NOTE menu… but we won’t give it all away here. Read our cover story for the full scoop! We’re trying (and failing just a little) to stick to our New Year’s resolutions of eating healthy and getting fit. We thought an interview with the gorgeous and incredibly toned Cara Lisa Sham, founder of the Caralishious brand. We got to know what a day in her yogi-life is like, and she even gave us a few helpful tips on how to have healthier cooking habits. It’s a must-read! Last, but certainly not least, we’re celebrating the power of girls, because another powerhouse woman has joined the team over at Restaurant Mosaic. Want to be in on the gossip? A chat with Lifestyle and Health Blogger Caralishious

What would be your ideal working environment? Light bright and spacious. A sunny office with pot plants, a white board for brainstorming and my little Toy Pom by my feet! How do you want to improve yourself in the next year? I want to take my yoga practice to the

next level and build the Caralishious brand and offering even further. More importantly, I really want to work on being more mindful and meditating more frequently, so that I’m better able to focus and manage stressful situations. What’s a day in the life of Caralishious like? I am usually up by 5am. Mornings are my ‘me’ time. On rising, I set my intention for the day and affirm this for 5-minutes before getting out of bed. Once I’m up and about, I drink a large mug of hot water with lemon, apple cider vinegar, cayenne pepper and cinnamon to cleanse my system. I also take a probiotic to promote healthy digestion. By 6am I’m at the gym for an hour or so, and then I enjoy a nutritious breakfast. I usually opt for rolled oats or chia pudding, and if I am feeling a little flat, I’ll add a scoop of vegan protein powder to give me that extra kick. I’m usually working by 8:15am, and make sure to take regular breaks to keep my energy levels and concentration up. In terms of my work day to day, it can range from admin and catching up on emails, to photo shoots, meetings, work travel, writing posts for my blog, taking photos, editing images, doing product reviews, interviews, attending launch events and checking up on my product at the various stores we supply and chasing orders.

Do you have any tips for building healthier cooking habits? 1. A lways use coconut oil or olive oil if you’re frying or grilling. 2. If you’re using sauces, opt for ones that contain no sugar and are low carb. 3. Try to steam most of your vegetables until slightly cooked. 4. For animal proteins, rather oven grill than fry. 5. I f you’re baking, use xylitol instead of sugar, and almond or coconut flour instead of normal wheat flour. 5 www.caralishious.com f @caralishious U @caralishious  @caralishious

Surrounded by a relaxed and social atmosphere, the objective of Culture Club is for you to share and enjoy all different types of meals, instead of everyone ordering their own meal – hence the tapas vibe. From dips like hummus, roasted red peppers and tzatziki, to spreads like Brandy infused chicken liver pate with caramelized onions. If you’re in the mood for a filling and tasty salad, we highly recommend the lemon and herb chicken fillet salad. We loved the taste along with the microgreens! Perhaps you’re trying to decide if you’d like some vegetables or nibbles such as crumbed halloumi bites with tzatziki, or chorizo pesto lollipops. From chicken and prawns to fillet stripes, your main meal is taken care of ! Now, we can’t let you leave Culture Club without indulging in the mouthwatering churros served with dark chocolate ganache. Apart from the delectable foods, no visit to Culture Club is complete without a trendy gin and tonic! With an ever-growing gin collection, you’ll just keep ordering more. Cheers to that we say!

Behind the knives… Andre Bezuidenhout, the Chef de Cuisine, discovered his love of food as a small boy, cooking in his father's kitchen. A sip above the rest… Boitumelo Maphela, the new Sommelier, attended the Cape Wine Academy for 2 years, and completed 4 certificates and trained at Boschendal and the Haute Cabrière wine estates. She refined her craft as sommelier at Hyde Park Corner Southern Sun Hotel, and certainly knows her way around a bottle of vino. Signature dishes that stand out from the crowd include the divine Venison Carpaccio;

a taste of the wild in the city with traditional pickling and curing flavours. The enigmatic and theatrical Under the Ocean is inspired by the largely undiscovered ocean floor around the world, with a splash of cold cucumber vichyssoise and a bed of different textures to transport you to the far-off seas. The Bobotie Ravioli is a modern take on the Italian staple, with traditional Cape Malay Bobotie and homecooked Zulu cabbage. Another modern twist comes in the form of the Stout Braised Beef Short rib mixed with a delicate parmesan samp, redefining the traditional food and elevating the flavour with a maas dressing.

