Welcome to our rst SPIT Journal! I am excited to share this with you; Hong Kong's dedicated wine professionals, salespeople, industry and trade, along with educators, media, opinion leaders and wine geeks.

The mission of WineSPIT has always been to connect the trade, enhance our collaboration, enrich our skills and professionalism and work together to grow the wine market for the bene t of all. We hope this journal will further this objective by sharing industry news, recapping our professional development workshops, pro ling key members of the wine trade, sharing interesting articles and events – and more.

In this issue we share the results of the city's key wine and spirit competition – the Cathay Paci c Hong Kong International Wine & Spirits Competition (HK IWSC). Following Judging Weeks in August and September, attended by 74 judges, the results are in with 58 trophies, and 120 gold, 706 silver and 780 bronze medals awarded to wineries and producers from around the globe. The judges – Asia's most in uential wine professionals – have tasted, deliberated and named the year's best beverages for the Asian market. Enjoy reading the results!

For more than ten years, HK IWSC judging has upheld high international standards for wine and spirits in Asia. Award winners represent Asia's tastes and advance the region's wine and spirits culture.

There are many competitions globally, but none are committed to delivering culturally appropriate guidance on wine, sake, spirits and beer to Asian drinkers like the Cathay Paci c HK IWSC.

Over the years, panels of Asian and international experts have evaluated hundreds of deserving wines and spirits for awards and trophies that speci cally acknowledge Asian tastes. This year, entries were received from neighbouring Ningxia, China and from as far away as Kenya and the Czech Republic.

Entries were judged rst on their own, and then many underwent further scrutiny by judges in the food and wine pairing category, which took place at Royal Garden Hotel where judging was conducted in-situ at several restaurants—Chinese, Japanese and pan-Asian—to match the cuisine of the dishes being paired; it was an immersive experience that enabled judges to consider the sights, smells and sounds that impact tasting outcomes.

As well as assessing top-class international beverages, it was also a year for showcasing iconic venues. Judging took place at Hong Kong's striking Maritime Museum, where huge glass windows ooded the space with natural light and harbour views. To add to the drama, a series of storms rolled in through the week making judges' deliberations more electric than usual. When seas were calm, judges enjoyed traditional junk boat sailings with an evening light show and views of the city's skyline.

Behind the scenes, the HK IWSC backroom team lead by David Li, carefully planned, organised and laid-out bottles, lled glasses and secured judges' scores. Also critical to the competition's success was the constant stream of fresh co ee supplied by Nespresso which kept judges alert. Nespresso also came to the party with co ee cocktails at o cial dinners.

Each year, Asia's top beverage professionals eagerly await HK IWSC's annual results to inform their drinks lists. In this booklet, you too can discover the trends that will drive this year's selections.

This year HK IWSC welcomed 74 Asian judges from 10 cities, as well as International VIP Wine Judge Diego Pinilla, group director of winemaking at Spain's Raventós Codorníu. Wine judges were welcomed to Hong Kong at an o cial dinner at Spanish restaurant FoFo by El Willy.

VIP International Spirit Judge and baijiu expert Wu Yi, deputy chief distiller at JiangXiaoBai, Chongqing Jiangji Distillery, presented a fascinating SPIT masterclass on the world's most-consumed spirit to judges and members of the Hong Kong trade. Anty Fung and her professional team at AnOther Place hosted a consummate welcome dinner.

HK IWSC showcased world wines and spirits at Sake Central for its popular 'Test Your Palate' tasting event, giving consumers a glimpse into Asia's hottest wine and spirit trends.

A highlight of the competition's event calendar, Test Your Palate invites the public to mingle with experts at the close of each judging day to taste hundreds of competition entrants and award winners. This year, the event was elevated to new heights with a series of workshops held at stylish bar, Sake Central.

The Japanese-inspired resto-bar is situated in Hong Kong's iconic PMQ building, where 300 wine lovers were treated to sake and cava food pairing presentations by Sake Central's Matteo Ceravolo and HK IWSC International VIP judge Diego Pinilla, group director of winemaking at Spain's Raventós Codorníu.

Held annually, Test Your Palate is a fun opportunity to taste and discuss diverse and exciting international beverages with HK IWSC's expert judges.

