I

t’s hard for me to wrap my head around this letter being about autumn, but alas, those seasons do keep on changing. Autumn is my favourite time of year in Joburg. There’s a palpable sense of transformation as the cooler days arrive, and the city is overrun by vivid yellow, orange, red, purple and brown. Obviously, our people know a thing or two about change as we’ve all had to pause, reflect and stay home while looking after ourselves in self-isolation for the last month.

We know it’s hard to feel hopeful with much of the world shut down, but Earth is in serious need of our help – and starting to live a greener lifestyle will help pass time and keep you focused on the fact that we have a future worth investing in. SHOP LOCALLY Tired of shopping in a crowded supermarket where everyone is literally rushed, the produce is shipped in from who knows where and natural, cruelty-free products are few and far between? Fret not and turn to Joburg’s local grocery stores instead. Shopping locally is great for you and the planet for many reasons. Fresher food is available at your local greengrocer, most items being sold have limited packaging, you know where your food comes from, the experience is way more fun and, of course, buying locally helps the local economy prosper. Also, ditch the bottled water which creates a lot of needless waste because tap water in Joburg is safe to drink as well as avoid buying things in plastic or Styrofoam – these are heavily polluting materials that aren’t sustainable! REDUCE HOUSEHOLD ENERGY USE If you’re really committed to living a sustainable lifestyle, you need to look for ways to save energy. From simple behavioural adjustments to extensive home improvements, there are lots of energy-saving ideas that you can try. Some simple actions to lower your household energy consumption include turning off lights and appliances that you’re not using; keeping a bucket under leaky taps and using it for the garden; opening windows instead of turning on the air conditioning or snuggling into a blanket instead of turning on the heater; hanging clothes out to dry rather than using the tumble dryer; using a programmable thermostat that lowers or raises the temperature when you’re not home; and installing energy-efficient appliances, solar panels and low-energy lights. When it comes to water, collected rainwater is ideal for watering your garden, while recycled greywater from showers, washing machines and laundry tubs can be diverted to your garden with a plumbed-in diverter or used in toilets and washing machines. You can also buy a water-efficient showerhead – these are super water-saving devices for daily use. As fresh water is getting harder to come by, we also recommend keeping showers to a maximum of four minutes by installing an egg timer in your shower. Hello Joburg • May 2020 • www.hellojoburg.co.za

Top tip: Decreasing your carbon footprint can be as easy as switching to cool water, seeing as 90% of the energy your washing machine uses is for heating water. Washing your clothes in cold water instead of hot or warm water takes very little effort but can make a huge difference in energy efficiency. It also makes your clothes less likely to shrink or fade! START A SUSTAINABLE HOME GARDEN While it may seem like a relatively small step, there’s no better way to perpetuate eating local, sustainable foods than by planting your own vegetable garden. It can provide you with all kinds of healthy, organic options that you and your family can enjoy as well as provide a sense of empowerment because you’re in complete control of what you consume. The best part is that it doesn’t have to be complicated, expensive or time-consuming! Our advice is to start small with one or two potted tomato plants and herbs like rosemary. Then, when you’re ready, move onto planting small beds in squares rather than rows using a 30x30cm grid system. Don’t worry about the quality of soil or dirt in your garden – just make sure you pick a spot for the beds that gets at least six to eight hours of sunlight a day, doesn’t puddle after rain and is free of tree roots. Peppers, beetroots and aubergines are easy vegetables to plant first and they grow fast. You might think that the colder months aren’t ideal for growing vegetables, but April until the end of May in South Africa is actually the perfect time to plant vegetables to grow in winter. Vegetables that thrive in winter include green onions, garlic, peas, spring onions, perpetual spinach, broad beans, kale, thyme, salad leaves and green pepper. You can also plant sage, parsley, chervil, oregano, hyssop, yarrow, sprouts, spinach or Swiss chard, radishes and sugar snap peas. Top tip: To keep your plants warm and add potential for extra moisture absorption, use mulch (grass cuttings, wood chips, straw or other organic material) for crop protection, layered around the vegetables and garden bulbs. Also, cover the squares with garden cloth when severe frost is expected – especially for young seedlings. COOK SEASONALLY In-season produce don’t only taste better as they’ve been naturally ripened and harvested at the right time – they also help cut the demand for out-of-season produce which contributes little to carbon emissions through less transportation, refrigeration and hot houses. Plus, if you buy ingredients that are in season, you help support more sustainable farmers! There’s plenty to look forward to in the kitchen with the bountiful seasonal fruit and vegetables of autumn that make for a more well-rounded and balanced diet. Examples of autumn fruits are apples, avocados, figs, granadillas, grapefruit, grapes, lemons, naartjies, oranges, pawpaws or papayas, pear, pineapples, plums, pomegranates,

QUICK TIPS Consider all-natural cleaning alternatives: Chemical-based cleaning products are pricey, and their manufacture, use and disposal can harm the environment. If you’re using this time to clean up and get organised, use ingredients like lemon, baking soda and white vinegar instead. Make washable cloth goods yourself: Right now, you’re probably using – and wasting – more paper towel than ever. Instead, why not put reusable materials like old cotton cloths, sheets, T-shirts and even bleached or bedraggled towels to good use?

