In partnership with Aspire Globally Limited and the Professional British Butler School, the hotel recently conducted an immersive seven-day certification program led by Wayne Fitzharris, renowned for his precision in training hospitality professionals into hightouch experience designers.

But this was more than a skills workshop. It was a study in self-awareness, refinement, and emotional acuity. Trainees were not simply taught to do the work of a butler; they were challenged to become the essence of luxury itself. After all, true service doesn’t begin with action. It begins with presence.

Every day brought structured recaps, deliberate reflection, and personal assignments aimed at shifting how participants saw themselves and how they could evolve. They examined the habits they carried into a room, the energy they projected, and the gaps between what was done and what was felt.

Chef Felix Deng: Mastering the Art of Chinese Cuisine

Stepping into the role of Chef de Cuisine at No. 8 China House, Qisheng “Felix” Deng brings

with him over 17 years of experience crafting authentic Chinese cuisine in Hyatt properties across China.

His culinary journey spans Hyatt Regency Dongguan, Grand Hyatt Guangzhou, Grand Hyatt Sanya Haiting Bay, and more, with his latest tenure as Executive Sous Chef at Grand Hyatt Shenzhou Peninsula.

For Felix, hospitality is rooted in authenticity, the meticulous preparation of traditional Chinese dishes infused with heartfelt expertise.

His command of classic flavors and his ability to craft refined yet soulful cuisine underscore his philosophy: food is not just sustenance, but a language that connects and comforts.

Chef Bruce Ning: Crafting Dim Sum with Distinction

Dim sum is often described as a poetry of delicacy, an exquisite tradition requiring patience, precision, and profound respect for heritage. Dim Sum Sous Chef Bruce Ning embodies this philosophy, bringing over two decades of experience perfecting Chinese dim sum across luxury hotels in Xi’an.

A native of Shaanxi, China, Bruce refined his craft at prestigious properties, including JW Marriott Xi’an, Hyatt Regency Xi’an, and InterContinental Hotel Xi’an. From meticulously hand-folded dumplings to delicate steamed creations, his artistry ensures that each bite is a testament to tradition and craftsmanship.

For Sustainability Manager Kennisha Amon, the most impactful ideas don’t always come from something new. They come from seeing the old differently. “I always made it my mission to preserve things and give them a second life if I could,” she says. That instinct, formed in childhood through crafting, collecting, and creative reuse, has grown into a full-fledged philosophy she brings to her role at Grand Hyatt Manila.

At its heart, Kish’s work is about shifting the way we assign value. She challenges the idea that sustainability is a luxury, insisting instead that it’s often just common sense dressed as care.

“Sustainability isn’t a privilege when it echoes the habits we’ve already formed at home,” she adds. Finish what’s on your plate. Turn off the lights. Repurpose what’s still useful. These aren’t trends. They’re timeless.

In a country where national-scale systems for greener living are still evolving, Kish believes the work begins with small, practical shifts. The kind that feel less like a burden and more like a mindset.

“Sustainable habits are more often than not practical habits,” she says. And the best ones tend to last because they make sense — for people, for operations, and for the planet.

But don’t mistake practicality for passivity. Kish leads with purpose and a bias for action. At Grand Hyatt Manila, that’s taken the form of everything from food waste reduction and kitchen repurposing, to the hotel’s partnership with SOS Philippines, where rescued ingredients are transformed into hundreds

of meals. “Watching our Commissary team fully own the initiative was incredibly motivating,” she shares. “It proved that once people see the impact, they want in.”

Still, she’s quick to remind us that recycling, while important, isn’t the endgame. “In the 3Rs, reduction should always come first,” Kish notes. Whether it’s maximizing ingredients to reduce kitchen waste or finding new partners to transform the hotel’s socalled “high-quality waste” into usable materials, her focus is on stretching every resource to its fullest.

And while some may see sustainability as a science, Kish sees it as an art. “Art makes people feel something. That’s how you get them to care,” she says. For her, sustainability is just as fluid — a constant creative exercise in adapting, responding, and redesigning. “What works in Europe won’t always work in Asia. Like any good art form, we have

to make it our own.”

Kish isn’t here to make people feel guilty. She’s here to make people feel capable. “I want to build a culture where sustainability isn’t seen as extra. It should be seen as essential.” And as Grand Hyatt Manila continues to ask smarter questions of how it operates, Kish remains focused on the long view — building systems that don’t just solve problems today, but evolve to meet the needs of tomorrow.

For The Vow Factor: Three Artists Weave A Canvas of Commitment.

The Grand Ballroom saw its expanse reimagined. Three sleek partitions spoke three languages of forever, each space a visual love letter to culture, craftsmanship and modern romance.

Kathy Sy-King began the story of modern Chinese opulence in The Imperial Bloom, where every corner was awash with gilded glamour, reminiscent of Kevin Kwan’s Crazy Rich Asians universe. Bright colors replaced the traditional red and gold that befit Chinese weddings, and SyKing paid tribute to the Singapore Botanical gardens with towering tropical arrangements – rich, regal and undeniably contemporary.

Kyno Kho followed with a study in restraint on the classic Western-style wedding in Kynetic Romance. Created as a tribute to love always in motion, Kho stripped the space down to its most essential, then elevated them with giant custom florals and tall chandeliers that both framed and anchored the room. It was romance at its softest – minimal, sculptural and unafraid to be delicate.

Drew Menor concluded the three-part saga with a soulful tribute to Filipino heritage, abundance and artistry. Inspired by the richness of Masaganang Ani, Menor transformed the ballroom into his concept Ani Ng Puso (loosely translated to Harvest of the Heart). Native textures like rattan and bamboo intertwined with lush floral arrangements felt both grounded and Grand and was the perfect love letter to the Philippines – its flavors, spirit and the quiet power of coming home.

At the helm of it all is Christine Ong-Te, the powerhouse behind COTE Events, and Grand Hyatt Manila as its anchoring venue. The talented teams elevated each section with a sumptuous collection of food, beverage and an experience worth retelling.

Tea with Tee: Chef Tiana Gee’s Takeover at Merienda Cena

Chef Tiana Gee brought heart, heritage, and heat to Grand Hyatt Manila with Tea with Tee, a soulful afternoon tea experience that paid homage to her Filipino and Southern American roots last 4 May, Sunday. Guests were treated to unique bite-sized versions of her signature dishes, including the Crispy Veggie Cigar, her take on the local lumpia, and the Macapuno Cornbread.

Beyond the Burn, powered by Technogym

Last 29 March, the Technogym team came over for a day of wellness and intense work. The activation kicked off with a morning workout using their versatile multipurpose bench, followed by light vegan and vegetarian snacks at Pool House. Guests then enjoyed a live demonstration of their state-of-theart wellness machine, wrapping up the session with insights on integrating fitness and well-being into daily routines.

In celebration of Philippine Independence Day, The Grand Kitchen collaborated with Chef Dedet dela Fuente, best known and beloved as the Lechon Diva. The four-day takeover from 12 to 15 June for lunch and dinner was a celebration, featuring her signature Binagoongan and Truffle-Stuffed lechons, among other crowd-favorite dishes. With just two days of promotion, all seatings sold out – truly a successful collaboration for both parties and for Chef Dedet, who marked this as her official public comeback following 6 years of hiatus.

Turning Surplus into Sustenance, One Meal at a Time

In celebration of Global Month of Service, Grand Hyatt Manila associates partnered with Scholars of Sustenance for a Rescue Kitchen activation that transformed surplus food into over 500 thoughtfully prepared meals. From slicing to serving, volunteers worked hand in hand across every stage—championing both community care and environmental responsibility through every plate shared.
