Carissimi amici, non vi parlerò delle mie ceramiche, convinto come sono, che lo faranno molto meglio loro di me.

Voglio invece riportare un brano, tratto da un libro* letto di recente, in cui ho trovato diversi elementi simbolici e suggestivi, vicini al mio modo di sentire.

… Il paiolo era il protagonista del focolare: “ bolliva lentamente, quasi di continuo- ha scritto Camporesi- alimentato da un fuoco perenne o tenuto tiepido da una brace raramente spenta o fredda cui erano sconosciuti i cambiamenti di stagione. Più sotto si stendevano le ceneri del focolare, anch’esse utili a cuocere patate, pannocchie, cipolle, bietole…

Ai lati alari in ferro ed ottone, quasi a delimitare un confine invisibile, il locus sacer (i Lari) della casa; il camino caliginoso con la sua cappa nera era una specie di condotto astrale che metteva in comunicazione l’interno della casa con l’immensità remota dei cieli: la befana, i grilli parlanti, i frammenti cosmici e solari, i messaggi del vento potevano scendere attraverso questo imbuto fino alla cucina, impaurire o portare i doni, poi ritornarsene nel nulla come la voce del vento che smuoveva la fiamma o sollevava impercettibilmente la cenere nella quale i vecchi leggevano la ventura…

Ora il gioco, se volete, sarà quello di trovare le somiglianze, i nessi, le similitudini tra il testo e le ceramiche che in questo importante momento popolano i tavoli e il giardino incantato dell’Hotel Cernia, qui, sull’Isola d’Elba.

I

l racconto dell’arte ceramica contemporanea che stiamo narrando in questi anni, nasce dalla nostra profonda consapevolezza del valore che riveste per le nostre vite essere circondati dalla bellezza e dalla qualità.

In questo viaggio appassionante alla scoperta di una forma d’arte antica quanto il mondo, testimone della storia dell’umanità e capace di rappresentare l’avanguardia della moderna scienza dei materiali, siamo convinti che offrire un’esperienza legata all’arte abbia la straordinaria capacità di stimolare un momento di riflessione e per questo cerchiamo di trovare ogni possibile contesto favorevole a sviluppare questo tipo d’incontro.

Si stanno così concretizzando altri tipi di percorsi possibili dove essere guidati alla ricerca di momenti d’arte.

Saper riconoscere il gesto creativo in ogni sua forma espressiva, non solo negli spazi abituali delle gallerie d’arte, ma anche lungo i sentieri di un giardino mediterraneo, fra le ombre delle diverse stagioni; oppure nelle sale ampie e austere di palazzi medioevali, dove il contemporaneo s’incontra con il passato; fino ad arrivare sulle nostre tavole imbandite, in convivio con i nostri amici: la quotidianità dell’arte ci accompagna nella ricerca di una migliore qualità dell’esistenza.

l giardino del nostro albergo parla dell’Elba antica. Vi scorrono due ruscelli, lo impreziosiscono giganteschi massi di granito, vi regna indisturbata la regina delle felci antiche: l’Osmunda regalis e nel fosso scivola sinuosa l’anguilla. Negli afosi pomeriggi d’estate è bello sedere all’ombra degli ontani, godere della frescura che questi regalano e stare in silenzio, ad ascoltare il chiacchiericcio allegro del ruscello che scivola sui sassi e il gracidio delle raganelle. La sera, quando il buio sembra ingoiarsi i colori del giardino, questo diventa il regno delle lucciole e delle ranocchie e i bambini ci seguono tra i sentieri di un regno incantato. In questo mondo fatato si svolgerà un evento unico nel suo genere, un viaggio che cercherà di incrociare l’arte di impastare la terra, cuocendola e colorandola, con l’arte di amalgamare gli ingredienti per poi farne il cibo di una festa.

Nella “Cena delle Cento Ciotole”® abbiamo rintracciato l’opportunità di impreziosire il nostro concetto di arte dell’accoglienza e di farlo nel segno della convivialità e della condivisione, apparecchiando lunghe tavole impreziosite dalle meravigliose ciotole e dalle pentole di Riccardo Biavati, invitando i nostri amici in un viaggio tra i sapori e i profumi dell’isola, con la preziosa collaborazione di Susanna e Lorenzo della Galleria d’arte Gulliver.

Grazie all’entusiastica partecipazione del nostro cuoco Michele Nardi e della sua giovane e motivata brigata, abbiamo intrapreso un percorso di sapori tra le ricchezze dell’isola in bilico tra tradizione e nuove proposte culinarie che ci ha dato modo di apprezzare la varietà culturale di un territorio, l’Elba, ricco di storia ma anche di materie prime straordinarie quali il pescato e una varietà di erbe selvatiche commestibili, difficilmente reperibile altrove.

La storia e la tradizione culinaria dell’isola, per sua natura crocevia di esperienze e culture, rappresenta uno stimolante caleidoscopio di vissuti e percorsi che, intrecciandosi, hanno dato vita a una articolata e ricca “trama culturale” che con questa iniziativa vorremmo valorizzare.

Attraverso l’incrocio di diverse abilità e competenze (in questo caso l’arte culinaria e l’arte ceramica si mettono al servizio di un territorio e delle sue ricchezze) si potrebbero aprire a nostro avviso nuove opportunità di sviluppo per proposte turistiche alternative e virtuose nate dalla messa in rete di eccellenze.

Con questo spirito ci riuniamo con i nostri ospiti attorno alla tavola, per noi luogo d’elezione per il racconto di storie, la condivisione di vissuti e di esperienze in un clima disteso e gioioso e pensiamo, con Plutarco, che “non ci riuniamo per mangiare ma per mangiare insieme”.

L

a notizia può essere sorprendente, eppure in qualche modo ce la dovevamo aspettare.

Sempre più audace, avventuroso come un Tin Tin d’annata, Riccardo Biavati, con la complicità della benemerita galleria Gulliver di Marciana Marina, ha deciso di traghettare in altri lidi (e mai termine fu più esatto in senso letterale e metaforico) la fortunata esperienza della “Cena delle Cento Ciotole”®. In questo viaggio - che abbandona i consueti e rassicuranti panorami di pianura, le brume della Bassa, i lunghi filari di pioppi - l’accompagnano casse tintinnanti di vasellami fragili e preziosi: le irrinunciabili ciotole, certo, ma anche le zuppiere, i vassoi, i portalumi, gli scaldavivande e, con loro, l’indefinibile aura che circonda tutto l’evento.

Anche se il tratto di cammino può sembrare breve e l’approdo a Sant’Andrea confortevole e rassicurante, è la diversità del paesaggio, il mutare dei punti di riferimento, forse anche il profumo del pittosforo che si mescola alla salsedine nell’orto botanico/giardino delle meraviglie dell’hotel Cernia, a fare di questo viaggio una vera avventura dello spirito. Perché per noi che viviamo su pianure piatte come piadine e colline morbidamente ondulate dal profumo di olio, vino e salsiccia alla brace, e il mare, se c’è, è l’Adriatico, con quelle spiagge bionde e sabbiose dai fondali così bassi che ci puoi camminare e camminare e camminare, prima che l’acqua ti arrivi al mento, l’Elba è un mondo a parte, è l’ esotico a portata di mano che attira e intimorisce un po’.

