Celebrity chef’s French-themed restaurant more than satisfies

Franocophiles rejoice! One of the Strip’s newest restaurants, Brasserie B by Bobby Flay, is a celebration of all things French, from décor to menu. Given Flay’s reputation for high quality, you may have to wait a bit for a table here, but trust us: The wait is more than worth it.

As you enjoy your light and airy surroundings, get your Parisian-inspired adventure started with Vidalia onion soup, featuring Gruyère gratin and parsley pesto, preserved sardines served with pickled shallots, tomato chili oil and toast, and mussels in a harissa broth.

The journey continues with the Avec Frites portion of the menu, where everything is accompanied by house-made fries. Enjoy everything from a prime ribeye piquant, flavored with spicy and sweet glaze and chili butter, to a center-cut pork chop, served with calvados and orange vinegar. French-themed sides include pomme purée, served with crème fraîche and chives, and macaroni Gruyère gratin. Flay has made sure to accommodate as many palates as possible here. There’s fowl in the form of duck confit, here served with tangerine, almonds and

pomegranate, and crispy-skin chicken Brasserie, served with green olives and piquillo pepper relish; and seafood like slow-roasted salmon with honey mustard horseradish, Dover sole with wild mushrooms, and black bass with fresh herbs de Provence, pictured.

Desserts are all French-themed and a perfect end to a meal here, from dark chocolate soufflé with Grand Marnier sauce to raspberry clafoutis with vanilla cream. –Ken Miller

Easy Being Green

Feel like you’re in the Emerald Isle at this authentic pub

Irish food is one of my favorite cuisines, and not just because I’m covered in freckles. It’s especially good when accompanied by a nice beverage, and at Rí Rá Irish Pub in The Shoppes at Mandalay Place, you can get all the traditional food you crave, and all the beer and cider, too. Start with the beer—there are plenty of choices on draft, canned and bottled. Guinness is an obvious choice in an Irish establishment, and you can find the classic Irish stout on draft (brewed in Dublin), plus Guinness Foreign Extra Stout and the nonalcoholic version (a mighty fine version if I say so myself, and I do). But Murphy’s and O’Hara’s stouts might be better for you.

For a less-heavy option, Smithwick’s and Sullivan’s red ales, Harp lager, and Sullivan’s gold ale will do you. There are several types of ciders, like Strongbow and Magners Irish pear cider, plus plenty of German and Belgian choices. Cocktails include the Old-Fashioned, pink guava margarita, key lime martini and Irish coffee with Jameson (also mighty fine), among others.

Whiskey is a specialty here as well, with an absolutely huge selection from Scotland and the U.S., with some world whiskies, too. It’s worth

it to indulge in something you might not have tried before. And a bonus: Irish bands play most nights, starting at 8 p.m.

Start your meal with potato cakes—yummy fried mashed potato patties combined with cheddar cheese, green onion and sour cream. They’re drizzled with balsamic vinegar here, not exactly like mom made, but darned close. There’s also a take on Scotch eggs, with sausage molded to boiled egg, which is filled with a deviled egg mousse. Sausage rolls, chicken wings and baked goat cheese will get you ready for the main course.

There are plenty of salads, but for a bit heartier meal, opt for beef and Guinness stew, Irish chicken curry or fish and chips, with lager-beer battered Icelandic haddock and optional mushy peas. An Irish breakfast is served all day, with eggs, bangers, rashers, toast, tomato, mushrooms, and black and white pudding. It’ll keep you fueled day and night. Speaking of breakfast, try the boxty, stuffed with delicious banger, red pepper and eggs—worth getting up early for. –Nina King

That Special Feeling

Longstanding restaurant does everything right

For impeccable service in an elegant, old-school setting, restaurants in Las Vegas don’t get much better than Edge Steakhouse, where the standards are as high today as when it opened in 2015. You’ll find a wonderful array of starters on Edge’s menu, from lightly fried spicy shrimp that get their kick from a sweet chili reduction to roasted bone marrow served with onion jam, marrow arancini, parsley and radish. If you decide to go with jumbo lump crab cake, we certainly couldn’t blame you, and this version gets

a special kick from avocado aioli, lemon crème fraîche, cucumber and citrus.