Sense and Sensibility

Wine enjoyment is not designed to be an academic exercise, but there is science behind what in uences our tasting experiences. People's palates are persuaded by all the senses—not just taste and smell, but also sound, sight, and touch. Imagine lounging on a comfy sofa in a VIP lounge, P-Diddy blasting through the speakers, everyone bathed in sexy red lighting. Is it just you, or does this pinot taste more plummy than usual? The mind absorbs all sorts of cues from the environment, and these inform your tastebuds.

In 2014, cognitive neuroscientist Professor Charles Spence from Oxford University conducted a psychological experiment that discovered colour and sound could a ect people's taste of wine by 10%. The Campo Viejo Colour Lab revealed that red lighting brings out wine's fruitier notes, whereas green light brings out its freshness.

Sound and music can also in uence people's wine tasting enjoyment. Studies have found that classical music can make people rate a wine as more expensive, and ethnically appropriate music can help bring out wine's

typicity. Chilled-out music motivates people to eat and drink more by encouraging customers to linger longer, whereas loud music increases chewing speed and makes us eat faster—a trick some restaurants use to encourage higher table turnover during busy lunch sittings.

The lesson is that wine enjoyment is a total sensory experience—and a subjective one at that—which is not driven by taste alone.

Food and wine pairing encountered controversy recently when Tim Hanni MW, a professionally-trained chef and US-based Master of Wine, called the idea of a perfect wine pairing nonsense, claiming it is "arrogant" and makes many consumers "feel stupid". Hanni also argued that food and wine pairing has no potential in China.

Wine experts and sommeliers weighed in, commenting online at The Drinks Business (https://www.thedrinksbusiness. com/2019/02/tim-hanni-mw-food-and-winepairing-is-bullsht/) that it is possible to elevate the food and wine experience with the right combination.

Most sommeliers acknowledge that Asian cuisines, with their myriad spices, seasonings, sauces and condiments, pose an added layer of challenge, but insist that good pairings do exist and are a critical part of the suite of tools used to convert and educate consumers. Eleven years' experience in judging the food pairing category of the Cathay Paci c Hong Kong Wine & Spirit Competition (HK IWSC) has progressively shifted preconceived notions about what wines match best with Asian cuisines. Undeniably, it is the sauce— not the protein—that is the guiding factor in many Asian pairings.

"The challenge, for the most part, has always been that since wine is relatively new to many Asians, they are afraid to experiment. I rmly believe that to increase wine culture in Asia we must educate people on how to pair the local cuisine with wine," said Nikhil Agarwal, an India-based sommelier and CEO of marketing and consulting agency All Things Nice.

One of Agarwal's favourite pairings is vada pao—a deep-fried spiced potato dumpling enclosed in bread—with a viognier chardonnay from Languedoc. "I love pairing Indian food with wines from all over the world. The cuisine has so much to o er. I especially enjoy pairing hyperlocal cuisines with overseas wines."

Agarwal also had success with a wine dinner that paired Thai food, a notoriously tricky cuisine to pair due to its complex avour combinations, with Indian wines. He recommends making wine pairing events relatable by serving street food or regional delicacies. Aromatic biryani with a slightly o -dry rosé, or charred kebabs with medium to full-bodied tannic reds both work well, he said.

Marie-Paule Herman believes another approach when introducing new wines to a previously unfamiliar market is to create ethnic associations between wine, food, culture, music and art.

Herman is group sommelier at Maximal Concepts, which operates some of Hong Kong's most popular and exclusive restaurants, including Chinese ne-dining restaurant Mott 32. "Countries like Portugal and Georgia would bene t from showing, not only their country's wines, but also the lifestyles of their citizens through music, food, and the arts," she said.

Herman said riesling is the most food-friendly wine to pair with Asian cuisine. "I love riesling. For me, all Asian food pairs well with riesling—dry styles with salty dishes and o -dry styles with spicy ones. Riesling makes such interesting combinations with food."

She concedes, however, that Asia's shared banquet-style meals make pairing di cult, although she doesn't think sommeliers should give up on pairing altogether. "There are certain types of wines and foods that guests would never guess pair well. For example, a food-sherry pairing can alter the tasting experience altogether. I've had a mushroom dish with celeriac and tru e paired with oloroso that was fantastic, and manzanilla goes nicely with fried crab and garlic."

Despite its challenges, Herman said tasting menus, wine pairing, and wine dinners are great ways to teach guests about new wines, grapes, and styles. "They learn and enjoy at the same time. For a sommelier, it is the best feeling ever if guests come back and ask especially for you because you taught them something new."

