The table linens are pressed. The serving dishes are set out. The largest turkey you can get your hands on in December is roasting in the oven, stuffed with your grandmother’s famous turkey stuffing recipe. You and your mom or maybe your sister remembered the cranberry sauce, and now you are laughing trying to come up with creative uses for the extra you know will not be needed. Michael Bublé is crooning familiar carols in the background. Your youngest niece and nephews, sons or daughters, are doing everything they can to devour an entire box of chocolates before dinner. Their next goal is to encourage their parents to let them go jump on the trampoline in the middle of winter. Drink in hand, the adults sample appetizers and put the finishing touches on what is shaping up to be another enjoyable, albeit hectic, family Christmas dinner. At least this is what happens in my home almost every Christmas Eve. It’s hard to believe the arrival of this edition of GoodLife means Christmas will arrive in a little more than a month. That’s why, in this issue, we wanted to make the holiday season less stressful by bringing some local shopping to you; a sort of window shopping on your couch so that you can find some unique and fun gifts. Along with holiday shopping, food writer Katherine Elphick visits bakeries throughout the region collecting the best sweet holiday recipes to start your baking off right. If you are going to change up your table décor, the folks at Home Sense provided us with some inspiration and creative colour schemes that would also work for any dinner party throughout the year. At GoodLife, we too love a great deal. This year we enlisted professional help through our wine expert Gordon Stimmel in choosing the best champagne under $15 to bring in the New Year in style and under budget. And if you want a real treat, Barrie bartenders and restaurateurs serve up their favourite festive cocktails, complete with recipes. I will be serving friends the “TNC Kiss” at least once between now and when the snow melts, but for the real deal, order one when you are enjoying an evening out. Showcasing mouthwatering goodies ranging from cookies, chocolates, and gingerbread houses to sticky buns, butter tarts, pies, candy cane cupcakes and more, the region’s bakeries will satisfy any sweet tooth. Recently, GoodLife visited several local bakeries to uncover all the delicious details. Putting icing on the cake of this story, bakery owners shared recipes for their favourite festive treats. For the past 10 years, Cakes By Design has specialized in creating artfully decorated custom cakes. “People come to us to have a little fun,” says Jen Mayrl, who co-owns the downtown Barrie bake shop with Michelle Doo. And their creative range is vast. Apart from a bustling wedding cake business, special occasion confections include anything from apple-shaped cakes to zebras striped cupcakes. Cakes By Design is nut-free, and caters to clients with special dietary needs. Glutenfree cakes, cupcakes, and cookies, egg-and/

or milk-free baked goods can all be customordered. Do-it-yourself cake making supplies are also available at the shop. As for their craziest commission? “We do a giant Canada Day cake every year for the City of Barrie,” explains Mayrl. “We have lots of fun with it. It’s eight feet long, has a Canadian theme and weighs about 250 pounds.” To celebrate the holiday season, the local sweet shop will be offering various seasonal goodies. Gingerbread house decorating classes are also available. Call store for details.

SOFT GINGERBREAD COOKIES Cakes By Design 2-1/4 cups all-purpose flour 2 tsps ground ginger 1 tsp baking soda 3/4 tsp ground cinnamon 1/2 tsp ground cloves 1/4 tsp salt 3/4 cup soft margarine 1 cup granulated sugar 1 large egg 1/4 cup molasses

PREPARATION: 1. Preheat oven to 350F. 2. In a medium bowl, combine flour, ginger, baking soda, cinnamon, cloves and salt. 3. Set aside. 4. In a large bowl, cream together margarine and sugar until light and fluffy. Beat in the egg, and then stir in the molasses. Using a wooden spoon, gradually add the dry ingredients; stir until well combined. Wrap dough in plastic wrap and cool for 1 hour in the refrigerator.

Decoration ideas include festive coloured, or white icing and candies such as Smarties, mini jelly beans or M&Ms for the buttons, says the local baker. “You don’t need much because gingerbread tastes so good on its own.”

5. On a lightly floured surface, roll out and cut into desired shapes. Bake on a parchment paper-lined tray for 8 to 10 minutes, or until edges begin to brown and are firm to touch. Cool on baking sheet 5 minutes before removing to wire rack. Cool completely before stacking. 6. Store in airtight container at room temperature up to 5 days, or in a freezer up to 2 weeks. Makes about 18 small (2 to 3 inches) or 7 large (4 to 5 inches) cookies

In a medium bowl, beat cream cheese and unsalted butter until smooth using an electric mixer. Add maple syrup, vanilla and confectioners’ sugar; continue beating till smooth.

When Teresa and Carlos Trivino opened a specialty cake business in Alliston in 2012, they were determined to engage the local community. From offering a free cupcake for folks celebrating birthdays to donating a portion of sweet sales to local charities, community involvement is key. “This holiday season, we will be offering a complimentary treat to anyone who brings in a non-perishable item for our food bank bin,” explains Teresa Trivino. Specializing in custom cakes to celebrate any occasion, the sweet shop won the Alliston Chamber Award for new business in 2013. Delectable fresh pastries, cookies, cupcakes, cinnamon buns and more fill the bakery’s shelves. “Our chocolate brownie crackle cookie with white chocolate chunks is our signature cookie,” reveals the local baker. Teas and specialty coffees, along with caféstyle lunches including soups, scrumptious panini’s and gourmet grilled cheese sandwiches, are also available. “We can even host birthday parties, wedding showers, baby showers and business meetings for up to 25 people in our store.” As for the holiday season, the Alliston bakery is a one-stop shop for all of your sweet cravings. Along with oodles of seasonal cookies, holiday cake shots (mini layer cakes served in shot glasses), a variety of flavoured cupcakes such as pumpkin and ginger are on offer. “We dress the cupcakes up with fun and festive toppings such as candy canes and santa’s,” explains the Alliston baker. Sophie’s Sweets will also be participating in Alliston’s Hometown Christmas event on Saturday, Nov. 23. “We’re giving free cookies to children who come into the bakery to write a letter to Santa,” she explains. Seasonal cake and cookie decorating classes are scheduled for November and December. Call store for details.

