Filling 2 6-ounce packages ripe blackberries 2 tablespoons packed light brown sugar 1 teaspoon cornstarch 11⁄2 pounds cream cheese, at room temperature 1 14-ounce can sweetened condensed milk 2 teaspoons finely grated lime zest 1⁄4 cup fresh lime juice 1 teaspoon pure vanilla extract 3 large eggs, at room temperature 1. Position a rack in the middle of the oven and preheat the oven to 350 F. Generously butter the bottom and sides of a 9-inch springform pan.

2. To make the crust: Pulse the pecans, flour and sugar in a food processor until the nuts are finely ground. Add the butter and pulse just until combined. Press the crust evenly over the bottom and 1 inch up the sides of the pan. Bake for 10 to 12 minutes, until light brown. Transfer to a wire rack and cool completely. Reduce the oven temperature to 300 F. 3. To make the filling: Mash the blackberries and sugar together in a medium saucepan with a pastry blender or a fork. Cook over medium heat, stirring occasionally, until the berries begin to release their juices. Stir in the cornstarch, bring to a boil over medium-high heat, stirring constantly, and boil for 1 minute. Pour the purée through a coarse strainer set over a small bowl, pressing hard on the solids to extract as much liquid as possible. Refrigerate, tightly covered, until thoroughly chilled.

4. With an electric mixer on medium-high speed, beat the cream cheese in a large bowl for about 2 minutes, until light and fluffy. Gradually beat in the condensed milk, zest, lime juice, and vanilla, scraping down the side of the bowl as necessary. Reduce the speed to medium and add the eggs one at a time, beating well after each addition. Pour the batter into the pan.

5. Transfer the blackberry purée to a small glass measure. Drizzle it in a spiral pattern over the batter, then swirl a table knife through the batter to marbleize it. Bake for 55 to 60 minutes, until the cheesecake is puffed on the sides and still slightly jiggly in the center. Let cool on a wire rack.

6. Refrigerate the cheesecake, tightly covered, for at least 8 hours, until thoroughly chilled and set, or for up to 2 days.

7. To serve, run a sharp knife around the edge of the pan to loosen the cake and remove the side of the pan. Cut the cheesecake into thin wedges with a sharp knife dipped into hot water and wiped dry after each cut.

Families Encouraged to Register Early for Camps From the Department of Environmental Conservation New York State Department of Environmental Conservation (DEC) Commissioner Basil Seggos announced today that online registration for DEC’s 2019 Summer Camps program will open Wednesday, January 23, 2019, at 10:00 a.m.

Applications should be submitted through the online registration program available through the Summer Camps webpage. Parents and guardians are encouraged to register early since some of the weeks fill up quickly.

“For more than 70 years DEC’s Summer Camps program has been introducing New York’s youth to the outdoors to learn about the natural world and our place in it,” said Commissioner Seggos. “DEC’s camps provide opportunities for adventure and an education that is preparing the next generation to become active stewards for our natural resources. Children can hike, canoe and camp overnight as part of their weeklong experience.”

Now in its 72nd year, the Summer Camps program offers week-long adventures in conservation education for children ages 1117. DEC operates four residential camps for children: Camp Colby in Saranac Lake (Franklin County); Camp DeBruce in Livingston Manor (Sullivan County); Camp Rushford in Caneadea (Allegany County), and Pack Forest in Warrensburg (Warren County).

Introduced in 2017, camps Colby and DeBruce are offering two weeks of programming for children aged 14-17, and five weeks of programming for ages 11-13. Camp Pack Forest will continue to host children aged 14-17 for six weeks and ages 11-13 for two weeks. Camp Rushford will continue to offer two weeks of programming for children aged 14-17 and five weeks of programming for ages 11-13. The complete schedule of camp weeks and ages is available on the Summer Camps webpage.

Campers will have the opportunity to participate in a wide variety of outdoor adventures and are encouraged to try new things. Activities may include fishing, bird watching, fly-tying, archery, canoeing, hiking, camping, orienteering, and hunter safety education.

