or someone born into one of the most iconic hotel dynasties in the world, Nicky Hilton Rothschild has never been one to check in and coast. She’s built fashion lines, footwear collaborations, and now, her most personal project to date: a newly-launched jewelry brand that’s less about flex and more about feeling. But don’t be fooled — behind these heirloom-worthy lockets and charm bracelets fueled by a deep love of monograms, memorymaking, meaningful gifts, and — most of all — her daughters, is a founder who still leaves her mugs out, drawers open, and can talk about diamondstudded cats in the same breath.
Speaking of mugs, she’s fittingly sipping from one depicting Peppa Pig whilst settled at her kitchen table in Manhattan, sharing that, like most successful ventures, her new brand, Theo Grace, wasn’t born overnight. “I feel like this project is so long overdue for me; it’s something I’ve been wanting to do for years,” the 41-year-old multihyphenate admits. “I’ve always loved charm bracelets. Always loved lockets. Anything with sentiment attached.”
That word — “sentiment” — is apt in that it is the soul of Theo Grace. More than just accessories, each silver and gold piece is designed as a heartfelt symbol of love, connection, and everyday celebration that can be personalized with names, dates, and even photos.
Hilton describes her own obsession with personalization as borderline compulsive. “If you come to my house, the sheets, the pillows, the robes, the mugs — everything is monogrammed,” she says, grinning. “I love anything with initials, anything that says, ‘this belongs to me’ or ‘this means something to us.’ I also just love a personal touch, and I love jewelry. So, to combine those two loves to make a great product at a great quality, is very, very exciting for me.”
It’s not surprising, then, that the design process for Theo Grace was painstakingly thoughtful. “Every charm, every clasp — we didn’t rush it. I wanted it to feel like something that could become someone’s signature,” she explains. “I worked with jewelers who understood the emotional weight behind it. This isn’t just sparkle for sparkle’s sake. This is about connection.”
The inaugural line includes delicate gold chains, heart lockets, and charms that could be engraved with anything from initials to full love notes. “I wanted everything to be wearable, but also deeply personal,” she says. “These aren’t red carpet pieces. These are ‘every single day of your life’ pieces. They’re pieces that tell a story, that evoke a memory. I wanted to create timeless keepsakes for every generation.”
Most of all, it would seem, for her family’s next generation. That the brand was both named after and inspired by her daughters, seven-year-old Theodora, and 10-year-old Lily Grace, instantly personalizes the collection. “Their names are all over the line,” she says. “It made them feel special.”
In general, that’s kind of the point of the brand. Every story is unique, and Hilton wanted to tap into this sentiment in an impactful way. Her daughters favor the customer pet rings and lockets that — for the entire Rothschild clan — currently cradle a shot of the family, which also includes three-year-old son Chasen and her husband James, on vacation in Hawaii. “They love showing whoever will look,” she says with a smile. When it comes to the piece that tells her story best, the answer comes
quickly. “I love the lockets,” she says. “I’ve collected lockets since I was a little girl. The idea that you’re carrying a little secret close to your heart is so romantic, so nostalgic.” She also favors the charm pieces, which she’s currently wearing. She holds her necklace up to the light, showing me how she’s made this particular piece purely her own. “You can insert your initials or a special date, and for me, that’s what the collection really is: the concept is like a walking love note.”
That old-school romance is baked into every part of Theo Grace — from the soft suede pouches each piece arrives in, to perfect powder blue boxes tied with grosgrain ribbon. “I wanted the unboxing to feel like opening a letter from someone who really knows you,” she explains.
It’s clear that this isn’t just a brand she’s put her name on — it’s personal, and, as such, she’s been fully hands-on, every detail specifically curated. She references the plentiful brainstorming sessions she had with her team of co-owners, a seasoned group of artisans with over two decades of industry expertise (a jewelry conglomerate formerly known as MYKA), and how each future capsule collection will not only elicit an emotion, but reflect her signature esthetic, with the intention of continuing to tell her evolving story.
That’s been a common theme across every single Nicky Hilton-approved item, from the brands she’s created in the past — a clothing line, handbags, Art Deco baubles, footwear, even a Mommy and Me effort with Tolani — to her go-to uniform of choice: skinny jeans, a button-down, her French Sole ballerina flats, and a blazer — and that is authenticity.
“I’ve been designing and creating for 25 years. I’ve done a lot of things, and when I think about it, everything I’ve done has been authentic,” she declares. “I’m so not one of those people who’s going to slap my name on something for a royalty check. That doesn’t excite me. Everything I’ve done, I’ve loved and worn, and it’s been very organic.”
There’s another word she would use, as well, and that is “wearable.” She says, “A lot of people make beautiful things, but they’re not really practical. Wearability and accessibility have always been at the forefront when I’m doing anything.”
