» My mom, Patsy, who was born in Chile and had to change schools midyear on multiple occasions because of her globe-trotting father’s military career. Who switched colleges as many times as I did (three), and who followed her father’s footsteps and joined the Air Force because “she didn’t really know what else to do.” Who spent 30 years in the blue and continued to be a working mom even after having two young boys. Who undoubtedly hated going to work before her boys woke up and often came home after they’d gone to bed. Who taught this young smartass manners and whose stern disposition easily gives way to her immensely kind and sensitive soul. Who is one of the greatest feminists I know but would shriek at the idea of my calling her that.

I bring up my mom for two reasons, both of which are the focus of this issue: education and women.

It took me a bit too long, but my mom is someone I truly admire. Even before I realized it, she inspired and rubbed off on me (sometimes for better or worse, she’d admit). My looks are more like my dad (who had trials of his own being a stay-athome dad — perhaps more on that during another editor’s note), but I am also my

mother’s son, and that side of me never hesitates to come out (again, for better or worse, she’d admit). My mom, while she’d never voice this over a bullhorn, broke barriers. She didn’t just survive in a vocation that was dominated by men, but she flourished. Her work ethic and take-nobull attitude left many of her male cohorts in the dust (for more stories of inspiring women, read our feature on page 42).

On the education side, both of my parents were very involved in my brother’s and my schooling. My mom would huddle up to our breakfast nook and spend hours helping my brother with his chemistry homework and helping me with anything dealing with numbers. It is because of my parents that my procrastinating and undiagnosed-attention-deficient self even got a degree. My brother and I were fortunate; we had parents who had the time, the resources, and the patience to

help. But many don’t, especially in areas on the peripheral, where single parents and multiple jobs are more prevalent. This is when we count on our public education system to work, to ensure that every child is receiving the best education possible.

The question boldly shaded in pencil on our cover is not an easy one to answer; it’s an extremely complex situation. But there is a silver lining: Our schools are improving. I hope you take the time to read our cover story by Scott Nishimura and Matt Payne (page 32). While you might not walk away with an answer, you’ll at least get a little educated.

continued from page 13 » Once free, entry into the garden will be $12 for adults, $10 for those over 65, and $6 for kids ages 6 to 15, starting July 19.

Why the sudden cost? Fort Worth City Council approved the plan back in November to help fill some budget holes, and they say the revenue from the fees will help new features move forward.

Bob Byers, the garden’s director, says the move will help the garden cater to popular requests, including more colorful plant life dispersed throughout the facility. He also says plenty of improvements not immediately noticeable to the public eye will be made.

“One key thing is repairing things,” Byers says. “There’s lots of equipment that’s past service life of supporting the garden. That’s not always evident to the public.” In terms of botanic gardens in the country, Fort Worth’s is among the top 15 percent for oldest gardens. Traditionally, there’s been a lack of investment by the public to keep up with the rapid pace other nationwide botanic gardens are experiencing.

In what Byers says is a strategic approach for the future of the garden, his team has mapped out ways to maximize income for growth. The botanic garden is investigating nonprofit management to raise private funds.

“We also want to do a better job with getting plans for the future together,” Byers says.

Annual membership levels were also given the OK by council members: Family (two adults and children under 18 years old living in the household), $100 Lone Star Family (same as above), $30 Individual (one person), $50 Dual (two adults), $80 Contributing (family plus one additional adult per visit), $200 Supporting (family plus two additional adults per visit), $500 Sponsor (family plus two adults per visit and two event tickets), $1,000

Lone Star Card discounts (SNAP/ WIC Card). Discounted annual family membership would cost $30 or $2.50 per month. That includes reciprocal admission to other gardens.

The Museums4All program allows for $1 per adult member; children under 18 get in free.

MusePass. Free family passes available in Fort Worth Public Library branches, including the option to check them out electronically.

Sponsored third-grade field trips for FWISD schools. One free family pass would be included per student.

Families of active military members get in free from Memorial Day through Labor Day.

Communitybased free family passes. Free family admission vouchers would be distributed to locations that specialize in meeting the needs of underserved populations.

Sound Off on Transit Projects in Fort Worth

How North Texans live and travel in a 12-county traffic web depends largely in part on what you think.

