Dark Chocolate with Sea Salt & Cherries

INGREDIENTS:

• 14 ounces dark chocolate

• 1 cup walnuts (chopped)

• 3/4 cup dried cherries (chopped)

• 4 pieces crystalized ginger (chopped)

• 1/2 teaspoon fine sea salt

INSTRUCTIONS:

Line baking sheet with parchment, chill in freezer. Combine walnuts, cherries, ginger and sea salt in bowl. Break chocolate into pieces in double boiler over simmering water. Stir frequently until chocolate melts. Add half fruit and nut mixture. Spread on baking sheet and sprinkle with remaining fruit and nut mixture. Refrigerate for 20 minutes and break into pieces to serve.

CHOCOLATE BARK RECIPES

LIGHT BARK White Chocolate with Pistachio & Cranberries

INGREDIENTS:

• 1/2 cup salted pistachios

• 16 ounces white chocolate (chopped)

• 1/4 cup dried cranberries

• 1/4 cup dried apricots (medium-dice)

INSTRUCTIONS:

Preheat oven to 350 degrees Fahrenheit. Spread pistachios on parchment covered baking sheet (8x10). Bake 8 minutes, set aside. Put chocolate in heat-proof glass bowl. Microwave on high, 30 seconds, stir. Heat in 30 second intervals until melted. Pour melted chocolate onto parchment, sprinkle with pistachios, cranberries, and apricots. Press nuts and fruit lightly into chocolate. Refrigerate for 20 minutes and break into pieces before serving.