Convenience is important, too. “I wanted incredible quality at an incredible price,” she admits, adding, “A while ago, I commissioned a jeweler to create a locket of my cat. And not only was it thousands and thousands of dollars, but it took eight months to come, which was a little annoying. So, the fact that we can create these high-quality pieces that are accessibly-priced and that you receive promptly, is exactly what I always want for myself — and everyone else.”
She takes a sip of tea and smiles beatifically, as the afternoon sunlight streams in through her kitchen window, while Theodora — in the background, but ever-immortalized thanks to her mom — drifts in and out of frame. “It’s not just about jewelry,” she says. “It’s about storytelling. It’s about who we love, what we remember, and what we choose to pass on.”
The only difference between this project and her other ventures? “This one’s mine,” she says simply. “It’s the most personal thing I’ve ever done.”

She’s referring to the years of her youth that she and big sister Paris spent living in the iconic Waldorf Astoria New York, real-life versions of Kay Thompson’s iconic character, Eloise at The Plaza, a little girl growing up among the spoils of wealth in New York.
Her former home, a 47-story, 625-foot-tall Art Deco landmark, officially reopened after nearly a decade on the day of our interview. And with it, the past and present collided.
While her family may not own the hotel any longer — they sold the Hilton Hotel brand to The Blackstone Group, a private equity firm, in 2007 for $26 billion — it’s still a deeply personal place — so much so that the Hiltons will host their annual Conrad N. Hilton Humanitarian Prize gala there this fall. At $2.5 million, it is the world’s largest annual humanitarian award presented to nonprofit organizations, created by her greatgrandfather, with the mission of alleviating human suffering and helping vulnerable and disadvantaged people around the world.
That aside, its very existence — updated, refreshed, enhanced, reinvented is a reminder of how far she’s come. That Louis Rigal’s 148,000-piece Wheel of Life mosaic is front and center at the entrance is not lost on her. It is a physical reminder that she — the lone Hilton who didn’t jump ship to Los Angeles — can see every day, if she chooses to. It is also a reminder that, though she and Paris were the proverbial princesses of Park Avenue, have proven to the world in spades that they’ve worked for everything that they now have.
For her part, Nicky has always carried her family name with a blend of grace, grit, and a determination to prove that she was worthy of it. Yes, she was born into luxury — her great-grandfather was Conrad “Nicky” Hilton, after all — but the trappings of privilege never replaced her work ethic. In fact, they fueled it.
“When Paris and I came on the scene, people thought of us as famous for being famous, trust fund kids that don’t do anything. I think it’s fair to say that we have proven them very much wrong. We are workers and entrepreneurs and have been since we were teenagers.”
While Paris was known for her loud luxury esthetic, Nicky has quietly and thoughtfully negotiated her business ventures, launching each with her signature brand of flair and grace. And yes, if you need to correlate that back to her great-grandfather, so be it. But it would be more accurate to say that she was influenced by her grandfather, Barron Hilton, who served as the chairman, president, and CEO of Hilton Hotels Corporation, significantly expanding the company his father founded, as well as her own father, Rick, the chairman and co-founder of Beverly Hills real estate brokerage firm Hilton & Hyland.
“We were told by my father at a very young age that we had to work and make a name for ourselves; it really instilled a strong work ethic in us,” she notes. “And you know, to this day, we show up. We show up on time. We do the job to the best of our ability.”

The job could be business-related, it could apply to family, or it could apply to philanthropy. And in her perfect world, all three would collide.
“Whenever I’m doing my own personal work, I always try to include an element of giving back,” she shares. “Right now, we’re figuring that out with Theo Grace. I’m going to incorporate how the animal jewelry on our website will benefit Animal Haven [a local non-profit she works with]. I’m also on the board of God’s Love We Deliver. Every year, I host their annual children’s benefit at the Museum of Ice Cream, which is really fun for me because I’m able to bring my children, introduce them to the work, and to the power of giving back and helping others.”
It’s only fair, she insists, given how much her children have helped her. “They’ve taught me patience, patience I did not know that I had. They’ve made me want to be the best version of myself because they’re like sponges: they soak up and mirror all of your good — as, unfortunately, your bad habits. You want to become a really good role model for them.”
I express disbelief that Hilton has any bad habits she seems too perfect but she swears she does. “My husband would disagree!” she laughs. “He goes crazy when I leave mugs out everywhere and drawers open. I’m not always the tidiest person, so I will say that’s definitely a flaw.”
If that’s all he can complain about, it’s no wonder that the two recently happily celebrated their 10-year wedding anniversary, and are seemingly more in love than ever. James Rothschild, a British financier who happens to be a member of the Guinness family, recently commissioned a jeweler to make her cat’s face in diamonds — whiskers and all, “knowing I’m wildly obsessed with cats, and thus fulfilling my crazy cat lady fantasy.” In turn, she romantically commissioned an artist to do an oil painting of how the stars were aligned 14 years ago when they first met in Italy. [That being said, Hilton is a famously amazing gift-giver.]