In a large bowl, whisk together brown sugar, granulated sugar, butter and eggs until light and fluffy. Add dry ingredients and whisk until smooth. Whisk in pumpkin purée. 3. Divide batter evenly in cupcake pans lined with paper liners, filling each approximately half-full. Bake approximately 20 to 25 minutes, rotating your pan halfway, or until tops spring back when touched and a cake tester inserted in the centre of a cupcake comes out clean. Transfer to a wire rack and let cool completely. Makes 18.

When the Murphy family renovated their rustic farm market in 2010, adding a scratch bakery was top priority. “Our family has always loved baking, so installing a bakery where we could bake pies and treats we were proud of seemed like the most natural thing to us,” explains Hollis Murphy-English, whose family has owned the Alliston-area farm since 1913. “Our style of baking is both comforting and nostalgic.” No visit to Murphy’s is complete without purchasing a freshly baked pie. “We are known for our pies and tarts,” admits Murphy-English, who runs the farm market and bakery with her four siblings, while their parents tend to the 500 acres of potatoes. “Pie choices change with the season depending on what delicious fruits are being harvested but blueberry, raspberry and apple pies are staples that can be found in the bakery all year long.”

During the cooler months, pumpkin and mincemeat pies take centre stage. Decorated with various antiques and vintage photos, the country bakery also offers a variety of mouthwatering goodies including fresh bread, squares, cookies, biscuits and granola. Fresh seasonal fruits, vegetables and local edible products are also on offer. During November and December, festive treats are added to the bakery’s shelves. “We only make our buttercrunch during the holiday season and it’s to die for,” says the Alliston baker. Buttercrunch is a buttery toffee confection enrobed with a layer of chocolate and topped with freshly toasted pecans or almonds. Additional Christmas confections and goodies include truffles, chocolate dipped fruit, fruitcake, shortbread, biscotti, marshmallows and more. Open May until Dec. 23.

PREPARATION: 1. Preheat oven to 425F. 2. Place boiling water in a small saucepan. Add butter and place over medium heat. 3. When butter is melted and while mixture is boiling, add flour all at once. Stir rapidly until mixture makes a ball shape that comes away from the pan (DO NOT OVERCOOK). Remove from heat. 4. Add unbeaten eggs, one at a time, beating each until smooth (only add the fourth egg if the mixture is not smooth enough). Just remember that the secret to tender cream puffs is long, patient beating.

5. Drop dough by rounded tablespoons (or use a pastry bag) onto a greased cookie sheet a few inches apart. Bake for 30 minutes. Reduce temperature to 325F and continue baking until puffs are dry, about 10 to 15 minutes for small ones and 15 to 20 minutes for larger ones. Cool Completely. 6. Using a sharp knife, slit a small hole in the side of the puff. Fill with whipped cream and sprinkle with icing sugar. Makes about 24.

The philosophy of The Lemon Tree Bakery in Barrie is sweet. “We want to give customers a traditional bakery experience,” explains Revital Zephrani, who owns and operates the Barrie scratch bakery with her mother Jocelyn. “Even if someone is just buying one cookie, we want to make that event special.” With counters lined with countless delectable delights such as cookies, pies, truffles, pastries, cupcakes, and whimsical specialty and wedding cakes, it’s easy to satisfy any sweet craving. “Our lemon squares and brownies are signature items,” explains Zephrani, who started in business in 2009. Q: WHAT IS THE SECRET TO YOUR SUCCESS AND YOUR CLIENTS’ SUCCESS? I have learned over the years it is the tortoise who wins the race. I describe my approach as conservative and comfortable. In today’s world some individuals are looking for the quick profit. In fact most business shows promote this approach. The quick profit approach increases the risk of the portfolio and not necessarily the rate of return.

Q: WHAT IS YOUR APPROACH?

You do not need a lot of investment positions to make a good return, you just need the right ones. In my portfolios I have no more than 25 to 30 investment positions. I will hold them as long as they are adding to the value of the portfolio. Some investments have been held for five years, some for a few months. All of my portfolios have fixed income, as it protects the portfolio from significant fluctuations.

Q: IF YOU COULD OFFER ADVICE TO SOMEONE ON SELECTING AN ADVISOR TO WORK WITH WHAT WOULD IT BE? First of all is experience. The investment industry has seen a lot of advisors enter the industry in the last few years. As an advisor you need to know the mistakes not to make and this takes years to learn. Also, an experienced advisor should be managing a larger pool of investable assets. Next would be education. In today’s world the role of the Investment Advisor has expanded beyond investment selection. There is retirement, estate and business succession planning. You need to ensure the individual has the proper educational background and expertise to offer advice in these areas.

Last of all you have to be able to connect with the Advisor. You have to be able to communicate comfortably your goals and concerns and the Advisor has to be able to understand them. With couples this means both spouses.

Q: INTERESTING THAT YOU MENTION CONNECTING WITH BOTH SPOUSES. IS THIS USUALLY A PROBLEM AREA? It can be; often one spouse is the dominant contact with respect to day-to-day communication. I am a firm believer that both parties should be involved and promote this to my clients. Events can happen in life and both parties need to be aware of the financial implications.

Q: WHAT CAN PEOPLE EXPECT WHEN THEY MEET WITH YOU? The first meeting is usually a get to know each other meeting. We will review the clients concerns with their existing investment strategy and discuss their overall objectives. I will also review with them our process and the steps that will follow. Once you become a client, I can draw from my team members to review a client’s financial planning needs. This review could include estate, will planning issues and for business owners business succession plan concerns. It all depends on what their needs are. Everything revolves around their goals whether its retirement, their standard of living, or leaving a legacy for the next generation. We help them form a plan based on their goals.