James Teng, head sommelier at The Middle House Shanghai, agrees that umami-rich food (savoury avour) pairs well with sherry, sake, and Chinese rice wine, and says food that has a "cooling e ect" on the body, like hairy crab, traditionally needs the "heating e ect" of alcohol to balance the body's yin-yang. Overall, though, he feels food-wine pairing is a "western-imported" idea that doesn't ring true in Asia.

"For many locals, food and wine pairing is a gimmick. Tasting menus work better in restaurants that serve European cuisine or places where dishes are served course by course, such as French restaurants, but I don't think people care in Chinese restaurants."

One pairing trend that Teng says works in China is to serve wellknown labels at business dinners where hosts are seeking to gain "face" by serving guests and clients expensive wines.

Paul Eun, wine manager at South Korea's May eld Hotel and Nakwon restaurant, said wine culture there is developing on multiple levels: Champagne and sparkling wine are gaining ground from whisky at dance clubs, while everyday wine culture is encouraged by sales of a ordable supermarket wines. Eun believes that in Korea, wine can be paired with the seasons, weather, and gender by branding something as a "gentleman's wine," for instance.

Wine pairing should be seen as part of people's lifestyles. I was once served Champagne during a shopping experience at a luxury brand store in Hong Kong, which I think is such a fresh idea.

Another pairing trend taking hold in South Korea is celebrity endorsements, with wines associated with businessmen and sportspeople gaining celebrity status, such as Samsung Group's Chairman Lee, or famous golfer Se-ri Park.

But food-wine pairing has the potential to expand South Korea's wine market further, Eun said. "Koreans are meat lovers. Charcoaled meat and Korean barbecue go with tannic red wine and pairs well with varieties such as touriga nacional." Marinated meat needs structured red wine to stand up to the protein and avour of Korea's soy-sauce heavy dishes, he added.

"The launch of the MICHELIN Guide Seoul has increased people's interest in gastronomic pleasures, and I believe tasting menus with paired wines will become increasingly popular in South Korea," he said.

Eun suggests o ering mixed pairing menus that include both wines and soju (Korea's popular high-alcohol drink) to introduce wine to South Koreans who are not yet familiar with it.

As Asian food and wine lovers become more sophisticated in their demands, the promise of a food-wine pairing expert alone is no longer enough to lure them to events or dinners. Now, they seek bundled experiences that combine food, wine, décor, entertainment, arts and culture that they can share with friends and post on social media.

The trick in Asia is not to get stuck on pairing rules and conventions. Instead, forget constraints, stimulate all the senses, and round out the experience with complementary elements.

Trophy Winners

The Judges are rst separated into panels and are then presented with ights of wine organised by region, area, variety, style, type, vintage, age and so on. All wines are blind -tasted to ensure impartiality and judges are not permitted in the preparation area at any point during the tasting. Judges are provided with score sheets on which they mark their respective samples individually without comment.

Once all judges have nished tasting and scoring their ight, the panel and panel chair congregate to openly discuss the scores. If there is any signi cant disagreement over one particular sample, it may be referred to another panel for a second tasting. Gold, silver and bronze awards are then allocated depending on the product's score out of 100. The highest marks in each category are passed on for a second tasting to compete for the national and international trophies.

What is the most common misconception about your job?

That distillers can only be men, and that we have a high alcohol tolerance because we drink every day.

What was your rst job in the industry?

I worked on a production line in a distillery.

What are the biggest challenges in the industry today?

Changing guest expectations; consistency; and di culty attracting young people to join the industry.

What will 2020 bring?

There will be a lot of opportunities in 2020. As distillers, it is our job to produce high-quality baijiu, to make sure every drop is the nest, while we catch up with the times.

What is your secret indulgence?

Tasting the world's ne wines—I wish to devote all my energy, dig deeper and explore the sensation of tastes in the world, to unveil the full potential of the palate!

What is the most common misconception about your job?

I'm very lucky because I always get to eat out and I'm always drinking great things, but that's not as amazing as it sounds. If I don't feel like eating or drinking one night, I can't just say no and stay home—I have a professional obligation. In fact, some of my favourite meals are the wholesome ones I'm lucky enough to eat at home!

What was your rst job in the industry?

