


A very warm welcome to the Greene King and Belhaven Wine Guide for 2024. The past year has been another challenging one for the trade in general and the wine category particularly, but there’s no question that this is an exciting time for the category.
The year ahead will undoubtedly have its challenges with the ongoing cost-of-living crisis affecting consumer spending and, of course, the challenges we all face following the overhaul of the alcohol duty system in August 2023.
In spite of this, however, wine remains a vibrant, exciting and opportunity-laden category. This is in no small part down to the fact that we are seeing strong and positive indicators that the way consumers engage with wine is changing.
Despite total UK still wine volumes reducing over the last five years, the regular wine drinking population has actually increased. People are regularly drinking wine in the on trade - they are just choosing to drink in moderation.
Encouragingly, we are seeing that the higher-spending, more adventurous wine segment has grown and these types of consumers are spending more on quality and premiumisation. This explains why market value at the premium end has remained stable post Covid, and also when compared with three years ago before the pandemic took hold. In a related development, the biggest falls in volume have come in the lowest price bands.
What we are clearly seeing is that wine drinkers are more involved with the category. They want to know more about the wines they are drinking, they want to seek out new and exciting wines and they want wine to be a fundamental element of their experience when they visit a venue for a meal or simply for a glass or two of wine.
What we term ‘Generation Treaters’ are on the rise. They are seeking out enhanced experiences and they are prepared to pay a premium for those experiences. Conversely, bargain-driven consumers are on the decline which is why we are seeing volumes fall at the lower end of the wine category.
How do you take advantage of that trend? The first step is to build a wine list that delivers what this new generation of consumers is looking out for. New wines, exclusive wines, unusual wines – and you will find plenty of fantastic options in this guide.
Just as importantly, however, it’s important to help satisfy those consumers keen to engage more deeply with wine. They are looking for information, advice and support that help enhance their experiences and elevate them. That could be as simple as adding more details on the wines available in your venue onto your wine menu. Or, you could take it a step further by training your team to ensure they understand the story behind each wine and can offer advice and support to consumers looking for a richer experience from each trip to your venue. In essence, ask yourself how you can help your customers make great choices.
The increase in wine duty for most wines remains a key challenge, but to protect our customers from this cost, we have been working closely with our winemakers to reduce alcohol in our entry level wines, in a way that does not impact on wine taste and style. Our passionate winemakers are using a variety of cutting-edge methods to ensure that any changes to ABV will be in line with Greene King’s high standards.
There may be challenges ahead but please keep in mind that many opportunities remain: the number of people drinking wine is increasing and drinkers are more engaged than ever with the category.

The wines recommended here have been carefully chosen to allow you to appeal to a broad cross-section of customers from occasional wine tipplers to committed wine buffs.
The coming 12 months mark an exciting period for the wine category with its own challenges and opportunities for venues.
This is an exciting time for wine and a great time for venues keen to take advantage of the many opportunities that exist in the category.
Key among the challenges will be the ongoing cost-of-living crisis that is suppressing consumer spending and the recently introduced overhaul of Alcohol Duty.
Despite this, however, it is clear that there are positive changes in the way that your customers are engaging with, and consuming, wine.
One of the biggest challenges facing the wine category is the new Alcohol Duty scheme introduced in August 2023.
For the majority of wines, this reform means that the higher the ABV of wine, the higher the new duty rate is.
Most wines have seen an increase in duty of around 44p per 75cl bottle, or a 20% increase in duty paid – £2.67 vs the previous duty of £2.23
Wines with higher ABVs, above 15%, have seen an increase of 97p (+44%) per bottle.
Fortified wines of 20% ABV and stronger have seen a £1.30 increase (duty of £4.28) per bottle.
While the majority of wines have seen increases in duty under the overhauled scheme, some wines have benefited from the new bandings. Wines with ABVs under 11.5% are treated more favourably.
A bottle of wine with an ABV of 10%, for example, has seen duty fall by 9p from the current rate of £2.14 per 75cl bottle.
The separate duty rates for still and sparkling wine have been abolished which means that bottles of Champagne, Prosecco and other sparkling wines have their duty reduced by 19p, bringing it down to £2.67 in line with a still bottle of wine. +44p +97p +£1.30
A major concern is that the increase in duty on entry level wines will have a negative impact on the lower end of the market, dissuading consumers from buying wine.
To help combat this, Greene King and Belhaven have been working with producers to lower the ABV on certain wines but without sacrificing any of the quality or style.
This will be key in ensuring that consumers aren’t forced out of the category by big price increases. Our passionate winemakers are using a variety of cuttingedge methods to ensure that any changes to ABV will be fully in line with Greene King’s high standards.
Similarly, we are enhancing our range of wines to ensure that we take advantage of the new duty rates on lower ABV wines and sparkling wines.