Every corner in this house was inspired by the homeowners’ global travels, bringing an international sense to the waterfront residence. Further into the foyer and three steps down, you’ll find yourself in the sunken living room connecting to the dining area. This open-to-above space is absolutely stunning. The two-storey, glass walls bring the gorgeous outdoors right into the house. Two Asian style wooden chairs are placed right by the windows working well with various European accents throughout the main floor. The impressive architectural design of the ceiling is brought to your attention as you look up to admire the white all-silk wrapped light fixture. “It took four people six hours to hang it,” said Matt Pryce, co-founder of Prycon Custom Building & Renovations Inc., who recently remodelled this luxury estate to better fit the ho-

meowners’ eccentric taste. » » In the dining room, another characteristic lighting piece hangs; this one in fire engine red. But that’s not the statement piece here. The long live edge walnut table, which comfortably seats 10, is truly the focal point. “Imagine how wide the walnut tree had to be to get one full solid piece like that,” said Pryce. Behind an accent wall across from this great room is the main family room, the most interesting piece in here is the opposite side of the accent wall. Cold rolled steel panels surround the fireplace, creating a very unusual industrial look. But that’s just one of many out-of-the-box design ideas found at this estate. The outstanding transformations done at this residence earned Prycon an Award of Excellence in Renovation at the Simcoe County Home Builder’s Association, Awards of Creative Excellence (ACE Awards). The most interesting part of the design was the work done in the basement, said Pryce. In fact, it was the flawless walkout lower level that got Prycon the winning title. »

Going down one of the two floating dark stained oak staircases with glass railings at either ends of the house, the ultimate recreational space awaits. Green stone countertops cover the full service bar while contrasting nicely with the dark browns. Nearby sits the billiard table with the same walnut veneer installed on the ceiling as a feature block to accentuate the chrome steel light fixture. Two skylights on the cathedral sloped ceiling above the kitchen allow lots of natural lighting. Adjacent to the kitchen is an eating area dressed with a round metal table and four metal chairs covers with white sheepskin. Above that, two white oversized round feather light fixtures hang as a statement piece from the ceiling. “These fixtures were too large to bring up the stairs, we had to take the window out to bring them in,” said Pryce. These pieces are seen again in the guest loft; above the double sinks in the bathroom and in the short hallway. The bedroom is furnished with elegant

French country flair. And the bathroom right across from that faces the stunning waterfront. To avoid wasting this picture-perfect view, a large window was installed instead of a typical bathroom mirror. Just to the left of that, mirrored pocket doors hide the toilet room. And on the opposite side of the double sinks, sits a spacious shower room with two rain showerheads. “The most challenging aspect in remodelling this home was achieving the unique and artistic flair that the client envisioned,” said Pryce. Despite this the décor was done quite eloquently. To assist in putting down layout designs on paper, the homeowners hired A. Baldassarra Architect Inc., who reworked the basement

and kitchen layout, in order for Prycon to work on the craftsmanship. With every room so different in style, it’s obvious how much work must have been put in both the planning and remodelling stages. It comes as no surprise that the tasteful renovations of this residence resulted in a well-recognized award.

You may recognize this stunning home from the Charles Bronson’s movie Death Wish Five. The exquisite timber frame construction in this Horseshoe Valley home was great for the film’s setting. But it was even more perfect for Mark and Christine Munro to raise their family. After renting and staying in the area, the Munro family knew they wanted to buy a home in the close-knit Horseshoe Valley community. “It’s a really nice area to raise kids,” said Christine. With Horseshoe Resort and Settlers Ghost’s Golf Club only a couple minutes drive, it was a prime location for the golf-loving family. Also nearby are the ski hills where the kids used to compete within their racing program. But it was the grand two-storey window and overall outside look that had Christine pull over to tour the open house with her two boys, 16 years ago. “I called Mark while he was on business in Zurich and said ‘I found our house’,” she said. It took major renovations for the elegant abode to look like what it does today. With the assistance of now retired interior designer Alex Taylor of Todos Design in North Bay, the couple was able to make various fine design details fit their taste and lifestyle. They started off by painting the wild green exterior window frames grey. And the board and batten by the entrance was paint-


ed taupe. All this was finished to work an earthier and welcoming colour palette right from the outside. The colour choices also enhance the appearance of the impeccable exterior stonework. Lush landscaping including armour stone and interesting greeneries was done by Sunsational Landscapes Inc. to make this residence the perfect home and cottage all wrapped in one. In the backyard, a custom-made gazebo covers the built-in hot tub for year-round enjoyment. A large deck is built above the walkout lower level, with enough space to entertain guests over a delicious BBQ meal. With three years of redesign and construction, the inside has become even more stunning than the outside. By adding some extra square footage to the house, they created a more spacious slate tiled front foyer with a coat closet. This directly adds a more welcoming atmosphere to the entrance of the home. To the left, an inviting dining room is furnished with a tasteful country style table and chairs nearby a sophisticated butler’s pantry. The house was basically built around this all-stone fireplace, said Mark, adding how the rest of it can be seen in the lower level. When the family first moved in, all window frames in this space matched the exposed beams. “Christine felt that was too much, so we painted all the frames white,” said Mark. elements in the great room, the couple brings coziness into the oversized space. The accents found throughout the room are gathered from their various travels. “We like to bring something back when we go away,” said Christine. Authentic pieces of artwork also adorn many of the walls. Some of them with an interesting story like the Old Montreal painting by Tremblay that hangs by the dining room. “We had supper at a restaurant then I found this piece with the same restaurant we ate at so I bought it to remember the awesome view,” said Mark. The other side of the main floor is where a lot of the major renovations happened. They