PERFECT YOUR SKINCARE ROUTINE If you follow Tori on Instagram, you know that she advises that you always follow a dedicated skincare routine for your specific skin type. With no need to rush out the door every morning during quarantine, you can take your time and develop a skincare routine that works for you. These are Tori’s top tips to look after your skin – and keep yourself together – until you can get back to your favourite salon, spa or self-care facility. Let your skin breathe “The one perk of being in self-isolation is that it’s a great opportunity to let our skin have a break from the usual makeup we may wear to the office or on our daily errands,” Tori says. She advises allowing your skin to be makeup-free and, as an added benefit, loading on those hydrating products. “Layer essences, hydrating serums and juicy, balmy face creams and let your skin drink these up throughout the day.”

Get into a retinol routine Tori explains that vitamin A, the ultimate anti-ageing ingredient, can sometimes result in flakiness, slight redness and tight skin. “Use this downtime to get into a good routine with your retinol product at night. Without any big events or social commitments, it’s the perfect chance!” She recommends building this up very slowly: Use your retinol once a week for the first month or two, twice a week for the third month and three times a week thereafter. “There’s no need to use it more than this unless your skin can tolerate it, in which case you should use with caution. Oh, and thank me later.” Apply a face mask – often “Nothing feels quite as indulgent as a face mask. I’ve always been a huge fan for a quick pick-me-up and reach for one virtually every single day,” Tori says. Before deciding which mask will be suitable, she explains that you should have a close look at your skin. “Is it red and dry? Pop on a soothing, hydrating mask like the Eau Thermale Avène Soothing Radiance Mask. Is it spotty and full of blackheads? Go for the GlamGlow SuperMud Clearing Treatment. Is it dull and lacklustre? In fact, Tori often says to her readers and followers that everything else is pointless if you’re skipping this step. “Being in our homes a lot more than usual and not ‘out and about’ might leave you feeling that you don’t need this step. This is very wrong as we’re still exposed to UV rays throughout the day – inside or outside; in sunny, cloudy or rainy weather. It’s super-important not to skip this step!” she stresses. Give yourself a facial massage “You know that glow you get after having a facial at your favourite salon? Well, a lot of that glow is thanks to massage, which is so beneficial in getting that blood flowing,” Tori says. She explains that blood flow equals increased collagen production, and that this gives a healthy, natural glow to the complexion. “There are loads of easy-to-do tutorials on YouTube. Otherwise, simply ensure you drain the face in a gentle motion towards your lymph nodes. This helps with puffiness and de-stressing too, which we could all do with now!” POST-LOCKDOWN BEAUTY TREATMENTS Facials and pedicures have fallen wayside – and massages may be a pipe dream until we come out of quarantine – but that doesn’t mean you shouldn’t start thinking about the spoils you’ll be booking yourself in for when beauty salons and spas reopen. Tori shares the skin and other beauty treatments that she’ll be getting done at her favourite local spots when self-isolation and social distancing is no longer. Micro-needling Micro-needling is one of the most popular in-salon treatments with endless results, according to Tori. “I also love recommending this to my readers as it’s suitable for nearly all skin types, conditions and ages – bar a few, so be sure to get a professional’s advice if you’re unsure,” she says. “The treatment is really mild in terms of pain level because your skin is numbed beforehand. The downtime is about three to five days and you’re left with plumper, firmer skin.”

Peels “There are loads of options when it comes to peels – from very mild ones that can be done in your lunch break with zero downtime or discomfort, to much more extreme ones that result in visible peeling and redness,” Tori explains. Brow shape and tint “Well, need I say more?! A good brow shape and tint is one of the first things I’ll be booking myself,” Tori says. You’ll need: ½ avocado 1 tablespoon plain yoghurt (we use the Woolworths Full Cream Ayrshire Plain Yoghurt) 1 tablespoon organic honey What to do: In a small bowl, mash the avocado. Then, add the yoghurt and honey and mix until smooth. It doesn’t matter if the mixture is a little lumpy. Before applying the mixture to your skin, make sure your face is clean. Spread on a thick layer and leave it on for 10 to 15 minutes or longer. Remove the mask using warm water and a face cloth followed by your favourite hydrating mist and moisturiser.

You might be surprised to know that they also contain a healthy dose of vitamin C, a natural skin brightener. On the other hand, yoghurt contains lactic acid which acts as a gentle exfoliant, while honey is a natural humectant that boosts skin’s hydration and dew factor. MUSHROOM RISOTTO & LEMON CHICKEN

Ingredients: 2 cups risotto rice 4 skinless chicken breasts 2 lemons 200g white mushrooms 200g brown/ portobello mushrooms 200g baby portobello 200g shiitake mushrooms 1 onion, thinly sliced 6 cloves garlic, 3x finely chopped, 3x crushed with the palm of your hand 5 sachets concentrate chicken stock 2 litres water 30g curly parsley 6/7 sprigs of thyme 300g butter (salted or unsalted), 200g cubed just to finish the risotto 100g Parmesan cheese

Method: For the stock: Add the chicken stock to the water, then add the stocks of the parsley and the feet of the mushrooms and bring to the boil. Don’t reduce – you only need it hot. If you have spring onion tops, extra thyme or some old herbs that need to be liberated, add them into the stock. the stove. Keep it hot so it’s ready when you start the risotto. For the chicken breast: Cut each chicken breast into five strips. Season with salt, then add a little thyme and a drizzle of olive oil. Squeeze the juice of two lemons and marinate for one hour. You will see the chicken turn opaque – this is normal. To prep the mushrooms: Check that the mushrooms aren’t too dirty. If they are, give them a very quick wash by cupping your hands with some mushrooms inside and quickly running them under the water. The shiitake mushrooms need to have the stems removed, as they are woody and chewy to eat. You can cut them any way you like – I suggest keeping the baby/small mushrooms whole and the shiitake sliced. To cook the mushrooms You will need a heavy based saucepan (non-stick will be fine too). Get your olive oil very hot and add your crushed garlic and thyme to infuse with the oil. Start with your shiitake mushrooms as they need to be caramelised to really appreciate their flavour, followed your larger cut mushrooms down to your sliced mushrooms. Reduce the heat to medium and add some butter and seasoning. Keep cooking until you can smell the caramelisation on the mushrooms. Remove into a bowl and take the thyme and crushed garlic out.

