I still can remember the first time that I met Chalermchai Kostipitpat in person.

Immediately, there was a kind of chemistry.

Now, about 17 years further, we still feel connected adit's always a pleasure to meet him. Can I call him my friend? Yes, I think so. Althoug Chalermchai decided to retire 2 years ago, we are grateful that he made time to meet me.

What do you think my friend, when I tell people that you are the modern Michelangelo?

Chalermchai sits back a bit, smiles, and thinks that's a bit too much. "I am quite multitasking, same as Michelangelo was, that's true. But I think it's better to have your own identity and I don't like to compare myself to the greats of the world"

What made you never stop designing and creating art?

"I never stopped thinking, I was always doing something and I seemed quite restless, and moreover, really, creating art was always my passion."

"Art was also my way of communicating with the world. And besides that, I was also convinced that I gave people another view on Buddhism. Maybe a kind of more modern view?"

You are best known for Wat Rong Khun. But you're much more than an artist who just made a temple, right?

"Hahaha, yes! I started making paintings when I was only 6 years old. And I made lots of sculptures as well during my life. Of course, Wat Rong Khun is one of the biggest projects in my life, but fortunately I did more than just that" Page 06

"Making the Ganeisha was a huge challenge.

The molds are handmade and filled with copper.

The copper we melted by ourselves. It was a very labour-iintensive project, but yes, so was Wat Rong Khun, haha!”

"Actually, when you and I met for the first time, about 17 years ago, the White Temple was still under construction. But, I had already many more plans in my mind. And of course, my initial ideas also evolve. Maybe that goes along with the changes of the times” “The great thing is that all new things outside the White Temple also show my diversity well. I am, of course, an artist above all else” “And, as you know, 2 years ago, I decided to change my life: being an artist will not be the most important activity anymore in my life.

Since I was 65 years old, yes, I’m that old, I’ve been let’s say, retired. The project Wat Rong Khun is done, finished. It’s ready, or....you have some more ideas?”

Ajaarn Chalermchai, thank you for your time. I am already looking forward to seeing you again, somewhere, sometime.

Pad Thai One of the most important things in life is food. In Thailand food is actually a way of living. When you meet people, or have people on the phone, the first question normally is: did you eat already? And that shows immediately the importance of food in Thailand. Need to be said, that the Thai kitchen is one of the best, maybe the best, kitchen in the world.

The Thai kitchen is known for its magical combination of sweet, spicy, sour, bitter, and salty flavors mostly finished with aromatic herbs. This creates an explosion of flavor every mouthful.

Now we introduce to you you one of the most popular Thai dishes: Pad Thai.

Pad Thai is a Thai noodle stir fry with sweetsavory-sour sauce, scattered with crushed peanuts. It's made with thin, flat, rice noodles and has bean sprouts, garlic shives, scrambled egg, tofu and a protein. Most popular protein to add is shrimp or chicken.

It is all tossed together in a delicious homemade sauce. This dish is packed with flavor and can be made in about 30 minutes!

Pad Thai I N G R E D I E N T S (4 servings) 8 ounces (230 grams) of flat rice noodles 3 tablespoons of cooking oil 3 gloves of garlic, minced 8 ounces (230 grams) of uncooked shrimp or chicken or extra firm tofu 2 eggs 1 cup fresh bean sprouts 1 red bell pepper, thinly sliced 3 spring onions, chopped ½ cup dry roasted peanuts 2 limes ½ cup fresh coriander leaves, chopped For the Pad Thai Sauce: 3 table spoons fish sauce 1 table spoon soy sauce 5 table spoons light brown sugar 2 table spoons rice vinegar 1 table spoon Siracha hot sauce Optional: 2 table spoons peanut butter

PAD THAI

Instructions - Cook the noodles just until tender and rinse with cold water.

- Make the Pad Thai sauce by mixing the sauce ingredients in a bowl and set aside.

- Heat 1½ tablespoon of cooking oil in a wok over medium high heat. Add the shrimps, chicken or tofu, garlic and bell pepper. The shrimps will cook quicky, about 1-2 minutes on each side until pink. If using chicken, cooked thoroughly and will take about 3-4 minutes.

- Push everything to one side of the pan. Add a little bit more cooking oil and add the beaten eggs. Scramble the eggs, breaking the egg into small pieces with a spatula as they cook.

- Add noodles, sauce, bean sprouts and peanuts to the pan. Toss everything together to combine.

- Garnish the top with spring onions, extra peanuts, coriander leaves and lime wedges.

Serve immediately.
