A Song in Our Heart

I’ve written a lot in this space about the impact America’s Got Talent has had on the Las Vegas entertainment scene. Indeed, no fewer than eight current Strip performers got their start on the NBC reality competition. But I don’t talk much about American Idol, and I really, really should. Over the years, many Idol contestants have performed here, whether they won or lost the ABC competition show, including Adam Lambert, Jennifer Hudson and Kelly Clarkson. So this week’s editor’s note space is dedicated to all those Idol singers who over the decades have brightened Las Vegas’ entertainment scene— and will likely continue to do so. One of Idol ’s biggest stars, season four winner Carrie Underwood, is this week’s cover story, and for good reason: She’s about to conclude what has been one of the most successful Strip residencies in the city’s history at Resorts World Las Vegas. Delicate Flavors

Experience this worldwide brand’s celebrated Asian cuisine, décor and service on the Strip

If you are looking for an exceptional Chinese meal, then scoring a reservation at Mr Chow should be a priority.

The popular Caesars Palace restaurant, with locations from London to Beverly Hills, opened in 2016 to wide acclaim for both its mix of Beijing-inspired menu items and its elegant décor. That décor is capped by a suspended kinetic sculpture designed by the founder of Mr Chow, Michael Chow, an iconic figure who dabbled in many industries from food to film throughout his career.

At Mr Chow, begin with cocktails and signature starters such as the Chow-Lini, crafted with G.H.Mumm champagne and house -made peach foam, and the Mr Chow’s chicken satay, which has been a signature item at the restaurants for decades. Other items to consider include prawn toast with gambei and the turnip puff with ham, a longtime specialty of the house. The restaurant is also known for its noodle dishes, such as vermicelli with lobster, squid ink noodles, Shanghai Little Dragon soup dumplings and Mr Chow noodles, which were introduced at the first London venue in 1968.

After you’ve checked out the first course and noodle sections of the menu, cast your eyes on the entrée section of the menu, cunningly named “Of Course.” Some of the more intriguing items include Ma Mignon, another classic recipe dating from the ’70s, the Gamblers duck with plum sauce and steamed pancakes, Chicken Joanna and dressed Dungeness crab, served off the shell in a poof of egg whites. The Emperors Crab gets a mini story on the menu: “Once upon a time an Emperor of China insisted on having fresh crab out of season. Therefore we use sea bass ...” Several of the dishes on the menu can also be created in a vegetarian version, so be on the lookout for those.

Throughout the menu you’ll see several references to green prawns as well. The restaurants were so well known for green prawn dishes that artist Keith Haring famously painted Chow as a green prawn. On the Caesars Palace menu, you’ll not only find green prawns in the appetizers, but also as a main dish. Try it, and you might be tasting history. –Nina King

Let Him Be Your Wings

Forget your cares and worries at this iconic entertainer’s long-running residency

Barry Manilow never met Elvis Presley, but he did stay in the original Elvis Suite when Westgate Las Vegas was The Hilton. “It was an older suite, but it was huge,” Manilow told Las Vegas Magazine in an exclusive interview. “It was the entire floor, the entire 30th floor, so I did get a sense of where he actually stayed when he was there.”

The 30th floor was remodeled shortly after Manilow’s Hilton 1985 debut. He stays in the current Elvis Suite when he flies into Vegas for his Barry Manilow: The Hits Come Home shows. For Manilow, it was love at first sight when he saw the stage where The King reigned for 636 shows (last year, Manilow broke Presley’s record at the property). Arenas enable him to take his music to the masses, but he considers the stage and audience capacity at the International Theater perfect for what he does.

“I like traveling into the audience,” said Manilow. “I have trouble being as intimate as I want to be with an arena. It’s fun and it’s exciting, but it’s a whole different kind of feeling than the Westgate. The Westgate is the perfect room for me. Out of all the rooms that I’ve ever played, this is the one for me. If I was building one for myself, this is the size I would have built.”