Le nostre sono sempre state acque di fiume - del Po, del Reno o del Lamone - in primavere verdi come ramarri in amore e sempre ingannevolmente placide, ma il Tirreno è un fiume che manca dell’altra sponda, che non scorre ma si agita e cambia colore come gli occhi di un dio corrucciato. Va detto che le ciotole si sono prontamente adattate a questo nuovo cimento con la duttilità che le contraddistingue e le ha fatte sopravvivere dalla preistoria attraverso mille casi della storia, piegandosi ad occasioni e stimoli ogni volta diversi. Questa volta, però, travolte da questo clima inebriante, hanno abbandonato la consueta sobrietà, che le rendeva così simili ad essenziali tazze da tè coreane, per esibire forme frastagliate come meduse ed orli dalla sagoma irregolare che accolgono in sé sapienti trafori di stelle marine, onde e conchiglie. Ancor più di loro, comunque, sono le zuppiere - o meglio le pentole, come le definisce Biavati col suo tipico understatement un po’ sornione - a mostrarsi sensibili a quest’aria frizzante e al rigoglio della vegetazione, moltiplicando forme e decori. Eccole, quindi, in tutto il loro variegato splendore: belle panciute come nella tradizione più consolidata, basse e a cilindro come tegami da brasato, alte e strozzate al centro simili ad albarelli da farmacia, tornite sulla ruota oppure realizzate a colombino coi segni dei polpastrelli bene in vista, perfino dotate di inedite concavità frontali che le fanno somigliare a grotte marine; con le anse che sembrano di volta in volta orecchie o mani sui fianchi, come nei più classici canòpi etruschi. quanto chiamare Pinocchio “pezzo di legno”, perché con tutta evidenza si tratta di creature dotate di vita propria, nate dalle mani dell’artista-demiurgo con un personalità già formata e, c’è da scommetterci, assai spesso indipendente dai suoi propositi iniziali. E difatti le Signore, che abbiamo visto negli anni governare stelle, lune d’ogni fase e tutti gli oggetti del creato con un distacco imperturbabile e un po’ blasé, sembra abbiano ora acquistato un’improvvisa vivacità a contatto con una realtà per loro nuova ed emozionante. Già alla scorsa cena delle Pradine, va detto, le pentole/matrone avevano cercato di prendere il sopravvento, usurpando alle ciotole, titolari del nome in ditta, il ruolo di protagoniste. (E’ ben vero che si è già avuto modo di osservare altrove come, in fondo, le pentole non siano altro che ciotole col coperchio, e quindi la querelle resterebbe in famiglia, per così dire, ma il fatto si presta comunque a più di una riflessione). Non si può proprio fare a meno di rilevare come, in quest’occasione, le arzille Signore si siano letteralmente montate la testa, sfoggiando elaborate acconciature degne del maitre coiffeur di madame de Pompadour: trionfi vegetali d’ogni genere e qualità, sovreccitate fantasie marine, persino comignoli affastellati dall’equilibrio dubbio. Superata ogni remora, avanzano impettite recando con sé interi mondi, simili a ciociare al ritorno dalla fonte con l’anfora in testa - complici le già note qualità mimetiche dei coperchi che si appiattiscono come palcoscenici, si gonfiano come un soufflé ben riuscito, o assumono la forma di alberi adorni di boccioli simili a bottoni bijoux d’alta moda - paragonabili in maestà alle

Cariatidi dell’Eretteo, e come loro per niente impensierite dal tremendo carico che gli posa sul capo.

Eppure, a guardare con più attenzione, forse qualche timore c’è, almeno a giudicare da quei camini che si rizzano come capelli sul capo della Pentola fumante o da certi sguardi apprensivi che la Signora dei mari rivolge ai pesci suoi sudditi. Più svagata, la Pentolastellata sembra abbandonarsi ai sogni, ai pensieri che le si materializzano sul capo sgorgando, con la forza inarrestabile di un geyser, in un alto cilindro traforato à jour con tracce filanti di comete, stelle e gabbiani in volo. In tutte, comunque, abita la stessa sfrenata vitalità di un mondo parallelo in cui le regole della logica tradizionale non hanno più valore, ma si arrendono alle emozioni del contingente. E difatti è il motivo marino a dominare incontrastato: dal Vassoio Sole, coi decori applicati che si dispongono come relitti abbandonati da una mareggiata, alla Pentola dei pescatori dalle pareti graffite a rete su cui s’impigliano pesci king size, e col coperchio che non esita a rovesciarsi per creare lo scafo a scodella di una barca su cui svetta una coppia di timonieri dai gesti lenti, avvolti in lunghe tuniche senza tempo, come antichi beduini o marinai omerici. Del resto si sa che Giasone è passato di qui con gli Argonauti e chissà, prima di imbarcarsi per i suoi avventurosi ritrovamenti di pellicceria caucasica, potrebbe anche avere bevuto da quell’anfora che adesso medita sui suoi duemila e passa anni di onorato servizio enologico, incorniciata dai pesci e dalle alghe che le fanno ghirlanda. poco lontano da qui, specie in primavera, quando i miti di rinascita s’intrecciano ai turbamenti degli umani in nodi complessi come il volo nuziale di un’ape regina, mescolando profumi e sperdimenti. Allora il soffio di vento che sale dal mare al tramonto e agita i mirti e le rose sacri ad Afrodite, potrebbe essere credibilmente confuso con lo sfioramento del velo leggero di una Naiade, inseguita da un satiro in affanno. L’ambiente, insomma, è troppo suggestivo per resistere: il parco, il giardino delle Osmunde, l’accoglienza calorosa, la prospettiva del contatto con un mondo nuovo ed eccitante, ancora tutto da scoprire. Merito dell’ospitalità di Francesca e Cristiano, certo, ed anche della prospettiva di un’esperienza conviviale d’eccezione da vivere, in cui tutti i nostri sensi entrano in gioco perché ogni portata reca con sé il qualcosa di succulento e di sorprendente, per via degli imprevedibili abbinamenti di forme, gusti e colori. E poi si sa come vanno le cene ben riuscite. I discorsi scivolano via senza impacci sull’onda del vino che accompagna i cibi e i commensali (le guance un po’ arrossate, gli occhi che brillano per il piacere e le luci, le bocche già pronte al riso) si concedono il lusso di rallentare il ritmo perché l’attesa dei nuovi piatti da assaggiare e da ammirare aggiunge quel pizzico intrigante di desiderio sospeso/curiosità insoddisfatta che è pur sempre il condimento più stuzzicante. Lo chef Michele Nardi, che ripropone la tradizione culinaria variandola sapientemente senza tradirla, si muove sulla stessa lunghezza d’onda di Biavati e come lui individua nell’isola un crocevia di suggestioni da sfruttare appieno. Perché qui si av-

verte già l’essenza profonda del Mediterraneo, di quella koinè di linguaggi, gesti e saperi che da millenni accomuna i popoli che vi navigano e produce contaminazioni d’ogni genere, evidenti soprattutto nella cucina e nell’arte. Sarà forse perché in questo luogo gli odori di spezie portati dal libeccio si mescolano al profumo d’agrumi che viene dalla costa, dando vita ad un mix irresistibile, frutto della felice intrusione reciproca, in cui tutti gli ingredienti si compongono in una nuova armonia, stimolante Pentola fumante / The smoking pot, 2009 Semire, grés, ingobbi, smalti/Semire, stoneware, engobe, enamel • cm. 15x31

come tutti i meticciati. Cucina ed arte, si diceva, e quindi kebab e cous cous, certo, senza rinunciare però (e ci mancherebbe!) alla ribollita, a garanzia di un imprinting sanamente toscano, e poi il curry che si mescola alla cicerchia e ai fagioli all’occhio, proprio come la pentola che ha il coperchio a cono, modellato sul tajine marocchino, si sfrangia in alto con l’immagine di un piccolo borgo elbàno arroccato su un poggio sassoso. Quanto all’albero con la chioma che sembra una pasta sfoglia tirata al matterello con decori di pasticceria mignon, sbaffi di glassa colorata e chantilly, non rappresenta forse il perfetto equivalente ceramico della “tavolozza di sciroppi e creme alle essenze dell’Isola” proposto dallo chef Michele? In perfetta, naturale sintonia con l’Isola Botanica, una profusione di erbe e di fiori si riversa nei piatti, creando un’ondata di aromi da capogiro: borragine, rosmarino, nepitella, lavanda, menta, finocchio, gli stessi che sembrano depositarsi sulle ciotole lasciando tracce leggere, appena scolorite dal sole e dal vento che ne Del giardino / Garden, 2009 Semire, grés, ingobbi, smalti/Semire, stoneware, engobe, enamel • cm. 26x24 (particolare / particular)

ha levigato le superfici, mentre la felce (ed è l’Osmunda regalis, una vera rarità che sopravvive nell’Orto botanico), incastonata come un resto fossile nell’argilla, evoca la magia degli insetti millenari racchiusi nell’ambra siberiana. Il tutto sotto il segno dell’esplosione vitale, del moltiplicarsi delle forme naturali, in un’esplosione dionisiaca di vitalismo febbrile, ansia di vivere e di esprimersi, primordiale joie de vivre.

