o voy a profundizar en el gran momento que atraviesa el sector inmobiliario. el comprador, inversor, propietario, o quien pretenda alquilar no puede hacerlo en una situación mejor que la actual.

GILMAR inició su actividad en mayo de 1983. El próximo año celebramos nuestro 40 aniversario. Jesús Gil Marín y Manuel Marrón Fuertes son los fundadores, propietarios y consejeros de la empresa. Los dos siguen desarrollando su trabajo ejecutivo como el primer día.

La actividad de GILMAR comenzó con escasos medios económicos, pero con dos premisas fundamentales para el éxito de cualquier iniciativa empresarial; tener las ideas claras y mucha ilusión. Desde el inicio, la apuesta fue creer -por encima de todo- en las personas y en su profesionalidad, dándoles prioridad absoluta por encima de cualquier otro fundamento. Ese es nuestro mejor patrimonio. Todavía hay varias personas que siguen ejerciendo su profesión en GILMAR desde sus inicios, algo absolutamente inusual en este sector, que se caracteriza por una alta rotación de la plantilla en todas las empresas. Sin embargo, en GILMAR contamos con muchos profesionales que llevan 25 o 30 años.

Este gran patrimonio consolidado, al que felicitamos por el gran nivel profesional que demuestran a diario, es el principal motivo de orgullo para los que formamos esta gran empresa, que empezó siendo un proyecto y se ha convertido en la mejor empresa del sector inmobiliario, que tanto aporta a la economía de España.

Eso lo conseguimos a través de la composición (líneas y formas) y los colores. Cuando entro en un lugar que debo intervenir, busco lo que no cuadra y rescato lo que está bien y funciona.

Utilizo la simetría porque es un recurso que genera belleza, pero siempre me gusta romperla con determinados acentos para dar ritmo”.

Siempre activa, este año tiene mucho en la mira: diseños de casas, hoteles, salones de belleza, restaurantes... y una colección artesanal de mobiliario.

Su estudio no para. Y no es de extrañar. Muchos de sus clientes repiten y les recomiendan por la labor tan cercana que hacen para conectar con cada uno, sin perder nunca la búsqueda de esa originalidad que convierte a Patricia Bustos en un nombre que hace marca en su profesión.

ecipient of numerous awards, Bustos is a big fan of exploration: “I try to improve the space by making it more harmonious. We achieve this through composition (lines and shapes) and colours. When I enter a space that I’m going to be working in, I look for what doesn’t suit and highlight what does look good and works well. I use symmetry because it’s a resource that generates beauty, but I always like to break it up with some highlights to create rhythm.”

Always active, this year she has a lot in her sights: the design of homes, hotels, beauty salons, restaurants… and an artisanal furniture collection. Her studio never stops, and that’s no surprise. Many of her customers come back for more and recommend her for the fantastic work she does to connect with each of them, without ever losing that search for originality that has made Patricia Bustos a benchmark within her profession.

Y nunca ha habido en España una retrospectiva de su obra. Pero esa omisión ya ha sido corregida. Desde el 11 de junio y hasta septiembre se podrá ver, en el Museo Thyssen-Bornemisza, una muestra dedicada completamente a su obra. Alex Katz, uno de los mayores representantes del arte pop que aún vive, ha colaborado de lleno con la exposición organizada por el museo. 40 de sus obras serán expuestas y los espectadores podrán explorar su evolución como artista, así como sus temas recurrentes: la cotidianidad, la individualidad y sus estudios de paisajes llenos de color.

Alex Katz is one of those pop artists who has created in own style and inspired hundreds of posterior artists and still remains current today, decades after starting to create… In Spain, there has never been a retrospective view of his work. Now, that omission has been corrected. From June 11th until September, in the Thyssen-Bornemisza Museum, there will be a display dedicated entirely to his work. Alex Katz, one of the main representatives of pop art who is still alive, has collaborated hand-in-hand with the exhibition organized by the museum. 40 of his works will be displayed and visitors can explore his evolution as an artist as well as his recurring themes: daily life, individuality and his studies of colourful landscapes.

E T l tiempo es relativo e intangible, pero también puede sentirse tuyo. Y eso quiere explorar el Centre Pompidou de Málaga con Un tiempo propio. Liberarse de las ataduras de lo cotidiano, esta impresionante exposición -que se puede ver hasta octubre de 2023- en que reúne una amplia selección de obras de su colección y la de su casa madre, el Centre Pompidou de París.

En este recorrido por las creaciones de diversos artistas, de la talla de Pablo Picasso, Jean Arp, Henri Matisse o Joan Miró, la muestra explora el tiempo propio en todas sus expresiones: de ocio, de introspección, de vacaciones, el interior... Es una exposición que revisa la individualidad como universo amplio y complejo y toma estas obras como auténticos testigos del tiempo.

In this journey through the creations by various artists such as Pablo Picasso, Jean Arp, Henri Matisse or Joan Miró, the exhibit explores own time in all of its expressions: leisure, introspection, holidays, the interior… It is an exhibition that reviews individuality as a broad and complex universe and takes these pieces as true witnesses of time.

Arte que transforma Art that transforms

Conversamos con el artista JOSÉ MANUEL CIRIA sobre su obra y el mundo actual del arte.

¿Por qué quisiste ser pintor?

Nunca elegí esta profesión, simplemente no pude escapar de ella. ¿Cómo es el proceso creativo a través del que llegas a una obra?

Los detonantes para la pintura, lo instalativo o las acciones son completamente diferentes. Los de la pintura los he explicado ya demasiadas veces. Déjame comentar el nacimiento de una acción: mi amigo Javier Remedios, en una de sus visitas a Nueva York, había realizado una serie de fotografías absolutamente geniales. En una de ellas podía observarse una pared que cubría un edificio en obras invadida de toda clase de anuncios publicitarios, pero también de diferentes tipos de fotocopias y fotografías. Un inmenso palimpsesto.