Anyone who’s witnessed Manilow perform “Copacabana” at the venue would agree, as set design and a flight of stair allow Manilow to perform above the audience as he sings of music, passion and fashion. It’s a place where Fanilows the world over can make a pilgrimage to their favorite singer, where songs transport them to happier times and longtime fans dance as if the decades since “Daybreak” never happened. “These people are so happy, and they’re all ages,” said Manilow. “That’s why I still do it. Everything changed because I realized that’s why I’m on that stage. That’s why I’m there. It’s to make them feel great. It’s to make them forget their cancer and their divorces, and if they lost their job.” Mission accomplished, sir. –Matt Kelemen

The Best of the Rest

Brand-new tournament promises plenty of college hoops excitement

As exciting as March Madness is, let’s face it: There’s always going to be some fans disappointed their teams didn’t make it into the NCAA tournament, despite having good or even great records. But for the first time ever, something is being done to make some of those fans feel a bit better: The College Basketball Crown, which features 16 teams that failed to qualify.

The seven-day tournament, which is being held at both MGM Grand Garden Arena and T-Mobile Arena, features two automatic qualifiers from each of the Big East, Big Ten and Big 12 conferences, as well as 10 at-large teams (all currently to be determined). It’s a welcome addition to what’s already an action-packed college basketball preseason.

The schedule is as follows:

At MGM Grand Garden Arena:

March 31—Session 1 is at noon and 2:30 p.m.; session 2 is at 5:30 p.m. and 8 p.m.

April 1—Session 1 is at noon and 2:30 p.m.; session 2 is at 5:30 p.m. and 8 p.m.

April 2—Quarterfinal 1 is at 4 p.m. and 6:30 p.m.

April 3—Quarterfinal 2 is at 4 p.m. and 6:30 p.m.

At T-Mobile Arena:

April 5—Game 1 of the semifinals starts at 10:30 a.m.; game 2 starts at 1 p.m.

Celebrity chef’s seventh Strip restaurant delivers all-new burgers unique to the new location

Possibly one of the most beloved celebrity chefs ever, Gordon Ramsay recently opened yet another Strip outpost, Gordon Ramsay Burger at Flamingo, expanding his Vegas empire to seven restaurants. You may have already had an incredible meal at Gordon Ramsay Burger at Planet Hollywood, but you’ll still need to nosh at the new venue, as it offers fabulous ambience and all-new dishes that are unique to this location.

Start your meal with the creamy and delicious street corn dip. Made with jalapeños, Fresno peppers, cotija cheese, Parmesan, lime and cilantro, and served with corn chips, this app conjures all the yumminess of elote, but with an extra kick from the Fresno peppers.

Of course, you can get a few variations on the standard burger here, including the Backyard Burger with American cheese and the works or the Viva Vegas Burger, a plant-based version, but the specialties are where Ramsay’s creativity really shows. Order the Idiot Burger to savor braised short rib, Gruyère, cheddar, roasted mushrooms and spicy tomato chutney on a fluffy brioche bun.

If beef isn’t the vibe, try the Cluck Yeah G.F.C. Sandwich and indulge in the über-umami version of a standard fried chicken sandwich. Find crispy, golden fried chicken, tangy pickled red onions, crunchy red cabbage slaw and G.F.C. sauce sandwiched between a pretty, pink brioche bun.

You might think this is the perfect spot to hit up before a night of revelry, which it is, but you also need to stop in the morning after for a brunch burger like none other. Order the Full English Breakfast Burger for a stacked take on the traditional meal, piled high with an English banger patty, bacon, mushrooms, a fried egg, roasted tomato and baked beans, topped with HP sauce.