Ingredients: For the cake 230g (250ml) butter, at room temperature 250g (310ml) sugar 3 large eggs 420g (750ml) cake flour 10ml baking powder Pinch of salt 250ml milk For the chocolate coffee sauce 60ml cocoa 375ml Nespresso Ispirazione Venezia coffee (3x capsules brewed as Lungo and 1x capsule brewed as Espresso)
 If you don’t have Nespresso, a good strong coffee will do the trick as well 600g (750ml) sugar 15ml butter 500g desiccated coconut

ORANGE CAKE

Ingredients: 1 cup castor sugar
 2 eggs
 125g margarine
 Rind of one orange
 185g flour, sifted
 Pinch of salt
 5ml baking powder
1 25ml milk

Method: For the cake Preheat your oven to 18°C. Line the bottom of a square cake tin 22x22cm with baking paper. Spray with non-stick food spray. Place the butter in the mixing bowl of an electric beater fitted with the flat beater. Add the sugar gradually and beat until light and fluffy. Add one egg at a time and beat until well blended. Sieve the flour, baking powder and salt in a separate bowl. Add the flour and milk to the butter mixture and mix well. Spoon into the prepared tin and put it in the oven. Bake for 30 to 40 minutes, testing it with a cake tester in die middle of the cake to make sure the cake is cooked. Take out of the oven and let it cool for five minutes in the tin before turning it out. Let it cool completely before cutting it into the desired portions.

For the chocolate coffee sauce Place the cocoa, coffee, sugar and butter in a saucepan. Bring to a boil and let it simmer for two minutes. Cut the cake level on top and cut off the sides. The reason for this step is to ensure the sauce penetrates the cake. For the topping 1/2 cup castor sugar
1/2 cup orange juice (freshly squeezed orange juice is Cut into the desired portions (usually a member of the cube family). Submerge two or three blocks at a time in the sauce, making sure it is well best) covered. Take them out and roll them in the coconut. Repeat with the rest. Keep your ystervarkies in an airtight container. Method Preheat your oven to 180°C and grease your cake tin. Beat together the sugar and eggs. In a separate pan, melt your margarine. Add your melted margarine and orange rind to your sugar and egg mixture and beat well.
 Now add the dry ingredients and milk alternately. Fold them in (don’t over beat at this stage). Pour into your cake tin and bake at 180°C for 60 minutes, check your cake after 50 minutes.
 Leave your cake to cool and mix up your topping ingredients. Once cooled, pour the topping ingredients over the cake.

POLLO PAPPARDELLE

Ingredients: 600g chicken breast, cut into cubes 1 packet of dried pappardelle pasta (or lasagna sheets if not available) 1 tin whole peeled tomato 1 clove of fresh garlic minced ½ half yellow onion diced 1 bunch of basil leaves (half cut into strips and half kept whole for garnish) 250ml chicken stock store bought or homemade 100g grated Grana Padano 3 tablespoons butter ½ teaspoon Italian herbs Salt and pepper for seasoning

Method: Bring water to boil in a large pot and cook pasta according to instructions on the packet. Heat oil in a pan on high heat and add the chicken breast, giving good colour. Once chicken is browned, add the onion and garlic and cook on medium heat until onion is soft. Add the chicken stock and allow to simmer until stock is reduced by two-thirds. Blend whole peeled tomatoes and add to the pan. Season with salt, pepper and herbs and allow to simmer on a low heat for 12 minutes or until the tomato is cooked and reduced. CREAMY CAULIFLOWER SOUP

Ingredients: 1 large cauliflower 100g salted butter 1L heavy cream 2 cloves of garlic split in half (4 pieces) 60g fresh basil 1 bay leaves 5 sprigs fresh thyme 10 fresh black pepper corns Salt, to taste Truffle oil ( optional) Method: In a saucepan, heat the cream along with the bay leaf, two pieces of garlic, black peppercorns, thyme, and basil. Once the cream has reached boiling point, remove the pot from the heat and let the herbs infuse until required. Add some salt to taste. Cut the cauliflower into small florets. Heat a medium saucepan and melt the butter along with two pieces of garlic and sauté the cauliflower without adding any colour to the cauliflower. Season with salt whilst sautéing. Take the infused cream and pour it through a sieve into the saucepan with the cauliflower. Simmer for about 15 minutes, until the cauliflower is tender. Transfer the cauliflower soup to a food processor or using a stick blender. Blend until smooth. Strain through a fine sieve and serve hot with a crusty ciabatta.

