Carve Like a Pro 1. Cut the breast along the breastbone. Separate each breast from the bird. Cut the breast crosswise into slices. 2. Pull the leg quarters from the turkey and cut between the thighbone and backbone. 3 Separate the drumstick by cutting through the joint connecting the drumstick to the thigh. Remove thigh bone and cut thighs crosswise into slices. 4. Cut the wings off where they join the body. 5. Place legs and thighs in the center of the platter. Surround breast slices around the dark meat. Garnish with fresh cranberries, oranges, pears and fresh herbs.

Smoke, Cure, Eat, Repeat Hot-Smoked

There are countless ways to serve up smoked and cured salmon. Your Haggen seafood department is proud to feature a great selection that includes five distinct methods of smoking and curing. Try them all and pick your favorites!

The salmon is salt-cured or brined without cooking, leading to a silky, rich texture.

A Fresh Twist on Classic Green Beans

Take advantage of the fresh produce delivered daily to your local Haggen store by forgoing canned green beans and subbing in fresh, crisp ones. Created by an iconic soup company in 1955 (you know the one!), this holiday side dish rapidly rose in popularity in part because of its simplicity and ease. Taking a scratch-made approach can be just as simple and amazingly satisfying thanks to more flavor and nutrition in this less-processed version.

Skillet Green Bean Casserole 1 lb fresh green beans 2 Tbsp olive oil 3 large shallots, sliced 1 package (10 oz) crimini mushrooms, sliced 2 cloves garlic, minced 1 tsp kosher salt 1/2 tsp black pepper, freshly ground 1/4 tsp nutmeg, freshly grated 2 Tbsp flour 1 cup low-sodium chicken broth 1 cup half-and-half or milk

1 cup Haggen Seasoned Croutons (hand-cut from an assortment of artisan breads), crushed 2 Tbsp pecorino cheese, grated 1 Tbsp fresh parsley, chopped

brown. Add mushrooms and sauté for another 4-5 minutes. Add garlic, salt, pepper and nutmeg; stirring for about a minute. Stir in flour, stirring frequently for another minute.

Preheat oven to 350°F.

Stir in the broth and bring to a simmer; about 3 minutes. Add the half and half or milk, bring back to a simmer, then reduce the heat to medium-low and cook until sauce thickens.

Steam green beans for about 4 minutes until crisp-tender; drain and rinse with cold water. Spread beans on a kitchen towel; pat dry and set aside. In a 10" cast-iron skillet heat oil over medium heat. Add the shallots and sauté until golden

Add beans to skillet; toss gently to coat with sauce. Sprinkle evenly with bread crumbs, cheese and parsley. Bake until topping is golden brown and sauce is bubbling, 20–30 minutes.

These smaller spuds are great for mashing as they hold their shape well during cooking. Their dense texture has a mild, buttery and earthy flavor that pairs well with garlic, lemon and rosemary.

5 lb sweet potatoes, peeled and cubed 1 Tbsp canola or vegetable oil 2 tsp kosher salt 1/4 tsp black pepper 1 cup heavy cream Haggen Chef Bryan Weener 4 oz unsalted butter 1 Tbsp chipotles in adobo sauce 1/4 cup maple syrup Toss sweet potatoes with oil, salt and pepper then spread onto a baking tray in a single layer. Roast at 350°F for 20-30 minutes or until soft.

In a small pot, melt butter with cream. Place sweet potatoes in a mixer with paddle attachment or mash by hand with the back of a spoon. Add the cream, butter, chipotles and maple syrup. Mix well and adjust seasoning. Holiday 2018 | www.haggen.com

Woodinville Whiskey Company

Made locally, Woodinville Straight Bourbon Whiskey is a small-batch spirit made with staple grains from Omlin Family Farm in Quincy, Washington. It’s seasoned in oak wood barrels for 18 months before being slowly toasted to further extract the full flavor from the oak barrels. This artisan process results in a handcrafted spirit reminiscent of crème brûlée, caramel and dark chocolate.

Bourbon Citrus Pomegranate Punch R Festive Ice Ring

2 parts POM Pomegranate Juice 1 part Woodinville Bourbon Whiskey 1/2 part orange liqueur 2 parts Champagne Water or juice, for ice ring Orange, lime or lemon slices for garnish Cranberries, for garnish and ice ring Rosemary, for garnish and ice ring To make the ice ring, pour water or juice into a Bundt pan, add cranberries and rosemary (optional) and place in the freezer at least the night before to allow for it to freeze solid. To make the punch, take ice ring out of the freezer and run the bottom under warm water until it detaches from Bundt pan. Place ice ring into the punch bowl. Add pomegranate juice, whiskey, orange liqueur, and Champagne. Stir to combine. Garnish with slices of orange and lime, rosemary and cranberries.
