Always my favorite time of year, the holidays are once again upon us. Family and tradition take first place and as a publisher and mom, I have to “work” to make this as non-stressful a time as possible. Fat Transfer C

urrently fat transfer is all the buzz, from plumping up sagging faces to rejuvenating breasts. As with any procedure or new device, fat transfer has its own history, along with its shortcomings and advantages. In the 1980s, liposuction became a widely available technique for the harvesting of adipose tissue (fat). With the advent of liposuction came the ability of a physician to take out unwanted fat and transplant it to another area on a patient’s body. Patients would now have the choice of using their own fat to rejuvenate their face or give their buttocks a lift. One of the advantages to this “new” technique was that the transplanted fat came from the patient’s own body and wouldn’t be rejected. Now you would have a technique that would be natural and long lasting. Because fat transfer lasts for years, it offers a real advantage over Botox Cosmetic™ and dermal fillers like Radiesse™ and Juvederm™. Dermal fillers are metabolized and absorbed by the body over months and can become quite expensive over the course of treatment. In addition, patients who need large volume filling may require so much filler that the price outweighs the results. In my experience, older patients who need extensive filling never get the correct filling they need or are looking for. With fat transfer you are only limited by the amount of fat a patient has stored on their body. Transplanted fat can be used to fill aging hands, fill wrinkled faces, lips, under eyes, or to create a more curvaceous buttocks and enlarge breasts. Fat transfer is performed by using a liposuction technique to harvest the fat and then it is prepared for transfer. The fat is prepared by isolating the “best” fat that will have long term survival. The physician generally injects greater than 30% of the intended volume because not all of the transplanted fat will survive. The procedure is performed under local anesthesia with light sedation. The patient is given antibiotics prior to the procedure. Immediately after the procedure the patient will be swollen and may have mild to moderate bruising. Of course no procedure is without risks. The risks of bleeding, hematoma (a pool of blood under the skin), infection, nerve damage or wound dehiscence (when a wound opens) can all happen. Most complications are well managed without long term complications.

Varicose and Spider Veins State-of-the-Art Office Treatments

V

aricose veins appear as dilated or bulging leg veins while spider veins are visible on the surface in red or purple configurations. People often seek treatment for varicose and spider veins because they are unsightly. These abnormal veins can also cause multiple symptoms including pain, throbbing, burning, swelling, fatigue, phlebitis, discoloration and ulceration. The management of varicose veins has been revolutionized since the development of a special procedure called Endovenous Laser Treatment (EVLT®). This technique has become the state-of-the-art varicose vein treatment, eliminating the need for traditional surgery. The procedure involves sealing the main abnormal vein by passing a thin laser fiber through a small puncture wound in the skin. It is performed in the office under local anesthesia and it takes less than an hour. Due to the ease of this method there is no age limit and it is also covered by most insurances. The Laser Ablation is usually combined with a procedure called Phlebectomy. This involves removing the bulging varicose veins through small puncture sites with the use of special micro-hooks. Sometimes it is done as a separate procedure. The technique used to treat spider veins is called injection Sclerotherapy. It requires injecting a special solution into the veins using tiny needles. Depending on the extent of the problem multiple treatment sessions may be needed. Some veins resolve quickly and some fade away gradually. After people undergo either EVLT® or Sclerotherapy they can return to normal activity right away. Both methods have been proven to be very safe and highly effective. Most people experience improvement or resolution of their associated symptoms and they are very pleased with the cosmetic result. If you have problem varicose or spider veins you should consult a vascular surgeon specializing in venous disorders. After examining you and performing a Venous Doppler (ultrasound) Study the vascular surgeon will be able to determine if you are a candidate for EVLT® and Sclerotherapy. Two prospective patients came into the office recently with the same complaint. Both had lost all of their

teeth and were wearing worn-out and ill-fitting dentures. Their dentures were loose; they had trouble eating foods they would have liked; their faces had that sunken-in look and they were in pain. Their previous dentists recommended implants to stabilize the dentures. The problem was that as they were both retired and on fixed incomes they could not afford implants. What to do? Yes, implants are a wonderful service and have revolutionized what we can do to improve lives. I love implants! But due to the laboratory and materials costs involved, they are expensive. My approach is different from

other dentists. I make new, customfitted dentures for my patients and explain to them that if the new dentures don't fit and function well, we can then add implants. My experience is that the denture patient does very well with the new dentures and often decides not to add the implants. Implants are always an option but they don’t have to be the first option. I believe that patients like these can be well served with well-fitting dentures.