SWEETCORN AND PORK FRITTERS WITH LEMON AND HERB YOGHURT DIP

Ingredients: For the fritters 200g pork mince (you can use beef or chicken mince as well, or none for a vegetarian option) 125g chilli bite mix (branded as such) Half a tin whole sweetcorn Half a tin creamed sweetcorn 2 medium courgettes 1 egg Coriander leaves and spring onions, finely chopped (plus 1 teaspoon Thai pesto if you have - not essential) Oil for frying For the dipping sauce 4 tablespoons plain yoghurt Juice of half a lemon As much Sriracha sauce as you like A splash of sesame seed oil or some toasted seeds (not essential but adds a nice flavour) Chopped herbs like coriander and chives Method: Mix all the ingredients together for the dipping sauce and stir well For the fritters, fry the mince in a little oil till cooked, season with salt and pepper and set aside in a colander to drain excess oil. Keep this oil. Grate the courgette finely and combine with Chilli Bite mix, both sweetcorns, coriander, spring onions, egg and mince. If the mix appears very dry, add some water. You are looking for a stiff batter. Heat some oil and add some of the set aside oil from the mince, in a shallow pan. Oil should be hot but not smoking. Spoon the batter into the oil and fry on each side for one to two minutes, you are looking for golden-brown colour on both sides. Once fried, remove from pan and place on paper towel. CRUSTLESS QUICHE

Ingredients: 1 tablespoon coconut oil ½ red onion 1 clove garlic, crushed 1 red chilli 2 handfuls of Swiss chard, finely chopped 3 large eggs 300ml single cream 1 round of Greek feta 80g hard cheese 2 tablespoons flour ½ teaspoon baking powder Black pepper Method: Preheat your oven to 180°C. In a skillet, heat the oil and fry off the onions, garlic and chilli until the onions have softened. Add the Swiss chard and cook until wilted and some of the liquid has evaporated. In a blender, blend the eggs, cream and cheeses together into a custard-like liquid. Sieve the flour and baking powder and fold into the custard mixture. Taste for salt and season to personal preference. Divide swiss chard mixture between two 12.5cm quiche pans. Fill the pans with the custard, leaving a 2mm space at the top of the pans to allow the quiche to raise. Bake for 25 to 30mins.

MIELIE MEAL ROTI

Ingredients: 2 ½ cups water 1 tablespoon oil 1 teaspoon fine salt 2 cups creamy maize meal ¼ cup water 1 cup flour Method: In a thick base pot, add the 2 ½ cups of water, oil and salt. When the water starts boiling rapidly, add two cups of creamy maize meal. Stir well. Now add the ¼ cup of water, cover and leave to cook for five minutes. Reduce heat. The steam will cook the maize meal. Empty into a dish. Add a full cup of cake flour. At this stage, you can use your food processor or hand-held beater with a dough hook to make the dough. If you prefer using your hands to bring the dough together, break the dough into pieces and bring it together again into one ball and knead thoroughly until you get a smooth, velvety dough. Break into 15 equal-sized balls. Manipulate each ball into a disc and roll it flat until it is slightly bigger than a side plate. Toast on a griddle on medium heat, turning once. You can add butter or ghee to toast.

EVAN’S FOCCACIA BREAD – THE FAMOUS BREAD AT MARBLE AND SAINT RESTAURANTS Ingredients: 1.3kg white bread flour 60g fresh yeast 1 litre water 32g salt Oil (for greasing) Extra flour (for work surface) Olive oil (to top) Maldon sea salt flakes (to top)

Method: Place the flour, yeast and water in a mixer with a hook attachment. Mix the dough on speed for one to three minutes. Set the speed to 2 and mix for a further six minutes. Add the salt and continue to mix for two minutes. Place the dough in an oiled container and cover with plastic. Refrigerate overnight. In the morning, remove the dough from the fridge and set a timer for 45 minutes. After 45 minutes, fold the dough once, cover and reset the timer. After another 45 minutes, fold the dough a second time, cover and reset the timer. After 45 more minutes, fold the dough a third time, cover and set the timer for 40 minutes. Meanwhile, grease two baking trays with a little oil. Once the timer has gone off, place the dough on a floured work surface and divide into two equal parts. Place the dough on the oiled baking trays and leave until doubled in size. Drizzle with olive oil and sea salt flakes before baking. Place bread in a preheated 225°C oven. Mother’s Day breakfast-in-bed ideas for an easy gift

Start your mom, grandmother or wife’s big day off in the best way possible: With a lovely morning meal delivered right to her cosy bed (paired best with a mimosa, obviously). From fail-proof frittatas to strawberry and Nutella pancakes stackers – and all the rosé spritzers in between – we’ve got you covered! BACON & RICOTTA FRITTATA

Ingredients: A knob of butter 2 leeks, trimmedand sliced 8 rashers back bacon, fat removed and chopped 6 eggs, beaten 250g pack ricotta 100ml single cream Small bunch chives, chopped Salad and crusty bread, to serve Method: Heat oven to 200°C/180°C fan/gas 6. Line a 20x30cm roasting tin with baking parchment. Melt the butter in a frying pan and cook the leeks for eight to 10 minutes until soft, adding a splash of water if they start to stick, then tip into a bowl. Add the bacon to the pan and fry for five minutes until crisp. Add to the leeks and leave to cool. Add remaining ingredients to the leeks and bacon, mix well and season. Pour into the lined roasting tin and cook for about 20 to 25 minutes until set. Serve cut into squares with salad and crusty bread .

BRIOCHE FRENCH TOAST Ingredients:

1 teaspoon ground cinnamon ¼ teaspoon ground nutmeg 2 tablespoons sugar 4 tablespoons butter 4 eggs ¼ cup milk ½ teaspoon vanilla extract 8 slices brioche, challah or white bread ½ cup maple syrup, warmed Method: In a small bowl, combine cinnamon, nutmeg and sugar and set aside briefly. In a 10-inch or 12-inch skillet, melt butter over medium heat. Whisk together cinnamon mixture, eggs, milk and vanilla and pour into a shallow container such as a pie plate. Dip bread in egg mixture. Fry slices until golden brown, then flip to cook the other side. Serve with syrup.

