EDITORS PAGE Welcome to issue 45 of Freestyle Magazine, it looks like the cold weather has finally gone and hopefully we can look forward to some sun and warmth.

YORKSHIRE DAY 1ST AUGUST To get into the swing of celebrating Yorkshire Day we have a bit of a Yorkshire theme going on in this issue. The Tour de Yorkshire has been and gone. (At one point I did think they may have had to swap their Racing bikes for Mountain bikes as the snow started to fall!) Our Quiz is related to all things Yorkshire and we have some interesting facts on some of the foods that hail from Yorkshire.

Famous Yorkshire

Food Brands

Some of the nation’s biggest food brands hail from Yorkshire and yet the history of some of our favourite foods is relatively unknown outside of the County. Here’s our pick and mix of some local entrepreneurs and food inventors.

Henderson’s Relish

Created by Henry Henderson in Sheffield over 130 years ago, Henderson’s Relish hit the headlines in 2014 when a London MP mistakenly labelled it as a brand imitation of Lea & Perrins Worcestershire Sauce. Although it can count Sean Bean and The Arctic Monkeys among it’s celebrity fans, most people outside of Yorkshire (or even Sheffield) have probably never heard of ‘Hendos’, but it remains a local iconic brand.

Seabrook Crisps

When you think of Pickled Onion Crisps, most people would automatically think of Monster Munch, but when you mention Crinkle Cut Crisps in the North, the name Seabrook is the most likely association Northerner’s will make. Founded in Allerton near Bradford by fish and chip shop owner, Charles Brook (C. Brook), in 1945; the company was famously named Seabrook due to a clerical error, that changed the original name of C. Brook to Seabrook!

Party Rings

The height of fashion in the 80’s and a staple at every kid’s birthday party across the country. Party Rings were introduced by Batley based Fox’s Biscuits in 1983.The Fox family founded the company in 1853 originally working from a Terrace House in Whitaker Street in Batley. Fox’s Biscuits are also creators of some of the nations favourites such as Rocky Bars, Sports Biscuits and Crunch Creams.

Tetley Tea

The Tetley brothers from Bradford started selling tea in Yorkshire in the 1800’s before moving their business closer to the tea auction rooms in London, which at the time was the tea trading capital of the world. The company has gone on to become the worlds second largest manufacturer of tea and can boast of many ground breaking inventions after first introducing the regular tea bag to Britain in the1950’s and also developing round shaped and drawstring tea bags. Although Tetley’s time in Yorkshire was brief, the company has doffed a flat cap to its Northern roots with it’s long standing and very popular “Tetley Tea Folk” animated characters as part of their advertising campaigns. 8

Smarties and Kit-Kat

Henry Isaac Rowntree founded his confectionary company in York in 1864 and the Rowntree brand went on to create some of Britain’s most much loved brands including Fruit Pastilles and After Eight Mints. Smarties first originated in 1882 as Chocolate Beans and Kit-Kat was originally launched in 1935 as Rowntrees Chocolate Crisp, Kit-Kat is one of the UK’s biggest selling chocolate bars, partly due to one of its most famous slogans ‘Have a Break, Have a Kit-Kat’. Although the York factory (now owned by Nestle) no longer produce Smarties, it does produce over one billion Kit-Kats a year.

Polo Mints

Another creation by Rowntree the Polo Mint which is Britain’s biggest selling mint and is probably one of the most recognised food items in Britain since it launched just after the Second World War. It is no wonder that the long standing advertising slogan for polo’s has simply been ‘the mint with the hole’ it really needs no other introduction. According to figures 38 million Mints are produced every day and an average of 150 Polo’s are eaten every second.

Jelly Babies

Although baby shaped confectionary was in production from the mid 1860’s, the iconic Jelly Babies as we now know them were originally produced by Bassetts in 1918 and were named ‘Peace Babies’ to commemorate the end of the first World War. Founded in Sheffield by George Bassett in 1842, the company has also produced many other famous brands including the Liquorice Allsorts range, and those of a certain age will remember the Bertie Bassett mascot from various adverts down the years.

John Smiths

Yorkshire has a rich brewing heritage and can list names such as Thwaites, Tetley and Stones bitter as national household brands; however it is John Smiths that is probably most well known across the country due to advertising campaigns starring comedians Jack Dee and Peter Kay, and past sponsorship of the Grand National. The high profile marketing has paid off as John Smith’s has been the highest selling ale brand in the UK for over 20 years. The company can trace its history as far back as 1758 and the brewery site in Tadcaster is still used to manufacture beer, despite a succession of different owners and parent companies over the years.


Terry’s Chocolate Orange

Fictional TV star Alan Partridge is a big fan of the Terry’s Chocolate Orange, so much so that he gladly gifted his radio show listeners and associates with ‘shop soiled’ spherical treats. A little known fact is that Terry’s also created short lived versions of the Chocolate Orange, namely Chocolate Apples and Chocolate Lemons, but the Chocolate Orange has outlasted them all since its introduction in 1931. Although production ceased over a decade ago in York, the Chocolate Orange remains a national favourite.

