Born with a competitive spirit, Chef Shinpei's early years were marked by his prowess on the American football field. Representing his alma mater, Nihon University, his team soared to the zenith of Japanese football, clinching the coveted No.1 spot in the nation. Yet, beneath the armour and intensity of the game, a passion for Japanese hospitality simmered within him, waiting to be ignited.
At the tender age of 22, armed with ambition and an unwavering commitment to his cra , Chef Shinpei embarked on a journey that would shape his culinary destiny. Joining Plan Do See Inc a er graduating, he immersed himself in the intricate world of hospitality, laying the foundation for his future endeavours. However, an insatiable thirst for knowledge and a desire to showcase Japanese culinary artistry to the world propelled him to seek further enrichment.
Determined to master the nuances of sushi cra smanship, Chef Shinpei embarked on a pilgrimage to Tsukiji, Japan's revered fish market. Here, amidst the hustle and bustle of the bustling market stalls, he honed his skills, meticulously studying the myriad varieties of fish that graced his fingertips. Fueling his passion, Chef Shinpei also dedicated himself to a rigorous regimen at a renowned sushi school, mastering the delicate techniques that define the art of sushi-making.
In 2023, Chef Shinpei returned to his roots at Sushi Azabu, Tokyo, infusing his creations with a depth of knowledge and a reverence for tradition. However, his culinary odyssey was far from over. In February 2024, Chef Shinpei embarked on a new chapter, bringing his expertise and artistry to the vibrant streets of Kuala Lumpur.