For their 10th wedding anniversary on July 10, the couple returned to the scene of their magical wedding ceremony in London — held at the incredibly posh Orangery at Kensington Palace — and had afternoon tea. “We actually looked at our wedding album on my phone, and looked around the room remembering all of the special moments,” she recalls. “We didn’t bring the kids; it was just the two of us, which we rarely do, and it was really fun and special.” They hit all their favorite spots: Claridge’s, Wilton’s, The River Café, and shut down Kensington pub The Blue Stoops — inviting all of James’ friends from high school and college — for a belated 40th birthday party.
Hilton — who goes by both all combinations of Hilton and Rothschild (“at this point, it’s like, whatever you want to call me, call me — I’ll go with it”) — acknowledges that while she doesn’t always have the best memory for everything, her wedding day hit differently. “I remember it perfectly, as if it were yesterday, although it was 10 years ago. I have this very vivid memory of it, and I don’t of everything.”
But maybe that’s because for her, finding true love was the ultimate prize. She had two strong role models, after all: her parents, Rick and Kathy, have been married for over 45 years.
“My parents are the template for the most magical marriage,” she confides. “They’ve been married for over 40 years and they’re more in love than ever. I think I always looked to that as something that I wanted to emulate — and I am very lucky to have found such a great partner, and to have had three amazing kids. I feel very lucky and blessed.”
Her parents’ closeness set the bar for the rest of the family — she even recently went on vacation with her parents in Capri — and divulges that she’s working on a few “exciting projects” with her mom — design-focused, like the Ruggable collection they created together last year.
She’ll “never say never” to opening a hotel — it’s part of her naturalborn legacy, after all — but right now, her focus in on Theo Grace, and, as a diehard Libra, trying to manage the balancing act that is her life.
“There aren’t oftentimes where your personal and professional life are smooth; it always feels like one is overtaking the other. When you have those moments of balance and clarity, that’s the greatest luxury in life,” she notes.
Hilton smiles, tea cooling beside her, as Theodora floats back into the frame. It’s not lost on Hilton how these fleeting, ordinary moments — children wandering in and out of the room, mugs left on tables, sketches taking shape between school pickups — are, in fact, the moments that make a life. It’s clear that Hilton’s world isn’t just crafted in gold and enamel.
Which is why, as we say goodbye, she notes once again that this project isn’t just about jewelry — it’s about storytelling, memory, and connection. It’s about honoring who we love and what we carry forward. Those personal touches are what define both her family life and her business. Hilton isn’t chasing viral moments — she’s building something enduring. And she’s doing it in a way that reflects her values: with warmth, with intention, and with the kind of grace you can’t fake.

Monaco Formula 1 Grand Prix
A spectacular venue for one of the world’s premiere races.

MONACO! THE NAME CONJURES UP SO MANY IMAGES — luxury, yachting, glamour, gambling, James Bond, Princess Grace and, of course, for the car and racing fans around the globe, arguably the most elegant and alluring of all of the world’s automotive racetracks (a grand prix circuit since 1929), with a course that’s completely comprised of the city’s streets. The Monaco circuit joined the nascent Formula 1 program in 1950 and has held the world’s attention ever since.
To fully set the stage when discussing this famous race, Monaco is a principality (closely aligned with France) and covers only about 515 acres. Put another way, Monaco is substantially smaller than New York City’s Central Park, which is almost 850 acres. Its capital, Monte Carlo, has a name with even more of a cachet than Monaco (if that’s possible), since that’s the name of one of the most famous gambling casinos. Interestingly, even though Monaco is so small, Monte Carlo is but one of four distinct districts of Monaco and about 70 acres in size.
The grand prix (“grand prize”) of Monaco started with cars designed mostly for street use (for well-heeled car enthusiasts) about 100 years ago. Today, Formula 1 races are for purpose-built high-speed and higher-tech machines to vie for supremacy. Each F1 team today, with their incredible support networks, now includes dozens (sometimes hundreds) of specialists, some connected by high-speed internet connections to their home factories perhaps thousands of miles away. And lest we forget, I hasten to add that the piloti are very highly paid drivers, with salaries rumored to exceed $65 million. Fielding a Formula 1 team can run up to a rumored $150,000,000 per team (comprised of two cars and two drivers) every year. Let that sink in for a minute.
My son Jay and I were fortunate enough to attend this year’s Monaco Grand Prix — and what a trip it was! The setting is drop-dead gorgeous, where the French coast transitions into the hills of Monaco, which dramatically meet the beautiful Mediterranean Sea. Luxury yachts vie for mooring locations where they can back up mere feet from the race track, and local airports are filled with private jets. It’s one of the toniest gatherings anywhere, a location where the world’s best machines and the most proficient drivers meet in front of huge crowds; estimated to include 250,000 people for the four-day event in June of each year. Monaco’s is one of the 24 F1 races this year to see who will be crowned the “King of the Hill.”
