Hi and welcome to issue 37 of Freestyle, and the first edition of 2015. Hopefully we have seen the end of the wintry weather, or is that just me being optimistic!! Once again we wish to thank all of our advertisers for choosing Freestyle to promote your business and we would like to give a warm welcome to our new advertisers.

EDITORS PAGE

The popularity of this magazine is not only about the advertisers, but you the readers. For those of you who may be thinking of advertising here are a few reasons why advertising in Freestyle can promote your business: • • • • •

We have been publishing since 2007 and many of our regular advertisers have been with us from the start. We are a locally based firm and take pride in our loyal following of both advertisers and readers. We do not sign you up for several issues. Each issue is treated individually. We offer free art-work on all advertisements. Our eye catching, high quality, full colour glossy magazine is designed in house and advertisers are welcome to visit us at any time (many do, and some even bring food) to discuss art-work, advertising budgets or even just to pass the time of day.

Here at Freestyle we are always looking for articles of local interest, charity fund raising, local celebrities etc. If you have an event coming up or you know of a group or individual who deserves recognition, please let us know and we will try and give them some coverage in future issues. To all of the romantics out there have a fun and flirtatious Valentines Day. To all Mums enjoy Mothers Day, put your feet up and relax. If you are celebrating St Patrick’s Day, try not to drink too much. Don’t forget to change your clocks forward on the 29th March when hopefully we will enjoy longer and dare I say sunnier days.

Marie Curie Cancer Care appeals for people in Leeds to give a couple of hours Marie Curie Cancer Care is appealing to local people to donate something a little different this Spring – a couple of hours of their time. To launch the Great Daffodil Appeal on Friday 27th February Marie Curie is turning Leeds yellow! The charity is looking for volunteers to help collect on this weekend to help raise vital funds for the local nursing service; every volunteer will be helping to make a real difference to terminally ill people in their own community. This year local fundraisers in West Yorkshire are hoping to raise more than £55,000 from over 150 Great Daffodil Appeal collections across the area – which will provide the equivalent of a staggering 2,700 hours of Marie Curie Nursing Care. There are 5 collections taking place in the Leeds City Centre on Friday 27th February and the charity will give volunteers everything they need to get the pounds pouring in. Local fundraiser Katie Grinter explains “We have collection dates booked at a number of venues in Leeds, and would really appreciate help from local people in making sure we raise as much money as possible from these. You’ll be surprised by how much you can raise in just a couple of hours and every daffodil badge exchanged for a donation will help us to provide more nursing care to people terminally ill at home. We want to get as many people as possible wearing daffodils this March so if you think you are able to give just two hours to help collect at a venue near you in the coming months then please feel free to contact me on either katie.grinter@mariecurie.org.uk or on 01274 386190”.

It is estimated that a billion of us will send a Valentines card to a loved one this February, and we understand that the 14th is the day to celebrate love and all that it encompasses. But how many of us really know how this date became synonymous with love, and who St Valentine really was?

Who was St Valentine?

The history books can trace the origins of this special date right back to the pagan times, however the creation of this date is fuelled by two different arguments. Pagan religion is directly connec ted wi th nature an d t he seasons and they considered the middle of February as the first day of the year that birds would begin to build nests and find a mate, the 15th also coincides with changes in the lunar cycles. At the same time the Romans believed that the middle of February was the date that commemorated the death of St Valentine, or Valentinus, that occurred around 270 AD.

Valentinus the Martyr

The Roman Empire believed that an army was far more effective if their men were not distracted by women, so Claudius II decreed a ruling that no soldier was allowed to marry. A priest called Valentinus went against this,

and was caught and imprisoned for performing secret weddings for young lovers. During his imprisonment, he is said to have healed and fell in love with the daughter of his jailor Asterius and, according to the historical accounts, before his execution he wrote, “from your Valentine” as a farewell to her.

The Pagans & The Church

In an attempt to Christianise the Pagans, it is thought that the church chose to adopt the Pagans beliefs regarding the beginning of the mating season, as a festival of fertility, and combined it with their own beliefs. The festival called Lupercalia evolved, dedicated to the Roman god of agriculture, Faunus, and the Roman founders, Romulus and Remus. An order of Roman priest called Luperci would gather in the sacred cave where Romulus and Remus were believed to have been cared for by the legendary Lupa, the she wolf. The priest would then sacrifice a goat for fertility and a dog for purification and dip the goat’s skins in the warm blood and take them out into the streets. The blood was wiped across crops

