The vineyards of Porto - specifically the steep, arrid hills of the Douro Valley where the grapes for all Ports are grown - make up one of the oldest and most regulated appellations in the world.
Due to its status as a Protected Designation of Origin by the EU, Port is a fortified wine that by definition must come from Portugal, all other countries who produce this fortified style must be stated as Tawny.
International law fortifies the identity of this historic terrior, and acknowledges multi-generational work its original houses have dedicated to its many intricate traditions.
is fortified during the winemaking process by adding ‘aguardente’ or brandy (i.e. a high proof neutral grape spirit) to the wine at a specific stage during the production process. In the case of Port, this addition takes place after

about half the sugars have been consumed by the fermentation process. This retains residual sugar and increase alcohol content before aging the wine to develop character, making it rich, round and smooth on the palate.


Grapes have been grown in Portugal since antiquity. The writings of Strabo, the great geographer of ancient Greece, indicate that inhabitants of the north west of the Iberian Peninsula were already drinking wine two thousand years ago. The Romans, who arrived in Portugal in the second century BC and remained for over five hundred years, grew vines and made wine on the banks of the Douro River where Port is produced today. The period of prosperity which followed the establishment of the Kingdom of Portugal in 1143 saw wine become an important export.
In 1386 the Treaty of Windsor had established a close political, military and commercial alliance between England and Portugal. Under the terms of the treaty, each country gave the merchants of the other the right to reside in its territory and trade on equal terms with its own subjects. Strong and active trading links developed between the two countries and many English merchants settled in Portugal. By late 15th century a significant amount of Portuguese wine was being exported to England, often in exchange for salt cod known in Portuguese as bacalhau.

A single serve of Port is approximately 75ml. Port glasses are smaller than regular wine glasses - to account for the higher level of alcohol and rich sweetness in Port Wine.

Port wine should be served relatively cool, around 13-16°C, store in a dark, temperate space, and chill gently to avoid shocking.

A sour trade war between England and France saw the Brits looking elsewhere for wine, The rich bold wines of Duoro answered the call. But they had a much longer, more perlious Journey to reach England than the relatively much closer France, The long distance and wild and mountainous terrain of inland Portugal also meant that the Douro wines could not be transported north by land to Viana do Castelo where lighter, acidic wines were already traded from the Minho region, but had to be carried down the River Douro by boat to the city of Oporto near the coast.
From Oporto, ships would then carry their cargo out to sea over the treacherous mouth of the Douro where the calm river meets the powerful Atlantic. To protect the wine during the long sea voyage it was sometimes ‘fortified’ prior to shipment with the addition of a small amount of grape spirit, or brandy, which increased its strength and prevented it from spoiling. This technique should not be confused with the modern fortification process, now an essential part of the making of Port, of adding “aguardente” (brandy) to the wine to halt the fermentation process.
While brandy additions were made historically to prepare wine for travel, the standardisarion of fortifying port was only universally adopted much later. Prior to this practise, most wines from Portugal were not fortified at all. Once aguardente additions became crucial to the Port style, organizations such as ‘Real Companhia das Vinhas do Alto Douro’ were established in Porto to police the quality control of the aguardente supply used for fortification. In 1756, the region of Duoro itself was recognised as an official Appellation, making it the 3rd oldest wine in the world.
The brightest red fruit-driven style and one of the most produced style of port. After fermentation, it is stored in tanks made of concrete or stainless steel to prevent oxidative aging and preserve its rich colour. The wine is usually blended in the style of its house, fined and cold filtered before bottling and does not generally improve with age. This is the party animal, the ‘drink now’ of the Port family and is best not left open for more than a month.
When a Port is described as Tawny, without an indication of age, it is a blend of aged Port wines that have spent typically 2-4 years in wooden barrels. Above this level are Tawny Ports with an indication of age which represent a blend of several vintages. Regardless of age, Tawny Port is characterised by a warm amber hue and toasted nutty flavours. These bottles last a bit longer, around two Months without noticeable deterioration.

The official categories for Tawny Port’s older sibling are 10, 20, 30 and over 40 years as stated on the label. For Port, these represent the Port’s minimum average years in wood across all of its composing wines, as well as the specific style and blend. These are a little more delicate than their young counterparts and should ideally be finished within 3 weeks of opening when stored at room temperature.
Late Bottled Vintage (often referred to simply as LBV) was originally a Port wine that had been destined for bottling as a Vintage Port, but due of a ack of demand was left in the barrel for longer than had been planned. Over time it has become a distinct style of Port wine, being bottled between four and six years after the vintage. Typically an LBV is fined and filtered before bottling, while there are some that are not.
Vintage Port is made entirely from the grapes of a ‘Declared Vintage’ year and accounts for about 2% of overall Port production. Not every year is declared a Vintage in the Douro. The decision on whether to declare a Vintage is made in the spring of the second year following the harvest. The decision to declare or bottle a Vintage is made by each individual Port house.