TWO-INGREDIENT NUTELLA PANCAKES Ingredients:

12 strawberries, hulled and sliced lengthwise 1 tablespoon maple syrup 4 large eggs, organic and cage-free if possible 2 medium ripe bananas, mashed 2 packets stevia or other sweetener (optional) ½ teaspoon baking powder (optional) ¼ cup Nutella Method:

Preheat oven to 200°C. Slice strawberries and toss in maple syrup. Transfer strawberries to a baking sheet that has been covered with foil for easy clean-up. Roast for 25 to 30 minutes. Meanwhile, prepare and cook pancakes. Heat griddle or large skillet over medium heat. You’ll want to cook these pancakes slowly. Whisk eggs with baking powder and stevia (if using) and stir in mashed bananas. Gently stir in Nutella. You don’t want the Nutella to be completely incorporated, just swirled in a bit. Pour pancake batter onto griddle or skillet (making sure each pancake has Nutella in it) and cook pancakes for about six to seven minutes on the first side, then flip and cook for about five more minutes. Top pancakes with roasted strawberries.

CRISPY BREAKFAST PITA Ingredients:

6 pita breads Extra-virgin olive oil 6 large eggs ¾ cup mascarpone cheese Grated zest of ½ large lemon Kosher salt and freshly ground black pepper Kosher salt and freshly ground black pepper 3 tablespoons fresh lemon juice 3 packed cups arugula or baby spinach 225g thinly sliced prosciutto Method: Heat a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush each side of the pita breads with ½ teaspoon olive oil and grill for two to three minutes on each side, until crisp. Remove from the grill and cool slightly. In a large skillet, heat one tablespoon olive oil over medium-high heat. Crack the eggs directly into the pan and cook until the egg whites are set, two to three minutes. Combine the mascarpone cheese, lemon zest, ½ teaspoon salt and ½ teaspoon pepper in a small bowl. In a medium bowl, whisk together three tablespoons olive oil, the lemon juice, one teaspoon salt and ½ teaspoon pepper until smooth. Add the arugula and toss until coated. Spread each pita with two tablespoons of the mascarpone mixture. Divide the prosciutto on top. Divide the arugula and mound on top of the prosciutto. Carefully place a fried egg on top of each pita. Season the eggs with a pinch of salt and pepper and serve. BONDING OVER COCKTAILS = THE BEST GIFT For the best mimosa: In a champagne flute, combine ⅓ cup chilled dry sparkling wine, ⅓ cup chilled orange juice and ½ cup Grand Marnier (optional). STEENBERG NEBBIOLO 2016 Nebbiolo (pronounced ‘nebby-oh-low’) is a full-bodied red wine more

famously known by the two production regions of Barolo and Barbaresco in Piedmont, Italy. On appearance, this wine is slightly brick red with a clear yet bright hue. The bouquet displays notes of savoury strawberry compote, aniseed and truffle, along with notes of leather and red cherry. The wine has the natural tart acidity and grippy tannins of Nebbiolo, accompanied with hints of sour cherry, raspberry and tobacco leaf. It shows beautiful fruit and floral characters in youth, but will develop well over the next seven to 10 years. This fascinating, almost deceptive-tasting wine is a must-try! Pair it with: Nebbiolo is traditionally paired with Italian foods – think salad with fresh burrata or pasta with Parmigiano-Reggiano, béchamel sauce or shredded beef ragu. ROODEBERG RESERVE 2017 This wine that was previously only available in selected international

markets can now be enjoyed by local wine lovers! The refined red blend is meticulously crafted from cabernet sauvignon, shiraz, Tempranillo, Petit Verdot and Petit Sirah plus splashes of cabernet franc, merlot and malbec. Expect bursts of red plum, blueberries, crushed herbs and tobacco leaf. Hints of dark chocolate and oak rise from the glass while the silky soft tannins complement the intricate layers. It can taste both rich and light-bodied, but goes down a treat thanks to lively acidity. When it comes to autumn-friendly wines, this is arguably one of the friendliest. Meet head chef Trevor Chikaura and executive chef Jane-Therese Mulry. Together, they make up part of the team at one of Jozi’s best-loved fine dining institutions – Qunu at The Saxon Hotel, Villas & Spa. We sat down with them to find out more about their careers and the special restaurant they work at. HEAD CHEF TREVOR CHIKAURA How would you describe the food Qunu? It’s a modern African table – we try and incorporate the African culture into the food we make and are big on heritage ingredients like sorghum and millet. We’re also part of the slow food movement and have our own vegetable garden. What’s the most popular dish on the menu? Right now, it’s the Lobster, Corn and Champagne as well as the Oxtail, Beans and Samp. The latter is a favourite of both local and international guests. Explain your working relationship with chef Jane-Therese. Our working relationship is amazing. We’re always bouncing ideas off each other. Whenever I have new menu ideas I sit down with Jane and then I prepare the dishes and we taste. From there we decide what should go on the menu and what still needs work. Is the kitchen as hectic as TV makes it look? I would say it’s worse. A lot of people outside of work tell me that I’m the nicest person in the world, but I’m pretty sure a lot of the staff members are scared of me! Is there anyone you’d like to cook for? I wish I could cook for famous chefs like Grant Atkins, Daniel Humm and Rene Redzepi

