Instructions
Bring the chicken or vegetable stock to a boil in a large saucepan over medium heat.
Add the lemongrass, galanger (or ginger), kaffir lime leaves and Thai red peppers to the stock Let it simmer for about 5-10 minutes to allow the flavors to infuse. Add the mushrooms and cook for another 2-3 minutes until they start to soften.
Add the shrimp to the pan and cook until they turn pink and opaque, about 2-3 minutes.
Stir in the fish sauce, lime juice and sugar Taste and adjust the seasoning if necessary.
If using coconut milk, stir it in and simmer for another 1-2 minutes.
Add the cherry tomatoes and coriander leaves to the pan and remove from the heat.
Serve warm, garnished with extra coriander leaves if desired

It’s funny how we look at things, trying to take in everything, but usually (in my case at least) with mixed results.
I’ve walked up and down through Chinatown countless times, snapping street scenes or just enjoying the atmospheric chaos

Recently I was there with a friend and we suddenly noticed an ancient, decrepit looking Vespa scooter, it was literally begging to be photographed… That triggered something and before we knew it b d i t l t f th ld as!
AV E S PI must have seen them lots of times in the past during my walks of course but for whatever reason they just didn’t ‘click’ until now In Chinatown the Vespa is the classic workhorse, buzzing around through lanes and alleys, while carrying ridiculous loads on the back.

The reason for its popularity here through all the years is its engine construction: low to the ground and connected directly to the back wheel
Having the engine atop the rear wheel makes for unequal weight distribution but this enables it also for loading piles of stuff on the back! Rolls of textile, heavy sacks of rice, anything goes, only elephants on the back we didn’t see that day, but I wouldn’t be surprised at all if one day in the future…
As you can see from my photos the Vespas are well used to put it mildly, but the few owners we met were (rightfully!) very proud of them and more than happy to pose for photos! V E S P A
Nowadays in other parts of town new versions of the Vespa can be seen cruising around with hipsters owners doing their best to have a vintage cool look, fun perhaps, but the real deal can be found in Chinatown!

V Craft Thailand wants to change people's image of the visually impaired and show everyone what the world of the visually impaired looks like. That is why V Craft regularly organizes workshops in which everyone can experience 'a blind world' for themselves.
Participants receive a special blindfold that allows them to imagine themselves in the world of visually impaired people. They then walk up the stairs blindfolded, walk with a stick, drink water, drink hot tea, eat cake, have lunch and of course make something out of macramé.
It's amazing to see how differently people respond to this experience. One person walks up the stairs very quickly and drinks water or tea without any problems. While others have much more difficulty with that. There are even people who get dizzy.
In any case, what is achieved is that people without visual impairment have more respect for the situation in which visually impaired people find themselves. And that's what it's all about: becoming aware of what the world looks like for the visually impaired and what people need to do to survive in modern society.

And here, at Wild Encounter's base a modest yet cozy restaurant and pier offered a picturesque start Against a backdrop of stilted houses and bustling fishing boats, our group gathered eagerly, a blend of locals and foreigners
After a warm welcome from our guide, Khun Nat, and a precautionary dose against seasickness, we boarded a spacious long-tail boat, departing for our main vessel, the JP, anchored further out In the comfort of the airconditioned lounge, Khun Nat briefed us on the elusive Bryde's whales (and maybe dolphins) we hoped to encounter Equipped with life jackets, refreshments, and a delectable lunch awaiting us, our expedition was meticulously organized
Navigation took a unique twist directions were given by the clock, not cardinal points, a system we swiftly acclimatized to as we scanned the horizon for telltale signs of marine life Our first sighting a fleeting glimpse of a Bryde's whale's open mouth set the stage for an exhilarating game of marine hideand-seek Despite occasional weather challenges and teasingly brief glimpses of dorsal fins, our spirits remained buoyant

Mid-journey, a breakthrough: the sharp-eyed lookout spotted a mother whale and her calf This encounter marked a turning point, as subsequent sightings became more frequent and intimate The air buzzed with excitement as cameras clicked and unforgettable moments unfolded.
As our boats meandered back towards Samut Nakhon, appetites were appeased with a sumptuous lunch served on board Replete with shared tales of our marine adventures, we disembarked at the high-tide pier, cherishing our final moments together before returning to Bangkok
In retrospect, our journey with WildEncounter transcended mere wildlife viewing it was a testament to nature's surprises and the thrill of exploring Thailand's lesser-known marine treasures For those seeking an escape from the ordinary, this experience promises not just sightings, but lifelong memories etched against the backdrop of Thailand's coastal wonders

Like everything in Bangkok also this part of this metropolis is huge. It is one of the biggest Chinatowns in the world. Established more than 250 years ago, it quickly became an important commercial hub, which it is still today.
In Chinatown you will find traditional Chinese shops, restaurants, temples and much more. At daytime it’s nice to walk around and visit the temples and shops. But, for us, the real fun starts at nighttime.
That’s when Yaowarat Street and the areas around transforms in an amazing food festival with hundreds of food stalls

It was a journey from the outskirts of Chicago to the vibrant streets of Jerusalem and even the confines of a Beijing prison! These experiences, while challenging, shaped Daniel and inspired his art.
As a child, he moved often because of his father's military career. He lived in places like the Philippines, Korea, Germany and Texas before settling in the suburbs of Chicago. These early travels instilled in him a love of exploration and change that continues to influence his art. Despite the challenges, his mother has been Daniel's hero, teaching him values such as kindness, empathy and humor. Her strength and dedication shaped who he is today. School was a mixed bag for him: he excelled in his early years but struggled with homework and social connections.