I worked as a server at Earl's Restaurant in Banker's Hall, Calgary, Alberta, Canada.

What are the biggest challenges in the industry today?

The general public thinking that one style "Junmai Daiginjo" is superior to all other styles of sake. Understanding the importance of proper temperature storage for sake and the notion that it usually is produced to be consumed within a couple of years of production. Sake doesn't age the same way wine does!

What will 2020 bring?

Increased awareness regarding the diversity of sake, and people enjoying it with food from all over the world!

What is your secret indulgence?

Ketchup Chips smuggled in from Canada. There's a sake to match them with, too!

As a chef, I don't always cook professional meals outside work. When we're at home or with friends, we just cook simple, comfort food.

I grew up around my parent's hotel, but I never worked with them. At 14, I began working at a bar; then I went to school to become a chef.

What are the biggest challenges in the industry today?

Changing guest expectations; Consistency; and Di culty attracting young people to join the industry.

What is the most common misconception about your job?

Hmm, that we are just salespeople who lack wine knowledge and have no clue about our products.

What was your rst job in the industry?

I started working part-time in a ne dining restaurant when I was 15. I recall attending a wine tasting, and I got quite drunk!

What are the biggest challenges in the industry today?

Competition among wine merchants is even greater than before. Independent traders set up shop and their prices can sometimes be slightly cheaper. That might paint a negative picture of large, established merchants.

At the end of the day, it always comes down to having the right price. Vinum continues to educate our customers that good provenance comes with a higher price tag. Then, it all boils down to being the cheapest in the market. Tiny margins are sadly unavoidable.

Quality of sales sta is important. Apart from having wine knowledge, our industry requires sales sta to have a good client portfolio too.

What will 2020 bring?

There's so much uncertainty in the global market on almost every continent. This might turn out to be one of the worst periods our generation has seen. So, in view of this, it is di cult to project. Having said that, we should strive hard and never to give up.

What is your secret indulgence?

I love snacking while reading or Net ixing!

What is the most common misconception about your job?

While there is an element of truth to it, people often think that running a brewery primarily involves drinking beer all day!

What was your rst job in the industry?

Prior to starting Young Master, I worked in nance and I was just an enthusiast with no direct professional experience in the industry. Homebrewing was my hobby.

What are the biggest challenges in the industry today?

Misinformation: Craft beer is still a nascent industry across Asia and a number of players have started in recent years. Some use 'craft' as a buzzword without truly practising it. Education is key to the industry's healthy development.

Anti-competitive business practices: Large players are often able to lock-in exclusive supply contracts, preventing smaller businesses from gaining a distribution foothold. Enhancing sophistication of end consumers will help the industry ght back.

Production space: Industrial spaces in Hong Kong are limiting the scale and nature of brewing operations that can be built. Common sense regulatory changes could help this situation, but beyond a point, this will constrain development.

What will 2020 bring?

We will maintain our focus on making the best beer in Asia and building the highest quality ecosystem possible around our beers in the markets we serve. 2020 will see us further deepening this drive.

What is your secret indulgence?

A glass of our bourbon barrel-aged imperial stout – Hak Mo Sheung paired with an Arturo Fuente Opus X.

What is the most common misconception about your job?

That our job is easy and it's all about drinking good wines. In fact, our job involves tasks such as inventory control, cellar management, upselling and service of wines, plus much more. Also, it's often thought of as a profession for males only. I often encourage females who demonstrate potential to consider being a sommelier. Many women have elegance, air, and excellent tasting skills.

What was your rst job in the industry?

I have always been involved in wine retail and importation/distribution. But my rst job in the F&B sector was Chief Sommelier at Hilton Sentral Kuala Lumpur, Malaysia.

What are the biggest challenges in the industry today?

There are always new wine countries and sommeliers need to keep abreast of new developments in countries such as China and Georgia, etc.

Unfortunately, fake wines continue to be a challenge for our industry.

Lack of recognition and respect for wine knowledge and skill. Often salaries are not commensurate with the additional knowledge required by a sommelier or chief sommelier—we are graded similarly to restaurant employees.

Despite the best of intentions, even professionals nd it challenging to be completely impartial. Double-blind tasting removes prejudice, favourable or unfavourable, making it the most honest form of tasting. If, for example, a wine was identi ed as a Bordeaux rst growth, or served from a clearly de ned bottle shape, even the most practised judge might be swayed.

e Palate Has It!

