Cooking With Chef Ramos Gazpachomakes1-2quarts

INGREDIENTS

1 pound ripe red tomatoes

1 English cucumber

1 red bell pepper

3 green onions

2 tablespoons sherry vinegar

2 tablespoons red wine vinegar

2 garlic cloves, peeled

3/4 cup Spanish extra-virgin olive oil

Salt to taste

DIRECTIONS

Cut out and discard core at the top of the tomatoes and chop tomatoes roughly into quarters. Peel cucumber and cut into chunks Cut the pepper in half and remove the core along with the seeds. Chop into large pieces Slice the garlic and green onions. Add in the sherry and red wine vinegar. Mix ingredients well with plenty of salt and marinate in the refrigerator overnight. The following day combine the marinated vegetables and juices into a blender and puree until smooth Drizzle in olive oil and check for seasoning. Strain the soup into a pitcher and store covered in the refrigerator Pour into chilled bowls and drizzle with a bit more olive oil.

Birdies on their last two holes put Dr. Michael Fuentes and Robert Epps into a scorecard playoff, which they won by a stroke over Mark LaRue and Kyle Smith to capture the June 9 MGA Two-Man Scramble.

The pair started on No. 6 in the event where players could only use five clubs.

On their next-to-last hole, the par-3 fourth, Fuentes hit a "low soft 7 iron" on the hole he'd usually hit a pitching wedge or 9 iron. His shot finished about 10-12 feet from the pin and he made the putt for birdie.

On the par-5 fifth hole, both Fuentes and Epps hit driver. Fuentes hit a driver off the deck for his second shot and it finished just off the green. Then Epps almost knocked in a chip from about 30 yards out and tapped it in for the second straight birdie.

"We birdied all the par 5s, 4 and 16," said Fuentes, who credited his partner with making four-foot putts all day.

"Epps really know how to come through," said Fuentes. The scorecard playoff was based on the back nine holes and FuentesEpps shot a 33 on holes 10-18, while LaRue-Smith shot a 34. If it was based on the front nine, LaRueSmith would have won ... they shot a 32, one better than Fuentes-Epps.

Cristian Toren is a Corpus Christi native. His experience in Aquatics spans eight years, seven of which has been in management. Cristian is an American Red Cross Lifeguard Instructor as well as a Certified Pool Operator. He is an avid outdoorsman who enjoys all Texas has to offer. When not at work, you’ll find him enjoying time with his family, hunting and fishing.

Lori Berger has been in aquatics for more than 15 years, swam competitively and enjoys swimming to this day. Having been born and raised in the Corpus area, she loves spending time with her family at the beach and also along the bay. Lori is excited to meet everyone and looks forward to working with and having fun with your kids this summer.