because I would love the constructive criticism. Have you had any funny moments in the kitchen? Oh yeah, I’ve been kicked out of the kitchen many a time! One of my old head chefs used to make people stand in a trash can when they made a mistake. It’s a harsh industry! I’ve messed up quite a lot – in fact, another old head chef once stabbed me because I overcooked a piece of fish. Today, he’s a good friend of mine. EXECUTIVE CHEF JANE-THERESE MULRY Tell us a little bit about your career journey. I’m originally from Australia. I did my apprenticeship and worked there for about six years before deciding it was time to go somewhere else. I first came to South Africa for the Rugby World Cup in 1995 and had an onward ticket to the UK as I just came to watch the rugby, but it took me two years to get out. While I was here, I decided to find a job and worked at the Carlton Hotel in Joburg and then the Belmond Mount Nelson in Cape Town. What’s your favourite ingredient to cook with? At the moment I’m really into using heritage ingredients like sorghum, which is an incredible gluten-free grain. It has so many incredible uses and I’d rather use something that’s African as it’s more sustainable. We have so many incredible grains in this country, so why not use them?

Why did you decide to do a separate vegvegan menu? With the way food trends are going, people want to know everything about their food. They want to know that their food is sustainable that it’s not going to leave too much of a footprint. Even at the Oscars this year, the whole menu was plant-based. Who’s someone memorable that you’ve cooked for? Oprah, especially because I haven’t just cooked for her in one country, but in two or three countries around the world. Nelson Mandela as well. Although I also love to cook for my family and friends! Do you enjoy cooking on your days off? Yes, I do. We have a vegetable garden at home and I love playing around with different ingredients. What’s the best thing about being a chef? People often ask me why I became a chef and I believe it’s because of my love of travel. I needed to find a job that would allow me to travel, so I fell into cooking. Like everything else in my life, I try and be the best I can be at it. A TASTE OF QUNU AT HOME Head chef Trevor Chikaura and executive chef JaneTherese Mulry share the recipe for one of their favourite dishes on the menu at Qunu – the Lobster, Corn and Melon starter – so you can try your hand at it at home. Lobster, Corn and Melon Serves 4 SAUCE Ingredients 3 corn on cob, kernels cut off and set aside 1 corn on cob, kernels blanched and cut into blocks 60g butter 100ml cream Method Take half the butter and the corn kernels and sauté in a pan. Juice the stems retaining juice. Deglaze the kernels with the juice and add cream. Bring to boil and blend. Strain and return to pot to stove whisking in butter. Set aside for plating. LOBSTER Ingredients Half a lobster tail, deshelled 120g butter Bronze fennel stems and fronds 20g salmon caviar Method Cut the lobster in half and season with salt and pepper. Take a piece of cling wrap and place on bench place lobster piece on top and add butter. Wrap tail so it’s a tight ball. Place into a sous vide bath set at 52° for 10 minutes

GARNISH Ingredients 1 piece of watermelon, cut into a square 3 thin slices of honeydew 1 Parisienne scoop of rock melon Method Place each different melon in their own vacuum bag and compress with bronze fennel. SCORCHED CORN Take the corn kernels cut into pieces together and use a blow torch to blacken. PLATING Remove melon pieces from bags onto a tray. Arrange watermelon in the middle of bowl. Place lobster on top of watermelon and place honeydew and rock melon pieces. Add remaining sauce, salmon caviar, blackened corn and garnish. Enjoy!

BOOK AHEAD RATHER THAN HOLD BACK Right now, we’re all itching to travel – but many of us are hesitant to start planning for our trips in the months ahead and into 2021. Instead of holding back, we recommend booking ahead. We may not have an informed timeline to work with, but we do have a ‘best-case scenario’. According to experts, COVID-19 might ease off in the window of September to December 2020, so that’s when we suggest you start planning your next journey for. We know it’s not set in stone, but it sure gives us something to plan toward and get excited about. And who knows – it might even be much earlier than that! If you already have travel plans booked for later this year, one thing we don’t recommend doing is postponing rather than cancelling. CONSIDER A STAYCATION With the uncertainty of the pandemic, it may be difficult to plan a big overseas trip once it’s safe to travel again. But not all hope is lost. In our opinion, it’s the perfect opportunity to explore more of South Africa, especially with the incredible travel deals and discounts on offer at the moment. Clarens, Coffee Bay, Franschhoek, Gariepdam, Hogsback, Kruger National Park, Nottingham Road, Riebeek-Kasteel, Sabie, Tulbagh, Wild Coast, and Wilderness are just a few local gems – the list goes on! It’s going to be a great time to try new hotels and restaurants and support these businesses as they’re coming back together. If you’re itching to get your passport stamped, we suggest taking a trip to Mauritius, which is always a good idea as it’s incredibly well priced and is only a four-hour flight from Joburg. TAKE EXTRA MEASURES! Travel insurance isn’t our area of expertise, but we do recommend finding an appropriate provider at this time. Some good examples are Travel Insurance Consultants (TIC), Hollard and Bryte. Make sure you read their clauses and conditions carefully to see if they suitably cover events such as a pandemic. COVID-19 has proved that disruptions can arise quickly, so this is very important! Keep in mind that a standard travel insurance policy won’t cover fearbased cancellations. It will only protect you if your travel plans are disrupted – think medical emergencies, travel delays and lost luggage. Some providers may offer a Cancel for Any Reason (CFAR) product which is pretty comprehensive, but most are pulling back on this type of coverage.

