he D.U.O. animal rescue association was founded in Ibiza in the year 1993. Until 1999, it was based on a rented plot of land in Es Caliu, but when a buyer made an attractive offer for the property, the lease was terminated and the rescue centre had to move.

Since then, the full complement of between 80 and 90 abandoned dogs has been accommodated in twelve reasonably sized compounds near to the Hippodrom at San Rafael on a finca belonging to Christiane Michel, one of the association’s founding members. "We are not supported by any other official organisation, either Spanish or German, in the work that we do, and we rely totally on private donations to keep our heads above water,” stresses Christiane.

D.U.O. finds new masters and mistresses for dogs that need to be re-homed for a variety of reasons. Some have come via the 'perrera', the municipal dog pound. They are brought there by official dog catchers if they are found running loose. Unless the dog is reclaimed by its owner within 10 to 20 days, it will be put to sleep.

Thanks to the cooperation that exists between D.U.O. and the dog catchers, these poor animals often manage to escape this fate. Most of the dogs have been abandoned by their owners because of health or personal problems.

The association takes them under its wing, gives them veterinary treatment and tries to rehome them. Some are adopted by new owners in Germany, and to get them there, the association operates a flight companion scheme. As these four-legged travellers are permitted to fly to their new homeland only in the company of a human passenger, they are temporarily en-

a asociación D.U.O. La asociación Tierhilfe Ibiza fue fundada en 1993, y al principio tuvo su sede en un terreno arrendado en Es Caliu, hasta 1999. Sin embargo, cuando apareció un comprador solvente para el terreno se rescindió el contrato de alquiler y el hogar de los animales tuvo que ser desalojado. Desde entonces, entre 80 y 90 perros abandonados viven de continuo en doce amplios cotos situados en las cercanías del hipódromo de San Rafael, en la finca de Christiane Michel, una de las dos fundadoras de la asociación. «No nos apoya una sola organización oficial, ni española ni alemana, sino que subsistimos exclusivamente a base de donaciones particulares», afirma Christiane. La asociación se dedica a entregar perros que por distintos motivos necesitan un nuevo hogar. Entre ellos están los que han sido recogidos por los perreros y quedan recluidos en una perrera. Allí, a los perros recogidos les espera la muerte si el dueño no da señales de vida en 10 o 20 días. Sin embargo, gracias a la colaboración entre D.U.O. y los perreros, los perros pueden evitar este triste final.

Buena parte de los perros son rechazados por sus dueños a causa de problemas personales o de salud. La asociación acoge a estos animales, los cura si necesitan cuidados y busca para ellos un dueño nuevo. Para los perros que encuentran su nuevo alojamiento en Alemania se ha ideado el servicio de apadrinamiento aéreo. Dado que los animales sólo pueden viajar a su nueva patria en compañía de una persona, se asigna su tutela a pasajeros que vuelan desde Ibiza a Alemania. er Verein D.U.O. Tierhilfe Ibiza wurde 1993 gegründet und hatte seinen Sitz zunächst bis 1999 auf einem angepachteten Gelände bei Es Caliu. Als sich jedoch ein potenter Käufer für das Gelände fand, wurde der Mietvertrag gekündigt und das Tierheim mußte geräumt werden. Seitdem leben ständig zwischen 80 und 90 verwaiste Hunde in zwölf großzügigen Gehegen in der Nähe des Hippodroms von San Rafael auf der Finca von Christiane Michel, einer der beiden Vereinsgründerinnen. „Wir werden weder von einer deutschen noch von einer spanischen offiziellen Organisation unterstützt, sondern halten uns allein durch Privatspenden über Wasser“, betont Christiane. Der Verein vermittelt Hunde, die aus unterschiedlichen Gründen ein neues Zuhause brauchen. Hierzu gehören solche, die von Hundefängern in eine „Perrera“ gebracht wurden. Auf die eingesammelten Hunde wartet in einer „Perrera“ der Tod, wenn sich der Besitzer innerhalb von 10 bis 20 Tagen nicht meldet.

Dank der Zusammenarbeit zwischen D.U.O. und den Hundefängern können die Hunde jedoch dem Tod entkommen. Ein Großteil der Hunde wird von ihren Besitzern wegen gesundheitlicher oder persönlicher Probleme verstoßen. Diese Tiere nimmt der Verein auf, behandelt sie bei Bedarf und sucht für sie ein neues Herrchen. Für Hunde, die ihre neue Bleibe in Deutschland gefunden haben, gibt es den Service der Flugpatenschaft. Da die Vierbeiner nur in Begleitung eines Menschen in die neue Heimat fliegen dürfen, sind sie auf Fluggäste angewiesen, die von Ibiza nach Deutschland fliegen. Hierzu genügt es, Datum, Abflug-

trusted to the care of someone flying out from Ibiza. Anyone willing to act in this role need only supply the date of departure, name of airline, flight number and time of arrival. This is enough information for a member of the association to bring the animal to the airport for it to be checked in with the luggage of the flight companion. At the destination airport, the flight companion reclaims the dog and then hands it over to a representative of D.U.O. who has come to collect it.

