STIFADO Stifado is a meaty stew with beef and onions Ingredients: 1Kg lean beef - cubed. 500g onions - peeled. 1 large juicy tomatoes - chopped. 2 table-spoons of tomato paste. 1 cinnamon stick and 3 cloves. Bay leaf 1 small wineglass of extra-virgin olive oil. 1 glass of red or white wine. 1/3 glass of vinegar. Fresh coarsely ground black pepper and salt. Preparation: Peel the onions and lightly fry in olive oil. Remove from pan then lightly fry the pieces of beef until slightly brown. Cook on a low heat (150 ° C)for 2-3 hours until the meat is very tender. Return the onions to the pan with all the other ingredients and enough water to cover the meat. When ready, the liquid should be almost completely absorbed. Add more water during the cooking time if necessary. Taste after 2 hours and adjust seasoning to taste
