Baked Lemon and Herb Chicken
& Warm Up Your Winter Table!
INGREDIENTS:
• 2 lbs. boneless, skinless chicken breasts or thighs
• 2 Tbsp. olive oil
• 1/4 c. lemon juice
• Zest 1/2 lemon
• 2 cloves garlic (minced)
DIRECTIONS:
• 1 tsp. dried herb of your choice (oregano, thyme, or rosemary)
• 1/4 tsp. paprika
• Salt and pepper to taste
• Fresh parsley for garnish
Preheat your oven to 400°F. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried herbs, salt, and pepper. Place the chicken pieces in a baking dish and pour the lemon-herb mixture over them. Bake for 20-40 minutes, until internal temperature reaches 165°F. Garnish with parsley.

Creamy Parsnip and Potato Soup
INGREDIENTS:
• 1 1/2 lbs. fresh parsnips (chopped)
• 1 white onion (chopped)
• 2 medium russet potatoes (cubed)
• 4 cloves garlic
• 2 Tbsp. olive oil
• 2 sprigs fresh thyme
DIRECTIONS:
• 4 c. vegetable stock
• 1/2 c. milk
• 6 pieces bacon
• 1/4 tsp. celery salt
• 1/2 tsp. salt
• 1/2 tsp. pepper
• Fresh parsley for garnish
Pre-heat oven to 425°F. Add parsnips, onions, potatoes, garlic to pan, mix, to coat with oil. Top thyme. Bake 40 minutes, shake every 15 minutes to prevent sticking. Cook 6 pieces of bacon and cool. Once parsnips and potatoes are roasted, add to a large pot, add milk and stock. Bring to a boil. Add celery salt, pepper. Bring pot boil. Remove from heat, blend with blender or mixers until creamy. Serve with parsley and crumbled bacon.