"Since 1993, we have re-homed around 500 animals per year in this way. Also, thorough a local programme of castration, we have helped to reduce the number of unwanted animals," adds Christiane. In her opinion, dog owners on the Island should be obliged by law to have their animal neutered. Also, the introduction of a dog licence might also be a persuasive argument for owners. After all, a bitch can have up to 12 puppies in a single year. Christiane believes that this problem could be solved by the Island Council sponsoring a publicity campaign and is quite sure that enough volunteers would come forward to help out. As all dogs are required to be fitted with a chip in Spain, the system could also be used to check on whether the dog is neutered or not. If so, the owner could then be exempt from the proposed licence fee. 

No hay que olvidar que una perra puede tener dos veces al año hasta doce cachorros de cada vez. Christiane cree que este problema podría solventarse con iniciativas de castración patrocinadas por el Consejo Insular, y se muestra convencida de que muchos ayudantes se ofrecerían voluntarios para colaborar en esta iniciativa. Dado que, de todos modos, en España existe obligación de poner el chip a los perros, según Michel esto también se puede utilizar a modo de prueba para justificar si el perro está castrado. En caso afirmativo, como contrapartida el dueño podría quedar exento del impuesto sobre los perros. 

Schließlich könne eine Hündin zwei Mal im Jahr jeweils bis zu zwölf Junge bekommen.

Christiane meint, daß dieses Problem durch vom Inselrat gesponsorte Kastraktionsaktionen gelöst werden könne und ist sich dessen sicher, daß sich zahlreiche freiwillige Helfer dazu bereit erklären würden, diese Aktion zu unterstützen.

Da es die Chip-Pflicht ohnehin in Spanien gäbe, könne sie in Michels Augen auch dazu genutzt werden, nachzuprüfen, ob der Hund kastriert ist. Wenn ja, so könne der Hundebesitzer als Gegenleistung schließlich von der Hundesteuer befreit werden.  www.duo-ibiza.de

n the Castilian city of Toledo, the name ‘El Cigarral’ refers to a particular area in the city centre, but here in Ibiza it stands for the embodiment of authentic taste and high-class cuisine. Pedro came to the Island 40 years ago, opening his first restaurant in San Antonio. He has been running ‘El Cigarral’ on Carre Fra Vicent Nicolau in the centre of Eivissa for the past 20 years.

In February, the restaurant had the finest game specialities on the menu. “We have been organising our game weeks for the past 15 years, always in the first two weeks in February,” explains Pedro, who himself originates from Toledo. He has maintained his contacts with excellent game suppliers there, and every year he makes a special journey to Toledo to buy the best quality meat. After all, he grew up in the area and knows where the best-quality produce is to be found. And as the Fitur tourism fair al-

Hace 40 años, Pedro llegó a la isla y abrió primero un restaurante en San Antonio. Desde hace 20 años regenta el restaurante «El Cigarral», en la calle Fra Vicent Nicolau del centro de Ibiza.

En febrero, el restaurante ofreció a sus clientes exquisitas especialidades de caza. «Organizamos estas semanas de la caza desde hace ya 15 años durante la primera quincena de febrero», comenta Pedro, oriundo de Toledo, que ha mantenido con esmero el contacto con proveedores punteros de productos de caza de Toledo, y cada año viaja a su ciudad natal ex profeso para comprar carne de caza de primera calidad. No en vano, creció en aquella región y conoce a la perfección los lugares donde

ährend der Name „El Cigarral“ in der kastilischen Stadt Toledo für eine bestimmte Region im Stadtzentrum steht, ist er in Ibiza der Inbegriff für authentischen Geschmack und eine Küche auf gehobenem Niveau. Vor 40 Jahren kam Pedro auf die Insel und eröffnete zunächst ein Restaurant in San Antonio. Seit 20 Jahren führt er das Restaurant „El Cigarral“ in der Carre Fra Vicent Nicolau im Zentrum von Eivissa.

Im Februar bot das Restaurant seinen Gästen exquisite Wildspezialitäten an. „Diese Wildwochen organisieren wir bereits seit 15 Jahren jeweils während der ersten beiden Februarwochen“, erklärt Pedro, der aus Toledo stammt.

Den Kontakt zu ausgezeichneten Wildlieferanten in Toledo hat er aufrechterhalten und jedes Jahr fährt er eigens nach Toledo, um Wildfleisch der Spitzenklasse einzukaufen. Schließlich sei er in dieser Region aufgewachsen und weiß, wo

ways takes place at the same time as his game weeks, Pedro takes the opportunity to make a small detour from Madrid to Los Yebenes, in the mountains above Toledo, to buy his delicious meat. There, he buys whole animals which he then joints back at the restaurant. This year, as well as wild boar, deer and red deer, he also bought roe deer, hares and rabbits. “The dishes are all prepared to traditional recipes that have been handed down, but I also always inject a personal touch of my own. It used to be assumed that game must have a strong, intense flavour, but you only find this strong aroma if the meat has been placed in a marinade with a mixture of different herbs and spices to preserve it,” Pedro explains. So he does not marinade the meat beforehand but instead makes the sauces fresh every time. To go with the recipes, there is a choice of specially selected fine wines which complement the flavours of the game.

During Easter week, the restaurant also offers a special menu, which, most notably, features plenty of variations on bacalau (cod) and traditional deserts such as leche frita (a type of doughnut), rice pudding and torrijas (a kind of French toast). 