hat dental question do I get asked the most? You guessed it teeth whitening. Everyone wants whiter teeth! It's great to have sparkling white teeth but with so many options - how do you choose? Over-thecounter white strips? The mall kiosk? In-office Zoom or BriteSmile? At-home professional whitening? How much lighter will your teeth get? How long will the whitening last? Will it damage the teeth? Will it cause sensitivity? First, let me say that you need to begin with a professional dental exam. The teeth need to be free of plaque, stain, and calculus and free of cavities or dark fillings. Also the teeth need to be examined for crowns, veneers or composite fillings - all of which will not bleach. You should also be free of gum disease, and you need to avoid smoking and acidic foods. All of this is why I don't favor white strips (because one size doesn't fit all) or the whitening kiosk - because the personnel are not dentists or hygienists.

Professional tooth-whitening options include inoffice bleaching or at-home bleaching. For the in-office bleaching, the dentist first applies a protective gel or a rubber shield to protect your gums. The bleach is then applied to the teeth, and a special light is used to facilitate the whitening agent. The procedure takes about an hour, and at-home trays are supplied in order to enhance the procedure. For the at-home professional teeth whitening procedure, the dentist takes an impression of the teeth, which is used to make a model on which custom bleaching trays are fabricated. At home, the patient applies the bleaching gel to the trays, which are worn about 8 hours a day for 7-10 days. The patient is in control so if the teeth whiten enough in fewer days, he/she can stop the treatment. Patients keep the trays and the gel so if their teeth darken a year later, they can reapply the bleach. You may want to speak to your dentist about side effects such as sensitive teeth and soft tissue irritation either from a tray that doesn't fit properly or from solution that may come in contact with the tissues. Water makes up one-fourth of the weight of a strand of hair. Eight to ten glasses of water a day are absolutely necessary to nourish healthy hair.

Essential Fats Healthy hair also needs two essential fatty acids, omega3 and omega-6, that are not produced naturally by the human body. Omega-3 fat sources: flax oil, algae, cold-water fish, darkgreen vegetables, hemp oil and pumpkin seed oil Omega-6 fat sources: borage, evening primrose oil, safflower oil, sunflower seeds, hemp seeds, corn and pumpkin seeds. lamour... sparkle... color... and... glitter ! That is the stuff Holiday make up is made of, at any age. So, don’t be afraid to sparkle and shine. The base for any make up look, of course, is your skin. Colder weather brings drier skin and a paler color. Be sure to moisturize! During the holiday season, for those special party looks, try a tinted moisturizer with a bit of shimmer, or add a pinch of glitter to your liquid foundation. A fine, loose glitter is best. It may sound intimidating, but when blended well and applied sparingly, it gives your skin a beautiful glow, perfect for a holiday party. Nothing says glamour like a smoky, sultry eye. For this eye look, apply eyeliner on top and bottom lash lines, and smudge with a sponge-tip applicator or the corner edge of a make up wedge. Give a little smudge upward at the outer corner of the eye. Shimmer eye shadows are great at softening the eye and a good choice for women over 40. You can use a shimmery shadow on the lid and just under the eye bone. Make sure the shadow has a light shimmer or iridescence, not a frost. The heavy, frosty eye shadow look is outdated, and too aging. Combine this eye look with a nude, natural lip color. A gloss, perhaps with a hint of gold for the holidays, can be very sexy on the lips. A nice shimmery blush adds a holiday sparkle to your look. Another sexy look is a natural, muted eye with a redder lip. What better lipstick color for the holidays than red? Use a neutral shimmer eye shadow. This works best with less of an eyeliner look. Taupes, cocoas, even bronze eye shadows are perfect. Dark mascara frames the eye and works well with the neutral eye shadow colors. Choose a nice red lipstick that matches your skin tone. orangey for your coloring. A too-dark or heavy red can appear clownish. A nice shimmery blush in your shade of pink, rose or peach completes this look. NEVER use a heavy eye AND a heavy red lip together. Combining these can lead to a masquerade look, and is very aging. Choose either the smoky eye/nude lip look, or the neutral eye/red lip look - one or the other! A little touch of gold always adds to the holidays. There are numerous products out there for eyes, lips and cheeks which add just a hint of gold to your look. There are lipsticks and glosses with gold flecks, blushes, foundations and tinted moisturizers with a gold shimmer, and of course, eye shadows with a light touch of gold iridescence. If you choose not to buy all new products for a holiday look, try glittering up what you have with a little loose, gold glitter or a gold shimmer cream. Make sure it is very fine and use it sparingly. You can also add a little to any powder eye shadow. A light dab across the lips or into the lip gloss sparkles up any pout. If you do use a little shimmer in your face, remember to bring it down to the neck, shoulder and chest areas. When wearing a low cut, off the shoulder or even strapless party dress for that fancy New Year’s Eve party, remember to apply some shimmer to your skin. What Is That Annoying Sound In My Ear? I

