At Frey Vineyards, we combine the best of modern and traditional winemaking methods to showcase distinctive varietal flavors. Through minimal manipulation in the cellar, we allow the wines to express the authentic character of our soils and climate. For over four decades, we have been vanguards in crafting wine without added sulfites, a synthetic preservative added to most other wines (even wines made with organically grown grapes!) that can cause adverse allergic reactions in some people.

This year, we’re celebrating 45 years of organic winemaking! Our Organic and Biodynamic farming methods encourage care for the soil, groundwater, and wildlife, promoting rich biodiversity in the vineyard. As stewards of the land, we emphasize producing Organic and Biodynamic wine of the highest quality while caring for planet and palate alike.

Our winemaker, Paul Frey, is recognized as an international expert in organic winemaking.

We cultivate 300 acres of Organic and Biodynamic grapes. One third of the total organic wine grape acreage in California is in Mendocino County.

The Organic Way

We never use yeast nutrients or genetically engineered yeast. Grapes grown in healthy, vital soils contain all the nutrition yeast will need to complete a clean and healthy fermentation. High-quality, organic fruit also provides an abundant supply of naturally occurring phytochemicals (plant compounds) that provide rich and complex flavor components. Plant chemicals also act as preservatives and are beneficial to human health. New research, particularly a study from UC Davis, California, shows that organic fruits and berries have up to 58% higher antioxidant levels than non-organic.

WHAT’S SO GOOD ABOUT USDA CERTIFIED ORGANIC WINE?

• No sulfites are added at any point.

• No synthetic additives, nutrients, or concentrates are allowed.

• Yeast used to ferment the wine is 100% organic.

• Sulfites can be added up to 100 ppm.

• Dozens of different synthetic additives are allowable, including yeast nutrients, grape concentrate, and flavor and color enhancers.

• Yeast does not need to be organic.

The abundant element sulfur takes on many forms and is present in all living things. Naturally occurring sulfites can be present in wine and other foods. Synthetic sulfites in the form of sulfur salts or sulfur dioxide solutions are used in conventional winemaking to protect against oxidation and bacterial spoilage. Unfortunately, winemakers can be excessive in their use of synthetic sulfites, which has the effect of masking delicate flavors, assaulting the nose, and possibly causing headaches and allergic reactions to those especially sensitive.

The Straight Story On Sulfites

With modern winemaking equipment and sanitation, we continue to produce sound wines without added sulfites. Organic Wine is wine without added sulfites. Under the USDA National Organic Program, sulfites are a synthetic food additive. They are not allowed in organic wine or any other certified organic food products, such as dried fruits, jams, salad dressings, or juices. In over 40 years of organic winemaking, we have never added sulfites or other synthetic additives to our wines.

MYTH: ORGANIC WINE CONTAINS ADDED SULFITES.

FACT: Under the USDA National Organic Program, wines labeled as Organic Wine can have no added sulfites.

MYTH: SULFITES ADDED TO WINE ARE A NATURAL COMPOUND.

FACT: Added sulfites are a synthetically produced, industrial compound.

MYTH: SULFITED WINES KEEP BETTER THAN NONSULFITED WINES.

FACT: Organic red and white non-sulfited wines can last as long as sulfited wines if properly made. We recommend storing them at the same temperature as all wines are stored, room temperature or below. Due to our winemaking style, we recommend that our red wines be consumed within 7 years of vintage, and our white wines within 3 years.

Allowable Sulfite Content

ORGANIC WINE: Under 10 ppm naturally occurring sulfites. (At Frey Vineyards, our wines are usually at zero ppm, sometimes up to 4 or 5 ppm.)

BIODYNAMIC WINE: Up to 100 ppm added sulfites. (At Frey Vineyards, we do not add sulfites to our Biodynamic wines.)

“MADE WITH ORGANIC GRAPES” WINE: Up to 100 ppm added sulfites. These wines cannot be labled as Organic Wine.

CONVENTIONAL WINE: Up to 350 ppm added sulfites.

Our wines usually range from 0 ppm to 5 ppm naturally occurring sulfites, though most measure 0 ppm. These levels are minimal when compared with an egg, which was shown to contain 6 ppm in independent laboratory testing.

Gluten in wine?

Yes, it can

happen.

The main ways wine can come into contact with gluten is through the use of micronized wheat as a fining agent and the use of wheat paste to seal oak barrels.

At Frey Vineyards, we fine our wines with natural volcanic bentonite clay and filter with cellulose pads and cartridge filters. We ferment all of our wines in stainless steel tanks, eliminating the potential for cross-contamination.