Además, como la feria de turismo Fitur coincide siempre con las semanas de la caza, Pedro aprovecha la ocasión para hacer una escapada desde Madrid a «Los Yébenes», en los montes de Toledo, y conseguir allí esa carne, exquisita como pocas. Compra los animales enteros y más tarde los divide en porciones en su propio restaurante. Este año, además de jabalíes, ciervos y venados, también ha comprado corzos, liebres y conejos. «En realidad, los platos se preparan todos según recetas tradicionales, pero siempre procuro darles mi toque personal. Antes se oía decir a menudo que la carne de caza era muy fuerte y tenía un sabor muy intenso. Sin embargo, este aroma fuerte se formaba porque se metía la carne a marinar con diferentes especias para conservarla», explica Pedro. Él renunció al método de marinar la carne por anticipado, y en su lugar prepara siempre salsas frescas para acompañarla. Para regar estos platos exquisitos, los clientes pueden escoger entre una gran variedad de vinos selectos que se compenetran a la perfección con el aroma de la caza.

En Semana Santa, el restaurante también ofrece una carta especial en la que se pueden encontrar principalmente variaciones en torno al bacalao y postres clásicos como la leche frita, el arroz con leche o las torrijas. 

Hier kauft er ganze Tiere, die er später im Restaurant portioniert. In diesem Jahr habe er neben Wildschweinen, Hirschen und Rotwild auch Rehe, Hasen und Kaninchen gekauft. „Die Gerichte werden zwar alle nach überlieferten, traditionellen Rezepten zubereitet, jedoch verleihe ich ihnen immer auch eine persönliche Note. Früher ist man stets davon ausgegangen, daß Wildfleisch sehr streng und intensiv schmeckt. Dieses strenge Aroma bildetete sich jedoch erst dadurch, daß man das Fleisch zur Konservierung in eine Marinade mit verschiedenen Gewürzen einlegte“, erklärt Pedro. Er verzichte jedoch darauf, das Fleisch vorher zu marinieren, stattdessen bereite er die Soßen jedes Mal frisch zu. Zu den Gerichten wird den Gästen eine Auswahl erlesener Weine angeboten, die mit dem Wildaroma harmonieren.

Auch während der Osterwoche bietet das Restaurant eine spezielle Karte, auf der vor allem Variationen vom Bacalau (Kabeljau) und klassische Desserts wie „Leche frita“ (eine Art Krapfen), Milchreis und „Torrijas“ (eine Art Armer Ritter) zu finden sein werden. 

F

or a long time, the gastronomy of the Pitiusas fought for recognition beyond the narrow confines of its geographical boundaries. The cuisine of Ibiza and Formentera was considered to be simple, plain and poor – that is until now. The meagre resources harvested from agriculture, livestock and the sea were used to their best advantage. Islanders gleaned the best from the earth and the sea, and ate from sheer necessity, with no concession to sinful pleasures for mind and body. Almost no-one bothered to present local dishes to paying guests. Only Joan Castelló Guasch in the mid 1950s and Juan Francisco Poyatos Olive some twenty years ago dared to turn their attention to the modest but inventive and delicious simple fare that was created from so little.

But times have changed. Today, the Pitiusas have a remarkable reputation amongst professional cooks, both on the Islands and beyond. Customers, residents and tourists all value the delicious dishes with their particular characteristics. There is one thing that we must not forget in this context: we are able to draw on the immense resource of ethnic and cultural traditions here in the western Mediterranean, with a particularly strong influence coming from the Catalan and North African peoples. The recipes that have emerged are not only delicious but healthy.

a gastronomía de las Pitiüses lucha por abrirse paso fuera de sus reducidos límites geográficos. Intenta superar décadas de olvido, sentimiento de inferioridad y desprestigio. La de Eivissa y Formentera era, al menos hasta ahora, una cocina elemental, austera, pobre, de máximo aprovechamiento de los escasos recursos disponibles, tanto agrícolas como ganaderos y marítimos. Se sacaba todo lo posible de la tierra y el mar. Se comía por pura necesidad, sin vanas concesiones a la galería de los placeres – entonces pecaminosos – del cuerpo y el espíritu. Casi nadie se preocupó antes de elogiar las creaciones autóctonas. Sólo Joan Castelló Guasch, a mediados de siglo, y Juan Francisco Poyatos Oliver, hace veinte años, se atrevieron a prestar atención a aquellos modestos, aunque imaginativos y sabrosos, platos de subsistencia, de apretarse el cinturón.

Las cosas han cambiado. Hoy la cocina pitiusa goza de una notable fama entre los profesionales de los fogones, dentro y fuera de las islas. También los consumidores, residentes y turistas, saben apreciar sus valores y sus características especiales. Recordémoslo siempre: bebemos de las fuentes de la tradición cultural y antropológica del Mediterráneo Occidental, con influencias muy notables, y evidentes, de los catalanes y los pueblos del norte de África. Es deliciosa y sana, dos virtudes fundamentales.