La discendenza genealogica dal meraviglioso medievale è chiara e indubitabile: tutto il vasellame, nel suo complesso, si trasforma in una sorta di erbario e bestiario fantastico, degno della fantasia di uno scalpellino antelamico, che sa glissare con saggia, annoiata nonchalance su ogni pretesa di rigore verista. Basti osservare le nostre formidabili pentole che, come i fantastici Blemmi acefali delle cattedrali gotiche, hanno rinunciato ad avere un capo, facendosi invece scivolare sul petto i lineamenti del viso e dotandosi di una bocca così minuscola e puntiforme da potersi alimentare, come vuole la leggenda, solo attraverso cannucce d’avena. E ancora coperchi/palcoscenico su cui vanno in scena eventi di vario genere, trionfi marini con pesci guizzanti che s’inseguono incurvandosi, fiori di cui forse sarebbe difficoltoso indagare l’esatta appartenenza botanica ma che prorompono con vitalità irrefrenabile, giardini rigogliosi come giungle amazzoniche che ripropongono - sotto il segno di una fantasia degna del pennello del Doganiere - quella profusione di corbezzoli, aloe, cisti, limoni, allori e piante esotiche svariatissime che costituisce la magia del giardino del Cernia. E poi, pesci ovunque, onnipresenti e pervasi da un’ incontenibile dinamismo,

capaci di performances inaspettate, colti nel pieno di balzi prodigiosi oppure usati come cavalcature dagli efebi portalume, pesci che escono addirittura dall’acqua per cantare con tale slancio da provocarci un acuto rimpianto per la nostra sordità, provocata certo da irrimediabile conformismo. Pesci puntinati, a squame e striature, e magari sono proprio quelli del Maciarello e delle Cote Piane che ci ritroviamo nei piatti, cucinati con le stesse erbe e i fiori che li accompagnano anche nelle ciotole. Di nuovo ceramica e alta cucina che s’intrecciano, in nome delle comuni matrici di ricerca del piacere, sapiente manipolazione degli ingredienti e risultato sorprendente che, come in un processo alchemico ben riuscito, è capace di trasmutare, attraverso il fuoco, le materie più povere (come il grano, per l’appunto, l’argilla, gli ossidi minerali, le verdure, o il coniglio) in qualcosa di prezioso. A questo punto è tutto chiaro. Una cosa ormai l’abbiamo capìta: conclusa anche questa avventura (e quattro!) vedremo certo il nostro pentolaio magico allontanarsi verso nuovi orizzonti, seguìto da una lunga teoria di ciotole, portalumi, vassoi e zuppiere dal coperchio sussultante. Per dove? E’ inutile chiederglielo adesso. Lo scopriremo, per dirlo col poeta, solo vivendo.

La Cena delle Cento Ciotole® La cucina di Michele Nardi

“La mia cucina si basa sull’istinto, l’umore e l’ispirazione del momento. Nel creare un piatto penso ai sapori e alle caratteristiche degli ingredienti che ho a disposizione, quindi li combino mentalmente, cercando di immaginare un equilibrio di sapori e colori che cerco di ricreare nel piatto finito. Amo rivisitare i piatti della tradizione elbana, scomponendoli e ricomponendoli, in un continuo gioco di sapori e suggestioni.

Sono affascinato dall’opportunità, ampiamente offerta qui all’isola d’Elba, di cucinare in assoluta libertà basandomi sulle materie prime che il territorio ci offre, sia per le erbe spontanee che per la ricchezza del nostro mare.

Grazie alla generosità della campagna elbana si può proporre una cucina che sia l’espressione di un territorio, lontana anni luce dai sapori omologati che caratterizzano sempre più le nostre tavole e per questo capace di regalare sensazioni ed emozioni assolutamente uniche e non esportabili altrove.”

Antipasti

Kebab di pesci del Maciarello su fagioli all’occhio della piana di Campo L’influenza araba ha lasciato evidenti tracce nella cultura gastronomica della nostra isola e per ricordarla ho scelto una preparazione tipica della tradizione medio orientale, “contaminandola” con pesce nostrano in sostituzione alla più tradizionale carne in abbinamento a un legume che adesso non si coltiva più sul territorio.

Al moletto di Sant’ Andrea ho incontrato l’amico Beppe di ritorno da una battuta di traina lungo la costa. Nel secchio aveva palamite e lucci di mare, perfetti per la nostra ricetta. Ho sfilettato i pesci e li ho tagliati a fette sottili mettendoli a marinare per circa 2/3 ore in un infuso di olio buono con una cipolla, un paio di carote ed una cotenna di prosciutto, i fagioli all’occhio (rimediati miracolosamente da un vecchio contadino che ancora li coltiva a Marina di Campo) precedentemente tenuti in ammollo in acqua fredda per 24 ore. Mi ricordo che mia nonna li cucinava così.

Dopo la marinatura ho avvolto i filetti di pesce alternandoli e fermandoli con uno stecco di legno e li ho cotti in forno a 180° per circa 6 minuti. Tutto è pronto per essere gustato.

Seppie trifolate in spiedo di rosmarino su crema di borragine e ortica Nel pensare a questo piatto ho immaginato un vecchio pescatore al ritorno da una

giornata a mare. Mi sono venuti in mente quei giorni di “magra” in cui il contenuto della nassa non sarebbe bastato per preparare la cena a tutta la famiglia. Mi piace pensare che il pescatore, con le poche seppie che il mare gli aveva regalato, si aggirasse tra i campi vicino casa per raccogliere un po’ di erbette prima di rincasare per poi affidare alle sapienti e laboriose mani della moglie il compito di preparare la cena.

Per questa preparazione, prendo un mazzetto di ortica, la scotto per due minuti in modo che perda le sue proprietà urticanti e la unisco con la borragine e tre patate per ogni commensale, ad un fondo di porro selvatico e aglio triquetro. Allungo il tutto con acqua fino a raggiungere il doppio del volume delle verdure e lascio cuocere fino alla piena cottura delle patate, per poi passare il tutto al mixer e correggere il sapore aggiungendo sale se necessario. Un piccolo suggerimento… fate freddare subito la crema ottenuta immergendo il recipiente che la contiene in una bacinella con del ghiaccio. Il raffreddamento rapido consente alla crema di conservare il bel colore verde delle verdure.

La seppia, pulita a tagliata a losanghe lunghe 5 cm e larghe 3 cm, la lascio trifolare in un fondo di aglio triquetro e porro selvatico. Vedrete che i filetti si arricceranno con il calore. Insaporisco a mio piacere la seppia e la infilzo in spiedi ricavati con delle cime di rosmarino selvatico. Riscaldo nel frattempo la crema e la sistemo nelle ciotole: servite ben caldo.

Murena fritta , agrodolce alle erbe aromatiche e aglio triquetro con insalata di strigoli e fiori di borragine In questa rivisitazione in chiave moderna ho scelto la murena che, se fritta, risulta essere un piatto sfizioso e stuzzicante. Ciononostante, a causa della presenza inevitabile delle piccole lische, solo i più arditi, spinti dalla consapevolezza di andare incontro ad un piacere assicurato, corrono il rischio di assaporarla. Siate coraggiosi e assaggiatela accostandola ad un contorno neutro ed insolito accompagnato da

una salsa fatta di profumi e colori dell’isola e mi raccomando, mangiate con le mani.

Prima di tutto preparo l’agrodolce di pomodori mettendo a sobbollire in una pentola di rame i S. Marzano leggermente acerbi con lo zucchero (in proporzione di 2 a 3), peperoncino, ed aceto balsamico (un bicchiere ogni kg. di pomodori) lasciandoli cuocere fino ad ottenere la consistenza di una marmellata. A questo punto aggiungo origano, nepitella, lavanda, basilico, maggiorana, timo, aglio triquetro ed elicriso e lascio cuocere solo 4/5 minuti per non disperdere i profumi e gli aromi delle erbe. Passo tutto al setaccio e faccio riposare (meglio se si prepara il giorno prima).

A questo punto “affronto” la murena e qui sta il bello della preparazione, considerato che la pulizia di questo pesce è piuttosto laboriosa e che, per quanto ci si prodighi nell’eliminare le lische, è facile che durante la masticazione si ripresentino. Io farò del mio meglio ma non me ne vogliate se qualcosa tralascerò (cercherò di compensare questa pecca cercando di regalarvi una sensazione in bocca che lasci il segno per particolarità e sapore). Dopo averla pulita la taglio in trance da friggere in olio bollente.

Primi Piatti

Ribollita delle vie del ferro in conca di pane con insalata di ceci, finocchio marino, ombelico di venere e frutti di mare Nel rivisitare una zuppa che si ispira alla più famosa ribollita fiorentina ma si arricchisce di profumi marini, immagino un percorso durante il quale si passi dai campi e lungo i sentieri si arrivi in riva al mare. Durante la passeggiata si possono raccogliere erbe spontanee ed aromi quali il finocchio di mare (che cresce negli anfratti delle scogliere ed ha un sapore leggermente anisato e salato) così come le “chioccioline”, le patelle, gli sconcigli e i pomodori di mare. Personalmente ho fatto questa esperienza e ve ne offro un assaggio.

Prima di tutto preparo gli ingredienti in modo da velocizzare la lavorazione. Vi ricordate come abbiamo cucinato i fagioli all’occhio? Si dovrà usar la stessa procedura con i ceci, passandone però la metà con l’acqua di cottura al passaverdura; quindi si sgusciano le patelle, che da noi si chiamano lampade, gli sconcigli e le lumache di mare o granite che si trovano abbastanza facilmente lungo i bassi fondali della costa ovest dell’isola. Si mondano le erbette selvatiche come ombelico di Venere, ortipecori, bietole, piantaggine, tagliandole poi grossolanamente. Il finocchio di mare, alcune foglie di ombelico, strigoli e fiori eduli si lasciano a foglia intera per l’insalata.

