How’d They Do That?

Sometimes Las Vegas seems to exist as if by magic. It often feels impossible that a desert could sustain one of the biggest tourist destinations in the world—or that this tourist destination could serve up some of the best meals in the world, the best attractions, the best bars, the best clubs ... yes, when you stop to actually take it all in, magic defi nitely feels involved in the equation.

Perhaps that’s why magic has been so successful in Las Vegas over the decades. Name any famous illusionist of the last 70 years, and odds are they performed here at one time. More than a dozen world-class performers currently call Las Vegas home, and we’ve collected a few of the ones you need to see in this week’s issue: Mac King, whose Comedy Magic Show has been going for more than 20 years and can currently be seen at Excalibur (“Come Join the Family,” p. 32), America’s Got Talent winner Mat Franco, who just revamped his entire show, Magic Reinvented Nightly, at The Linq Hotel (“Master of Reinvention,” p. 36 ), and Jen Kramer, one of the friendliest magicians you’ll ever meet, who performs at Westgate Las Vegas (“Lots of Likes,” p. 21).

We’ve also highlighted some must-visit restaurants, including the brand-new Ramsay’s Kitchen by Gordon Ramsay at Harrah’s (“In-Demand Brand,” p. 28), Brezza at Resorts World Las Vegas (“Specials of the House,” p. 18), and Scotch 80 Prime at Palms (“We Meat Again,” p. 17 ).

Shout ‘Huzzah!’ on the Strip

Anything lasting in Las Vegas for more than 10 years is a major feat; more than two decades is a crowning achievement; and then there’s three-plus decades, which includes company like Tournament of Kings. Today, the dinner show that opened at Excalibur in 1990 still packs in fans for medieval fun, food and drink. Las Vegas Magazine’s Kiko Miyasato recently spoke with Richard Sherman, director of entertainment for Excalibur and Tournament of Kings and chatted about one of the Strip’s longest-running shows.

In a nutshell, what is the show?

It’s a dinner show first off, and the storyline supports that. It’s a banquet that King Arthur has requested, (where) all the kings of the countries come and he’s introducing his son to the audience. There’s an unexpected visitor, which would be the villain in the show. It becomes a coming-of-age tale, where King Arthur’s son needs to earn a seat at the Round Table. … You’ll see dancing, jousting, javelin toss, a race, games that the kings do to prove who’s better.

Any new updates in the last year?

The biggest thing that is new is that we’ve been updating the lights. If you saw the show in December and came back today, you’d see the difference because we redid all of the lighting.

We’ve updated to LED—those are doing the work of hundreds of lights. We have all this flexibility now to change what colors, when, the vibrancy of it, the brightness.

Any cool parts in the show that you love?

I love the kings’ entrances, with the new lighting especially. When they announce, say, Ireland, the room becomes green. It’s so vibrant. Of course, every king has his own color. When it’s Spain, the room is red, it just looks so good and so fresh.

There are pyrotechnics in the show, right?

Yes, there are. Whenever the Mordred character enters, there’s a flame burst or explosion; he has a staff he can shoot fire from, which is all incredible to watch. There are pillars of fire and fire is shooting up from the ground and there’s loud pyrotechnic explosions. We have rockets. It’s a lot of fun.

Where do the horses in the show live?

They do live here on property. We have a full stable right now—all 19 stalls are used. We’re only using 10-11 horses a show. About 10 come over a night; there’s a rotation. They’re always training. We have some horses that have

been here over 10 years. The horses are the best trained and need the least amount of rehearsals.

How loud and involved can people get?

We encourage it. Be as loud as you want. They teach people how to bang on the tables, how to cheer, raise your hands and shout “Huzzah!” People come here to have a good time and be loud and rowdy. It’s almost like going to a football game that has eight teams, and you’re rooting for your country and booing everyone else.

Tell me about the food. Utensils don’t even come out unless you ask for them. Encouraging people to eat with their hands is saying it lightly. The traditional meal is a Cornish game hen and potatoes or seasonal vegetable, dinner roll—all that you can eat with your hands, no problem. You can get a vegan, gluten-free, kid’s meal; there’s a number of different options in case you have dietary restrictions. There’s a cocktail list and beer, a bartender comes around and gets orders.