De repente tuve la necesidad de llevar un original a aquella pared y colgarlo inmerso dentro de aquel fantástico caos. Una vez das el primer paso, parece que el otro pie demandase también movimiento.

Lo siguiente fue realizar ocho dibujos de cabezas y recortarlos como si fueran caretas o máscaras. Había un muro con ocho anuncios iguales bastante deteriorados que representaban una figura femenina, la foto que había de realizarse era cubriendo las ocho caras del repetido anuncio con las caretas. Volviendo a casa, el escaparate del Kmart de la calle Lafayette, se prestó para sacar un par de fotografías pegando los dibujos a las cristaleras. Una es absolutamente genial y enloquecida. Una señora estaba sentada sobre un pequeño rellano, fumando un cigarrillo y supongo que esperando un autobús, no pude evitar la tentación de pedirle que sujetase una de mis máscaras cubriendo su rostro. Posteriormente dos vigilantes de un parking, y ya en Washington Square un grupo entero de ocho personas. A los dos días bajé de casa una escalera de mano, y le coloqué una careta a la estatua de Fiorello Laguardia que tenía justo enfrente de mi taller.

La foto es delirante. Las acciones con caretas y máscaras ya forman parte de mis “clásicos”. Lo de invadir la calle, desde mi punto de vista, es una evolución natural de aquellas obras que pintaba ya en 1994 sobre las vallas publicitarias de París. Después realicé durante años el movimiento contrario, llevándome aquellas vallas desde la calle al interior de la galería y el museo. Movimientos intempestivos. Ha estado de moda durante años el video y la fotografía, la instalación y el "cachivache", por tanto, lo suyo era quedarse uno en casa pintando unos cuadros tranquilamente. Ahora parece que hay una vuelta generalizada hacia la pintura, pues resulta lógico volver a salir a la calle a dar una vuelta y respirar un poco de aire.

¿De qué quieres hablar con tu obra?

Nací en Manchester de padres españoles. Mi abuela vivió durante 20 años en París. Desde mi infancia, el viaje ha formado parte de mi vida. Al desarrollarme como artista era lógico que esa suerte de nomadismo se viera reflejado en mi trabajo. Me gusta observar diferencias de pensamiento, políticas, psicológicas y sociológicas en los entornos que me rodean. Mis intereses no solamente se ciñen a planteamientos teóricos y de investigación, busco que mi obra se transforme dependiendo del país y la ciudad que habito, con lo que veo y la gente con la que me relaciono. Digamos que esta perspectiva internacional, me permite tener mayor información e incluso más recursos. ¿Cómo ves el mundo del arte actualmente?

Llevo diciendo desde hace algún tiempo que el arte goza de una salud envidiable, con legión de artistas haciendo una obra extraordinaria. En mi opinión el problema actualmente se divide en dos: Por un lado, existe una problemática profunda de hipertextualización. Apenas podemos percibir cómo el paisaje que nos rodea va transformándose, y no llegamos a vislumbrar el inmenso cambio de modelos que van a tener lugar durante la próxima década. Dentro de este “pantallazo” observamos que la hermenéutica no avanza.

Por otro lado, existe una inmensa desinformación en lo relativo al mercado del arte, que se ha ido transformando a toda velocidad donde el único dios verdadero es el dinero, y en el cual se han posicionado una serie de mercaderes/chamanes que dictan lo que es bueno y lo que va a estar de moda la siguiente temporada. Dentro de ese “mainstream”, hay cosas que verdaderamente son excepcionales y muchas otras que no valen absolutamente nada. Difícil situación la del coleccionista de arte en nuestros días, que tiene que discernir entre la calidad y los interesados cánticos de sirenas. Ciertamente se vive dentro de una espesa niebla entrópica.

Tus cuadros ¿en un museo, en una galería, en una casa?

Dados los espacios limpios (el cubo blanco) que brindan el museo y la galería, es donde la obra habitualmente se luce más y donde se pueden observar con mayor “desnudez” (sin interferencias) los componentes objetivos de un trabajo. En una casa, la obra se convierte en un poderoso elemento de decoración. A todos los artistas, si se nos dice que nuestra obra es decorativa directamente nos sale un sarpullido. Pero resulta inevitable. Si cuelgas de tu salón un viejo cierre metálico de un comercio, con una tachadura y un violín adherido como hizo Tàpies, observas que aquello que se pretendía desafiante y provocador, se convierte con total naturalidad en un elemento decorativo. Por este motivo y el paso de los años, me encanta tener obra colgada en casa de todos mis coleccionistas/amigos y, por qué no, en un restaurante, en un salón de actos, en el diseño de la portada de una revista o haciendo un embalaje espectacular para un producto determinado. ¡En todas partes! ¿Qué hace una obra de arte por un hogar?

We talk to the artist JOSÉ MANUEL CIRIA about his work and the current world of art.

Why did you decide to become a painter?

I never chose this profession, I simply couldn’t escape it.

Could you describe the creative process behind creating your work?

The triggers for painting, installations or actions are completely different. I’ve already talked about the process for painting too many times. Let me discuss the birth of an action: on one of this visits to New York, my friend Javier Remedios had created a truly wonderful series of photographs. One of them showed a wall that covered a building under construction that was smothered in all types of photocopies and photographs. An immense palimpsest. Suddenly, I felt the need to bring an original piece to that wall and hang it there amidst that fantastic chaos. Once you take the first step, it’s like your other foot also demands movement. Next I did eight drawings of heads and cut them out as if they were masks. There was a wall with eight of the same advertisement that were pretty deteriorated and represented a female figure, the photo I wanted was to cover the eight faces of the repeated advertisement with my masks. On the way home, the Kmart window display on Lafayette Street was perfect for taking a few photographs, sticking drawings to the windows. One is absolutely fantastic and crazy. A woman was sitting on a small landing, smoking a cigarette and probably waiting for a bus, I couldn’t resist the temptation of asking her to hold one of my masks over her face. Later, two security guards in a car park, and then a full group of eight people in Washington Square. Two days later I brought a stepladder out of my house and put a mask on the statue of Fiorello Laguardia that was right in front of my workshop. The photograph is delirious. Actions with masks and face coverings have become a “classic” of mine. Taking over the streets, from my point of view, is a natural evolution of the pieces that I painted in 1994 about advertising fences in Paris.