At the Monaco Grand Prix, since the track is so narrow, qualifying laps before race day determine the starting position, which is particularly critical at this circuit; a high percentage of the race’s winners have started the race in the number one position. This year’s race was no different. McLaren’s two entries — having an absolutely spectacular Formula 1 year — started in first and third spots on the starting grid and both finished the race in the same pole positions. Formula 1 races end based on elapsed total time, which can be extended due to inclement weather, accidents, and so forth, but only up to three hours — they typically last about 90 minutes. The Monaco race lasts 78 laps, and the Monaco circuit is the shortest of Formula 1 tracks at a little over two miles, and, due to the narrowness of the track and the number of turns, it’s also the slowest (typically 95 to 100 miles per hour). The first ten finishers are awarded points based on the order that their cars pass the start/finish line after the first car has completed the race. Therefore, especially in Monaco, the determining factors of who is the winner are qualifying position (based on how quickly they drive during the prior day’s qualifying sessions), how fast they handle pit stops, whether they are able to pass other cars, and if they can avoid having an accident or a mechanical breakdown.
Depending on the circuit and the weather, cars must change tires at least once every race and must use at least two of what typically are three types of tires (soft, medium, and hard) plus sometimes rain tires. Part of the strategy is determining what tire to use and when since — all things equal — the soft tires can provide higher cornering speeds but wear out faster. Also, while it might provide some speed advance to change tires several times, especially as the weather changes, pit stops eat up precious time, though they now are down to an exact science (a Ferrari driver’s 2.0 second tire change was this year’s fastest pit stop in Monaco). At this year’s race, the finishing position was determined by mere seconds — the winner, Lando Norris of Team McLaren, won in just over one hour and forty minutes; second place, Charles LeClerc of Team Ferrari, was about three seconds behind him; and third place, Oscar Piastri of Team McLaren, about three seconds behind him.
It is fitting that the other story in this month’s magazine is about the McLaren 750S, which pretty much is a race car for the street. So as you will see, what was learned on the track informs a lot of what will show up on the road. Luckily for me, both the Monaco trip and the McLaren loan were complete winners.

FAITHFUL READERS KNOW THAT I AM A BIG FAN OF THIS BRITISH BRAND. McLarens always feel faster than their specifications, meaning that they may accelerate from zero to 60 miles per hour in under three seconds, but they feel like they’re even quicker than that. And, after all, isn’t that what most of us want from performance? I mean, top speed is great and all that but for the daily stoplight grand prix, initial acceleration is the trump card.
I am writing this early in July, having just returned from the Monaco Grand Prix, where I watched McLaren dominate that race and several others since, so it was an absolutely perfect time to borrow their Earth-bound rocket, the 750S Coupe.
McLaren classifies their cars into three categories:
Supercars: Artura (coupe and spider) and 750S (coupe and spider), with base prices from about $255,000 to about $345,000
GTs: GTS, with a base price of about $220,000
Ultimates: W1, Elva, Senna and Senna GTR, and Speedtail, with base prices from about $1.7 million to about $2.25 million
Luckily for me, this story is about the 2025 McLaren 750S, which I was lucky enough to borrow for several days just weeks after watching McLaren take first and third pole positions at at the 2025 Monaco F1 Grand Prix.
Let’s start with the looks. The car looks fast as it’s sleek, low, and seems to have been sculpted by the wind. As much as I like open-top cars, the coupe looks even more streamlined. With extra carbon fiber bits and optional front fender vents, “my” Mantis Green machine looks both elegant and menacing, the perfect blend for a 740-horsepower machine with a dry weight of just over 2,800 pounds that can whip from zero to 60 miles per hour in about 2.8 seconds. (The car pictured in this article is McLaren’s racing team’s color, Papaya Orange). Clearly the body is writing checks that the engine, the seven-speed transmission and suspension, are more than ready to cash.

The beautiful speaker grills, part of the excellent Bowers & Wilkins 12-speaker audio system ($5,400), green contrast stitching (plus $850), and other accoutrements make the business office of this performance machine both serious and gorgeous.
Add a few more bells and a couple of whistles, like the Exterior Details Carbon Fiber Pack ($10,780) and the base price of $343,500 accelerates to $426,750.
I am not sure that it’s sufficient to say what it’s like to “drive” this car, as I felt more like I was wearing it, somewhat like an exoskeleton. And I mean that in a good way as the car is so incredibly responsive that it almost sensed what I was planning to do before I did it. I love the sound and the fury of the 750S’s rear, mid-mounted dual-overhead-cam twin-turbo 4.0-liter V8, and with maximum power arriving at 7,500 RPM, it’s an incredible screamer. Some say that naturally aspirated engines (with no turbos) sound better than the rest, but the 750S creates an aria that comes directly from the car gods.
