the Breakfast sandwich of your dreams

Haggen Northwest Fresh | Spring 2019

The sound of sizzling sausage, the smell

of freshly buttered bread and a perfectly runny egg cooked sunny-side-up—it’s what dreams are made of. So, when making a breakfast sandwich, make sure it’s the best compilation of breakfast ingredients you can find. Start with our new breakfast sausage made right in our Butcher Shop by our talented butchers. Take your pick from Country Breakfast Sausage with Blueberries or Country Valley Apple Sausage. Each is mixed with quality ingredients and fragrant spices for a sausage worth getting up for.

Sausage Avocado

Breakfast Sandwich

Serves 4

1 Tbsp oil 4 English muffins 1/2 lb ground breakfast sausage from our Butcher Shop (Country Breakfast Sausage with Blueberries or Country Valley Apple Sausage) Avocado, sliced Arugula Butter (optional)

Haggen Rise & Shine Limited Edition Coffee Our new Rise & Shine blend features notes of orange, chocolate and brown sugar—a perfect companion for a sweet breakfast scone from our bakery or a savory sausage breakfast sandwich. Our beans are sourced from South America which lends the chocolatey flavor for which the Latin terroir is known. Each batch is roasted right in Bellingham, Washington ensuring every bag is fresh and flavorful.

Heat oil in skillet over medium-high heat. Remove ground sausage from paper and separate into four equal parts. Shape each portion into a 2-1/2" disk. Fry the sausage on both sides until cooked through and golden brown, about 4 minutes per side. Set aside and let drain on a paper towel. Add more oil to skillet if necessary. Cook egg sunny-side-up (directions below). Toast and butter English muffin. Place sausage patty on bottom half of each muffin. Layer with sliced avocado, cooked egg and arugula. Add top half of English muffin and enjoy.

How to Fry the Perfect Sunny-Side-Up Egg Heat skillet over low heat and add oil. Allow skillet to heat for about 5 minutes. Crack an egg into a ramekin or small bowl and slowly add to skillet. Cover skillet and cook, uninterrupted, until whites are completely set but yolk is still runny, about 2-3 minutes. Carefully slide the egg out of the skillet and enjoy.

Egg-ceptionally Natural

Whether you prefer free-range, pastured-raised, local, organic or conventional eggs, our refrigerated section will be stocked with the very best eggs for Easter. This year, create earth-toned eggs with simply beautiful dyes made from nature. With just a handful of ingredients you can create a work of art.

Creating Natural Dyes 2 cups raw beets, chopped; or 2 cups blueberries, crushed; or 2 cups spinach, chopped; or 1 Tbsp ground turmeric 1 Tbsp distilled white vinegar 1 dozen hard-boiled eggs Tip: Hard-boil eggs and make the dyes the day before to save time.

8

Haggen Northwest Fresh | Spring 2019

In a small pot with 2 cups water, add your coloring ingredient of choice and bring to a boil. Cover and reduce to a simmer for 10 minutes. Add vinegar and let cool to warm or room temperature.

Patterns: You can add patterns to your eggs by wrapping them with rubber bands prior to dyeing. You can also press real flowers and leaves onto eggs and tightly wrap eggs with a cheese cloth or stocking.

When ready to dye, place each dye in its own bowl. Submerge hard-boiled egg in dye, turning consistently until coated evenly. Leaving eggs in the dye longer will create a darker color.

Feel free to play around with more patterns and colors by submerging eggs in multiple colors (just wipe eggs dry between dye bowls).

The art of making

Enchiladas

E nchiladas check all the boxes: delicious,

simple, versatile, quick to prepare and can be made ahead. You have just one important decision to make before you roll up your sleeves to assemble this dish: green or red? You can make green sauce with green chiles and tomatillos, or red sauce that gets its color from red chiles and maybe some tomato. The color of the sauce doesn’t necessarily indicate how spicy your sauce will be, it all depends on your choice of chile peppers and seasonings. A cooked rotisserie chicken from the Haggen Delicatessen is a great way to jump-start your meal prep, and if you’re really tight on time, just swing by the deli and pick up a prepared enchilada meal. Easy!