t is estimated that fifty million Americans suffer from tinnitus, often described as an annoying ringing, buzzing, humming, roaring or hissing in the ear. The term tinnitus does not refer to a single disorder, but a collection of symptoms that may have a number of different causes. This in turn can cause a physiological response, such as anxiety and stress, which in turn can worsen the tinnitus. The good news is that we no longer have to accept the advice “You’ll just have to live with it.” There are a number of treatment plans that can help with the disturbance caused by tinnitus. Some have been proven to reduce the disturbing effects of tinnitus in 90% of those treated. Sometimes just getting information and counseling is enough to help. But step number one is to consult with a physician to rule out the rare serious causes of tinnitus. Your Oral Health Most people know that it is important to see their dentist twice a year to get their teeth cleaned and check for cavities and gum disease. But it is just as important for your dentist to do an oral cancer screen. Unfortunately, there are about 36,000 new cases of oral cancer diagnosed each year. And as is the case with most cancers, early detection is very important, yielding an 80 to 90 per cent survival rate. Tobacco use is still the most common cause, especially when mixed with alcohol use. However, human papilloma virus (HPV – the cause of cervical cancer in women) has been increasingly found to be a causative factor. In between visits to your dentist, it is important for you to look for changes in your mouth. You should take note of any growths, ulcerations (open sores) or

discoloration of the gums, the inside of the cheek, the tongue, the floor of the mouth (under the tongue) or the roof of the mouth. While the vast majority of changes in the mouth are benign (not cancer), it is often necessary to perform a biopsy to know for sure. And sometimes growths may need to be removed because they interfere with normal eating, are painful because they get bitten or, simply put, “ugly.” As an oral and maxillofacial surgeon, Dr. David Miller is specifically trained in diagnosing and treating these types of problems. If you, or your dentist, notice anything suspicious in your mouth, you should be seen for a consultation. Dr. Miller will perform a thorough oral exam and discuss whether or not any treatment is necessary. If a biopsy needs to be performed, it can be done using local anesthesia (“Novocain”) and usually takes only a few minutes. Getting to the Heart of the Matter What is Heart Failure?

Heart Failure, also called Congestive Heart Failure, CHF, is a condition in which the heart can no longer pump enough blood to the rest of the body. It can result from either a reduced ability of the heart muscle to contract or from a mechanical problem that limits the ability of the chambers to fill with blood. When weakened, the heart is unable to keep up with the demands placed upon it; blood returns to the heart faster than it can be pumped out so that it gets backed up or congested. CHF occurs most frequently in those over age 60 and is the leading cause of hospitalization and death. In over 50 percent of cases, sudden death occurs due to a cardiac arrhythmia, or irregular heartbeat. Although many conditions that lead to heart failure cannot be reversed, the good news is that heart failure can often be treated, with your help.