McLaren says that this is their lightest and most-powerful series production supercar ever and it sure feels it. Its stunning beauty is matched only by its incredible performance. With 740 horsepower, it has almost 30 more ponies than the model it replaces (the 720S), and it also weighs about 65 pounds less than its predecessor. Whether on the freeway, the boulevards, Mulholland Highway, or the twisties of the Malibu canyon roads, the 750S is completely at home and a joy to experience.

CHANEL’S WATCHMAKING CREATION STUDIO, UNDER THE DIRECTION of Arnaud Chastaingt, introduced a new collection that aims to translate the graphic intensity and chromatic audacity of Chanel’s makeup legacy into the realm of haute horlogerie. Drawing inspiration from Gabrielle Chanel’s forays into fragrance and cosmetics in the 1920s, the Blush collection melds the esthetic codes of beauty — powders, lipsticks, and lacquered cases — with the precision of Swiss watchmaking.
Chastaingt channels Chanel’s elegant simplicity, seen in the N°5 perfume, into timepieces that juxtapose black ceramic with vibrant pinks and reds from Chanel Beauty palettes, evoking Dripping Art and Pop Art.
The J12 Blush watches, available in 38 mm and 33 mm, anchor the collection. HUBLOT CONTINUES ITS PURSUIT OF INNOVATION WITH THE LAUNCH of the Square Bang Tourbillon 4-Day Power Reserve, a bold addition to the Square Bang series. Known for challenging traditional norms, Hublot brings a new level of complexity and refinement to square watchmaking with this latest piece. It is the first Square Bang to feature two central hands and to house a Tourbillon, setting a new benchmark for form-meetsfunction design.
Hublot’s engineers developed the MHUB6023 manual movement exclusively for this release. With 174 components, each meticulously designed and placed, the movement features rectangular and square bridges rather than the typical circular architecture. A skeletonized structure amplifies the visual depth, revealing a beautifully constructed system that plays with light, geometry, and dimensionality.
The watch’s square geometry defines the entire architecture of the timepiece. Every component is arranged symmetrically along the square format, offering esthetic balance and mechanical integrity. On the right side is the winding system, while the left houses the power reserve indicator. At the top, the large barrel holds the energy to deliver an impressive 96-hour power reserve, and the Tourbillon sits at the bottom, anchored in precision.
CEO Julien Tornare, who took the helm in September 2024, has entered with a big bang at Hublot. He notes that most brands stop at square cases, but Hublot dared to go further. “Until now, advances in square watches have been rather timid, usually confined to the case alone. With the Square Bang Tourbillon 4-Day Power Reserve, we wanted to take the exercise to its logical conclusion, by designing a movement whose architecture is also fully rightangled. The bridges are straight, clean, and sharp, as if to protect a movement that always beats to the rhythm of a perfect circle, that of the Tourbillon, barrel, and power reserve. The fusion is complete,” he explains.
The Square Bang Tourbillon integrates square bridges and a fully rightangled internal layout, an innovation in the world of high-end mechanical watchmaking. This design philosophy perfectly embodies Hublot’s “Art of Fusion” — where tradition meets trailblazing engineering.
Adding to the novelty is its 3D carbon case, measuring 42 mm across and 13.2 mm thick. The case’s design is built using woven carbon composites arranged in horizontal and vertical structures to echo the square theme throughout. This lightweight yet durable material not only enhances wearability, but adds a sleek, modern edge to the timepiece.
Another standout feature is the power reserve display at the nine o’clock position, which accurately tracks the remaining energy with clear legibility. WHEN ACTOR KOHJI MORITSUGU APPEARED IN RETURN OF ULTRAMAN (1971) wearing a Speedmaster with an orange chronograph hand, orange accents in watchmaking were far from fashionable. The watch — a 1968 Omega Speedmaster Ref. 145.012 — played no role in the storyline, yet its presence was unforgettable. Collectors would later nickname it the Speedmaster “Ultraman,” and the orange-tipped hand became a cult symbol among Omega enthusiasts.
Believed to be the first Omega to sport the color orange, the “Ultraman” marked the beginning of a long-running love affair between the brand and the vibrant hue. Since then, orange has become nearly as synonymous with Omega as it is with the Dutch people. The brand, famed for timing the Olympics, landing on the moon, and industrializing George Daniels’ co-axial escapement, has returned to orange periodically, answering the call of collectors with models like the Speedmaster Mark II Racing Dial, the Seamaster Aqua Terra >15,000 Gauss, and the bold Seamaster Ploprof. Most notably, orange became a defining characteristic of the Seamaster Planet Ocean series, which introduced full orange bezels and straps into Omega’s design language.

REVOLUTION
Richard Geoffroy is leading with IWA — a boundary-pushing brand rooted in the traditions of Japan, yet unapologetically global in spirit. Best known as the former chef de cave of Dom Pérignon, Geoffroy brings a winemaker’s precision and a visionary’s palate to the world of sake, blending craftsmanship, aging, and an almost poetic sense of balance into every bottle.