Si fa soffriggere appena in poco olio extravergine un trito grossolano di sedanina di

fosso, porro selvatico e peperoncino… Mi raccomando, a fuoco lento per consentire agli aromi di rilasciare i profumi e le sostanze nell’olio ed evitare il surriscaldamento di quest’ultimo. Si aggiungono i frutti di mare comprese le granite. Lasciamo rosolare prima di aggiungere le erbette facendole appassire piano piano.

Uniamo a questo punto un poco di concentrato di pomodoro e il passato di ceci con l’acqua di cottura. Lasciamo sobbollire per circa un’ora, aggiungendo acqua se necessario. Il profumo e l’aspetto ci segnaleranno che la nostra zuppa è pronta. A questo punto si aggiunge una dadolata di pane raffermo tostato ed un filo di olio a crudo: servendo la zuppa accompagnata dall’insalata di erbette e frutti di mare otterremo così un piatto formato dall’unione di due preparazioni diversissime ma accomunate dagli stessi ingredienti.

Cous cous con cicerchie, menta di fosso e bocconcini di cinghiale in bianco In questo piatto ho voluto ricordare la tradizione culinaria del Nord Africa, rivisitandone un piatto tipico: Il cous cous con hummus (crema di ceci e sesamo) e menta che nei momenti di miglior fortuna veniva arricchito con spezzatini di carne o pesce.

All’Elba la menta selvatica non manca e le cicerchie erano fino al primo dopoguerra alimento molto consumato e coltivato; che dire del cinghiale che, a seconda dei punti di vista, con un pizzico di fortuna potete incontrare all’imbrunire sui nostri sentieri.

Come già spiegato per i fagioli all’occhio ed i ceci, procedo alla cottura delle cicerchie.

Fatto ciò, preparo una dadolata di carote, sedanina di fosso e cipollotto selvatico aggiungendo una o due foglie di alloro, timo e rosmarino a piacimento (ricordiamoci però che il protagonista sarà il cinghiale, che dovrà essere esaltato dagli aromi e non sovrastato) facendo rosolare il tutto come sempre con l’olio buono. Unisco la polpa del cinghiale tagliata a bocconcini non troppo grandi e leggermente infarinata e la faccio cicatrizzare a fuoco deciso. Eviterei di bagnare con vino rosso, perché non voglio che il risultato finale mi dia una salsa scura. Allungo quindi con del buon brodo di carne e lo lascio sobbollire per far sì che le sostanze grasse, affiorando, possano essere facilmente asportate e aggiungo una dose di grappa di mirto. Lascio sobbollire ancora pochi minuti per far evaporare l’alcool, dopodiché mantengo il tutto in caldo. Cuocio il cous cous al naturale, lo lascio intiepidire e lo condisco con le cicerchie, la menta di fosso a julienne, dei piccoli spicchi di pomodoro “pallino”, sale, paprica forte ed olio crudo.

Minestra di pescetti delle Cote piane con bietola selvatica e straccetti alla lavanda Ho pensato alla minestra di pesce e bietola perchè è un classico della cucina della costa tirrenica in genere. Da noi la si può ancora proporre in una versione genuina

raccogliendo la bietola selvatica che cresce in abbondanza un pò ovunque e semplicemente andando con una cannella e una buona esca sulle Cote piane (la scogliera di granito che abbraccia il golfo di Sant’Andrea)… Ma attenti ai gatti!

Mentre ero a far bietole e lavanda nei campi, Ciro e Massimo (i miei collaboratori) con le loro canne da pesca e una nassa hanno pescato un bel secchio di pesce da minestra: giudole, scorfanetti perchie e sbirri, ottimi per una minestra al bacio. Mentre loro puliscono il pescato e le bietole, io preparo una comune pasta all’uovo aggiungendo però i petali e le cimette tritate della lavanda.

Lascio riposare l’impasto per circa un’ora e lo stendo a sfoglia, ritagliandola in quadrucci irregolari (gli straccetti). Prepariamo un fondo di aglio cipolla e peperoncino e lo lasciamo rosolare prima di aggiungere i pesci. Mi raccomando togliete le branchie perché conferiscono un sapore acuto e poco gradevole alla minestra. Di solito io metto un coperchio e lascio che i pesci si sfaldino a fuoco lentissimo; solo dopo aggiungo pomodori maturi, l’acqua e lascio sobbollire a fuoco lento per 30 minuti, dopo di che passo il tutto con il passaverdure ed unisco le bietole (le più tenere) tagliate grossolanamente, portandole a cottura. Insaporisco con il sale (io non uso il dado perché i sapori devono rimanere autentici) e finalmente possiamo tuffare i nostri straccetti. Dopo 3-4 minuti si otterrà una minestra che fonde i sapori del mare e dell’entroterra da gustare ad occhi chiusi. Siamo o no qui per “assaggiare” un territorio?

Secondi Piatti

Tonnetto dell’Elba in manto di erbe su gurguglione di verdure alla catalana Chi sa quanti tonni hanno incrociato le prue dei galeoni spagnoli che solcavano i mari dell’arcipelago toscano. Con questo pensiero mi sono accostato alla preparazione di questo piatto e mi sono divertito a immaginare il nostromo a bordo della nave, intento a preparare lo stufato per la ciurma avvalendosi delle verdure che erano state stivate in occasione dell’ultimo attracco.

Dopo aver ricavato delle fette da un filetto di tonno, le infarino leggermente e le faccio cicatrizzare velocemente in padella con poco olio. Fatto ciò passo le fette in una bacinella contenente un trito di erbe (io prediligo, come avrete capito, quelle selvatiche ma si possono ottenere buoni risultati anche con quelle che si trovano comunemente in commercio come la cipollina il timo, l’origano fresco etc…) ricoprendone completamente la superficie esterna. Mentre facevo tutto questo, in forno stavo cucinando il gurguglione che consiste in uno stufato di melanzane, zucchine, peperoni cipolle e pomodori (tagliati grossolanamente ma tutti di uguali dimensioni per ottenere una cottura uniforme) messe direttamente in forno o in padella con coperchio a cuocere lentamente.

Guardo e assaggio le verdure e quando le sento leggermente al dente unisco abbondante basilico e condisco con sale. A questo punto posso infornare a 180°c il tonno che non deve cuocere a lungo, dovendo risultare leggermente rosato nel cuore per non essere stopposo, non sopporta più di 3-4 minuti di cottura.

Erbette selvatiche rifatte con risotto “al calasole” mantecato alle uova di palamita e coniglio in rosso In questa stagione i campi sono ricchi di colori grazie ai fiori che iniziano a schiudersi. Si tratta inoltre del periodo migliore per raccogliere e mangiare piante alimurgiche quali l’ortipecora, la bietola selvatica, la piantaggine, l’ortica e la borragine. Le vecchie massaie contadine ne raccoglievano in grande quantità per farle una prima volta bollite per poi riutilizzare gli avanzi “rifatti” in padella con uno spicchio d’aglio. Sempre in questa stagione, a “calasole”, ovvero nel momento in cui il sole inizia ad immergersi nel mare, si può godere di uno spettacolo meraviglioso regalato dai colori caldi del tramonto.

Ho cercato di fondere insieme le due esperienze in un piatto che amalgamasse i sapori dei campi con le sfumature rosso arancio dei fiori in un mare di riso che porta in se la vita (le uova di palamita).

A guardare dall’alto della scogliera ho immaginato un coniglio selvatico.

Questo è proprio un esperimento di quelli che piacciono a me. Non temete, non voglio usarvi come “cavie”: quando leggerete questa ricetta sicuramente sarà già stata testata su di me e molto probabilmente anche (a grande richiesta) su Francesca e Cristiano. Vi chiedo solamente un approccio mentale aperto e predisposto alla possibilità di amalgamare elementi diversissimi per i normali canoni del gusto alimentare ma vicinissimi se si guarda la natura nel suo complesso ponendo mare, terra e cielo come un unico elemento che la compongono. Faccio rosolare cipollotto selvatico, aglio, sedanina di fosso tritati e alloro.

Aggiungo il coniglio (preso dal contadino) ben pulito e tagliato a piccole trance. Lascio cicatrizzare leggermente e sfumo con del vino bianco (possibilmente l’Ansonica che è un vitigno autoctono elbano) e dopo aver fatto evaporare unisco del concentrato di pomodoro (un paio di bei cucchiai colmi per ogni coniglio).