Steaks are available in wet- and dryaged cuts, from a 7-ounce filet mignon to a hearty 20-ounce dry-aged ribeye. Accompany any of these with your choice of seared scallops, charred jalapeño or caramelized onions, and then choose your sides. We recommend the black-andwhite truffle mac and cheese made with white cheddar, Gruyère and Parmesan. Not in the mood for steak? Seafood and poultry options are also available,

from Skuna Bay salmon in a barigoule purée to a citrus-brined Mary’s organic chicken.

Whatever you do, do not skip dessert here. The warm chocolate lave cake is a can’t-miss for deep satisfaction, but for the indecisive, there’s a trio of crème brulées (vanilla bean, raspberry and chocolate), as well as a Chef’s Selection ice cream trio. –Ken Miller

Where Do You Start?

From cuisine to décor to service, Japanese restaurant has everything you need for the perfect night

Whatever your preference is at a Japanese restaurant, you’ll find it at Kusa Nori, an all-in-one concept that beckons you in with its vibrant décor, including depictions of sea creatures swimming across the walls.

Start your experience with a signature roll at the sushi bar. Highlights include Yoshi’s Cube, a tasty blend of chu toro, tuna, hamachi, kanpachi, salmon, tamago and avocado, and Battle Born Roll, featuring unagi, torched fluke and five-spice black bean sauce.

If you choose a table or booth instead, make sure to get something for the entire table. We recommend the whole Peking duck. This iteration is served with pancakes, bao, gem lettuce, cucumber, leeks, daikon, watermelon radish, orange, plum and hoisin sauces. Such a treat! Other fun shareables include toast that features an intriguing trio of uni, jamon Iberico and pata Negra ham.

Entrées include some of your favorites like chicken Panang, so succulent with Thai eggplant, heirloom tomatoes and straw mushrooms. But there are plenty of surprises in store, like the Dorade Royal, a crispy, deconstructed fish served with fivespice black bean, sweet chili and ume

ponzu. And those looking for a truly unique experience have to try the Wagyu Beef Theory, where you enjoy everything from A5 Japanese wagyu strip loin and Black Hawk domestic black wagyu strip loin to wagyu shabu shabu—you choose either tobanyaki or cherry wood smoke.

Kusa Nori also shines for its happy hour menu, where you can not only enjoy a signature cocktail like Mr. Misunderstood, a blend of Woodinville bourbon, Misunderstood ginger whiskey, blueberry, lime and Fever-Tree ginger beer, you can enjoy light bites like bluefin tuna tartare, hamachi crispy rice and wagyu gyoza.

For a real treat, check out the teppanyaki menu, where you can get all your selections prepared in front of you—everything from Jidori chicken and a half-rack of domestic lamb chops to ebi jumbo tiger shrimp and diver scallops. The dessert selection ranges from shiso and Sakura, featuring shiso gelée, Sakura buttercream macaroons and peach champagne sorbet, to artisan-crafted gelato—your choice of chocolate, strawberry or matcha. –Ken Miller

Breakfast absolutely shines at Zeppola Café, whether you choose to buy a brioche sandwich or tiramisu from the impeccably appointed displays at the entrance or head upstairs for an intimate table and some people-watching in the Grand Canal Shoppes’ St. Marks Square. If you’re really hungry, we recommend the latter. Start with the light and flu y spinach and feta omelet, served with homemade potatoes, then move your way to the toothsome lobster roll bagel, full of succulent meat and topped with provo-

lone. The avocado toast here, served on country bread and spread with guacamole and arugula, is practically a meal in and of itself, especially when you top it with prosciutto and burrata.

For a sweet treat, order the classic ricotta pancakes, topped with farmer’s market berries and accompanied with Vermont maple syrup, or the cannolis, available in a wide variety of flavors. (Our favorite is mascarpone.)

Good luck choosing from the baked goods section. Everything is wonderful,

but croissants are especially gorgeous and delicious, from the Custard and Berries Croissant to the Pistachio Croissant. The Cube Croissant is truly a one-of-akind treat, filled with mascarpone cream and topped with cocoa powder, white chocolate and a ladyfinger.