Die Küche Ibizas und Formenteras galt – bis jetzt wenigsten – als einfach, schlicht und ärmlich. Die knappen Ressourcen aus Landwirtschaft, Viehzucht und Meer wurden dabei so gut wie möglich genutzt. Man holte das Beste aus Erde und Meer heraus und aß aus schierer Notwendigkeit, ohne Zugeständnisse an sündhafte Vergnügen für Körper und Geist. Fast niemand kümmerte sich darum, einheimische Kreationen zu präsentieren. Nur Joan Castelló Guasch hatte es Mitte des letzten Jahrhunderts ebenso wie vor zwanzig Jahren Juan Francisco Poyatos Oliver gewagt, sein Augenmerk auf die bescheidenen, aber einfallsreichen und leckeren Hausmannsgerichte, die so vieles entbehrten, zu richten.

Doch die Zeiten haben sich geändert. Heute hat die Pitiüsen-Gastronomie eine bemerkenswerte Reputation unter den Küchenprofis sowohl auf den Inseln als auch außerhalb. Auch Verbraucher, Anwohner und Touristen schätzen die lekkeren Gerichte mit ihren besonderen Merkmalen.

A newly published book is not only the most comprehensive cookery book of Pitiusas cuisine ever produced but, at last, also gives Island cuisine the recognition that it deserves and the place of honour that it has earned both nationally and internationally. We are talking about ‘Eivissa i Formentera, la cuina pas a pas’, a cookery book written by brother and sister, Joana and José Manuel Piña. Our very own IBIZA & FORMENTERA STYLE photographer, Vicent Marí, is responsible for the magnificent photographs. The book contains 80 everyday recipes from our grandmothers’ time, all designed to suit today’s tastes and to be wolfed down in private or dished up on more splendid occasions. It has nothing to do with experimentation or the cooking revolution but is all about bringing together the local diversity of the different Island districts and celebrating their shared history at the same time: for example, the delicious nadal sauce is not prepared the same way in every village; in Santa Eulària and Sant Joan de Labritja it is produced using meat stock, whereas the residents of St Augustin and St Josef prefer to make the sauce without adding any animal products.

No one dish is better than the other, they are just different.

The book is published by Balàfia Postals and the Institut d’Estudis Baleàrics and, as Vicent Marí tells us enthusiastically, “it was written bit by bit, with no haste and with lots of love.”

In the book, he was able to illustrate recipes from his mother María Marí who cooked at the Bar Rafal in the La Marina district. She was also responsible for 90% of the suggestions for recipes to be included in the book.

Alongside starters, elaborate rice dishes, hearty meat and fish dishes and the best side dishes, the book contains desserts such as flaó (that king of all puddings), greixonera, buñuelos doughnuts and orelletes. It’s enough to make your mouth water.

Two sentences by the authors of the cookery book perfectly sum up their aims in producing ‘Eivissa i Formentera, la cuina pas a pas’: according to José Manuel Piña, journalist on the Diario de Ibiza, “every cook is more of an engineer than an artist.” What wise words, as you have to get the quantities right and combine the ingredients intelligently without being tempted down the same route as modern laboratory cooks and into the widespread habit of excess. Not everyone can boast of being a master chef or can guarantee that their guisat de peix (fish stew) or their cuinat (vegetable stew) at Easter will always work.

You have to handle your saucepans, frying pans and ovens reliably and consistently with technical ability. “Cooking is another way of communicating,” adds Joana, co-author of the book. Eating means happiness in every bite. The way to a man’s (or woman’s!) heart is through his (her) stomach. Who could ever doubt it?

Un nuevo libro, el más completo de los publicados hasta el momento, se propone dignificar la cocina insular y elevarla al puesto de honor, nacional e internacional, que se merece. No es tarea fácil, pero resulta necesaria, desde luego, tras décadas de ostracismo.

Hablamos de ‘Eivissa i Formentera, la cuina pas a pas’, obra de los hermanos Joana y José Manuel Piña. Asimismo, Vicent Marí, colaborador de IBIZA & FORMENTERA STYLE, firma las magníficas fotografías de este trabajo de recopilación de ochenta recetas de toda la vida, las de la abuela, las de cuchara y mantel de cuadros, adaptándolas a los gustos modernos. No se trata de experimentar ni revolucionar, sino de respetar la historia común e incorporar las diferentes variedades municipales. La contundente ‘salsa de Nadal’, por ejemplo, no se prepara igual en Santa Eulària y Sant Joan de Labritja, donde usan caldo de carne, que en la zona de Sant Agustí y Sant Josep, cuyos habitantes defienden el empleo del agua sin añadidos animales. No hay un plato mejor que otro, simplemente son distintos.

El libro, editado por Balàfia Postals (Neus Escandell) y el Institut d’Estudis Baleàrics, fue guisado «poco a poco, sin prisas, y con amor», dice un entusiasmado Vicent Marí. Ha ilustrado unas recetas que preparó su propia madre, María Marí, la cocinera del entrañable bar Rafal del barrio de la Marina de Vila. Ella se encargó del 90% de las propuestas incluidas en este documentado tratado culinario que aborda los entrantes, los laboriosos arroces, los platos fuertes de carne y pescado, las imprescindibles guarniciones y, naturalmente, la repostería, desde el ‘flaó’, la joya de la corona, hasta la ‘greixonera’, los buñuelos y las ‘orelletes’. Para chuparse los dedos.