How can you manage your Heart’s condition: First, know the symptoms. • Shortness of breath with activity, or after lying down • Cough • Ankle, feet swelling • Swelling of the abdomen • Weight gain • Irregular, rapid pulse • Palpitations • Difficulty sleeping • Fatigue, weakness, faintness • Decreased alertness, concentration • Decreased urine production • Nausea, vomiting • Need to urinate at night

many people find that they experience increasing levels

of stress and pressure as the demands of shopping, decorating, housework and entertaining take a toll on them. In some cases these demands can spoil your holidays and even compromise your health. With a little planning and some positive thinking you can minimize the stress and depression that often accompany the holidays. You may even end up enjoying the holidays more than you thought you

would!

Be realistic. The holidays don’t have to be perfect or just like last year. As families change and grow, traditions and rituals often change as well. Choose a few to hold on to, and be open to creating new ones. For example, if your adult children can’t come to your house, find new ways to celebrate together, such as sharing pictures, emails or videotapes.

Plan ahead. Set aside specific days for shopping, baking, visiting friends and other activities. Plan your menus and then make your shopping list. That’ll help prevent last-minute scrambling to buy forgotten ingredients. And make sure to line up help for party prep and cleanup.

Stick to a budget. Many of us feel pressure during the holidays to spend beyond our means and without regard for our actual income. We also may lose track of expenses by counting “the number” of gifts we give rather than watching the totals we are cumulatively spending. Before you go gift and food shopping, decide how much money you can afford to spend. Then stick to your budget. Don’t try to buy happiness with an avalanche of gifts.

Learn to say no. Saying yes when you should say no can leave you feeling resentful and overwhelmed. Friends and colleagues will understand if you can’t participate in every project or activity. If it’s not possible to say no when your boss asks you to work overtime, try to remove something else from your agenda to make up for the lost time.

Don’t abandon healthy habits. Even die-hard holiday enthusiasts may find that the extra shopping and socializing can leave them wiped out. Being exhausted and overindulging increases your stress, creating a vicious cycle. Don’t let the holidays become a free-for-all. Have a healthy snack before holiday parties so that you don’t go overboard on sweets, cheese or drinks. Continue to get plenty of sleep and physical activity.

If your family is having problems, don’t try to patch them up now. Resist the temptation to patch up long-standing family problems. This is not the time of year to do that. It’s an emotionally charged time. People put a lot of importance on holiday celebrations. It’s easier to patch things up when things are less stressful.

he holidays are fast approaching and you want your home to look its company best. So what to do, if time is running out and your major decorating projects are still undone? For one thing, do not attempt to begin a design project that may leave you in a disrupted or incomplete state. It’s better to put off a kitchen renovation or a whole house paint job until after the holiday season. Instead, devote yourself to a major clean-up project. Start with the entry foyer and move into the living room, dining room and powder room areas. Throw out what is worn, put away articles that make your rooms look overly cluttered and donate what you don’t use anymore. A restful, orderly room can now be punched up and have a new look with simple additions such as area rugs, throw pillows, new curtains and some interesting art. Basic repairs should be a priority (leaky faucets, toilets that don’t work properly, etc.) Good lighting is also important. Make sure all lamps and fixtures do not have blown out bulbs. See to it that your front porch is well lit and free of leaves or ice so that no one is in danger of falling. Holiday decorations can usually transform a room into something special all by themselves. More may not be better. Proper showcasing can make inexpensive objects look grand and beautiful. Try to group holiday accessories as you might any other collectible. For example, your existing bookshelves may be the perfect place to display a whole Christmas village collection rather than on an additional table brought in taking up needed space. Focus on staircases with decorative garlands and plants. Fireplaces can also be wonderfully dressed for the season with mantle covers, candles and stockings. Most of all, place your tree in an area leaving enough space for presents and people opening them! Think about rearranging the furniture just a bit for maximum use and effect.