Afterward, I did the opposite movement for years, bringing those fences indoors from the street to the gallery and the museum.

Inopportune movements. For years, there has been a trend of video and photography, installations and “gadgets”, so, the proper choice would have been to stay at home painting in peace. Now it seems like there has been a generalized shift towards painting, so it seems logical to go outside to the streets and take a walk and breathe a little fresh air.

What do you want your work to say?

I was born in Manchester to Spanish parents. My grandmother lived in Paris for 20 years. Since my childhood, travel has been a big part of my life. When developing as an artist it was logical that that sort of nomadism would be reflected in my work. I live to observe differences of thought, politics, psychology and sociology in the environments around me. My interest is not only limited to theory and research approaches, I want my work to transform depending on the country and the city I live in, the things I see and the people I interact with. We could say that this international perspective allows me more information and even more resources.

What do you think of the world of art at present?

I’ve been saying for a while now that art is going through an incredibly healthy phase, with a legion of artists doing extraordinary work. In my opinion, the problem at the moment is divided in two: On the one hand, there is a deep problem of hypertexualisation. We can hardly notice how the landscape around us is transforming, we cannot catch a glimpse of the immense change in models that is going to take place over the next decade. Within this “screenshot” we can observe that the hermeneutics are not progressing.

On the other hand, there is an incredible amount of misinformation with regards to the art market, which has been transforming at top speed and where the only true god is money. A series of merchants/shamans have managed to get themselves into a position where they dictate what is good and what will be in fashion next season. Within this “mainstream”, there are things that are truly exceptional and many others that aren’t worth the paper they’re painted on. Art collectors nowadays are in a tough spot, they have to discern between quality and the biased siren song. We are in the midst of a thick entropic fog, for sure.

Your paintings, are they for a museum, a gallery, a home?

Given the clean spaces (the white cube) provided by the museum and the gallery, this is where my work usually looks the best and where we can observe with greater “nudity” (without interference) all of the objective components of the piece. In a home, the piece becomes a powerful element of decoration. If somebody tells an artist that their work is decorative, we immediately come up in a rash. But it’s inevitable. If you hang an old metallic shutter from a business in your living room, with a strikethrough and a violin on it, like Tàpies did, you notice that what was intended to be challenging and provocative becomes completely natural in a decorative element. For this reason, and with the passage of time, I love having pieces of my work hanging in the homes of my collectors/ friends and, why not, in a restaurant, a celebration hall, the design of a magazine cover or used as spectacular packaging for a certain product.

a decoración del hogar se ha visto bombardeada por pequeñas obras hechas a mano, únicas y peculiares, que aportan la personalidad que cualquier objeto fabricado en serie no ha conseguido hasta ahora. En la actualidad, se ha convertido también en una actividad social para hacer tanto con amigos como en familia. Por eso hacer cerámica en grupo, por ejemplo, no solo mantiene tu creatividad ágil sino que es una de las mayores tendencias de este año 2022. Las preferencias se inclinan hacia aquello que trasmite una imagen natural y rústica, a la vez que expone la visión artística de aquel artesano que la ha moldeado durante horas y horas.

Sin embargo, la artesanía abarca mucho más que una tendencia en decoración: se ha convertido en un estilo de vida. Se utilizan técnicas rudimentarias, materiales naturales y productos sostenibles que sintonizan con cada rasgo de esta nueva forma de expresión cultural. Este uso de las técnicas tradicionales pone en relieve la creación de objetos únicos y la búsqueda de permanecer en el momento presente, algo que a muchos ya les resulta adictiva.

ome decoration has been flooded by small, unique and individual hand-made pieces that bring the personality that any mass-produced object has not been able to achieve. At present, it has also become a social activity to enjoy with both friends and family. For this reason, creating ceramics as a group, for example, doesn’t only keep your creativity on its toes but also is one of the biggest trends for this year 2022. Preferences are moving towards objects that transmit a natural and rustic appearance, while also showing the artistic vision of the artisan who spent hours and hours moulding it.

However, artisanal handicrafts cover much more than just decoration trends: they have become a lifestyle. Rudimentary techniques, natural materials and sustainable products are used that harmonise with each feature of this new type of cultural expression. This use of traditional techniques highlights the creation of unique objects and the search to remain in the present moment, and is becoming a true addiction for some.

ylvie, the founder of Tado, a shop in Madrid, has built a place of worship for contemporary handicrafts that has charmed both amateurs and experts in the sector. It started out as an antiques shop created by two friends, until 7 years ago she decided to take on the challenge of running Tado by herself and thus allow space for everything she loved and couldn’t find in Madrid: artisanal handicrafts that highlight the value of the pottery and ceramic professions, with preference for local pieces. The most commonly used materials are those that are close to nature and transmit serenity. “Working with a noble and precious material, in its multiple forms of development, brings us back to what we are losing at incredible speed: the time taken for well-done work, the contact and total creation of a natural material, a tradition that isn’t just “for museums” and that allows us to develop by immersing ourselves in centuries of experimentation, cultural mixes and great personal efforts”, she says.