HK IWSC prevents bias by pouring wines in the back room, which is o limits to judges during judging. The only identifying feature on the glass is a number. The wine is what it is—nothing more, nothing less—judges do not know its name or brand, just its context (region, grape, and vintage). This context is important, so judges are comparing like with like and not a French burgundy against Californian zinfandel.

With judges left using only their palates as a guide, HK IWSC entries receive a fair critique. This creates opportunities for amazing wines, sakes, spirits and beers to shine, and for some surprising award winners to emerge.

Following an era of globalisation and mass production, we've seen a recent return to demand for craft products, authenticity and sense of place in food, wine and products. There is no better example of a winemaking nation who ts this mould more perfectly than Georgia.

This Spring, Debra Meiburg MW took a group of Hong Kong and China wine professionals to Georgia to visit the wineries and meet the winemakers rsthand.

Starting in the capital city, Tbilisi, the group visited nearby region of Kartli and Georgia's newest o cial region, Bolnisi. They then spent several days in Kakheti visiting wineries and exploring the region - from tiny, traditional boutique producers who've continued their centuries-old family traditions, to larger modern, internationally-focused wineries.

Chateau Mukhrani is a property that fuses traditional and modern. Situated in Kartli region, just 40 minutes' drive northwest of Tbilisi it was founded in 1876. Today's beautiful white Chateau and winery (which began construction in 1873), boasts some of the most modern winemaking technology in the country. Yet, its most recent addition is a marani — a traditional winemaking cellar, complete with qvevri — clay vessels buried underground for wine fermentation, ageing and storage. This symbolises the return to tradition that has been the earmark of the wine renaissance in Georgia.

Kakheti is ground zero for Georgian wine - its most prominent region - responsible for 90% of the country's wine production. The group visited many wineries in the region, including Schuchmann, Papari Valley, Vazisubani, Jakeli, Orgo, Tchotiashvili, Pheasant Tears and more.

Schuchmann, headed by Gogi Dakashvili, is one of the most admired wineries working with traditional-method winemaking. They have just opened a beautiful boutique hotel on the property, yet another emerging feature of the Georgian wine industry: a focus towards wine tourism.

Georgia's wine heritage has been revived by people such as Pheasant Tears' founder, American musician-turned-winemaker John Wurdeman. It has a cult following and is featured at a small number of exclusive restaurants around the world. John recognised Georgia's unique place in the world and rallied the local industry to return to their roots and focus on reviving traditional winemaking and grapes and sharing this unique wine on the world stage.

While many cultures around the world hold wine closely within their social fabric and cultural roots, most who've been to Georgia argue there is no country in the world where wine is so deeply intertwined in the everyday lives of almost every person in the country.

This session will explore what a noble variety is and why they are important to the global wine industry. Examining the history and DNA of saperavi, its key survival characteristics, and why international growers have begun adopting it, saperavi will be explored in relation to the noble varieties like cabernet, sauvignon, syrah, and merlot.

Is Saperavi a Grape of the Future?

With climate change a major concern of the global wine industry, 2019 has seen an aggressive approach to dealing with these challenges, with Bordeaux annoucing the use of five new grape varieties. Experts will together discuss climate concerns of grape growers and winemakers, which grapes are set to thrive in increasingly warmer conditions, and how saperavi’s unique structural and behavioural characteristics may see it emerge as a significant “grape of the future”.

A significant comparative tasting of global saperavi will form the final session, offering an unparalleled insight into the effect of terroir, global viticultural techniques and winemaking practices – traditional and modern. Ah gin, the uncomplicated drink of the spirits category—simple to produce and easy to consume. Gin obtains its tart avour and oral aroma from juniper berries and botanicals. Recently, popular styles such as London dry gin, navy strength and old tom have made way for exciting new styles of distilled and avoured gins that incorporate delightful fruit and botanical combinations.

Gin led global alcoholic beverage consumption in 2018, up 32.5% in the UK and 8% in the world's largest gin market, the Philippines. Growth in Asia was fuelled by an exploding cocktail scene and market premiumisation. Not only have we seen creative takes on classic gin cocktails such as G&Ts and martinis, but there are also premium styles that are sipped neat or on the rocks, tapping into Asia's huge whisky drinking culture.