Allungo di tanto in tanto con dell’acqua (non uso volutamente brodo di carne per non alterare il sapore del coniglio) lasciando sobbollire una mezz’oretta fino ad ottenere una salsa leggermente cremosa. Mentre il coniglio è in cottura faccio un semplice risotto di base facendo rosolare della cipolla tritata finemente ed unendo il riso superfino precedentemente tostato. Unisco poco alla volta del brodo di pesce molto delicato (circa 3 etti di pesci da minestra in un litro di acqua). Quando il riso è ancora al dente aggiungo una sacca di uova di palamita incisa per la lunghezza in modo che ogni singolo uovo possa fuoriuscire ed integrarsi nel riso. Un minuto di cottura ancora e passo alla mantecatura che dovrà avvenire a fuoco spento unendo una nocetta di burro ed i petali di nasturzio, calendula, tarassaco, amalgamando il tutto fino ad ottenere un’omogeneità di colori che sfumano dal giallo al rosso (come al tramonto) ed una consistenza cremosa. Salto adesso le erbette (bietola selvatica, ortipecori, cicoria di campo, piantaggine, borragine, dente di cane) come descritto nella premessa; rimarrà solamente da montare e gustare il piatto finito.

Tortino di stoccafisso su crema di patate con emulsione di olive nere e pinoli Ho provato a scomporre quello che è un “cavallo di battaglia” della cucina tipica elbana poiché rispecchia l’indole degli abitanti di questa isola con la genuinità e la schiettezza

dei sapori forti ma ben amalgamati, rustici ma al tempo stesso fini al palato. Un piatto che ha dato energia ai minatori della parte orientale dell’Elba nei momenti duri ma anche tanta allegria durante le merende e le feste di paese e che tutt’oggi viene apprezzato come gradito ospite sulle nostre tavole. L’ho scomposto e ricomposto in forma quantomeno atipica per riuscire a proporlo come secondo piatto.

Lo stoccafisso va preparato con “religiosa” attenzione alla tradizione. Da noi si dice: “lo stoccafisso vuole l’olio” ed infatti ne richiede molto, così come le cipolle che dovranno avere un volume pari a quello dello stoccafisso spolpato e spellato. Non mancherà il peperoncino che

sarà usato generosamente (ottima scusa per poterci bere vino a volontà). Si fa rosolare la cipolla in abbondante olio di frantoio, si aggiunge la polpa dello stoccafisso accompagnato da altro olio e si lascia rosolare a fuoco vivace fino alla formazione di una leggera patina sul fondo del tegame di cottura. Si bagna ancora con Ansonica e si lascia evaporare. Fatto questo si unisce la pelle tagliata a strisce grossolane e tanto per cambiare un altro poco di olio, dopodichè aggiungiamo il concentrato e poco alla volta dell’acqua facendo sobbollire fino a che l’olio viene a galla. A questo punto si mettono le patate tagliate a dadi e si portano a cottura usando ancora il metodo “risotto”. Si corregge di sale e si lascia freddare. Adesso si può eliminare l’olio in eccesso con l’ausilio di un mestolo. Si rimette sul fuoco facendo raggiungere nuovamente l’ebollizione, aggiungiamo pinoli ed olive nere prima di servire. Questo è il piatto della tradizione ma io proverò a scomporre gli ingredienti per voi… Frullo le patate ottenendo una crema liscia che adagerò sul fondo della ciotola. Faccio dei tortini con lo stoccafisso aiutandomi con dei coppapasta cilindrici e ne metto uno per ogni ciotola sopra la crema di patate. Guarnisco con pinoli ed un emulsione ottenuta frullando le olive nere e rifinisco con piccole foglie di olivo e rondelline di cipolla selvatica.

Tavolozza di sciroppi e creme alle essenze dell’isola con schiaccia briaca, schiacciunta, bavarese al limoncello e cantucci Nel pensare a come terminare la serata, ho rivissuto una emozione di una decina d’anni fa. Mi sono ricordato cioè di a quando un gallerista statunitense, vedendo un murales che avevo dipinto a casa mia a “scappatempo”, mi propose di dipingere quadri. Come al solito sulle prime non presi in seria considerazione l’ipotesi, convinto come ero che non avessi le capacità per farlo. Quando però all’indomani mi furono recapitati a casa pennelli e tela, non potei più sottrarmi a quello stimolo: tradurre su una tela le immagini e le fantasie che la mia testa mi suggeriva.

Da allora ho cercato in più occasioni di fissare con i pennelli e i colori le mie impressioni e le mie scorribande in mondi fantastici, rintracciando in questo esercizio appagamento e soddisfazione. Con questa sensazione vorrei “girare lo stimolo” anche a voi stasera, regalandovi una tavolozza piena di colori e profumi dell’isola chiedendovi di pitturare voi stessi il vostro personale quadro dell’Elba mescolando e confondendo i colori, i sapori e le tradizioni gastronomiche in un viaggio che sono stato felice di condividere con voi.

“La Cena delle Cento Ciotole”® (English version)

Moments of Art. The tale of contemporary ceramic art that we are recounting in these years is born from our profound awareness of the value that our life has when it is surrounded by beauty and quality. In our fascinating journey of the discovery of an art form that is as old as the world itself, witness of the history of humanity and capable of representing the forefront of the modern science of materials, we are convinced that offering an experience connected with art has the extraordinary capacity of stimulating a moment of reflection and for this reason we are trying to find every possible excuse that is advantageous to developing this type of encounter.

This is why other types of possible ideas are taking shape where we can be guided through our search for moments of art. We would like to be able to recognise the creative gestures in all its expressive forms, not only in the normal confines of an Art Gallery but also along the pathways of a Mediterranean garden through the shadows of the changing seasons: or, perhaps in the lofty, austere halls of medieval castles where the present and the past meet; up to the final point of arrival, seeing the tables laid out, a feast set up to share with our friends: the everyday aspect of art follows us in our search to improve the quality of our existence.

Lorenzo and Susanna Gulliver Gallery The garden of our hotel talks about ancient Elba. Two streams flow through it and it is enhanced by gigantic granite masses; here the queen of ancient ferns reigns undisturbed, the Osmunda regalis, while in the water of the stream the slippery sinuous eels live. In the long, hot, steamy summer afterno-

ons, it is wonderful to sit in the shade of the alder trees, to enjoy the coolness that they offer us and to remain in silence listening to the happy sound of the stream rushing over stones and the croaking of the tree-frogs. In the evening when the darkness seems to swallow up all the colours of the garden, it becomes the domain of the fireflies and the frogs and the children love following them along the pathways in this enchanted kingdom. In this charming world, a unique event will be taking place, a journey that will try to blend the art of mixing the earth, cooking it and colouring it, with the art of amalgamating the ingredients to then create the food for a feast. In the “Supper of the Hundred bowls”, we have found an opportunity to embellish our concept of the art of hospitality and to do this through being together, laying out long tables coloured with Riccardo Biavati’s bowls and tureens, inviting our friends to share in this journey through the tastes and perfumes of the island, with the precious collaboration of Susanna and Lorenzo from the Gulliver Art Gallery. Thanks to the enthusiastic participation of our cook, Michele Nardi and his team of young, keen collaborators, we have started out on this tasting trail, where the natural abundance of the island is finding a balance between traditions and new culinary ideas, giving us the opportunity to appreciate the cultural variety in one area, in this case the island of Elba, rich in history but also in extraordinary natural resources, such as the fishing and also the variety of edible herbs that would be difficult to find elsewhere. The history and the culinary tradition of the island, a natural crossways of experience and culture, represents a stimulating kaleidoscope of life and its ordeals, that when they meet, have given birth to a rich and articulated “cultural conspiracy” that we hope will be appreciated with this initiative. Through the blending of the different abilities and expertise (in this case culinary art and ceramic art put themselves at the service of a land and its treasures) new opportunities for development could be opened up, alternative tourism proposals made available through the right channels. In this spirit, we meet with our guests around the table, the place we have chosen to recount our tales, the sharing of lives and experiences in a relaxed

and joyful atmosphere and we think, with Plutarch, “we do not meet to eat, but to eat together”.

Dear friends, I have no intention of talking about my ceramics because I am convinced that they will do that themselves, much better than I could.Instead, I would like to quote this passage from a book*. I read recently where I found many symbolic and striking elements that are close to my way of thinking… The pot was in the centre of the hearth: “it was simmering away slowly, almost continuously – wrote Camporesi – nurtured by a perennial fire or kept warm by embers that rarely died nor became cold, where the change of the seasons was unknown. Lower down, the ashes of the fire were spread out, useful for cooking potatoes, maize cobs, onions, chard… Each side stood the brass fire irons, almost defining an invisible border, the locus sacer, the household gods; the fireplace dark and hazy with its

black hood as a kind of astral stairway that put the inside of the house in communication with the remote immensity of the skies: the old lady who comes to bring presents at Epiphany, the talking crickets, the cosmic and solar fragments, the messages from the wind could all come down that chimney into the kitchen, either to scare us or to bring gifts and then disappear into thin air like the voice of the wind that makes the flame flicker or just lightly lifts the ashes where the old folks were reading their fortunes…” Now, if you like, the game will be that of discovering the similarities, the connection between the ceramics that in this important moment are occupying the tables and the charming garden of the Hotel Cernia, here on the island of Elba.