flipped what used to be four closed off rooms and a bathroom into a family room open to a modern kitchen. Also part of this space is an eating area open to the family room. A round glass dining table and four steel back chairs complement the nearby glass and steel staircase railing perfectly. The circular pattern seen on the chair backs is one of many visible round shapes around the house. “Our interior designer thought of bringing in a subtle presence of Xs and Os in every room,” said Mark. Only once you pay attention to it do you notice the Xs and Os all around. They’re on the windows, in the furniture, on the pantry cabinet in the kitchen and even a pattern on the hallway carpet. It’s a very delicate addition that creates a connection throughout the area. The beige granite countertops along with the light stained custom-made kitchen cabinetry, by Ferndale Cabinets in Barrie, nicely reflect the light stained maple hardwood floors throughout. The undermount stainless steel sink and industrial pull-down handle style faucet, from Ginger’s in Toronto, work well with the stainless appliances and the custom-made steel stove hood. To complete such a major renovation project, the couple had to go through a number of different layouts for every room. “Alex would draw full renderings of every room to show us what every space would look like,” said Christine. And because of the post and beam construction, there were no load-bearing walls. “It was like having a flat canvas where we can do what we want,” said Mark. Just before heading upstairs, there’s a twopiece powder room near the mudroom. This area is accessible from the back door, making it suitable for freshening up after a long day of outdoor activities. On the second floor, there are three bedrooms in addition to Mark and Christine’s master suite and its own spacious ensuite bathroom. All the doors are solid custom-made pine, including the additional storage closet that was added beneath the slopped wall in the hallway. To reflect the wood all around, a cedar chest seat was built for the hallway. But that’s not it, there’s much more in the walkout lower level, which was completely finished to serve as the home’s ultimate recreational space. Chef Marco Ormonde likes change. “I enjoy shaking things up,” says the owner of the North Restaurant with a smile. Since opening his downtown Barrie fine dining restaurant in 2007, he’s moved to a larger location, transformed his menu oodles of times, had a baby boy with his fiancé Kortney and now runs a large banquet facility called the West Event Centre. Recently, this GoodLife reporter sat down with the 37-year-old chef before the lunch-hour rush. Over latte, the local restaurateur dished about everything from his food philosophy to his take on lowdining trends and the gourmet hamburger craze. »

I believe in cooking with your heart. When you cook with love, a delicious meal is inevitable. It’s been awhile since our first interview back in 2007. Back then, you had just opened the North on Dunlop Street. There’s been plenty of developments over the years, but let’s start with your new banquet facility. MO: We just took over the event centre at Victoria Village and named it the West. Keeping with the compass theme, I guess we will have to open up the South and the East at some point [laughs]. We’re really excited because it allows us to do both larger and smaller functions. We can do meetings, special events and dinners for 50 to 250 people at the West. At the North, we can do dinners and parties for around 50 to 60 people. The West is a great space and has a full

kitchen on-site. My overall goal with the West is to provide high-end restaurant quality food in a banquet environment. With your hotel background, I’d assume you’ve had plenty of experience catering large events. MO: Absolutely. I’ve always loved catering events like large weddings, baptisms or bar mitzvahs. Although my kitchen isn’t kosher, I can cater kosher parties because I have access to a synagogue kitchen. We also do off-site catering and we’ll go just about anywhere.

Why move the North from Dunlop Street to a century home on Mary Street? MO: Moving has worked out beautifully for us. The restaurant is two-and-a-half times bigger and we love it! People ask me all the time why I moved. Our lease was up, I wanted to own my own building and I wanted a bigger place. I bought the building, gutted it, and renovated it from top to bottom and added an additional 600 square feet for the kitchen and bathrooms. It has new electrical, new plumbing, new insulation -- the works. We are now licensed for 140 people, including the patios. What’s your favourite thing about the new Mary Street location? MO: For me, it’s the pride of doing everything yourself. I was the general contractor for the project, so most of the work was done by myself, my father, my fiancé Kortney, and various other family members and staff. My dad laid all the tile, Kortney put in the wood flooring, and my sister Marlene (who is also a North server) helped with the painting. All the staff really chipped in. It’s nice that your family is so involved. MO: It’s definitely a family business. Working the front of the house, Ivona Kilian has been with us for six years and she’s become family. (Working nearby, Ivona pipes in happily: “Marco has adopted me.”) Ivona was also very involved in the renovations. She even painted most of the artwork that hangs on the walls. What delicious things are going on in your kitchen these days? MO: Along with introducing a wonderful new

fall menu, we’re the only local kitchen to dry age beef on-site. We dry age both ribeye and striploin for 45 days. The process allows the tissues in the beef to break down and develop flavour. In short, it makes the beef tastier and more tender. You always like to be on the cutting edge. If memory serves me well, wasn’t the North the first Barrie restaurant to serve Kobe beef? MO: That’s true. I’m always looking to change things up because I like to intrigue people. My favourite saying is: “even though today was a great day, we can always do better tomorrow.’” We’re always looking to get better, we’re always trying to improve. Staying on top of the trends can be tricky. MO: It’s a constant struggle to be on the cutting edge. The big battle I’m having right now is figuring out the next thing in fine dining. These days, many fine dining restaurants have opted for low dining and leading that trend is gourmet burgers. My philosophy regarding trends is to dabble into them, rather than jumping in with both feet. Just like fashion, food is super trendy. You don’t want to fall too hard into something because the trend will change and you’ll be left behind. Think about the whole Asian fusion, macrobiotic, or charcuterie craze -- certain foods get super popular and then the trend dies down. Let’s turn back the clock and chat about your background. I understand that you were born in Terceira, Portugal, but moved to Toronto with your family at the age of 10. MO: That’s right. I started in the kitchen when I was very young because my grandmother had a catering company in Portugal. By age 12, I was working part-time in a professional kitchen, and did my culinary training at Humber College. Some highlights of your culinary achievements in Toronto include: running three Distillery District restaurants, and holding executive chef titles at both the Metropolitan Hotel’s Hemispheres restaurant and the Delta (now Eaton) Chelsea Hotel -- to name a few. You’ve also been deliciously rewarded for your efforts. You’ve received a four-star ranking in Toronto Life magazine, and have won many culinary competitions. With such credentials, why leave the big city and come to Barrie?

MO: The hustle and bustle of large city kitchens made me nostalgic for a smaller, more intimate restaurant. Barrie has always been a special place for me, so I decided to move here. I love having my own restaurant because it’s much less structured. For me, it’s like a playground.

1/4 cup consommé or chicken stock

Where do you find culinary inspiration?

3/4 quarters of loaf of white bread with no crust, diced 1/2 cup butter 1/2 cup celery, chopped

225 grams minced pork 225 grams minced veal 2 large eggs 1/4 cup whipping cream (35 per cent) 1 tsp salt 1 tsp poultry seasoning 1/2 tsp white pepper 1/8 tsp mace 1/4 cup parsley, chopped 1/4 cup chestnuts, chopped PREPARATION: 1. Preheat oven to 250F. Place the diced bread on a parchmentlined baking tray and dry in the oven for 10 to 15 minutes (be careful not to burn). 2.