Why do you think this show has lasted so long?

It’s a family show, which you don’t get to see a lot in Las Vegas. We like to call this show the “crown jewel of our castle.” … If you have younger kids and you’re looking for a family outing this is an excellent thing to do. … It’s also a great show for people that are celebrating, anniversaries, we’ve done a number of proposals here. It’s a way to get out and do something with your friends and be loud and root for something and see something that you don’t get to see every day.

We Meat Again

Beloved Palms restaurant returns, and it’s better than ever

With the reopening of the Palms came the reopening of one of the best steakhouse experiences in town: Scotch 80 Prime, a well-appointed space with terrific service and many of your steakhouse favorites—plus a few twists.

Start with oysters on the half-shell, steak tartare topped with quail egg, black garlic aioli and shaved foie gras, or Scotch 80 brie fondue, accompanied by bacon jam and brioche toast. Or choose a tower—hot or cold—piled high with Maine lobster, king crab legs, jumbo shrimp and oysters.

Most meats featured on the steak menu are sourced from Midwestern ranchers—the 8-ounce filet mignon and 8-ounce ribeye cap come from Nebraska, while the 12-ounce bone-in filet mignon and the 20-ounce, dry-aged, bone-in prime ribeye are from Kansas. For something really different, opt for the 12-ounce wagyu New York strip, sourced from Westholme in Australia. Great accompaniments include Moody Bleu smoked bleu cheese crust, and smoky coffee crust with scallion and black garlic sauce.

If your tastes veer more toward fowl and fish, the Duroc pork chop, served with collard greens and sweet potato, and the miso-glazed Chilean sea bass, accompanied by shiitake mushrooms and tobiko, are both solid choices. Don’t forget the sides! Famous hash browns come either plain or with brie fondue, while the Millionaire’s Maccheroni comes with prosciutto, a poached egg, black truffle, gold leaf and Parmigiano-Reggiano cream. –Ken

Italian restaurant elevates every dish

If you are looking for something special in Las Vegas, you’ve found it here. Brezza , the upscale Italian restaurant in Resorts World Las Vegas, features plenty of special experiences.

The décor is lovely, with soaring stone walls stretching the length of the restaurant and the bar and kitchen curving through the space on the opposite wall. The wine and cocktail program is the first of those special times, with a carefully curated list of wines from throughout Italy and California, with a few French varieties. The sommelier’s selection will perfectly pair with your meal.

For your starter, order charred octopus, a guest favorite served with gigante beans, or Taylor Bay scallops, which are reputed to be the best bay scallops available. The “wow!” moment comes with the heirloom caprese, composed of buffalo mozzarella, basil pesto and several types of tomato, including conserved tomato that bursts with flavor.

Chef Nicole Brisson trained in several kitchens in Italy and brings much of that learning to her kitchen—bucatini alla amatriciana is imbued with the richness of guanciale, plus Fresno chilis. The cappellacci oreganata is stuffed full of cauliflower and spinach, with lemon, garlic and capers, and will make any vegetarian very happy. There are plenty of sides to consider, like fried artichokes, grilled asparagus, spinach and baby kale, and mascarpone mashed potatoes, with guanciale, pickled peppers and a poached egg. It’s decadent!

Beyond pasta, you’ll find an excellent meat program, and the dry-aged selections are a specialty with Brisson, who perfected her techniques over many years. Try the bone-in N.Y. strip, a 16-ounce cut that has been dry-aged for 100 days. And if you want to go all out, order the 42-ounce tomahawk, which has been aged 120 days.

There are a couple of desserts to consider, with very different flavors. The tiramisu is deconstructed, and its very design elevates it into that “special” category. The olio lemon verde tart is stylistically fun, with a lemony olive oil cake topped with cream that is accented by that “verde” and a large, gold “B.” It might stand for “Brezza,” but it could also be for “beautiful.” –Nina King

Strength In Numbers

Legendary band brings its latest lineup to series of Venetian shows

“You know how many people have been in this band over the years … 47 people have been in this band over the years,” a character in the 1984 mockumentary This Is Spinal Tap reveals in talking about the fictitious band’s history. While it was clearly meant to be funny, that line has to reverberate with Chicago, which has seen an incredible lineup shift over its 56 years of existence. The original group of Terry Kath, Robert Lamm, Lee Loughnane, James Pankow, Walter Parazaider and

Danny Seraphine still retains some of its core members (Lamm, Loughnane and Pankow), but the group has seen literally dozens of musicians contribute to its evolving sound over the decades.