Produced at Shiraiwa, IWA’s minimalist yet masterful kura in Toyama, Japan, IWA 5 is the result of a deeply collaborative process with celebrated Japanese artisans, including a revered toji (master brewer). The result? A new kind of sake — nuanced, versatile, and built to transcend borders. Already featured in over 140 Michelin-starred restaurants, IWA is as at home alongside kaiseki as it is with modern French or Nordic tasting menus, inviting a new generation of curious, cosmopolitan drinkers to the table.
As Geoffroy himself puts it: “IWA is deeply and proudly rooted in Japan yet embracing the global cultures and cuisines of the world.”
You spent nearly three decades at Dom Pérignon. What inspired the leap from champagne to sake?
It was a reset — a new challenge. I wanted a new creative framework with more latitude and fewer limits. Above all, it was about a love for Japan — a desire to be part of something. I’ve been going to Japan for over 30 years and have developed deep affinities. Japan gives me more creative freedom, against the odds. When you love something, you want to contribute, not just be a visitor or passenger. You want to be part of it.
How does your winemaking philosophy translate into the world of sake?
It has always been about harmony, balance, and complexity. In the end, I’m on the same project — just in a different territory, physically. The philosophy, the objectives — they remain the same.
The technicalities of sake brewing or vinification — winemaking — are probably secondary to the universal principle of harmony, balance, and complexity. So, to me, it’s the same project, just applied to a new territory. Are wine and sake more alike than people might assume?
Yes. In the end, they’re both fermented beverages. There’s that intriguing contribution of fermentation — the transformation of raw material into liquid. That’s a major link between the two. They’re more alive than one might think. And naturally, when I blend IWA, I feel comfortable, because it’s more like wine than anything else.
It’s about the mystery of microbiology — the yeast, the living organic matter. It’s much stronger than anything distilled. It’s fermented. Do I think sake should be evaluated like wine? Yes. In my view, it should be assessed using the same parameters. Now, local sake makers might have different criteria for precision, but to me, sake — especially IWA — deserves to be judged with the same depth and rigor as wine. IWA is a blend of multiple sakes, which is highly unusual. What inspired your assemblage approach?
The ambition of IWA is really to reach out to both Japanese and nonJapanese moments. Therefore, it has to be somewhat more substantial, richer, more intense, to be really suited for non-Japanese moments and drinking occasions. And yet you’ve got to retain the intrinsic character of sake — the DNA, the character of the flow. So, it’s sort of a paradoxical thing: being rich and yet flowing. And the only way to make it rich yet flowing is to achieve something close to perfect balance.
I even forgot one step in the reasoning. To really make the richness flow, you have to make the richness weightless. And the only way to make it rich and weightless is balance. And the only way to achieve balance is blending.
There is way more presence on the palate than with many existing premium sakes. It’s really all thanks to blending. And I’m suspecting now that the blending allows IWA to age — because that balance comes from an element of tension. And now, that tension is what makes IWA age for so long. So, blending is really about balance, and age-worthiness. IWA is now served in over 140 Michelin-starred restaurants. Why do chefs and sommeliers love it?
Its versatility, from the blending and the balance. Balance means that there is sort of a latitude to raise itself right to the occasion on the par with the food, not above, not under. It’s very respectful of the food. It’s a chef’s dream beverage. I don’t think there is a single wine achieving such versatility, but not by defect, by virtue. Many assume sake only pairs with Japanese cuisine. What are some of your favorite unexpected pairings?
Spicy food. When served warm — at body temperature — IWA handles spice beautifully. That’s rare. Think Sichuan Chinese, Thai curries, Mexican, Southern Creole or Cajun. It really works. And then, of course, caviar. IWA with caviar is just incredible. All the top caviar suppliers have been amazed. Nothing else compares. It can go from briny and salty all the way to sweet desserts.
How do you want people to feel when they experience IWA?
First, satisfied. Hedonistically satisfied. It should feel rewarding — like a discovery, an experiment. I want people to be playful, to take risks with
how they enjoy it. There’s also a cultural reward. You’re drinking Japan — a new expression of Japan. It’s taste first, but then it becomes something more. Culture, story, emotion. IWA offers a fully immersive experience for both the senses and the spirit.
Tell us about Shiraiwa, your brewery in Toyama. What makes it different?
The sake itself is quite traditional, but the brewing process is dedicated to blending. Our master brewer, Yabuta-san, brews each component specifically for assemblage. He understands blending deeply. We work hand-in-hand. The kura has stainless steel tanks, state-of-the-art equipment, and a streamlined layout — everything designed to support the style and quality of IWA.
How do you see IWA evolving in the next five to 10 years? Is it leading the cultural shift to enjoying sake in America the same way many enjoy whisky or champagne?