See the city and its surrounding sights from the skies

Some of the most breathtaking attractions in Las Vegas have been around a long time (some a lot longer than others), and you can take in those sights with a view from above. Just like a fine cocktail that should be savored, the popular Mixology Masterclass at The Cabinet of Curiosities at Horseshoe Las Vegas takes the time to be enjoyed. It all begins inside The Cabinet of Curiosities, the main lounge where “students” gather before stepping through a giant door shaped like the entrance to a safe. Once inside the safe, as a team, you have to solve the riddles to gain access to The Lock, the hidden speakeasy. Once inside The Lock—a dimly lit, beautifully decorated, inti-

mate room with Prohibition-era vibes— everyone takes a seat at the bar. Put on your special apron, which you get to keep, and in front of each seat are all the tools you need for class: shaker tin, jigger, muddler, Hawthorne strainer, bar spoon and more. Don’t worry, part of the class is being schooled on what each one is used for and how to properly use them.

don’t bruise the alcohol, the difference in the types of ice, how to double strain a cocktail, how to properly shake and pour a cocktail, how to release the oils in herbs, what the difference is between juices, syrups and elixirs, how to activate the sugars in dehydrated fruit resulting in more caramelly flavors ... the list just goes on and on.

Bartender has some cool stories and recipes to share

Not a lot of people can say they’ve created a drink special for Taylor Swift and then named it after her. Tahomar Gil can!

As a bartender at Easy’s Cocktail Lounge at Aria, he served Swift, who asked for a Cosmopolitan. He replied with, “Do you mind if I make you a variation of the Cosmopolitan?” Three cocktails later, Gil had put a smile on Swift’s face, and a new cocktail was added to the Easy’s menu, the Tay-Tini.

That’s just one of the stories Gil has;

he’s been in the bartending industry for more than two decades (and with Easy’s since it opened in 2023), so he’s loaded up on stories and cocktail knowledge to boot. “It’s the same idea as cooking; it’s an art form,” Gil says, who was originally in school to become a chef. “Creating craft cocktails is about putting your touch on it, playing around with ingredients, making the perfect balance of flavors—it’s so similar to cooking. It’s just a really fun job.”

When Gil is not on the job at the “swanky, intimate speakeasy with live performances,” he’s enjoying his other loves—his two daughters and wife, surfing, snowboarding and running his martial arts kids program, Cobra Kai Jiu Jitsu (he’s a black belt!). “I’m always trying to grow, whether it’s bartending or my hobbies,” he says. New Netflix Bites restaurant draws inspiration from the streaming service

It’s kitschy, it’s fun and it’s legit good food. The new pop-up restaurant, Netflix Bites at MGM Grand, is a meal with meaning—meaning, if you’re a true fan of the streaming service, you’ll have a good time exploring dishes, desserts and drinks inspired by some of its most bingeable shows.

You can’t miss the entrance to this already hot spot, thanks to its glowing, red façade, reminiscent of the opening credits of (what’s arguably Netflix’s most popular show) Stranger Things. Speaking of Stranger Things, the menu is packed with goodies inspired by the show like Eleven’s Feast, featuring chicken sandwiched betweeen tiny waffles and served with wa e fries (shout out to Eggo!). The Stranger Wings are nice and crisp, but made better, nay, will “turn taste buds upside down,” with your choice of flavorings like bu alo sauce, lemon pepper dry rub or barbecue sauce. You also can’t miss the Surfer Boy Pizza section of the menu (shout out to Argyle, dudes!) with pies like Hellfire Honey, a hot honey pan pizza and the Plain Jane Cheese Pizza with fresh mozzarella, tomato sauce and grated Romano. Pair the dishes with The Mind Flayer cocktail and slip into tipsiness with its blend of Maker’s Mark, lemon juice, blackberries,

St-Germain, Gi ard crème de mure, ginger syrup and a lightning-like cotton candy cloud.

Some would arguably say that Squid Games is the most popular Netflix show, and fans are in luck with interactive bites and sips based on the Korean thriller. Start with the dessertlike cocktail Dalgona Rum Buzz, a mix of Bacardi Superior rum, Myers’s Original Dark rum, Frangelico, honey, oat milk and a unique co ee foam. The garnish is, you guessed it, inspired by the dalgona game episode,

Carrie Underwood’s ‘Reflection’ residency ends its successful run on a high note

It’s very fitting that Carrie Underwood’s Reflection residency is coming to an end after she joined American Idol as a judge for Season 23 of the talent competition series. After all, that’s the show that started it all.