During July and August, the North Central Texas Council of Governments (NCTCOG) want your say on regional transportation projects and programs.

Since the council receives funds from the feds, it’s required to keep up a plan for several fiscal years moving forward — the public voice is a big part of that.

The Texas Department of Transportation, working through the Texas Transportation Commission, develops a 10-year listing of major transportation projects in Texas.

Status reports on a number of transit projects in the Dallas-Fort Worth region are in the works. The projects include a new program aimed at preventing the impacts of storm water in regional flood-prone areas.

Fort Worthians are encouraged to give word on projects through Aug. 28. Check it out at nctcog.org.

Fort Worth’s New Library to-be Is Named after This Native

There’s a new spot for summer reading in the works, one that’s been given a namesake with plenty of local legacy.

Fort Worth’s first family-focused library will be named after Reby Cary. Cary, a local education activist and World War II vet, was born Sept. 9, 1920, in Cowtown, and helped shape the city for years beyond his own life. Out of 501 votes online and 123 unique name suggestions, the honor was ultimately given to the late Cary.

The new library, compliments of the city’s 2014 bond election, will be an 8,000-square-foot building set at 3851 E. Lancaster Ave. The city touts the future book bastion “an environment of learning, dreaming, and doing”

for area kids. And Fort Worth City Council members hope the library inspires the same brand of activism Cary embodied.

Cary was instrumental in founding Donald College of Industrial Arts for African-Americans in the Riverside neighborhood, says City Manager David Cooke. He also served as a teacher and counselor at Dunbar Middle School, and in 1967, he went to teach history at the new Tarrant County Junior College.

Style Bros

A local suit maker, a menswear artist, and the beginning of a beautiful friendship.

Franklin Moss and Matthew Miller bond over a lot of things. Espresso. Art. Good food. And style — Moss is the co-owner of custom suit maker Franklin & Anthony, while Miller is a menswear artist better known by his professional name, Sunflowerman.

The two met via Instagram about a year ago when Miller was new to Fort Worth and on the lookout for like-minded locals with whom he could connect. An Instagram DM and several coffee dates later, Moss and Miller have turned their bromance into a business collaboration, creating a jacket series made with a lining featuring Miller’s illustrations. Clients can either choose from a selection of finished sketches or work with Miller to create a custom design.

”When good people come together, it’s natural,” Moss says. “It just makes sense ... we both believe in art and fashion.”

So far, they’ve enjoyed their first few months of doing business together — although “jury’s still out,” Miller says with a laugh. “I think we get along as people. We just started working together, so we could be bitter enemies later.”

Cut Throat Finches

On the verge of releasing their third full-length album in as many years, the ever-prolific Cut Throat Finches’ front man, Sean Russell, chats about moon landings and his favorite town.

Don’t mistake Sean Russell for just a Fort Worth musician. Sure, he regularly sports a fedora, can rock a mean six string, and can belt out an Americana tune as well as Jeff Tweedy, but he’s really a Fort Worth musicians’ advocate. A couple of Old-Fashioneds in — he claims the place where we met, Bird Café, serves the best — and he’s baring this obvious passion. “When people try to book us as a DallasFort Worth band, I’m like, ‘No, we’re not a Dallas-Fort Worth band,’” Russell says. “I play in Dallas three times a year. I play in Oklahoma City more than I play in Dallas.”

He listens to and regularly goes to the shows of Quaker City Night Hawks and Polydogs; if you name a Fort Worth band, Russell is likely a fan. But Russell and the band he fronts, Cut Throat Finches, more than hold their own in the Fort Worth music scene. And, with their third full-length release, the concept album In Event of Moon Disaster, the band remains as unpredictable as ever.

FW: This album’s a bit of a departure from your previous efforts because it’s a concept album. What made you decide to tackle one particular theme?

Russell: I remember seeing documentaries on different bands, and at different phases when they made their most interesting stuff was typically these concept albums. I honestly never thought my brain would be able to stay focused

in one area long enough. And that I was honestly interested in any one thing enough to write that much. But confining that mental space to one project and one idea was actually really freeing in a lot of ways. For instance, with our last record, we were looking for continuity in the sound and the way it’s recorded. Well, with this, the continuity is in the theme.

FW: What is the theme?