One hunter education program for either gun, bow, or trapping is offered at each camp

each week. Class size is limited for hunter education programs and campers must sign up for it during registration and complete the homework in advance.

Along with adventure experiences, DEC campers engage in fun, hands-on activities and outdoor exploration focused on field, forest, stream, and pond ecological principles.

Campers might collect insects in a field, use nets in a stream, investigate soil composition, measure tree sizes, or practice taking field notes and writing in journals. Trips to nearby state lands might include kettle bogs, state parks, fish hatcheries, or nature museums.

Camp Pack Forest will once again offer “Outdoor Adventure Week 2.0” during Week 5 ( July 21-26). DEC encourages teens aged 14 to 17 who love being outdoors to sign up for this popular program that will help deepen their enjoyment and widen their horizons while exploring environmental careers at Camp Pack Forest. During this week, campers will develop hands-on outdoor skills that go above and beyond the traditional camp week. Alongside canoeing, fishing, and games, campers will engage in forestry, citizen science, conservation science, and more. Guest DEC, higher education, and natural resource professionals will provide opportunities for campers to consider career paths.

All four camps will operate for seven oneweek sessions (Sunday to Friday) beginning June 30, 2019; Pack Forest operates for eight weeks. Drop-off time is 3:00 p.m. on Sunday, and the closing ceremony and pick-up time is Friday at 4:30 p.m. One week of camp remains $350 per child for the 2019 year, and includes meals, trips, and a camp t-shirt.

In addition to inviting parents to register their children to participate in the DEC environmental education Summer Camps program, sporting clubs, civic groups, and environmental organizations are encouraged to sponsor one or more children for a week at camp. Groups that deposit funds to sponsor six (6) paid campers in one transaction will receive a scholarship to send a seventh child to camp for free. The seventh camper will use a sponsorship code generated by the Albany Camps administration. Information about becoming a sponsor and managing sponsor accounts is available on DEC’s website.

Your Take Steps To Improve Your Retirement Confidence (NAPSI)—A recent study by the Insured Retirement Institute found that only 25 percent of baby boomers believe they will have enough money in retirement and just 28 percent believe they did a good job financially preparing for their retirement years.

This dismal view of their retirement prospects by so many aging Americans is concerning, but what is even more sobering is the study found that boomers are actually less satisfied with their finances than they were as recently as five years ago. In 2012, 41 percent of baby boomers believed they were doing a good job of financial preparation. This decline in retirement confidence has taken place in spite of healthy market conditions and rising interest rates for most retirees’ investments.

Fortunately, the news doesn’t have to be so bad if seniors allow this news to serve as a wake-up call for them to take action.

Here are five steps that experts say boomers can take to revisit their retirement plans now and fix things that have gone awry: 1. Reassess priorities.

Take stock of your available resources and prioritize your needs vs. your wants, based on where your life is now and what is most important to you in the years ahead.

2. Raise cash.

Consider options that may be available to you for boosting your savings, such as a part-time job or perhaps selling off some possessions you no longer need.

3. Generate interest.

Re-evaluate where your money is sitting today and consider moving as much as you can out of cash and into interest-bearing accounts, which are paying depositors more than they have in several years.

4. Look for hidden assets.

Inventory all your assets that might create cash flow, including those you may have overlooked in the past, such as a life insurance policy. A life insurance policy is your personal property and, if you no longer need or can afford it, you may be able to sell it for an immediate cash payment.

5. Leverage your house.

If you own your home, consider a reverse mortgage or a home equity line of credit as a way to free up cash that you can use to pay off health care bills or other expenses.

Of these five steps, the one that could produce the most immediate cash flow may be the sale of a life insurance policy, known as a life settlement. Most consumers who qualify for a life settlement are 70 or older and own a life insurance policy with a benefit of at least $100,000.