It’s been a huge part of what keeps Chicago’s music so eclectic—in the best way possible. From 1960s hits like “Does Anybody Really Know What Time It Is?”, 1970s hits like “25 or 6 to 4” and 1980s hits like “Hard to Say I’m Sorry/Get Away,” Chicago has kept generations of listeners riveted to their

speakers. Their live shows, in particular, are an event; few bands replicate their studio sound as good as Chicago does. Find out for yourself as the band— which received a GRAMMY Lifetime Achievement Award in 2020—rolls into town to play selections from its large catalog, a catalog as rich as its musical roster over the years. –Ken Miller

Magician builds warm rapport with every audience

Some magicians do meet and greets after shows. Jen Kramer meets the new friends she made during her performance. Most audience members who see The Magic of Jen Kramer, also line up outside of her showroom at Westgate Las Vegas once the last trick is performed. She takes time to engage with each fan. Lots of time. They are of all ages, but children with an interest in magic walk away from Kramer inspired to pursue the craft with renewed commitment.

Personal connections with would-be sorcerers and wizards growing into the next generation of close-magic masters and mentalists enable Kramer to see a bright future for magic. Being proactive and authentic are two major planks in Kramer’s platform. When she smiles audience members can’t help but smile back. She’ll zone in on someone with don’t-pickme body language for a participation trick and send them back to their seats happy with a golden memory of Vegas and, if the magic is right, their favorite drink.

She never stops taking notes after shows, never stops adjusting, never stops tweaking stage banter “to make the audience have an even better experience,” said Kramer, who celebrated her milestone 500th show at Westgate last summer. She’s never less than upbeat. She doesn’t use bad words and kids do not find her scary. The future of magic is in good sleight-of-hand hands. –

The bar opened in Ensenada, Mexico, in 1892 and is reputed to have invented the margarita in 1942 after a bartender mixed up the drink and named it after the German ambassador’s daughter that was visiting. Here, try the original margarita and share the Romance Margarita (a huge cocktail) with your sweetie.

When it comes to managing, Michael Lee, assistant director of beverage for The Cabinet of Curiosities Bar and Lounge at Horseshoe Las Vegas, says, “I always tell people you can’t teach personality—you have to have it; it just has to be a part of you. Ever since I started in the industry as a manager, I’ve always been upbeat and positive. I credit that to how I moved up in my career. You live every day happy. Not take anything for granted. Be happy you have family, friends and a job. … The staff here will tell you—that’s one of the

best things (I did) when I came here—I shifted the energy. That was the goal.”

Since he joined the venue eight months ago, Lee has been managing the experiential bar and speakeasy, overseeing day-to-day operations as well as employee relations and “creating the culture here,” he says. “This is not an ordinary bar; this is an experience. It’s that ‘wow!’ factor. It’s a place where you can come and get different ambiences and great cocktails and great service. It’s just a great, great vibe here.”

Comedy-magician

“Family” is a key word for Mac King. The comedy magician has specialized in family-friendly entertainment for decades in Las Vegas, sure, but he considers the entertainment community his family as well. It’s not unusual to see him popping up in clubs and shows all over town, making guest appearances. In addition, during the pandemic shutdown, King started a YouTube podcast, Don’t Everybody Leave, with his Vegas magic and comedy compatriots. He’s enjoyed much success on the Strip, but for this performer, entertainment is about much more than dollars and cents. It’s about connecting with both his local community and the millions of visitors he’s entertained over the years.

That connection becomes crystal-clear when King appears onstage (but not before a rousing chorus of “If You’re Happy and You Know It” to put a smile on your face). He’s quite possibly the most unassuming magician you’ll ever see. There’s none of that flash and pizzazz so many of his contemporaries are known for. It’s just him and his plaid suit, as inseparable from his image as cerulean is from the Blue Man Group. With a, “Hi! I’m Mac King!” he ushers you into his folksy world, one where camping, fishing and eating Fig Newtons are the norm. And within this folksy world, King performs some of the most head-scratching illusions this side

of David Copperfield (but without that aforementioned flash and pizzazz).