IT ALL STARTS WITH HEALTHY SOIL...

...because only healthy soil can grow the highest quality grapes that produce the finest organic wines. Organic farming is a healthy alternative to conventional blanket chemical applications and large-scale mono-cropping practices.

By creating a biodiverse farm landscape that encourages natural predators, we eliminate the need for synthetic pesticides and insecticides. Cover crops are planted in the fall and tilled under in the spring using a fertilization technique known as “green manuring.” These cover crops include a variety of grasses, legumes, and mustards that protect

the soil from erosion, fix nitrogen into the soils, and offer a habitat for many beneficial insects.

Another essential organic practice involves the use of compost in the vineyard. At Frey Vineyards, we recycle all of our grape pumice back into the vineyard after it is composted with other organic ingredients, including manure, old hay, and garden waste. By returning this valuable resource back to the vineyard, we close our fertility loop and achieve sustainable soil management.

The Art of Gentle Winemaking

Zero-oxygen bottling line - The laws of nature determine that when the phenolic compounds in grapes come into contact with oxygen, they will change. Because of this, we protect our wine with the lowest oxygen exposure possible, technically 50 parts per billion. As the wine travels to the bottles during the bottling process, it’s kept in a sealed environment. Our bottling line is equipped with a long-tube filler that fills wine from the bottom up, reducing the chance of exposure to oxygen. Our corker then pulls a vacuum to evacuate the headspace and ensure a sterile closure.

Sterile filtration - Stylistically, we prefer fermenting down to dryness, leaving no residual yeast and none or very little sugar. We send our wine through .45 micron sterile filtration, a measurement small enough that flavor, color, and aromatic compounds fit through it, but not the potential spoilage elements of yeast, bacteria, and microbes.

Bowpeller Pump - Using technology invented originally by Nikola Tesla, this bladeless centripetal flow turbine pump handles wine gently and gradually. Grape skins and seeds remain intact, and the chambered interior protects the wine with minimal manipulation.

BIODYNAMIC AS A WAY OF LIFE

In 1996, Frey Vineyards became the first Biodynamic ® no-sulfitesadded winery in the U.S.. Our Biodynamic wines are crafted in harmony with the rhythms of nature and fermented on native yeasts without chemical pesticides or preservatives. As four generations of organic farmers and winemakers, we find that our care and respect for the earth are reflected in our wines’ expression of purity and true terroir.

The mission of Demeter, USA, the Biodynamic certifier in the U.S., is to heal the earth through agriculture. Biodynamic farmers are called practitioners because the practice of nurturing the soil and farm organism goes hand in hand with the production of crops. Rudolph Steiner, the father of Biodynamic Agriculture, incorporated composting and nutrient cycling principles from around the world with his personal observations of living systems to develop the foundation for Biodynamic practices.

The Hive

At Frey Vineyards, we practice holistic beekeeping. In response to the illnesses plaguing bees worldwide, we provide clean, wellventilated homes for the colonies and avoid using all chemicals. The clover and mustard cover crops in our Biodynamic vineyard and the native manzanita, willow, and coyote bush provide healthy nectar and pollen. Our bees also love to feast on grape juice at harvest time.

Wildlands

The Demeter Standard sets apart 10% of each farm property to support biodiversity of native flora and fauna. Our vineyards are surrounded by 1,000 acres of wildland that hold a mix of oak and conifer forests and are home to a wide variety of animals, including bear, mountain lions, birds and beneficial insects. Protecting our natural habitat encourages a healthy balance in our vineyard.

Native Yeast

Our Frey Biodynamic wine ingredients are simply grapes, ripe from the vine. To help grow out the yeast, we often create a “catch tank” in between the vineyard rows. These tanks provide a large surface area to bring in yeast from the grapes, air, and surrounding environment, resulting in exceptional site-specific and complex flavors.

Our Biodynamic program includes caring for our farm animals. Cows, goats, sheep, and chickens are an integral part of our holistic land management.

Life On The Farm

Our animals graze in between vineyard rows on Biodynamic cover crops. Instead of always leaving animals in the same place, we rotate them through different zones. This maximizes natural cycles of grazing while minimizing impact. We’re always looking at ways to create as synergistic an experience for the land and animals as possible. The goat herd will happily eat the wild greens and blackberry vines well into the fall when acorns become available. After the grapes are harvested, the goats will return to the vineyards where they enjoy grape “seconds.”

The Preparations

We make the nine preparations required on certified Biodynamic farms. These preparations are concentrated composts made from ingredients gathered onsite. Much like homeopathic remedies, we apply the preparations to our vines and soils in diluted amounts. Yarrow, chamomile, nettle, oak bark, dandelion, quartz, and cow horn work together to promote photosynthesis, stimulate root growth, and enliven soils.