his is a question I get asked quite often, especially now with the holidays approaching. Most people think a single man over 50 meets tons of women and has his pick of any woman he wants. Q. Your book includes over a dozen 5-minute conversations we should use to confront relationship obstacles, but what are some of the simple things we can do in even less time to improve our relationships?

intimacy alive. Not only did they take each other for granted, they also suffered from repetitive bad fights that left lingering resentment and anger. Research shows that among married couples, 2/3 of fights are left unresolved, leading to the recycling of arguments. My discovery about the cause of relationship dissatisfaction was exciting because it meant that if I helped empower people with better verbal skills, they could single-handedly improve their relationship in one day.

Here are 5 key phrases you can use today to create an instant positive change in your relationship.

Key phrase #1: “You are such a generous person” Many people compliment the superficial things in others: “You look great in that dress” or “I love your new haircut.” External compliments are nice, but research shows that people prefer compliments for internal character traits such: “You’re such a kind, helpful or thoughtful person.” In the on-line survey we did for my new book Fight Less, Love More, we found that 84% of people want their mate to compliment them for being kind rather than good-looking.

Key phrase #2: “I never thought of it that way” Want to put a smile on your mate’s face? That’s simple: After your mate has explained his/her viewpoint on anything from a current event to your child’s behavior, ponder the comment and say, “I never thought of it that way.” It’s the respectful way to say that their opinion matters to you (even if you don’t agree with him or her). Once someone senses that you respect their ideas, they are more likely to listen to and respect yours.

Key phrase #3: “Good night” In our on-line study we found that 25% of the couples surveyed don’t bother to say “good night” to their partner. Fact: Of those who forget to say goodnight, 70% thought about ending the relationship in the last year. If you and your mate aren’t going to sleep at the same time, make it a habit to find your partner before you retire and say two caring words: “good night”. And why not add on “I love you”?

Key phrase #4: “Thank you for ____” Each day find something to thank your mate for. If you have trouble finding something, ask yourself, “what did he/she do today that I didn’t have to do?” Answers could be: take out the garbage, help your child with homework, pick up a pizza, etc. When your mate does something you expect him/her to do, it’s still worthy of appreciation.

Key phrase #5: “How did it go?” A little bit of remembering shows a lot of love. If you know your mate has an important meeting, doctor appointment, etc., be sure to follow up with your partner. Call, email or text, “how did it go?” This sends a clear message: I care about you. The values we hold dear to us: respect, appreciation, compassion, loyalty and companionship are fostered or destroyed every day by our word choices and actions. If you use these 5 key phrases you’ll see an instant smile from your mate, a tender response or reciprocated appreciation. Q. What are the most common health related side effects you see in a troubled relationship? My clients in troubled relationships often have difficulty concentrating; they are more forgetful and just seem edgier with everyone. It’s as if they are always on their “last straw.” Research shows that women who give in a lot during fights with their spouse, meaning they reported “keeping their mouths shut,” had 4x the risk of dying from heart disease over a 10year follow up study. Also, couples in conflict-ridden marriages take longer than the happily married to heal from all kinds of wounds. Basically, if you give in or blow up, your health suffers. The only other option for living and loving well is to learn how to have a good fight in which you express yourself and reach a compromise solution together.

Q: How do you have a good fight? I recommend using the 5-minute anticonflict conversation. First, you sit down as soon as tensions start to boil (ask your spouse to sit down too), then play detective by asking neutral questions like “What happened?” and “You seem really angry. Can you tell me what’s going on?” Listen to and then summarize the answers. Next, you can share your own thoughts about what happened. The key insight here is to recognize that there are two sides to the story, and you can’t change that. While you might believe your mate was being hurtful when he did that thing, he could think he was being helpful. I beg you not to get stuck in the bad fight argument about who is right. Instead, just say, “we both see the situation differently, but that shouldn’t stop us from coming up with a solution.” Finally, brainstorm solutions together. Discard your solution and your mate’s solution. The only one that will work, and last, is one you create together. I call that the “third option.”