When King starts cutting a simple piece of rope, he’s off and running. His props are all similarly simple, from a tent to a fishing pole to a yellow poncho. Audience participation is a huge part of the show, so make sure to bring the young ’uns along.

And where some of Las Vegas’ famous magicians have worked with larger animals like tigers, King prefers working on a much smaller, less dangerous scale—his animal helpers include goldfish, a Guinea pig and one we can’t name in this article, at the risk of spoiling the surprise for that lucky preteen volunteer.

Longtime fans of King will notice his new surroundings. He performed for decades at Harrah’s, but now performs in the Thunderland Showroom at Excalibur, a much different, more intimate room. “This has a more modern feel,” King told Las Vegas Magazine in an interview. “We’ve got that big video wall backdrop, and I’m really looking forward to exploring that and making it a bigger part of the show. There’s a lot more lighting and the stage is a little more narrow, but it’s deeper front to back. I feel at home.”

As you’ll quickly discover, feeling at home is a huge part of the show’s charm, and why so many fans return again and again. The world outside may feel topsy-turvy, but for an hour and change, King transports you to an easier time when all you needed to be happy was a fun sing-along song, a smile ... and maybe a Fig Newton.

While the actual mummified remains of the boy king are not on site, Imagine Exhibitions’ archeological exhibit Discovering King Tut’s Tomb—The Experience has been millenniums in the making. From artifacts re-created by skilled artisans to a reproduction of the tomb itself, visitors can experience the sense of wonder Egyptologist Howard Carter felt in 1922 as he first peered into the burial place of Tutankhamun.

The pharaoh from the 18th Dynasty of Egypt did not have a long life, succumbing to ailments at age 19 after ruling for a decade. Carter’s e orts ensured Tut’s immortality. King Tut’s discovery became a commercialized craze, culminating in classic 1932 Universal Pictures horror film The Mummy. A short introductory film kicks o Discovering King Tut’s Tomb as well, establishing the

atmosphere before a sliding wall reveals a passage to the past.

A memorabilia shrine paying homage to Carter precedes the series of chambers dedicated to Tut, with sound design conveying the spirit of the British

archeologist via voiceover. Placards adhered to walls throughout the exhibit relate historical details about the unsung indigenous workers and the initial breakthrough into the tomb’s antechamber. Egyptian culture is put into context as

well. Social hierarchies, the importance of bread and beer, and the significance of papyrus are related before the journey takes a spiritual turn.

The first relics chamber contains figurines and statuettes of gods and goddesses. It’s here that deities such as Amun-Ra and Thoth, whose legend would inform the Mummy film franchises, are physically represented. The process of mummification is related as well, and a decoder for the hieroglyphics included on placards can be found attached to a wall in this area.

sion of the exhibit, with a guided tour made possible by immersive eyewear. Processing the material o erings of Tut’s Tomb may make further exploration unnecessary though. One would have to travel to Egypt to get a more comprehensive presentation of Tutankhamun’s final resting place, and there would be no landmarks featuring Carrot Top to help orient budding Egyptologists toward the entrance.

Artifacts that were buried with Tut are found in the next stage, from sandals imbued with supernatural powers to the iconographic crook and flail widely associated with ancient Egyptian royalty. One display screen is dedicated to the ailments of the doomed monarch, from a cleft palate and a deformed spine to the malaria that is credited with causing his demise. Pain was likely a constant in Tut’s short lifespan.

Another constant was gold. Glittering treasures were placed in Tut’s tomb, which provide the highlight of the journey. Re-creations of Tut’s shrine and gold nesting co n await at the climax of the discovery of “wonderful things,” as Carter described the objects unearthed a century ago.

Mat Franco ups the ante with revised Strip residency Magic Reinvented Nightly

Mat Franco—Magic Reinvented Nightly, the hit headlining Strip residency that is heading toward its eighth anniversary this summer, has been reinvented. Franco, 34, took some time o as he and his wife welcomed a baby into their family last month, but he returned to Mat Franco Theater this month with new illusions, technological advancements and stagecraft seasoned by more than seven years of performing in a room of his own.