Dos frases de los autores literarios resumen a la perfección los objetivos de ‘Eivissa i Formentera, la cuina pas a pas’. Según José Manuel Piña, periodista de Diario de Ibiza, «más que artista, cada cocinero es un ingeniero». Sabias palabras. Hay que dosificar las cantidades y mezclar los ingredientes con inteligencia, de acuerdo, pero sin caer en las tentaciones de laboratorio tan corrientes en nuestros tiempos de vacas gordas y opulencia mal distribuida. No todo el mundo puede vanagloriarse de maestro y enfrentarse a un ‘guisat de peix’ y un ‘cuinat’ de Semana Santa con plenas garantías de éxito. Las ollas, las cacerolas y los hornos exigen seriedad, constancia, muchísima preparación técnica y no poca carga emocional. Los corazones insensibles están condenados al fracaso. «Cocinar representa una manera de comunicar», añade Joana, la otra artífice del libro. Comer significa alcanzar la felicidad a mordiscos. A los hombres y las mujeres se les conquista por el estómago, ¿alguien lo duda?

Ein neu erschienenes Buch, bei dem es sich zudem um das umfangreichste Pitiüsen-Kochbuch überhaupt handelt, würdigt die Inselküche nun endlich angemessen und gibt ihr den Ehrenplatz, den sie sich sowohl national als auch international verdient hat. Wir sprechen natürlich von „Eivissa i Formentera, la cuina pas a pas”, dem Kochbuch der Geschwister Joana und José Manuel Piña. Verantwortlich für die herrlichen Fotos ist niemand anderes als IBIZA & FORMENTERA STYLE-Mitarbeiter Vicent Marí. Im Buch werden 80 Rezepte des täglichen Lebens, aus Großmutters Zeit, zum Weglöffeln und für andere Anlässe vorgestellt – alle wurden an den Geschmack der heutigen Zeit angepasst. Es hat weder mit Experimenten noch einer Kochrevolution zu tun, sondern geht um die Einbeziehung der lokalen Vielfalt der verschiedenen Bezirke unter Berücksichtigung der gemeinsamen Geschichte: Zum Beispiel bereitet man die leckere „Nadal-Sauce“ nicht überall gleich zu, denn in Santa Eulària oder Sant Joan de Labritja findet die Herstellung unter Verwendung von Fleischbrühe statt, während die Anwohner von St. Augustin und St. Josef eine Soßenzubereitung ohne Zusatz von tierischen Produkten bevorzugen. Das von Balàfia Postals und dem Institut d’Estudis Baleàrics herausgegebene Buch wurde „nach und nach, ohne Hast und mit viel Liebe geschrieben”, erklärt Vicent Marí begeistert. Er hat im Buch Rezepte seiner Mutter, María Marí, Köchin der Bar Rafal im Viertel La Marina bebildern können. Sie war zudem für 90% der Vorschläge für die in diesem Kochbuch enthaltenen Rezepte verantwortlich.

Neben Vorspeisen, aufwendigen Reisgerichten, deftigen Fleisch- oder Fischgerichten und den besten Beilagen werden Nachspeisen, wie z. B. der König aller Nachtische „Flaó“, „Greixonera“, „Buñuelos”-Krapfen und „Orelletes“ präsentiert.

Da läuft einem das Wasser im Mund zusammen!

Zwei Sätze der Kochbuch-Autoren fassen die Ziele, die sie mit der Veröffentlichung von „Eivissa i Formentera, la cuina pas a pas“ verfolgt haben, perfekt zusammen: Laut José Manuel Piña, Journalist des Diario de Ibiza, ist „jeder Koch mehr Ingenieur als Künstler“. Welch‘ weise Worte! Denn man muss die Mengen richtig abstimmen und die Zutaten auf intelligente Weise mischen, ohne dabei den Versuchungen der heutigen Laborküchen und dem weit verbreitetem Überfluss zu verfallen. Nicht jeder kann sich damit brüsten, ein Meister der Küche zu sein und garantieren, dass ein „Guisat de Peix“ (Fischeintopf) oder ein „Cuinat“ (vegetarischer Eintopf) zu Ostern immer erfolgreich gelingt. Töpfe, Pfannen und Öfen verlangen Zuverlässigkeit, Beständigkeit und viele technische Fähigkeiten und gefühlmäßigen Einsatz. „Kochen ist eine Art der Kommunikation“, fügt Joana, die Co-Autorin des Buches hinzu. Essen bedeutet Glück mit jedem Bissen. Liebe geht durch den Magen! Wer will daran schon zweifeln?

Prepararación de las legumbres: Poner en remojo, por separado, los garbanzos, las habas peladas y las guixes. Escurrir bien las legumbres al día siguiente y desechar el agua. Cubrirlas de nuevo con agua limpia, cada legumbre en un cazo distinto.

Poner al fuego los recipientes y hervir cada legumbre hasta su punto de cocción.

Prepararación del cuinat: Hervir por separado las acelgas y la verdura.

Escurrir bien. Echar alternativamente en una olla, una capa de verdura y otra de legumbres, y así, sucesivamente. Añadir el tomate, la cebolla y los ajos en mitad del proceso. Incorporar las especias. Añadir el aceite y la hierbabuena. Seguir colocando las capas de verdura y legumbres. Finalmente agregar agua, sin cubrir del todo el contenido. Poner la olla al fuego, cuando arranque el hervor, dejar fuego moderado e ir sacudiéndola para que el preparado no se queme. Remover de vez en cuando con mucho cuidado, tratando de preservar el orden de las capas.