The year ahead represents another exciting year for wine with many challenges and opportunities – but what exactly does consumer insight tell us your customers will be looking for in a wine list today?
The reform of the alcohol duty system will have a major impact on wine pricing over the coming year.
Most wines see a 44p duty increase per bottle
Wines with ABVs above 15% see a 97p duty increase per bottle
Wines with ABVs above 20% see a £1.30 duty increase per bottle
Wines with ABVs less than 11.5% vary but a bottle of 10% ABV wine will see a duty reduction of 9p per bottle, for example

A third of consumers are driven by supporting local products.
17% of wine consumers are willing to pay more for local products. 35% of wine consumers expect locally sourced drink products.
The higher-spending, more adventurous wine segment has grown and these consumers are spending more on quality and premiumisation. This is why market value has remained stable post Covid, and against three years ago, the last comparable period. The biggest falls in volume have come in the lowest price bands.
Sparkling wine continues to lead the market in terms of growth with compound growth rates of 2.4% between 2016 and 2021. This trend is likely to continue with reduced duty rates now applicable on sparkling wines.
Easy to drink, fresh and crisp are the top attributes for white wine; full-bodied, smooth and rich are the main preferences in red.

By breaking the regular wine drinking population down by industry standard segments, the segment growing fastest is ‘Generation Treaters’.
‘This is one of the younger segments (mainly Millennials) that are frequent drinkers and the highest spenders. They are typically less experienced in the wine category and have lower levels of knowledge, but are keen to explore the category more. They are open to trying a wide variety of wine types and enjoy the process of learning more about wine, and are most inclined to trade up to something exciting when the opportunity arises.’
This segment grew by 5% between 2021 and 2022 and a full two-thirds of on-trade spend on wine comes from this segment and the ‘Social Newbies’ segment, the youngest segment of all.
Varietal consumption has remained relatively stable, though some mainstream varietals have seen long-term decreases in consumption.

The quality and quantity of English wines on the market is increasing every year with some fantastic still and sparkling wines now available from excellent producers like Kingscote, opening up new sales and profit opportunities. An increasing number of consumers are looking for home grown wines which offer strong sustainability credentials and outstanding quality.
America produces wine in every state, however the majority is from just five states. California makes up around 90% of this with big blockbuster-style Cabernet Sauvignons. Washington State is the second largest producer, giving us fine Cabernets and Merlots and refreshingly light Pinot Grigios.
An ideal location for producing grapes of almost any variety with its reliable climate of hot summers, coastal cooling breezes, and moderate rainfall. It produces white wines with fresh fruit flavours and crisp acidity, and red wines with ripe tannins and deep colour.
Malbec is the signature grape of Argentina and produces full-bodied, fruit driven wines with a touch of spice, which are becoming a must on every wine list.
Spain is the third largest wine producing region in the world and has a rich wine history. The diverse landscape, geography and climate play a fundamental role in Spain’s many wine styles, especially the fruity reds of Rioja.
France is still undoubtedly the original home of Terroir-driven wines, the way that soil, climate and man somehow come together to influence the overall style of wine.
Italy is home to some of the oldest wine producing regions in the world, and from its light and dry Pinot Grigios to its full and intense Barolos and Valpolicellas, there is an Italian wine to suit every taste.
South African winemaking tradition dates back over 350 years to 1659, when the first grapes were pressed. Now there are over 100,000 hectares of vineyards in South Africa. The cool, wet winters and warm dry summers create intense fruit flavours which are now so popular.
Australia is home to an array of diverse climates. The three major wine-producing regions are South Australia, New South Wales and Victoria. Australian wines manage to be extremely consistent in quality and produce some of the bestknown wine brands.
New Zealand mostly enjoys a temperate, maritime climate. Warmth and sunlight are plentiful during the day, whilst nights are cooled by sea breezes, creating perfect conditions for production of some fabulous wines.

From late night, cocktail and wine bars to craft, student and other specialist bars, the main focus is on the drinks offering.
Bars will often offer a small or basic food menu and are usually open to midnight although some may close later. The atmosphere can be mixed from low key and relaxed, through to a higher tempo energetic vibe.
OUR ADVICE: Whether you are a cocktail, wine, or craft bar, or are carving your own niche in your very own style, the wines should cover every customer’s taste preference. Golf clubs will generally open throughout the day and cater to regular members and visitors. They tend to have a good range of drinks offering value for their members and may also have a premium range to cater for corporate events and other functions like weddings. The food offering varies from simple bar snacks through to a more formal dining experience.
OUR ADVICE: Stock wines to cater for all day-parts and the various events hosted throughout the year. We recommend offering some great quality house wines such as our Savino range as well as some superb trade-up options for those special events and awardwinners such as Lanson Le Black Label Champagne and the English Kingscote Sparkling Brut, perfect for toasting the Club Captain or the Bride and Groom!