I see IWA as universal, able to address different moments and different cultures and sensitivities, way more than wine. IWA has the capacity and potential to be universal, and my bet is that it will legitimately be considered on par with the greatest beverages on the planet. Universal, and at the premium end of the most precious beverages on the planet.
What is the best way to enjoy IWA? Is it with everyday cuisine or through a pairing experience?
IWA should be part of a lifestyle, not only reserved for extraordinary moments. It can be enjoyed on a more regular basis. IWA’s versatility allows it to respond to diverse situations.
What is the craziest culinary experience you’ve ever had with IWA? Set the scene!
In China, hot pot! With hot pot, most enjoy either beer, champagne or Baiju and none of them propose proper satisfaction for the duration of the meal. Rosewood Beijing is incredible for hot pot, paired with IWA.
Is there anything else you’d like to share about IWA, your personal career trajectory, or the industry in general?
I am in pursuit of harmony: through medicine, my time at Dom Pérignon, and now, Japan. To me, I consider it all the same project. A project of humanity, of authenticity, bringing people together, with so much emotion.
To you, what is the greatest luxury in life and why?
Time! To me, it’s the ultimate luxury. Time for oneself, for others, for sharing, for thinking, for being creative. Time.

CHEF GRANT ACHATZ IS WIDELY REGARDED AS ONE OF THE most innovative and influential chefs in the world, celebrated for his emotionally driven, boundary-pushing approach to modernist cuisine. His culinary path began early, in his family’s Michigan diner, before he graduated from the Culinary Institute of America at 21. From there, he trained under legends — first Charlie Trotter, then Thomas Keller at The French Laundry — before refining his philosophy even further during a stage at elBulli in Spain and time spent at La Jota Vineyards Co. As executive chef of Trio in Evanston, IL, his singular creativity began turning heads, earning him early acclaim from the James Beard Foundation.
In 2004, Achatz opened Alinea with a bold mission: to completely reinvent the fine dining experience. And Grant and his team have done just that. Alinea has appeared on the World’s 50 Best Restaurants list 13 times and has held three Michelin stars for 13 consecutive years — longer than any other restaurant in the U.S. Its staying power and continuous evolution are a testament to Achatz’s belief that creativity isn’t a phase — it’s a lifestyle. As he explains, once you commit to constant reinvention, there’s no turning back.
In 2008, Achatz was diagnosed with Stage IV tongue cancer and given a devastating prognosis: he might not survive, and if he did, he might never taste again. But against the odds, he pursued an experimental treatment, and made a full recovery. That experience, detailed in his bestselling memoir Life, On the Line and featured on Chef’s Table and Spinning Plates, reshaped not just how he led in the kitchen, but how he lived. Forced to rely on others to taste for him during treatment, he emerged a more collaborative, more resilient chef.
Achatz went on to launch a slate of acclaimed concepts: Next, a shapeshifting restaurant with a rotating global theme; The Aviary, his futuristic cocktail bar; Roister, a high-energy, open-kitchen dining experience; and St. Clair Supper Club, an homage to Midwestern tradition. Most recently, he debuted FIRE, a primal, open-flame restaurant that reflects his interest in opposites: past vs. future, analog vs. digital, simplicity vs. science. Now, at 51, he shares with Haute Living how he is continuing to push the envelope by shapring the future of haute cusine, and why he will never, ever stop.

You’ve worked at and own some of the best restaurants in the world. What is the one lesson that still shapes the way that you innovate every day?
When we first opened Alinea in 2005, we were overly confident; we made this statement that we were always going to evolve; that was literally the ethos of the entire restaurant. I have a couple of friends that are in the music industry, and when they step on stage and see a million people cheering them on, there’s nothing like that feeling for them, right? That gratification, that pat on the back, if you will, is really hard to let go of. For me, it’s similar. You establish yourself at a certain level and you have hundreds of people behind you on the team that are fighting for that same vision, that same goal, every night. How do you step away from that?
I always think of really pedigreed chefs like yourself as modern-day rockstars, so it’s interesting that you brought up that correlation. You’re right. Certainly, when we first started in 2005, there was no Instagram, there was no TikTok. There was Twitter, but it was barely there. And while the Food Network wasn’t in its infancy, it wasn’t driving as much traffic to restaurants. But all of that changed. And so now, with Chef’s Table on Netflix and social media, people do look up to chefs like they would musicians. It puts people in the restaurants. It raises awareness of food in general. It promotes travel.
Given that you currently hold four Michelin stars, do you feel like you can’t ever afford to make a mistake?
It’s relentless and exhausting, but I wouldn’t have it any other way. That being said, a lot of people naively come into the restaurant and think that, like a musician, I’m on stage at that particular restaurant every night. Which is mathematically impossible [because I currently have three restaurants in Chicago alone and pop-ups all over the country].
And unlike many of my contemporaries, I am in one of my kitchens every day. It’s such a relentless pursuit of perfection.