Enter the world of ‘Alice in Wonderland’ at this themed party

Spring brings an abundance of tea party-themed o erings to Las Vegas, and one of the funnest is The Mad Hatter’s Tea Party at Shady Grove Lounge. This neato bar, which sports an Airstream in a forestlike setting, gets all dolled up in Alice in Wonderland décor through July 7. The lounge has undergone a fanciful transformation, with huge flowers and other elements to impart a sense of whimsy.

Friday to Sunday from 5-10 p.m., indulge in a variety of cocktails, all designed with a tea theme in mind. Select from such goodies as the Mar-tea-ni, with green tea vodka, yuzu sour mix, cucumber simple syrup and gold glitter; Butterfly Gin and Tonic Tea, pictured, made with gin, tonic, elderberry liqueur and butterfly tea; the Bee’s Knees, with lemon-verbena tea, gin, a honey simple syrup and lemon juice; and Tennessee Tea, with Knob Creek bourbon, honey simple syrup and rose water. A great shareable option is the Take Flight, a Patron margarita flight with four flavors including traditional, mango, strawberry and passion fruit.

Helicopter pilot takes guests’ vacation to new heights

When it comes to his career, Buck Hewlett is literally flying high! He’s the night lead pilot for Maverick Helicopters. Book a flight over the Las Vegas Strip as the sun sets and the neon shines or take a soar over the Grand Canyon as day gives into night, and it may be Hewlett that pilots your once-in-a-lifetime experience.

“As a pilot for Maverick Helicopters— it’s fun,” he says. “It’s been an adventure. I’ve had a great time doing it. I’ve found fulfillment. … I love helicopters. I’ll never

not want to fly this machine.” Since Hewlett has flown professionally (about nine years now and with Maverick since 2018), he’s clocked more than 4,000 hours of flight time. “The level that you go through to be a pilot (at Maverick), you have to be really dialed in,” he says.

Even with all that flight experience, Hewlett adds more to his job than just flying. As the night lead pilot, he’s responsible for the scheduling of the other pilots, staying on top of daily operations,

If you’ve eaten at Barry’s Downtown Prime, you know how good it is. The Circa Resort & Casino steakhouse has been a favorite for visitors since the resort opened, and it recently announced new food and beverage items on the menu for summer, which means a return trip is in order for you.

Everything about Barry’s makes you feel comfortable, from the dark woods to cushy booths and leather chairs, all lit with pendant lighting and chandeliers overhead. It all evokes an old steakhouse feel while still maintaining some modern touches. It’s the perfect atmosphere for enjoying some signature cocktails, and owner and chef

Barry S. Dakake is always experimenting and updating his selection. You’re a Tomato If … is mixed with Ketel One vodka and tomato brine. And as many of us can attest, a good mocktail will keep you rolling while the party’s still raging. Here, try the James and the Giant, with Lyre’s Highland Scotch, peach syrup, lime juice and ginger beer. There are several other new ones to try, so do explore.

Start with an app like the jumbo lump crab cake, served with cherry heirloom tomatoes and celery root-apple slaw, or the vegan-friendly stuffed bell pepper, full of summer vegetables and resting on a layer of quinoa with pesto tomato sauce surrounding it. Another intriguing vegan dish is the Chicken & Dumplings, featuring wild mushrooms, English peas and a creamy vegetable broth bathing the little pockets of gluten-free goodness. For a delicious salad, try the hearts of palm,

with artichoke hearts, baby frisée, baby arugula and truffle vinaigrette.

Onto the main course! Faroe Island salmon comes with a variety of fresh ingredients like wild mushrooms and baby spinach, plus artichokes and blistered cherry tomatoes, all drizzled in a preserved lemon vinaigrette. A popular return entrée, slow-roasted Organic Fire Chicken, is quite colorful and spicy

as well, with red Fresno chilis and jalapeños, all in a rosemary-lemon sauce. Chilean sea bass makes an impression with its accompanying forbidden black rice.

For vegans, an unusual (but delicious) entrée is the truffle meatloaf, with forbidden black rice, wild mushroom gravy and crispy onion straws on top.

Steaks are, of course, the backbone of a steakhouse, and you’ll want to explore the menu here. Possibly the most impressive is

the 46-ounce Mishima Reserve tomahawk ribeye. You can also try the 20-ounce wet-aged bison ribeye from Grass Run Farms for a new flavor. The steaks are available with a variety of accoutrements, such as shaved black truffles, baby lobster tail and baked stuffed shrimp.