Comenzó siendo una tienda de antigüedades que había sido creada por dos amigos, hasta que hace 7 años decidió emprender el viaje de quedarse en exclusiva con Tado y así dar espacio a todo aquello que le apetecía y no encontraba todavía en Madrid: una artesanía que pusiese en valor el oficio del alfarero y ceramista, de preferencia local. l igual que todas las tendencias, siempre hay un detonante que lleva a convertir algo en el nuevo objeto de deseo. En este caso, la nueva cultura que dice ‘no’ a la moda de usar y tirar mientras anhela una vida lenta y de valor, hizo que las tendencias textiles y de decoración también hayan querido formar parte de esta transición. “El estilo va con una época y ahora es el momento de redescubrir la artesanía como en los años 70.

afael Canogar disfruta de reinventarse. Desde sus principios, a los muy jóvenes 16 años, ha querido expresarse de manera distinta, porque la búsqueda es también parte de su método.

Lo que nunca ha dejado atrás es la pintura, que define como su medio: "Creo enormemente en la pintura. Y en esa manifestación única e irrepetible del creador". Informalista a finales de los 50, uno de los fundadores del revolucionario Grupo El Paso, miembro de la vanguardia del arte abstracto en España... Canogar ha estado en muchos momentos trascendentes de la historia española del arte, es hoy un artista que se estudia y se expone en los mejores museos del mundo... y sigue en activo, y reinventándose, a sus 86 años.

Hoy pinta con metacrilato -antes sacó su pintura del lienzo para hacer arte más social en los 60's, por ejemplo, o pintó con espátula. "Trabajo mucho y entonces necesito, cada 10 o 12 años, renovarme, cambiar. Mis periodos son una especie de collar, cada uno es una cuenta, pero hay un hilo conductor y creo que en lo que estoy haciendo ahora hay una recuperación del gesto, del periodo informalista pero de otra forma.".

afael Canogar likes to reinvent himself. Ever since he started out, as a 16 year old, he has wanted to express himself in different ways, because the search is also part of his method.

One thing he has never left behind is his painting, which he defines as his vehicle: “I have enormous belief in painting. In that unique and inimitable manifestation of the creator.” An informalist towards the end of the 50s, one of the founders of the revolutionary Grupo El Paso, a member of the forefront of abstract art in Spain… Canogar has been present in many transcendental moments of the history of Spanish art. Today, he is an artist that is studied and exhibited in the best museums in the world… and he remains active, and reinventing himself, at 86 years of age.

Today he paints with methacrylate, he moved his painting away from canvases in the 60s to create more social art, or painted with a spatula.

“I work a lot and so I need, every 10 or 12 years, to reinvent myself, to change. My eras are like a necklace, each one is a bead, but there is a common theme and I think what I’m doing now includes a recovery of gestures, of the informalist era but in a different way.”

MI OBRA SIEMPRE HA TENIDO ESPONTANEIDAD

C E ada etapa, y sus materiales y su método, han representado su relación con el mundo y consigo mismo.

Por ejemplo, quiso retratar la relación del hombre con la tierra en sus primeras obras y pintaba con las manos, arando con los dedos y dejando pasar la pintura entre los surcos y, en los sesenta, sacó la obra del lienzo sumando escultura y fotografía para representar la necesidad de un cambio social.

Su regreso a lo abstracto tiene que ver con su interés actual. "Mis búsquedas tienen que ser de alguna forma esa búsqueda de lo trascendental, de algo que no se puede expresar o buscar nada más que con la abstracción".

Y sí detrás de toda su obra hay una necesidad de expresarse, lo que no hay es una premeditación fría.

"Mi obra ha tenido siempre espontaneidad y en eso no puedo cambiar".

e is prolific and finds deep enjoyment in art. He is also a collector and has a house full of pieces both of his own and by others –including some of his first pieces, all sold at the peak of his career in the beginning, which he has recovered– that he likes to contemplate in his private space. He has two studios: one which is open, where the doorbell rings, photographs are taken, interviews are conducted, meetings are held… and another where he is alone with his canvases and his ideas… that one is exclusively for him.

Canogar has a career spanning 70 years. Yes, it really is that long. And he has never grown tired of it… He has always stayed current, even when faced with the arrival of new generations and new expressions. He is and always will be a painter. “Painters don’t retire. For me, painting is a way of life.

It has filled every hollow, all of my needs. I feel very fulfilled when I paint and I need all of the time I have, or even more, to paint. I will be a painter for as long as I can.”

Es, además, coleccionista y su casa tiene obras ajenas y suyas -de hecho de las primeras de su carrera, vendidas todas en su momento álgido del principio, ha recuperado algunas- que disfruta contemplar en su espacio vital. Y tiene dos estudios: uno abierto, en que suena el timbre, se hacen fotos y entrevistas y tiene reuniones, y otro en que está solo, con sus lienzos y sus ideas... ese es solo para él.

Canogar tiene una carrera de 70 años. Sí, es así de larga. Y nunca se ha cansado... siempre se ha mantenido vigente, incluso ante la llegada de nuevas generaciones y nuevas expresiones. Es y será siempre pintor. "Los pintores no nos retiramos. Para mí la pintura ha sido una forma de vivir. Ha llenado todos mis posibles huecos, mis necesidades. Me siento muy realizado pintando y necesito todo el tiempo que tengo, incluso más, para pintar. Seré pintor mientras pueda".

Mon Parnasse Nuevo caso de éxito Mon Parnasse surge gracias a la idea de crear un proyecto que revolucione el mundo de las floristerías, algo que no se hubiese hecho hasta la fecha. El objetivo era claro: Cambiar la cultura de las flores e influir positivamente en la vida de sus clientes. Su idea ha dado frutos y en 2022 decidieron abrir una nueva sede. Para ello acudieron al departamento de Locales e Inversiones de GILMAR, que encontró este local perfecto para la estética de Mon Parnasse. "Acudimos a GILMAR por su dilatada experiencia. Son grandes profesionales y lo hicieron todo muy fácil", explica Óscar Rozalén, uno de los socios de la floristería.

