February is just one week away, and every area is back to being busy with racquet sports (Tennis and Racquetball), Golf, and Food and Beverage. The golf course irrigation project is coming along, and our technology is also completely up and running, See the next page how to access and get the most out of it. We will send another reminder.

Cooking with Chef Ramos Brandy Green
Peppercorn Sauce
Ingredients
1 tablespoon of butter
1 tablespoon minced shallot
1/4 cup brandy
1 teaspoon of sherry vinegar
1 cup of beef broth
1/3 cup of heavy cream
1 tablespoon drained green peppercorns in brine, rinsed
In a sauté pan, heat half of the butter over medium heat. Add in the minced shallots and stir often until limp but not brown, 2 to 3 minutes. Add the brandy and sherry vinegar; increase heat to medium-high and boil, stirring often, until liquid is almost evaporated, 5 to 6 minutes. Add the broth and reduce heat, and simmer, stirring occasionally and skimming off any residue that comes to the surface, for 10 minutes. Add the cream and cook until it coats the back of a spoon Stir in the drained green peppercorns and salt to taste Just before serving, over low heat, whisk in the remaining butter. Directions

This Short Game Package will help you get the ball in the hole faster. Instruction wi include short/long putting, pace control, green reading, chipping, pitching, lob, and bunker shots.

These three lessons will be dedicated to taking your slice and turning it into a hook.
12 Hour Package for $795
This package will start with a 9-hole playing evaluation of your game. After your 9-hole evaluation, we will sit down and go over strengths, weaknesses, and playing concepts. We will develop a game plan together and then, over the next 10 sessions, attack the weaknesses of your game. All parts of your game will be addressed, from putting, short/long putting, pace control, green reading, chipping, pitching, lob and bunker shots, short irons, long irons, hybrids, fairway woods, driver plus on-course play.
