ypical charcoal filters retain most of the metal salts found in water and alter the taste of coffee, especially in areas like Athens, where water hardness is not particularly high (up to 350 mg/lt). However, in island or coastal areas where salty water problems occur or in places where water contains heavy metals and nitric acids, more drastic solutions are required, such as reverse osmosis systems. In this year’s Athens Coffee Festival, the Italian company La Marzocco presented to Greek coffee professional its new technological achievement: Osmo, a compact reverse osmosis device that is
easy to install in all coffee shops and espresso bars, regardless of size. Reverse osmosis is the only suitable functional solution for a barista when the public supply network provides extremely hard water of doubtful or poor quality. The device operates through the process of water filtration through semipermeable membranes: The water, with high pressure, penetrates the membranes, which retain all the substances, such as salts and heavy metals, without exception. The thin semipermeable membrane holds harmful organisms, such as bacteria. Thus, the filter enriches pure water with minimal impurities.