El local es un espacio ideal para poner en práctica sus objetivos de especializarse y ofrecer una experiencia única.

Aquí permiten a sus clientes jugar, tocar y experimentar a la hora de combinar las diferentes flores.

Toda la estética del lugar invita a entrar en un espacio único que no se asemeja a una floristería común: el primer impacto es un muro exterior repleto de flores. Una vez que se cruza la puerta aparece un jardín envolvente con calles, setos, aromas y hasta un cielo. Hay algo de laberíntico y mucho de juego en Mon Parnasse. Es un establecimiento que invita a ir caminando sin rumbo, a ir descubriendo bouquets, flores sueltas, palmeras...

Mon Parnasse came about thanks to the idea of creating a project to shake up the world of florists, something that hadn’t happened up to that time. The objective was clear: To change the culture of flowers and have a positive influence on the lives of the customers. The idea came to fruition and in 2022 the decision was made to open a new office. For this, the team turned to GILMAR’s Offices and Investment department, who found the perfect premises for the Mon Parnasse aesthetic. “We decided to turn to GILMAR because of its ample experience. They are fantastic professionals and they made everything really easy”, says Óscar Rozalén, one of the partners in the florist. The premises are the perfect place to undertake their objectives of specialisation and offering a unique experience. Here, they allow their customers to play, touch and experiment when it comes to different flowers.

The entire aesthetic in the place invites the customer to enter a unique space that is nothing like a typical florist: the first impact is an outer wall that is bursting with flowers. Upon crossing the threshold, an immersive garden appears with streets, bushes, aromas and even a sky. There is a hint of a labyrinth and a lot of fun to be had in Mon Parnasse. It is an establishment that invites us to wander aimlessly, to discover bouquets, loose flowers, palm trees…

IFEMA Madrid Horse Week es uno de los mayores espectáculos hípicos del mundo y GILMAR no podía faltar. Y no solo eso, los consejeros delegados, Manuel Marrón Fuertes y Jesús Gil Marín, decidieron dar un paso más y patrocinar el Trofeo GILMAR, un CSI 1* con obstáculos de 1,25 m, que el propio Gil Marín puso en manos del ganador. El premio al segundo clasificado lo entregó la directora de Relaciones Institucionales, Rocío Gil Oset.

Durante el encuentro, el palco de GILMAR recibió a una gran cantidad de personalidades del mundo del deporte, la sociedad, la cultura, la economía, la empresa... que vivieron una experiencia única en el entorno de la mejor competición del mundo del caballo.

Not only that, but the CEOs, Manuel Marrón Fuertes and Jesús Gil Marín, decided to go one step further and sponsor the GILMAR Trophy, a CSI 1* with 1.25m obstacles, that Gil Marín himself handed to the winner. GILMAR Real Estate Canarias se ha involucrado en la iniciativa del Torneo benéfico en Buenavista Golf por La Palma participando como co-patrocinador. El evento contó con la participación de 80 jugadores. En total, la recaudación obtenida ha ascendido a 5.930 euros, que fueron enviados a la Federación Española de Golf, que involucró a todos los campos de golf de España en la celebración de campeonatos benéficos como este. Una vez que finalizado el ‘circuito’, la RFEG entregó la recaudación total a las personas afectadas por la erupción del volcán de la isla de La Palma.

GILMAR Real Estate Canarias got involved with the initiative of the Charity Tournament at Buenavista Golf in aid of La Palma by participating as a co-sponsor. 80 players took part in the event. In total, €5,930 was raised, which was sent to the Spanish Golf Federation, which had connected all of the golf courses in Spain to celebrate charity tournaments such as this one.

Once the circuit was complete, the SGF delivered the total amount raised to those who were affected by the volcano eruption on the island of La Palma.

CUSTODIO ZAMARRA es El Sumiller (con mayúscula) de España. Tras 40 años en Zalacaín, sigue amando y narrando el vino con la misma pasión y sabiduría.

After 40 years in Zalacaín, he still loves and talks about wine with the same passion and knowledge.

C

ustodio Zamarra es un narrador. Y lo es no solo porque es capaz de contar, y muy bien, su histórica trayectoria en el mundo del vino español en las últimas décadas.

Lo es también porque como sumiller su labor ha sido la de contar la historia del vino que llega a cada copa. Zamarra comenzó joven (primero en bares de su familia) y con solo dos libros bajo el brazo, como guía y educación, cuando se le puso a cargo de los vinos en el recién abierto Zalacaín. Lo que siguió fue la carrera de un precursor que abrió puertas y colaboró con el respeto y la profesionalización que existe actualmente en la profesión de sumiller en España.

Para Zamarra, que tras más de 40 años se retiró de su querido Zalacaín, el sumiller tiene la misión de hacer felices a los demás. "Nosotros no somos los protagonistas. Tenemos que hacer protagonistas a quienes están sentados en la mesa y hacer que disfruten. Nosotros somos narradores de historias, con brevedad y sencillez. Somos quienes cerramos el ciclo del vino en el restaurante".

ustodio Zamarra is a storyteller. This is not just because he can paint a detailed picture of his historic career in the world of Spanish wine over the last few decades. It’s also because, as a sommelier, his job has been to tell the story of the wine arriving in each glass. Zamarra started out young (first in bars belonging to his family) and with just two books under his arm, as his guide and education, when he was put in charge of the wine in the recently opened Zalacaín. What followed was the career of a pioneer who opened doors and collaborated with the respect and professionalism that is currently owed to the profession of the sommelier in Spain.

