The past year has clearly been another challenging one for the trade in general and the wine category particularly, but there is no question that this an exciting time for wine.
As we look to the months ahead, the inescapable reality is that, with the costs of doing business rising consistently, the needs to drive sales and pro ts is as urgent as ever – and the wine category can certainly play a part in helping you do just that.
Wine remains a vibrant and exciting category. Total volumes may be down, but the way consumers engage with wine is changing and this is creating new opportunities for venues to attract more wine drinkers more often.
Believe it or not, despite a decline in total sales in the last ve years or so, the regular wine drinking population has actually increased. People are regularly and routinely drinking wine in the on-trade, they are just choosing to drink in moderation.
Also encouraging, is the fact that we are seeing that the higherspending, more adventurous wine segment has grown, and these types of consumers are spending more on quality and premiumisation.
The net result is that the volume declines in lower price bracket wines have not been re ected at the premium end of the market, which has held rm.
In short, wine drinkers are more involved with the category. They want to know more about the wines they are drinking, they want to seek out new and exciting wines, and they want wine to be a fundamental element of their experience when they visit a venue for a meal – or simply for a glass or two of wine.
To take advantage of that trend, the rst step is to build a wine list that delivers what today’s wine consumer is looking out for: new wines, exclusive wines, unusual wines – and you will nd plenty of fantastic options in this guide.
It’s important to engage with those consumers keen to experiment more deeply with wine, by providing information, advice and support either face to face at the bar or table, or through more detailed tasting notes on wine menus. Train your team to ensure they can o er advice and support to consumers looking for a richer experience.

The category has had a tough time over the last few years, hit by older drinkers taking longer to return post-COVID and the cost-of-living crisis making consumers think twice about spend on a glass or bottle of wine or cutting back on casual occasions. That has meant performance still declines vs LY at -4% from a value perspective, which tracks behind total drinks, which is flat.

White wine makes up 43% of sales, with red at 25% and rosé 8%. Sparkling is more popular than rosé at 18%, whilst champagne is slightly less at 8%. All types see decline, although rosé is less affected due to a resurgence of popularity, as is champagne which benefits from more concentrated treat occasions.

Italian wine is most favoured by consumers, (53%) closely followed by France which is the only country in the top 10 in growth (48%). Australia (40%), Spain (39%) and New Zealand (37%) make up the top 5, with South Africa and Chile also being consumed by over 30% of consumers. British wine has seen the biggest growth of consumers as more brands become available, whilst Romania also sees growth.

Sauvignon Blanc is the most popular varietal and retains popularity vs last year (44%), with Pinot Grigio close behind at 42% and also flat. Merlot (39%) and Malbec (34%) are still popular but in decline, as Pinot Noir rises in popularity (32%). Cabernet Sauvignon, Chardonnay and Shiraz also see consumption at 30%+, but the latter sees the biggest drop in popularity. Other varietals rising in popularity vs last year include Albariño, Nero d’avola, Gamay and Nebbiolo.

Malbec is the signature grape of Argentina and produces fullbodied, fruit driven wines with a touch of spice – which are becoming a must on every wine list.

France is still undoubtedly the original home of Terroir-driven wines due to the way that soil, climate and man somehow come together to influence the overall style.
Italy is home to some of the oldest wine producing regions in the world, and from its light and dry Pinot Grigios, to its full and intense Barolos and Valpolicellas – there is an Italian wine to suit every taste.
New Zealand mostly enjoys a temperate, maritime climate. Warmth and sunlight are plentiful during the day, whilst nights are cooled by sea breezes, creating perfect conditions for production of some fabulous wines.
South African winemaking traditions date back over 350 years to 1659, when the first grapes were pressed. Now there are over 100,000 hectares of vineyards in South Africa. The cool, wet winters and warm dry summers create intense fruit flavours which are now so popular.
Spain is the third largest wine producing region in the world and has a rich wine history. The diverse landscape, geography and climate play a fundamental role in Spain’s many wine styles – especially the fruity reds of Rioja.
America produces wine in every state, but the majority only comes from five of them. California makes up around 90% of this with big blockbuster-style Cabernet Sauvignons. Washington State is the second largest producer, giving us fine Cabernets and Merlots and refreshingly light Pinot Grigios.