Gin's link to whisky is strong. Many gins were developed out of a need for distilleries to fast track their cash ow while waiting for whisky to age. William Grant & Sons launched Hendrick's Gin in 1999. Legend has it that inspiration struck master blender David Stewart while he was sipping gin and eating a cucumber sandwich in Hendrick's rose garden. Infused with cucumber and rose essences, Hendrick's deviates from traditional London gin into which nothing but water can be added after distillation.

Europe does not boast a monopoly on interesting gins, though. Unlike scotch,

bourbon and tequila, gin has no geographical boundary. Asian whisky producers such as Suntory, Nikka, Kavalan and Amrut also produce gin, while in Japan, sake and shochu makers such as Hombu, Sakurao and Komasa have built on successful liqueur brands by adding gin to their product range. Any association with high-quality whisky producers is a guaranteed pro le boost for next-gen gins in Asia. Brand owners will showcase gin alongside popular whiskies— The Botanist with Bruichladdich, Hendricks with Balvenie, Roku with Suntory—to win fans.

There is no requirement on where to source botanicals for gin, but in an attempt to retain freshness and individuality, Asian gin producers may have stumbled onto gin's own version of 'terroir.' In Hong Kong, Handover Gin uses native Chinese herb Horny goat Weed as a botanical ingredient in its locally produced gin, while artisanal small-batch producer Hong Kong Gin uses the bauhinia ower, Hong Kong's national emblem, to unite botanicals in its Bauhinia Gin. Japanese gin producers also tend to use local botanicals as much as possible.

An exciting aspect of this new evolution of gin styles is the creative way in which producers use botanicals and how well they balance with juniper. This year's winners provide a glimpse into what the future holds for the gin category, which is already reshaping bar and cocktail culture throughout Asia.

Introducing HK IWSC's Young Communicator of the Year, wine and whisky lover Cecilia 'CC' Wong.

Cecilia Wong is Hong Kong's foremost woman about town when it comes to whisky. A columnist, speaker, and blogger, CC journeys to the world's great distilleries and wineries to discover all there is to know about drams and vines.

One of Hong Kong's rising stars, CC imparts her wine and spirits knowledge to audiences in Hong Kong and China through social media on 'CC Wine Voyage' (Facebook, Instagram, WeChat, and Weibo). She also contributes whisky and wine content to local and international publications.

A WSET Diploma candidate and certi ed Whisky Ambassador Trainer, CC regularly hosts tasting classes in Hong Kong. Her way with words has also gained her prominent speaking engagements with events by The Glenlivet, Aberlour, Volvo, Best of British, Tomatin and the Wine Luxe Whisky Saloon.

CC is a sought after judge who has worked with the Hong Kong Wine Judges' Association and the Judging Committee of the Hong Kong General Chamber of Wine & Spirits. She serves as Vice President of Wine & Spirits Identi cation & Certi cation and is a member of the Hong Kong Wine & Spirits Writers' Association.

CRAFTY DRAUGHTS AND BIG-NAME BREWS

In this year's newest HK IWSC award category, Blue Supreme's bar manager Warren Yu looks at the advantages and opportunities of being crafty in beer-loving Asia.

Beer is serious business in Asia—Japan, China and Vietnam are the region's thirstiest beer markets, and consumption is high in Taiwan and Singapore. Beer is also on the rise in Hong Kong and other Asian markets. Here, zero import tax means there is a wide range of international craft beers on our doorstep, with local breweries ourishing.

Before we reveal the winners of HK IWSC's rst-ever Beer Awards, let's dispel some myths about the hot global trend. First, 'craft' does not always mean 'small.' In fact, some United States' craft breweries are far bigger than Hong Kong's largest breweries. Nor does it mean 'homemade' that misconception can be attributed to its historic translation as handmade beer, or homebrew ( ). Taiwan's more accurate translation 'carefully crafted' ( ) is better.

Like all beer, craft beer is made using four ingredients—grain, hops, yeast, and water—and each ingredient has a strong in uence on the nal product. Judging is

not just about choosing a 'good' beer, but also understanding how well the beer expresses the brewery's style. To do so, we need knowledge of how the beer is produced.

I began my beer journey ve years ago when the term 'craft' was still new to the market. While working as a homebrew instructor and beer taster, I gained my judging certi cation from HK Brewcraft, a homebrewing supply store and one of Hong Kong's rst beer education centres. Now Hong Kong boasts many certi ed beer judges. Greater education is helping break down misconceptions about craft beer and also generate demand.