In a large saucepan, over medium heat melt the butter and sauté the celery and onions until soft and transparent, but not coloured. Add the dried bread to the onions and celery, stir well.

Pour chicken stock over the mixture and stir with a spatula until all the stock is absorbed. Let cool.

4.

Combine pork and veal with cold bread mixture. Mix eggs and cream in a small bowl and pour over the stuffing. Season with salt, poultry seasoning, pepper and mace.

Add the chopped parsley and chestnuts and mix well. Place mixture into a greased 13x9-inch baking dish, cover with aluminum foil, and cook in bain-marie (a water bath) in a 375F oven for 50 minutes. Remove foil and cook for 10 minutes or until the stuffing is a light golden colour on top. Serves 10.

MO: I’d start you off with our goat cheese wrapped with prosciutto (served with baby salad greens, trio pepper confit and raspberry dressing). For the main course, I’d go with our pumpkin seed crusted sea bass (served with a tempura vegetable roll, avocado purée, pea and coriander broth). For dessert, our banana cream pie is the perfect choice. Sounds Delicious! Let’s hear about the North’s signature items. MO: Diners go crazy for our rack of lamb, sea bass, calamari, sushi roll and our prosciutto. Truth is, I’d like to get rid of some of these menu items because I’ve been cooking them for so long. However, there would be a revolt if I took them off [laughs]. Creating a diverse and ever-changing menu has been something you’ve always excelled at. Why is this important to you? MO: My passion for cooking hasn’t waned even slightly over the years. I love change, new culinary challenges and learning about various cooking techniques. You’re quite the social butterfly. Even during offhours, this place is always chock-full of visitors dropping in to grab a coffee and chat with you.

MO: It’s true. Friends drop in and out of this place all day long. People come to me because I work so much and don’t have a chance to get out very often. This is basically my home and friends are always welcome. Besides the North, what’s your favourite restaurant? MO: Truth is, I don’t dine out very often because this place keeps me busy. However, I’m a fan of Toronto chef Claudio Aprile. He just closed down his Toronto eatery Colborne Lane in February to focus on his growing line of Origin restaurants. I also admire chef Susur Lee, who has just started up a new restaurant in New York City. What do you cook at home? MO: The fridge at the North is always stocked so we eat here most nights. Kortney loves pasta, so we eat lots of pasta dishes and fresh salads. My personal favourite is spaghetti, aglio, olio e peperoncino (spaghetti with garlic, red peppers and olive oil). What’s your favourite bottle of wine? MO: I enjoy the 2005 Clos de los Siete. From the Mendoza region in Argentina, it’s a fullbodied red with plenty of depth and flavour. What’s your philosophy on service? MO: People work hard all week for their money so when they go out for dinner they should be treated like royalty. I encourage our diners to speak up if something isn’t perfect. That way, we can fix it and guests will always leave happy. How do you cater to diners with special dietary restrictions? MO: No problem at all. We are very open to preparing special dishes and take allergies and dietary restrictions very seriously. Just come into the kitchen and tell me what you want. If we have the ingredients in-house, we will gladly make it up for you. This open policy

Once native to the Niagara region, Ontario wineries are popping up closer to home. From Grey and Bruce Counties to Muskoka, there are several local cellars worth discovering. Along with wines, many producers are also bottling hard ciders made from local apples and pears. Here are three wineries worth visiting:

HOITY TOITY CELLARS “Wines are often considered snobby and intimidating,” Making fun and approachable wines is Hoity Toity Cellar’s driving philosophy. “Wines are often considered snobby and intimidating,” explains Gary Fischer, who started the Mildmay-area winery in 2010 with his wife Diane. “We’re about having fun and making wines with a wide appeal.” Demystifying wines is reflected both in the cellar’s name ‘Hoity Toity’ and its products. Amusing bottle monikers such as Kicked out of the Country Club and Rusty Bling to Maid’s Night Off, give visitors a good chuckle. “There’s nothing fancy about us,” explains Fischer. “We’re just hardworking farmers making artisan wines and craft ciders.” Red, white and dessert wines are made from Bruce

County cold climate grapes, while Hoity Toity’s trendsetting ciders are made from local apples and pears. Along with daily complimentary tastings, the winery can host special events for up to 35 people. Impromptu tours can be accommodated, but calling ahead is recommended. “Visitors love the behind-the-scenes stuff,” chuckles the local winemaker. “Even if you are just washing out a barrel, they want to know what’s going on.” Looking to the holiday season, Hoity Toity Cellars will be a hub of activity. Along with daily tastings, specialty gift baskets filled with wines, ciders, chocolates and specialty cheeses will be available in the gift shop. Visitors are also invited to ski, hike or snowshoe along the Bruce County Rail Trail that borders the winery. Guests will also get a kick out of Elvira the sheep and her two wooly friends who serve as professional vine groomers, as well as the farm’s super friendly Australian Shepherds -- Nellie and Stella. With 12 products lining the shelves, Fischer recommends taking home a bottle or two of 66 Pickup, the cellar’s most popular hard cider. “We just won gold for it at an international cider competition in the United States,” quietly boasts Fischer. Why cider? “Hard cider is the hottest market going right now,” he explains. “The market is growing about 60 to 70 per cent per year right now, eclipsing both the wine and craft brewing industry.” On the wine front, Fischer suggests trying Belle of the Barn, a Frontenac rose for red. For white, he recommends Dusty White Glove, a crisp Frontenac gris. Hoity Toity wines and ciders can be purchased from the gift shop, or online. “We can ship a case of wine or cider pretty much anywhere in Ontario for about $20,” he explains. Open five days a week in November and December (closed Mondays and Tuesdays). Open Fridays and Saturdays from January to March. Hours vary, call ahead to confirm.