Valli - Biblioteca Culinaria The news might be surprising, yet, in a certain sense, we should have been expecting it. Riccardo Biavati is becoming bolder and more adventurous owing to the complicity with the laudable Gulliver Gallery in Marciana Marina and he has decided to set sail for foreign shores (never has this term been more appropriate in the literal and metaphorical sense) bringing the well-loved experience of the “supper of the hundred bowls”. On his journey – leaving the usual and reassuring views of the plains, the mists of the low lands, the long rows of poplar trees – he brought with him clinking chests full of fragile, precious pots: the small bowls that of course had to be there, but also the tureens, the trays, the lamp-holders, the food-warmers and, with all this, the mysterious aura surrounding the whole event. Even if it might seem a short distance and the berth in Sant’Andrea might seem comfortable and reassuring, it is the diversity of the landscape, the changing of the reference points, perhaps it could even be the scent of the pittosporum that gets mixed with the saltiness in the wonderful botanic garden of the Hotel Cer-

nia that makes this journey a truly spiritual adventure. For those of us who live in the low-lying lands as flat as a pancake and in the gently undulating hills with the scents of oil, wine and grilled sausages and the sea, if there is one, is the Adriatic, with its golden sandy beaches and shallow water where you can walk out such a long way before the water reaches your chin, the island of Elba is a world of its own, it is an exotic world a stone’s throw away that attracts us and at the same time scares us just a little. Our waters have always been rivers – the Po, the Reno or the Lamone – in spring they are green as lizards in love and always deceptively calm but the Tyrrhenian is a river without the other bank and it does not flow but gets rough and changes colour like the eyes of a frowning god. It has to be said that the bowls settled down immediately into their new environment and it is their flexibility that sets them apart and has made them survive since prehistoric times, across the thousands of occasions in history, adapting themselves to the challenges that awaited them. This time, however, swept away by the exhilaration of the moment, they have abandoned their usual sobriety, that made them all like Korean teacups, now displaying their jagged forms making them look like jelly-fish and their irregular edges giving the impression of star-fish, waves and shells. Even more so, however, are the tureens – or, rather, the pots, as Biavati defines them with his typical understatement, a bit crafty – showing themselves as being sensitive to the excited atmosphere and the luxuriant vegetation, multiplying shapes and decorations. Here they are in all their variegated splendour: nicely rounded as tradition requires, low and cylindrical like stewing pots, tall and waisted in the centre like chemist’s jars, shaped on the potter’s wheel or made with the coiled colombino method with the signs of fingertips in full view, sometimes with unusual concave shapes on the front that makes them look like marine caves, with the handles that in one moment seem to be ears or in another perhaps hands on hips, just as the most classic Etruscan Canopic vases. It becomes clear that as we discuss these objects, it would be as appropriate calling them ‘crockery pots’ as it would be calling Pinocchio a ‘piece of wood’ because all the evidence shows us that these

creatures have a life of their own, born from the hands of an artist-creator with a personality already formed and probably quite independent from his original ideas. In fact, the ladies of the house, who, over the years have been tidying away stars, moons in all their phases and every type of object in creation with a kind of blasé taking it all for granted, now seem to have acquired a sudden sparkle coming into contact with this situation that is for them both new and exciting.

It has to be said, at the last supper of these fantastic figures, that the tureens/ matrons had attempted to take hold of the situation, taking over the central role from the bowls. (Well, it is quite true that we have already had the opportunity to look elsewhere but, at the end, the tureens are only really bowls with lids, therefore, the bickering remains in the family so to speak, but certainly, it all leads to reflection).

We have to reveal how, on this occasion, the sprightly ladies have literally become big-headed, showing off elaborate hair-styles, worthy of Madame de Pompadour’s master coiffeur: vegetable triumphs of every imaginable type, over-excited marine fantasies and even chimneypots bundled up with a dubious balance.

Once they have overcome all the obstacles, they advance proudly, taking entire worlds with them, just like the ladies returning from the well with their amphoras on their heads – the camouflage quality of the lids that flatten themselves like theatre stages, rise like a perfectly-done soufflé or else take on the shape of trees adorned with buds similar to bijoux buttons from the world of fashion – comparable in majesty to the Caryatides of the Erechtheion and like them, not in any way worried by the enormous weight being carried on their heads. Nonetheless, looking more carefully, perhaps there is a little fear, at least judging from these chimneypots that stand on end like hair on the head of the Pentola fumante (the smoking Pot) or from some apprehensive glances that the Signora dei mari (the Lady of the seas) is giving towards her subjects, the fish. The Pentolastellata (the starred Pot) gives us the impression of being more distracted, in a world of dreams, of thoughts that materialize out of the top, gushing out with the unstoppable

power of a geyser, in a tall, hollow cylinder with long traces of comets, stars and seagulls in flight. However, the same unrestrained vitality lives in them all, the liveliness of a parallel world where the rules of traditional logic no longer have any value but they give in to the emotions of the moment. It is, of course, the marine theme that dominates over all: from the Vassoio Sole (the Sun Tray) with its applied decorations that are placed like flotsam and jetsam left behind after a heavy sea, to the Pentola dei pescatori (the Fisherman’s Pot) with on its sides a kind of scratched net where the king size fish can be caught and its lid that overturns itself easily, creating the hollow hull of a boat where a couple of helmsmen stand out with their slow movements, dressed in timeless, long tunics, looking like ancient Bedouins or Homeric sailors. Everybody knows that Jason passed this way with his Argonauts and, who knows, before setting out on his adventurous search for the fleece, he could have drunk from that amphora that is now pondering on its two thousand or so years of honoured enological service, framed by the fish and the algae that have formed a wreath round it. However, we are digressing and it is a fantasy that is nurtured by the magic of the places and the classic tales that were born not far from here, particularly in spring when the myths of rebirth become intertwined with the worries of human beings in complex knots like the wedding flight of a queen bee, blending scents and losing the way. Then the breath of wind that rises from the sea at sunset and shakes the myrtle and the roses so sacred to Aphrodite, could be quite credibly confused with the brushing of a light veil of a Naiad, pursued by a breathless satyr.

The environment is too evocative to resist: the park, the garden of the Osmunde, the warm welcome, the prospect of the contact with a new, exciting world, all yet to be discovered. This is all due to Francesca and Cristiano’s hospitality, certainly, and also of the prospect of an exceptional convivial experience to be lived, where all our senses come into play because every course will bring with it something succulent and surprising thanks to the unpredictable blending of shapes, tastes and colours. Then, of course, we know how successful suppers go.

Discussions slide easily away on the wave of the wine that accompanies the food and the companions at the table (cheeks a little rosy, eyes that are shining from the pleasure and the lights, mouths ready to laugh) grant themselves the luxury of slowing down the rhythm because the expectation of new dishes to taste and to admire adds that intriguing touch of suspended desire or unsatisfied curiosity that is always the most exciting. The chef, Michele Nardi, who is reproposing the culinary tradition, wisely varying it without betraying it, moves on the same wavelength as Biavati and, like him, he has discovered in the island a crossroads of suggestions to be fully exploited. Because here the profound essence of the Mediterranean can be felt, that koinè of languages, gestures and knowledge that for thousands of years has been shared by the peoples that have navigated here and have produced contaminations of every kind, evident above all in cooking and in art. This could be why, in this place, the scent of the spices brought across by the libeccio wind from the southwest blend with the perfume of the citrus trees from along the coast, giving life to an irresistible mixture, the result of a happy reciprocal intrusion, where all the ingredients create a new harmony, stimulating as all hybrids are. Cooking and art, we were saying, therefore kebab and cous cous certainly, but without missing out on (that would be the limit!) ribollita, the guarantee of a healthy Tuscan imprinting and then the curry that is blended with grass peas and black-eyed beans, just like the pot that has the lid the shape of a cone, modelled on the Moroccan tajine, frayed at the top with the image of a little Elban borough sitting up high on a rocky base. What about the tree with the foliage that looks like flaky pastry rolled out with the rolling pin with decorations of tiny cakes, little smudges of coloured icing and chantilly cream, does this not perhaps represent the perfect ceramic equivalent to the “Palette of syrups and creams of island essences” proposed by our chef Michele?