Allergies Do you have eye, ear, nose, throat, and lung symptoms? Sleepy? Coughing? Headaches? These may be symptoms of allergic disease! Adults with persistent sinus infection, chronic sinusitis and postnasal drip may also have allergies, which may benefit from immunotherapy (IT). Allergy shots change their biology, decrease symptoms, and reduce use of nasal steroids and antihistamine medications. IT blocks a seasonal rise in allergic antibodies and increases a special anti-inflammatory cell called the regulatory T cell. With the heat on, a concern indoors is dust mite antigen, mold, and cat. detected by patch testing on the back. Avoidance of implicated products containing these chemicals can avert symptoms. A drug class called ACE inhibitors used for high blood pressure, heart disease, and kidney disease may cause postnasal drip, coughing, and rarely, life-threatening throat closure. Recognizing this as the culprit and stopping the drug is important. Our research team is patenting a drug and currently partnering with a pharmaceutical team to use a designer drug to reverse the swelling by targeting the chemical cause of ACE inhibitor angioedema. These chocolate covered spoons make an excellent accompaniment for hot chocolate, coffee or tea. Wrap the spoons in cellophane packages with gold curling ribbon, pair them with coffee beans or cocoa in a festive container and you have a thoughtful gift.

These pretzels are super easy to whip up to give as a gift. Dip them a day ahead, and pack them in a box lined with waxed tissue paper. Don’t forget to add a note, or simply remind your friends that pretzels are best eaten within a week — if they’re even around that long!

Ingredients Q 6 ounces semisweet chocolate pieces Q 20 to 24 plastic spoons Q 6 ounces white baking bar

Ingredients Q 8 ounce(s) milk chocolate, broken into pieces Q 27 (8-inch long) pretzel rods Q Flaked coconut and/or green, red, and white sprinkles (for topping)

Directions 1. In a heavy saucepan heat semisweet chocolate pieces over low heat, stirring constantly until the chocolate begins to melt. Immediately remove from heat; stir until smooth. Dip half of the spoons into chocolate, tapping handle of each spoon against side of pan to remove excess chocolate. Place spoons on waxed paper; refrigerate for 30 minutes to allow chocolate to set up. 2. In a heavy saucepan heat white baking bar over low heat, stirring constantly until baking bar begins to melt. Immediately remove from heat; stir until smooth. Dip remaining spoons into the melted baking bar. Refrigerate for 30 minutes to set up. 3. Place the remaining melted white baking bar in a small, self-sealing heavy plastic bag. Using scissors, make a small opening at one bottom corner of the bag; drizzle one or both sides of the chocolate-coated spoons with the melted white baking bar. Drizzle remaining melted bittersweet chocolate on white baking bar-coated spoons. 4. Refrigerate spoons for 30 minutes to allow chocolate to set up. Wrap each spoon separately and store in cool, dry place for 2 to 3 weeks. Makes 20 to 24 chocolate-covered spoons. 32 | To advertise in Generations Magazine, please call 631.473.0388

Directions 1. Place chocolate in microwave-safe measuring cup or mug. Heat, covered with waxed paper, in microwave on High 1 to 2 minutes or until chocolate is almost melted, stirring occasionally until smooth. 2. Meanwhile, place each topping choice on separate sheet of waxed paper or on individual plates. 3. Holding 1 pretzel rod at a time, dip in melted chocolate, tipping cup to cover about half of rod with chocolate. Allow excess chocolate to drip off pretzel back into cup. Immediately sprinkle coated pretzel with choice of topping. Carefully place coated pretzel rod in pie plate or shallow bowl, leaning uncoated portion on edge. 4. Repeat with remaining pretzels (try to keep pretzels from touching one another in pie plate), and refrigerate about 20 minutes to set coating. Store pretzels in tightly sealed container, with waxed paper between layers, at room temperature up to 1 week.