Afterward, pairing a good cup of coffee with dessert is a fabulous reason to loosen that belt and stick around a little longer. We recommend New York turtle cheesecake, so decadent with candied pecans, fresh strawberries and caramel sauce; banana cream pie with chocolate pecan crunch; classic crème brûlée, served with fresh berries and linzer cookies; and Christine’s carrot cake, punched up with a cream cheese glaze, roasted pineapple chutney and whipped cream.

Be on the lookout for big creatures with huge teeth and sharp claws at Dino Safari: A Walk Thru Adventure

Dinosaurs once roamed the Strip. We’re not referring to Pi the Magic Dragon or the once-abundant loungeus lizardus. It can’t be determined for sure which species were native to Nevada, but paleontologists believe the Tyrannosaurus rex may have stomped around the area where Las Vegas Boulevard South now intersects with Flamingo Road.

Of course, that was hundreds of millions of years ago, long before construction was started on the first casino on the Strip. It wasn’t until Dino Safari: A Walk Thru Adventure opened

its doors inside the Horseshoe Las Vegas that T. rex and company would be sighted on the Strip again, albeit in animatronic fashion.

Located next to the Cabinet of Curiosities speakeasy and presented by Imagine Exhibitions, Dino Safari is a multiroom educational adventure curated by senior scientific advisor Dr. Gregory Erickson. Now, Dino Safari’s exhibits are not real dinosaurs, and they can’t walk away from their stations. You filmed your “Spicy Margarita” music video at Voltaire. What was that like? It was great. It was kind of like a warm-up for being in this space. The space is very unique and I wanted to take advantage of its beauty. Everywhere you turn, everywhere you look, feels like it’s part of the show. So doing lighting design was di erent because I do the typical lighting design for the stage, but then (I needed to) complement the lighting to the design of the room as well, because I want the whole place to feel like it’s part of the stage, which is very di erent.

When you go to a concert, the room wouldn’t light as well. It would just be dark where you are and the stage lights up; this is a totally different kind of room. So the “Spicy Margarita” music video was kind of like a warm-up and it allowed me some time to dream up some things I wanted to do for the residency.

With a room that has so much identity of its own, how do you make it yours?

By totally taking advantage of it. I utilize this space as if it’s my own. It becomes a part of the nucleus of the show. I think there’s a lot of people that could possibly get swallowed up in this room and the beauty of the room, because it is so beautiful. But I decided to take full advantage of it from being on top of the bar, to being within the seats and allowing, inviting people into the party as opposed to it being a spectacle that they watch; it’s a party that they’re involved in.

You work in a bit of humor into your concerts and on your socials. Did finding space for that comedic voice in your music career come naturally to you?

That was a challenge. It took me posting a ton for me to stop caring, and I had nonnegotiables for myself. I was like, I’m going to post six times a day, and I had to figure out what to post for these six times. So in doing that I had to let my hair down, so

to speak, and start posting anything and that’s when I found the humor. That’s when I found being myself more and not taking myself too seriously. Without the pandemic, I don’t think that would have ever happened.

Do you have a Sin City bucket list item?

I really don’t know much about what’s going on in the real world, so I’m excited to explore. What I do know, though, is the pool parties. I remember the pool parties were pretty crazy. I love a daytime drink, so it would be amazing to get a spicy margarita by the pool somewhere.

Connoisseurs of combat sports went crazy the morning of June 3 when they woke up to learn the UFC 303 press conference scheduled in Dublin for that day had been postponed. Conor McGregor, the most electric fighter of the 2010s, was to appear in his hometown alongside Nashville, Tenn.-based opponent Michael Chandler, who was grounded before his flight to Ireland could take off.

Social media blew up. Podcasters reacted. Rumors flew. An Instagram post by McGregor from one

of his pubs drew accusations of not taking training seriously. Chandler bypassed the controversy and posted video of himself training seriously, which drew criticism for bypassing the controversy. The next day McGregor said the press conference with UFC at 3Arena had been canceled, not postponed, due to “obstacles beyond our control.”