Any way you roll them • Dip 8 tortillas in your favorite enchilada sauce • Fill each tortilla with a little cheese, meat and your favorite veggies (corn, peppers, onion) • Roll and place them in a dish • Pour sauce over enchiladas • Top with some grated cheese • Bake in a 450°F oven for 15–20 minutes Photo credit: Katheryn Moran Photography

Green Tomatillo Sauce

3 Tbsp olive oil 1 white onion, chopped 4 cloves garlic, minced 2 Anaheim peppers, chopped 2 jalapeño peppers, seeded 10 tomatillos, husked and cut in half

1/2 bunch cilantro, chopped 1 tsp salt 1/2 tsp pepper 1 tsp cumin 4 cups chicken stock

Place all ingredients in blender and process until smooth. Add the mixture to a large pot. Bring mixture to a simmer and cook for about 30 minutes.

Red Chili Sauce

4 cups chicken stock 2 oz dried guajillo chiles 1 oz dried New Mexico chiles 2 Tbsp vegetable oil 1 white onion, chopped 2 Roma tomatoes, chopped

2 cloves garlic, minced 1 tsp salt 1/2 tsp Mexican oregano 1/2 tsp smoked paprika 1/2 tsp cumin

In a large saucepan, bring stock and chiles to a boil. Reduce heat, cover and simmer for about 30 minutes. Drain the chiles and reserve the liquid. Remove stems, seeds and membranes from chiles. Heat oil in a medium sauté pan. Add onions, tomatoes, garlic, salt, oregano, paprika and cumin and cook for about 5 minutes. Transfer mixture to a blender. Add the chilies, reserved liquid and blend until smooth. Return mixture to large saucepan. Simmer uncovered for about 30 minutes.

Double Dipping Layer Dip Cups

Wondering how to prevent the double-dipping faux pas? Give everyone their own dip! These handy little cups of layered dips are super easy to pull together, look great on a tray or table, and best of all, they allow everyone to double-dip to their heart’s content.

Pro tip: Use prepared pico de gallo and guacamole from Haggen to make preparation a snap.

Bubbly Bar

Make your beverage situation a breeze for family and friends with a DIY mimosa bar. Get creative with fruit and juices and offer a bubbly wine to complete the spread. We recommend Casa di Malia Prosecco for a bright sparkle with a crisp lemon zest and citrus flavor. Each bottle makes approximately 8 mimosas. You will need: • 1 bottle of Casa de Malia Prosecco • 3-4 juice options (orange, grapefruit, pineapple, pomegranate, lemonade, limeade) • 3-4 pre-sliced fruit options (strawberries, raspberries, blueberries, pineapple, oranges) Pour the bubbly, add a splash of juice and garnish with fruit. Spanish foods

( a Gourmet exploration ) CHEESE Spanish cheesemakers have been perfecting

their craft for millennia, and there are endless varieties to try. There’s nothing quite like a classic Spanish Manchego made of sheep’s milk, or try a Spanish cheese plate from Garcia Baquero for an easy sampling of a buttery Iberico, traditional Manchego, and the colorful Cabra al Vino. Find them in our Artisan Cheese section and pair with Marcona almonds and fig spread.

Spanish Wine Spain has more land devoted to

vineyards than any other country, and the roots run deep into Spanish history. Centuries of expertise combine with brilliant sunshine and pure passion for winemaking to present some of the most renowned—and surprisingly affordable—wines in the world.

OLIVE OIL Spain is the world’s largest producer of

olive oil, bottling more than double what Italy does. With more than 3,000 years of practice, it’s fair to say Spanish olive oil is time-tested and worth seeking out.

CANDY Spanish artisan chocolatiers treat cocoa beans like royalty, crafting some of the world’s very best treats. Hazelnuts and almonds grow happily in Spain, lending their nuttiness to all sorts of delicious candy treats.