In perfect, natural harmony with the Botanic Island, a profusion of herbs and flowers find their way into the dishes, creating a wave of aromas that make your head spin: borage, rosemary, wild mint, lavender, peppermint, fennel, the same

ones that will find their way to the bowls, leaving light traces, just a little discoloured by the sun and the wind that has smoothened the surfaces, whilst the fern (and is it the Osmunda regalis, a true rarity that manages to survive in the Botanic garden) stuck like a fossil in the clay, evokes the magic of the age-old insects contained inside Siberian amber. All this comes under the sign of the vital explosion, of the multiplication of natural forms in a Dionysian blast of feverish energy, anxiety to live and to express oneself, the primordial joie di vivre. The genealogical lineage of the wonderful Middle Ages is clear and unquestionable: all the tableware, in its complexity, is transformed into a kind of herbarium and fantastic bestiary, worthy of the imagination of an Antelamian stone-cutter, who knows how to slide over with wise, bored nonchalance, with all the claims of a strict verist. It is enough to observe our remarkable pots that, like the fantastic acephalous Blemmyes of gothic cathedrals, have preferred not to have a head, instead making the outlines of the face slide down onto the chest and giving themselves a mouth so tiny and pointed that they had to feed, as legend tells us, only through an oat straw.

There are yet more lids or theatre stages where events of various types are acted out, marine triumphs with wriggling fish pursuing each other bending and twisting, flowers that are difficult to give a definite botanical identity but that burst into bloom with an uncontrollable vitality, gardens as luxuriant as Amazonian jungles that show us – as a fantasy worthy of the paintbrush of Rousseau le Douanier, “the Customs Officer� - that profusion of strawberry trees, aloe, cistus, lemons, bay and an enormous variety of exotic plants that make up the magic of the Cernia garden. Then, of course, there are fish everywhere, omnipresent and full of uncontrollable energy, capable of unexpected performances, caught in the middle of their amazing leaps or used as a mount by ephebic lamp-holders, fish that actually jump out of the water to sing with such force that makes us regret our deafness, provoked by irretrievable conformity. Dotted fish with scales and stripes and perhaps they are those very fish from Maciarello and the Cote Piane that we

will find on our plates, cooked with the same herbs and flowers that accompany them in the bowls. Once again, art and cuisine come together, in the name of the common matrix in the search for pleasure, expert manipulation of the ingredients and surprising results that, as in a successful chemical process, is capable of transforming, through the use of fire, the poorest of materials (like wheat, rightly, clay, mineral oxides, vegetables or rabbit) into something quite precious. At this point, it is all clear. By now, we have understood one thing: when this adventure comes to an end (that makes four!) we shall certainly see our magic pot-maker move on towards new horizons, followed by a long line of bowls, lamp-holders, trays and tureens with startled lids. For where? It would be useless to ask him that now.

We shall find out, to say it with the poet, only by living.

MariaGrazia Morganti Brisighella, March, 2009 The cooking of Michele Nardi My cooking is based on the instinct, the humour and the inspiration of the moment. In creating a dish, I consider the tastes and the characteristics of the ingredients that I have available and then I put them together mentally, trying to imagine a balance of flavours and colours that I will then try to recreate in the finished dish. I love revisiting traditional Elban dishes, breaking them down and building them up again in a continuous game of flavours and ideas.

I am delighted with the opportunity, amply offered here on the island of Elba, of being able to cook in complete freedom, depending on the raw materials that the territory offers me, both from the wild herbs and from the richness of our sea.

It is thanks to the generosity of the Elban countryside that it is possible to propose a cuisine that is the expression of a territory, light years away from the massproduced tastes that are more and more commonly found on our tables: for this reason, it is able to treat us to sensations and emotions that are absolutely unique and cannot be found elsewhere.

Recipes Kebabs with fish from Maciarello on black-eyed beans from Marina di Campo The Arabian influence has left its traces in the gastronomic culture of our island and in order to remember this, I have chosen a typical middle-eastern dish, “contaminating” it with local fish in place of the more traditional meat and I have accompanied it with one of the pulses that are no longer grown here.

On the pier at Sant’Andrea, I met my friend Beppe on his way home from a fishing trip down the coast. In his bucket he had a palamita (a small kind of Tuna) and a sea-pike, just right for our recipe. I cleaned the fish off the bone, cut it into thin slices and left it to marinate for two to three hours in a good extra virgin olive oil adding some wild fennel, chilly pepper, mint, cumin and triquetro garlic, all roughly chopped together. Meanwhile, I boiled the beans (having found them rather miraculously from an old farmer who still grows them in Marina di Campo) with an onion, a couple of carrots and a ham shank. The beans had been soaking in cold water for the last 24 hours, just as my grandmother used to do. After the marinade, I rolled up the fish fillets, closed them with a small wooden stick and cooked them in the oven at 180° for about 6 minutes. It is all ready to be tasted.

As I was thinking about this dish, I was imagining an old fisherman coming home after a day out at sea when there was not really enough in his basket to feed his family. My mind’s eye takes me to the fisherman, with the few cuttlefish that the sea had given him, searching

around the land nearby to find some herbs to take home to his wife who would then be entrusted with the task of preparing dinner.

For this preparation, I take a bunch of nettles and boil them for two minutes to take out that sting that they have. I then add them to the borage and put in three potatoes for each person, adding all this to a base of triquetro garlic and wild leeks. To this I add water to double the volume of the vegetables and leave it all to simmer until the potatoes are cooked to then put it all into the mixer adding salt if it is necessary. Just a little tip: cool quickly the mixture obtained by immersing the cream into a bowl of ice. This will mean that the cream will maintain its lovely green colouring. Clean the cuttlefish and cut into diamond shapes of about five by three centimetres and toss them in a base of triquetro garlic and wild leeks. You will see that the pieces of cuttlefish will curl up on the impact with the heat. I season it at will and then thread them onto a skewer make from the stalks of wild rosemary. Meanwhile, I heat the cream and place it in the bowls: to be served hot.

Fried Moray Eel, sweet and sour with aromatic herbs and triquetro garlic with wild salad and borage flowers.

For this old recipe in a modern key, I have chosen the Moray Eel that, when fried, is savoury and inviting. Owing to the fact that it is full of little scales, only the brave who know enough about it to understand that it is worthwhile, will take the trouble to overcome this and will be able to take full enjoyment from it. Find the courage to taste this delicacy, accompanied by a neutral side dish and a sauce that enhances the perfumes and the colours of the island.

There is only one rule – use your fingers!

First of all, prepare the sweet and sour sauce by putting a bunch of slightly raw San Marzano tomatoes with some sugar (in ratio of 2

to 3), chilly pepper and balsamic vinegar into a small pan to boil until it becomes a jam consistency. At this point, I add oregano, wild mint, lavender, basil, marjoram, time, triquetro garlic and helichrysum and leave it all to cook together for only 4 or 5 minutes so that I do not lose the aromas of the herbs. This is all then passed through a sieve and left to rest, preferably for 24 hours. Now we come to the crunch of the preparation – the cleaning of the Moray Eel which is a difficult task and no matter how good you are at scaling the fish, it is quite probable that they will surface again when it is being eaten.

I will do my best but you must forgive me if this happens (I will try to compensate for this by treating you to a sensation of flavours that will stay with you for their originality and taste). After cleaning the fish, I cut it into slices to fry in boiling oil. Enjoy it.

Ribollita in a conch-shell of bread with chickpea salad, marine fennel, pennywort and sea-food.

Whilst I was thinking about the famous soup dish from Florence, La Ribollita, but enriching it with aromas from the sea, I imagined a track passing through the fields leading down to the sea. During a stroll, you can gather wild herbs like marine fennel (that grows in the cracks of the cliffs and has a slight taste of aniseed and salt) then whelks, limpets and tomatoes from the sea. I, personally, have had this experience and from it, I offer you a taste.

I prepare all the ingredients in advance to save time later. If you recall how we soaked and boiled the black-eyed beans, the procedure is the same for the chickpeas. Half the quantity is then creamed. The next step is to clean the limpets, the whelks and the other shellfood which is so easily found along the west coast of the island. Then the herbs must be cleaned too; the pennywort, chard and plantain, all chopped roughly. The sea-fennel, some leaves of pennywort and the

other edible herbs should be left whole to put in the salad.

A roughly chopped mixture of wild celery, wild leeks and chilly pepper should be very lightly fried in a touch of extravirgin olive oil.... take care, on a very slow heat to let the aromas mix with the oil, carefully avoiding overheating it. The shellfood and seafoods are added next and left to fry gently before adding the herbs. At this point, add a little tomato purĂŠe and the creamed chickpeas with some of their cooking water. All this simmers for about an hour, adding water if necessary.

The look and the smell will tell us when our soup is ready. Now we add some diced, toasted bread and just a touch of olive oil poured over it. The soup is to be served with the herb salad and the seafood, in this way our dish comes from the uniting of two very differing types of preparation but with the same ingredients in common.

Cous cous with grass peas, wild mint and chunks of wild boar.

I would like to recall the culinary tradition from North Africa, reviewing one of their typical dishes, cous cous with humus (creamed chickpeas and sesame) and mint which, in luckier times would have been enriched with chunks of meat or fish. On the island of Elba, there is no shortage of wild mint and you could also find grass peas up to the end of the First World War when it was widely grown. What can we say about the wild boar that, according to your point of view, with a bit of luck, you might come across one around sunset on one of the local footpaths?