“Excitement” is his response when asked for one word that comes to mind when he thinks about the new show. “I

am literally so excited,” he says. Franco spent most of his time with his family leading up to his first curtain call of the year, but managed to pull himself away to check on how things were progressing with his creative team at the theater. “It’s exciting to see things happening and things in motion, and celebrating the small wins of each step of the process.”

Franco’s creative team worked around the clock during the baby break to get everything for the new production in place. “Based on the long-running success of the show, we made

huge investments into the theater and the show itself,” he says.

Magic Reinvented Nightly, circa 2015, an immediate success due in large part to Franco’s rapport with audiences and innovations such as video screens that zoomed in as he made cards disappear, could be considered the acoustic or unplugged version in contrast to what Franco presents now. “The show has blossomed into a full-on production, and it’s tailored to enhance every single magic moment,” he says.

It’s also the culmination of more than seven years of imagining the potential of his eponymous theater, and 30 years of conjuring a magical future. As a boy in Rhode Island, he recorded television specials featuring David Copperfield, Penn & Teller, Lance Burton and Mac King, and had a photo of Las Vegas tacked to his wall.

He eventually visited the Strip and saw magician Je McBride perform live. The idea of being a Vegas headliner was a prime motivator early on, but Franco segued into a more pragmatic

path that led from being a performing college student in Rhode Island to becoming a breakout star on America’s Got Talent. Now the lifelong student of sleight-of-hand secrets is an established star on the Strip about to enter a new self-charted phase of his career.

“I think this is the type of thing where the space has been modified in such a way that when people walk into the room they’re going to know they chose the right show, that they’re in the right place, that we’re going to pack the maximum amount of entertainment Vegas can o er,” says Franco. “Just by walking in and seeing the space and what we’re doing with it, I think people will feel that impact of value before I even step out onstage, which is new territory for me.”

Originally known as stickball, lacrosse dates back to 1100 A.D. when the Haudenosaunee, or Iroquois people, played in what is now the Northeastern United States and Canada. Revered as the Creator’s game, the sport was played for many reasons—for toughening young warriors, for recreation and for its spiritual components.

It’s known as the fastest game on two feet, and fans can expect cunning game play, and a decent helping of roughhousing from one of the newest teams in the sport—the Las Vegas Desert Dogs, who face off against the Calgary Roughnecks this week on the Las Vegas Strip.

“It looks like hockey; there’s five players and a goalie on and we’re in a hockey rink, but we specialize (positions). Our offensive guys play

offense only, then they get off and (others) play defense, so there’s lots of interchanging,” head coach, general manager and National Lacrosse League Hall of Famer Shawn Williams said. “And I would equate the movements and patterns to that of basketball … You add a little football with some big hits, so there’s a little bit of everything.”

Forwards Rob Hellyer (No. 10) and Zack Greer (No. 88) form a dynamic dyad whose combined skill set lays

the foundation for a challenging offense. Facing a goal that stands a mere 4 feet tall and 4 feet 9 inches wide—and guarded by a largely padded goaltender—means scoring requires keen accuracy and movement that deceives the opposing goalie. Sharpshooters like Charlie Bertrand (No. 61) and Jack Hannah (No. 33) add to the intimidating offense, finding frequent scoring opportunities.

Cleaning up loose balls is another forward to look out for—Jacob Ruest (No. 20.) Offering a 50/50 opportunity to gain possession of the ball, loose ball pickups can change the course of the game.

Defensively, the Dogs lock it down with quick footwork and acute field awareness. You’ll see defensemen forcing opposing attackers out of the scoring area, looking to gain possession of the ball and blocking shots before they can reach the goaltender. Holding down for Vegas, Travis Cornwall (No. 90) and James Barclay (No. 25) cause

turnovers, while Tor Reinholdt (No. 7) leads in loose ball recoveries.

Heavily armored and posted up in the goal, a goalie must track the ball through chaotic game play, using swift yet precise movements to make saves. Landon Kells (No. 42), the team’s leading goaltender, is patient in

play, stopping shots with nimble but bold movement.

Impressive game play aside, a Desert Dogs game is always a good time. With your typical game-day atmosphere, a talented dance squad and pregame and half-time entertainment, there’s little reason not to check out the newest game in town.