TIPS TO STAY HEALTHY UNTIL YOUR TRIP  Exercise for 30 minutes a day. You may not be able to get to the gym, but you can still do squats, pushups, planks and leg lifts at home. And don’t forget about cardio – think burpees, jump rope, jumping jacks, squat jumps, running the stairs and jogging in place.  Eat enough fruits and vegetables. Rather than snacking on chips or chocolate, how about grapes or nuts? Think twice about what you’re eating and try to get five to nine servings of fruits and vegetables in your daily diet.  Drink alcohol in moderation (if you drink alcohol). That’s no more than two drinks a day for men and one drink a day for women. There are actually some benefits to having a drink every now and again, but this doesn’t mean you should start.  Use this time to relax. Get seven to nine hours of sleep per night or more if your body needs. A TIME FOR SOWING Take your boring old terracotta pot to the next level. What you’ll need:  A plain pot  Paint - acrylic or enamel in colours of your choice  Paintbrush  Tape Directions: Give the pot a base of coat of your desired colour and wait to dry. Once dry use your tape to create a straight line and paint your accent colour on the lower half of the pot. Thereafter you can use a different colour and paint a smiley face, or any design of your choice onto your pot. Top tip: Make sure to use a terracotta or stone pot as enamel paint will not be affective on plastic. NAME GAME This stunning decorative piece promises to be the perfect addition to any space and would also make a great gift! What you’ll need:  Any empty frame  Dry flowers  White paper/cardboard  Scissors and glue Directions: Glue dried flowers onto the piece of white paper/cardboard in your preferred design. After that, cut out the first initial of your name and glue it in place on top of the foliage. Wait to dry and place in frame. Top tip: An easy way to access dry flowers/foliage is by doing it yourself. Place flowers in the pages of a book and leave it in a dry, warm place.

The Braamfontein Spruit is one of the most popular mountain biking trails in the country. It’s a greenbelt in the middle of a city and is 60km long, but don’t worry – it’s an easy to moderate level trail. HOME BAR GAME Our top tips to keep tipsy post apocalypse

The home bar has taken centre stage over the last few weeks since Joburg’s best bars have been off limits. So, you have a bar cart or nice bar top space in your home – now what? Seeing as you can’t go ham at the liquor store and probably only have half-empty bottles of liquor that guests brought to a dinner party last year and a sad lemon, we’re here to help you with ‘quarantending’. Tools There are some basic tools you’ll need for mixing your own cocktails. The most essential ones are a cutting board, sturdy knife (with a serrated blade for cutting citrus), good sized shaker (ideally one that allows you to mix more than one cocktail at a time), jigger (the double-sided shot glass type apparatus used to measure alcohol), muddler, basic key or bottle opener, basic corkscrew or wine key, easy-to-clean glass bottles or jars for containing simple syrups and fresh juices as well as some white towels that can be bleached. Other not-so-important tools that you can purchase later on or along the way include a blender, red wine bottle aerator, electric corkscrew, wine bottle stoppers and citrus press to easily make fresh juices.

Glassware The price of glassware can add up quickly, so we don’t recommend buying ones you personally won’t use. Some basic glasses we suggest you get are pint glasses, lowball glasses, champagne flutes and red wine glasses – because you can pour white wine into red wine glasses, but not vice versa. Here’s a brief rundown of which glass you should use for which drink: • Pint glass: Beer and double mixed drinks • Lowball glass: Old Fashioned, Manhattan, Negroni and White Russian • Champagne flute: Bellini, champagne and prosecco • Coupe glass: Champagne craft cocktails that don’t require ice • Highball glass: Gin and tonic, mojito, Bloody Mary and Dark ‘n’ Stormy • Martini glass: Martini, Cosmopolitan, Brandy Alexander and Kamikaze • Punch bowl: Punch and Pimm’s • Copper mug: Moscow Mule (which can be made with pretty much anything, not just vodka) Must-have mixers Mixers that you should always keep on hand are club soda, tonic water, cranberry juice, orange juice, grapefruit juice and ginger beer. Our top tip is to opt for canned juices and mixers as they won’t expire quickly. You should also always have a shaker of orange Angostura bitters handy – even though bitters isn’t technically a mixer, it goes into a number of basic cocktails. To make simple syrups, you’ll need white or Demerara sugar (the brown sugar used in Old Fashioned cocktails). Simply combine one part sugar with two parts hot water and shake until the sugar has fully dissolves. It’s as easy as that! But keep in mind that simple syrups have a shelf life and only keep for about a week in the fridge.

Basic bottles At the end of the day, this is your bar above anything else – so don’t make the mistake of thinking you need every type of liquor under the sun in your home bar. There are, however, some basic bottles that we do suggest you buy: Gin (for a gin and tonic or Tom Collins), light rum (for a mojito), dark rum (for a Dark ‘n’ Stormy), silver and gold tequila (for a margarita), bourbon (for an Old Fashioned or Mint Julep), rye whisky (for a Manhattan), sweet and dry vermouth (for a martini), vodka (for a Moscow Mule) and Cointreau (for a White Lady).

Masterful mixology tips  Keep your cocktails cold: Who knew the wow factor of serving homemade cocktails on the rocks could be so simple! To enhance any cocktail, simply add luxe ice. Big ice cubes work best for spirit-forward drinks, while you’ll need crushed, cracked or pebble ice for tiki drinks. For highballs, turn to ice shards, cracked ice or Collins spears. Standard ice cubes work for pretty much everything else.  Know how much booze to use: Balance is key to any great cocktail, so while it’s fun to play around you must stay proportional in terms of how much booze you use. For spirit-based cocktails, the standard bar pour is 60ml of spirits, such as 60ml of tequila in a margarita. For spirit-forward drinks like a martini or Old Fashioned, aim for 75ml to 90ml of spirits. Remember: Less is more, and you can always add to it. • Make citrus your best friend: Citrus fruits including lemons, limes and oranges are as basic to cocktails as the liquor itself. In our opinion, every amazing cocktail is made with fresh fruit juice, so avoid using premade fruit juices and freshly squeeze your own if possible. Yes, it’s a pain – but we promise it’s worth it! Other fruits, such as berries, pineapple and peaches can be frozen for your convenience.