“The timing did work out beautifully as Idol came together,” said Underwood in a March email interview. “It’s a bit of a full-circle moment for me in a number of ways, given that the Reflection show is really a celebration of my career so far, which I owe so much of to American Idol. And similar to the residency, the Idol schedule is spread out over time, so neither meant being away from home for too long at one time.”

Aziz Ansari hits the stand-up circuit during the biggest year of his career

The pressure is on Aziz Ansari—or should be. With production wrapped on his feature film directorial debut, Good Fortune (and a release date set for October), Ansari had some flexible time before the film’s publicity campaign is in full swing. He put it to good use, scheduling his Hypothetical tour and keeping his mind on stand-up comedy before his future is determined by success at the box office. Never has so much been riding on his shoulders.

It’s been three years since his

last Netflix special, Nightclub Comedian, and more than a decade since he performed before 12,000 people at Madison Square Garden for an hourlong special on the streaming service. Ansari’s career was red hot at the time, with the end of his seven-season run on NBC’s Parks and Recreation giving way to the beginning of Netflix series Master of None Ansari, who turned 42 in February, won two Emmys for writing and a Golden Globe for acting in

dia’s Tamil Nadu state, Ansari expanded his comic chops performing improv with Upright Citizens Brigade and collaborating on MTV sketch comedy series Human Giant before being drafted for Parks and Recreation. His chemistry with costars such as Upright founder Amy Poehler helped secure that show’s success and put restrictions on capitalizing on his celebrity with comedy tours.

He’s making up for it now. The 32-city Hypothetical tour began in Kansas City, Mo., and takes Ansari to venues such as Ryman Auditorium in Nashville and Radio City Music Hall before ending April 19 in Boston. His current relationship, current events and pop culture give him a fertile field to cultivate new material from as he reconnects with audiences who discovered Ansari at various points along his quarter-century comedy career.

Good Fortune stars Keanu Reeves as a ne’er-do-well angel who tries to prove himself worthy of his wings as he encounters mortals played by Seth Rogan and Keke Palmer. The actors were set to star in Ansari’s previous directorial debut Being Mortal before production on that film was suspended, but Palmer has expressed being involved should the cameras start rolling on that film again.

That depends on Good Fortune’s net profits, which depends on several factors: Reeves’ box office mojo, competition from other films, influencer approval and, of course, if Ansari is a comedy jack of all trades.

Last fall, Bellagio celebrated its 25th year on the Las Vegas Strip. In honor of the momentous occasion, Las Vegas Magazine highlights one of the resort’s most iconic offerings, the Fountains of Bellagio. It’s one of the most stunning attractions on the Strip, but it doesn’t just happen. The fountains have a crackerjack team working behind the scenes, 365 days a year, to ensure that the watery spectacle continues to flow beautifully after more than two decades. We went beyond the façade and captured the inner workings of the fountains—an operation that few are privy to.

Dozens of employees work on the fountains, including engineers, pool specialists and maintenance divers—and each employee is scuba-certified and holds Open Water Diver or Rescue Diver certifications. Get to know three of those employees, who have all been with the Bellagio since day one. You’ll also get a peek of the support area, where the equipment and mechanics for the fountains are stored. It’s a cavernous space just off the 8.5-acre Lake Bellagio that continues underneath the hotel. The inside look continues with the bat cave, compression room and the control tower.

No, I started at Bellagio as a security officer, but my dream was to work at the Bellagio fountains.

What was it like working for Bellagio when it first opened? It felt so amazing working for such a high-end resort and casino.

What does your current job entail?

I ensure our fountain technicians have the right tools to make the necessary repairs of all the lake equipment.

How often do the parts for the fountains need to be replaced or upgraded?