Alternative Therapies in Cancer Treatment --DEAR DR. ROACH: I wonder why you never talk about holistic measures to prevent illnesses, such as cancer. I just read an article by an oncologist who said there are certain anti-cancer supplements that work, including vitamin D, magnolia extract and artichoke extract, all of which have been shown in laboratory studies to kill a variety of cancer cells, including colon, breast and liver cancers, and leukemia. Artichoke extract also contains cynarin, which decreases inflammation.

Other compounds that can reduce cancer growth are black cumin seed oil and bee propolis, which is rich in caffeic acid phenethyl ester (CAPE), chrysin and cinnamic acid -- compounds that affect cancer genes. Studies show that they reduce the growth of many cancers, including colon, prostate and kidney.

I’ve also read about the powerful effects that simple seasonings have on cancer cells: black pepper, sage and oregano. My question to you is: Why isn’t this blasted all over the news media, and why don’t physicians who can access this information tell it to their patients?

-- V.A. ANSWER: The therapies you mention are termed “complementary” or “alternative” treatments, specifically “herbal treatments.” Holistic medicine, on the other hand, aims to treat the entire person -- physically, mentally, emotionally, spiritually. Holistic medicine ought to be a goal for all providers, since health consists of much more than mere absence of physical disease. While a physician can help with some of these aspects, it is difficult or impossible for one person to be expert in helping a person meet all goals of wellness, which is why collaborative care is so important.

With respect to the herbal treatments you mention, and others like them, it is my opinion that these have potential to help treat some kinds of cancer. However, I am quite convinced, after reading many studies, that none of them is completely effective at preventing or curing cancer.

Compounds can be very effective at killing cancer cells in a laboratory, but that is very different from killing cancer cells in a person at a level that’s achievable without toxicity. That’s why they aren’t on the news media -- they aren’t a cure, and haven’t been proven definitively helpful. If that changes, I will be among the first to spread the news.

Where I believe alternative therapies have the most potential in cancer is in combination with traditional therapies: helping people feel better through chemotherapy and radiation. Some herbals, like turmeric, have solid data showing benefit in combination with chemotherapy in treating some cancers. However, finding an oncologist who has expertise in alternative treatment might not be easy.

Similarly, finding an alternative medicine provider who knows enough about cancer and chemotherapy to be of value to both the patient and the oncologist isn’t easy. There are some centers where both traditional and complementary therapies are used, and where the patient’s entire care team is aware of all the treatments a patient is getting. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. Debra’s injuries were so serious she could not return to work. Soon, she faced mounting medical bills, she was delinquent on her mortgage, and all her general household and family expenses were piling up. She had nowhere to go and no one to turn to for financial support. There were no family members who could loan her money and since she was out of work, no bank would either. The program is headed by Marshall D. Welch III, the Sloter Endowed Chair in Entrepreneurship at Lycoming College, who is an accomplished entrepreneur with extensive experience advising and managing organizations, merger integration and emerging growth companies. He also approaches entrepreneurship differently from others. Welch believes that entrepreneurship, at its core, is finding and creating value, and that studying entrepreneurship as an academic discipline helps students learn to be innovative in whatever field they ultimately pursue.

In less than one year, Lycoming College’s entrepreneurship classes have become a sought-after, valued addition to many students’ class schedules.

The program is built on the notion that any student’s core education, regardless of academic major, can be augmented with the practical knowledge and skills necessary to take a business idea to fruition, such as innovation, digital marketing, intellectual property and financial skills.

“My No. 1 objective is to create a world-class experience for students by joining the liberal arts with entrepreneurship,” said Welch. “I believe that the core knowledge of any entrepreneur is first his or her primary field of study, whether that is biology, archaeology, music or any of the other majors at Lycoming. Then add the practical knowledge and skills necessary to help our students become successful entrepreneurs or even work for entrepreneurial companies.”

Firmly grounded in the liberal arts, the College has modernized its approach to higher education by offering courses that better prepare students for the 21st century.

Still in its infancy, the program is already attracting well-known speakers to campus. Jay Ducote, celebrity chef and restaurateur, who has appeared on Food Network and Travel Channel, recently lectured to the College community on how he followed his passion and took risks on his road to success.