WHO RUNS THE WORLD?

Taryn will be bringing vino to a team that is already packed with girl power, as Chantel has a strong female brigade in the kitchen, while her mother Mari Dartnall oversees the restaurant’s front-of-house. “I enjoy seeing the difference in the style of cooking and presentation between male and female chefs, but for me there is no gender, cultural or racial boundaries when it comes to talent,” explains Chantel. Just like us, the chef is pleased to have another powerhouse woman on the team. “I’m delighted that more women are making

their mark in the food and wine industry, and I just know that Taryn is going to become a key asset to the Mosaic team. She has a fantastic palate and is going to be a force to be reckoned with on the South African wine stage.” Taryn (who was previously at Marble) will be working alongside Mosaic’s Moses Magwaza, who just happen to win the coveted Wine Service Award at the 2017 Eat Out Awards last year! “It’s any sommelier’s dream come true to work in a restaurant which boasts the finest cellar in Africa, with more than 75 000 bottles of wine under 5 500 different local and international labels. Mosaic is renowned across the world for its meticulous food and wine pairings and I am thrilled to be working with Chantel and her team,” explained Taryn. Mosaic’s cellermaster and sommeliers are

already hard at work, planning exciting wine tastings for guests to indulge in, while Chantal and her team of talented chefs are working on a spectacularly seasonal autumn menu, which is set to launch on 22 March. If you haven’t already visited this incredible restaurant, then we highly recommend you pick up the phone and get booking! PICTURES every tourist should take 1. Panoramic views at the Union Buildings Possibly one of the most recognizable heritage landmarks in Tshwane, the Union Buildings, a 285 metre long sandstone building was designed by renowned English architect Sir Herbert Baker in 1910 to mark the union of South Africa. Why it’s important to us: You strike a woman, you strike a rock said the voices of 20 000 people who marched on the Union Buildings on the 9th of August 1956 led by South African women of all races protesting against the apartheid pass laws. Besides, nothing says I touched the rains down in Africa like posing in front of a 9m-high bronze statue of Tata Madiba. And even if you’ve had pictures with some of the other incredible memorials to

Pose for pics in the Pretoria National Botanical Gardens The gardens really are breathtaking with special features that include the treed wisteria avenue and special collections of medicinal plants, cycads, aloes, tree species, succulents and natural ridge vegetation Why it’s important: The Pretoria National Botanical Garden, founded in 1946, is home to the Head Office of SANBI (South African National Botanical Institute) and successfully bridges the divide between scientific research and the recreational environment. Where is it: 2 Cussonia Ave, Brummeria, Pretoria 4. We love a Ludwig’s Rose Less about history and more about pretty and playful, Ludwig’s Roses was established in 1971, north of Pretoria. From small beginnings, through hard work and passion

this specialist nursery has grown to become the strongest rose brand in South Africa. Their strength lies in the vast variety of roses stocked and in the quality plants that they propagate. FYI: you can also purchase roses all year round Where is it: 61 Haakdoornlaagte, Pretoria 5. Ditsong National Museum of Natural History The Ditsong National Museum of Natural History, once known as the Transvaal Museum, is a natural history museum situated in Pretoria, South Africa. So why all the fuss? Well if fossils and relics are your things, then this one is for you. or Gin... whatever

H

ello Pretorians, we’re renewing our gin membership and you should too! Cape Town based premium spirits company Truman & Orange has bought us the perfect reason, and it’s in the form of the brand-new Malfy Gin Originale. 5 www.malfygin.com

Let’s not get ahead of ourselves, because we’re taking time to indulge in the Malfy Gin Originale. Just a quick fun fact – did yoou know that the originators of gin were Italian Monks, who first distilled Juniper spirits at their monasteries along the Amalfi Coast as far back as 1050? Well, Malfy Gin Originale is distilled using a recipe that pays homage to these gin-iuses! It’s made using eight local Italian botanicals blended with pure glacial water from Monviso Mountain, which is the highest altitude spring water source in Italy. Malfy Gin Originale has a beautiful balance of juniper from Tuscany, giving it a peppery

24

aroma and distinct herbal flavour. There’s also a splash of coriander, cassia, angelica root, Italian Orris root and dried local citrus peels from lemons, grapefruit and oranges – all from Italy – and of course, if wouldn’t be Malfy Gin if it didn’t have those subtle citrus notes. It has a crisp, clean, classic flavor profile with an Italian twist, and we can’t get enough! The bottle is also a thing of beauty… inspired by the blues of the Mediterranean and the views of the white snow-capped Monviso mountain seen from the distillery, the bottle has a blue base and an Italian oak stopper, while the label has a stunning, simple blue and white colour palette. While the bottle is pretty, we’re sure it would look better empty. Try the new Malfy Gin Originale in one of these sinfully good recipes….

