Churros

& Chocolate Dip Method 1 - Add 350ml of boiling water into a jug, with the melted butter and vanilla extract. Place the flour and baking powder into a large bowl and add a pinch of salt. Pour in the contents of the jug and quickly beat with a wooden spoon until there are no lumps. Set aside for 10-15 mins. 2 - Mix the caster sugar and cinnamon together in a bowl. 3 - Fill a large deep saucepan one-third full of oil. Always take care when cooking with hot oil. Heat to 175C. Using a large star nozzle on a piping bag, fill with the dough and pipe the churros directly into the oil, snipping off with kitchen scissors. Make each churro about 10cm long. Fry until golden brown and crisp but watch out for air bubbles in the churros as they can explode, especially if the oil overheats or you use old flour. 4 - Once the churros are crisp and golden brown, remove them from the oil with a slotted spoon and drain on a kitchen paperlined tray. Carry on cooking the dough in batches. 5 - Coat the cooked churros with the cinnamon sugar as you go. To serve, toss with any remaining cinnamon sugar and serve with chocolate dipping sauce.