Die Zubereitung der Hülsenfrüchte: Weichen Sie Kichererbsen, dicke und Wolfsbohnen getrennt voneinander ein. Lassen Sie sie am folgenden Tag gut abtropfen und gießen das alte Wasser weg. Geben Sie die Hülsenfrüchte getrennt voneinander und erneut mit frischem Wasser in drei Kochtöpfe, um Sie auf dem Herd gar zu kochen.

Zubereitung des Cuinat: Kochen Sie den Mangold getrennt vom restlichen Gemüse gar, um danach das Wasser abzugießen. Schichten Sie im Anschluss jeweils eine Lage Gemüse auf eine Lage Hülsenfrüchte bis der Topf voll ist. Fügen Sie zu den Schichten zerkleinerte Tomate, Zwiebeln, Knoblauch, Gewürze, Olivenöl und Pfefferminze hinzu. Wenn Sie mit dem Schichten fertig sind, gießen Sie zum Schluss alles mit Wasser auf, ohne aber den Topfinhalt vollständig zu bedecken. Stellen Sie den Topf aufs Feuer, um das Cuinat auf kleiner Flamme gar zu kochen. Ab und zu sollte der Topf etwas geschwenkt werden, damit der Inhalt nicht anbrennt. Beim Umrühren sollten Sie jedoch besondere Vorsicht walten lassen, sodass sich die Schichten nicht vermischen.

Preparing the pulses: Soak the chick peas, fava beans and lupin beans separately overnight. The next day, drain them well and throw away the soaking water. Cook the pulses separately in fresh water in three saucepans until tender.

Preparing the cuinat: Cook the mangold separately from the rest of the vegetables until tender and throw away the cooking water. Build up layers of vegetables and pulses in turn until the saucepan is full. Add the chopped tomatoes, onions, garlic, herbs, olive oil and peppermint leaves to the layers as you go along. When the layers are complete, add water, but do not cover the contents of the pot completely. Place on the stove and simmer gently over a low heat until cooked.

From time to time, shake the saucepan so that the contents do not stick and burn.

Take particular care when stirring not to mix up the layers.

One of the vegetables used in Ibiza and Formentera to prepare this dish is wild campion which grows on the Islands during Lent. We do not recommend making this dish unless you have this wild herb. For many families this dish replaced fish, as the Catholic Church forbids the consumption of meat during Lent and in the past for many people fish was a luxury they could not afford. This dish is particularly popular on Good Friday.

La verdura que se utiliza en Ibiza y Formentera para preparar este plato es una hierba silvestre, que crece durante el tiempo de cuaresma. Es inconcebible preparar el cuinat sin ese ingrediente. Este plato se consumía como sustituto del pescado durante los días en que la Iglesia prohibía comer carne, ya que muchas familias no podían permitirse el lujo de comer pescado. Se suele preparar especialmente para comerlo el Viernes Santo.

Bei dem Gemüse, das auf Ibiza und Formentera für die Zubereitung dieses Gerichtes benutzt wird, handelt es sich um das wilde Leimkraut, das während der Fastenzeit auf den Inseln wächst. Es ist nicht empfehlenswert, das Gericht ohne dieses Wildkraut zu zubereiten.

Diese Speise ersetzte für viele Familien den Fisch, da die katholische Kirche den Fleischgenuss in der Fastenzeit verbietet und sich viele Menschen früher nicht den Luxus erlauben konnten, Fisch zu essen. Dieses Gericht ist insbesondere als Karfreitagsessen beliebt.

1kg flour 5 eggs Ground vanilla 1 packet baking powder Grated rind of 1 lemon, according to taste 50g pork dripping 1 teaspoon aniseed Orange juice to taste Talcum powder (edible grade) Aniseed essence Sunflower oil 400g sugar

1 kg de harina de trigo 5 huevos vainilla en polvo 1 paquete de levadura en polvo La ralladura de 1 limón, al gusto 50 g de manteca de cerdo 1 cucharadita de matalahúga zumo de naranja, al gusto magnesia para cocinar esencia de anís aceite de girasol 400 g de azúcar

1 kg Weizenmehl 5 Eier Vanillepulver 1 Paket Backpulver die geriebene Schale 1 Zitrone (je nach Gechmack) 50 g Schweineschmalz 1 Teelöffel Aniskörner Orangensaft je nach Geschmack Talkumpuder (Nahrungsmittelgrad) Anisessenz Sonnenblumenöl 400 g Zucker

Method: Beat the eggs and sugar together. Gradually add the ground vanilla, aniseed essence and seeds, grated lemon rind and the melted dripping. Make sure everything is thoroughly combined. Finally add the baking powder and flour.

The orange juice may be added at this time if the dough is too firm. Divide the dough into small portions, depending on how many spiced biscuits you want. Shape each biscuit so that it resembles a human ear. Heat a generous quantity of oil in a frying pan and fry the ‘little ears’ in it. Place the cooked orelletes on paper towel, and then on a wire tray and sprinkle with sugar.