I feel like you have faced more challenges than most on a personal level. Where do you think that resilience has come from?
Ever since I was very young, I wanted to be where I am right now. I grew up in a really small town, 3,000 people. When we graduated high school, [all of my friends had] real opportunities in front of them, but I was the only one in my friend circle who didn’t go to college. I didn’t have the
grades in high school, so I had a bit of a chip on my shoulder. I felt like I really had something to prove to myself, to them, to my parents. And then, when I worked at The French Laundry and I saw Thomas [Keller] always giving his all, that became contagious. A personal life didn’t matter at that point: it was all about work. And then I got sick. I was literally told that I was going to die, and not only that, but that I was on the last leg of my life, that I wasn’t going to be able to taste anything ever again. It was a really hard time. So many of the staff left; everybody thought we were going to close because I was going to die. But the rebuilding process — after I came out of treatment — changed who I was as a chef and as a person. I never lost sight of the fact that I was still chasing down the dream.
To keep going when you’ve been told you’re going to die, you need to have utter belief that you can keep going. Did you have that?
It’s super odd. I went to five major medical institutions, the best in the country for the cancer that I had, and they all said the same thing: there’s not much you can do. I thought, ‘OK, well five of them can’t be wrong.’
But despite all of that — and I can’t explain it — I never thought I was going to die. I certainly should have, but I just never felt that it was over.
Did you find a new joy in cooking after you recovered?
My sickness made me a better chef, and a better person. I came back on fire. On the back end of it, I was like, ‘Wow, I have a second chance. I have another shot, so I better take advantage of it.’ It’s interesting, looking back at our lives, the events that happened, and how they shape us. I feel like I don’t reflect on that enough.
What’s next for you?
I’m going to give you a little hint. We did a month-long residency in Brooklyn at Olmsted restaurant; the chef is an alumnus of mine. But instead of doing an Alinea-style experience, we created something that was really immersive and moved the guests into four different dining rooms throughout the course of the evening. Each dining room was built out by a production company. It was very cinematic. The aromas in the room matched the lighting, the music, the sound. That’s the direction we’re heading now. It’s like a play I wrote before even adding the food; an immersive experience. The idea is to do this all over the world in a way where art, affluence, and interest in the avant-garde come together.

OFF SUMMER IN THE HAMPTONS WITH GAVIN CASALEGNO AND HUBLOT
ON THE HEELS OF THE SERIES FINALE OF THE SUMMER I TURNED PRETTY, Haute Living continued its Haute summer in the Hamptons with cover star Gavin Casalegno alongside luxury timepiece brand, Hublot. In fact, Haute Living was the first to welcome Casalegno on his first-ever trip to the Hamptons on July 17, at the newly opened Bagatelle at Gosman’s Montauk. As guests arrived, they were greeted with cocktails before discovering the latest Hublot timepieces, including the Big Bang Unico Summer 2025 and the various colors of the Big Bang One Click Joyful Steel collection. Guests then sat for a multi-course menu by Bagatelle at Gosman’s Montauk with incredibly chic florals by Venus et Fleur adorning the tables. Before the dinner was served, Haute Living fashion and jewelry editor and Haute Time editor-in-chief Adrienne Faurote welcomed guests and thanked Casalegno for being a part of the Haute Living family. She then introduced Kristen Hansen, the media director of Hublot, who further spoke on the brand’s dedication to celebrating summer as well as congratulating Casalegno on the premiere of the show. HAUTE WINE SOCIETY HOSTS DUCRUBEAUCAILLOU DINNER WITH GRANT ACHATZ AT NEXT IN CHICAGO
HAUTE WINE SOCIETY HOSTED AN EXCLUSIVE EVENING at Michelin-starred Next, presenting two intimate seatings curated by four-Michelin-starred chef Grant Achatz of The Alinea Group. The evening highlighted a vertical tasting of Château Ducru-Beaucaillou wines alongside a six-course tasting menu. Each course reflected Achatz’s hallmark style, which is modernist in approach, technically exacting, and grounded in seasonal ingredients. The menu opened with “Green Goddess Unveiled,” which included kohlrabi, asparagus, snow pea, and cured egg yolk. This was followed by tortellini in broth, filled with prosciutto and black cherry, and finished with warm spices, paired with Château Ducru-Beaucaillou’s 2018 La Croix from Médoc. The centerpiece course, titled “Beautiful, Psychedelic Abstraction of Beef, Not Flame Grilled,” showcased slow-cooked beef with a ramp and wild mushroom ragu and an herbal salsa verde paired with two vintages of Ducru-Beaucaillou’s grand vin 2009 and 2020. A cheese course followed, featuring five aged expressions of Waterloo cheddar (two, three, five, six, and seven years), paired with the 1982 Ducru-Beaucaillou. Dessert took a playful turn with “Oops! I Dropped the Lemon Tart,” served with lemongrass gelato and limoncello sorbet.