in the fields and over women, supposed to make them more fertile in the coming year. The blood smeared women would put their names in a giant urn and one by one the single men would pull out a name. They would then spend the next year with that person, an arrangement that often ended in marriage. By the end of the 5th century. The Roman Church outlawed the practice of Lupercalia as they deemed it un-Christianly and instead Pope Gelasius the middle or the 14th February as the beginning of the mating season and a day to remember the martyred St Valentine instead. This practice continued and became very popular, especially in the middle ages and the oldest known Valentines greeting is now part of the manuscript collection in the British Library and dates back to 1415. It was a poem written by Charles, the Duke of Orleans, to his wife, whilst he was imprisoned in the Tower of London after being caught at the battle of Agincourt. Valentines cards are now common place, and billions are sent all over the world, yet although the very first Valentine and the oldest known Valentine were sent by men. Nowadays it is actually 85% of women that buy and send Valentines today.

In case you weren’t aware, March 2nd - 8th is British Pie Week, which means you’re officially allowed to scoff as much pastry based goodness as possible. Don’t worry that summer is on the horizon or that you’re going to have to get your kit off on the beach in a couple of months…go crazy, binge away. As an added bonus, because we’re always looking to give our readers a little extra, we run through ten interesting pie-related facts to help you impress your mates in the pub over the coming days. While pie-style dishes are thought to have first appeared around 9500BC in the New Stone Age (that’s about 5000 years before man invented the wheel!), a more recognisable galette style wrap didn’t make the menu until the era of Pharoah Rameses II, who ruled from 1304 to 1237BC. It is believed the ancient Egyptians favoured wrapping honey in a cover of ground oats, wheat, rye or barley, which sounds pretty tasty…although given their propensity for removing organs from the body as part of the mummification process you’d have thought steak and kidney might have made an appearance. More familiar ‘modern-style’ pies are understood to have originated ALL NEW AT THE BRIDGE in Ancient Greece with meat and other fillings being spooned Traditional Pub & Dining on top of a pastry shell. It is thought the dishes arose as a useful means of transporting food on long sea journeys. Always a warm & friendly welcome You’d have thought the Romans might have been too busy fighting Asterix to experiment in the kitchen, but it turns out it was they who began adding pastry crusts to the top of pies. As their Empire spread across the continent and road links improved, the fad spread like wildfire until pies became a steadfast part of Northern European diets. Thankfully, the unappetisingly named Placenta – a form of cheesecake pie – didn’t catch on despite Low Lane | Horsforth | Leeds | LS18 4HN Low Lane, 0113 Horsforth, 258 7339 Cato the Younger recording its initial popularity. info@warmandfriendly.co.uk Leeds LS18 4HN The first reference to ‘pyes’ as a food item appeared in England (albeit in Latin) as early as the 12th century although it wasn’t “A pub of long standing reputation, until the 14th century that the term caught on with literary greats food high on quality and low on price.” Geoffrey Chaucer – in his Canterbury Tales – and William The Bridge, on Low Lane, Horsforth, first opened its doors on Good Friday 1868. One hundred and forty six years later, after a Shakespeare both mentioning them. YORKSHIRE FOOD & DRINK GUIDE 2015 brief 24 day hiatus, we’ll be unveiling a brand new Bridge at our grand reopening 5pm Friday 12 September. Although the term ‘pasty’ is most commonly associated with Building on a proud history the Bridge decor will reflect the history of the area plus the best of the modern age. A state of the art kitchen, a redesigned bar with 8 cask ales at its centre and an extended games area are some of the exciting changes that Cornwall, the word began life as a general English term for a th

transform the pub.

Open plan dining areas will allow more flexibility at busy times, especially for parties and big occasions. Feature walls will celebrate the history of the area and local sporting heroes through the ages will proudly include the local great John Holmes. We’re also delighted to highlight the artwork of Frank Simpson. Frank died when his submarine sank in January 1917 and his sketch book is the remaining memory of a talented man. A new menu will have our traditional wide range of great British dishes as well as the area’s finest pie selection. Deluxe pies, traditional pies & sharing platters are all widely popular. Special food offers run Monday to Thursday every week. We’ll have a wide selection of cask ales and lagers which will now include Peroni the bestselling premium lager. A community pub the Bridge had affiliated darts, pool & football teams. We show all he big games from BT & Sky Sports and have quiz nights every Thursday & Sunday.