T

he reason for the upgrade? To further elevate the service and experience for their guests, of course! Menlyn Boutique Hotel prides itself on delivering only the best for their guests, so it’s really no wonder this venue is first choice for business and leisure travelers heading to Pretoria. Quintin Wiehahn, Managing Director of WH Leisure Group, explained that the hospitality industry requires establishments to regularly reinvent themselves, and adapt to the pace at which the industry changes. “We endeavor to adapt and change

by adopting new trends so that we can better service our guests.” The hotel’s facelift included expanding the five starsignature restaurants kitchen. The Black Bamboo kitchen now has a fabulous, state-ofthe-art pastry section, which Quintin explained, was a long-term dream of the hotels. “Since the completion of the renovations, we’ve created wonderful dishes in the new kitchen! This further adds to our commitment to providing our guests with an unforgettable dining experience,” explained acclaimed Head Chef at The Black Bamboo, Pellie Grobler.

In addition to the fancy new pastry section, the Black Bamboo restaurant now boasts an extended dining area and a fabulous casual lounge where guests can sip their favourite cocktails in relaxed style and comfort. Did we mention a recreational lounge was also included to incorporate a more sophisticated, modern feel? And last, but certainly not least, the reception area also got a bit of attention, and has been decked out with stunning artworks from acclaimed artist, Lionel Smit. Now, if this doesn’t make you want to hot foot it to this stunning location, then we don’t know what will!

Born in Joburg, Steven has been entertaining for most of his life. In fact, he’s even recorded a track written and produced by Wyclef Jean that had vocal production by Fergie! In 2014, Steven entered X Factor South Africa with his boy band FOUR, which won the competition. Now, four years later, he is breaking out onto the solo stage and has just released his first (totally awesome) single…

minutes

with Steven Lee Lewis What’s the most difficult part of starting a solo career? Probably introducing a new brand to everyone. It’s almost like starting fresh as an 'unknown" artist. You also have to build a new fan base and do something that catches the market's eye.

U @StevenLeeMusiq  @stevenleemusiq

Hello Pretoria • March 2018 • Hellopretoria.co.za

Where do you find the inspiration for your music? I feel that I have a lot of creative energy, but I also find inspiration and motivation from other artists, as well as experiences in my life. I grew up listening to Michael Jackson and Kwaito music - I know that's a strange combination, but maybe that’s what makes me who I am and gives me my performance abilities. Always wanting to be great inspires me!

Tell me more about your new single, ‘Only You’… ‘Only You’ was a concept I came up with for a song. I approached a very talented producer, Kyle Mitas, to assist me with the production for it. When he sent some ideas, I was super excited to finish the writing. I wrote the song, and everyone was happy, so we got moving straight away. I was going for an Afro House/ Dance Hall vibe, which infuses Pop/Urban sounds as well. ‘Only You’ is about that one special person in your life that you are so addicted to that it makes your heart beat uncontrollably... Any other songs hitting the airwaves soon? At this point I'm just focused on the first single, but there will definitely be a follow up single because I do have more weapons in the armory! I have a great team and I’m certain we’ll be hitting the airwaves with more songs soon.

What are your plans for 2018? My 2018 plans are to release lots of original music, build my brand and build a huge following. I'm ready to set my mark in the music industry because I’ve been at this for years and now is my time to shine! Where is your ideal travel destination and why? New York, because the city is amazing, fast paced and there’s a lot of history and culture especially for a musician or singer such as myself. The feeling you get when actually standing in the middle of the Big Apple just shouts out for you to do something great. What music are you listening to in your car? Destruction Boys - Omunye and Chris Brown. So, a bit of everything.

Words Victoria Taylor Images Supplied

What’s it like going solo? It’s a strange but exciting feeling. I gave my all in the group and sacrificed a lot as I always do in life. Now it’s time for me to take the next step of my journey and show everyone what I am about.