TASTING ROOM IN 2025!

One of the joys of starting from scratch is getting to build the winery of our dreams, in alignment with our values and farming practices. We are working to reestablish native vegetation on a large berm at the new winery.

A central focus of Biodynamic farming is to maintain or restore at least 10% of a farm’s native vegetation. This provides habitat for wildlife and insect species that together create a healthy and resilient ecosystem.

The new winery garden features native plants such as oak trees, manzanita, and milkweed that provide forage and habitat for pollinators and birds. The berm will be part of a nature trail where visitors can enjoy the beauty of our vineyard nestled in the surrounding oak woodland, and learn about key plant communities and the wildlife that they support.

NOT A DROP OF WATER WASTED

In 2020, we installed a BioFiltro composting system, built inside two 40x80 foot beds, that catalyzes the digestive power of earthworms to naturally filter the water after the winemaking process. The system processes up to 10,000 gallons of grey water daily, the equivalent of 600 showers. That water then gets sent to irrigation ponds, where it is used as needed throughout the year.

How do these hard-working worms do the heavy lifting? The BioFiltro system starts with an open-top concrete basin that is layered up with strata of wood shavings, river cobble, and drainage basins. Water is pumped across the system with sprinklers, and gravity-feeds down through the layers. In the top layer, earthworms munch on larger solids, producing castings rich in microbes and bacteria. By working beneficially and symbiotically, the organisms form a biofilm (a layer of billions of microbial colonies) that captures, retains, and digests food in the processed water. From top to bottom, the process takes four hours.

Low-weight Ardaugh Evolution glass bottlesWe use low-weight 14 oz eco-bottles to lower our carbon footprint and comply with the Sustainable Wine Round Table recommendations for glass weight under 420 grams. Ours are 396.893 grams.

Kraft case boxes and recycled pulp linersTon for ton, compared to virgin cardboard, recycled cardboard saves 24 trees, uses 33% less energy, produces 49% less wastewater, and releases 37% fewer greenhouse gases in the process.

Orange Beard

Orange wine performs alchemical magic by fermenting white grapes on the skins, stems, and seeds of the grapes. Much like the process of fermenting red wine, skin-contact or orange wines possess the texture and tannins common to red wine, and the grape skins impart a deeper, naturally occurring orange/amber hue.

The initial label sketch evolved on a late night in a tiny candle-lit wine bar in Barcelona, surrounded by artists, adventurers, sailors, and revolutionaries, and pays tribute to the WWII-era doodle, “Kilroy was here.”

Fizzy Chard

We wanted to create a delightful and zippy cheerfulness for the palate –hence Fizzy Chard was born!

Fizzy Chard begins with our USDA-certified Organic Chardonnay, chosen especially from vineyards known for producing fruit with creamy texture and light, tropical-fruit acidity. After stainless-steel fermentation, we add fizz through a state-of-the-art carbonation process. We carefully control the bubbles to achieve just the right amount of delicate spritz, and the screw top means that once opened, it can stay fizzy in the fridge for several days.

Once in a blue moon, conditions are just right at harvest to plan for a Late Harvest Zinfandel. This means that grapes can hang on the vine long enough for their sugars to rise to optimal Brix and the dream of a heavenly dessert wine begins fermenting. But an early frost or a torrential rain can ruin even the bestlaid plans by compromising the tender fruit.

The 2022 harvest was one of those lucky years, and we were able to bring a delectable dessert wine to fruition! It’s been 15 years since we had a Late Harvest Zin vintage, and the timelapse makes this new release all the more special.

Case Study: Kwaya Cellars

Kwaya Cellars was born out of the longtime dream of our friend Nicky Coachman-Robinson, president of Organic Wine Cellars LLC and rep for Frey Organic Wines in the Southeast. We were thrilled to partner with Nicky and to cocreate a wine label that celebrates African culture, organic farming, and the promise of unity.

Kwaya is the Hausa word for “seed.” Hausa is one of the most common African languages and is spoken in Nigeria, Ghana, and much of North Africa. The symbol in the Kwaya logo is the Adinkra symbol for “seed.” The Assante people of Ghana use the Adinkra system to express the connection between the verbal and the visual.

Our best-selling wine is medium bodied, well balanced, and smooth, with a bright garnet hue. The finish is crisp and fruity. An excellent everyday red, carefully crafted with organic techniques. This wine pairs well with a wide variety of cuisine from picnic fare to holiday feasts.