MUSKOKA LAKES WINERY When cranberry farmers Wendy Hogarth and her husband Murray Johnston started Muskoka Lakes Winery, they wanted to create a product that reflected the rugged beauty of the region. “Grapes don’t grow in Muskoka,” explains Hogarth. “But cranberries and other fruits do.” The Johnston family have been Bala cranberry growers for over half a century, and own and operate Johnston’s Cranberry Marsh. As crimson red fruit experts, they opened Muskoka Lakes Winery in 2001. Working only with fruit native to Muskoka, the winery now boasts a range of award-winning wines from dry to dessert. “We want you to taste what’s beautiful and unique about this area,” explains Hogarth. The Bala farm cultivates more than 11 hectares and produces about 137,000 kilograms of cranberries a year. “There is a misconception that all fruit wines are sweet,” explains Hogarth, who is also a sommelier. “They don’t have to be, it just depends on the fermentation process. They can be fullbodied or light, crisp and refreshing. You can

find a Muskoka wine for any occasion and all types of food.” The award-winning Muskoka Lakes Winery sells about 5,000 cases per year. The wines are available online, at the shop and in LCBO stores. Their flagship cranberry wine has a crisp, tart and fruity flavour. It makes the perfect pairing to turkey, ham or venison. “Even though our cranberry wine is our best seller, a close second is our cranberry-blueberry wine.” Visitors to Muskoka Lakes Winery can enjoy various activities including the bog to bottle experience which runs daily at 1 p.m. The guided farm tour takes visitors from the peat bog to a tutored wine tasting ($10 per person). For an extra cost, guests can sample an artisanal cheese tray. Guests can also rent a GPS to embark on a high-tech hidden treasure hunt at the farm. Additional entertainment highlights include: an art discovery tour, a kids’ trail and more. Holiday shoppers will enjoy touring the gift shop for Muskoka-themed gifts. Various cranberry preserves and goodies, wines, and local artisan wares are on offer. During the winter months, winery visitors can also rent snowshoes and tour 10-acres of trails. “It’s a real Muskoka experience,” says Hogarth. GEORGIAN HILLS VINEYARDS Robert Ketchin of Georgian Hills Vineyards is excited to be part of Georgian Bay’s emerging wine region. “For over a century, Beaver Valley apple farmers have been talking about a micro climate along the Georgian Bay shoreline that’s perfect for growing grapes,” explains Ketchin, who owns and operates Georgian Hills with partners Murray Puddicombe and John Ardiel. “Sooner or later, someone had to give it a try.” With its first commercial harvest in 2006, Georgian Hills is a trailblazer within the local wine industry. “The timing was right,” Ketchin explains. “The Blue Mountains has become a four seasons playground with a viable local

food and culinary industry. All that was missing was a wine region.” Visitors are invited to taste distinctive local wines and enjoy the beauty of the vineyards during all four seasons. The cottage style tasting room is situated on the winery farm at Victoria Corners. While enjoying a glass of wine, guests can take in the beautiful view of the vineyards, and the stunning hills and a glimpse of Georgian Bay. Starting this winter, groups of 30 people can be accommodated for tours and tastings. Various tasting options are available at the winery that grows 17-acres of grapes. Anything

Georgian Hills focuses on the cool climate grape varieties of northern Europe that have proven to be hardy and make outstanding wine. The local cellar offers a full range of locally grown white, rosé, red and dessert wines. “Our wines are delicate, fruit driven with good acidity and light tannins. We are known for our delicious sweet wines.” Signature wines at Georgian Hills include Riesling, Seyval Blanc, Gamay Rose and Marechal Foch. Wines can be purchased at the cellar door and online. Seyval Blanc is available at select LCBO locations. “If a customer is to leave with just one bottle, I would recommend Seyval Blanc because it’s what nature does best every year,” suggests Ketchin. Winter is a great time to visit the winery. “We have plenty going on,” he explains. Starting in November, the tasting bar will focus on serving wines best suited to festive entertaining. Gift packages will be available for purchase. Guests are also invited to snowshoe or cross-country ski along the vineyard’s trails.

Timber framing, often referred to as post and beam construction, involves more posts and fewer walls allowing for more open spaces. Knowing this, Andrew Fairweather didn’t have to think twice about doubling the size of his Blue Mountains chalet. Fairweather, owner of Simcoe Property Services Inc., is no stranger to timber frame construction. Having done a number of major renovations in the Georgian Bay area using this craftsman’s approach, he was ready to bring this sophisticated style to his own cottage. The heavy Sapele hardwood double-door entrance, finished locally by a Mennonite craftsman in Desboro, leads you into the Fairweather family’s elegant abode. Raised a level directly above the foyer, the open-concept kitchen is wrapped with timber and pine woodwork. Dividing the house into two sides, the custom kitchen is built right in the middle with the highest quality of finishing touches. Gleaming white Caesarstone countertops contrast well with the dark stained cabinets and highlight the modern marble stone backsplash. The oversized island is perfect for casually entertaining a large group of people. “We wanted it to be quite the party place to accommodate multiple people doing different things at

It’s open-concept with enough spaces for privacy. To the right, a more formal dining space is open to the living room beneath the two-storey high cathedral ceiling. Neutral drapes are used to complement the interior décor without obstructing the spectacular outdoor scenery. A view of the mountains is seen through the windows that wraparound either side of the living room’s two-storey wood burning fireplace. “We can easily check out skiing conditions before heading out,” said Fairweather. For every one of the three fireplaces, Owen Sound Ledgerock stone was used. But to introduce some design variety, different stone surround techniques were used for each one, creating architectural interest while connecting the overall style around the cottage. In the living, it was done as a dry-stack – a technique that doesn’t involve mortar – that helps bring a very natural outdoors look into the house. In fact, this technique is often used in landscaping to create an “always been there” effect. It simply looks like the pieces were natural stacked one on top of the other. For quiet and privacy, the luxurious master bedroom is tucked away from this stunning open space. Here, the stone around the gas fireplace, located right across from the bed, is done as a veneer. This brings a clean, modern look to the fireplace complementing the rest of the suite. The modern spa-like ensuite bathroom includes a rain shower surrounded with glossy white pun tiles from Ceragres in Toronto. This spacious getaway suite is perfect for relaxation time away from all the other bedrooms. Earth tones used all around bring lots of warmth and coziness to the Fairweathers’ getaway home. The light stained maple wood flooring in the master suite and the great room, contrasts beautifully with the dark grey walls in the master and the taupe hues in the living area.

