GRILLED PEACH & BURRATA

Flatbread with Pesto

INGREDIENTS:

• 2 large ripe peaches (sliced)

• 2 flatbread or naan

• Olive oil

• 4 Tbsp. basil pesto

• 8 oz. burrata (divided)

INGREDIENTS:

Summer Salad SWEET CORN & AVOCADO

• Arugula

• Honey

• 1 lb. cherry tomatoes (halved)

• 3 ears of corn, cooked off cob

• 2 avocados (peeled + sliced)

• 1/2 red onion (thinly sliced)

• 1/4 c. cilantro (chopped)

• 2 Tbsp. extra virgin olive oil

• 2 Tbsp. lime juice

• 2 garlic cloves (minced)

• 1 tsp. sea salt

• 1/8 tsp. pepper

DIRECTIONS:

Heat grill over medium heat, around 375°F. Brush sides of sliced peaches with oil. Place peach slices on cleaned grates on their sides for a few minutes on each side until grill marks appear. Set aside. Brush both sides of flatbread with oil, and place on the grill. Cook until crispy. Spread pesto on flatbread, then add burrata pieces. Close grill lid. Cook for 3 minutes until burrata is slightly melted. Remove and add peaches, arugula, pepper, salt, and a drizzle of honey before serving.

DIRECTIONS:

In a large salad bowl, combine sliced tomatoes, corn kernels, sliced avocado, thinly sliced red onion, 1/4 c. chopped cilantro and press in 2 garlic cloves. Drizzle the top with 2 Tbsp. extra virgin olive oil, 2-3 Tbsp. lime juice (adding it to taste). Add 1 tsp. sea salt and 1/8 tsp. black pepper, or season to taste. Toss the salad gently just until combined and serve.