Having over 1,200 devices, we are constantly replacing parts that are broken or potentially worn out. Our goal is to ensure everything works perfectly at all times.

What are some of the most important things you need to remember when operating the fountains?

Safety is always most important to us. Beyond that, we make sure the fountains

look good and run perfectly for the many visitors that come to watch them.

How many dives would you say you’ve done?

Over 2,500 dives.

What do you love most about your job?

We are always working on something different; no two days are the same. One day we may be diving, another day working on shows, another day working with film crews for movies or commercials that feature the fountains.

What are some of the best parts about working for Bellagio?

We are always working with new exciting projects, film shoots and events.

What was it like when Bellagio fi rst opened? It was great. I loved working during the construction of Bellagio, especially when they fi lled the lake with water. I used to drive my personal vehicle in the lake before they fi lled it up, which is such an awesome memory to have.

What does your current job entail?

I handle daily fountain maintenance. I do everything from working on lights to diving and repairing pipes and structures. I also rig and drive a forklift, booms and scissor lifts for the Conservatory.

Working here has been the greatest job. I get to meet so many incredible people, from the people we work with to build structures on the lake, to singers and athletes who work with the fountains, to my day-to-day colleagues.

What do you love about living in Las Vegas?

Working on the world-famous fountains is a huge plus. I love that Las Vegas is a 24-hour town and much smaller than Los Angeles!

This is where the magic happens. The main computers that control the lighting, sound and performance numbers are located in this tower. Here is also where you’ll fi nd the “famous” green button. At the top of the tower, accessible only by ladder, workstations command awesome views overlooking the lake. Each choreographed show is stored on computers. To start a new show, the fi le is uploaded and the green button initiates the fountains—a button only a handful of people have pushed, including this writer!

What’s the best part about working for Bellagio?

The people I work with. I have the honor to work with some of the most talented people!

It kind of felt like the fi rst day of school. You don’t know anyone, you get lost easily and you’re trying to make a good impression, but everyone is excited for what’s to come.

What does your current job entail?

I work to maintain the tens of thousands of components that are in the lake. I handle proactive maintenance—fi x it before it breaks. I adjust and calibrate the devices that you see during a show.

How many dives would you say you’ve done?

Well, I dive every day and I’ve been doing this for close to 20 years, so I have done a lot of dives!

What do you love most

about your job?

That it doesn’t feel like a job. Every day is like a box of chocolates!

What do you love about living in Las Vegas?

I love the heat and how I don’t have to wear a raincoat or shovel snow or

It’s so loud inside the compressor room that one is advised to wear industrial-strength earmu s. Inside this room sits two of the large compressors (of 10 total) used in the show. The compressors operate at about 3,000 horsepower and push through approximately 9,000 cubic feet of air per minute. Large storage tanks of soft water, used for the fog that drifts across the lake, are also in this room. The ground fault circuit interrupter (GFCI) panel that protects people and equipment is also here. The panel shuts down all the electricity on the lake in the event of an emergency or electrocution, reacting faster than the blink of an eye.

Inside the bat cave, located in the front features support area, is where you’ll fi nd the water-emitting devices. Workers clean and repair all of them in-house. The devices include three shooters of di erent sizes that push water straight into the air at varying heights. The mini shooter (798 total) goes 100 feet up, the super shooter (192 total) goes 240 feet up and the extreme shooter (16 total) goes 460 feet up. The oarsmen (at top of photo column) spray water—this is where the “dancing fountains” come into play. There are 208 in the lake and 13 spares.

Smokey Robinson brings one of music’s most impressive catalogs to the Strip

If there was one lyric placed in a time capsule for future generations to stumble upon and discover everything pop music was capable of in the second half of the 20th Century, Smokey Robinson might be its author. Exhibit

A: “If you feel like giving me/ A lifetime of devotion/ I second that emotion.” What more needs to be said about love in a song?