For added convenience, a built-in wet bar is located steps from the billiard table, ideal for serving drinks while entertaining. On the other side of the kitchen, the grandest and newest addition to the house is constructed completely with timber framing, done by The Great Lakes Frame Company of Owen Sound. This space was done as a full timber frame hand smith unit without any mechanical hanging brackets, said Fairweather. “The great thing about timber framing is that it allows for vast open spaces,” he said, referring to the lack of any load-bearing walls in the space. The flawless lounge space includes a custom U-shaped sectional sofa wrapped around the oversized wood-burning fireplace, below the wall-mounted television. The Owen Sound Ledgerock surround here is a fully mortared stonewall. It’s elegant and picture-perfect for the space. Working with the iron spindles in the stair railings, the spiral rod iron and candle chandelier adds a subtle country style to the space. This also helps balance the similar style rectangle pillar candle chandelier that hangs above the dining table, on the other end of the main floor. In the corner looking out to the backyard,

“The great thing about timber framing is that it allows for vast open spaces,” a leather wingback lounge chair and footstool wait for the next reader to sit, read and enjoy the peace. On the opposite corner, a desk and a chair look out to the mountains; perfect for getting work done while enjoying the outdoors scenery. Adding true elegance to this recreational space, Fairweather bought a unique billiard table that was in a Florida mansion for 70 years. “It’s a handmade solid walnut pool table; one of two ever made in 1926 before the Great Depression,” he said. For added convenience, a built-in wet bar is located steps from the billiard table, ideal for serving drinks while entertaining. Across from this spacious area, there’s the forth and best bathroom in the house. This spa-like bathroom includes a silent soaker tub. The tub’s motor was placed in the garage to allow for complete

serenity while in use, he said. From either ends of the kitchen there are two covered decks, great for entertaining guests outside in the warmer months. The view of the mountains from here is spectacular. And with the large evergreens surrounding the property line, privacy is guaranteed. Tucked away in the basement, there are three more bedrooms ideal for the children or the family’s guests. There are also two full bathrooms and a laundry room with plenty of storage space. I love the savoury dishes, roast birds, and of course, the gingerbread and shorbread. But while Christmas dinner carries a lot of tradition, it can’t hurt to mix things up and create some new festive dishes that will quickly become your family’s favourites. At our table, there was always something new along with the traditional recipes. Whether it was mint in the peas, a cheese souflée, or a

crust-less pumpkin pie it was always a meal to be remembered. Simply changing the type of fowl served can be a wonderful way to update your holiday menu. There are many different varieties of birds readily available, whether at the farm gate or at the butcher. Cornish hens are a great choice as they are quick to cook and beautiful to serve whole on a platter. Roast Acorn Squash INGREDIENTS:

3 acorn squash

1. Slice the acorn squash in rings approx. 3/4 in thick. Cut out the seeds in the middle. Place in a large bowl and add enough olive oil to coat the rings. Sprinkle with salt and pepper.

Cook over medium high heat, uncovered, until all the liquid has evaporated.

1. Preheat the oven to 350 F. Butter a 9x13-inch casserole pan. 2. Heat the brandy in a small saucepan. When almost boiling, take off the heat and add the cranberries to soak.

ingreDients: 12 cups of sourdough bread (cut into 1” cubes) 3 onions, diced 3 stalks celery, diced ½ cup butter plus 4 tbsp 1 tbsp finely chopped fresh sage 2 tbsp fresh thyme 3-4 mild Italian or Farmer’s sausage ½ cup dried cranberries ½ cup Martini Rosso or Grand Marnier 2 cups chicken stock Salt and pepper

3. In a large sauté pan, melt the ½ cup of butter and add vegetables. Sauté over medium heat till they start to caramelize. Add the fresh herbs and saute for 1 min. Set vegetables aside. 4. Take the sausage meat out of the casing and sauté over medium high heat until cooked through (about 6 mins). 5. In a very large bowl, combine the bread, vegetables, sausage and cranberries. Toss until evenly distributed. Add the stock to moisten the bread. 6. Turn out into the prepared pan. Dice the remaining 4 tbsp of butter and sprinkle on top of the stuffing. 7. Bake for 30 mins.

Mascarpone Mashed Potatoes with Cracked Black Pepper ingreDients: 3 lbs Yukon gold potatoes 1 ½ cups mascarpone Olive oil Kosher salt Cracked black pepper

MethoD: 1. Peel and chop potatoes into quarters. Place in a pot and cover with cold salted water. Cover and bring to a boil, reduce to a simmer and cook until tender. 2. Strain the potatoes and place back in the pot. Mash the potatoes and then add the mascarpone. Mash together and loosen with olive oil until you reach your desired consistency. Season with a lot of cracked black pepper and salt. 3. Spoon into a serving dish and garnish with coarse cracked black pepper, then drizzle with a high-quality extra virgin olive oil.

Hidden away in a 135-year-old schoolhouse in the village of Craighurst lies a one-of-akind gallery operated by a one-of-a-kind artist. Hartley Woodside is the owner of Woodside Pottery and Gallery Craighurst.

The Oro-Medonte resident hadn’t planned on being an artist when he grew up, but a run-in with clay changed everything. “Until I met clay, my appreciation for the arts was largely as a spectator. I did a little life drawing at university. Almost at first contact with clay, I was smitten,” he said. “Clay became a passion. Malleable and expressive yet capable of being frozen in time, clay is a material of transformation and what can be more compelling than that?” Woodside was attracted to the Bauhaus tradition in design, which aimed to marry contemporary arts with everyday living by creating useful and beautiful objects. “It was natural for me to want to create functional objects. To do this I attended the pottery program at Georgian College, then run by Roger Kerslake,” he said. “This was considered the best place in the province to study functional pottery.”