Toasted Almond and Cherry Chocolate Bark

Jarred relishes are the gift that keeps on giving: your giftee can use this sweet topping on meat dishes, toast, or sandwiches Makes about 4 cups

Yields: 1 1/2 pounds

Ingredients Q 2 tbsp. grated fresh ginger Q 16 oz. cranberries (fresh or frozen) Q 1 cup fresh orange juice Q 2/3 cup sugar Q 1/2 cup apricot preserves Q 2 small Granny Smith apples— peeled, cored, and cut Q 1/2 pound chopped fresh pineapple (1 1/4 cups) Directions 1. Melt the butter in a saucepan over medium heat. Add the ginger and cook, stirring, for 2 minutes. Stir in the cranberries, orange juice, sugar, and preserves. Bring to a boil, reduce heat, and simmer, stirring occasionally, until the cranberries burst and the sauce thickens, 15 to 20 minutes. 2. Remove the sauce from the heat and stir in the apples and pineapple. Let cool to room temperature. 3. Transfer to a serving bowl, cover with plastic, and refrigerate until chilled, about 2 hours.

White Chocolate Oatmeal Cookie Mix in a Jar Put this mix in a pretty jar, tie with a ribbon, and give as a gift for Christmas or Hanukkah. For a more elaborate gift, add a cookie sheet, some pot holders, and a kitchen time in a pretty basket. And don’t forget the instructions! Ingredients: Q 1 tsp. baking powder Q 1/4 tsp. salt Q 1/2 cup crispy rice cereal

Preparation: Combine flour, baking powder and salt in small bowl and mix well. Pour into 1 quart jar. Layer cereal, chips, oats, brown sugar and sugar into jar on top of flour mixture, pressing firmly in place to fit into the jar.

Instructions: White Chocolate Oatmeal Cookies Ingredients Q 1/2 cup butter, softened Q 1 tsp. vanilla Q 1 egg1 egg yolk Q 1 container White Chocolate Oatmeal Cookie Mix in a Jar Directions 1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper or lightly grease with solid shortening. 2. Combine butter, vanilla, egg, and egg yolk in large bowl and beat well to blend. Add contents of jar and mix until thoroughly blended. Drop dough by tablespoonfuls onto prepared cookie sheets. Bake at 350 degrees for 9-11 minutes until edges of cookies are golden. Cool 1 minute, then remove from cookie sheets. Recipe yield: 24 cookies

Ingredients Q 3/4 cup (dried) tart cherries Q 3/4 cup (natural) almonds, toasted Q 12 ounces (semisweet) chocolate, chopped Q 8 ounces white chocolate, chopped Directions 1. In small bowl, combine almonds and cherries; set aside. 2. In a 2-quart saucepan, melt semisweet chocolate over low heat, stirring. In a 1-quart saucepan, melt white chocolate over low heat, stirring. Remove saucepans from heat. 3. Stir half of almond mixture into semi-sweet chocolate. Spread semisweet-chocolate mixture to about 1/4 inch thick on a large, ungreased cookie sheet. Drop white chocolate by tablespoons onto semisweet-chocolate mixture. With tip of knife, swirl chocolates together for a marbled look. Sprinkle with remaining almond mixture.

Sweet and Sassy Nuts Cumin, cinnamon, and ground chipotle pepper give these easy baked nuts their irresistibly addictive flavor. Yields: 8 cups Ingredients Q 1 large egg white Q 1/2 cup sugar Q 1 tsp. ground cumin

Q 3/4 tsp. ground chipotle chile pepper Q 1/2 tsp. ground cinnamon Q 3 cans(10-11 oz. each) salted fancy mixed nuts