For Zamarra, who retired from his beloved Zalacaín after over 40 years, the sommelier’s mission is to make others happy. “We are not the protagonists. We have to make sure the protagonists are those who are sitting at the table and make sure they enjoy themselves. We are storytellers, short and sweet. We are the ones who close the loop for wine in the restaurant”.

l vino es el mundo de Zamarra. Habla de él, de sus historias, de su proceso de elaboración y de su disfrute con el aplomo del experto y la humildad de un hombre que no tiene ego. Se le ilumina el rostro cuando se le habla de Jerez, ese productor de vinos generosos únicos que tan poco valorado está. "En España tenemos 15 o 20 vinos que están entre los100 mejores del mundo y no lo sabemos vender. No creo que nadie que sea amante del vino coja una copa de un amontillado, un palo cortado o un oloroso y no se emocione. Son los grandes desconocidos".

No le falta una copa de vino en su casa, dice. Come y cena con vino y tiene su propia bodega, de la que disfruta también abrir botellas para compartir con su esposa o en cenas organizadas con amigos en casa.

No le gusta la palabra maridaje, prefiere decir armonía. Y cree en que las armonías no tienen que ser solo las que guía el sentido común, sino que también son válidas dependiendo de los gustos de cada uno...

Custodio Zamarra no pretende imponer su voz a nadie, prefiere hablar y escuchar, entender quién va a tomarse el vino y darle lo que vaya a hacer que su velada sea inolvidable. .

Actualmente, da charlas y clases, pero Zamarra aún sueña con el servicio diario en Zalacaín tras casi nueve años de su despedida. Ya no trabaja en el restaurante, pero su amor por su profesión y su tiempo allí lo siguen hasta sus sueños. "Ahora tengo una libertad que no tenía. Pero me encanta mucho el público, es mi premio más importante. Cuando al final de la noche te dan la mano y las gracias, eso es impagable".

ine is Zamarra’s world. He talks about it, about its history, about the production process and enjoyment with all the aplomb of an expert and the modesty of a man with no ego. His face lights up when talking about Jerez, the producer of unique and generous Sherry wines that are so undervalued. “In Spain, we have 15 or 20 wines that are among the top 100 in the world and we don’t know how to sell them. I don’t think that anybody who is a wine lover can pick up a glass of Amontillado, Palo Cortado or Oloroso and not get excited. They are the great unknown.”

He’s never short of a glass of wine in his home, he says. He has a glass with lunch and dinner and has his own cellar, from which he takes bottles to enjoy with his wife or at dinners that he organizes with friends at home. He doesn’t like the word pairing, he prefers to say harmony. He doesn’t think that harmony needs to be guided by common sense, but rather that it is valid depending on each person’s preference…

Custodio Zamarra has no intention of imposing his own criteria, he prefers to talk and listen, to understand the person drinking the wine and bring them something that will make their evening unforgettable.

He no longer works in the restaurant but his love for his profession and his time there pursue him even in his dreams. “Now I have this freedom that I didn’t have before. Todo comenzó después de que Marcos Granda –el chef asturiano que ya colecciona varias estrellas Michelin– visitara Japón en enero de 2020. intai, a Japanese restaurant, can be found is a privileged part of the city of Marbella. Everything started after Marcos Granda –the chef from Asturias who already has a collection of several Michelin stars– visited Japan in January 2020. This sparked his interest in creating a new concept built around silence, liturgy and the delicacy of Japanese cuisine. After a painstaking search for the perfect people to undertake the task, they opened to the public in March 2021 in this unparalleled city in Malaga. The concept of the restaurant is to offer two menus at the bar to just 12 diners. At Nintai, the chef highlights Sina tire dish, a dish consisting of tuna back cheek in its broth and red onion.

MARINA RIVAS ES AUTORA DE COCINA JUNTO A SU SUEGRA, INÉS ORTEGA.

A

Marina Rivas siempre le gustó mucho la cocina. Desde pequeña era la encargada oficial, en su casa, de preparar los postres. Pero no fue hasta que su suegra lo sugirió, que se planteó estudiar en Le Cordon Bleu. Su suegra es Inés Ortega, hija de Simone Ortega (la autora de 1080 recetas de cocina), que es también una autora de gastronomía en su propio derecho. No es de extrañar entonces que Marina escuchase su sabiduría. “Cuando acabé mi formación en cocina y pastelería, Inés me propuso formarme con ella y ayudarla a escribir los libros de cocina y las recetas de la revista ¡HOLA!, por supuesto, yo acepté con mucha ilusión”.

Trabajar con Inés suponía entrar a formar parte de un legado culinario imponente. “El 1080 recetas de cocina de Simone Ortega ha enseñado a cocinar a tres generaciones de españoles e Inés ha seguido cuidando ese legado, con más de 40 libros publicados y más de 30 años escribiendo las recetas de la revista ¡HOLA! Para mí es una gran responsabilidad continuar con este legado y me siento muy afortunada y agradecida por tener la oportunidad de hacerlo. En los libros que llevo escritos con Inés, mi objetivo siempre ha sido dar importancia a la salud y a las nuevas tendencias, pero sin perder la esencia del 1080, tradicional, recetas sencillas, didácticas y que siempre salen”. Rivas es ahora, junto a Ortega, autora de varios libros de recetas (incluido uno centrado en recetas sabrosas para personas con intolerancias alimentarias) y tiene uno nuevo que saldrá a la venta esta Navidad.

arina Rivas has always loved being in the kitchen.

Ever since she was a little girl she was officially in charge, in her house, of preparing the desserts.

However, it wasn’t until her mother-in-law suggested it that she considered studying at Le Cordon Bleu. Her mother-in-law is Inés Ortega, daughter of Simone Ortega (author of 1080 recetas de cocina [1080 kitchen recipes]), and is also a gastronomy author in her own right. It’s no surprise then that Marina decided to follow her advice.

“When I finished my training in cooking and baking, Inés suggested training with her and helping her to write cookery books and recipes in ¡HOLA! Magazine, of course, I accepted right away”.