This Port exhibits a nuttiness and a complexity not often founds in these types of tawnies. Good to drink chilled as an aperitif as well as after dinner.

It is a rich and elegant blend with wonderful aromas exuding the heat of the Douro. On the palate it is complex with powerful dried fruit, a nutty make up and a long pleasing finish.

The beautiful golden colour is a good indication of the age of this excellent tawny port. With a great richness and aromatic complexity, notably of almond and spices, the 20 year old has a seductive texture with dry fruits and liqueur flavours.

A Historic Release: In 2025, Taylor’s created the first 80-YearOld Tawny Port. Just 1,945 bottles were released, marking the year 1945 when peace was restored after WWII. Each comes in an individually numbered ashwood case, a true collector’s item. The Wine: Mahogany fading to copper gold, it offers aromas of rum and raisin, molasses, caramel, and cigar leaf. The palate is rich with nutmeg, fig pudding, and confit apricot, balanced by freshness and elegance. The finish is immense and enduring. Enjoyment: Serve slightly chilled (12–16°C). Stir all ingredients with ice in a mixing glass until chilled. Strain into a martini glass.

Port Old Fashioned (Tawny twist)
RECIPE:
30 mL Taylor’s 10 Year Old Tawny
25 mL Bourbon or Aged Rum
1 barspoon Marmalade (~5 mL)
20 mL Fever-Tree Soda Water
METHOD:
Shake Tawny, bourbon, & marmalade with ice. Double strain into a rocks glass over fresh ice. Add soda & stir gently.
GARNISH: Marmalade & Ginger smoke

50 ml S&eman Fine Tawny
15 ml Fever-Tree Mediterranean Tonic Orange slices + zest & Ice
METHOD:
Macerate orange slices with zest. Fill a highball with ice, add Tawny, & top with FeverTree Mediterranean Tonic. Stir well.

Tawny is the name given to Australia’s most popular fortified wine style, formerly known as ‘Tawny Port’. Australia recently agreed to discontinue the use of the term ‘Port’ in line with international labelling agreements, with ‘Port’ now used exclusively by the Portuguese.

Perched on the edge of the spectacular Onkaparinga Gorge at the northern end of McLaren Vale, shallow rocky soils are a feature of the site with some of the geology formations dating back 600 million years.

CHAPEL HILL THE OLD DEVIL TAWNY PORT
The limited release Devil Tawny is predominately a blend of Shiraz and Grenache with a small amount of sweet Muscat blended in for perfume and complexity. The average age of the resultant blend is 20 years old. The Devil is deliciously rich and ethereal. The nose is brimming with roasted almonds and marzipan characters. The palate has the typical rancio characters evident from prolonged oak maturation and is supported by luscious flavours of boiled fruit cake and aged spices.






GRANT BURGE AGED TAWNY
Spicy Grenache fruit adds freshness to a core of mature tawny richness. The palate is smooth and sweet with layers of nut, spice, and caramel, finishing with elegance, balance, and a lingering dryness.


GRANT BURGE 10 YEAR OLD TAWNY
Deep tawny with red tinges, showing rancio, oak, and a touch of fresh fruit. Sweet and mellow with excellent spirit integration, the palate is rich yet harmonious, finishing dry with balanced fruit and oak.



Golden-hued with mocha, toffee, and aged rancio aromas of great complexity. Concentrated and luscious with nutty depth and savoury spice, the palate is full and rich before tapering into a long, dry, elegant finish.

Fruit is allowed to stay on the vine until very ripe when the concentration of flavours has developed. After crushing and partial fermentation to retain some sweetness, the wine is pressed and then fortified with a neutral spirit prior to maturation in small and large format oak casks.

Much like the careful control around the conditions of Port classification, Sherry or ‘Jerez’ is a Spanish fortified white grape wine style preserved in a Protected Designation of Origin. The “Sherry Triangle” surrounds its birthplace and namesake; “Jerez de La Frontera” where all Sherry be made in order to be sold within the European Union. Outside of Europe, no wine labelled as any variation on Sherry may be imported,

13th century spanish King Alfonso X awarded lands in the city of Jérez to knights in his service. Amongst them was Don Alfonso Valdespino.
While the Bodega was established shortly after the land was entitled to Valdespino, commercial Sherry production would not begin until a few generations had settled into the land around 1430, with the Valdespino we know today forming in 1875.

The Valdespino family have been involved in the Sherry trade since 1430, making Valdespino the oldest sherry Bodegas (Houses). In 1883, Valdespino became a purveyor of Sherry to the Royal House of Spain and since 1932 to the Royal House of Sweden, a testament to the quality of Valdespino. In 1999, the Estevez family, also from Jerez, bought the Valdespino Bodega, thus keeping it in family hands and ensuring that quality and tradition are maintained.


Today, Valdespino remains the only bodega to produce a Single Vineyard Sherry.