Please note: Edible grade talcum powder and aniseed essence are available from a pharmacy. You can replace the aniseed essence with aniseed liquor. We recommend using sunflower oil for frying the orelletes in, as olive oil gives too strong a taste. The orelletes should be fried in very hot oil, one after the other.

Preparación: Mezclar los huevos con el azúcar y remover bien. Incorporar progresivamente la vainilla, la esencia y las semillas de anís, la ralladura de limón y la manteca fundida. Seguir amasando.

Añadir, en la fase final, la harina junto con la levadura. Agregar, en este momento, el zumo de naranja, en el caso de que la masa haya quedado espesa. Dividir la pasta en unidades, tantas como orelletes quieran prepararse. Dar a cada una de ellas una forma parecida a la oreja humana. En una sartén, echar abundante aceite y calentarlo. Freír en él las orelletes. Ir colocándolas sobre un papel absorbente, a medida que estén fritas. Ponerlas, después, en una bandeja, espolvoreándolas con abundante azúcar.

Observaciones: La magnesia para cocinar y la esencia de anís pueden encontrarse en cualquier farmacia.

Puede sustituirse la esencia de anís por una copita de este licor. Es recomendable que el aceite para freír sea de girasol porque el de oliva resulta excesivamente fuerte para este postre. Se recomienda freír las orelletes en aceite muy caliente y de una en una.

Zubereitung: Mischen Sie die Eier unter Rühren mit dem Zucker. Geben Sie nach und nach das Vanillepulver, die Essenz und Aniskörner, die abgeriebene Zitronenschale sowie das geschmolzene Schmalz hinzu. Kneten Sie alles gut durch. Fügen Sie zum Schluss Backpulver und Mehl hinzu. Im selben Moment können Sie Orangensaft hinzugeben – für den Fall, dass die Teigmasse zu fest geworden ist.

Teilen Sie den Teig in kleine Portionen auf, je nachdem wie viele Gewürzfladen Sie haben möchten. Formen Sie jeden Fladen so, dass er einem menschlichen „Ohr“ ähnelt. Gießen Sie nun reichlich Öl zum Erhitzen in eine Pfanne, um im Anschluss darin die „Öhrchen“ zu frittieren. Die fertigen „Orelletes” legen Sie bitte auf absorbierendes Papier und im Anschluss zum Bestäuben mit Zucker auf einen Backrost.

Bitte beachten: Das zum Verzehr geeignete Talkumpuder und die Anisessenz können Sie in der Apotheke kaufen. Es ist möglich Anisessenz durch Anislikör zu ersetzen. Zum Frittieren der „Orelletes” ist nur Sonnenblumenöl zu empfehlen, da Olivenöl diesem Nachtisch eine zu strenge Note geben würde. Die „Öhrchen“ sollten in sehr heißem Öl und nacheinander frittiert werden.

In the past, these biscuits were only made for special occasions, such as weddings, First Communions, christenings and village saint’s days. Now they are eaten all year round, but they are still an important part of any party or local festivity. 

Antiguamente las orelletes se preparaba sólo en ocasiones muy especiales, tales como bodas, comuniones y bautizos y en las celebraciones de las fiestas patronales de todos los pueblos. Actualmente se consume en cualquier época del año, pero siguen estando presentes en todo tipo de celebraciones y festividades locales. 

PASA celebra el 25 aniversario de su fundación

owards the end of last year, PASA (Pitiusa de Alimentación S.A.) celebrated its 25th anniversary with a gala dinner. PASA is a cooperative of around 40 grocery stores and supermarkets in Ibiza and Formentera whose proprietors are all members and co-owners of the society. By pooling their resources in this way, they have made PASA into a powerful purchasing organisation which enables its members to buy their wares on such favourable terms that they can compete with the major supermarket chains from the European mainland without compromising on quality. At the event held in the Hotel Fenicia, current PASA President Miguel Bonet (Super es Cuco) welcomed the 200 members of the association and prominent guests from public life. 

finales del año pasado, PASA, Pitiusa de Alimentación S.A., celebró sus 25 aniversario. PASA es una cooperativa formada por unas 40 tiendas de comestibles y supermercados de Ibiza y Formentera, cuyos propietarios son todos miembros y co-propietarios de la cooperativa. Gracias a esta agrupación, PASA se ha convertido en una asociación fuerte de cara a las compras, lo que permite a sus miembros comprar la mercancía a un precio tan rentable que son capaces de mantener la excelente calidad y al mismo tiempo hacer frente a los precios de las cadenas de supermercados de la península. Der derzeitige Präsident der Gruppe, Miguel Bonet (Super es Cuco) begrüßte zur Gala, die im Hotel Fenicia stattfand, rund 200 Mitglieder der PASA Familie und mehrere Repräsentanten des öffentlichen Lebens. 

There is always something exciting going on in Berlin, from club nights to major events at the Brandenburg Gate plus a host of minor ones in Kreuzberg, Charlottenburg, Friedrichshain or Pankow. Berlin oozes character, variety and vitality. It’s become part of the routine to visit the now fashionable but formerly run-down Eastern district of Prenzlauer Berg for brunch at the weekend. And for sheer Western style and elegance, there’s always Charlottenburg. The Kurfürstendamm, Kaiser Wilhelm Gedächtniskirche (Memorial Church) and the shopaholic’s paradise of KaDeWe (Kaufhaus des Westens) are all essential parts of any visitor’s itinerary.