Russell: “In Event of Moon Disaster” is a speech that was written for Nixon for the Apollo 11 mission specifically. The odds were probably more heavily stacked against success than people realized. So, they brought in a speech writer for this one speech for Nixon. He then titled the speech “In Event of Moon Disaster.”

What’s amazing about the speech was just how much [all involved in the first moon landing] overcame, and it made me kind of look at the accomplishment of that time in our history. I mean, say you have four great musicians and writers, they can barely work together to get an album out. But these guys, you know, hundreds of them, had to work together to mathematically, manually calculate every arc, every turn, every thrust.

FW: So how did you take that one idea and expand into an entire album?

Russell: When we were writing this, at first it was going to be just a song; then it was like we had a couple ideas for songs; then it was like, well, let’s do an EP. And then it was let’s write, not necessarily in perfect sequence, but let’s kind of like stage this out and write songs like on a timeline. So, the album goes from the day before launch through a potential disaster.

FW: How does it differ musically?

Russell: I would definitely say we swerved a lot more on styles on this one. On the second side, the first two songs that come on to me sound very Radiohead, the timing changes, and tunings are strange. It’s very Radiohead to use kind of like British sounding thing. And then the stuff that’s on the side A which is all the earth side, if you will.

FW: So, do you have like earth side and space side?

Russell: That’s not what we called it; I just thought of that, and that would’ve been brilliant. But instead, it’s just side A and side B. On side A, the songs are definitely rooted more in American rock. Whereas side B definitely has more of a British vibe. Everything’s more open and spacey, like a Radiohead or Muse kind of sound.

FW: You have a particular love for Fort Worth and its music scene. Wanna dive into that a bit?

Russell: It’s just Fort Worth has its own identity, and I want to be identified with what’s going on here. Our restaurants out here, our chefs out here, I’ll take them all day. I’ll take our taco at Taco Heads a million times over any taco I’ve ever had in Dallas.

I mean, like, I’m a fierce advocate of Fort Worth. Now it’s again my perspective as a consumer, but Fort Worth is its own thing, and we have to fight to protect it. I want to fight to protect it.

SELECTION PROCESS

“If you had a patient in need of a dentist, which dentist would you refer them to?”

This is the question we’ve asked thousands of dentists to help us determine who the topDentists should be. Dentists and specialists are asked to take into consideration years of experience, continuing education, manner with patients, use of new techniques and technologies, and, of course, physical results. The nomination pool of dentists consists of dentists listed online by the ADA as well as all dentists listed online with their local/regional dental societies, thus allowing virtually every dentist the opportunity to participate. Dentists are also given the opportunity to nominate other dentists that they feel should be included in our list.

Voters are asked to individually evaluate the practitioners on their ballot whose work they are familiar with. Once the balloting is completed, the scores are compiled and then averaged. The numerical average required for inclusion varies depending on the average for all the nominees within the specialty and the geographic area. Borderline cases are given careful consideration by the editors. Voting characteristics and comments are taken into consideration while making decisions. Past awards a dentist has received and status in various dental academies can play a factor in our decisions.

Once the decisions have been finalized, the included dentists are checked against state dental boards for disciplinary actions to make sure they have an active license and are in good standing with the board. Then letters of congratulations are sent to all the listed dentists.

Of course there are many fine dentists who are not included in this representative list. It is intended as a sampling of the great body of talent in the field of dentistry in Texas.

A dentist’s inclusion on our list is based on the subjective judgments of his or her fellow dentists. While it is true that the lists may at times disproportionately reward visibility or popularity, we remain confident that our polling methodology largely corrects for any biases and that these lists continue to represent the most reliable, accurate, and useful list of dentists available anywhere.

2019 Dream Home: Walsh

The magazine’s 2019 Dream Home is nestled on a hilltop overlooking the sprawling West Fort Worth Walsh development. There’s a lot going on inside Walsh.

When the magazine’s 2019 Dream Home opens this fall, being built by Sean Knight Custom Homes, it’ll be the first custom home in the 7,200-acre development on the former Walsh Ranch in far west Fort Worth. Homes in the production section of Walsh have been well underway, with the community welcoming more than 600 new households since 2017, drawn by the development’s array of design plans and amenities like an Aledo ISD elementary school, swimming pools, gym, parks, trails, maker space, high-speed internet, community center and community-building activities, market, and filling station. At completion, Walsh plans to have more than 15,000 homes and about 50,000 residents.