Garnishes To make a cocktail go from oh to damn the next time an unexpected guest arrives, there are some garnishes you need to keep on hand for your home bar. These are olives (AKA one of the most iconic garnishes ever), fruit peels (lemons, limes, oranges and grapefruits), herbs (rosemary, basil and mint), spices (cinnamon, clove, ground ginger and coriander) and fruit soaked in booze (cherries soaked in brandy or whisky). While virtual meetings require preparation and a new set of etiquette rules, that doesn’t mean your dream of reporting for duty in your pyjamas every day is doomed. The trick is to not let your colleagues see the reality of your home office – here’s how.

USE A LAPTOP OR DESKTOP – NOT A PHONE First things first: Even though it’s more convenient to use the mobile app on your smartphone to have a virtual meeting, it’s not a good idea. Not only does this look unprofessional, but the image will also be unstable and you won’t be able to take notes. Use your laptop or desktop to make the call instead and save yourself the trouble of holding your phone or trying to balance it on your desk. CHOOSE A PROFESSIONAL SETTING The safest approach to ensuring a setting that’s as professional and clean as possible is to have a neutral-coloured wall – think shades of white or grey – in the background. Otherwise, bookcases, work desks and professional-looking plants are quick at-home solutions. Anything distracting in the background will distract your audience from what you’re saying. If your home isn’t an ideal space for video calls, you can place a chair against a wall and set up a table in front of you for your laptop.

WORK FROM A CARPETED ROOM If the room you’re having your virtual meeting from is empty and uncarpeted, it can result in hollow, echoey audio to your colleagues. In this case, you can simply put a rug and some pillows on the floor to help absorb bounce. The next thing to consider is the room size if the people calling in are still struggling to hear you. For a small to medium meeting (between 10 and 15 people), the room size ideally shouldn’t be larger than 3x4.5m, but it could be larger with necessary acoustics.

USE APPROPRIATE LIGHTING We’ve all seen how image quality suffers when the room is dimly lit – not to mention how unprofessional and dated it looks. It might be tempting to fix this by having an LED desk lamp on your desk or sitting under a bright overhead light, but indirect white light is much more flattering than harsh direct light that makes shadows. Place yourself near a window which will filter natural light onto your face. Just make sure you face the window rather than put your back to it. CHANGE INTO YOUR ‘WORK’ PYJAMAS For audio-only calls, it’s totally fine to leave your ‘leisure’ pyjamas and fuzzy slippers on. However, for video calls, you’ll have to change to your ‘work pyjamas’. In other words, switch from your favourite flannel PJs to your functional black business ones – or a pair that you can throw a shirt over to pass as ‘dressed’ in a video call. If you feel like your comfy yoga pants affect how you speak and interact even though they aren’t visible on screen, then dressing professionally is a must. Jess Clarke is the owner of Elizabeth Summer, a gorgeous proudly South African brand famed for its big customised hats, unique fedora-style hats, one-of-a-kind baskets and other accessories. We sat down with this girl boss to chat about her brand, autumn/winter launches and Mother’s Day gifts.

What made you start Elizabeth Summer? I’d just launched a big telecom brand in South Africa and knew then and there that it was my last event. I then went to New York for a friend’s wedding after not having a job for a few months, and something there inspired me to make my own hats. That’s how Elizabeth Summer came about in August 2016. The name came from my middle name, Elizabeth. What was the biggest challenge of starting your own business? Learning how to do accounts, deal with staff and clients as well as import without any real advice or guidance. It’s been a massive learning curve for me. On the flip side, the most rewarding part is to see people who I don’t know wearing my products. There’s no better feeling! Also, employing staff who were previously in very average jobs with no steady income. Where do you see Elizabeth Summer in the next four years? Hopefully sold to some big company. I’ll be on an island. *laughs* What are some of your bestselling items? I’d have to say our hats as they’re also our longest-standing product. What new releases can we expect this autumn/winter? I’m always in denial about the colder months! We’ll continue the boho look with our boho handbags, wool and cashmere beanies as well as classic accessories like cashmere scarves. We’ll also be selling beautiful fully sequinned jackets that I’ve designed as sequins are a big trend right now. The jackets will come in short and long options. What brands do you stock? In addition to our own Elizabeth Summer products, we stock Naudic clothing and resort wear, Chila Bags handbags and Quay Australia sunglasses.

What would make the most special Mother’s Day gift? Our personalised sequin baskets are a real treat and something a bit different for Mother’s Day. Tell us a bit about your bridal offering. For summer brides, we offer our famous personalised hats, which come in the Madagascar straw or Ivory paper option, along with personalised kimono-style gowns and fleece slippers. For winter brides, we have our fleece gowns that come in many different colours and deliciously comfy sheepskin slippers. Where’s your favourite place to eat out? Bellinis is an old favourite that I grew up going to. I literally remember going there in my baby seat when I was little. The menu is small, but all the food is simply delicious. I love this local spot because it’s nothing fancy but always has a great vibe. What are you currently watching on Netflix? Don’t be shocked, but Formula 1: Drive to Survive. Before that was Love is Blind, which was mindless and great!