TAPAS Individually, they look like a snack. Build a

meal out of these small, shareable plates, and you and your dinner date can each enjoy a few bites of a wide variety of flavors and textures from simple olives or almonds to richly spiced grains and meats.

SANGRIA A red wine punch that’s a bit fruity, a bit

boozy, and a delightful sunny-day sipper. A base of Garnacha or Rioja sets the stage, a touch of brandy or orange juice adds complexity, and bright citrus fruits and berries make for a lovely presentation and a bit of sweetness.

The Ancient Art of

Bread Making The art of bread making is in our DNA, passed down for countless generations, this staple food evolved from coarse, ancient grain cakes to the crusty artisan loaves and pillowy-soft baked goods we enjoy today. If you’ve never made your own bread from scratch, there’s no time like the present to knead, roll and bake your own fresh rolls or savory bialys. Fill your home with the scent of fresh-baked breads and thank your ancestors who milled, leavened and perfected the craft for us.

Healthy Salmon, Responsibly Farmed Atlantic Sapphire Salmon is born and raised to revolutionize the way we think of farmed salmon. The fish are maintained in a “Bluehouse” in Denmark, a technologically advanced habitat with optimal conditions for raising salmon, and crystal-clear water to ensure purity and freedom from disease. This salmon is rich in Omega-3s, protein and essential vitamins, providing the taste and health benefits you expect without the environmental concerns associated with conventional salmon farming.

20

Haggen Northwest Fresh | Spring 2019

A delicate texture and mild flavor make this versatile fish perfect for all your favorite salmon dishes. Atlantic Sapphires are: • Nutritious: rich in protein, heart-healthy Omega-3 fatty acids, minerals and vitamins. • All-Natural: free of antibiotics, hormones, pesticides, and synthetic pigments; cleaned from PCBs, mercury and micro plastics. • Sustainable: lower carbon footprint and fed a sustainably produced feed. • Eco-Friendly: reduces impact on wild species and the environment.

The waste is reclaimed and turned into biofuel, and almost all of the energy needed to operate the Bluehouse is generated by an on-site windmill. The water used in the system is continuously purified by a state-of-the-art filtration system, and 99% of it is recycled. In the Northwest, we can see first-hand how fluctuations in the wild salmon runs affect the wildlife and the environment in the Puget Sound. Haggen is proud to offer alternatives to our own wild salmon so that we can continue to enjoy the flavor and health benefits of salmon while preserving the wild salmon runs and the wildlife that depends on them.

Visit our 100% Northwest grown Garden Department to build your own kitchen herb garden with your favorite varieties so that they’re close at hand whenever you need a little extra flavor and color in your cooking. Just snip, chop, and sprinkle!

ALL OF OUR PLANTS ARE 100% NORTHWEST GROWN

Chives:

The mild onion flavor makes these great as a garnish, or for a little subtle flavor burst in salads, potato dishes and omelets.

Cilantro:

Adds a lemony-bright flavor to guacamole, salsa, and tacos, or blend with sour cream and lime for a fresh crema-style topping.

Mint:

The unmistakable refreshing flavor is a lovely addition to desserts, makes marvelous teas and mojitos, and is delightful chopped and mixed into your favorite dressing.

Oregano:

A staple of Mexican and Italian cooking, mix it into tomato-based sauces and ground meats, whip up a pesto, or infuse into honey or butter.

Parsley:

Versatile and delicious, it’s most familiar as a garnish, but adds flavor to dressings and can be a pleasant surprise chopped and added to a leafy green salad.

Rosemary:

Easy to grow outdoors year-round, it lends an aromatic, woodsy depth to roasted meats and vegetables, and is easy to dry and keep.

Sage:

A favorite with roasted squash, eggs, poultry and lamb, it’s also delicious infused into butter and melted atop gnocchi, ravioli or fish.

Thyme:

Important for many traditional soups and stews, this fresh, strong herb is best added early in the cooking process so it can release its oils.