Mike Heid, of MK Homes, a Willow Park luxury builder who’s building homes in Walsh’s production section, is one of the builders Walsh has chosen who can build in the higher custom section. Heid is tackling the Walsh home sites that have unusual topography. For one, he’s just completed a tri-level, 4,600-square-foot home with basement, built into the side of a hill with the first floor opening into the backyard, that he’s listed for $849,000. MK has another, 4,200-square-foot spec home in the production section it’s listed for $750,000. For Heid, such homes aren’t unusual — he grew up in Ohio before moving to Texas to build homes, and Ohio homes have basements.

FW: How’d you get your start?

Heid: All my life, since I was a teenager, I’ve been building houses, framing, remodeling, building. I started MK Homes in 1995 in Ohio. I was coming down here visiting family, and I just saw there was so much more building here than in Ohio. We just moved down here and bought a couple of lots (in 2005), and we just hit the ground running.

FW: So, you started up right before a recession?

Heid: We were building out at Possum Kingdom, Azle, Aledo, Weatherford. We were doing a lot of one- and two-acre lots and ranches. We were out at Possum Kingdom Lake. That’s how I got into some of the basement stuff. That was kind of how we got our foot into Walsh. I kind of cruised right through the recession. The kind of house we were building — we were building on the lake — the recession didn’t really affect us.

FW: Why’d you move to smaller lots?

Heid: Operations director Christian Pearson came on board two years ago; he suggested smaller lots, so we tried it, and it started taking off. It was kind of easier.

FW: How many houses do you build a year?

Heid: Last year, we did 35 to 40.

Reinventing the Pie

Once a pop-up at Stir Crazy Baked Goods, Black Cat Pizza has transformed into one of the city’s most hopping joints, thanks to its indescribably good pies.

Local chef Jaime Fernandez decided to open his own pizza joint at the urging of two of his most finicky customers; one is 4 years old, the other, 2. Cooking for his two daughters — or rather, trying to cook for his two daughters — ultimately led Fernandez to open Black Cat Pizza, most definitely one of the hottest new restaurants in the city.

“If you have kids, you know how difficult it can be to find things for them to eat,” says the 31-year-old restaurateur. “But they absolutely love pizza. They love eating it; they love helping me make it. Because it’s one of the only things they’ll

eat, eventually I got better and better at making it.”

Nestled into a sleek spot in the burgeoning South Main district, next door to the also-new Funky Picnic Brewery & Cafe, Black Cat offers a small menu that perfectly balances norms with extremes. Cooked in a wood-burning pizza oven, pies come topped with traditional ingredients, such as mushrooms and pepperoni, as well as off-the-grid toppings. Named after the Teenage Mutant Ninja Turtles, for instance, the restaurant’s hottest seller is the TMNT, a field of greens pie topped with snow peas, Brussels sprouts, baby kale, dandelion greens, and arugula.

Other specialty pies feature sweet potatoes, pickled celery, and Thai chile honey.

“It’s really simple how I come up with these unusual pizzas,” Fernandez says. “I think about my favorite foods and how they would taste if I put them all together. It’s as simple as that.”

In the same way that the quality of a taco lies within the tortilla, the most important component to a pizza is the crust, and this is where Black Cat truly excels. Fernandez’s crust is soft and chewy until you reach the rim, where you’ll be greeted with the snap, crackle, and crunch of skillfully blackened edges; there’s not quite anything else like it in Fort Worth.

“[Our pizza is] not as crispy and structurally sound as New York, or as thick as Chicago, or as floppy as a Neapolitan. It’s not one of them. It’s a little bit of all of them.”

“People ask me, ‘What kind of pizza is this? Is it Chicago, Neapolitan, or New York-style?’” Fernandez says. “It’s not as crispy and structurally sound as New York, or as thick as Chicago, or as floppy as a Neapolitan. It’s not one of them. It’s a little bit of all of them.”

Although the success of Black Cat has been swift (the restaurant opened this summer, and it’s consistently wall-to-wall busy), Fernandez isn’t exactly an overnight sensation. He spent last year establishing himself as a wizard of a pizza-maker through a series of pop-ups at Stir Crazy Baked Goods, where he sold slices to the nightcrawler crowd, experimenting with various topping combos.