Food pubs tend be focussed on the food offering with a wideranging menu to cater for all tastes.
Food pubs will typically serve food either throughout the day or at lunch and dinner times and will often offer a traditional Sunday roast.
OUR ADVICE: Wines should be selected first and foremost to complement your food offering, while also ensuring that the range offers wines for every budget but without compromising on quality. Venues should feature fabulous quality house wines such as the Italian Savino Merlot and Pinot Grigio (exclusive to Greene King) as well as offering more premium wines such as the Châteauneufdu-Pape.

We recommend you review your wine list at least once a year to keep your offering fresh and in line with the latest trends. The best time to do this is in September to make sure you can take advantage of any new listings and developments ahead of creating your wine lists for the busy Christmas period round the corner, and to set you up for a successful Spring and Summer.
You are best offering your wines in 75cl bottles. Offer
a range of wines by the glass, but only offer those wines you can sell in quantity. If you struggle with the throughput of your wines, offering them by the glass in single serve bottles might be the answer for you. With these single serve bottles you are always sure to serve a fresh glass of wine. See page 49 for our range of single serve wines.
An even bigger challenge for venues can be offering sparkling wine by the glass – it is wasted as soon as it loses its sparkling character. To help, you will find single serve bottles of Prosecco on page 45 of this Guide.

Legally you must sell wine by the glass in measures of 125ml or 175ml quantities, or multiples thereof. If you do not list your 125ml glass prices in your wine list, then you will need to add a note to state ‘Wines served by the glass are available in 125ml on request’. The 250ml glass is very popular with those wishing to develop higher volume.
Help to guide your customers by including tasting notes along with simple indicators from dry to sweet for white and body indicators from light to full for red wine.

Use your cost price per bottle excluding VAT. Retail selling price is what you charge customers (it includes VAT).

White wine is a wine that is fermented without skin contact. The colour can be straw-yellow, yellow-green, or yellow-gold. It is produced by the alcoholic fermentation of the non-coloured pulp of grapes, which may have a skin of any colour. The wide variety of white wines comes from the large number of varieties, methods of winemaking, and ratios of residual sugar. White wine is mainly from “white” grapes, which are green or yellow in colour, such as the Chardonnay, Sauvignon Blanc and Riesling. Some white wine is also made from grapes with coloured skin, provided that the obtained wort is not stained. Pinot noir, for example, is commonly used to produce Champagne.
Among the many types of white wine, dry white wine is the most common. More or less aromatic and tangy, it is derived from the complete fermentation of the wort. Sweet wines, on the other hand, are produced by interrupting the fermentation before all the grape sugars are converted into alcohol; this is called Mutage or fortification. Sparkling wines, which are mostly white, are wines where the carbon dioxide from the fermentation is kept dissolved in the wine and becomes gas when the bottle is opened.

A rosé is a type of wine that incorporates some of the colour from the grape skins, but not enough to qualify it as a red wine. There are three major ways to produce rosé wine: skin contact, saignée, and blending. Rosé wines can be made still, semi-sparkling or sparkling and are made from a wide variety of grapes and can be found all around the globe. When rosé wine is the primary product, it is produced with the skin contact method. Black-skinned grapes are crushed and the skins are allowed to remain in contact with the juice for a short period, typically two to twenty hours. The grape must is then pressed and the skins discarded. The longer the skins are left in contact with the juice, the more intense the colour.
When a winemaker desires to impart more tannin and colour to red wine, some of the pink juice from the must can be removed at an early stage in what is known as the Saignée method. The red wine remaining in the vats is intensified as a result of the bleeding. The pink juice that is removed can be fermented separately to produce rosé. The mixing of red into white wine to impart colour is uncommon and is discouraged in most wine growing regions, especially in France, where it is forbidden by law, except for Champagne. Even in Champagne, several high-end producers do not use this method but rather opt for the saignée method.

Red wine is a type of wine made from dark-coloured grape varieties. The colour of the wine can range from intense violet, typical of young wines, through to brick red for mature wines and brown for older red wines. The juice from most purple grapes is greenish-white, the red colour coming from anthocyan pigments present in the skin of the grape. Sparkling wine is a wine with significant levels of carbon dioxide in it, making it fizzy. While the phrase commonly refers to champagne, European Union countries legally reserve that term for products exclusively produced in the Champagne region of France. Sparkling wine is usually either white or rosé, but there are examples of red sparkling wines such as the Italian Brachetto, Bonarda and Lambrusco, and the Australian sparkling Shiraz. The sweetness of sparkling wine can range from very dry brut styles to sweeter doux varieties (French for ‘hard’ and ‘soft’, respectively).
The sparkling quality of these wines comes from its carbon dioxide content and may be the result of natural fermentation, either in a bottle, as with the traditional method, in a large tank designed to withstand the pressures involved (as in the Charmat process), or as a result of simple carbon dioxide injection in some cheaper sparkling wines.