Directions 1. Preheat oven to 350 degrees. Lightly grease two 15 1/2" by 10 1/2" jelly-roll pans with vegetable oil, or spray with nonstick cooking spray. 2. In large bowl, with wire whisk, beat egg white until foamy. Add sugar, cumin, chipotle pepper, and cinnamon, and beat until well combined. Add nuts to egg-white mixture; with rubber spatula, stir until well coated. 3. Spread nut mixture evenly in prepared jelly-roll pans. Bake on 2 oven racks 20 to 25 minutes or until coating on nuts is goldenbrown and dry, stirring once and rotating pans between upper and lower racks halfway through baking for even browning. 4. Cool nuts completely in pans on wire racks, at least 1 hour. With hands, break apart any large clusters of nuts when cool. Making Gingerbread T

he contemporary vision for gingerbread usually involves visions of Hansel & Gretel like Gingerbread Houses, Cookies shaped like people, and squares of aromatic spiced cakes served with a dollop of freshly whipped cream...YUM! Ginger however, like so many other popular herbs and spices, is rooted as much in therapeutic use as with confection.Ginger has long been used in teas for cold symptoms, as a circulatory stimulant, as a pain remedy (when mixed with liquor or rum), and as a digestive aid for stomach upsets and queasiness (ginger ale). It has recently been integrated as a motion sickness drug and is being strongly considered by arthritis sufferers as well. The use of Ginger can be traced to the Far East and China in the time of Confucius, and to the early Greeks and Romans and the Mediterranean Basin throughout the Middle Ages. It's use in cakes and doughs to make cookies and breads became extremely popular in Europe centering on the city of Nuremberg, Germany. Nuremberg happened to be fortuitously positioned on the crossroads of the major East/West spice trade routes and near forests which produced voluminous amounts of honey from its resident bees. From this honey, the traditionally famous “Iibkuchen” cakes were produced, which when combined with saffron were actually the precursor of Gingerbread. As ginger replaced saffron as the main flavoring component of these honey cakes, "gingerbread" was born. Both ginger and saffron were considered extremely valuable commodities at this time and actually were tightly regulated. They still share many recipes for breads and cakes. In the America's, the making and decorating of Gingerbread became a Christmas tradition which prevails to this day.

Following the long established European tradition, ornately decorated houses and gingerbread pieces now appear in a variety of settings. The internet offers an assortment of all things Gingerbread and there is even a Gingerbread University on Long Island which offers lessons in house decorating to individuals and groups throughout the year. And despite Its popularity in confections. Ginger stIll finds widespread medicinal use in a variety of forms, particularly during the winter season.. But certainly the most visual and popular use of this versatile root vegetable is as a key ingredient in recipes for Gingerbread Houses, such as the one that follows. Enjoy! HOW TO MAKE GREAT GINGERBREAD Remember, Gingerbread is a cake-like bread. All recipes require minor adjustments in ingredients and a bit of patience to make breads, it does not require ""proofing" but provides better results when chilled a bit. Here's a basic recipe for Gingerbread for cookies and houses. 7 1/2 cups AP flour 2 teaspoons baking soda 11/2 teaspoons cinnamon 2 teaspoons ground ginger 1/2 teaspoon ground clove 1/2 teaspoon salt 11/2 cups margarine or butter 1 cup brown sugar 1 cup molasses Cream butter and sugar. Add molasses. Blend dry ingredients separately in bowl. Add dry ingredients to butter/sugar/molasses mixture until dough is not sticky but firm to the touch. If too wet, you may add flour. If too dry, you may add water. Wrap the dough in plastic wrap and refrigerate for a couple of hours. (Overnight is fine and dough will keep wrapped for weeks) If desired you may weigh out your dough to match your pan. A normal size cookie sheet wilt require approximately 11/2 to 2 lbs. of dough. A 1/2 size commercial pan 2 pounds. A full size commercial pan 4 to 41/2lbs. You should roll your dough on the sheet pan on top of a piece of parchment paper. Use cutters to create shapes and remove excess dough or you may bake the sheet in it's entirety if you are making a house and cut roof and sides within 5 minutes of removal from oven. Bake at 35O-360 degrees for 12 to 15 minutes . FOR ROYAL ICING COMBINE: 1lb of powdered (confectioners) sugar 3 oz. of pasteurized egg whites without yellow food dye (papeete brand works fine) 1/8 teaspoon cream of tartar You may use a drop of food coloring to color icing.