Working with Inés meant entering an impressive culinary legacy. “1080 recetas de cocina by Simone Ortega has taught three generations of Spaniards to cook and Inés continues to take care of that legacy, with more than 40 books published and over 30 years writing recipes for ¡HOLA! Magazine. For me, it is a great responsibility to continue this legacy and I feel very lucky and grateful to have the opportunity to do so. In the books that I’ve written with Inés, my purpose has always been to highlight the importance of health and new trends, but without losing the essence of 1080, traditional, simple recipes that are instructional and always turn out right.” Rivas is now, together with Ortega, the author of several recipe books (including one focused on tasty recipes for people with food intolerances) and has a new one ready to come out this Christmas.

Marina disfruta de cocinar en casa. Lo hace "sin rizar el rizo" pero sí le gusta improvisar. Cuando invita gente a cenar a casa, aunque le cuesta elegir un plato favorito, dice que suele cocinar solomillo al horno con salsa. Esta casa, a la que vienen sus invitados y en la que ha visto crecer su familia, fue fácil de encontrar (porque contó con ayuda): "Buscaba una casa bonita, donde poder formar una familia, cerca de buenos colegios y en una zona agradable. Todo ello ajustado a nuestro presupuesto. Gilmar supo combinar todos estos ingredientes y ofrecerme lo que necesitaba".

Marina enjoys cooking at home. She cooks without “making a fuss” but she does like to improvise. When she invites people to her home for dinner, though she finds it difficult to choose her favourite dish, she says she usually cooks sirloin in the oven with sauce. The house that her guests come to and where she is raising her family was easy to find (because she had help): “I was looking for a nice house, where I could raise a family, near to good schools and in a pleasant area. It had to fit with our budget, too. Gilmar knew how to mix all of these ingredients and offer me what I needed.”

odos los hombres cocineros reivindican a sus madres, tías o abuelas como maestras de la cocina porque las mujeres eran las que cocinaban en casa. Creo que es cuestión de prioridades, al fin y al cabo, tradicionalmente las mujeres siempre han puesto por delante a su familia y ser madres, y los hombres su carrera profesional. El trabajo en cocina es muy competitivo y con horarios muy amplios, y para una mujer es difícil compaginar con la vida familiar.

Cualquiera puede ser lo que se proponga, pero esa es la cruda realidad”.

Marina no solo se concentra en desarrollar recetas, sino en que sean saludables: “Creo que es una tendencia que ha llegado para quedarse. La conciencia por la salud y por intentar comer más saludable es cada vez mayor.

Tenemos la suerte de vivir en un país mediterráneo, con una dieta rica en aceite de oliva, frutas, verduras, legumbres, granos, frutos secos, hierbas y especias, pescados y mariscos y diferentes tipos de carnes”. Y este año comienza un curso de Health Coach que ha querido hacer durante mucho tiempo y con el que complementerá su ya basto conocimiento.

ll male chefs defend their mothers, aunts or grandmothers as kitchen experts because women were always the ones to cook at home. I think it’s about priorities, at the end of the day, women have always put their family and their role as mothers first, while men have put their professional careers first. Working in a kitchen is very competitive with very long hours, and for a woman this is difficult to combine with family life. Anyone can achieve whatever they aim for, but this is the harsh reality.”

Marina doesn’t only concentrate on developing recipes, but also on making sure that they are healthy: “I think that this is a trend that is here to stay. Awareness about our health and trying to eat healthier food is always growing. We are lucky enough to live in a Mediterranean country, with a diet that is rich is olive oil, fruit, vegetables, pulses, cereals, nuts, herbs and spices, fish and seafood and different types of meats.” This year, she is starting a Health Coach course that she has wanted to do for a long time and that will add to her already extensive knowledge.

180g de harina de espelta integral 1 cucharadita de canela 1 cucharadita de bicarbonato sódico 3 plátanos maduros + 1 para decorar 1 huevo 80g de aceite de oliva 55g de miel 100% pura 100g de chocolate negro 85%

- Precalienta el horno a 200°C. - En un bol, añade la harina, la canela, el bicarbonato y mezcla bien.

- En otro bol, añade los plátanos en trozos y aplástalos con un tenedor.

- Añade el huevo, el aceite, la miel y el chocolate en trozos y mezcla.

- Mezcla los ingredientes secos con los húmedos, hasta que quede todo bien incorporado.

- Engrasa un molde con un poco de aceite y vierte la mezcla en él.

- Corta un plátano a lo largo (por la mitad) y colócalo encima.

- Hornea a 180°C durante 45 minutos aproximadamente.

- Déjalo enfriar y desmóldalo.

-Preheat the oven to 200 °C. -In a bowl, add the flour, cinnamon, baking powder and mix well.

-In another bowl, add the diced bananas and mash them with a fork.

-Add the egg, oil, honey and chocolate chips and mix.

-Mix the dry ingredients with the wet ingredients until everything is fully blended.

-Grease a baking tin with some oil and pour the mixture into it.

-Cut a banana lengthways (in half) and place it on top.

-Bake at 180 °C for approximately 45 minutes.

-Allow to cool and remove from the mould.

N°2 Sweet and sour fish

Pescado agridulce Lomo de pescado glaseado con miso, cítricos e hinojo

- Cortar en dos trozos el lomo de merluza y salpimentar ligeramente. Reservar.

- Calentar el vinagre, el vino, la salsa de soja y la miel o el azúcar hasta que se disuelva.

Retirar y mezclar con el miso y el aceite de oliva virgen extra. Reservar.

- Cortar el limón, la naranja y el hinojo en rodajas finas. Salpimentar el hinojo.

- Dorar el hinojo en una sartén. Retirar.

- Marcar los rodajes de cítricos en la misma sartén y reservar.