pie, of Venison or meat, baked without a dish. Evidence exists that Henry VI was served a partridge and peacock-filled ‘pastie’ aged 8 at a fancy banquet, while Henry VIII’s wife Jane Seymour is understood to have enjoyed the tasty treats from a local butcher. It wasn’t until the 17th and 18th century that pasties were seized upon by Cornish working-class miners who found the ‘pies’ suitably versatile to be taken to work. Filled with meat at one end and jam at the other, they formed both a main course and dessert to power the strenuous work below ground. There are few things as American as apple pie, as the saying goes, but like much of America’s pie tradition, the original apple pie recipes came from England. The Pilgrims brought their pie-making skills, along with the apple seeds to America. As the popularity of apple pie spread throughout the nation, the phrase grew to symbolize American prosperity. The expression ‘to eat humble pie’ derives from umble pie, which was a pie filled with the chopped or minced innards of an animal. Umble evolved from ‘numble’ (after the French nomble) meaning deer’s innards. It is believed that the cheap

offal filling meant it was more commonly eaten by the poor. However, despite it being a seemingly humble meal, there is no etymological link between ‘umble’ and ‘humble’ – the phrase evolving by chance as an idiom over the years. The origin of festive mince pies can be traced back to the 13th century when European crusaders returned home from the Middle East with recipes containing meats, fruits and spices. Such were their religious ties (eaten as they were in the buildup to Christmas) that by the mid-17th century mince pies were banned during Oliver Cromwell’s reign of terror along with other Christian traditions.Precursors to the modern mince pie were much larger and, until the Victorian age, often contained the likes of beef, veal or mutton. Thanks to European ‘protected designation of origins laws’ only pies made within a certain distance of the village of Melton are allowed to carry the Melton Mowbray label on their pork pies. A very popular picnic snack, the sale of pork pies makes up £145 million of a £1 billion pie industry which exists in the UK.

Super MUMS

This year Mothering Sunday falls on Sunday 15th March and is a day to say thank you and to commemorate the amazing work that mums, grandmothers, foster mothers, stand in mums and all kinds of mums do. Without mums, none of us would be here and that fact alone definitely gives them super hero status! Many people think that Mothers Day is just a marketing tool, dreamed up to drive commercial gift sales and there is actually some truth to that argument. However it has also been around since ancient times, and can be dated right back to 250 years BC. The first goddess or mother that was celebrated is thought to have been Cybele, also known as Mountain Mother. She was originally an Anatolian goddess depicted as a pregnant mother sitting on a lion’s throne and was adopted by Greek colonist of Asia Minor, who spread her popularity across the west in and around the 6th century BC.

The Greeks

The Greeks themselves were unsure about this new deity, as they had their own Goddess Gaia, the Minoan goddess Rhea and the harvest mother Demeter. They saw Cybele as a mysterious and exotic goddess who rode a lion drawn chariot and was accompanied by wine, wild music and disorderly conduct. They chose to celebrate Rhea, wife of Cronus, instead as they considered her to be the mother of many of the other Greek deities.

The Romans

Some Romans welcomed Cybele and cults began to emerge that worshipped her. They called her the Great Mother and introduced a spring festival that honoured her called Helaria. It took places on the ides of March (mid March) and consisted of three days of offerings, parades masquerades and games.

The celebrations were so notorious that anyone found to be a follower of Cybele was captured and banished from Rome.

Early Christians

Early Christians also dedicated a day to a mother, known as Mothering Sunday. Like today it took place on the fourth Sunday of Lent and worshipped the mother of Christ. Later around the 16th century Laetare Sunday also became popular and was a day where all smaller congregations would attend one big mass at the main or Mother Church in the area. Over time the celebration was expanded to include all mothers and even children working in richer households were allowed to return home for a day to make a visit. They would bring with them an offering of Simnel cake, which if baked correctly would last through the remaining three weeks of lent and would be enjoyed by all of the family, once the period of abstinence was over on Easter Sunday.

Modern Day

At the start of the 19th century, Mother’s Day was still popular, but the industrial revolution brought about many changes and traditions like this soon fell by the wayside. It was actually the US World War 11 soldiers who reminded us of this tradition and brought the celebration back to the UK. By the 1950’s UK merchants began to see the revenue generating opportunities that such a tradition could bring and soon made sure that Mother’s Day was once again popular. Clever marketing campaigns like postage stamps with ‘Remember mother – she never forgets!’ were printed and posters were pasted up all over the towns. Not dissimilar to what we see in the high streets and card shops today.

CHUNKY

Cawl

The first day of March signifies St David’s Day or the Feast of St David, and is celebrated in Wales. Daffodils and leeks are often worn to commemorate the death of their patron saint in 589AD and are the national symbol of the country. Their significance can be found stretching throughout history and pictorially they appear on both their uniforms and many coats of arms.