“That was the real test,” he says. “That was when I decided to take this beyond friends and family, who’ll say they like your food even if it’s not that good. When the

pop-ups exploded, that’s when I knew I was doing something right.”

Those who travel in foodie circles may recall that, before Black Cat, Fernandez was a cook at Ellerbe Fine Foods, as well as the executive chef at 44Bootlegger, a nowdefunct wine bar on Magnolia Avenue.

A native of Central Mexico, he grew up in San Antonio and graduated from Austin’s Le Cordon Bleu cooking school. During a trip back home to Mexico, a friend offered him a gig of a lifetime: cooking at a two-star Michelin restaurant in Spain. That’s where he learned the ins and outs of a kitchen. “I learned more there in six months than I did in the two years I was in cooking school,” he says.

Upon returning from Spain, he settled back into Texas and eventually migrated to Fort Worth. It was during a stay-athome-dad stint that he and his daughters started making pies together.

A few months later, on the opening day of his brick-and-mortar, hungry customers clamored for a seat. Some waited hours. Others were turned away; the restaurant had run out of food.

“That first day was unbelievable,” he says. “We didn’t expect 600 people in three hours. We expected, if we were lucky, 600 people the whole day. Of course, now we know how much food to make, and we have it down to an art. It’s surreal how much the city has embraced us, just completely surreal.”

Amped-Up Taco Shop

With the latest addition to Fort Worth’s taco scene, a local chef and restaurateur partner to bring a taste of ATX to Cowtown.

Some might gawk at the name — why do we need Austin tacos when Fort Worth’s culinary scene can more than hold its own? But, much like pizza (think Brooklyn-, Chicago-, New Haven-style pies), cities are developing distinct styles of this Texas staple.

Cam Powell, a former student at the University of Texas at Austin who fell in love with the capital city’s laid-back dining experience and eclectic vibe, tapped local chef de celebre Juan Rodriguez as the shop’s culinary director and opened this unmistakably Austin-flavored restaurant this spring on University Drive. Austin City Taco Co. is conveniently located a

mere 100 yards from the new Deep Ellum Funkytown Fermatorium.

The diner is a vivid recreation of an Austin dining experience — it’s cozy, modern, and sun-soaked with outdoor seating to boot. One can easily imagine the shop existing amidst the hustle, bustle, and hipness of South Congress.

Like most stops to get your taco fill, starting with a round of chips and queso is a must. I recommend you dip into the “Cheat Day! Queso” ($4.85), which you can order with either crispy fries or fresh tortilla chips. You can also add a dollop of bacon jam to the queso if you want to take your cheatday meal to a whole new level. The rich

queso is a blend of white and yellow American cheese and (gulp) heavy cream. It’s an indulgent and super-creamy treat with a little heat and plenty of black pepper.

I began my taco tour from the all-day breakfast corner of the menu. The Midnight Craving ($3.95), a taco overflowing with scrambled egg, chopped brisket, and diced potatoes, is crave-worthy unconventional fare. The taco comes garnished with a liberal dusting of queso fresco crumbles, the aforementioned bacon jam, and a drizzle of buttermilk ranch dressing. combination of flavors. The chopped brisket, which lay in a handmade bi-color, white-and-blue corn tortilla, was lean, and the housemade guacamole plentiful. It was topped with queso fresco, shredded cabbage for crunch, and a Serrano crema with just a hint of spice. The Al Carbon ($4.15), which continues the theme of jam-packed tacos, is filled with shredded rotisserie chicken, more guacamole, cabbage, cheese, Serrano crema, and pickled carrots. While the Salt n’ Vinegar ($4.95) gets points for creativity, it didn’t

What We Didn’t: The Salt n’ Vinegar shrimp taco was on the dry side.

stand up to the other tacos. The taco’s filled with fried shrimp and salt and vinegar potato chips and topped with queso fresco and Serrano crema. The imperative to keep the chips from getting soggy meant this taco was a little dry. Chef Rodriguez amped up the menu and filled the tacos to the brim. At other taco shops, you might order three tacos and still leave hungry — not at Austin City Taco; if you’re looking for lighter fare, I’d suggest going elsewhere. The prices might seem steep, but what you give in

money, you get in return in food — their ability to fill a flour tortilla nearly defies the laws of culinary physics.