That’s just the tip of the iceberg of the creative force who shaped the way music would be composed, recorded and listened to. Robinson, 85, was a type-A Detroit schoolkid with a penchant for writing lyrics before his talent and expressive tenor were recognized by Motown founder Berry Gordy. He wrote hits for other artists, from “My Guy” by Mary Wells to “My Girl” by the Temptations, while performing with The Miracles.

That group featured his future wife Claudette when it had its break-

through No. 1 single in 1960 with “Shop Around.” Her voice can be heard prominently in songs such as 1962’s “You Really Got a Hold on Me,” but she retired from touring after both Robinsons suffered health issues and alternated leading the band on the road for a time. The Miracles appeared as an all-male quartet with deft dance moves in most of their ’60s television appearances, changing their name to Smokey Robinson and The Miracles in 1965.

Robinson went solo in the ’70s, with 1975 album A Quiet Storm inspiring a smooth R&B radio format that grew in the 1980s. He didn’t have a major hit after leaving The Miracles until 1979’s “Cruisin’” set the stage for more visibility the following decade. Robinson scored big with 1981’s “Being with You” and enjoyed huge success with 1987’s One Heartbeat album. The title cut and “Just to See Her” became Top 10 singles.

Linda Ronstadt killed on her versions of “Ooh Baby Baby” and “Tracks of My Tears” in the ’70s. The Rolling Stones released a live version of “Going to a Go-Go” as a single and video in the ’80s. Robinson’s favorite cover is jazz singer’s Nnenna Freelon’s torchy 2022 “Tears of a Clown,” which slows down the upbeat tempo and adds violin as a counterpart to Freelon’s vocal.

Last year, burlesque icon Dita Von Teese opened her dazzling residency at Voltaire inside The Venetian. The star chatted with Las Vegas Magazine’s Em Jurbala about the show.

It feels really nice. It’s so glamorous.

It’s definitely a big shift for me. Even though the runway was invented for burlesque in America in the 1930s, it still is (different from) most of the theaters that I do—these big historic theaters that hold like 3,000 people … It was a lot of me trying to figure out how to make it feel immersive and adapt the show to utilize the runway and the whole room … I’m not used to having theater in the round or being that close to people. There’s a lot of beads that go rolling off into the audience, which people can feel free to capture, but it’s definitely a different feeling, and I’m really getting into it.

Actually, not at all, because I’m that way no matter what. I’ve never ever in my entire career thought, “Oh, no one’s going to see that from back in the balcony.” I always think about the details because it’s not even whether someone sees it, it’s what does it for me … I love the details. I love diving deep and really digging into the history of whatever I’m doing.

There’s three! I added, besides Dirty Martini, who is a global icon of burlesque and world champion tassel twirler, and Jett Adore, who’s been part of my tours for as long as I can remember. We’ve added Tosca Rivola, who is an amazing performer. She does the Cyr wheel ... I found her at this open casting and she did this incredible act and I was like, “Can you do it and add some strip tease?” So I’m pretty sure she’s the only woman to be performing strip tease while also revolving in a Cyr wheel.

A lot of people who’ve seen the show feel like it’s an entirely new show because it’s such a different backdrop. Of course, there’s going to be some of my best-known numbers like my martini glasses. And yes, thanks to Caesars Entertainment we were able to bring over a curated selection of the Bob Mackie costumes from Jubilee!, which really means a lot to me because those costumes are really untouched since Jubilee! closed … There’s a lot of new things. I’ve added a lot of things and done some edits … There’s a big fetish number and I’ve completely changed that. It used to be an ensemble cast without me and now it’s one of my own numbers with an epic new set piece.

It’s a little bit of both. For instance, Dirty Martini, her number is a little bit different from what she did at (Horseshoe Las Vegas). She’s performing with one of my jeweled carousel horses. It’s really a spin—no pun intended—on the tassel twirling. It’s a collaboration … I think all of us burlesque performers have the formula of what our best number is, and so she adapted that to this set and this prop that I’m known for creating.