Woodside said it was always his intention to create pottery for the local area, and he’s accomplished his goal. “It is reassuring that the work remains interesting into the third generation; in other words, the children and grandchildren of some of my earliest customers continue to like and purchase the work.” Woodside makes his creations during the quiet moments at the studio, usually at night. “I work in cycles. I build for a couple of weeks, glaze and fire over a week or so, take a bit of time to recover and start again. I am inspired by texture, atmosphere, the unexpected, ideas, honesty, the natural world, simplicity, complexity and just feeling alive.” Aside from pottery, Woodside has dabbled in printmaking, with mono printing having a big influence on his idea of surface treatment in his pottery. Woodside shows mainly out of his own gallery, Gallery Craighurst. “The gallery grew out of a desire to exhibit more work, in other media. After purchasing the building in 1999, I was able to expand my exhibition space,” he said.

The gallery regularly hosts exhibitions of regional and now artists from around the world on a regular basis. Over the years, Woodside and his assistant Robyn Pottage have enlarged the roster, recently adding artists from Kenya and Uganda. “We recently have undertaken to sell Ugandan handicraft in support of Thrive, a small local charity which supports families in Uganda with a micro loan type program and other initiatives,” he said. Most visitors are surprised to learn that Bermuda has world class shopping and restaurants appealing to the most discriminate of tastes. The flight into Bermuda is unlike any other window-seat experience. As the plane begins its descent, your eyes become fixated on the mesmerizing waters – an exquisite shade of turquoise highlighted by the beautiful coral reefs that cast deep shadows in the water. Regardless of how many visits back to this magnificent Island I make, the experience transfixes me every time. Once landed, the traveller is greeted by local musicians hard at work, pumping out the rhythmic, heart-thumping sounds of calypso music. The music, together with the scent of fresh air and vibrant sunshine, truly captures the essence of Bermuda and announces ‘paradise’ to all your senses. Growing up on the Island, I actually thought that everyone must live in this type of paradise,

with warm weather, friendly people and a slow pace. It was not until I got older, and lived in the big cities of London, New York, Sydney and Toronto that I came to realize Bermuda is as Hubert Smith’s Bermuda Calypso says, “another world.” The type of world I herald to my friends and readers so that they too can enjoy the colourful history and contrasts that make up this fantastic island. My ancestors first settled on the island in 1612 roughly 85 years after Bermuda was first discovered in 1505 by the renowned Spanish explorer Juan de Bermudez, an experienced seaman, who had been a crew member on the “Pinta” during Cristobel Colon’s epic voyage of 1492 to the Americas. 2012 marks the 400th


anniversary of the settlement of Bermuda. What better time to revisit the island I call home. While nothing is known of his encounter with Bermuda in 1505, Bermudez returned again in 1515, accompanied by the chronicler Oviedo y Valdes. Oviedo’s account of the second visit, published in 1526, records that they made no attempt to land because of the inclement weather at the time. Bermuda remained uninhabited until 1609 when Sir George Somers on board the “Sea Venture” was shipwrecked by Bermuda’s reefs. Somers managed to land all 150 crew and colonists on the uninhabited islands, without the loss of a single life. The shipwrecked sailors were stranded on the islands for ten months while they built two new small ships to replace their wrecked ship. By 1610, Somers managed to construct the “Deliverance” and the “Patience” and set sail from Bermuda for Jamestown. Three men, however, elected to stay behind in Bermuda. Those who sailed on to continue their journey to Virginia wrote such glowing reports about the island that in 1612 more permanent settlers arrived from England (including my great-great-great ... well, you get the idea). The first settlers’ account of the islands hailed the ‘pink’ beaches created through the unsuspecting help of a tiny single-celled animal called Red Forams. Living under the coral reef, their red exoskeletons mix with the white sand and broken seashells, creating the dynamic pink tinge or hue found on every shore. Despite all my world travels, I have never laid eyes on beaches as beautiful as those in Bermuda. My recent stay on the island afforded me the opportunity to stay at one of Bermuda’s most prestigious hotels, the iconic Pink Beach Club. Located in Tucker’s Town (home to the likes of Ross Perot, Michael Bloomberg and former Italian Prime Minister Silvio Berlusconi), this phenomenal property is one of elegance and class. It is a rare case of old-world Bermudian hospitality, a radiance of charm not always found in today’s cookie-cutter tourist destinations. Pink Beach Club & Cottages boasts not one, but two of the pink coral sand beaches Bermuda is famous for. The main beach is a quick walk from guestrooms. Outside of the hotel, I still play tourist and rent a moped for excursions that take me around the island. Although a horse and carriage is still available, it’s on the scooter that you can best appreciate the passing landscapes. The train that once ventured across the island is long gone, but its tracks have been converted into popular bicycle paths for a slower paced scenic route. For those of you not wanting to navigate yourselves, taxi tours and the more economical buses are readily available. Amber Fort, a beautiful complex of palaces, halls, pavilions, gardens and temples, was built by Raja Man Singh over a period of two centuries. Approachable only via a steep path, we opted for the elephant option and enjoyed the once in a lifetime experience of riding an elephant into an Indian Fort. The City Palace, which boasts the title of former royal residence, was built in the centre of the old city. Its carved arches are supported by grey-white marble columns with ornate floral motifs in gold and coloured stones. Guarding the entrance are two elephants carved entirely from marble. Guides of the city are known as retainers and are descendants of families who have served generations of rulers. After an amazing trip back in time we headed directly west to the Kingdom of Jodhpur. Ruled by the powerful Rathores, Johdpur’s Mehrangarh Fort is the setting of Kipling’s The Jungle

Curb appeal On an early fall evening, seated at one long table were 150 fortunate local diners, invited to take part in Curb Appeal ... The first event of its kind illustrated the magic that can happen when five of the finest local restaurants gather to present a decadent five-course meal with wine pairings outdoors in Downtown Barrie. What took place was an impromptu event that was an exciting and fun-filled evening with conversations among friends and strangers, who were sharing their stories, laughing, eating great food and drinking perfectly paired wines. In the background was an acoustic performance by Bob Charters providing a casual yet elegant atmosphere. Organizer Craig Stevens’ vision came to life when the chefs from The North, The Farmhouse, Groovy Tuesdays, Painter’s Hall and Michael & Marion’s graciously collaborated to create a culinary dream team that wowed and delighted the discerning palates of the guests. This event is expected to take place again showcasing another area of the downtown core. Proceeds from each event will be invested into a permanent piece of ‘curb appeal’ whether it is new flowers, banners, art installation or other.