As well as having an important historical significance, leeks also appear in many traditional Welsh dishes. One such dish is often made to commemorate the Feast of St David and is the national dish of Wales known as Cawl. It is perfect to enjoy during the winter months, as it is both comfort food and a great winter warmer. Traditional recipes for Cawl vary from region to region, and in some places the broth is served first and the meat and veggies afterwards. Other households prefer to eat it all in one bowl. Whichever way you prefer it, here is a traditional recipe for you to try at home. It can be made with either beef or lamb, the choice is yours.

Cawl

Preparation Time:-30mins Cooking Time:2 hours, 30 mins Serves 4

Ingredients:

450g Lamb (preferably Welsh) or Beef Brisket 450g of Smoked Bacon (cut into thick cubes) 450g of Potatoes 4 Leeks (cleaned & sliced) 4 Large Carrots (peeled & cut into chunky cubes) 1 Medium Swede (peeled & cut into chunky cubes) 1 tbsp Lard or Bacon Fat 2 Large Onions (thickly sliced) 1 Bay Leaf 1 Sprig of Fresh Thyme Salt & Pepper

Directions:

Couture Corsetry & Historical Costume For Brides, Theatre, Film, Burlesque, Re-enactment, Individuals. Bespoke service by appointment

Over a medium heat melt the lard in a large stock pan and add all the vegetables except the potatoes. Brown for about 3 minutes and stir constantly. Remove the vegetables and keep to one side. Turn up the heat, and add the lamb or beef to the pan and brown all sides. Then add the browned vegetables to the pan, along with the bacon chunks and herbs. Cover the meat and vegetables with the cold water, bring to the boil. Then reduce the heat, cover and simmer for 2 hours until the meat is nice and tender. Remove the lamb or beef from the pan and put to one side and cut into chunks. Add the potato chucks to the pan and boil until cooked, approx 20 mins. Put the lamb or beef chunks back into the pot and season. Then once piping hot, serve and enjoy.

TOP TIP

If you make too much, pop it into a sealed container and keep it in the fridge, as the flavours will get stronger overnight and it will make a great meal for the next couple of days. Always serve piping hot!

Beating the

Quite often at this time of year we find ourselves slumping into that ‘want to do nothing’ mode. If this is due to over work or burning the candle at both ends then this is usually a sign of overindulgence or fatigue. But at certain times of the year some people find that low mood feeling a little harder to shake. So here are a few tips to get you back to your usual self.

Be Sociable & Positive

This is probably the last thing on your mind, but it is one of the best ways to beat the blues. Isolating yourself will just give you reason to focus on the negative things that got you down in the first place. Call a friend, take up a hobby, meet new people and find some new positive things to think about.

Be Selfish & Treat Yourself

Do something just for you. It does not have to be extravagant; it could be something as simple as watching your favourite movie, getting a manicure or booking a short break, as long as it is ‘your’ choice. Eventually you will begin to feel worthwhile again, and the subconscious message will seep in. Do it for you. You are worth it.

Do Something Worthwhile

Many volunteers work with charities, not just because of the good they do, but the way it makes them feel. A sense of achievement will lift your spirits. Standing back after completing something simple, like clearing a garden or painting a room will give you a sense of achievement and you will feel uplifted and energized.

Get Creative

If you are spending too much time letting one side of your brain bring you down. Then switch it. Stop thinking and start creating. Try cooking, writing, taking photos or even going for a walk in the country. This will gat the other side of your grey matter back into shape, and soon the other side will follow. 24

B

Boost Your Confidence

Taking on a challenge and trying something you have never done before, will boost your mood. Firstly, you will have no choice other than to focus on what you are doing which helps you forget the things that bring you down. Secondly, you will meet like minded people and socialise. Thirdly, once you have achieved something you will naturally feel great. Why not try a new sport? It has been proven that endorphins, serotonins and dopamine are released when we exercise and these help fight depressive mood swings.

Ask For Help

Talking things through with a close friend or family member will give you a sense of relief, after all a problem shared is a problem halved. But, if this is not an option for you then talk to a professional and remember you are not alone, they give confidential advice and support to people every day, just make the first step.

Let Go

If you are replaying memories over and over in your head, then stop. Get out of the past and into the present. You cannot change what has already been, so why waste the energy? Move on! Clearing out things that are holding you back will bring things back into perspective. There is a huge world out there, just waiting to be discovered! What are you waiting for?