- Marcar el pescado por ambos lados, empezando por la parte de la piel. Dependiendo el grosor de los lomos llevará más o menos tiempo. Glasear por ambos lados con la mezcla de miso.

- Poner una base de cítricos e hinojo en una fuente de horno engrasada, encima el pescado ya marcado y glaseado con la mezcla de miso.

- Llevar al horno unos minutos y retirar.

- Servir con la salsa sobrante, ralladura de limón y con hojitas de orégano fresco e hinojo.

400 gr de lomo de pescado 2 cucharadas de miso rojo 1 1/2 cucharada de vinagre de arroz 2 cucharadas de vino blanco 2 cucharas de miel o 40 gr de azúcar de coco Una cucharadita de salsa de soja suave 1 cucharadita de aceite de oliva Un bulbo pequeño de hinojo Media naranja 1/2 limon en rodajas Orégano fresco Sal y pimienta recién molida

INGREDIENTS + 400g of fish fillet + 2 tablespoons of red miso + 1 ½ tablespoon of rice vinegar + 2 tablespoons of white wine + 2 tablespoons of honey or 40g of coconut sugar + 1 teaspoon of mild soy sauce + 1 teaspoon of olive oil + 1 small fennel + Half an orange + ½ sliced lemon + Fresh oregano + Freshly ground salt and pepper

-Cut the hake fillet into two pieces and lightly add salt and pepper. Put to one side.

-Heat the vinegar, wine, soy sauce and honey or sugar until it dissolves. Remove from the heat and mix with the miso and extra virgin olive oil. Put to one side.

-Cut the lemon, orange and fennel into thin slices. Add salt and pepper to the fennel.

-Fry the fennel until golden brown. Remove from the heat.

-Sear the citrus slices in the same pan and put to one side.

-Sear the fish on both sides, starting with the side with the skin. Depending on the thickness of the fillets, this will take more or less time. Glaze both sides with the miso mixture.

-Place in the oven for a few minutes, then remove.

-Serve with the remaining sauce, lemon zest and fresh oregano and fennel.

N°3 Warm salad

Ensalada templada Verduras tiernas, burrata y hierbas

INGREDIENTES + 4 burratas pequeñas o 2 grandes + 160 ml de aceite de oliva virgen extra + Corteza de naranja cortada en juliana + 1 manojo de espárragos verdes + Una taza de tirabeques + 1/2 taza de habitas tiernas +U na taza de microbrotes de rúcula, remolacha, berros + Una ramita de hierbabuena fresca + Sal y pimienta recién molida

4 RACIONES | FÁCIL 4 RATIONS | EASY

INGREDIENTS + 4 small or 2 large burrata + 160ml of extra virgin olive oil + Shredded orange peel + 1 handful of green asparagus + 1 cup of mangetout + ½ cup of broad beans + 1 cup of micro rocket, beetroot, watercress + 1 sprig of fresh mint + Freshly ground salt and pepper

ELABORACIÓN - Poner a hervir agua. En el momento de ebullición se sumerge la juliana de naranja 30 segundos y se cuela, pasándola por el chorro de agua fría. Escurrir y secar.

- Calentar a fuego medio bajo el aceite. Retirar y añadir la corte en juliana de la naranja. Dejar infusionar al menos 1 hora.

- Las verduras las pasaremos por el mismo proceso, excepto las habitas tiernas que deberán estar un poco mas de tiempo en agua hirviendo.

- Pelar las habas, reservar.

- Hervir en un cazo agua suficiente y sal para blanquear las verduras.

Una vez llegue a ebullición, se sumergen los tirabeques un minuto, se sacan con una espumadera y se pasan a un bol con agua muy fría.

- A continuación se sumergen los espárragos ya limpios y se dejan 1 minuto, sacar, escurrir y poner en agua muy fría.

- Por último se sumergen las habitas en el agua hirviendo y se dejan unos 2 o 3 minutos. Hasta que se abra la cascara exterior. El tiempo de cocción no deberá ser mucho más porque las habitas ya están muy tiernas.

Cortarlas, y pasarlas a un recipiente con agua muy fría. Pelarlas y reservarlas.

- Escurrir las burratas ( se pueden poner unos minutos sobre papel absorbente, así no nos soltará el suero en el plato).

- Mezclar en un bol las verduras escurridas y secas y aliñarlas con el aceite infusionado de naranja.

- Distribuir las verduras sobre cada plato, poner una burrata en trozos.

- Espolvorear con los micro brotes, las hojas de hierbabuena, pimienta negra recién molida y regar con el aceite infusionado con naranja.

STEPS -Bring water to the boil. Once boiling, submerge the shredded orange for 30 seconds and strain, pouring cold water over it. Drain and dry.

-Warm the oil over a medium heat. Remove from the heat and add the shredded orange. Allow to marinate for at least 1 hour.

-We will repeat this process with the vegetables, except the broad beans that need to be in boiling water a little longer.

-Peel the beans and put to one side.

-In a pot, boil sufficient water and salt to blanch the vegetables. Once boiling, submerge the mangetout for one minute, remove with a skimming spoon and place in a bowl with very cold water.

-Next, submerge the clean asparagus and leave for one minute, remove, drain and place in very cold water.

-Finally, submerge the broad beans in the boiling water and leave for two to three minutes, until the outer shell opens. The cooking time should not be much longer because the broad beans are already quite soft.

Cut them and place them in a recipient with very cold water. Peel and put to one side.

-Drain the burrata (they can be placed on absorbent kitchen paper for a few minutes so that they don’t leak on the plate).

-Mix the drained and dry vegetables in a bowl and use the orange-infused oil as a dressing.

-Serve the vegetables onto each plate, add pieces of burrata.

-Sprinkle with the micro herbs, the mint leaves, freshly ground black pepper and pour over the orange-infused oil.