We recommend that you review your wine list at least once a year to keep your offering fresh and in line with the latest trends. The best time to do this is in September to make sure you can take advantage of any new listings and developments ahead of creating your wine lists for the busy Christmas period round the corner, and to set you up for a successful Spring and Summer.

You are best offering your wines in 75cl bottles. Offer a range of wines by the glass, but only offer those wines you can sell in quantity. If you struggle with the throughput of your wines, offering them by the glass in single serve bottles might be the answer for you. With these single serve bottles you are always sure to serve a fresh glass of wine. See p44 for our range of single serve wines.
An even bigger challenge can be offering sparkling wine by the glass – it is wasted as soon as it loses its sparkling character.
Legally you must sell wine by the glass in measures of 125ml, 175ml, or multiples thereof. If you do not list your 125ml glass prices in your wine list, then you will need to add a note to state ‘Wines served by the glass are available in 125ml on request’. The 250ml glass is very popular with those wishing to develop higher volume.

Adding numbers to your wine list means customers will never be embarrassed by not being able to pronounce the wine they want. Asking for bottle number 7 is easy!
Help to guide your customers by including tasting notes along with simple indicators, from dry to sweet for white, and body indicators from light to full for red wine.
It makes sense to list your wines in a way that makes your selection easy to understand. There are a couple of options, depending upon the size of your list. If you have a relatively small list you can stick to the most common used listing order:

A newer and popular way of designing your wine menu is listing by taste profile. This creates a perfect decision guide for your customers. It is especially useful when you have a larger selection. You will still use the sections mentioned above but then subcategorise the wines in different taste profiles. For example:

In today’s challenging economic environment, it’s important to price your wines competitively. We would suggest somewhere between 50% and 60% gross profit dependent on your style of business.
Use your cost price per bottle excluding VAT. Retail selling price is what you charge customers (it includes VAT).

White wine is a wine that is fermented without skin contact. The colour can be straw-yellow, yellow-green, or yellow-gold. It is produced by the alcoholic fermentation of the non-coloured pulp of grapes, which may have a skin of any colour. The wide variety of white wines comes from the large number of varieties, methods of winemaking, and ratios of residual sugar. White wine is mainly from “white” grapes, which are green or yellow in colour, such as the Chardonnay, Sauvignon Blanc and Riesling. Some white wine is also made from grapes with coloured skin, provided that the obtained wort is not stained. Pinot noir, for example, is commonly used to produce Champagne.
Among the many types of white wine, dry white wine is the most common. More or less aromatic and tangy, it is derived from the complete fermentation of the wort. Sweet wines, on the other hand, are produced by interrupting the fermentation before all the grape sugars are converted into alcohol; this is called Mutage or fortification. Sparkling wines, which are mostly white, are wines where the carbon dioxide from the fermentation is kept dissolved in the wine and becomes gas when the bottle is opened.

A rosé is a type of wine that incorporates some of the colour from the grape skins, but not enough to qualify it as a red wine. There are three major ways to produce rosé wine: skin contact, saignée, and blending. Rosé wines can be made still, semi-sparkling or sparkling and are made from a wide variety of grapes and can be found all around the globe. When rosé wine is the primary product, it is produced with the skin contact method. Black-skinned grapes are crushed and the skins are allowed to remain in contact with the juice for a short period, typically two to twenty hours. The grape must is then pressed and the skins discarded. The longer the skins are left in contact with the juice, the more intense the colour.
When a winemaker desires to impart more tannin and colour to red wine, some of the pink juice from the must can be removed at an early stage in what is known as the saignée method. The red wine remaining in the vats is intensified as a result of the bleeding. The pink juice that is removed can be fermented separately to produce rosé. The mixing of red into white wine to impart colour is uncommon and is discouraged in most wine growing regions, especially in France, where it is forbidden by law, except for Champagne. Even in Champagne, several high-end producers do not use this method but rather opt for the saignée method.

Sparkling wine is a wine with significant levels of carbon dioxide in it, making it fizzy.