So now you know the definition, come and visit a motorcycle trial where you can witness how the skill of a rider enables them to scale, in a controlled manner, 20ft slabs of rock and descend near vertical drops into streams. After working through a long wet winter, section designer and former British Trials Champion Graham Jarvis along with a team from the venue at Parkwood 4x4 Centre, have transformed the land into a site that’s ready to receive the World’s very best trials riders. 12 challenging sections have been constructed using the natural terrain and enhanced rocks, not just to push the riders to their limits but to ensure viewing will be excellent for the many spectators.

Tempting TAPAS

Tapas bars are a very common sight and are always a hive of activity. They are not just about eating delicious food, but also a place where people meet up and socialise. Eating tapas can take hours and you will often see people sitting around enjoying each others company over a few drinks, while the waiters bring out copious amounts of small plates that everybody shares. Tapas are a great way to try lots of different dishes.

THE HISTORY OF TAPAS

The word “tapas” is derived from the Spanish verb tapar which means “to cover” and this relates to the history which surrounds their creation. The origin of tapas is believed to come from Andalusia in mainland Spain, in particular the taverns that served their world famous sherry. Fruit flies were attracted to the sweet aroma of the sherry and so a slice of bread was placed over the top of the glass to prevent them from getting in.it would be lifted each time the person wanted a sip and then replaced again like a lid or a cover. Bar tenders soon realised that by replacing the bread with a small plate of sliced salted ham or chorizo made the patrons drink more and so they began to get inventive. They created a variety of small snacks that would accompany the sherry and it was not long before the tapas became just as important as selling the sherry was.

EVOLUTION

The tapas that we now eat have evolved through Spanish history as different cultures invaded and brought their own taste and ingredients with them. The Romans invaded and introduced olives and a few centuries later the Moors arrived with almonds, citrus fruits and fragrant spices. Then thanks to the advancements in ocean travel, potatoes, peppers, corn and chilli peppers were introduced from the New World. All of these foods have found their way into the kitchens of the tapas bars as well as local products including sea food, meat cheeses etc.

A LITTLE PIECE OF INFORMATION ABOUT TAPAS

In Spain, dinner is usually served between 9 p.m. and 11 p.m. (sometimes as late as 12 midnight), leaving significant time between work and dinner. Therefore, Spaniards often go “bar hopping” (Spanish: Ir de tapas) and eat tapas in the time between finishing work and having dinner. Since lunch is usually served between 1 and 3 p.m., another common time for tapas is weekend days around noon as a means of socializing before lunch proper at home. It is very common for a bar or a small local restaurant to have 8 to 12 different kinds of tapas in warming trays with glass partitions covering the food. They are often very strongly flavoured with garlic, chilies or paprika, cumin, salt, pepper, saffron and sometimes in plentiful amounts of olive oil. Often one or more of the choices is seafood (mariscos), often including anchovies, sardines or mackerel in olive oil, squid or others in a tomato based sauce, sometimes with the addition of red or green peppers or other seasoning. It is rare to see a tapas selection not include one or more types of olives, such as manzanilla or arbequina olives. One or more types of bread are usually available to eat with any of the sauce-based tapas, and you can prepare all of this by yourself with easy tapas recipes and enjoy the evening with your friends.

Potato Salad It is around this time of year that the barbeque becomes the cooking instrument of choice. They are a great addition to any garden, the perfect excuse for the men to show off their caveman-like cooking prowess and ideal for catering for large groups of people at the same time. Although, it usually the meat itself that is the centre point of the meal, the accompaniments can really lift the flavours on your plate and help to make your meal go further. A big bowl of salad is usually the additional food of choice, but have you ever noticed that no matter how nice it looks, you always end up throwing away loads of lettuce, cucumber and tomatoes at the end of your feast. Even though we like to have a little something on the side, a simple lettuce salad often gets ignored. Many ranch or grill style restaurants have now switched from serving a green salad on the side and have moved into the realms of gourmet salads instead. One salad that always

seems to go down well is a traditional old favourite, but it has been given a gourmet twist. Potato salad as we know it, now comes in all sorts of colours and flavours and can often resemble a meal on its own. The days of boiled potatoes covered in mayonnaise and chilled are long gone now, depending on which country you visit, there is an array of different recipes to choose from. If you like your potatoes creamy and with a little crunch, then give this recipe a try. It is perfect for pimping up your plate and can be made hours before and left to cool, for you to enjoy it as and when you are ready.

Preparation Time: 10 minutes Cooking Time: 20 minutes

Ingredients:

1kg of Potatoes 300ml of Mayonnaise 25g of White Sugar ½ White Onion (chopped) or 2 spring Onions 2 tbsp of Mustard 25g of Sweet Pickle Relish 1 tbsp of White Wine Vinegar 2 stems of Celery (chopped) 1 Green or Red Pepper (chopped) 2 Large Carrots (finely chopped) 1 tsp of Dried Parsley or half a bunch of Fresh ½ tsp of Ground Black Pepper

Directions:

Boil the potatoes in salted water (leave the skins on for added texture) for around 15 minutes until they are tender but still firm enough to cut. Next drain them and allow them to cool. Chop into even sized chunks and add to a mixing bowl. Next add in all of the other ingredients except the parsley, and mix everything together slowly, so as not to break the potatoes. Once all of the potatoes are covered, transfer the mixture into your serving bowl and sprinkle the parsley over the top for decoration. Cover with kitchen film and chill in the fridge. Remove and serve when ready.

Top Tip:

For a real southern taste, chop up a few hard boiled eggs and add them into the mix too!