The mixed martial arts world may never know what transpired, but few doubted that the highlight of In-

ternational Fight Week 2024 would continue to be McGregor/Chandler.

The trash-talking Irishman’s last appearance at the venue was his loss to Floyd Mayweather in a 2017 boxing match, and he suffered a broken leg in July 2021 at his last MMA clash with Dustin Poirier at UFC 264.

Chandler, a three-time lightweight champion in the Bellator MMA organization, took a loss to Poirier at UFC 281 in November 2022 after the current No. 4 lightweight applied a rear naked choke. The following year, Chandler faced off against McGregor as a team

coach in season 31 of The Ultimate Fighter. McGregor, as would be expected, created a commotion at one point during episode six by shoving Chandler at the conclusion of a bout between their fighters. It may have been calculation on McGregor’s part, but it's something Chandler can use as motivation.

Chandler (23-8-0), a lightweight through most of his Bellator career, is stylistically well-matched with counter-striker specialist McGregor (22-6-0). Both are more likely to go for a knockout rather than a

submission, with McGregor having a slight reach advantage. They both like to aim for the head, while Chandler is a better ground fighter.

There couldn’t be a better lightweight match to conclude this year’s International Fight Week without Russian champion Islam Makhachev being involved. Debate over whether McGregor or Chandler gets the next title shot has been overshadowed by the press conference debacle, which in the end generated sufficient media attention to promote UFC 303.

Meanwhile, other fighters can focus on how they’ll thrill the audience. The undercard includes No. 3 light heavyweight contender Jamahal Hill taking on New Zealand’s Carlos Ulberg and Brazil’s Mayra Bueno Silva battling Macy Chiasson in a bantamweight bout.

Mac King shares advice on getting started in the art of illusion

Some magicians closely guard their secrets. Others, when they are not performing, freely dispense advice to aspiring illusionists and seekers of sleight-of-hand knowledge. Mac King falls squarely in the latter, if only for the long-running comic strip Magic-in-a-Minute he created with his illustrator cousin Bill.

The amount of times young people have asked King how to get started in the craft, after seeing one of his afternoon performances of The Mac King Comedy Magic Show at Excalibur, is inestimable (and he can’t answer them comprehensively in 30 seconds of meet-and-greet). King himself was literally grandfathered in, with both of his grandfathers having magical skills.

“They knew some tricks, and my mom’s dad, in particular, had some magic books at his house,” says King in an exclusive interview with Las Vegas Magazine. Both grandfathers were in sales and traveled for work. “They used magic as icebreakers to meet people or make themselves look interesting.”

If King had to identify one trick as ground zero for his interest, it would be his dad’s dad breaking a match, then “reconstructing”

it beneath a handkerchief. It was also the first trick King learned step-bystep, which fully ignited his passion.

King’s own Mac King’s Magic in a Minute Great Big Ol’ Book-O-Magic is due for a revision, but it can be found used on Amazon as well. King cites benefits of learning magic such as sharpened focus and problem-solving skills. Practice improves muscle memory, while performing builds confidence in public speaking.

Ultimately, it led King to a career and meeting his future wife. He performed a trick involving pulling a card from his pants that he still performs today, and she was smitten, long before he became the plaid-clad member of Las Vegas’ resident magicians.

act, is good early stage training. King usually has a pack within reach that he can play with while engaging in activities that leave his hands free. “I’ve got decks of cards all over my house,” he says. “I’m shu ing or doing moves. I’m not even thinking about it.”

While King would never give away another magician’s secrets, his own history of disclosures dates back to the ’90s, when he appeared on television specials for NBC titled The World’s Greatest Magic. King performed tricks before commercial breaks, then demonstrated how they worked when he returned.

“Magicians kind of divide the way they talk about magic into e ect— that’s what the trick looks like to the audience—and the method. That’s the secret stu that leads to the e ect,” says King, before categorizing e ects. “There’s vanish. There’s change. Mutilated and restored. There’s levitation. Any of those e ects you can do with a deck of cards.”

While King doesn’t mind his tricks winding up in the public domain, his skills of making goldfish and Fig Newtons appear remain unsurpassed. His folksy presence and family-friendly magic blend together in a persona that, unlike his tricks, can't be copied.