One of my areas of focus is to attract more females to the category. Traditional beer marketing is heavily male-focused, but with craft beer I see an opportunity to appeal to females. In general, women are more detailoriented and open to well-crafted, high-quality products. The sometimes sweet, fruity, unusual avours of many craft beers lend the category a diverse range of marketing approaches.

Observing greater demand for beer in Hong Kong, I moved to specialist beer gastro-bar Blue Supreme as bar manager in order to connect with a broader spectrum of customers, spread education and respect for the category, and share my passion for beer.

At just 3% of the overall beer market in Hong Kong, compared to 15% in the US, there is a lot of room for craft beer to grow here. Thailand is also a market to watch, with premiumisation on the rise and a growing gastronomy scene.

You joined the Cathay Paci c Hong Kong International Wine & Spirit Competition as the 2019 VIP International Wine Judge. What did you think of the experience?

It was GREAT! It was so exciting to taste wines from so many countries, with Asian judges! The experience gave me a deeper understanding of the Asian market and Asian consumer preferences.

Are Asian judges "tougher" than other judges from around the world?

I would not say "tougher". However, they are very skillful and have a very clear idea of what they like and also well-de ned criteria of each zone and what the zone needs to re ect.

The HK IWSC has a unique Asian food and wine pairing awards category. Tell us about your judging experience?

The major learning was that sometimes the wines that better paired with food were wines that perhaps as judges we wouldn't have scored the highest alone, which means that we should consider many other features when we are scoring.

Do you think Asia thinks about food and wine pairing totally di erently to Spain or quite similar?

Not that di erently, after all pairing "rules" are universal. Asian and Spanish food —if they can be compared— have at least one thing in common: food is more than eating: food is culture. It's no wonder Asian food markets have such an interest for visitors; they are colourful, cheerful, varied, alive and incredibly surprising.

The only di erence is that Asian food in general, because of its spicy and bittersweet pro le, require sweeter, dense, aromatic white wines or ripen reds. Spanish food in general matches well with very structured reds and not too old whites.

Cava and Codorniu have a wonderful shared history. Please tell us this story!

We need to go back to 1551 when Jaume Codorniu, who was an heir of Codorniu, wrote a will with a legacy of winemaking tools. Some generations later, his descendant Josep Raventós made the rst bottle of Cava in history in 1872. And his son, Manuel, built our outstanding winery, which is known as the Cathedral of Cava, a magni cent Art Noveau building which nowadays is a national heritage. We have been making wine for more than 460 years and we have never stopped looking for the best expression of our vineyards and the best quality for our wines. After all, not everybody has such a priceless winemaking legacy.

You hosted a Cava and food pairing workshop at Sake Central during Test Your Palate. Were you surprised by any of the pairings? (And which was your favourite?)

Of course I was surprised! There were two pairings that left me speechless: the Shisho oyster with an acidic sauce paired stunningly with Codorniu 1551 brut. And, even more innovating was the Wagyu tartar with Gran Codorniu Pinot Noir, which is a rose cava with more structure. Truly impressive!

For guests who have never tried cava, how would you "sell" it to them as a sommelier in a restaurant or salesperson in a wine shop?

Cava is a very generous quality sparkling wine made with the Traditional method that cannot be compared to any other quality sparkling because cava is cava. It means it has its own personality. It can be aged for at least 9 months —these young cavas have a crispy fruity pro le— and then they can age for 15, 30 or even more than 90 months. The longer the ageing is, more complex and elegant the cavas become, while they manage to keep the fruit.

Also, Cava is a sip of Spain, the genuine varieties (macabeu, xarel·lo and parellada) intermingled with international ones (chardonnay, pinot noir, grenache) thrive and blend in amazing outcomes.

Cava is must for customers who seek elegance and balance, for those who just want to enjoy delicious ne bubbles, for a toast, for a meal or just to relish.

With all these nuances, it is impossible that there is a dish in the world that could not nd its perfect cava match.

Aside from Cava, which of your other Spanish wines or wineries do you think are best suited to the Hong Kong market?

Biased I can seem, elegant Viña Pomal Rioja wines are a treat for the senses for the Hong Kong market. Our wines from Legaris are perfectly backboned and balanced.