Don’t let the bottles of specially crafted and brightly colored sauces go unnoticed, as they can add a tangy, spicy, or even a sweet element to any taco. I was an especially big fan of the jalapeño-vinegar. For dessert, the Perfect Soft Serve ($2.50) will satisfy any sweet tooth. Flavored with honey oat cereal and topped with Fruity Pebbles, the small swirls make a fun finale. Bottom line: Austin City Taco has an impressive menu that easily spans all three meals.

The Midnight Craving

In what will probably be the best barbecue news you’ll hear all year, BBQ on the Brazos is moving to Fort Worth. Listed in Texas Monthly’s coveted Top 50 Barbecue Joints in Texas bible, John Sanford’s popular ’cue joint in Cresson has found a new home on the Benbrook traffic circle in the space most recently occupied by the Royal Falcon Pub. Sanford says he’s hoping to open in August for lunch, then breakfast and dinner later this year. Not long after opening in 2013 in a Texaco in Cresson, BBQ on the Brazos quickly made a name for itself for craft-inspired barbecue. Last year, nearly to the day, Sanford and co-owner Kathryn Warren abruptly closed after a dispute with new landlords. Roosters BBQ from Granbury took over the space while Sanford, Warren, and Sanford’s son, John Jr., sold barbecue out of their food truck nearby. Sanford says he had always planned to come back to Fort Worth, where he worked in the restaurant biz for most of his life. Now that he’s found permanent digs here, he’ll completely pull out of Cresson. John Jr.

Acadia Parish Crawfish, a local food truck specializing in Cajun fare, has graduated to a brick-andmortar on Fort Worth’s east side. Owner and Louisiana native Daniel Demaline has moved into the same building as long-running Smokey’s Barbecue; the two are under one roof but have different menus. Demaline is serving most of the dishes from his truck, including meat pies, chicken and sausage jambalaya, and beignets, along with new items such as fried catfish and deviled egg potato salad. Options are few for Filipino food in Fort Worth, but Arlington has several noteworthy choices, including a new spot called Salu Salo Filipino Cuisine.

Tucked into a strip mall, it’s a small, family-owned restaurant, light on atmosphere and pizzazz but heavy on flavorful food. We loved the sinampalukang manok, a chicken soup made with

tamarind leaves; tocino, a pork dish similar to barbecue pork belly; and adobong pusit or boiled octopus. Hours are a little unusual: The restaurant opens early for breakfast at 8 a.m. and closes by 8 p.m. 7401 Matlock Road, Arlington.

I’ve always been a fan of Buffalo Bros, and I have a feeling many others will soon join me. For the past decade, local chef Jon Bonnell’s lively sports bar, located across the street from TCU, has served excellent wings, plus very good pizzas and “beef on weck,” a roast beef sandwich topped with kosher salt

and doused in superspicy horseradish. But because parking’s a pain and frat kids are, too, the place never found its footing with the food-forward crowd. A new second location downtown — where In The Sack and before that, Oliver’s Fine Foods, once stood — should help change that. With nearly 100 TVs and more than 50 beers on tap, the new Buffalo Bros is, without question, a sports bar in the same vein as the original. Couple new spots in the West Seventh area. Punch Bowl Social, a chain out of Denver, has opened in the old Times Ten Cellar space, touting souped-up bar bites like chorizo fries, along with arcade games, dart boards, and a 900-square-foot patio. 1100 Foch St., punchbowlsocial.com. Also new is Toasted Coffee + Kitchen, a spinoff of the Dallas original that opened in 2016. The menu spotlights toasts of both

Knife Burger, we hardly knew ya. John Tesar’s fantastic burger spot at the Food Hall at Crockett Row closed in July but was quickly replaced by another strong North Texas burger joint: Hooker’s Grill, winner of this year’s Readers’ Choice Award for best burger. This is the second location of the Hooker family’s popular burger spot; the original opened in the Stockyards two years ago. The Food Hall location will feature nearly the same menu, including hand-cut fries and, the restaurant’s signature item, burger patties stuffed with onions and jalapeños. 3000 Crockett St., crockettrow.com