The new East Berlin, especially the Nikolai Quarter with its 1980s restoration, also exerts a fascination with its myriad boutiques and smart cafe-bars. Nearby are the ‘Hackesche Höfe’, the largest complex of linked courtyards in Europe, and many smaller architectural gems for a shopping (or window-shopping) excursion. One thing that hasn’t been gentrified since the Wall came down, however, is the popular cuisine: potato soup, ‘Rote Grütze’ (red berry pudding), Eisbein (pickled pork hock), Berliner Kindl and Weisse beers plus the legendary Currywurst continue to occupy pride of place on any menu.

En Berlín siempre está pasando algo, ya sea una fiesta callejera, una velada en un club o un gran evento en la Puerta de Brandemburgo. En Kreuzberg, Charlottenburg, Friedrichshain o Pankow. Berlín tiene carácter. Berlín es la variedad y la vida. Ahora se han puesto de moda los deliciosos brunchs de fin de semana en el barrio de marcha Prenzlauer Berg. En Charlottenburg se presenta el antiguo Oeste en todo su esplendor. El Kurfürstendamm, la iglesia conmemorativa del emperador Guillermo y el templo del consumo KaDeWe (Kaufhaus des Westens o «grandes almacenes del oeste») son de visita obligada.

El nuevo este, el que representa el barrio Nikolai renovado en los años 80, cautiva sin embargo por sus pequeños comercios y los sustanciosos pasteles de sus cafeterías. En las inmediaciones están los Hackeschen Höfe (la mayor superficie de patio de Europa) y hay numerosas joyerías que invitan a echar un vistazo e ir de compras. La reunificación y los cambios no han afectado a la gastronomía: la sopa de patatas, la Rote Grütze, el lacón, las cervezas Berliner Kindl y Berliner Weiße y la famosa salchicha al curry siguen en pleno auge, igual ahora que antes de la caída del muro.

This bar is a well kept secret, and has been for years. We are loath to share it with you as Gregor Scholl, its long-standing owner, monoclewearer and chief barman is a phenomenon that we would rather keep to ourselves. If you want to get to RUM TRADER, tell the taxi driver that that you wish to visit Herr Scholl and he is bound to deposit you in front of the closed door of this unique bar. Whether you get in is another matter, as Rum Trader is Herr Scholl’s sitting room, and his exquisite cocktails are not only sensational but are also prepared with love by this classical composer. If you are allowed to spend an evening or – better still – an early morning there in the company of the chosen few, be grateful. Not only will you get the best drinks in town, but also a chance to meet the most remarkable people to be found in the German capital.

The connection between the Balthazar Restaurant’s star chef Holger Zurbrüggen and Ibiza goes back several years. In May 2007, the Risotto World Champion was invited by Formentera&IBIZA STYLE to come across with his team and participate in a guest event here in the Pitiusas, in the course of which he cooked at five different restaurants on the two islands.

During the 2008 ITB trade fair, the kitchen team from the Restaurant Es Ventall in San Antonio paid Holger a return visit at the Balthazar in Berlin where both teams laid on a tour de force of cuisine for celebrity guests from Berlin and Ibiza.

Holger has been steadily building up a regular audience for his ‘Kocharena’ cookery show on the German TV channel VOX. In this show, Berlin’s top chef trains up a willing amateur to challenge one of his star colleagues during the evening filming session. Then he sits next to fellow presenter Heiko Wasser and has the same sensation that a teacher gets when watching one of his students sitting a public examination.

Johann Lafer enquires whose creation he is allowed to cook, Tim Mälzer wants to be the one who puts the spaghetti and aubergine creation onto the menu and panel member Heinz Horrmann pays the inventor of the batata soup lavish compliments. Entre Ibiza y el cocinero estrella Holger Zurbrüggen, del restaurante Balthazar, existe un vínculo que se remonta varios años atrás. El campeón del mundo de risotto (título obtenido en mayo de 2007) acudió a las Pitiusas con su equipo para participar en un evento organizado por Formentera&IBIZA STYLE y cocinar en cinco restaurantes de las dos islas. Con motivo de la ITB 2008, el equipo de cocina del restaurante Es Ventall de San Antonio le devolvió la visita a Holger en el Balthazar de Berlín, donde unieron sus fuerzas y cocinaron mano a mano para algunas personalidades berlinesas e ibicencas.

En Alemania, Holger es actualmente conocido por Kocharena, la serie de televisión del canal VOX seguida por millones de teleespectadores.

Durante toda una mañana, el cocinero estrella berlinés mete en cintura a los cocineros amateur de Kocharena hasta tal punto que terminan prácticamente a la altura de sus colegas más famosos. Por las tardes, Holger toma asiento junto al presentador Heiko Wasser y hace las veces de profesor que controla a sus alumnos durante los estudios.

Johann Lafer pregunta qué debe cocinar, Tim Mälzer elige la creación de spaghetti y berenjenas de la carta y el jurado Heinz Horrmann da la enhorabuena al inventor de la sopa de batata.