As we have already explained for the black-eyed beans and the chickpeas, I go ahead with the cooking of the grass peas. I then prepare diced carrots, wild celery and wild onions adding a couple of leaves of laurel, time and rosemary (keeping in mind that the wild boar is the centrepiece of the dish and it must be enhanced by these

flavours, not overcome by them), frying them all together in a good olive oil. I add the lightly floured chunks of meat of the wild boar and brown it quickly on a good heat. I avoid adding red wine as I prefer not to have the end product a dark colour. I add a good meat broth and leave all this to simmer so that any fatty substances will rise to the surface and can be easily removed. I then add some myrtle grappa and leave the mixture to simmer for another few minutes to evaporate the alcohol, put it all aside and keep it hot. The cous cous is cooked in the natural way and left to cool a little before it is flavoured with the dressing of grass peas, wild mint, tiny slices of cherry tomatoes, salt, strong paprika and olive oil.

One of the classic dishes of the cuisine of the coast along the Tyrrhenian Sea is fish and chard. It is still possible here to make this dish in its original version using the chard that is easily found all over the island and simply by going down to the flat rocks near Sant’Andrea with your fishing line and some good bait. But, look out for the cats!!

Whilst I was gathering chard and lavender in the fields, Ciro and Massimo, my colleagues, managed to catch a good bucket-full of little fish: scorpion fish, combers, local fish that are all excellent for this type of preparation. While they cleaned the fish and the chard, I am preparing the mixture for making some egg pasta but with the addition of some chopped petals from the lavender. I leave that to one side for about an hour and then roll it out and cut the pasta into irregular square shapes called straccetti. Now, we prepare the base of garlic, onion and chilly pepper and in a couple of minutes, we add the fish. Do take care to remove the gills because they give out a bitter taste that could ruin the dish. I usually put the lid on the

pan and leave the fish to cook very slowly until they start to break up. It is at this point that I add some ripe tomatoes and some water and leave it all to simmer on a low heat for 30 minutes. I then put it all through the vegetable mill and add the chard (the most tender parts), roughly chopped and cook it gently. I then season it with salt (I do not like to use stock cubes because the flavours must remain authentic) and at the end, we can boil our straccetti. Another 3 to 4 minutes and we have a plate of pasta that unites the flavours of the sea and the land and should really be tasted with your eyes shut. Are we or are we not here to ‘taste’ the territory?

Little Elban Tuna in a blanket of herbs on mixed vegetables Who knows how many tuna fish have crossed the bows of the Spanish galleons that sailed the seas of the Tuscan Archipelago? With these thoughts in mind, I began imagining this dish, enjoying the idea of the boatswain on board the ship, concentrating on his preparation of the stew for the crew, using the vegetables that he had stowed at the last port of call.

From a Tuna fillet, I cut some slices, flour them lightly and brown them in a pan with a little olive oil. I then place the slices in a bowl containing a mixture of chopped herbs (I prefer, as you will have noticed, wild herbs but you can have good results using those that you find in the shops, such as thyme, fresh oregano and so on) completely covering the surface. In the meantime, in the oven, the mixed vegetables are cooking and I have used aubergines, courgettes, peppers, onions and tomatoes (roughly cut in large pieces but all more or less the same size so that they will have a similar cooking time) placed directly in the oven or in a pan with a lid, to simmer slowly.

I check the vegetables to see when they are nearly ready and then add a good amount of basil and season with salt. At this point, I put

the tuna in the oven at 180° but it must not cook for long; the slices must remain slightly pink in the centre so that they do not become tough, not more that 3 to 4 minutes of cooking time.

Re-heated wild herbs and risotto ‘sunset’ with bonito eggs and rabbit In this period, the fields are full of colours owing to the flowers that are starting to blossom. This is also the best time to gather and to eat wild edible plants and herbs such as the tranapecora, wild chard, plantain, nettles and borage. The old peasant housewives used to gather these herbs in quantity, to eat them the first time boiled and then tossed in the pan with a clove of garlic, to use up all the left overs. It is also at this time of year that the sunset is particularly spectacular when it begins to set over the sea and the warm colours transform the land. I have tried to merge these two experiences in a dish that combines the flavours in the fields with the orange red shades of the flowers in a sea of rice that carries life within itself (the eggs of the Bonito). Looking down from the top of the cliffs, I imagined a wild rabbit.

This is just the kind of experiment that I really enjoy. Have no fear, I have no intention of using you as guinea pigs: by the time you read this recipe, it will certainly have been tried and tested by me and very probably (by popular demand) also by Francesca and Cristiano. All I ask of you is an open mind and to be predisposed to the possibility of mixing very differing elements outwith the normal rules of food tasting but also very close, taking into consideration the complexity of nature itself that manages to harmonise the elements of land, sea and sky and brings them together as one. I gently brown a base of chopped wild onions, garlic, and celery and add a laurel leaf. I add the rabbit (from the farmer), well cleaned and cut into

small pieces. I brown this and add a little white wine (preferably the Ansonica that is an autochthonous Elban vine) and after letting it evaporate, I add some tomato purée (a couple of good spoonfuls for every rabbit). Every now and again, I add some water (I specifically do not use meat stock so that the flavour of the rabbit with remain unaltered), leaving it all to simmer for about half an hour until the sauce starts to become creamy. While the rabbit is cooking, I make a simple risotto with a base of finely chopped onion, adding the rice and toasting it. I then add, a little at a time, a very delicate fish broth (about three hundred grams of local fish in a litre of water). When the rice is not quite cooked, I add a little sack of bonito eggs with a long cut in it so that every single egg will be integrated into the risotto. Just one more minute of cooking time and I then start to put the finishing touches to the dish taking it off the heat, adding a nut of butter and some nasturtium petals, calendula and dandelion, stirring and mixing everything until it becomes a blend of colours that shade from yellow through to red (just like the sunset) and a creamy consistency. Now the herbs need to be tossed (chard, tranapecora, wild chicory, plantain, borage, dog’s tooth) as was described in the introduction; all that is left to do is to prepare and taste the finished dish.

Fishcake of Stockfish on creamed potatoes with pine nuts and emulsion of black olives I have tried to find a way to break down one of the favourite dishes of the typical Elban cuisine since it reflects the character of the inhabitants of the island, genuine and sincere with strong flavours but well blended, rustic but at the same time delicate to the palate. This dish has given energy to the miners in the eastern part of the island in hard times, but also a great deal of happiness during

snacks and village festivals and still today is appreciated as a welcome guest on our tables. I have taken it to pieces and built it up again in a rather unconventional form in order to propose it as a main course.

The stockfish must be religiously prepared with great respect for tradition. Here, we say that ‘stockfish needs oil’ and it does require a great deal, just as the onions must have the same volume as the stockfish when it has been cleaned off the bone and skinned. We must not miss out on the chilly pepper that must be used generously (an excellent excuse for being able to drink as much wine as you like). The onion has to be browned in plenty of olive oil, the pieces of stockfish are added and more oil. This is left to fry on a hot flame until a slight coating forms on the base of the pan. This gets sprinkled again with Ansonica and then left for the wine to evaporate. This is the point where the strips of skin should be added with yet again some more oil after which a little tomato purée is added with some water, a little at a time leaving it all to simmer until the oil comes to the surface. Now the diced potatoes are put in and cooked using again the ‘risotto’ method. Season with salt and leave to cool.

Now the excess oil can be easily removed using a ladle. It all gets put back on to boil again, this time adding the pine-nuts and the black olives before serving. This is the traditional dish but I would now like to break away from tradition and change round the ingredients for you ... I whisk the potatoes to obtain a smooth cream to then place on the base of the bowl. I make little fishcakes of the stockfish using a cylindrical cup to shape the form and place this on top of the creamed potatoes. This is decorated with pine nuts and a cream made from the black olives, completed with tiny olive leaves and circles of wild onions.

When I was wondering how to end the evening, I was reminded of an event that happened about ten years ago. I remember that a gallery owner in the United States saw a mural that I had painted in my house in ‘my free time’ and asked me if I would do some paintings. As usual, at the beginning, I did not take him very seriously, convinced as I was that I would not be capable of doing it.

However, when, the next day, brushes and canvas arrived at my home, I could no longer hold back the excitement: I was able to transfer onto canvas the images and fantasies that came into my mind. Since then, I have tried many times to use my paintbrush and colours to express my impressions and my experiences in worlds of fantasy, discovering great contentment and satisfaction.

With this sensation, I would like to ‘turn the excitement’ on you this evening by giving each one of you a palette full of colours and scents of the island, asking you all to do your own personal painting of Elba, mixing and confusing the colours, the tastes and the culinary traditions in a journey that I have been happy to share with you all.
